he Food and Drink Festival, now in its tenth year, is organised by St Albans City and District Council and support of steering group members. It runs from Wednesday 27 September to Saturday 7 October and includes a wide range of activities days such as wine tastings, themed events and cookery demonstrations. Willow’s annual 10K is a great race for beginners and experienced runners alike. The race will be started by Willow’s Life President, Bob Wilson, who will send runners off on a route that goes through the picturesque grounds of Hatfield House, providing a unique opportunity to explore hidden parts of the estate not normally open to the public. Families visiting Willows Activity Farmnthis Autumn can explore Willows’ 6.5 acre Pumpkin Patch filled with 20,000 pumpkins, and pick their very own to take home between 21- 29 October. Hertfordshire’s largest Beer & Cider Festival, run by the South Hertfordshire branch of the Campaign for Real Ale, will this year have featured at the Alban Arena for 22 years. With over 300 cask-conditioned real ales, 50 bottle-conditioned beers, 50 ciders and perries and 80 foreign beers there’s something to suit everyone’s taste! Following the increasing demand for places at Edge Grove, the school is excited to be extending its current Nursery provision this September with the opening of a new state-of-the-art Pre-School in Church Lane, Aldenham Village.

The annual Willow 10K on Sunday 1 October includes a shorter 5K route, a 1K junior race plus Tiny Tots Scamper, making it a great day for the whole family with access to Hatfield House for the day. The event will raise funds for Hertfordshire based charity, Willow – the only national charity working with seriously ill young adults aged 16 to 40 to fulfil uplifting and unforgettable Special Days. Open seasoned runners, gentle joggers, beginners or walkers, there’s something for everyone on the rural race route which starts and finishes in full view of the regal Hatfield House. The Willow 10K provides an exclusive opportunity to see hidden parts of the picturesque Hatfield House estate not normally open to the public. The race is open to everyone – all shapes, sizes and abilities. For those who have never taken on this kind of challenge before, we’d encourage them to get involved and take it at their own pace. The feeling of accomplishment when people face their fears and complete the race will result in a Special Day of their own. Since 2009 the Willow 10K has been a hit with people of all ages taking part and they have raised more than £340,000 for the Charity. This year’s 10K promises to be another great event, with places still available but going fast. Every runner will be timed and receive a medal as they cross the finish line. There will be an energetic warm-up and live music all making for a fun and motivating atmosphere. Airstream back in the UK at the Motorhome and Caravan Show I f staying in a motorhome or caravan isn’t your idea of holiday heaven, then think again. There are more than 1.7 million leisure-vehicle users in Great Britain, sleeping more than 50 million nights in caravans each year and spending almost £2 billion on caravan holidays in 2016. With numbers like this, it’s no surprise that 100,000 visitors are attracted annually to the Motorhome and Caravan Show, which takes place this year from 17 to 22 October at Birmingham’s NEC. It’s the venue for all the 2018 product launches with over 700 vehicles on display. One important unveil at this year’s show is the Airstream range, which returns to the UK with a new distributor – Swift Group is Britain’s largest leisure vehicle manufacturer – after a couple of years’ absence. The iconic, silver bullet-shaped Airstream was created by the USA’s Wally Byam back in the 1930s, with the manufacturing principle of riveted aluminium sheets over a ribbed frame still the basis of the hand-built product today. Three models for the UK include the 8.25 metre-long Colorado, which sleeps four and retails for just under £92,000.00. The slightly smaller Yukon and Missouri models start from around £78,000.00. Enthusiasts can stay in an Airstream at campsites around the world and even hotels: Airstreams feature as a rooftop accommodation option at the Grand Daddy Hotel in Cape Town, South Africa.

Airstreams have been used by NASA, including a mobile quarantine unit that met the astronauts Neil Armstrong, Buzz Aldrin and Michael Collins as they touched down in Apollo 11. Ingredients: 250g whole almonds, pistachios, pine nuts or sesame seeds • Flavourless oil, for greasing 200g granulated sugar • 100g honey • 1/2 lemon method: 1. If the almonds have skins, plunge them in boiling water for a couple of minutes, drain them, then slip the skins off. If you are toasting your nuts, preheat the oven to 150C/130C fan/gas mark 2 and roast them for five minutes, or until they are very pale gold. If you like, chop the nuts roughly. 2. Lightly grease a heatproof work surface or line a baking tray with greaseproof paper. In a small heavy-based pan, melt the sugar and honey over a low heat, then increase the heat until it is boiling at the edges - but be careful, it must not burn. 3. Add the nuts or seeds and stir vigorously for another minute, then tip onto the prepared work surface or baking tray. Use a wet palette knife or metal spatula to press the mixture flat, then rub it with the cut side of a lemon. 4. Allow to cool. To serve, break into pieces. It keeps well in an airtight tin in a cool, dry place.

SUMMER AT AUBERGE DU LAC Matt Edmonds is Head Chef at Auberge du Lac, the award-winning restaurant nestled in the Brocket Hall Estate
W
elcome to the first entry of my first column! As you have probably guessed from my job title, this column is going to be all about food and what I get up to in and around the Auberge du Lac kitchen. Luckily for you, my job is pretty interesting and I get to meet all kinds of interesting people too, so hopefully you’ll enjoy what I have to say… I have been Head Chef at Auberge du Lac since the restaurant re-launched in February of this year, and I must say, I could not think of a better place to work right now – who else gets to look out of their window at work and see a pheasant striding across the grounds? The Brocket Hall Estate is home to an array of wildlife and the scenery is simply breath-taking. After five months on the job, I have now found my bearings and can navigate the Estate pretty well – five months may sound like a long time to find your way around, but I can tell you that 543 acres is an awful lot of land! The best thing about exploring the Estate has been discovering the many foraging hotspots – foraging has always been a passion of mine, and where possible I love to use wild, hand2 2 SEPTEMBER 2 0 1 7
picked ingredients in my dishes. This month it’s been all about elderflower and cherries. There’s been a great supply on the Estate this year, and the surrounding fields and woodland areas have come in handy too. I have been sneaking out of the kitchen whenever I can to pick these ingredients, and I’ve even roped my two young sons in to help me too – it’s great fun for them, and I think it’s so important that children understand and are interested in where food comes from. I’m also passionate about supporting British producers and I source fresh, seasonal ingredients from trusted local suppliers whenever I can. My favourite ingredient at the moment has to be the baby beetroot - It’s so versatile and ridiculously tasty, so I’m currently weaving it into many of my dishes. Right, it’s back to the kitchen for me – if you’re interested in seeing what I’m creating with my foraged finds and other seasonal ingredients, do come and join us at Auberge du Lac… and do try and pick a sunny evening so you can enjoy the terrace and beautiful views!
1 bunch Baby Candy Beetroots; 1 bunch Baby Ruby Beetroots; 1 bunch Baby Golden Beetroots; 1 bunch Ruby Beetroots; 500g Merlot Vinegar; 250g Water; 125g Sugar; 12 Sprig Thyme; 1 Clove Garlic; 1tsp Mustard Seeds; 10 Granny Smith Apples; 50g Sugar; 85g Lemon Juice; 1 Vanilla Pod; 250g Hazelnuts; 250g Pumpkin Seed; 250g Oats; 250g Squash Seeds; 4tbsp Honey; 1tsp Ground Cumin; 1tsp; Light Curry Powder; 1tsp All Spice; Vegetable oil; Sea Salt To serve Goats Curd; Granny Smith Apple Slices; Salad Leaves Baked baby beetroots - Take the baby beetroots - salt, oil, wrap in tin foil and bake at 180*c for roughly 20mins until just soft. Peel skins gently and trim. Save the inner leaves from the beetroot and mix them through the salad leaves to serve. Pickled Beetroot - Slice Ruby Beetroot thinly into discs. Bring the merlot vinegar, water, sugar, thyme, garlic and mustard seeds to boil and pour over beetroot, cover and leave (preferably overnight). Granny Smith Puree - Peel, Quarter and Core the Apples. Slice finely and place in pan. Add lemon Juice, 50g Sugar and add the halved and scraped Vanilla Pod. Cook on a medium to high heat stirring continuously until cooked and quite dried out. Blend on high speed until completely smooth Granola – In a frying pan, toast hazelnuts, pumpkin seeds, oats & squash seeds. Separately, toast cumin, curry & 5 spice. Add all together and bind with the Honey, a little sunflower oil and season with rock salt. Serve with finely sliced Granny Smith apples, goats curd and salad Leaves. Enjoy! TOP TIP – Save the inner leaves from the beetroot and mix them through the salad leaves!

As well as eight Proms Chamber Music concerts at Cadogan Hall, the series presents choral music at Southwark Cathedral, music theatre at Wilton’s Music Hall, new and experimental music at the Tanks at Tate Modern, and returns to Bold Tendencies Multi-Storey Car Park in Peckham featuring The Multi-Story Orchestra and Youth Choir. Concerts designed especially for new audiences include Gerard McBurney’s Beyond the Score, which combines actors, projections and live musical examples who explore the history of Dvořák’s ‘New World’ Symphony, and Beethoven’s ‘Eroica’ Symphony, deconstructed live on stage by Tom Service and conductor Nicholas Collon, before a performance from memory by the Aurora Orchestra. The BBC National Youth Orchestra of Great Britain will also make their annual appearance at the Proms. Beyond the performances, the Proms offers ways for audiences to learn more and get closer to the music through a series of contextual events, including 72 Proms Extra events – free daily preconcert talks, readings, film screenings, workshops and participation events for all ages. Every Prom is broadcast live on BBC Radio 3, and in a UK first, the entire festival will be streamed in the highest quality audio the BBC has ever broadcast, as a lossless audio stream at bbc.co.uk/ proms, letting listeners experience the concerts as if they were at the Royal Albert Hall. ertfordshire’s largest Beer & Cider Festival, run by the South Hertfordshire branch of the Campaign for Real Ale (CAMRA), will this year have featured at the Alban Arena for 22 years. With over 300 cask-conditioned real ales, 50 bottle-conditioned beers, 50 ciders and perries and 80 foreign beers there’s something to suit everyone’s taste! The Festival prides itself on selling a diverse range of styles, including the more elusive styles such as Mild, Stout, Porter and Old Ale. henever I reveal to strangers that I teach languages to secondary students, the response I’m usually offered is one of regret that my conversation partner didn’t pursue his or her language studies past the compulsory level. Being able to speak a foreign language is one of those impressive qualities which sets one apart from the crowd, especially in the highly competitive world of university entry and beyond. Put quite simply, being able to speak a foreign language is something the majority of Brits never master to a high standard, meaning those who do are worthy of being celebrated. Language students show determination, resilience, academic grit and intercultural understanding. A language exchange can, and should, be a life-changing event. Going abroad, living with a family you’ve never met, attending a school with a significantly different routine and finding new pastimes in a new culture would be a big ask in an English-speaking environment, such as Australia or the US. Throw into this mix the fact that your every interaction needs to be in a language one is still coming to terms with and you have the makings of the kind of experience that enables your son or daughter to grow and mature in a way no other offering from your school’s list of activities and trips can. Language learning is a slow process, much like learning a musical instrument. Just like an instrument, you need short bursts of daily practice.
With this in mind, both parents and students need to be realistic about what can be achieved in the time made available. Many school exchanges these days are only a week long which, whilst they might help give context to the language and country of focus, will only do so much for fluency. The extended summer break presents an excellent opportunity for young people to go abroad for near on two months. Many schools in Germany, for example, are in session during parts of the British summer break, meaning time can be spent in school (where the bulk of language learning is most likely to occur) as well as experiencing the summer with their host-family. There’s more to gain than simply practical language skills. Exchange students soon learn to be self-reliant and independent. They need to make informed choices about whom they choose as friends, for example, and how they save or spend their money. Many parents fret over their son or daughter’s choice of language at school. My advice would simply be to do whatever you can to ensure that, whichever language they’re learning, that they have a positive experience, and come to terms with how to learn languages per se. Once you’ve started to master one, it’s easier to take on a second, or even a third. Whilst many schools offer the chance for your child to take part in a city visit (say, Berlin, Madrid or Paris), opting for either a school-based or a private language exchange programme will, by far, provide the opportunity to make real academic strides in a foreign language. You’re most definitely going to say something embarrassing and destroy an intricate ballroom dance routine for ten German couples because you have no idea what you’re doing (not that this ever happened to me!), but the language skills, self-confidence and independence that an exchange equips young people with make such small shortcomings worthwhile. I don’t have a gift. I also don’t have any German background. I simply did a three-month exchange to Hanover after Year 11. I managed it, and so will your child. www.mtsn.org.uk

his year has been quite remarkable for our Year 8 boys. Not only have they gelled to be a very effective group of prefects, but they have returned an incredible haul of scholarships, with some gaining places and offers of awards at multiple schools. What makes the success even sweeter is the memory of when they were in Year 6, where their academic potential was less obvious. They have proved, beyond any doubt, that the journey we take our senior boys on is a rewarding and exciting one; where they blossom at the top of the school and leave us in the best possible shape, ready for the challenge of senior school.

he international fashion weeks give us their fair share of out-there beauty looks, and while a face covered in real flower petals a la Preen looks ever-so pretty on a load of impossibly beautiful teen models, it’s not exactly going work for Thursday night after-work drinks, is it? Three cheers, then, for the SS17 catwalks, which delivered a host of beautiful make-up ideas in soft, organic tones that you’ll definitely want to try. “These colours are designed to enhance and mimic really great skin condition,” explains MAC make-up artist Terry Barber. “The modern way to wear them is in textures that have an affinity with the complexion. “Peach, pink and tan look alive and fresh when applied with transparency,” agrees Mark Carrasquillo. “They are what I call very heightening colours.” Ready to heighten your look? 2. Tan lips The Nineties brown lip isn’t going anywhere this season. In fact, at the SS17 shows, we got three new takes on the trend. The most literal homage came at Moschino, where precisely-lined lips were filled in with matte pale tan. Botox Myths ! d e t s u b The patient furrowed her brows, clearly uneasy. “Botox? Really? I’m not sure…”
T
he irony was that the more concerned she got, the more clearly I could see how treatment with botulinum toxin (aka Botox) would benefit her. The frown lines between her eyebrows were deep, and so when she frowned, she looked unnecessarily severe. Botox, which relaxes the muscles that cause facial creases and wrinkles, would soften her look considerably. It is easily one of the top 5 cosmetic procedures in the world, used both by men and women to get rid of wrinkles and lines. It also has over 20 medical applications from preventing migraines to stopping excessive teeth grinding. Yet it is also one of the most misunderstood, with several myths persisting despite being completely untrue. Let me set the record straight on three of the most common ones I hear.
1. MYTH: Botox makes you look frozen and unnatural. You end up looking like a plastic mannequin… This usually happens when patients are given very large doses meant to last six months or longer. It’s not the approach we generally take here at Riverbanks. The aim with Botox is to soften lines, making you look younger, smoother and more relaxed – not to stop your face from moving.The key is to use small amounts of Botox relatively often. When you give subtle doses which last three or four months, the result will be completely natural. You will still be able to express surprise and smile (…in fact, you’ll do so often, because you’ll look so great!), and no one will be able to guess that you have had any work done.
2. MYTH: It hurts to get Botox. Hardly: You will experience far more pain plucking your eyebrows. That’s even truer for patients here at Riverbanks. The smaller the needle, the better it is tolerated. 6 4 SEPTEMBER 2 0 1 7
Over the past year, we’ve started using a new type of needle which is just 1/10 the size of a blood test needle. To the best of my knowledge we are the only clinic in the UK to use them. They are so effective that often, patients ask me when I’m going to treat a certain area, and are shocked to hear I’ve already finished it. They never even noticed!
3. MYTH: When you stop using Botox, your wrinkles look worse than before. If you’ve only had one or two Botox treatments, your skin will revert to its previous condition a few weeks after the Botox has worn out. If you have been using Botox long-term, your wrinkles will start reappearing over three-to-six months. More importantly, you will look healthier and smoother than before your started the Botox. There is no evidence whatsoever that they will look worse than before you started. More likely, people who have become used to having smooth, wrinkle-free faces have simply forgotten what they looked like beforehand…. : -) Any Botox questions of your own? How good is your eyesight? W
e can legally drive our cars at 70 mph – but are our eyes up to
the challenge? Mr Jitendra Tolia, a Consultant Ophthalmologist at Spire Harpenden Hospital in Hertfordshire, says that, provided we have our eyes tested regularly and wear the glasses prescribed then, on the whole, we are safe behind the wheel. So are your eyes in good driving order? Mr Tolia answers some much-asked questions. Mr Jitendra Tolia is a Consultant Ophthalmologist at Spire Harpenden with 31 years’ experience. He has performed over 20,000 cataract procedures and also treats macular degeneration, glaucoma and carries out YAG laser and eyelid surgery for cysts. Mr Tolia firmly believes in treating the patient and not just the disease. 7 4 SEPTEMBER 2 0 1 7
Do you think that the law is strict enough on ensuring people can see well enough to drive? Generally the acceptable minimum vision is fine. There are caveats though that can make a driver unsafe in certain light conditions when on the road. The most important being the failure by drivers to use their prescribed glasses. I think there should be random checks to see if people are wearing suitable glasses. Just carrying glasses in the car is not enough; they should be wearing them. Would you like to see the law changed? The law is fine - it is the implementation that remains a problem! Not wearing the glasses prescribed is something that could be looked at. I believe that on the continent anyone wearing glasses or contact lenses must carry a spare pair in the car so they don’t find themselves driving without the appropriate correction whether it is contact lenses or glasses. Apart from short sightedness, what other eye conditions can affect the ability to drive safely? Long sightedness can be equally debilitating, especially when the range of focussing ability is reduced to zero by the age of 60. The light conditions also affect the ability to focus, so a mild degree of short sightedness in the day
will become exaggerated and may well push a driver into having less than the legal minimum vision for driving at night. By the same token, in bright light, certain types of cataract have a much greater effect on the vision and could effectively render a person blind. Can wearing tints or lens coatings improve the situation? I personally would not recommend tinted lenses as they may be useful in good light conditions but, at night, would reduce the light going into the eye and therefore reduce the quality of vision. What about people suffering from cataracts? I would suggest that anyone with cataracts makes sure they have their eyes tested on a regular basis. There are three main types of cataracts which can affect vision. The effect on driving of different types of cataract are listed below: 1. Nuclear cataract- difficulty with night driving and in dim light. 2. Posterior sub-capsular cataract – difficulty when driving towards the sun. 3. Cortical cataract- usually flare, seeing a star burst type effect around lights such as street lights or car headlights. www.spireharpenden.com

Woven stories for bespoke spaces

eerali believes that interiors should be a balance between unique character and complimentary storytelling that weaves experiences together. For the design of Aria, the show home was inspired by the leafy countryside of Hadley Wood, allowing of the introduction of specific tones and colour palettes, giving an edgier look that could compliment and soften the monochromatic architectural details. The resulting design has a formal yet relaxed feel. The abstract artwork and quirky details give the interiors a unique style. It’s a dramatic statement, with a sophisticated elegance which runs through the property and is exemplified by the chosen light fittings, furnishings wallpapers and fabrics. Neerali works primarily on residential projects based in Aldenham, Herts, focusing on designing for both private individuals and developers, with clients within the Hertfordshire, Berkshire and Surrey areas. Her signature approach spans many styles in order to deliver truly bespoke and tailored designs for each of her clients. Neerali believes in fully engaging with the clients by listening to and understanding project brief in order to produce a holistic concept and design. Her starting point for any design is to find an inspirational focal point; whether it be in fashion, architecture, product design, graphics or even a

colour theory. For Aria, all of these played a part in crafting the interior vision. Playing off the masculine style of the architecture, with the monochromatic details highlighting the high ceilings and large windows, and expansive views across Hadley wood, inspired the design to bring the feeling of the outdoors into the space. The design was heavily influenced by nature to have a subtle autumnal feel with hues of emeralds, purples captured in the antique mirrored and brushed gold tones of the furnishings and the soft furnishings. It also balanced out the house with complimentary tones to soften the hard architectural details, allowing for the space to be more approachable and to be more attractive to a wider potential audience. “My favorite room in the house, is the formal Living space,” says Neerali. “It has the perfect amount of drama, yet is understated and luxurious all at the same time. From the velvet used for the occasional chairs, to the antique mirrored coffee tables that have such a classic and elegant look, yet really work well with the contemporary joinery.
