> Lemon and Lime gains international recognition Fine & Country’s home staging partner, Lemon and Lime, has been awarded two prestigious international awards. The Lemon and Lime team won the award for the best Home Staging Transformation Project in 2021 at the International Home Staging Awards for their staging of a property called Hardwick Lodge. The founder of the company, Elaine Penhaul, said: “We are thrilled to have won such a prestigious international award. The team identified the value home staging would bring to the property and made the most of the opportunity by transforming the conservatory into a drawing room, providing an additional reception room with entertaining space. > Thailand luring investors with long-term visas According to Sean Barrett, Managing Director of Fine & Country Thailand, the country is aiming to lure up to one million wealthy residents by offering long-term visas to those who invest between $250,000 and $500,000 in property or government bonds. The visa scheme was unveiled by Prime Minister Prayuth Chan-ocha’s cabinet in September and subject to legal changes, will target affluent global citizens, wealthy pensioners, digital nomads working remotely and skilled professionals. To qualify for the 10-year visa, which includes family members, the Thai Government said wealthy global citizens would have to invest at least $500,000 in bonds or real estate and prove they had a minimum income of $80,000 per year. Retirees will need to invest at least $250,000 and earn a minimum of $40,000 a year. The plan is to offer the measures for an initial five-year trial period starting in 2022. ufted sand dunes, woodland walks, a soft golden stretch of beach, and the rolling royal golf course, all conspire to make Dornoch a pocket of peace and calm in our otherwise busy lives. This coastal town in the Highlands of Scotland, nestled by the sea in the county of Sutherland, is a four-hour drive from Edinburgh – if you’re travelling up here from anywhere else, a stopover is recommended to make it a little more leisurely. I stayed the night at The Dunstane Houses in Edinburgh, a Victorian villa that was once a private residence and still feels like a home, but is now a luxury boutique hotel. The hotel has just 17 rooms, and if you choose the Ronaldsay Suite, you’ll be treated to a ground-floor room with a freestanding in-room bath that basks in the original bay window. For dinner, head into town to Noto, where the stripped-back rustic menu and décor puts simple goodness at the heart of the dining experience. Then it’s onwards. The drive up to Dornoch is a dreamscape of sweeping land that expertly introduces you to what is to come. Bridge after bridge carry you safely over rivers and firths, until the sea opens out before you and you have arrived at beautiful Dornoch. The historic town has a small fairy-tale castle that was built around 1500 and was set on fire in 1570 amid a bitter feud between the McKays and the Murrays. It was soon restored and, following many years as a castle, it was bought by a private investor and became a hotel in 1947. Naturally, the town has a well-stocked

whisky shop, the Carnegie Whisky Cellars, where in non-Covid-restriction times you can indulge in some whisky tasting. The staff here are knowledgeable and helpful and will advise you in choosing the right whisky for your tastes. As you walk from the town it’s a matter of mere minutes to the golf course and the beach. On the way, you’ll pass a pretty church and the hotel Links House, where I stayed. Links House is the old church manse house that was built in 1843. It was bought by Todd Warnock, an American visiting the area to play golf, in 2005, and the transformation from private manor house to hotel began. Now spread over three properties, following renovations and the building of a whole new wing beside the church, visitors have the choice of luxury accommodation in the shape of deluxe hotel rooms, luxury suites and bespoke apartments. At the top of the road is the Royal Dornoch Golf Club, and beyond that, the North Sea leaps to shore on the soft sandy beach. The golf club is a major draw for many visitors and it’s always full, but this is a peaceful corner of Scotland to stay in, no matter what you like to do with your time. If you fancy picking up a club for the first time, there’s a small putting green at Links House, or you can play croquet on the lawn. But if all you want to do is wander and wonder, this is the perfect place for it. ➤➤

There is something in the air here. I spent a lot of time just sitting on the balcony of my apartment, gazing at the sky, or strolling along the beach and trying to catch the shape of the sunlight with my camera. It’s like trying to hold onto air. It is there one moment, the light falls with its own whisper, and then the next moment it has changed and you can never catch it. You can only experience it. The surrounding area of Dornoch is ideal for hiking, fishing and biking, but staying closer to the town, a simple walk along the beach and over the golf course, listening carefully for the call of “fore” warning you a golf ball is loose in the air, offers the perfect way to breathe in the sea air and stir an appetite for dinner. A circular walk leads you down to the shoreline, by the water’s edge, then back up over the dunes, across the golf course and on towards the road. Here you can take a short woodland walk, where you’ll see squirrels and hear the rumour of wildcats. Then you’re in the town once more, by the old castle, and it’s just a few steps back to Links House. Take a moment to

stop off at the chocolate shop, Cocoa Mountain, to pick up some handmade chocolate treats, and then follow the call of the sea. The food at Links House is thoughtfully prepared. On my walk, I passed the head chef, Theo, picking sage from the herb garden. It later appeared on my plate. The dinner menu is a bounty of local produce, and I recommend the taster menu with the wine flight for an overview of tastes and to spend a few hours taking your time over the flavours. Like everything you’ll do at Dornoch, it’s a calming way to while away the time and the dishes are works of art. In the morning, yawning and feeling the relaxing charm of another sky of unique light, breakfast awaits. A full Scottish breakfast, no less, including haggis – they also offer a vegan breakfast with vegan haggis. This will prepare you for more strolls on the beach before it’s time to head home. Of all the many reasons to visit Dornoch, it’s the air itself that has stayed with me. The light from those big Scottish skies is unlike any other light I’ve experienced. It changes colour, tone, depth and hue in an instant, and it’s always beautiful. uropean Tour Destinations world-class golf venues have not rested on their laurels in their continued commitment to sustainability and ensuring they provide a positive impact on their surroundings. Quinta do Lago in Portugal is a case in point, recently unveiling their upgraded South Course. The 7-million-euro investment has resulted in an enhanced playing experience offered by this iconic resort, as well as consolidating its environmental commitment. Sustainability was the cornerstone of the development, with the Quinta do Lago team working with the Golf Environment Organisation (GEO) and local non-profit company VitaNativa to enhance the environmental credentials across the resort. VitaNativa has spent a year documenting the fauna present in Quinta do Lago to assist in the environmental stewardship across the courses. Water management has been a key element, with new irrigation pumps and enhancements to the existing system resulting in greater control of water resources. The upgrades have included subtle changes that provide new challenges and will enhance the golfing experience. In Mallorca, Golf Son Muntaner is considered to be one of the most beautiful courses on the island, surrounded by a variety of Mediterranean flora and fauna. It boasts the oldest olive tree ‘Na Capitana’ on Mallorca. In 2016, Golf Son Muntaner completely reseeded the golf course; Bermuda Celebration was sown on every fairway and Agrostis V8 on every green. The project enhanced the course, while demonstrating the venue’s commitment to environmental change, with less water and chemical usage.

Constance Belle Mare Plage in Mauritius embarked on an environmental sustainability programme in 2013. This beautiful venue, bordering a 2-kilometre white sandy beach, offers two 18-hole championship courses. With exceptional panoramas and the glittering blue water views

The overall member performance is appraised over a 5-year period to ensure continuous effort has been made across the key themes. Among the measures taken by the resort is opting for energy-efficient equipment and low-energy appliances. Water conservation is managed through the installation of sensors and regulators, together with the desalination of sea water. With an offshore coral reef that protects the bay, the resort has taken on a role to protect the marine environment, ensuring waste water is not discharged into the ocean, encouraging and supporting the clean-up of the coastal environment and performing coral planting. The mantra is one of caring for guests, caring for the Indian Ocean environment and culture, and caring for the planet.

Sustainable water management is undertaken by reusing regenerated water. A new irrigation system optimises water use and by changing the grass, there is a lower use of chemicals and increased water savings. Energy efficiency and the use of renewable energy options are key to developing a cleaner and more sustainable model. Actions to support this include installation of electric car charging points and using LED technology and hybrid machinery. Further clean energy will be self-generated by the installation of solar panels. Terre Blanche in the south of France was developed from the outset with the idea of maintaining the natural balance. Before any development was undertaken, a phyto-sociological study of the site was completed. This identified the aquatic and wetland habitats, temporary ponds, and the forest stands in order to define the conservation issues. In 2019, Terre Blanche was awarded a silver medal as part of the Golf for Biodiversity programme, a project initiated by the French Golf Federation in partnership with the Museum of Natural History. In the construction phase, the aim was to reduce the impact on the environment. To this end, the excavated material from the earthworks was treated on site, then naturally enriched to reuse on fairways and common areas.

Similar measures of on-site recycling practices continue today. Mowing products are left on-site to act as natural fertiliser. Core samples are collected and dispersed in the undergrowth to contribute to the growth of plant and bacterial cover. And even the donkeys, which have become the mascots of Terre Blanche, do their bit by negating much of the need for mechanical clearing. Without furniture to suggest the purpose or dimensions of a room, it can be difficult to visualise living in that space.
