The Little Welly Returns to Henley on Thames Let your kids Go Wild, Get Muddy and have a ‘Best Day Ever!’

FROM five arrows hotel Minted Lamb Pie, Roasted Asparagus, Fresh Peas and Broad Beans, Lamb Sauce (serves 4)

B

uckinghamshire’s Five Arrows Hotel has recently re-launched with a brand new look, and an entirely new food concept.

We’ve teamed up with the iconic arts and crafts hotel to bring you a first-look at one of those dishes, a wonderfully rustic minted lamb pie… because it’s spring after all.

Ingredients For the Pie Filling • 2 lamb shanks • 1 carrot, peeled and roughly chopped • 1 white onion, peeled and roughly chopped • 1 stick celery, sliced • 3 sprigs thyme • 1 sprig rosemary • 1 bunch mint, leaves finely chopped, stalks left whole • 2 cloves garlic, whole • 1 bay leaf • 5 whole black peppercorns • 1L lamb Stock • 1 tsp tomato puree • 500ml Rothschild red wine For the Pastry • 200g cold lard, diced • 200g cold butter, diced • 800g plain flour • Ice cold water • 1 egg yolk

Method Pie Filling: • In a deep casserole pan, heat vegetable oil and season the lamb shanks with sea salt and seal off on all sides until golden brown.

• Remove from the pan and set aside. Remove any excess fat from the pan and sweat the carrot, onion, celery, garlic and herbs (except the mint leaves) until lightly browned.

• Stir in the tomato puree and cook out for a few minutes.

• Deglaze the pan with the red wine, and when reduced by half pour in the stock and gently lower in the shanks.

• Bring to the boil and immediately reduce the heat to barely a simmer. Cover and braise for

three hours until the meat is juicy and tender.

• After three hours, gently lift the shanks out of the liquor, drain and cool slightly. Once cool enough to touch shred the meat, keeping the chunks in rustic sized pieces.

• Pass the braising liquor through a fine sieve and into a clean pan.

Lamb Sauce: • Bring the braising liquor to a rapid boil and reduce to a thick sauce.

• Set aside half for serving with the pie.

• Mix the rest of the sauce with the lamb meat, add finely chopped mint at the last minute and season to taste.

• Allow to cool completely before reserving in the fridge until you are ready to make the pie. This can be done up to 24 hours before.

Pastry: • In a food processor, blitz the lard, butter and flour with a pinch of sea salt until a sandy crumb is formed.

• Slowly pour in the cold water until a smooth but quite dry pastry is formed.

• Wrap in cling film and allow to rest in the fridge for an hour.

Build the Pie: • Preheat the oven to 180°C. • Take the pastry out of the fridge a couple of minutes before use to raise the temperature.

• On a lightly floured surface, roll the pastry to the thickness of a pound coin. Cut two 18cm circles for the bases, and two 10cm circles for the lids.

Refrigerate.

• Take one of the bases and place the filling in the centre, making sure it is tightly packed. Gently raise the pastry around the filling and add the lids.

• Brush the top with egg yolk and a pinch of salt, and crimp around the edge to give a nice presentation. Cut a small hole in the top to allow steam to escape.

• Place the pie on greaseproof paper and bake for 30 minutes until the pastry is a light golden brown.

Offer the ultimate protection to your loved ones when going through divorce

N

o one likes to think about death, particularly when going through the stress that the divorce process can bring.

However, it is vital to look beyond the present and plan longer term. As well as seeking advice from a family lawyer on your divorce, it is essential to speak to a wills, trusts and probate lawyer too as they can help you to create or update your will. This is important for a number of reasons: • Your soon to be ex-spouse or civil partner could inherit from your estate if you have not made a will and pass away before the decree absolute; • You wish to appoint guardians for your children; • You still wish for your former spouse to benefit

from your estate after divorce in the event of your death; • The previous appointment of your spouse as the executor of your will is invalid after the divorce is finalised.

When creating a will, it’s important to think about your inheritance tax liability (IHT). By previously being able to leave all or part of your estate to your spouse or civil partner, anything you had left to them would have been free of inheritance tax.

Following your divorce, your estate will be subject to IHT on the value exceeding your nil rate band allowance (currently £325,000 for an individual or £450,000 for a property you are leaving to your children or grandchildren).

Despite the divorce, you may still want to include your ex-spouse or civil partner in your will. To ensure they can inherit you must sign a new will, as the effect of divorce on a will is that your former spouse is treated as having predeceased you.

Discretionary trusts Under the terms of a discretionary trust, it is your chosen trustees who will ultimately decide how to distribute your estate between potential beneficiaries which you will have named. This flexibility enables your trustees to make decisions based on the circumstances at the time you pass away rather than you trying to predict all possibilities now. You would leave guidance to your trustees in a letter of wishes; this letter can be updated as often as you like, usually without the need to change the will itself (and avoid incurring further costs).

This flexibility makes a discretionary trust structure incredibly helpful in divorce situations. If the will is created pre-divorce, it can be used as a ‘stop-gap’ and, following the decree absolute, it is

usually just a matter of updating the letter of wishes rather than the will itself. Furthermore, both preand post-divorce, the trustees have the power to include the former spouse as a potential beneficiary and could therefore prevent a claim against your estate by making reasonable provision for them, taking into account the divorce proceedings and any agreed financial arrangements.

It can be difficult to think about anything else beyond your divorce, but this would at least cover the basics and ensure that assets will pass to your chosen beneficiaries.

• B P Collins’ family team can also advise you about dissolving any joint tenancy on a key asset such as your main home, so it doesn’t automatically go to your spouse or civil partner if you pass away before the final decree of divorce comes through.

How can B P Collins help plan for your future when the divorce has been finalised?

• Once your divorce has been finalised, B P Collins can update your will by having an in-depth examination of your new circumstances, wealth and assets. We would always advise on inheritance tax planning to ensure that your estate is left to your heirs in the most tax-efficient way possible. We can also advise on your will if you remarry, as any existing will arrangements would then be revoked.

Real life case study Claire and John* are going through a divorce. They both own their main home as joint tenants. This means that they own the entirety of the property jointly and in the event of death of either of them, the property would pass automatically to the survivor.

B P Collins advises: To own a divisible share in the property, we would advise on severing the joint tenancy and making a will. This means that if one partner dies prior to matters being resolved and before the decree absolute is obtained, the other partner would not take all of the house as the surviving joint tenant. That share would pass in accordance with his or her will. If they haven’t made a will, the rules of intestacy would apply so unless you have your decree absolute, your spouse would still inherit, defeating the purpose of severing the tenancy.

We’re all going on a summer holiday – or are we?

C

hristmas is over, Half-term has been and gone, Easter is right around the corner.

You may even be planning your summer holiday. For those with children it can seem as if the countdown to the next school break is never-ending. For separated parents, this brings with it the risk of issues regarding the arrangements for the children which need to be discussed and agreed with the former spouse or partner. Indeed, what should be a time of leisure and excitement can often involve additional strain on many people when making arrangements to spend time with family and friends, especially if the whereabouts of the children during those times is yet to be agreed between the parents.

Here are some thoughts and tips which may be useful when trying to agree arrangements for your children:

Communication There can often be a temptation to use the Holidays (particularly the first one after a separation) to make a point to your former partner or spouse about how well you and the children are doing following the separation. However, this is only likely to increase animosity between you and it is almost certain that it will not benefit the children.

Therefore, my tip for communication during the holiday period is to keep it to a minimum, potentially with messages limited to dealing with the children’s arrangements only. Also, a simple message to the other parent when you have the children in your care about the children having a nice time should be fine but there is no need for the message to dwell on any other point or for it to imply that you or the children are not missing the other parent.

Arrangements for children For any parents thinking about the arrangements for their children over a holiday period, it is understandable if this feels difficult to address with your former spouse or partner. My first tip for dealing with children arrangements over any holiday period is to avoid any sense of competition. It can be all too easy to want to provide a ‘better’ Easter, Summer or even Christmas for your children, but as a parent your focus should be on what will make the holidays best for the children – and this likely involves quality time with both parents.

For some parents, their arrangement means that they alternate Easter. Some parents may not have the ability to take the children on holiday. If you find yourself in such a situation, then try not to worry about this or feel ‘left-out’. Instead, try to make the most of your time with the children on the day(s) you will be spending with them. You can 38 APRIL 2019

even include a full repeat of Easter Day or at least a repeat of some of the activities. I suspect many children would not complain about having a second Easter-egg hunt!

Compromise Another tip is to be prepared to compromise on some aspects of the arrangements in order to reach an agreement with the other parent. You will no doubt each have your own wish list and it requires compromise on both sides to reach an agreement that works for both parties.

Legal advice Finally, if you are concerned about being able to reach an agreement with your former partner or spouse about the arrangements for the children over holiday periods or if discussions have not yet led to an agreement, then you may wish to consider taking legal advice about this.

Your solicitor will also be able to consider with you the methods by which you may be able to negotiate a settlement with the other parent, including through solicitors, at mediation or, if necessary, by way of a Court application.

Stoke Park’s Executive Chef, Chris Wheeler, joined forces with his former boss, French star JeanChristophe Novelli, Masterchef ‘The Professionals’ finalist Louisa Ellis, The Miller of Mansfield’s Nick Galer, Dez Turland, Hari Ghotra and the All England Club’s Robert Kennedy to serve up a magnificent 7 course culinary experience.

Each Chef created one course each, with all the Beef and Lamb on the menu being Quality Standard Mark certified.

The event held in Stoke Park’s stunning Fountain Room began with a champagne reception with Pommery Champagne, followed by the dinner accompanied by fine wines from Justerini and Brooks.

As each course appeared, each Chef came out to explain their dish and answer questions from the delighted guests.

FROM GIGGLING SQUID Founder Pranee Laurillard shares her recipe for this popular dish

PRAWN PAD THAI (serves 1) Ingredients: • 50ml Grape seed oil • 6 Shelled & de-veined tiger prawns • 70g 3mm thick rice noodles • 30g Diced Tofu • 10g Sliced red onion • 50ml Vegetable stock • 10g Chopped turnip • 1 Egg • 1 Lime Wedge • 70g Beansprouts • 10g Thai Chives (or garlic chives if more readily available) • 1 tbsp crushed roasted peanuts • 2 sprigs of fresh coriander • 2 red chilli sliced • 4 tbsp Pad Thai sauce (see below) Pad Thai Sauce • 3 tablespoons tamarind juice • 50ml cold water • 50g palm sugar • 2 tbsp fish sauce • 2 cloves chopped garlic

Method Step 1 Soak the rice noodles in warm water until they are soft.

Step 2 Drain the noodles and set aside Step 3 Heat the grape seed oil in a wok over a high heat until it starts to smoke (this will happen quickly) Step 4 Carefully add the tiger prawns to the wok until pink stirring all the time Step 5 Add the chopped turnip, diced tofu and sliced red onion cook for one minute Step 6 Crack the egg into the wok and stir fry until the egg is cooked, which should take about one minute Step 7 Add the drained noodles, Pad Thai sauce and the stock then bring back to the boil, which should take approx. 4 minutes Step 8 Add the beansprouts and Thai chives Step 9 Plate up and garnish with lime wedge, red chilli, fresh coriander and crushed peanuts. horpe House School is an independent boys’ day school in Gerrards Cross which takes boys from age 3 when they join Thorpe Explorers’ Nursey to 16 when they complete their GSCEs. How long have you been Head of Prep at Thorpe House?

I started at Thorpe House as a Year 3 teacher in 2013 and became Head of Prep in September 2015.

What makes Thorpe Prep Department such a great place to learn?

The formative years of childhood are the prep years (ages 7 – 11) so we encourage all boys to develop vital life skills – not just for their time at school, but also for the rest of their lives. It is impossible to develop a child’s character in the classroom alone, hence the significant amount of time spent on the sports field as well as in the performing and creative arts departments.

Does experience come with age?

A fter 23 years’ service as Headmaster of Westbrook Hay, I would reckon I have seen most that can happen in a school and have dealt with thousands of parents and their various aspirations. Is there any form line that can be traced?

Without doubt the single biggest decision is when is it the right time to make the move. Over the years my sofa has been sobbed on (metaphorically mostly ) by parents who tell me of their underperforming children, who are bored in classes of 30 and have reached the point of not enjoying their schooling. An oft proffered line is that they looked at Prep schools before, but decided to join their local State primary school because it was a) close to where they live b) all their friends were going or c) they didn’t really understand the differences in State and Independent schools, possibly as they had no experience of the latter.

When these Year2,3 or 4 children come for the taster day, we want to see what they can do in the context of a normal school day, as we do not have an entrance test, but from this visit it is usually clear that our children of the same age are further on in their skills and knowledge than the visitors from the local Primary schools. This shouldn’t be a surprise, as we have several advantages.

Children who have been with us from Nursery

are prepared in the gentlest sense for entry to Reception – a good deal of this involves enjoying the wonders of our 26 acres as they explore their surroundings. Reception offers the opportunity to consolidate the reading and writing that has emerged, an ease with numbers develops and children begin to take an active part in their learning.

Building on this through Year 1, where subject specialist teaching begins in some subjects, it really is no surprise that those who have benefitted from all this are further along the path.

School swimmer meets Olympic legend Adrian Moorhouse takes time out of his busy schedule to chat with Ellis in Year 11 at Thorpe House School

oys at Thorpe House School in Gerrards Cross have been enjoying swimming lessons in their newly covered swimming pool, a facility that was opened by Olympic gold medal winner Adrian Moorhouse MBE. Ellis (Year 11), part of of the school’s elite swimming team and a member of the senior performance squad at Wycombe District Swimming Club was given the opportunity to interview Adrian about his swimming career and his journey to the Seoul Olympics in 1988: What used to motivate you to get up and train?

I was motivated by two things, I liked competing but I also liked mastery; I wanted to learn and do everything better. Between the ages of 12-13 I was also bullied, so I swam as a way of keeping my head down and not being around other people.

What did you do to prepare yourself for a race?

Preparation is everything; an hour before a race I found myself a quiet place. I’d read a book, listen to music and as it got closer to the race I visualised swimming it. The final piece of prep was thinking about what I could control next, so as I walked into the Olympic ‘ready room’ for the final, all I was thinking about was getting a good dive because that was all I could do next.

How did you feel when you won your gold medal in 1988?

I was 24 and winning a gold medal is a good feeling as you might imagine! It was my second Olympics; I was hoping to win in my first when I was 20 and I was devastated when I didn’t. Sticking with it and coming back to win was really special. It was also closing the loop on a childhood dream.

How do you deal with defeat?

I was never a bad loser. I used to reflect on what I could do differently or better. I was never angry or bitter and even when I won, I was thinking about which bit of the race I could have done differently.

I did get upset, particularly after my first Olympics, but eventually I got some perspective and every race I went into after that I thought, it can’t be as bad as that.

An exciting new chapter

S

harpe Academy of Theatre Arts is embarking on an exciting new chapter.

After eleven years teaching part time classes to children aged 3-18 across North West London, Sharpe will be launching their first full time course. This will be a 3 Year Diploma in Professional Musical Theatre for performers aged 16-25.

This intensive vocational Musical Theatre course will be aimed at students who, after completing sixth form or degree level study, wish to train for a career in Performing Arts. The course will be based at Sharpe Academy’s new home – Harrow Arts Centre. A newly renovated building will house the Academy, giving students access to well-equipped dance studios, classrooms, a café and a state-of-theart 450-seat theatre.

Students who study on the course will have weekly lessons in Ballet, Tap, Jazz, Contemporary, Acrobatics, Musical Theatre, Singing, Acting through Song, Stage Acting, Acting for TV & Film, Audition Technique, Music Theory, Performance and will aim towards regular showcases and productions. An annual Musical and an annual Dramatic Play will also be staged in the on-site Elliot Hall theatre.

The faculty is made up of international performers and experienced teachers who specialise in the performance industry. Principal Daniel Sharpe spent many years touring the world in musicals such as Evita, Chitty Chitty Bang Bang and Lullabies of Broadway. Daniel also represents professional performers as an Agent, sending

graduates to auditions for Performing Arts jobs around the world. Artistic Director Vicki Manser is currently in the West End production of Six the Musical, and Head of Musical Theatre Emma Barr is in the West End production of Les Misérables.

Guest lecturers and performers will also be invited in on a weekly basis to work with students, allowing them to discover new dance styles and production workshops.

Sharpe Academy is offering a FREE AUDITION to anyone in school year 11 and above who is aiming for a career in Performing Arts and who wishes to apply for the course. To audition, students will need to prepare a musical theatre song, a drama monologue and attend a dance audition.

hildhood is considered the most important period in a person’s ‘dental life’. For some, a visit to the dentist can stir up emotions from apprehension to anxiety. Starting with their first visit to us, we build a rapport with them; we understand the importance of talking to them about their visit and always explaining what we are doing, to help alleviate fears. We firmly believe that this approach prepares children to enter adulthood with a positive attitude towards dental health, which centres around our philosophy of implementing preventative regimes in their routine care against decay and gum disease.

Teaching them how to clean effectively is absolutely vital. .... does it really matter, their milk teeth will fall out anyway?

I hear this a lot! Decayed or damaged milk teeth can affect the health of the adult tooth that follows.

Also, I call milk teeth space maintainers; they guide and influence the positioning of the adult teeth and so should be looked after well.

What is our top tip for looking after children’s teeth?

Top two — Brush twice a day with a fluoride toothpaste and reduce the frequency of sugary foods in their diet! We see a lot of kids at Sorriso Dentistry with gum problems and decayed teeth related to poor brushing habits and sugars in the diet.

Should my child have an Orthodontic Consultation?

At Sorriso Dentistry we recommend all children should. For our older children, we keep an eye on their facial growth and dental development from an orthodontic perspective anyway, so that we are able to intercept any early problems and then begin the process of braces at the correct age if they wish.

Braces are not just about straightening teeth, it’s the way you bite, jaw formation and maintenance of good oral and dental health in adulthood.

What age should my child first visit the dentist?

We advise their first visit at 12-18 months once the first teeth are through. We can identify any risk factors early on and discuss these with you.

By 2-3 years old they become familiarised with the environment so its not intimidating, and we can advise on toothbrushing, toothpastes and diet with you. By 5-6 years they should be visiting every 6 months as their mouths are a hive of activity. Your child should feel comfortable and assured with us should you need to turn to us for any problems.

Should I get a sports mouthguard?

Let’s not underestimate the importance of sports mouthguards. Their fragile, young adult teeth must be protected during contact sports like rugby, hockey, lacrosse and martial arts. We make customised mouthguards; well fitting and adapted to accommodate any new teeth that might be appearing soon. We know these fit well and so will be worn by them. Should my children be visiting a hygienist?

What should I do if my child suffers a knock?

Varicose veins are superficial veins of the legs that have become enlarged due to the valves in the vein that drains away being incompetent and creating back pressure.

How are they different to ‘flare veins’ or ‘spider veins’?

Flare or spider veins are small surface veins that become visible.

What causes varicose veins?

Multiple factors, family history is common, as is a minor injury to the vein in the past. Prolonged standing at work is another cause. Pregnancy is related to some varicose veins but varicosities are also common in men.

What treatments are on offer?

We offer Sclerotherapy in Outpatients for small varicosities or flare veins. Day case operations usually involve radio frequency treatment to seal the superficial draining vein incompetence with the 76 APRIL 2019

varicosities either being avulsed away (surgically removed via a 2-3mm incision) or injected with some foam to shrink the vein down. Many of these are undertaken under local anaesthetic.

What’s the recovery time?

The procedures and recovery range from as little as the duration of an Outpatient visit to a Day Surgery operation. If the patient has a local anaesthetic, they may leave 1-2 hours after the procedure. At most, a stocking is worn for two weeks after the procedure.

Are there any other treatments in the pipeline?

A new minimally-invasive technique called VenaSeal has been introduced which requires minimal local anaesthetic. It has just a single injection site and seals the vein with a polymer. The results of the new procedure are being followed up to ensure that they are durable, and/or as good as radio-frequency endovenous ablation. So at present it is not a routine procedure.
