Passion leads to perfection

G

ood food requires the right mix of creativity, commitment and practice. I recently met with the three chefs in charge of Finnair’s signature menus for 2015. Although the names of the award-winning trio are still under wraps, I can tell you that all of them are incredibly passionate and knowledgeable about their work.

The right mix of Finnish and international flavours are key to creating a top-

flight menu. Careful planning, talent, testing and a little bit of luck also help. Fresh local ingredients are favoured. For example, the legendary Savoy restaurant in Helsinki grows its own herbs on its rooftop garden, while the bees it keeps on the terrace produce delicious honey for the restaurant.

Finnair passengers will have the pleasure of tasting the results of our collaboration with the chefs in Business Class on our long-haul flights next year.

Walking home from my meeting with the chefs, I realised that I had been reminded about the importance of passion, training, perfection and attention to detail.

Next time I see a bee circling around flowers, I will remember that it’s part of the bigger picture.

DAY’S END FOR ODISHA FISHERMEN AT LOW TIDE, the low-lying shoreline of Odisha on India’s Bay of Bengal coast stretches several kilometres from rolling sand dunes and casuarina woodlands to the sea itself. During the monsoon season these fabulously expansive beaches are buffeted by

storms and floods, but at other times they are popular with local Indians who come to paddle in the shallow surf, take in the salty air and watch the fishermen haul in their boats and nets under the pink glow of the evening sky.

ro skateboarder Arto Saari and his crew host the Arto Saari Invitational at the Helsinki Airport this month in what promises to be the most original event ever held in an airport.

“A match made in HEL” brings in skaters from Asia and Europe to show off their skills at the pop-up-skate park that wheels in and around the airport grounds. The event includes private sessions with Saari, who is one of the world’s top street skaters.

Organised by Finnair and Finavia, the event highlights the benefits of Helsinki Airport for fast and fun transfers between East and West.

s the market for fitness monitoring gadgets thrives, a new generation of wearable technologies takes a step further with smart shirts, shorts and shoes.

“Smart clothing offers functional apparel for sport enthusiasts and people who are interested in following their own body’s activity,” says Jarmo Hallikas, managing director of innovation management company Falcon Leader.

One of the first Finnish companies to bring wearable tech to the market is Myontec, whose smart shorts placed third on the New York Times list of 32 innovations that will change your tomorrow.

Designed to monitor muscle activity, the shorts are marketed primarily to professionals in the sports training and coaching sectors, but are also attracting interest from researchers in the fields of physiotherapy, wellbeing and physical rehabilitation. This autumn, Mbody smart shorts launch in the US.

ROOTED IN RESEARCH In Finland, technical universities have a long history of research regarding various clothing materials. This work, combined with scientific understanding of sensors and wireless communication, fosters reallife future concepts.

A fresh example of such university innovation is the Buzz Way–Navigation shoe designed by students from Aalto University’s product development project course on behalf of Nokia-sponsored Team Plink.

With the goal of helping the user to navigate around a city, whether at home or abroad, the smart shoe guides the wearer via vibration signals to pre-chosen destinations, thus allowing the user to enjoy the journey rather than stare at a digital map.

A prototype of Buzz Way was launched last May and the project will be presented in Silicon Valley to gauge initial response.

BEND IT LIKE FABRIC Helsinki-based Canatu has developed a revolutionary nanomaterial that can be freely bent, formed, twisted or rolled without losing electrical conductivity.

Deposited in nanometre scale thin films, the flexible touch components are ideal for durable and light wearable electronics.

New touch technology, particularly in wearable and flexible electronics, has been gaining a lot of interest lately and the market for flexible and curved displays is expected to reach 23 billion euros by 2023. Canatu is currently working with 30 major clients on the production of the first prototypes of smart phones, tablets and smart watches utilising Carbon NanoBud® material.

COUNTDOWN BEGINS FOR SIBELIUS JUBILEE HACK THE MUSIC

Jean Sibelius’s former home, Ainola, is located about 40 kilometres from Helsinki.

D

ecades before Alvar Aalto, Mari­ mekko and Nokia, Jean Sibelius was defining Finnish culture to the world. Most famous for Finlandia, which he wrote in 1899 to inspire Finn­ ish nationalist sentiment under Russian rule, Sibelius’s name is widely considered to be synonymous with Finnish identity. Next year marks the 150th anniversary of his birth.

“Our aim is to solidify Sibelius’s position around the world, and to increase aware­ ness of his life and work among young peo­ ple in Finland,” says Lauri Tarasti, presi­ dent of the Sibelius Society of Finland and head of the project group overseeing the anniversary celebrations.

In addition to a variety of concerts, an annual violin competition, a singing com­ petition and a composers’ competition, the calendar includes several happen­

ings appealing to families and young peo­ ple: among these is a children’s opera at the Finnish National Opera in May and a June cycling event between two seminal Sibelius towns, Järvenpää and Hämeenlinna.

Programming extends far beyond Fin­ land’s borders. In Germany alone, Sibel­ ius will be interpreted at more than 200 concerts. The Lahti Symphony Orchestra will bring Sibelius to Beijing, Shanghai and Tianjin in spring of 2015, and the LauluMiehet men’s chorus will mark the jubilee year with a six-city tour of Japan.

“Sibelius’s popularity appears to be grow­ ing in the Far East; the Japanese Sibelius Soci­ ety is very active, and in his home in Ain­ ola [in the town of Järvenpää] we get a large number of Japanese visitors,” says Tarasti.

ONE OF THE MOST creative interpretations on Sibelius’s 150-year legacy will be held this month at the Ateneum Art Museum, where SibHack fuses music with Finland’s more recent great export: technology. Organised in conjunction with S ­ ibelius and the World of Art (October 17 to March 22), an exhibition exploring Sibelius’s relationship with visual artists, SibHack brings multidisciplinary digital projects to Ateneum through an open submission process. Roughly ten teams interpreting Sibelius’s work through visual technology will be selected, and the winner will participate in Berlin’s Music Tech Fest in late October.

“Sibelius can be viewed as a hacker of his time who was able to model his music after natural phenomena,” says Katariina Nyberg, digital producer of the jubilee year.

SibHack will take place at Ateneum Art Museum from October 17 to 19. The winner will be announced at a public event starting at 2 pm on October 19.

Due to its anti-inflammatory properties, nettle has been used for centuries as a treatment for allergy symptoms, especially hay fever. Nettle is also believed to prevent prostate enlargement and eliminate uric acid – helpful especially for those suffering from rheumatism.

Serving suggestion: Add half a tablespoon of dried nettle to your smoothie. In summertime, you can use raw sprouts.

Cultivated in Europe for about 150 years, the dandelion’s delicious, rucolaflavoured leaves contain more vitamins and less nitrates than regular lettuce. The plant also contains beta-carotene and phosphorus.

Similar to nettle, dandelion is a diuretic that absorbs toxins and helps flush them out of your body. A general liver and kidney cleanser, it also purifies the blood.

Serving suggestion: Spice up your salad by replacing rocket (rucola) with dandelion leaves.

The city-funded play parks are more like community centres; a meeting place for children and families with children. “In Helsinki there are almost 70 play parks all over the city,” says Mikko Mäkelä from the City of Helsinki’s department of early education and care.

Used by about 2,000 children and 600 adults daily, these parks provide a safe environment and meaningful activities for families and school children. Free-of-charge, the Play Parks are open for 7 to 8 hours a day.

The 100-year celebration has seen hundreds of events spread out over the course of the year; each with a seasonal flavour.

October hosts harvest celebrations, animals at play parks, a Baltic herring festival and Halloween-themed events.

REINVENTING THE PLAYGROUND Though swings, sandboxes and slides will always be favourites of youngsters, the options available these days are much more diverse. One family-owned Finnish company has been producing a huge range of play equipment for over 40 years.

hat springs to mind when you see “Nagoya” on the departures board at the airport? Few would fault you for drawing a blank.

For many, Japan’s fourth largest city remains hid-

den beneath the tourist radar.

With its bewildering array of eateries and fashion subcultures, the birthplace of Toyota serves up a healthy helping of Kūru Japan (Cool Japan) in an easily digestible package, yet with an added perk: virtually no tourists. A westerner can go for days feeling like the only gaijin (foreigner) in the city.

LOVING THE LOLITAS Exit Nagoya Station and be greeted by a miniature version of Tokyo, but head for the colourful Osu district and a decidedly zanier side of the city reveals itself.

Next to Osu Kannon Temple is the entrance – like Alice’s rabbit hole – to a wonderland for the alternative shopper. Osu Shopping Arcade is a maze of over 400 eateries and boutiques packed with treasures from retro curios and street fashion to vintage kimonos and jeipoppu (Japanese pop music).

A great spot for people-watching is Osu’s famous landmark, the giant maneki-neko (beckoning cat) in the centre of Fureai Plaza, an unofficial catwalk for Nagoya’s myriad fashion tribes. Skaters, Goths and

quasi-Victorian steampunks nonchalantly strut their stuff, demurely observed by macaroon-nibbling Lolitas in their knee socks, Hello Kitty corsets and frilly petticoats.

On weekends numerous Lolita clans can be spotted milling around Osu, representing everything from the child-like “sweet” style (ama-rori) and darkly striking Gothic look (gosu-rori) to kimono-wearing wa-rori with their paper umbrellas.

MAD ABOUT MANGA A unique subculture flocks to Nagoya every summer for the annual World Cosplay Summit (WCS), where national teams compete for the title of Grand Cosplay Champion. Cosplay – a portmanteau of “costume” and “play” – has witnessed an explosive boom in recent years, with a global community of fans investing all available resources and creativity into dressing up as fictional characters from a Japanese manga (comic), anime (animation) or video game.

“Cosupure Seichi (Cosplay Holy Land) is a term referring to Nagoya as a focal gathering point for cosplayers from around the world. The term comes from the popular Japanese expression Seichi Junrei (pilgrimage site) and is often used of anime fans visiting

locations around Japan which appear in their favourite animation titles,” explains Shinichi Miyawaki from the WCS Executive Office.

“Cosplay is quite often seen in Japan as something that should be enjoyed in private or hidden spaces.

The WCS strives to create an environment where cosplayers can celebrate freely anywhere in the city. Our event has turned out to be Japan’s most popular cosplay festival according to the popular cosplayer SNS Cosplayers Archive,” adds Miyakawi.

Highlights of the summit include red carpet parades of over 1,000 cosplayers snaking through the arcades of Osu and Nishiki street, cheered on by crowds of thousands.

IRASSHAIMASE! The Japanese for “welcome” is announced loudly whenever you enter a restaurant – which are more than plentiful in this city of hearty comfort foods found nowhere else in the world.

Sushi-go-rounds are conspicuous by their absence: Nagoya is strictly a noodles-and-miso (fermented soybean seasoning) town. The typical local dish is miso-based soup served with ramen (curly wheat noodles) or kishimen (broad, flat wheat noodles). Don’t feel shy about slurping – the louder the slurping, the better the food, according to locals.

Nagoya’s signature dish is hitsumabushi, slow-grilled freshwater eel in a rich dark sauce served in a lacquered wooden tub. The eel rests on a bed of rice, accompanied by wasabi, green onion and other condiments.

It is divided into four segments so that each quarter can be enjoyed with a different topping, or as a soup with green tea poured over it.

Countless eateries are packed around the station area, Sakae and Osu, and you can look forward to a mouth-watering meal even in the lowliest izakaya. Ordering is easy, as most menus are illustrated: just point.

Link and the Puppet Princess Zelda from the popular Nintendo game The Legend of Zelda. Realistic swordsmanship added a dynamic touch to their performance unseen in previous years.

“It’s a real miracle for cosplayers from Russia to become champions in Japan. Some say it’s hard to impress Japanese audiences. Our performance was unusual, featuring humour and clanging of real metal swords instead of recorded sound effects,” says Nek, alias Ekaterina Polygalova.

Nek and Nichi spent six months training and as much as 770 euros on their costumes and accessories.

The investment paid off, if only for the chance to visit Cosplay Holy Land, affirms Nichi, Evgeniy Polygalov.

“Nagoya really is the capital of cosplay. It is supported on the highest level, and many cosplay events are hosted here throughout the year. The locals just love cosplay. We were invited to an official meeting with the mayor of Nagoya and even he was really into cosplay,” adds Nichi.

Loving cosplay as they do, Nagoyans have even adopted costume-like elements in their street fashion.

In Sakae’s Nadya Park, drop in at the International Design Centre and the Loop Creators Shop. Among the exhibitors are local design duo Marimomen, Yuu Itou and Mari Muraguchi, whose fun style fusions revive ancient Japanese artisan practices.

“We translate traditional crafts for a modern lifestyle, using vivid colours and pop patterns,” says Itou. The same applies to Nagoya overall: tradition and modernity inform each other in its urban identity and cityscape.

Marimomen’s top-selling items include Jika-tabi, a modern take on the split-toe boots traditionally worn by artisans. “They’re light and fit like modern sneakers, with a comfortable barefoot feeling. We updated their look with colourful dyes and handdrawn elements,” says Itou.

A UNESCO City of Design, Nagoya is a magnet for a growing creative community, says Muraguchi. “The best place to catch the work of local artists is at the Creators Market held twice every year, where over 3,500 exhibitors sell a wide variety of original items.”

If downtown Nagoya strikes you as too upscale, delve into the lesser-known pockets beyond Sakae and make startling discoveries hidden between the cracks. STAND OUT FROM THE CROWD Fast fashion culture carries with it the predicament of quickly moving, seasonal trends which mean that the must-have autumn shirt will look terribly outdated come spring.

While the quickly passing trends dominate fast fashion, slow fashion or “forever fashion” as The Guardian dubs it, is all about lasting appeal.

“Trends come and go, but style is forever,” says Jani Niipola, whose recent book Vapaa Tyyli (“Free Style”) inspires men to take a more mindful approach to their clothing choices.

Style, Niipola implies, is as much about the thought you put into what you buy as it is about fashion.

Lasting, comfortable and great-looking materials, timeless cuts and knowing what type of clothes make you look the person you want to be, are Niipola’s core ideas.

“If you know something about the fashion industry and the dress code, you can relax in the knowledge that you also know when you may ignore a rule or disregard a passing trend. Men’s style is about both making intelligent choices and being a rebel,” he says. l

A couple years ago, collective antipathy towards fast food, with its poor nutrition, questionable ethics and meaningless consumption, reached a culmination point that resulted in the birth of slow food movement. Now the fashion world is following suit.

The term “slow fashion” – initially coined by London-based sustainable design consultant Kate Fletcher in 2008 – has been reaching new heights as people grow weary of the pitiful quality, dodgy production and sheer quantity of easy-come, easy-go clothes. Designers are seeking to create pieces using local suppliers and ecological materials without compromising the style, while major retailers, from Levis to Marks&Spencer have started sustainable lines.

ever before in human history have we been able to amass as much clothing as we can today. It is only too easy to wander off to the nearest mall to satisfy your thirst for “something new” and most of us have more clothes than it’s possible to list off the top of our heads. Yet, rather than promoting wellbeing, overflowing closets seem to form a source of anxiety and stress. Who hasn’t experienced that terrible feeling of combing through piles and piles of clothes without finding one single item suitable for the morning meeting?

This is the paradox that made Helsinki-based author Rinna Saramäki realise that it’s about time we rethink our relationship with clothes. A selfconfessed fashion hoarder with taste for pretty lace dresses, she used to buy clothes on the spur of the moment, only to pout in front of her wardrobe when the mismatched clothes wouldn’t coalesce into an outfit.

Inspired by US consultant Courtney Caver’s idea of selecting 33 pieces of clothing to wear for three months, Saramäki recently wrote a book titled Hyvän mielen vaatekaappi (“The Happy Wardrobe”) which has been inspiring Finns to give their closets a thorough cleanse.

“There are just too many clothes, and rather than enriching our lives, they make things more complicated,” she says.

Saramäki voices some of today’s most topical wardrobe concerns, both ethical and practical, yet her ideas for revolutionising your wardrobe are unpretentious: plan well, don’t compromise on quality and invest in clothes that you love and that fit your style.

JANI NIIPOLA Journalist, author and popular blogger Jani Niipola takes a humorous approach to men’s style.

His recent book, Vapaa Tyyli (“Free Style”), gives detailed advice on how to dress from picking the right suit to wearing a bow tie, and offers hints on when it’s okay to break free of conventions.

Seating some 300, the place is done up in soft, subtle brass tones that scream modernist design, and it’s often awash in chilled-out trance beats.

t’s rich in minerals, it helps you sleep, and it quenches your thirst. And in the Czech Republic, beer is at the heart of everyday life. Visitors to Prague have a wealth of beer-themed options on their doorstep, with other refreshing attractions within a short hop of the capital.

brew in the UK’s yardstick World Beer Awards last year. The hops-strong character of Czech beer is imitated the world over, but there is nothing quite like the real thing. Annual consumption is estimated at about 150 litres per capita and hop cultivation for brewing dates back more than a millennium. This, then, is essential territory for beer aficionados.

MONASTIC TRADITION Veer off the beaten track of Prague’s Old Town bars and restaurants and head for the Břevnovský Klašter Pivovar brewery shop and Klášterní Šenk microbrewery bar, next to the imposing 10th century Benedictine Břevnov monastery and abbey. The brewery here dates back several centuries but the current version has been brewing since 2011. Six beers are served on tap, including the befuddling Benedict’s 20° Imperial Pilsner and refreshing Klaster 11° lager. Czech beers are graded in strength – the higher the number, the stronger the beer. But these figures don’t stand for actual alcohol content.

REFUELLING STOP Monasteries and beer are often mentioned in the same breath in this country. The Strahov Monastery Brewery is conveniently placed near the entrance to Prague Castle, providing

the perfect refuelling stop for thirsty sightseers. Don’t make the mistake of calling in before sightseeing: even the weakest of the St Norbert brand beers concocted and served here, a semidark Amber, registers 5.3 per cent alcohol, while the seasonal Christmas ale at 7.7 per cent will keep you based close to the bar when winter comes. An opportunity to learn some local vocabulary: start with na zdraví – cheers.

A HEALTHY HEAD Jump on a train to the Bohemian town of Litoměřice where the rivers Labe and Ohře meet about 70 kilometres north-west of Prague and be charmed by the mixture of Gothic, Renaissance and Baroque architecture.

Litoměřice is a member of the World Health Organization Healthy Town project, and in the Czech context, beer – in moderation – is considered part of a healthy outlook. The Labut microbrewery, hosted by manager Sabina Žáková, proves the point with a range of invigorating brews, all served with the requisite frothy head. “Czechs know that beer should have a ‘hat’,” says Sabina. “It is aesthetically satisfying and releases the aroma.”

HOP STOP The aroma of Czech beers owes much to the hops that flavour them. One of the features of the Bohemian countryside, dotted with church spires and fertile rolling hills, is the spectacle of row after row of hop trellises, the crucial structures for cultivating this plant. At the heart of hop-growing country is the exquisite old town of Žatec, site of the “world’s smallest hop garden” next to the town square, as well as the Hop & Beer Temple and its adjacent microbrewery bar. This quirky museum describes the regional history and culture of hops and brewing. The ascent of its viewing tower is rewarded with broad panoramas of the surrounding landscape – and a 3D presentation during the elevator ride.

A tour around the enormous Pilsner Urquell brewery with its labyrinth of cellars and vast copper vats is the highpoint of most Czech beer itineraries. Close to the old town square, devotees of this exquisite unpasteurised golden liquid demonstrate the art of Hladinka – beer drawn in one smooth pull – using self-serving pumps positioned at each table in The PUB (short for Pilsner Unique Bar).

ORIGINAL SOURCE Bavarian brewer Josef Groll (1813-87) is credited with “inventing” the bottom-fermented, long-lasting Pilsner beer type developed in Plzen (hence the name Pilsner Urquell, meaning “original source”). He is modestly immortalised at the town’s Groll microbrewery and restaurant, the latter serving solid Czech fare such as dumplings and pork. ne of Lapland’s best-kept secrets is tucked away behind a row of log cabins at the Kiilopää Fell Centre. The Cold Spa, as its known, consists of two rustic wooden cottages – one housing an authentic Finnish smoke sauna – that overlook a bubbling freshwater brook.

The Cold Spa is open year-round, even during the winter months when the water is an icy +2 or +3 degrees Celsius and outdoor temperatures can be as chilly as -25 degrees Celsius.

Ice or winter swimming, often followed by sessions in a hot sauna, is a practice that has many health benefits.

“A dip in the cold water relieves stress and generally puts people into a better mood,” says Seppo Uski, general manager of the Kiilopää Fell Centre, which is owned and operated by the Outdoor Association of Finland.

Cold releases endorphin, a chemical known to reduce pain and make people feel happier.

But contrary to popular belief, it’s not necessary to endure freezing weather. In the autumn when water temperatures are on average +10 degrees Celsius, many of the same health benefits can be gained.

The Outdoor Association of Finland (Suomen Latu) maintains more than 200 winter swimming spots throughout Finland, including Lapland’s Kiilopää Fell Centre next to Finland’s second largest national park, Urho Kekkonen National Park, which is 2,550 square kilometres.

“Surveys of cold water swimming indicate relief of a wide range of ailments, including musco-skeletal pain. Immunity is also improved,” says Rintamäki, though he points out that while winter swimmers report far fewer colds and flus than non-winter swimmers, the evidence is anecdotal. Epidemiological studies have not been carried out.

THE BUSINESS OF WATER “Water is a very important element for Finns, who really value the purity of clean water,” says Uski.

More than ten per cent of Finland is covered by rivers and lakes, of which there are 187,888. Finland is one of the few countries in the world that has a secure supply of safe and clean water.

The United Nations consistently ranks Finland at the top of its water quality lists.

Yet the reality is that more than 780 million people in the world lack access to clean water.

More than 100,000 active winter swimmers take the plunge in Finland.

AQUATIC INNOVATIONS Many people forget to drink enough water. In the US, for example, about 43 per cent of people fall short of the daily recommended water intake, says Panu Keski-Pukkila, CEO and co-founder of The Hug, an app that wraps around a water bottle, tracks consumption and reminds users to drink when hydration levels are low.

“Being optimally hydrated helps you feel better, perform better (physically and mentally) and also keep different ailments such as kidney stones at bay,” says Keski-Pukkila.

“For me, one of the biggest upsides is that I don’t feel so tired during the day.”

Pilot Hug units will be available by the end of the year, and consumer versions are slated for release in 2015.

BOTTLED UP Ninety-nine million litres of bottled water were sold in 2013 in Finland, according to Euromonitor International’s “Bottled Water in Finland” report.

One of the newest independent players on the Finnish market is DROPP, which bills itself as “sustainable, Baltic Sea friendly spring water.” All profits go to helping restore the health of the Baltic Sea, which is not fairing as well as many of Finland’s inland waters. “The environmental balance has been disturbed by over-fishing, irresponsible shipping practices and the pressures arising from agriculture and industry,” says Amanda Sundell, DROPP’s founder. DROPP works together with Baltic Sea Action Group (BSAG) with the mission of reviving the ecological state of the Baltic Sea and hopes to make it easier for people to participate in this effort in their daily lives. “Water is more than water, as it affects so many areas of life,” says Markus Tuukkanen, deputy managing director of the Finnish Water Forum, a joint network founded in 2009 that brings together 99 key players ranging from government ministries to large and small private companies, universities, and research and innovation institutions.

“For example, water security is an issue facing both the individual and society in countries where there’s a lack of safe water. That’s often when conflicts over water arise,” says Tuukkanen. “This is an area where Finns have a lot of expertise, as we have a long tradition of cross-border water agreements dating back to the 1950s with our neighbouring countries such as Russia, Sweden and Norway. Taking care of shared waters is to everyone’s benefit,” he adds.

Finnish water know-how is a growing international business, with more than 250 companies and research institutes active in the water and wastewater sector for an annual turnover worth more than four billion euros.

The Forum’s members have been working on water infrastructure issues for 30 years in Southeast Asia. In Hanoi, Vietnam there’s a street, Duong Nuoc Phan Lan, named after Finnish water because Finnish H20 expertise is so highly valued; Finns were the first to help local residents obtain a proper water supply. In parts of Vietnam, having a Finnish water system in place raises house price values.

Tuukkanen stresses the importance of a holistic, long-term approach. “Technology is only one of many factors that contribute to drinkable tap water. Infrastructure, planning, innovations, regulations, and long-term sustainability are key in rising economies where clean water is not a given,” he says.

“But all the technology in the world doesn’t matter if there isn’t a system in place.”

In Finland’s case, much of today’s well-managed water system owes a debt to the laws and regulations set in the 1960s by government that ensured wastewater from municipalities and industries such as pulp and paper was treated.

H2O STRENGTHS Finland’s areas of expertise range from smart water (technology such as sensors, data transmitters and data analysis), wastewater management, resource management, integrative water systems management, and Arctic knowledge (systems work regardless of +30 or -30 degree Celsius temperatures).

“Water efficiency is one of Finland’s strongest suits,” says Tuukkanen. “In many parts of the world, stolen or leaked water (non-revenue water) accounts for between 30 to 70 per cent of wastage. In Finland, it can be only 3 to 5 per cent.”

According to Tuukkanen, the challenge for the industry is supporting newer and smaller players.

“We have large internationally successful companies such as Kemira, Outotec, Metso and Vaisala, which is the world’s leader for meteorological measurement systems, but not much in between. Small companies often don’t have the resources to grow from a small company to an international player and that’s where we try to help,” says Tuukkanen.

And where does the final proof of Finland’s water expertise lie?

“Finnish tap water is drinkable irrespective of source,” replies Tuukkanen. “I can drink clean, good tasting tap water at a gas station, gym, community centre or private home, regardless of where I am. ith a population of 5.4 million people and 3.3 million saunas, the national bath remains at the centre of Finnish life. Built into homes, airports, shopping centres, offices, gyms, down mines, and even on ships – you never have to go too far to find one.

While the sauna does remain a defining aspect of Finnish life, its role has changed. Up until the 1950s, Helsinki had hundreds of public saunas – the place where people would go to meet friends, bath, unwind and relax. But, now the city is home to far fewer public saunas.

There is one group based in Helsinki that is trying to protect the traditional way of taking the Finnish bath – the Finnish Sauna Society.

THE ULTIMATE SAUNA CLUB A 15-minute bus ride from central Helsinki in the Lauttasaari district, there’s an enormous timber construction surrounded by a forest and overlooking the sea. Capacious puffs of smoke exiting a chimney are a giveaway – this can only be home to Saunaseura – the Finnish Sauna Society. Founded in 1937, this is the ultimate club for the sauna fanatic, and its aim is simple – to protect and maintain the tradition of the sauna in Finland.

heavy barn-like door for me. As I enter the house, a rush of warmth hit my face, and the smell of birch leaves fill the air.

Pirjo used to be a member of Saunaseura for 11 years before leaving her job as a chemical engineer in order to devote her time to being CEO. “This is a dream job for me, as the sauna has always been the most important part of my day.”

We walk into a room that is used by members in between saunas to relax and rehydrate. I take a seat in a low slung and very comfortable chair. Through the enormous windows I see an uninterrupted scene across the expansive Baltic Sea. I notice a path outside leading from the house – a winding barge that juts out OCTOBER 2014

into the sea. “That is where we swim after our sauna,” Pirjo says. “In the winter it’s the place where we cut a hole in the ice in order to jump in.”

Pirjo is worried that traditions like ice swimming are dying out. “We are trying to promote traditional Finnish sauna practices to young people in particular.”

SMOKY AND SMOOTH Saunaseura has five saunas heated by firewood, and impressively, three working savusaunas – saunas heated with smoke.

“You must come and try a smoke sauna. It is the original and best type of sauna,” Pirjo says.

The smoke sauna takes five hours to heat. The room is filled with smoke by burning wood in a large stove and once it has reached the required heat, the fire is left to die and the smoke is vent via a hole in the ceiling. “This results in a very smooth löyly,” Pirjo explains, referring to the vapour given off by a sauna, which is thought to be distinctively different in each sauna.

We strip down to nothing as clothes and bathing suits are not allowed in the sauna. Putting any self-conscious feelings to one side, I follow Pirjo into the smoke sauna. She closes the door behind us. It’s pitch black and the smell of smoke is present, but not overwhelming.

The savusauna is absurdly hot, unlike any other I’d been in before. “The great thing about being in a sauna with a group,” says Pirjo “is that everyone is equal. No one has a title in the sauna, and we don’t talk about work. We focus on the positives in our lives, or world events. It’s the place we come to collect strength.”

TAKE A COOL DIP

Twenty minutes pass, and it is definitely time to cool down. Pirjo walks with conviction towards the winding barge, making for the suddenly very chilly looking Baltic Sea and jumps right in. She comes up to the surface quickly looking refreshed. “Just jump in,” she encourages me, “It’s not too cold at this time of year.”

I jump in, and scream out when I hit the freezing cold water! Admittedly it is one of the most invigorating sensations I have ever felt. “Imagine this in the middle of winter when we cool off in the ice hole,” Pirjo says. “The sauna is 100 degrees Celsius, in contrast to the 0 degrees of the water. There is nothing quite like it,’,” she gushes. I’ll take her word for it.

We climb out of the sea and sit ourselves on a bench, the autumnal sun shining down, and we finally turn to Pirjo’s biggest concern – the decline in public saunas.

“Public saunas are part of our national narrative; they are part of our identity. They offer people a community, and a place to connect with others. Up until the 1950s that was the way to have a sauna,” she says.

It all changed in the 1950s when apartment blocks shot up in Helsinki and people could book to have a private sauna in their block for free. Up until a couple of years ago, there were only four public saunas left in Helsinki, but Pirjo sees some positive signs for a change.

Last year saw the building of a new public sauna, Kulttuurisauna, which started as a temporary art project but has remained in place due to its popularity with young people and tourists. “People love this new sauna,” Pirjo says. “We are hoping this marks the start of a new trend.” l

Coping with pressure

W

hen I became Prime Minister of Finland this summer, I was reminded of rock star Billy Joel’s 1982 hit song “Pressure.” The lyrics are about the importance of pacing yourself and remembering that you’re just like everyone else, even when you have to perform under extreme duress.

My first months as PM have not been that bad, but my new job has certainly redefined the notion of pressure for me.

Sure, I had been a government minister and a member of the European Parliament for the better part of ten years, but the stuff that comes flying at you when you’re the PM is something else.

you have a narrow majority. Administering a government, a political party and a ministry is no easy feat.

Then there’s the smaller stuff. I might say or do something silly that creates mayhem in the media or elsewhere. A member of my party or government might get into trouble for one reason or another. No matter where I go, a microphone may suddenly be thrust in front of me – and I must be ready to comment.

The truth is that all problems, regardless of size, need to be solved. Sometimes they are complicated, frustrating and timeconsuming. Most of the time they all get solved – if not today, then tomorrow.

We all feel pressure at times, whether it’s at work or home. The best way to deal with it is by staying calm, cool and collected. The more pressure you feel, the more important this is. Not taking everything personally is also an invaluable asset.

he bustling metropolis of Tokyo is known for its sushi and sashimi restaurants. From the upscale Ginza shopping and entertainment district to the artificial island of Odaiba, there are more seafood eateries in the Japanese capital than you can shake a chopstick at. And one of the most soughtafter delicacies on the sushi and sashimi menus is Aurora Salmon, which is flown from Norway to Japan by Finnair Cargo.

“Finnair is the only carrier in the world to transport fresh salmon from the Atlantic Ocean in Northern Norway to Japan in 36 hours – that’s very fresh.

Aurora Salmon, which grows under the Northern Lights, is a very specific premium product for the Japanese market,” says Juha Järvinen, managing director of Finnair Cargo.

Currently, the biggest category of items that Finnair Cargo transports are electronic goods such as mobile phones, laptops, and iPads, followed by electronic equipment and spare parts for the automobile industry.

FUTURE FLIGHT “There’s tremendous demand in Asia for Norwegian fresh salmon: there’s growth of approximately 20 per cent a year from Norway to Asia,” says Järvinen. Worldwide, online shopping is pegged to be a 1.1 trillion euro business this year. Asia Pacific consumers are projected to spend more on e-commerce purchases than consumers anywhere else in the world, according to leading research firm eMarketer. This

will make Asia Pacific the world’s largest regional e-commerce market in 2014. And yet, it is still a largely untapped market.

As the wealth of the Asian economy grows, so does the desire for an ever-expanding array of items.

“Demand from the region is not only for seafood, but also fresh produce such as vegetables, and increasingly, luxury items including Champagne, cheese, luxury European brand-name clothing and accessories such as high quality bags and shoes,” says Järvinen.

CUTENESS POINTS In May, Finnair Cargo transported a two-year-old Snow Leopard named Jeti from the Ähtäri Zoo in Finland to his new home at the Asian-themed Pairi Daiza garden zoo in Belgium.

“The snow leopard was definitely one of the most exotic animals that Finnair Cargo has transported,” says Järvinen. “The most important thing when transporting animals is their constant care – the same goes for pets, of which we carry a lot. We have to ensure that all the animals who fly with us are continuously cared for, from terminal to tarmac to aircraft,” he says.

PHARMA LEADER In 2013, Finnair opened a second hub in Brussels owing to the concentration of pharmaceutical production in Europe. “We now fly directly with large aircraft from Brussels to Helsinki and on to Asia. This is also due to

the growth and wealth of Asian consumers, who have more money to spend on medicines such as biotech,” says Järvinen. Finnair Cargo, which transported more than 2 million kilos of pharmaceutical products last year, was recently selected as one of the first airlines in the world for IATA’s Pharma certification pilot. (IATA is the airline industry’s global trade association.)

Although the cargo industry faces challenges including slow economic growth in Europe, Järvinen is upbeat. “Finnair is ready for the future. We’re very much focusing on north-eastern Asia-Europe flows, which means we have a very specific product and range. With the new, next-generation A350 aircraft that Finnair has purchased starting to join the fleet next year, we’ll receive an additional 16 to 20 per cent more capacity for cargo. By 2020, we will have 50 per cent more cargo capacity than we have today,” he says.

In addition to the Brussels hubs, Finnair Cargo is evaluating opening additional European hubs to help deliver goods to consumers as quickly – and freshly – as possible. “Twenty per cent of our business already comes from central Europe, and the growth rate last year was 35 per cent between central Europe and Asia. There’s big potential for further growth,” says Järvinen. l

T

he northern route around the Kabak valley turns out to be more challenging than I expected. Darkness is falling and I’m tired, though we’ve only hiked for six hours. Yesterday’s experience of getting lost in the mountains and walking for hours in the dark to reach Faralya seems to have sapped my strength. Down in the valley, it’s quiet and windless.

According to the map, we should have crossed a stream. Has it dried up? After looking around for a while, we find piles of rocks left as markers by earlier walkers. Gratefully, we add a few more stones of our own. We find a camping spot on a narrow path beneath a steep cliff. To the west glitters the sea. The night is full of bats and owl calls.

When I suggest that the Lycian Way is a tough walk, its creaKATE CLOW tor, Kate Clow, bursts into laughter.

“I don’t think it’s hard at all! It’s as hard as I intended it to be. I would hate it to be like Santiago de Compostela in Spain, where half of the route is asphalt,” Clow says.

“I DON’T THINK IT’S HARD AT ALL! IT’S AS HARD AS I INTENDED IT TO BE.”

A quarter-century ago, Clow left England and came to work in Turkey. At that point there were hardly any long-distance walking paths in the country. The landscapes of southern Turkey reminded Clow of the French Pyrenees, where she had trekked often. The Lycian Way was the first route she created in the late 1990s.

“I did it bit by bit first. The joining of the roads came later. I only had a sea navigation map – that’s why it turned out to be a coastal route,” Clow recalls.

In her experience, for most hikers the most important factors are landscapes, the sea and friendly locals.

She herself is most interested in old roads.

“I’m interested in humanity on a large scale,” she says, “how humans have spread across the globe and changed the landscape; how cultures have developed.”

FROM TENT TO HOT SHOWER Part of what makes the Lycian Way so fascinating is its variety. Sometimes the landscapes resemble northern Norway, and at other times mountain villages in Nepal or the African savannah. Just when one begins to tire of rugged stony terrain, and climbing seems to have drained one’s energy, the top of another slope reveals a lush green plateau where honeybees buzz and children’s laughter echoes from a nearby village.

There is also a variety of accommodation options.

The path goes through mountain villages but also through larger towns, with all possible services.

The trail varies from rather difficult mountain paths to easy earth roads.

HIKING IN AUTUMN OR SPRING THE LYCIAN WAY is 509-kilometre way-marked path along the southern coast of Turkey, from Fethiye to Antalya. It takes approximately 25 days to walk the way its total length.

The first long-distance hiking route in Turkey was originally designed and way-marked by Kate Clow in 1999. It was made partly to identify and protect some of Turkey’s old roads.

It is one of the 18 Cultural Routes in Turkey that members of the Culture Routes Society have been creating. Routes are being maintained by members and volunteers.

The trail consists mainly of old footpaths and mule trails. It is not suitable for mountain bikes.

The starting point is at Ölüdeniz, two hours from Dalaman airport.

Public transport is available all along the way. The end point is close to the international airport in Antalya.

The best times for trekking are February-May or September-November. Summers tend to be too hot for walking.

Except for mountainous areas, accommodation is available in village houses, pensions or small hotels. Independent trekkers can easily find suitable camping places.

Lycia is the historical name for the Tekke Peninsula. The Lycian Way is dotted with historical sites and ruins dating back to ancient times. Lycian culture was a unique synthesis of native, Greek and Persian styles. The region became a Greek-speaking Roman province, and then in 395, part of the Byzantine Empire. Lycia has monasteries and the Tomb of St. Nicholas at Myra, which remains an important destination for pilgrimages. With the decline of the Byzantine Empire, Lycia was slowly absorbed into the Turkish Selçuk and later Ottoman Empires. Since the Republic of Turkey was established in 1923, Lycia has developed considerably, with agriculture, forestry and tourism being the main sources of livelihood.

Packing lightly is essential in order to enjoy the trek.

After a night or two in a tent, you’ll appreciate a hot shower and a soft bed. There are package tours on offer, with your baggage delivered by car to your next accommodation. Day treks are also possible.

APPEALING CHALLENGES At a hotel restaurant in Kalkan, a map of the Lycian Way is spread out on a table. Klaudia and Karl Schäfer, a middle-aged couple from Armsheim, Germany, are eating breakfast. They say that spring is a perfect time to walk the Lycian Way. The weather is just right and nature is at its best as flowers burst into bloom.

The Schäfers are planning to walk from Ovacık to Kaş. They’ve been on the path for five days, with four more to go. The couple plan to hike the whole route in stages: “Part of it this year and another section next year,” says Karl.

The Schäfers are experienced trekkers. Within the past decade they’ve hiked in the Alps, the Grand Canyon and on Mallorca. They give the Lycian Way good marks. As they see it, the relative lack of development in the area is part of its appeal.

“It’s not always easy to find accommodation, food or drinks. And you have to be ready to set up a tent,” Karl says.

The Germans have not run into any serious problems, although it’s sometimes been difficult to find the trail markers. According to Karl, though, finding your way is just one of those small challenges that

make hiking more interesting. They’ve only resorted to using their GPS once.

The friendliness and hospitality of the locals is a recurring theme in the hikers’ tales. People invite trekkers into their homes, while motorists passing by offer them tomatoes and rides. The Schäfers recall a little boy who took them by the hand in a mountain village and introduced them to his relatives. In Sidyma, a woman invited them in for breakfast, baked bread and served it to them warm with honey, cheese and fresh vegetables – all under the watchful eye of her cow.

MEETING WITH A SHEPHERD The Lycian Way curves around the Tekke peninsula, which is still a relatively remote part of Turkey.

The coastal motorway was only completed in 1988.

Because of its isolation, traditional ways of life still persist on the peninsula. Along the route you may meet yörük nomadic herders, who live in goatskin tents and use camels to carry their gear. You can visit significant historic landmarks accompanied only by sheep. For the Schäfers, it was an amazing experience to walk on the Xanthos Roman aqueduct, which the local farmers still use for irrigation.

Along with domestic animals, you may also encounter wild boars in the dusk. Land tortoises and various kinds of lizards are everywhere.

The stars shine bright over the Gelidonya lighthouse. Gathered around a campfire are half a dozen hikers from Germany, Iran and Finland. An astronomy teacher from Teheran points out constellations

to 26-year-old Munich native Sebastian Scheck, who draws them in his notebook. There’s a cosy, laidback atmosphere. Everyone has shared experiences and unforgettable stories from the trail.

Sebastian, who has been studying literature and geography, chose the Lycian Way because he wanted to see a different kind of Turkey beyond the standard tourist destinations. He has certainly found it during his 16 days on the route. One of Sebastian’s fondest memories was meeting a shepherd who invited him into his hut.

“There wasn’t anything in there besides a television, two shotguns, a woodstove, a mattress and some rugs,” Sebastian recalls. They didn’t have a shared language, but they managed to converse over a cup of tea by using a dictionary and hand gestures. When it was time to go, the herder gave Sebastian some water and halva wrapped in bread.

Clow has also heard many stories such as Sebastian’s about trekkers who come to the Lycian Way in search of the authentic Turkey.

“People like to take part in genuine culture,” she says. “Visitors are surprised at how welcome they feel.”

CHARM OF HIKING The exact number of walkers on the Lycian Way is unknown, since there is no way of monitoring it. Clow estimates that there are 20,000 to 30,000 trekkers yearly and 80 travel agencies working on the route.

In her opinion, Turkey is a fantastic country for hiking with lots of opportunities on offer.

“It’s possible to hike here in every season. There are easy roads, hard roads and bicycle roads. One can combine walking with bird-watching or flower-spotting. The landscape varies so much. In few years, it will hopefully be as attractive as France,” Clow says.

The day after the encounter at the lighthouse, Sebastian is sitting at a seaside café in the small coastal town of Adrasan.

“What I love most about hiking is that you know what you’re going to do the next day,” he says. “You don’t have to think about it. You don’t need to make any plans. You just go on.”

Sky Bistro replaces complimentary cold snack service on European flights On short-haul flights in Economy Class, Finnair will introduce Sky Bistro in November, a wider mix-and-match selection of seasonal, high-quality foods and beverages combining the best tastes of Europe and Asia.

Sky Bistro, which will be available on nearly all European flights, replaces the complimentary cold snack service that had been offered on some European flights lasting longer than two hours. On all flights in all classes, coffee and tea and water remain complimentary – as does Finnair’s signature refreshment, blueberry juice.

In Business Class, meals remain inclusive in the ticket price.

• Safety information is presented by the cabin crew at the start of each flight. This information is also listed on the safety instruction card in your seat pocket.

• Children are offered puzzles or colouring books on intercontinental scheduled flights and leisure flights.

• Safety belts must remain fastened when the “Fasten safety belt” sign is on. For safety reasons we recommend keeping them fastened even when the sign has been switched off.

From films to news and sports, there’s always something for you to enjoy, including programs from Hollywood, Asia and around the globe.

Available language tracks include English, Japanese, Korean, Thai, German, French, Italian, Spanish, Swedish and Finnish, depending on the program, as well as Finnish and Chinese subtitles.

We also offer family films and cartoons on all international and leisure flights.

Society and the environment Finnair wants to be the number one choice for quality- and environmentally-conscious travellers.

The airline collaborates with many environmental and humanitarian organisations, and invites its frequent flyers to participate in these efforts by donating Finnair Plus points.

Here are a few other examples of Finnair’s societal involvement in a changing world:

A HARD STOP TO CHILD ABUSE

• From 1999 to 2009, Finnair cut its carbon dioxide emissions per seat by 22 per cent.

By 2017, it intends to reduce this number by another 24 per cent; total reductions per seat from 1999 to 2017 will equal as much as 41 per cent.

Finnair supports the International Air Transport Association’s (IATA) goal of zeroemissions air travel by 2050, as well as a global emissions trading scheme.

• Finnair flies one of the youngest fleets in the business.

The average aircraft age is 9.9 years. Operating with new aircraft cuts back on fuel consumption and emissions by 20 to 30 per cent.

The airline also flies the shortest routes between Europe and Asia via Helsinki, reducing fuel consumption. Passengers and cargo are carried on the same flights.

ADVOCATING CONSCIENTIOUS and non-exploitative tourism is an important part of Finnair’s corporate responsibility efforts. Most recently the airline has teamed up with The Finnish Association for Fair Tourism to help increase awareness of a disturbing phenomenon: child sex tourism. The association’s new campaign, entitled Too Bad to be True, launched in mid-September.

Sponsors include the Ministry for Foreign Affairs of Finland.

The campaign defines child sex tourism as the sexual exploitation of under-aged individuals by travellers to a particular destination. It has been estimated that between two and three million young people are targets of child sex tourism each year. The horrific phenomenon of underage prostitution is estimated to be particularly prevalent in Southeast Asia, parts of South America and African nations such as South Africa, Ghana and Kenya.

“The travel industry can play a notable role in helping spread awareness, as companies such as airlines have a front-row position to recognising questionable situations and informing travellers,” says Tytti McWeigh, project manager at the Finnish Association for Fair Tourism. One of the goals of Too Bad to be True is to increase knowledge of the issue among travel industry professionals.

The campaign’s hub is a web site that offers aggregated up-to-date and accessible information for Finnish travellers.

• HOTT (House of Travel and Transportation), which houses Finnair’s headquarters near Helsinki, has received the esteemed LEED (Leadership in Energy and Environmental Design) Platinum international environmental certification.

The system ensures that a construction project meets the strictest requirements for environmental efficiency.

HOTT is owned by pension insurance company Ilmarinen, and Finnair is the primary tenant.

• Finnair employees are offered continuous training and development opportunities.

The company also conducts an annual employee wellbeing survey, participates in campaigns promoting equal treatment at the workplace, and places a strong focus on occupational safety.
