LONDON & THE SOUTH EAST From the outside, it’s just another unit on a north west London industrial estate. On the inside of The Bread Factory, talented bakers produce wonderful creations using timeless techniques and honest ingredients.

T

he Bread Factory’s wares are, quite literally, fit for a king. The bakery counts Michelin-starred restaurants, five star hotels and royal households among its clients. However, it also sells through more mainstream channels such as retail, pub and restaurant groups and independent cafés and shops, with the mission of making artisan bread accessible to all. You can really taste the freshness of the crispy, melt-inyour-mouth pastry that complements the spices and flavours of the seeds.” To achieve a base with these qualities, puff pastry and brioche baking techniques are deployed and each sheet is checked by

hand to confirm that the balance and weight is correct before a coating of mixed seeds is applied. The bakery currently produces more than 100kg of the buttermilk-based crackers every day to satisfy the huge and growing appetite for craft baked goods. “Increasingly, people want to know where

their food is coming from and what they are putting in their bodies, so the market for our quality, artisan products is growing,” says Ella. With more and more people outside London eager to get their hands on The Bread Factory’s authentically artisan wares, the company opened a Manchester bakery this summer. “This northern base will enable us to share our experience and increase the accessibility of artisanal bread, pastries and cakes to the city of Manchester and beyond,” says Ella. www.breadltd.co.uk

EAST ANGLIA & THE MIDLANDS Anne and Chris Parker have travelled the world, but their biggest voyage of discovery has been the journey from hobby coffee roasters to Great Taste Golden Fork winners

C

raft roastery Monsoon Estates Coffee Company never dared hope that it would win an elusive three-star award, so when Anne and Chris Parker received news that their signature espresso blend had made it into the Great Taste Top 50 foods and scooped a Golden Fork, they were “blown away”. “We have entered several coffees in the past four years, getting some one- and two-star awards, but we never thought we would get the coveted three-star,” says Anne. Basically, we were looking to capture the essence of one of our favourite espressos from Italian Joe at Café Sport in Perth, Australia, back in the 80s.” The blend is a mixture of Guatemalan, Colombian, Brazilian and African Arabica beans, all chosen for “what they bring in flavour and compatibility with each other”. Each origin is roasted separately to its own specific profile, then the beans are blended together and rested for a few days. This yields a blend that Anne describes as “full bodied, sweet, smooth and chocolatey with a hint of citrus”.

“The judges nailed it when they described it as ‘proper coffee’ and said it was good enough to transport them to the espresso bars of Italy!” she says. The husband-and-wife-team first started roasting their own coffee in 2010 when, on returning from travelling, they “struggled to find a good cup”. The purchase of a Turkish Toper roaster followed, and before long they were selling their coffee at local fairs and charity events.

There’s not much time for those any more with a thriving web-order business and numerous coffee shops, restaurants, farm shops and cafés to keep in coffee. The business now operates from a dedicated micro-roastery on the Alscot Estate near Stratford-upon-Avon, and is in the process of purchasing its fourth roaster. “Business is growing rapidly and we are looking at another roaster again,” says Anne. “We’re looking forward to continued growth and discovering some new and great coffees – hopefully another three-star one.” www.monsoonestates.co.uk

NORTH OF ENGLAND Silky and dark-chocolatey as an espresso shot but, as its literary name implies, Dark Woods Coffee’s house blend is transformed into a caramelly hazelnut delight by a splash of milk.

D

amian Blackburn is a man who definitely knows his beans. Having helped to set up and develop the Grumpy Mule coffee brand, he departed two-and-a-half years ago to start a new project, this time with fellow coffee gurus Paul Meikle-Janney and Ian Agnew. Under Milk Wood was the first coffee to be developed by Dark Woods Coffee, once the roaster was installed at their converted textile mill in the Colne Valley. “It was designed to Espresso blends be our house blend, can often be so had to be perfect for most coffee shops polarizing. Although they wanted to create a different espresso blend, the Dark Woods team were also aware that there’s a limit to what boundaries can be pushed. “Espresso blends can often be polarizing – those that are too traditional in style, so they are too dark roasted and flat tasting, against the modern style of light roasting very high altitude, high acidity coffees,” says Damian. “We wanted to create a blend that was complex, aromatic, tasty and with balanced acidity.” Damian first discovered the critical ingredient in this blend – coffee from the Kalledevarapura Estate in the Indian state of Karnataka – while on a sourcing trip back in 2009, and it had made a strong impression.

“It was fate that one day I’d get a chance to work with this coffee, and we’re the only UK roasters that do,” he adds. The estate’s Arabica is blended with beans from the Ethiopian OCFCU Killenso Mokonisa Co-op and Fazendo Passeio in Minas Gerais, Brazil. At the mill, the coffee is roasted on a vintage Probat drum roaster, which is not only inspiring to roast coffee on, but also imparts its individual character to the beans, with lots

of heat-retaining cast iron used in the design. The lower altitude Brazilian and Indian Arabica beans are roasted together to a darker profile to develop chocolatey sweetness and velvety texture. The high altitude Ethiopia Arabica is roasted separately and to a lighter roast character, adding citrusy lift and complexity to the final coffee. Under Milk Wood is, as Damian puts it, “a global team effort”, and winning a Golden Fork was not just a proud moment for Dark Woods Coffee, but also a victory for a rare sourcing approach that relies on good oldfashioned relationship building. www.darkwoodscoffee.co.uk

Jess Vaughan and her father Mike have done what many beleaguered dairy farmers dream of doing and turned their backs on a system that pays a pittance for a pint of milk. now they plough their own furrow in milk and cream production.

T

he Vaughan family have owned Hardwicke Farm in Gloucestershire, the home of Jess’s Ladies, for three generations. Of course, going it alone in milk production and eschewing the mainstream dairy supply chain was not an easy route. “By the nature of the process we only put a comparatively small volume through our farm bottling plant, which is inherently more

expensive than huge factories whose costs are minimised by economies of scale,” says Jess. Distribution is also a challenge because Jess’s Ladies’ milk and cream have a shorter shelf life than homogenised products. Jess says they get round this by distributing themselves using their own refrigerated vans on the same day the milk leaves the cow.

Even so, with a retail price of £1.29 per litre, Jess’s Ladies’ milk is only 15p-per-litre more expensive than its mass-produced counterparts, while the cream has a 20% premium over conventional cream. “I do not think it is wildly expensive for a product with genuine differences, and which, as the Great Taste judges agreed, tastes much better as well!” says Jess. www.theladiesorganicmilk.co.uk

ou don’t have to be an artisan producer using time-honoured techniques (although many entrants are) to enter Great Taste. Indeed, the product named this year’s Golden Fork from Ireland is a sticky toffee pudding sold under Dunnes department store’s Simply Better own label. Don’t be fooled. Asked what the secret is to making a great tasting sticky toffee pudding, Catriona says: “We believe great ingredients, such as Irish butter, Irish cream and Irish free range eggs are the key.” She says it also helps that the sticky toffee is hand-made in batches of 45. “This ensures each pudding is perfectly baked and consistent every time.” Even a retailer the size of Dunnes, which has 152 stores across Ireland, the UK and Spain, and was this year crowned Irish Quality Food Retailer of the Year, acknowledges that Great Taste has made a difference to its business. “Great Taste is known as the Oscars of

the food world,” says Diarmuid. “Although we were confident that this was a fantastic product, achieving three stars was amazing and winning a Golden Fork was outstanding. There has been an amazing reaction to this award and sales have increased ten-fold since.” And at Royal County Puddings, Catriona and Rory are preparing to ramp up production to keep pace with this demand. “We’ve taken on a second member of

staff, so we’ve now got two really good people working for us, and I’m confident that the demand is there for three full-time jobs,” says Catriona. Even with an enlarged team, there is still a limit to how much toffee pudding can be produced without compromising on the quality. “The maximum number of puddings we can make in a day is 270, and that is starting at 7am and with all the prep done the night before,” she says. www.dunnesstores.com

ast year, some producers must have breathed a sigh of relief when they found out that Hannan Meats was taking a year off Great Taste “to stand back and draw breath”. Being up against the Moira-based butchery business for an award must be like finding yourself next to Mo Farah at the start of a running race. It is the very definition of slow food, starting with the rearing of the beef cattle and ending with a stint of 28-45 days in the chamber. “We are very reliant on the 122 farmers who produce Glenarm Shorthorn beef for us,” says managing director Peter Hannan. “We pay them a premium for rearing the beef exactly how we want it. After two years, they deliver it to us and we make a substantial difference to it by aging it properly.” A further, seemingly minor but crucial detail is that the ‘fat cap’ is left on top of the ribs.

“The muscle on the top of the rib is called a ‘cap’,” says Peter. “Quite often, we take that off to age the meat, but in this case we left it on to draw out the moisture, so it turns into magnificent golden fat when roasted. “Fat is a glorious thing and we have been misled for a number of years about it. Now people are returning to animal fats.”

With so many accolades to its name, it begs the question whether Hannan Meats is getting too ‘great’ for Great Taste. But unfortunately for his rivals, Peter is more committed than ever. “We really missed it in 2015 and would never abstain again,” he says. “Great Taste makes a huge difference to our business. ne lesson Steph Culpin says she has learned from this year’s Great Taste is never to doubt the cider-maker’s palate. While its Vilberie Medium Dry took the Welsh Golden Fork and all the plaudits last year, Apple County Cider’s Dabinett Medium also won a highly creditable two stars. Making a single varietal that can hold its own is no mean feat, but Ben has discovered that from this apple he can produce a wellrounded, not-too-sweet, lightly sparkling cider with body and richness from honeyed caramel notes. “The bittersweet Dabinett apple is very robust – probably one of the best for cider making, because it has a high sugar and tannin content,” explains Ben. He also uses a wine-maker’s yeast, and allows the cider to cold ferment for seven months. “Whereas most cider makers bottle in April, we bottle in June, and over the winter months it is just sitting in a barn outside,” he says. “The yeast gets less active the colder it gets, which slows down the rate of fermentation.” This year’s crop produced 20,000 litres of the Dabinett cider, most of which ends up on the menus of local destinations like The Bell

at Skenfrith and the Michelin-stared Crown at Whitebrook. However, on the back of last year’s Golden Fork for its Vilberie cider, Apple County has struck a deal with the prestigious Hankyu department store that will soon see the brand on sale in Japan. Ironically, although Apple County’s cider making talent has been recognised by the

Japanese equivalent of Harrod’s, high-end department stores closer to home haven’t yet come knocking. “I’m hoping this will change if Japanese tourists come to London and look for the brand,” says Steph. “Breaking into London stores, bars and restaurants is high on our agenda.” One of the challenges that Apple County comes up against is that cider is often overlooked by top class restaurants, many of whom “just serve Magners or Bulmers”. But Steph is convinced that the craft cider market is about to explode in the same way as craft beer already has. SCOTLAND Each wood-smoked herring that comes out of Jaffy’s Smokehouse is a succulent triumph over modern electric smoking ovens

J

Lawrie & Sons is a great example of a business that knows what it does best and sticks to it. Since 1944, the smokehouse in the coastal village of Mallaig, Inverness-shire, has been a custodian of the dying art of traditional fish smoking, and in all that time, neither the cures nor the smoking techniques have changed. “The secret is maintaining high standards, sticking to the traditional cures and processes, and never compromising on the time taken to smoke,” says fourth With growing generation owner Jeff interest in eating Lawrie. The grandson of more naturally the company’s original and healthily, founder George Lawrie, people are or ‘Jaffy’, Jeff takes returning to the steward-ship of his grandfather’s trade very kippers seriously. The business is currently being rebranded with the aim of promoting its family values and heritage. “We want to show how committed we are to the traditional processes that set our products apart,” says Jeff. Hot and cold smoked salmon and kippers are the products that keep smoke billowing from the chimney of the 30ft brick smokehouse. “They are what we do best – simple products we’ve been making since the 1940s that are always well-received,” says Jeff. That is a modest understatement from a producer that has become one of the most prolific Great Taste award winners. As well as racking up numerous gold stars, Jaffy’s kippers are three times winners of the coveted Golden Fork from Scotland. But even with such an impressive collection of accolades, Jeff still reacted to the news of this year’s Golden Fork as though it were the first. “I was completely delighted,” he says. “It is an honour that such a large number

of judges consider our product to be at that level. People recognise the Great Taste logo on our product and it generates interest from all over the UK and beyond.” And it’s not just older generations who eat kippers for breakfast, lunch or dinner. Jeff says the Omega-3 rich fish are attracting a new breed of health-conscious consumers. “With growing interest in eating more naturally and healthily, people are returning to kippers,” he says. “I’ve never met anyone

yster aficionados will be disappointed to learn that the Golden Fork winning Huitres Amélie aren’t currently available in the UK. However, they may be heartened to learn that the French oyster producer is planning to launch in the UK next year, and is even considering opening a flagship oyster bar in London. For now, though, they will have to make a journey across the Channel to experience the meaty texture, clean mineral twang and sweet finish of the PGI (protected geographical indication) oysters first hand. After two to three years in the ocean, the oysters are matured for a month in clay ponds, known as ‘claires’. “The claires are brackish water ponds that were formerly used by the Romans as salt marshes. They only exist in Marennes-Oléron and are filled regularly by the tide,” explains Joan. He says that finishing the oysters in the claires grows the meat, enhances the taste by making it less sour and iodised, purifies the oysters and eliminates epibontes (small organisms living on the surface of the shell)

The Fine de Claire is not too fleshy, with a subtle sea flavour and a short finish, whilst the Speciale de Claire’ is fleshier, with a firm consistency, rich flavours balanced between iodine and sweetness, and deeper concavity of the shell. What is Great Taste?

Great Taste is the largest and most trusted accreditation scheme for fine food and drink. Established in 1994, it encourages and mentors artisan food producers, offering a unique benchmarking and product evaluation service leading to an independent accreditation that enables small food and drink businesses to compete against supermarket premium own label brands. Since 1994 over 110,000 products have been assessed. During 2016, 10,000 products were blind-tasted by panels of specialists: top chefs, cookery writers, food critics, restaurateurs and fine food retailers.

What DO Great Taste judges look for?

They look for truly great taste.Yes, they take into account the texture, appearance and of course quality ingredients; they like a good aroma, a decent bite to a sausage, a smooth lemon curd, crunchy rich pastry, but everything comes back to the taste. Is it really, truly great?
