A Village with an Ancient Past That Blends with Life Today This pretty village in Kent is situated roughly four miles north-west of Maidstone and is reached by a medieval five arched bridge. It is claimed that the village is the oldest in Kent and there is evidence that a settlement has existed at Aylesford since Neolithic times. A series of chamber tombs exist north of the village, with the most famous 1.5 miles to the north at Kitâ€™s Coty House. Several battles have taken place in the area. In 455AD Vortigern,( the leader of the British) defeated Hengist and Horsa ( brothers and leaders or the first Anglo-Saxon invasion) and in 893AD King Alfred defeated the Danes. The Danes suffered another defeat in the area, when in 1016, they fought Edward Ironside and in 1066, when William the Conqueror invaded the area, so taken was he with Aylesford, that he took it for himself! The oldest parts of the village can be found immediately to the north and south of the river. The Chequers Inn, and the George House, (which was once a coaching inn), are situated to the south. During the Victorian period, houses were constructed here, to house the workers at the nearby quarry. However, the brick and tile industries have now been replaced by commercial buildings and the Aylesford Paper Mills, once such a dominant feature in the village, have been replaced by television studios and a newsprint recycling plant. The railway station opened to the south in 1856 and resulted in more houses being built in the vicinity. The pretty church of St Peter and St Paulâ€™s sits on a hill to the south of the village. The oldest part of the church (the

base of the tower) is Norman, although it is believed that a church may have stood on the site even before this. The chancel and 15th century naves of the church are out of alignment suggesting that they may have been built at different times. Other interesting features include the swords and helmets (which hang in the chancel and chapel), the 17th century Culpepper tomb, a beautiful brass in the chapel floor and a spectacularly painted Victorian organ. No one should visit Aylesford without visiting Aylesford Priory. This peaceful and beautiful building, which is also known as the Friars, is situated on the banks of the River Medway. On his return from the Holy Land in 1240, Ralph Frisbane founded a Carmelite Monastery, under the patronage of Richard,Lord grey of Condor. The Friars is believed to be the oldest Carmelite house in England and is now a refuge, a conference centre and a place of pilgrimage. During the Dissolution of Monasteries by Henry VIII in 1538, the Friars passed into the hands of Thomas Wyatt of Allington Castle. Over the years the Friars changed hands frequently and can lay claim to an interesting and varied history. However, when it was put up for sale in 1949, the Carmelites, much to their delight, were able to buy it back. Friar Malachy Lynch set about restoring the buildings and within a short while it became a flourishing pilgrimage centre. The shrine was rededicated in 1965 and now serves as a centre of prayer for Christians. Pilgrims Hall Restaurant is the oldest building in The Great Courtyard at The Friars,

dating back to the late 13th century, when it served as a hospice for those pilgrims travelling to Canterbury. The Friars and grounds are open every day and entry is free. The Book and Gift Shop, the Tearooms and Pottery are open during the summer months (MarchOctober) as follows - Monday- Saturday, 10am-5pm and Sunday 11am-5pm. During the winter months (OctoberMarch) they are open Monday-Saturday 10am-4pm and Sunday 11am-4pm. The beautiful Peace Garden is set within the 42 acres of grounds that make up the Friars. The garden was designed to provide a quiet place for visitors and is situated in what was the unused main entrance to the Friars Gatehouse. The development of the garden was aided by a Lottery Grant in 2010, of ÂŁ46484.84. The beautiful garden is divided, by upright sleepers, into several small themed gardens, each designed with the intention of reducing stress and creating a sense of calm and restfulness. Texture, colour and scent play a big part. The garden has been designed to provide easy

access and range of different seating styles, in order to accommodate the differing needs of visitors. It is a place of tranquillity and calm that is hard to describe. If, during your visit you need to stop and revive, or you simply fancy visiting an old pub, then you can do no better than drop in at The Chequers Inn. This Grade II listed pub can be found in the High Street and was built in around 1511 as a merchantâ€™s house. It is the oldest surviving public house in Aylesford and by 1740 it was owned by the 2nd Earl of Aylesford -following which time it was extensively restored and was converted to an Inn. An attractive riverside patio was added in the 19th century. The pub boasts its original 16th century timbers and brickwork and has been listed as a place of architectural and historical importance. Many changes and alterations to the pub have taken place over the years and each has bought with it new revelations. While timbers were being cut away in 1958, some lead balls were discovered in a beam which had come from a flintlock pistol- possibly relics from 1648

when Royalist troops seized Aylesford to secure the river crossing from Parliamentary attack. In 1940 the Chequers saw more soldiers when the cellars were requisitioned by the War Department for use as a river command post. This truly is a pub with a wealth of history! Building a Dream in the Kent Countryside For many of us building our dream amounts to building an extension or, if we are lucky, to building our own home. However, one man’s dream went much further than this.

he name Petts Wood can be traced back to 1577 and can be translated as “the wood of the Pett family”. The Petts were a family of ship builders and they leased the wood as a means of sourcing timber.

Whereas many villages and towns in Kent have a history dating back to medieval times, it is interesting to learn that most of Petts Wood was built in the early 20th century and was the result of one man’s vision. Basil Scruby, a developer originating from Harlow in Essex, was the person behind the planning and development of Petts Wood. Scruby’s vision was to create a desirable residence for London commuters. Scruby had previously developed estates in Essex and in Peacehaven in Sussex but in Petts Wood he saw the chance of building a more “upmarket” county suburb and in 1927 he made the announcement that the 400 acre site was to be developed. Scruby was aware of the beauty and tranquillity of the surrounding countryside, which lay only 14miles from central London and he was keen to incorporate these qualities within his development. The site was divided up and plots sold to speculative builders who were able to build their own homes, so long as they

Scruby arranged the layout of the estate with its roads and infrastructure of drains, water, gas and electricity. Most of his money for the development came from Trust Funds and was handled by solicitors in Cambridge. The site was planned around two estates - The Town Court Estate, which had been in the ownership of the Walsingham Family for over 200 years and lay to the west of the railway and the Ladywood Estate, which lay to the east and had Ladywood House at its centre, built in the 1870’s in the style of a French chateau. Both the estates were made up of woodland with some farmed areas. Scruby wanted the houses to be built to a common standard with many of them built in the “Tudor” style. Scruby’s houses were all expensive and reflected the life style of the middle class commuters and professionals Scruby had envisioned living in them. Following the development of the estate to the east of the railway Scruby ran out of resources and eventually decided to sell the land to the west of the line. Building began on this site in 1933, when Scruby’s vision was challenged by Davis Estates, a well-known builder who built in

the “modern style” and offered a smaller, cheaper house. The houses were not only smaller but were built to look alike and as a result some social division developed between the two estates. The railway line was already there before the development began, although at that time the nearest stations were Chislehurst and Orpington. Scruby saw the need for a new station at Petts Wood and he provided both the land and £6000 towards its construction. The station opened just as the first houses were being completed and provided a direct link to Victoria, Charing Cross, Holborn and Cannon Street. The station was very much at the heart of the development, as it allowed for commuters to travel in to the city to work. Scruby was also aware of the need for shops to be incorporated into his plans for the estate. They were designed around a square with the station at one corner and with flats above them. Modern councils would have greatly appreciated Scruby’s benevolence, as he also gave the land for the new parish church. The church had previously been a temporary wooden structure and the new wood and brick church was designed by Geoffrey Mullins, an architect who lived in Chislehurst. It has a long, straight hammer beam roof and resembles a medieval tythe barn. The church, dedicated to St Francis of Assisi, was consecrated in 1935. Unfortunately the difference in the two sites caused some social unrest and as early as 1936 the local MP Sir Waldron Smithers was reported as having to request that residents on both sides of the railway line to stop their “silly squabbles”. Daylight Inn opened in Station Square in 1935. The Inn also served as a hotel in its early years and was used for public meetings, dinners and amateur dramatics. The pub provides a variety of entertainment throughout

A cinema, known as the Embassy, opened on the west side of the railway in 1936. Unlike most of the residential area, the cinema was built in the modern art deco style and its rose and gold auditorium could seat 1,300 people. Unfortunately, after World War II the popularity of cinemas declined and as a result the Embassy closed in 1973. By the start of World War II the development of Petts Wood was more or less complete and although Scruby’s involvement had ended some years earlier, it still followed his original layout with station, roads, houses, shops and open spaces. Once completed there was little room for further development, although some additional green belt areas were incorporated, which helped the development to retain its country feel. The original plan for Petts Wood included a triangle of land, bounded by three residential roads. The six acre plot was used for local sports and by 1930 there were two tennis courts on the site being used by a tennis club. A club house opened in 1937 and hockey, cricket, bowls, running, table tennis and badminton were also being catered for. In 1982 a Safeway Supermarket opened on the old cinema site and had an immediate impact on Petts Wood. It answered the needs of many local people but sounded the death knoll for many of the small shops, such as the grocers, butchers and fishmongers. Today many of them have been replaced with hairdressers, beauticians, restaurants and fast food shops. However, Petts Wood has managed to retain a range of quality small shops which attract people from further afield.

Music to the ears of anyone keen on historical keyboards from organs to spinets, this museum provides a unique setting for a Kentish sound of music…

An arresting sight indeed. But what’s its relevance to this late 19th century Flemish style pad that in its time has been home to a wealthy city merchant and a keen gardener from West Wickham.

Season of mists … but what’s the name of the estate and gardens which command super views over the surrounding Kent countryside?

nce upon a time a man would own one watch. It would be cared for, maintained and possibly only worn on special occasions rather than every day – especially if the owner worked in manual labour. Varicose veins are a common problem affecting at least 20% of the adult population in the UK. ey occur when small valves inside the veins stop functioning correctly. Rather than blood flowing effortlessly back towards the heart, the blood stagnates within the veins causing aching,

Eventually, the abnormal veins may become swollen, enlarged and varicose. is condition can be embarrassing and painful. Varicose veins are usually blue or dark purple in colour and may also be lumpy or twisted in appearance. While any vein can be affected, varicose veins most commonly develop in the legs and feet – predominantly because standing and walking can put pressure on the veins in the lower body. WHY SHOULD I CONSIDER HAVING THEM TREATED? In the developing stages, varicose veins and thread veins may be primarily a cosmetic problem. However, if ignored, the condition can deteriorate and a variety of complications can occur such as leg swelling, pigmentation of the skin around the ankles and ulcers. Occasionally, veins can burst causing bleeding, or the blood within the veins can clot leading to the painful condition of phlebitis or even deep vein thrombosis. People who use air travel for work or holidays may be at increased risk particularly if those flights are long haul. IS THIS TREATMENT JUST FOR WOMEN? Certainly not, it can affect men just as much as it can affect women. Men tend to cover their legs up more, so the problem may be hidden away and ignored, with some men only seeking treatment when their veins become swollen and complications start to occur. When she’s not at University, Alice works on different sheep farms around her hometown in West Malling, Kent. he shorter days are definitely upon us so I feel duty bound to mention the increase in darkness seems to also result in increases in crime. It doesn’t take Einstein to work out that under cover of darkness it’s much easier to perpetrate burglaries and breakins, whether they are opportunistic or planned. It’s also the time of year when people across the land put tempting piles of presents underneath Christmas trees and helpfully illuminate them with fairy lights in living room windows, then wonder why they find they’ve unfortunately been stolen when they come home from the well publicised event, that almost everyone in the neighbourhood attended – apart from the burglars of course. They were having a busy evening of a different kind!

It’s sad but true. So what can be done to help you avoid being a victim of this sort of crime? Well you can obviously beef up your home security, there are many companies out there that will provide alarm systems and window locks – you certainly don’t need me to tell you that. What I can tell you about is not making it easy for thieves to either enter your garden or to leave it again with goodies they’ve taken from your home. A strong high fence could make the difference between them coming into your garden, or choosing another garden down the road that has a lower fence. Having said that, your nice high fence might have a helpful gate, I say helpful because it might just be unlocked. I recently fitted some of Jacksons security comb to the top of a gate in my back garden (pictured at the top of the page, available from Jacksons). I felt that my fence was high and quite secure, especially as I had installed a high, single pergola along the fence line and this has now been covered with thick tangly growth from various climbing shrubs, and doesn’t present a particularly inviting proposition to climbers of the human variety.

And talking of climbing please make sure ladders and step ladders are locked away in your garage or shed, or failing that, chain and padlock them to something sturdy, so they can’t be used by those rotten folk who may try to access higher unlocked windows on your property.

However my nice little side gate (padlocked, of course), shrieked at me, “Come on over, you can climb me, no problem at all!” Especially when I was on the outside in the back lane, looking at the proliferation of wheelie bins: green, household, recycling - masses of them, all waiting to be made into handy climbing

John Bly Antiques WHAT HO FOR A CHRISTMAS WASSAIL

ne of the Christmas Season traditions closely linked to collectable antiques is the Wassail and its Bowl.

It is known that the greeting ‘wassail’ is derived from many early Northern European languages and, however it is spelt, it roughly translates as “Good Health”. But the Wassail is more than just a toast; it is a mixed drink containing a fair plug of alcohol, usually cider, as well as the celebration of quaffing it with a gathering of friends. This is called The Wassail in the Hall – on some occasions you all drink out of the same large bowl so its best to choose your friends carefully! There is also the Wassail performed by strolling groups going from house to house, and the even more ancient custom of visiting the orchard to toast the health of the trees and bless the fruit; the Apple Wassail. The large Wassail Bowl has for centuries been made of one timber in particular, lignum vitae. Nicknamed iron wood it is the heartwood of species of the genus Guaiacum and has a specific gravity of between 1.28 and 1.37, so it will not float in water. Genuine antique turned wood items of any type, particularly large bowls and cups will not be truly circular, for the timber will have shrunk and twisted slightly, but it is

this very unevenness that gives such pieces their character and creates their appeal to the collector. Some of the finest examples can be seen in the Victoria and Albert Museum in Kensington and if you are interested in learning more there are several excellent reference books under the heading of “Treen”. The surface of a two or three hundred year old Wassail Bowl will be soft to the touch and shiny as bronze, and believe me, a sup of Wassail from one this year will make your Christmas special.

The Stress of schools selection and moving home

t’s that time of year again when parents pore over Ofsted reports, read the tea leaves and take part in an ever more bewildering round of school visits, all in an effort to find the best seat of education for their little Johnnie or Jennifer. This is a task that’s especially tough in Sevenoaks given the limited availability of places and the high numbers of people chasing those places. At least if you live here you have the advantage of local knowledge and advice from friends and relatives who have done it all before. So spare a thought for the newbie young families who are relocating to the area and face the dual and daunting task of finding both a home and school. John Mollison, director of Sunflower Lettings explains “The Sevenoaks area is very popular for young families wanting to relocate from London, further afield in the UK or abroad. The excellent rail connections combined with the facilities and beautiful countryside are a great attraction. We are receiving some two hundred enquiries a week. However, finding the right school can be a challenge. On the one hand there is a large and bewildering choice of private prep schools but on the other hand, secondary state school places are very limited and the grammar school selection system can be a mystery – even for locals. At Sunflower Lettings we try to help our clients find the right house and school. If a family is buying a property it is usually helpful to rent first so that they can get their bearings, get a feel for the different areas and undertake research that looks beyond the Ofsted report.” There is a myriad of questions that need answering such as the school’s admission policy and catchment area. For example some primary schools in the Sevenoaks district have a catchment area limited to just four hundred yards! Transport can be an issue – Is there a school bus? What does it cost? Would the train be a better option? What about the school curriculum, does it provide a rounded education or is it an 11 plus factory? What are the sports facilities like, does it have a special needs capability? It is important not to rush the decision making and be thorough but, at the same time, don’t leave it too 64 DECEMBER 2013

late, get researching now. Other parents are often the best source of advice and information and you can meet or contact them through groups such as the local NCT (National Childbirth Trust), local forums and online groups and forums.

Intermittent Beings Iain McEwen • Cinnamon Press • £7.99 Paperback Modern poetry is experiencing something of a chequered revival. In last month’s edition, Salt Press gained exposure for one of their last one-poet collections, whether we see another is sadly doubtful Coincidentally, the young (in both personnel and existence) Emma Press have released their second offering into this uncertain market, uncertain in reluctance to offer a copy for review, though Emma’s first was seen here in February and delightful it was too. Instead we have this smart little overture from Janet at Cinnamon when McEwen’s collection of significantly modern poems was launched in the precincts of Bedford Modern School. From an aesthetic point of view, one would look for illustrations, seek some pictorial guidance on what inspiration directs a poet into aestheticism, but alas not here. However, this poet’s motivation drives one on, from ‘T’ai Chi’ to ‘Classic Models’. Eclectic? Very, but no matter, because you can still form ‘A common bond’, wonder how ‘She breathes’, or wait until ‘The gale blows itself out’. Very different and very worth while.

A massive tome - ‘a life in one volume’ from an acknowledged expert on this remarkable literary figure. If one needs to discover what drove this man to be both warrior and pacifist, poet and novelist and also to explore opposing aspects of sexuality, then look no further. A complex character, Sassoon had a good education at Marlborough and Clare College, left university to become a ‘gentleman’ and for seven years idled his time away in country pursuits and literary matters. Diving headlong into a cavalry regiment when the country was gripped with military jingoism must have been an answer to prayers, providing an income and an official occupation, but in due course the reality of trench warfare struck home. Writing poetry became a refuge from the horrors of war, but the well-scripted evocative and poetical accounts of mud, blood and death didn’t sit well with the public. This very readable account delves deeply into his raison d’etre. As an insight into a poet’s life, it doesn’t come any better.

Fiction can have the same swings of fashion as skirts. All manner of trends move up and down (though some do not sit as well as they should) - a current fashion appears to be in time travel. Whether commercial writers run out of ideas when a publisher reminds them of deadlines and contracts, who knows. It must be demoralising to suffer from writer’s block when the phone rings and ‘we need your typescript by Friday’ sounds the ‘knell of doom’ so to skip off to another decade sounds fun. Our heroine actions the title. Hit by a car on a zebra crossing, she’s catapulted into another time zone. Ah, to leave the worries behind you! But no, different problems arise; life becomes complicated, again and again. Same crossing, same car. I’m not sure we ever find out why though in this treatise on twentieth century music and fashion, Jo-Jo is as good a companion as any, but please, no more time travelling - it gets as boring as a 1960’s record.

A Grenadian Spice Odyssey There’s something comfortingly festive about the sweet, warming aroma of nutmeg.

he Caribbean, famed for its beaches, bananas and palm trees, may seem an unlikely setting for Christmassy flashbacks, but throughout my stay in Grenada, the spicy scent is never far away - nutmeg is sprinkled atop cocktails, used to add a kick to ice cream, and the seeds are threaded with cord to create spice garlands sold at street-side stalls.

but venture beyond the sun lounger and a diverse, colourful culture awaits. For Grenada, spice is at its heart, with mace, cinnamon and cloves all in starring roles, while nutmeg sits centre stage.

“Welcome to the Isle of Spice!” says tour guide, Mandoo.

Despite being just 21 miles long and 12 miles wide, I learn that up until nine years ago, the country was the world’s second biggest producer of the spice.

It’s easy to assume that the picture postcard scenes of white, palm-lined sands, azure seas and rum cocktails sum up the region,

Then in late 2004, Hurricane Ivan hit, causing catastrophic damage to infrastructure and wiping out almost 80% of the crops.

“It devastated nutmeg crops,” Mandoo explains. “New trees were planted, but they take seven years to bear fruit.” Almost a decade on, in many ways, Grenada’s still recovering. Skeletons of ravaged houses remain dotted across the landscape and unemployment is high. Tourism also took a knock. Yet - fittingly for an island that started life as an underwater volcano some two million years ago - a sparky resilience ensures that Grenada has lots to celebrate. And despite economic challenges, crime rates remain low.

T R AV E L Mandoo has a theory about this. “There’s a real sense of community,” he says. “Families are very traditional and everybody knows everybody, so young people may be out of jobs, but they’re not getting into trouble.”

We split our stay between two hotels, starting with Mount Cinnamon, ideally situated on the south-west coast just off the two-mile-long Grand Anse Beach, arguably the island’s best sandy stretch.

Indeed, Grenada has endearing time-warp qualities.

A cluster of charming whitewashed villas climbs the hillside, with a pathway leading down to the beach bar which hosts regular music nights and barbecues - and where we toast the start of our holiday with our first rum punch, and first sprinkling of nutmeg. With its relaxed, bohemian vibe, Mount Cinnamon feels special yet laidback, and the food is outstanding. Andrew, a talented young chef in his early twenties who cooks like a seasoned pro, whips up a mouth-watering blackened king

He recently moved here from Jamaica and tells us he loves it so far. “It reminds me of Jamaica in the Eighties,” he says.

While tourists flock to the big resorts and nightlife on islands like Jamaica, Barbados and Antigua, things are very peaceful here. Even the capital, St. George’s, retains authentic charm. Apparently the rule is that no building should be taller than the tallest palm tree. Instead, pristine red-bricked Georgian buildings line the city port, while classic Caribbean pastelcoloured timber and corrugated roofing scatter the backstreets. It’s a pleasing mix, and a big nod to the country’s eclectic political history. For the locals, party night is the Friday Fish Fry at Gouyave, a fishing town on the northern coast, where workers still sort and pack spice by hand at the Nutmeg Processing

Station. Outside, on market stalls across the road, mini bags of powder sit in colourful rows, a reminder of just how integral the island’s natural bounty is. In pride of place on the tourist map is the Belmont Estate, a plantation dating back to the 17th century which, among other things, produces cocoa. The nearby Grenada Chocolate Factory Company turns it into delicious bars, some of which end up on shelves at Waitrose. The brand was founded by Mott Green, who had a vision to produce quality chocolate, ensuring every step of the process was fair, ethical and environmentally sound. Tragically, just weeks before our visit in June 2013, 47-year-old Mott was killed in an accident. His dream lives on, and seeing it in action is a joy. We watch workers chop cocoa pods from trees with machetes then follow the beans’ journey, right through to seeing how the creamy, dark bars are wrapped.

T R AV E L completion sit in makeshift yards along the shore. We catch a speedboat to Sandy Island, a sandbank a few minutes from shore, where we snorkel above the coral. As we dry off afterwards, a fish burger lunch at the candy-coloured La Playa Beach Bar and Bistro is the perfect end to a wonderful day - washed down with a rum cocktail, complete with a dusting of nutmeg, of course. Now when I sprinkle spice into my mulled wine this December, it’ll be visions of a lush, tropical paradise flashing in my mind.

If you’re lucky, you’ll spot a mona monkey - they arrived on slave ships during the 18th century and have been amusing visitors (and pinching their bananas) ever since. But, not all of the island’s attractions are on land. After checking in at our second hotel, True Blue Bay Resort, which has more of a family feel, we head off on a snorkelling trip with Native Spirit Scuba. A boat whisks us northwards to the Underwater Sculpture Park. Hurricane Ivan destroyed much of the coral here, but artist Jason deCaires Taylor has created a stunning seabed exhibition which, over time, has become a living habitat for marine life. hen Heston Blumenthal started making headlines, all the talk was of his snail porridge, bacon and egg ice cream and seafood platter served with an iPod playing the sound of crashing

That was eight years ago, and those who wrote those dishes off as gimmicks would have done well to note that around the same time, he’d just won his third Michelin star. There was clearly more to his fusion of the chemical and the culinary than met the eye. Since then, via TV series such as In Search Of Perfection and, following his move to Channel 4 in 2008, Heston’s Feasts, his understanding of science, wild imagination and, not least, his incredible cooking skills have been enjoyed by millions of viewers. Following on from Heston’s Feasts, in which he focused on Victorian, Roman, Medieval and Tudor recipes, and last year’s Heston’s Fantastical Food, where he made enormous versions of everyday items - including a pub made of pies - he’s back with another series, Heston’s Great British Food. “I’m a bit flustered today,” says Blumenthal, midway through filming the series which explores the origins of classic British dishes and then, in true Heston style, experiments with new ways of serving them. He says he’s recovering from a mid-series freak-out. It’s not uncommon, he explains. “Last week I wasn’t happy with anything we’d done. It’s so much work, my brain just fries.

Brussels sprouts with bacon

(Serves 6)

5 slices of smoked bacon, cut into lardons 400g Brussels sprouts 50g unsalted butter Salt and black pepper Fry the bacon lardons in a frying pan over a medium heat until they are soft but not coloured (this will take approximately five minutes). Remove from the pan with a slotted spoon and drain on kitchen paper. Set aside. Keep the bacon fat in the pan. Slice the bases off the sprouts and carefully separate the leaves, pulling them off of the sprout. Alternatively, shred them finely with a sharp knife.

Melt the butter with the bacon fat in the frying pan over medium-low heat. When the butter is foaming, add the Brussels leaves and stir to coat them. Add two tablespoons of water and cover the pan with a lid. Allow to cook for five minutes, then stir in the lardons and season with salt and freshly ground pepper.

Triple-cooked chips (Serves 6) 1kg Maris Piper potatoes, peeled and cut into chips (approx 2cm x 2cm x 6cm) Groundnut or grapeseed oil Sea salt Place the cut chips into a bowl under running water for five minutes to wash off the starch. Place 2kg cold tap water in a large saucepan and add the potatoes. Place the pan over a medium heat and simmer until the chips are almost falling apart (approximately 20-30 minutes, depending on the potato). Carefully remove the cooked chips and place them on a cooling rack to dry out. Then place in the freezer for at least one hour to remove more moisture. Heat a deep-fat fryer or a deep pan no more than half filled with oil (to a depth of around 10cm) to 130C. Fry the chips in small batches until a light crust forms (approximately five minutes), remove from the oil and drain on kitchen paper. Put the potatoes on a cooling rack and place in the freezer for at least one hour. At this stage, if you don’t want to cook and serve immediately, the chips can be kept in the fridge for up to three days. Heat the oil in the deep-fat fryer or deep pan to 180C and fry the chips until golden (approximately seven minutes). Drain and sprinkle with sea salt.

“For the first time ever, I turned to the director and said I didn’t think I could do something. I thought we’d failed. He was OK with that, and from a TV point of view I suppose it would be good,” he adds. “But I’ve not failed on a challenge before. Even when that giant ice cream looked like it was going to collapse in the last series, we brought it back. I don’t want to fail at anything.” In the first episode, Blumenthal hops into his red time-travelling phone box and discovers the roots of British favourite, fish and chips. He found it became popular during World War Two, when potatoes were widely grown at home thanks to the Dig For Victory campaign, and fish was one of the few foodstuffs not rationed. “We met a load of fishermen whose dads were fishermen during the war. They were telling us all these stories about being bombed while out at sea. Would you really have wanted to go out fishing during the war? Such bravery, and it played a huge role in it being a national staple.” Giving tradition the signature Blumenthal twist, he visits the oldest chippy in London and creates something new. It involves wrapping a saveloy in mushy pea puree, then wrapping that in blended-up fish, chips, tartare sauce and vinegar, battering and deep frying. “It was so wrong, in many ways, but it tasted so right,” he says. Of course, no one’s going to make better

chips than Blumenthal’s own triplecooked variety, now on gastropub menus up and down the land, but to add the soaked-in-vinegar taste so specific to the chip shop chips we all know and love, he makes a dipping sauce out of vinegar malt. The episode culminates in a feast down by a replica of the Golden Hind in Brixham, complete with a fake fish that spews out lumps of turbot and has eyes made of gold leaf and squid ink. Further on in the series, Blumenthal tackles roast beef and discovers something interesting about our relationship with the French. “All these years I thought they called us ‘Le Roast Beef’ in a mocking way, making fun of our love of beef and Yorkshires. But it actually started as a compliment. “In the 18th century, they used to send their chateau chefs to Britain to learn how to roast meat properly, because we were so good at it.” There’s also a strand that runs through the series half of which will be broadcast before Christmas with the other half in the spring - that asks the public ‘how they eat theirs’. “On the roast beef episode, we found so many people who won’t let anyone else pour their gravy on a Sunday dinner,” says Blumenthal. “There are a lot of talking points thrown up by that.” So after those long months of development and such a stressful filming schedule, wouldn’t he just prefer to make a ‘normal’ TV series - where he simply picks a few dishes, stands in a studio, looks down the camera and heaven forbid, just cooks?
