2018 will be remembered as a vintage that is beyond compare in the vineyards of Rattlesnake Hills. Summer offered an abundance of dry days boasting generous sunshine to maintain perfect ripening conditions. The growing season was free from stormy weather, and that luck led us into harvest with a temperate fall. This idyllic setting encouraged our Cabernet Sauvignon grapes to develop beautifully ripe, rich flavors and impeccable structure.
Region
Rattlesnake Hills AVA is a small sub-region of Washington’s famed Columbia Valley AVA. The Cascade and Rattlesnake Hills mountain ranges protect the region from damaging rains and winter storms, creating warm, temperate conditions despite its high elevation. This area is superb for Cabernet Sauvignon, which buds late in the spring and ripens long into autumn, requiring a longer “hang time” than other varieties. Cabernet’s from here are known for exceptional balance and flavor concentration featuring black cherry, cassis and herbal characteristics.

We proudly present a long-awaited excuse to dust off your decanter with a Cabernet Sauvignon that is both memorable and complex. On the nose, aged aromas of leather and toasted oak lead you to a full-bodied palate with velvetlike acidity and bold tannins. With each sip, you will discover that dark fruit flavors fall secondary to oak and have progressed from fresh and ripe to rich, stewed black cherry and blackberry, followed by a lingering woody finish.

While this Cabernet Sauvignon offers plenty of complexity to be enjoyed alone, it shines even brighter next to dishes that highlight its dark fruit flavors and complements its oaky characteristics. Smokey, char-grilled red meats will harmonize with notes of leather and oak. For vegetarian dishes, choose hearty vegetables and starches that stand up to a bold wine. Salty seasonings will accentuate rich berry flavors and full body, and a dash of dried herbs will add another layer of woodsy character.

Winemaking
With excellent flavor concentration, this vintage is a superb candidate for cellaring. For this reason, we focused on preserving natural acidity and tannic structure throughout the winemaking process, as these factors will extend the life of our Cabernet in the bottle. During two weeks of fermentation, we ensured plentiful contact between the juice and skins before allowing the wine to mature in oak, integrating and enhancing each level of flavor and textural nuance.
