Art at Chartwell An outdoor art trail that celebrates painting and landscape at the home of Winston Churchill

This New Year, from Saturday 11 January until Sunday 23 February, Art at Chartwell sees eight copies of Chartwell paintings placed in the ground at the very places these viewpoints were painted by Churchill between 1924 and 1950.

Throughout his lifetime Churchill painted over 500 canvases, and Chartwell houses the single largest collection of his works. Interestingly some of Churchill’s most difficult times saw his highest output as an artist so it’s no small wonder then that Churchill uttered the words “If it weren’t for painting, I couldn’t live, I couldn’t bear the strain of things.”

Celebrating painting, landscape and the role these played as an antidote to pressure and strain for Churchill, Art at Chartwell allows you the opportunity to embrace the same views that brought the politician so much solace, satisfaction and enjoyment.

ollow the trail around the grounds comparing the views that Churchill captured on canvas with the one you see before you and learn a bit more about each painting with a leaflet from Reception.

Not one to be missed is Churchill’s ‘Winter Sunshine, Chartwell, 1924’. Painted during the first winter the Churchill family lived at Chartwell, the piece won first prize in an exhibition for amateur painters at the Royal Academy.

Nearly 100 years later, you can stand at the same spot Churchill sat to paint his winning canvas and appreciate the view as well as the work.

On your travels you can also recreate some of the Chartwell scenes for yourself using viewfinders set up on the terrace lawn and by the croquet lawn.

These frame the landscapes and views that Churchill fell in love with, perfect for taking a moment to soak up the view. Take a leaf from Churchill’s book and make a sketch or take a photo for yourself.

For families, Chartwell also have an activity trail available where children can explore the grounds through the eyes of Winston Churchill.

Channelling a bit of their own creativity, families can use painting as an escape with a series of artistic activities from drawing to spot the difference.

As part of the Art at Chartwell project, Chartwell have been working with artist Mary Hooper and local community groups to explore themes of the outdoors, creativity and wellbeing.

Students at Knole Academy, service users of Tunbridge Wells Mental Health resource, and residents of Westbank care home visited Chartwell in the autumn of 2019 to explore the grounds and Churchill’s favourite views that he painted so often. These groups also took part in immersive art workshops led by Mary and inspired by the sensory enjoyment that Churchill gained from painting. You can find out more about what these groups got up to with a display in the Marycot in the Walled Garden.

To round off an artistic day out at Chartwell you can venture in to the Studio Annex, part of the building where Churchill could paint without

interruption, and discover more about Churchill’s creative journey with a new giant interactive ‘touch-wall’ projection. The ‘A History of Winston Churchill in 50 Objects’ exhibition has a whole display devoted to Churchill’s life as an artist and the new free outdoor audio guides has a whole theme available on painting.

Art at Chartwell has been supported by the Churchill’s Chartwell Appeal. Major funders are the National Lottery Heritage Fund with other generous donations from The Royal Oak Foundation, National Trust centres and associations, private donors and members of the public.

Your Barrister will see you now (without a Solicitor!)

U

nless you have been so unfortunate to end up in court, most people’s image of a Barrister has been through the prism of Rumpole of The Bailey, Kavanagh QC, or Silks.

For programme-makers, the arresting visualisation of Barristers in arcane clothing, booming oratory, and fusty traditions are too obvious to pass by – but, in reality, the working life of Barristers is more mundane, with most wigs and gowns gathering dust in the corner of a modern office building.

It has been inaccessibility to Barristers that has created their Dickensian mystique. Until quite recently, ancient rules prohibited them from carrying business cards, advertising, or even entering a Solicitor’s office. Barristers could only qualify once they had been “dining” twenty-four times in a year at one of the four “Inns of Court” that surround the Royal Courts of Justice on The Strand and were then “called to the Bar”. Members of the public could not see a Barrister unless it was in their “Chambers” (where they were taken care of by “clerks”), introduced by and in the company of a Solicitor.

However, over the last two decades there has been a gradual relaxation of outdated rules and practices to allow Barristers to ply their trade in a wider market, so that certain licensed members of the Bar may now undertake almost all of the tasks conventionally undertaken by a Solicitor, as well as

their own, including representing parties directly.

Barristers can not only enter a Solicitors’ firm these days, but they can also enter into partnerships with them and other professionals.

For the public this has created a significant benefit by dismantling restrictive regulation and giving access to a broader range of legal services at more affordable prices. By allowing direct access to Barristers the public can now find particular expertise that may not be available in a Solicitors’ firm, or discover complementary expertise that is only found in a mixed practice of Barristers and Solicitors. By cutting out a middle layer of bureaucracy, the price of legal services offered by Barristers who are licensed to work for the public directly can be very competitive in comparison.

And with technology reducing the proliferation of paper, modern Barristers are commercially astute and flexible to their clients’ needs, fleet-of-foot and popping up in towns all over the country.

But finding the right Barrister can still be a challenge, so The Bar Standards Board maintains a comprehensive web-based directory that publishes the details of all Barristers who can represent members of the public directly along with their areas of specialism.

The first-ever production car and a flying car go on display in the V&A

Cars: Accelerating the Modern World Until 19 April 2020

T

he V&A has opened an exhibition looking at the car as the driving force that accelerated the pace of the 20th century.

The exhibition brings together a wideranging selection of cars that have never been on display in the UK, each telling a specific story about their impact on the world. This includes the first production car in existence, an autonomous flying car, a converted low-rider, and a 1950s concept car.

Showcasing 15 cars and 250 objects, the exhibition examines how the car changed our relationship to speed, how it changed the way we make and sell, and how it altered the landscape around us, from countryside to cityscape.

‘Going Fast’ opens the exhibition, exploring the role of the automobile in imagining a future world of liberated movement and technological progress.

Bringing together a range of 20th century concept car designs, magazine illustrations, and film, the display references popular culture, science-fiction and novel technologies to show the central role of the automobile in imagining an accelerated future.

The section continues with the first-ever production car, the Benz Patent Motorwagen 3, introduced to the public in 1888. Although it wasn’t fast at the time, technology developed rapidly, putting the thrill of speed at the hands of the driver and grabbing the fascination of the public.

‘Making More’ explores the car as the archetype of modern manufacturing. On display, a Ford Model-T from 1925 traces the origins of the assembly line, its widespread impact on other areas of production and its evolution into the high-tech automated factories of today.

The final section of the exhibition, ‘Shaping Space’, explores the vast impact of the car on the world’s landscape, nations, and cities. It looks at how the petrol engine beat early electric and steampowered competitors by promising the ability to travel the world, transforming drivers into individual explorers.

Returning full circle to the fantasy images of a future world, the exhibition ends with the Pop. Up Next autonomous flying car co-designed by Italdesign, Airbus and Audi. On display for the first time in the UK, the car combines the four major innovations transforming the future of driving: electric power, autonomous driving, serviceoriented, and flying.

As we approach another major turning point in automotive design, the exhibition examines how the car in a mere 130 years has shaped the world we know today.

COLLECTING ART DECO

ne of the most collectible areas of 20th century design is, without question, Art Deco. Striking, vibrant and inspired by a global array of motifs and patterns, there is something to appeal to almost everyone. In the 1920s and 1930s, the streamlined Art Deco style came to influence every aspect of life from jewellery to furniture, from kitchens to magazines.

These pieces look so right today because many were at the cutting edge of Modernism, representing the age of speed, travel and the newfound freedom of women.

Selfridges opens the

world’s first permanent cinema in a department store

S

elfridges have announced that the opening of their in-store cinema destination in Oxford Street is at the end of November.

This will be the first time a department store anywhere in the world is to permanently accommodate such a facility. The Cinema at Selfridges will be fitted with the latest state-of-theart sound and vision technologies to ensure the viewing experience is world-class.

Operating all year round – and after the iconic store’s trading hours – the venue will screen current releases, blockbusters and independent films. It will have an entrance within the store as well as direct access from the street. The cinema will have three screens, with capacities of 70, 60 and 30 seats. There will also be the potential to have a private screening in one of the rooms and an underground bar making the Cinema at Selfridges even more enticing!

Films scheduled for the first week of launch include Frozen 2 and Le Mans 66 with Matt Damon and Christian Bale.

By Royal Appointment: What is a Royal Warrant?

From piano tuners to opticians to a whip maker, the Royal Warrant holders belong to an ultra-exclusive club.

E

ver since King Henry II gave a Royal Charter to the Weavers’ Company in 1155 for clothes and castle hangings, and William Caxton became King’s Printer to Edward IV in 1476, Britain’s tradesmen and crafts people have aspired to serve Sovereign and Court.

Competition for Royal favour was intense and the Monarch had the pick of the country’s best tradespeople. By the 15th century, the Lord

Chamberlain, as head of the Royal Household, formally appointed tradespeople with a Royal Warrant of Appointment – a practice that continues to this day.

In the 18th century, Royal tradesmen began displaying the Royal Arms on their premises and stationery. In 1840, the Royal Warrant Holders Association was formed. Its main objective is to ensure the continued existence of the Royal Warrant as a treasured and respected institution. It helps to administer applications for new Royal Warrants and changes to existing ones.

The criteria for qualification are notoriously strict. Royal Warrant of Appointment – A crest that states “By Appointment To…” is a mark of recognition of those who have supplied goods or services to the Households of HM The Queen, HRH The Duke of Edinburgh or HRH The Prince of Wales for at least five years, and who have an ongoing trading arrangement. In the Prince of Wales’s case, they also have to “demonstrate that they have a workable environmental policy.”

The Association is not part of the Royal Household, but belongs to its members. It advises members on everything to do with their Royal Warrants and assists with the correct interpretation and implementation of The Lord Chamberlain’s Rules, which govern the Royal Warrant.

The Monarch decides who may grant Royal Warrants. These are known as the Grantors: HM

Everything from crowns to cutlery, confectionery to candles, silverware to silks, furniture to frying pans have appeared on Sovereigns’ shopping lists over the centuries, There are champagne houses and wine merchants, wheelwrights and gunmakers, luxury car manufacturers, tailors and kilt makers - the kind of luxury brands befitting of a royal family. Some firms have a record of Royal warrants reaching back over more than 100 years.

Warrant holding firms do not provide their goods or services free to the Royal households, and all transactions are conducted on a strictly commercial basis.

Ever since Her Majesty the Queen left her wedding in 1947 wearing a pair of soft fabric Cornelia James gloves, she has remained loyal to the East Sussex-based glovemaker. The younger royals are not allowed to bestow warrants but, when they are, Cornelia James could be in line for a second, given the Duchess of Cambridge wears their fine merino gloves.

The Duke and Duchess of Cambridge left Buckingham Palace on their Wedding Day in the Prince of Wales’ dearly beloved Aston Martin DB6 MKII Vantage Volante. The Duke of Cambridge could have enjoyed the pick of the vehicles in Buckingham Palace’s Royal Mews, but he decided to drive his father’s favourite car.

In June 2019, Swarovski UK, was awarded a royal warrant, which the company said in a statement, ‘is a significant honour, which acknowledges the quality of our product and reflects the ongoing provision of crystal to the British Royal Family.’ One of the newest jewellery houses to be awarded the honour, it was founded in 1895 in Austria. Swarovski designs, manufactures and sells the world’s largest highest quality crystals. Today, the company is run by the fifth generation of family members, with around 3,000 stores worldwide.

MELTDOWN announces Grace Jones as curator for 2020 S

outhbank Centre has announced that the next curator and headliner of its awardwinning Meltdown festival, the longestrunning artist-curated festival in the world, will be the international icon of music, fashion, art and film, and inimitable singer, songwriter, producer and performer, Grace Jones.

From 12-21 June 2020, Jones will take over the UK’s largest arts centre with her defiantly unique creative vision and a ten day playbook of her creation. At her invitation, global names and new talent, artists who inspire and have been inspired by her, and special one-off collaborations will take to the world-class stages of Royal Festival Hall, Queen Elizabeth Hall and Purcell Room, and the remainder of Southbank Centre’s 17-acre cultural quarter on the banks of the River Thames.

Grace Jones is one of the most recognised figures of contemporary culture. After taking the world by storm as one of the first black supermodels, Jones signed to Island Records in 1977 and with her first few singles - and mouldbreaking fashion - became a star of New York City’s Studio 54-centered disco scene. The 1980s saw her move to a new-wave hybrid of reggae, funk, pop and rock, as she worked with superstar producers such as Trevor Horn and Nile Rodgers and released a string of internationally acclaimed and enduring albums including Slave to the Rhythm (1985). No fault divorce is coming but will it end the blame game?

A ll too often within divorce proceedings the concept of blame plays far too large a part. This damages both parties and equally as important, it distracts the divorcing parties from the two principal areas which require detailed consideration, namely, children and finances.

The Government’s Divorce Dissolution and Separation Bill will reform the divorce process to remove the concept of “fault”.

The Bill will:• Replace the five “facts” (reasons for seeking a divorce) which are adultery, unreasonable behaviour, desertion, two year’s separation with consent and five year’s separation without consent with a new requirement to provide a Statement of Irretrievable Breakdown; • Remove the possibility of contesting the divorce; • Introduce an option for a joint application; • Make sure language is in plain English, for example changing antiquated terminology such as Decree Nisi to Conditional Order and Decree Absolute to Final Order.

The changes will also apply to the dissolution of civil partnerships.

The purpose of the no fault divorce is to reduce conflict between divorcing couples and there is little doubt that the divorce process will become more streamlined, particularly with the removal of the ability to contest the divorce.

At present, when a divorce petition is drafted

on the basis of ‘’unreasonable behaviour’’, which is the most common type of petition, it is necessary to find fault. This is achieved by drafting between three to five instances to back up the petition which are inevitably perceived by the recipient as insulting and hurtful, no matter how skilfully they are drafted.

Even though the Family Law Protocol requires them to be kept as mild as possible, they must meet the requirement of satisfying the District Judge that the requisite level of unreasonable behaviour has been reached, in order that the petition may be granted.

The question currently being debated is whether no fault divorce will prevent the inevitable blame game which can permeate proceedings covering children and financial matters?

It remains to be seen whether the ‘no fault’ divorce will have any impact upon the concurrent children and financial proceedings which can be highly emotional. The issues raised within these proceedings are often the same as the ones that have led to the breakdown of the marriage. It could therefore, be argued that the element of blame exists independent of the current need to find ‘fault’. The proposed removal of the need to find fault is one thing but this may have little impact on human nature and the unlimited capacity to apportion blame regardless of whether the basis of the blame has actually been stated in the Divorce Petition.

ip gloss is one of those items that can take you straight back to the Nineties - a time when all the make-up know-how you needed was the ability to apply a slick of sticky, glittery, berry-flavoured gloss to your mouth. And now it’s back - and luckily, it’s had an adult update. One of the best things about lip gloss is just how easy it is to use. Unlike some of the more complicated beauty trends of the moment - looking at you contouring - all you have to do is swish it on your lips in a vaguely neat way. So here are some of the lip gloss trends ruling the high street and the catwalks at the moment. And don’t worry, formulas have moved on since the 1990s you shouldn’t have your hair sticking to your lips quite so often...

Pale and interesting Two decades ago, the idea of lip gloss giving you a ‘no make-up make-up’ look would have been practically inconceivable. Now, it’s very much on trend. Instead of going for a crazy colour or sticky finish, opt for a shade that suits your lip colour and gives it a softer, natural look. Depending on your skintone, gentle rosy pinks and peach colours work well, making your lips look polished and dewy - like you’ve just rolled out of bed, in a good way. The key to this look - and when applying any lip gloss - is preparation. “Ensure your lips are well prepped by using an exfoliator first to get rid of any dryness,” explains Sascha Jackson, lead make-up artist at Stila

Glass lips Once you’ve mastered paler shades, you’ll be ready to graduate to a glass finish; a lip gloss with an extra-shiny, almost mirror-like look to it.

“This is a slightly wet look all over, which gives a healthy and youthful appearance,” explains make-up artist Stacey Whittaker. “This particular look is

popular on catwalks and creates an editorial feel. My top tip for applying gloss is that a little goes a long way,” she adds. “Apply a small amount to the centre of your lips and use your finger to carefully blend this towards the outer corners.” With an ultra-glossy lip, it can be hard to know what to do with the rest of your make-up. “I like to team this with a glossy or creamy finish on the cheeks, but then a matte or suede eye,” notes Jackson. “The difference in textures really complement each other.”

Plump it up If you’re not keen on injectables or other enhancements, there are plenty of products on the market that offer a non-surgical plump-up - all you have to do is swipe on some lippy. In fact, the phrase ‘plumping lip gloss’ has seen a 45% increase in searches on Pinterest from October 2018 to October 2019. These kinds of lip glosses tend to include tingle-inducing hyaluronic acid, a beloved skincare ingredient often used to help with hydration - and better hydrated lips can mean a bouncier, fuller pout. Jackson is a particular fan of Stila Beauty Boss Lip Gloss, saying: “It’s enriched with hyaluronic filling spheres which naturally smooth and give a more plump appearance. The pigments are incredible, which means you don’t have to layer lipstick underneath to get a good colour.”

Lady in red A bold red lip is a classic look, and one most of us apply with lipstick. But what about trying that red lip with gloss? You might find it’s easier to apply and lasts longer. Either opt for an already shiny red lip gloss, or use any red you have and layer a clear product on top. “For the festive season, adding a soft sheen gloss over a pop of coloured lipstick is bang on trend for Christmas 2019,” says Whittaker.

“Opting for a soft sheen will add dimension to your lips and create a plump and full effect.”

oing from a hard and heavy weights session one day, to lying on the sofa the next, can sometimes feel paradoxical.

While it’s true that your body needs to rest so your muscles can repair, that doesn’t mean you have to be totally sedentary on your rest days.

Active recovery can be a helpful tool between exercise; it basically involves engaging in lowintensity exercise and movement between training sessions, and can actually help to reduce fatigue and uncomfortable post-workout soreness.

Want to give it a go? Here are a few rest-day ideas to get you started...

Swimming A few laps in a local leisure centre isn’t just a great way to wash away stress - it also offers a low-impact, total-body workout that’s great for stretching out stiff limbs. Swimming allows your body to be completely weightless too, which takes the pressure off painful or fatigued joints.

Self-myofascial release This sports-massage technique releases tension in the muscles, ligaments, tendons and fascia after strenuous exercise, making it a great habit to get into on your rest days. You can use a foam roller or a lacrosse ball to target painful trigger points, massaging the glutes, hamstrings, back and shoulders with firm pressure.

Bikram yoga This popular active recovery technique is a great way to work on your flexibility and promote blood flow around the body on your rest days. Many of the positions in hot yoga also engage the muscles, tendons, and fascia around the joints that typically seize up after a high-intensity workout.

Tai Chi This martial arts technique is a good way to work on your balance and strength, while giving your body a day off from intense body-weight work. Tai Chi involves combining slow, flowing movements with breathing techniques, helping both your body and mind to recover from the stress of an intense workout.

Although active recovery has many benefits, it’s always important to listen to your body and give it a break if it needs one. If you’re overtraining or feel like you’re at risk of injury, it might be more appropriate to take a couple of sofa days until you’re ready to get back in the gym.

Heading outdoors on a winter evening can feel a little daunting, but the change in seasons shouldn’t put you off running altogether. A bit of smart thinking can help to keep you street safe...

Wear reflective gear First up, think about your running uniform. Dark winter evenings can make you vulnerable to cars, even if you’re running on an adjacent path towards the traffic. Invest in some pieces that will help you to get noticed by oncoming vehicles in low-lit environments, which means plenty of reflective strips and hi-vis materials. Always tell someone you’re going for a run Staying safe starts with letting others know that you’re leaving for a run in the first place. A simple text to a friend or family member before starting your route can help to act as an extra level of security when it’s dark outside. Make sure to include details of your route and how many miles you’ll be covering.

C

olour has well and truly invaded our homes. In fact, no interiors scheme is complete these days without at least a dash of a punchy shade!

That might sound pretty scary, though, if you’re still clinging to neutrals and quaking at the thought of plunging into the dizzy array of colours on offer.

Step forward self-confessed colour-addicts Lucy St George and Jane Rockett, the duo behind chic interiors destination, Rockett St George. They’re on a mission to help us transform our homes with a host of hues, and reveal their secrets and personal inspirations in their new book, Rockett St George: Extraordinary Interiors In Colour.

Colour is emotional, says the pair - “Think peaceful pastels, and sexy reds, creative greens and happy yellows” - and it’s important to consider the meaning of colour and how it affects your emotions, if you want to create a home that feels right for you and harbours the right mood.

Rockett and St George visited homes around the world bursting with bright, bold and brilliant ideas, and looked at the colour rules - and how to break them! - for conjuring successful schemes.

Considering the effect of light on colour is also key, they caution. For instance, a cool-toned lemon yellow can feel hard and unwelcoming in the colder light of a north-facing room, making it more suitable for south-facing rooms.

Ambiance Low ceilings, comfy arm chairs, and a wood burning fire - the George and Dragon is a cosy country pub nestled in the heart of Charles Darwins family village of Downe.

Service We ordered our food at the bar to a welcoming member of staff who talked us through the menu and what was available. Food was then served to the table.

Food A traditional pub menu with favourites such as burgers, fish and chips, ham and eggs, and an assortment of homemade pies, as well as a separate vegetarian menu on offer. To start, I opted for the chicken wings. They were beautifully tender and fell off the bone, but came covered in a little too much of the BBQ sauce, with extra on the side that would have been sufficient enough for dipping. Sadly for main the fish pie wasn’t available as they had run out of mash from a busy lunch time service. Instead I tried the fish and chips, and they were a great alternative, as the batter was lovely and crisp, with a good tangy tartar sauce. For dessert, we shared a chocolate brioche bread and butter pudding with

custard - rich, unctuous…the perfect dessert to enjoy in front of a roaring fire.

Drink There’s a well stocked pub bar with a selection of good gins, and the house red was smooth and full of flavour.

t’s the yin and yang of the drinks world and as cocktails go, the classic G&T is possibly the most refreshing and enduring double act of all time. And it’s proving more popular than ever.

But how much do you really know about gin?

Leanne Ware of Halewood Wine & Spirits, who make City of London Distillery Gin, Whitley Neill Gin and Liverpool Gin, reveals some gintastic facts about this punchy pour...

1. Due to the rapid rise in gin’s popularity in recent years, London alone now has more distilleries than the whole of England did in 2010.

2. The word ‘gin’ comes from the Dutch word ‘Jenever’ which in turn comes from the Latin, Juniperus, meaning juniper - the key botanical in gin.

3. Gin has to be a minimum of 37.5% abv in the UK and Ireland (in the US it’s 40%). If it’s less than that, you can’t call it gin. Some ‘gin liqueurs’, which people assume are flavoured gin, are in fact not authentic gin.

4. Juniper berries aren’t actually a berry, they are a seed cone, hence the piney flavour.

5. The gin and tonic was born from British officers stationed in India mixing their quinine medicine, which treated malaria, with water, sugar

and gin to make its bitter flavour more palatable.

6. Tonic water glows under UV rays!

7. It’s estimated that in 1743, the equivalent of roughly two pints of gin per person was consumed every week in London.

8. The term ‘London Dry Gin’ doesn’t actually refer to gin made in London. It’s a specific style of gin that originated in London.

9. Despite some misconception, gin was never banned. It was however subject to heavy regulations in the mid 1700s, due to its effects on British society.

10. Allegedly, the late Queen Mother’s favourite drink was a mix of 70% Dubonnet, a French aperitif and 30% gin, with a slice of lemon under the ice.

11. The famous William Hogarth painting ‘Gin Lane’, originally issued in 1751, depicts a real street in London.

12. There’s an actual science behind why gin and tonic tastes so good - the molecules are similar, which means the two parts are attracted to each other and are able to mix easily. When they’re mixed, the quinine and juniper flavours combine to create a flavour different from the individual flavour parts, which is why, even if you don’t like gin or tonic on their own, you may like them together.

“This was one of the first dishes I put on the menu at Fish Face in Sydney as a young chef and I am still as proud of it now as I was 12 years ago,” says Australian chef Josh Niland. “Yellowfin tuna, bonito or blue mackerel are all great alternate species.”

Ingredients: (Serves 6) • 600g trimmed centre-cut albacore loin (alternatively mackerel or tuna) • 60ml olive oil • 1 head white radicchio, leaves torn into bite-sized pieces • Sea salt flakes and freshly cracked black pepper • 3tbsp roasted hazelnuts • Sweet and sour currant sauce: • 120ml extra virgin olive oil • 150g French shallots, finely diced • 150ml white wine • 375ml white wine vinegar • 150ml water • 75g caster sugar • 125g dried currants • Sea salt flakes and freshly cracked black pepper

Method: 1. Preheat the oven to the lowest possible temperature.

2. For the sweet and sour sauce, heat the oil in a saucepan and sweat the shallots over a low heat for 15 minutes until just golden. Add the wine, vinegar, water, sugar, currants and a little salt and pepper and simmer briskly for four minutes, until the shallots are very tender and the sauce is thick and syrupy.

You should have 225ml of sauce after the reduction.

Cool and chill until needed.

3. Cut the fish you’re using into even-sized quarter planks, then chill, uncovered, in the refrigerator.

4. Place a wire rack inside a baking tray to act as a trivet to cook the albacore on. Cut some baking paper to fit the size of the wire rack and, using a small knife, cut enough holes over the paper to allow the juices to strain through during cooking.

Arrange the fish on the prepared wire rack and place in the oven. The oven should be between 90-100°C (194-212°F) throughout the cooking process. If you feel the oven is hotter than this then rest a pair of tongs or a wooden spoon in the door to hold the oven ajar. The internal temperature for the fish should be 40°C (104°F) when measured with a probe thermometer. Ideally, the fish should still look quite raw but with a gently cooked texture (be careful here as, unfortunately, albacore dries out very quickly during cooking).

5. Meanwhile, heat the olive oil in a frying pan

over a high heat and saute the radicchio leaves.

Season well with salt and, at the last minute when the leaves are blistered and lightly wilted, add the roast hazelnuts and four generous tablespoons of the sweet and sour sauce. Keep warm.

6. Leave the fish to rest briefly, then slice three slices per portion. Brush with olive oil, season with sea salt, cracked black pepper and drape over the sweet and sour radicchio and hazelnuts. Serve.
