I R E C E N T LY R E A D a piece in a travel magazine that advised scouting out locals’ favorite restaurants before a trip, to devise a sort of eating plan before you arrive at your destination. The article described a restaurant scene as a sort of lovely “litmus test”: with menus boasting local products, staff and clientele interacting together, and even dining room décor reflecting meaningful aspects of a community and its food culture.

I couldn’t agree more. But why wait until you’re traveling?

This summer, we invite you to explore the dynamic and diverse food and drink scene right here in Bethlehem and throughout the Lehigh Valley. Inspired by bountiful farm-to-table produce, vibrant multicultural influences, and dishes ranging from familiar comfort foods to those with an adventurous edge, we’ve got it all right here.

Let this issue be your guide! Among these pages you’ll find everything from elegant sit-down meals to fingerlicking barbeque. You’ll read about vintners and brewers, bakers and candymakers, a Community-Supported Agriculture program right here in Bethlehem, and an Aussie café in Easton. You’ll get a peek at some of the fabulous dining options on the SouthSide, and a

delicious breakfast tour of Downtown Bethlehem. And you’ll learn about local organizations donating food to those in need through choice pantries, freshgrown produce, and a special school program.

This issue is all about food. But we all know that food is so much more than what’s on the plate. It’s the farmers who raise or grow it; the chefs who prepare it; the folks who deliver it to the markets, to our table, or to our door; and of course, whom we share it with. Food is a way to get to know our own communities, and to experience the cultures of far-flung places. We’re so fortunate to be able to do all of that right here—no plane ticket required.

Fresh Face: Tucker Silk Mill I F YO U W A N T S O M E genuinely tasty tucker, there’s a new Aussie café just off Route 22 in one of Easton’s hottest destinations: its newly-renovated Silk Mill.

The cheery industrial space filled with vintage finds features super fast Wifi, plus a sunny courtyard.

“Tucker” is an Australian slang term for really good food—in this case brought to you by Jason Hoy, who hails from Wagga Wagga. In addition to creative breakfast and lunch items, the menu sports plenty of Aussie specialties, including savory toasties and housemade baked goods, such as the iconic chocolate-coconut Lamingtons and salted Caramel Slice.

“We don’t do any drip coffee,” Jason says, “just espresso, using really good beans roasted by a bunch of Australians from Toby’s Estate Coffee in Brooklyn.”

But Tucker Silk Mill is about more than food. It’s about community and creating a welcoming experience, a place where patrons can stake out a spot and settle in.

And, of course, they have excellent coffee.

Jason and his wife, Melanie, moved to the United States about three and a half years ago. Melanie was editing one of the most successful food magazines in Australia, donna hay magazine, and Jason had been in the fine wine business for over 25 years.

“Our ambition was to open up a café by day and a wine bar by night,” he says.

Phase One has been a gratifying success, and Phase Two, the wine bar, should be up and running in the next six months. In the meantime, the always-changing menu showcases the best tucker this side of the International Date Line.

“And if it’s local and sustainable and organic,” Jason says, “that would be perfect—and we work with all of those things to the best of our ability.”

“We want to make sure that people can feel good without being militantly healthy.

We like putting good things in our face.”

Aardvark Stories: Margie DiSimo Kavchok AFTER DECADES OF on-again, offagain running, in 2014, Margie DiSimo Kavchok made a commitment. At 57 years old, she vowed to complete a marathon before turning 60.

“I knew that if I wanted to run a marathon, I needed to do something about it. Then I got an email from Team Vark to ‘Come Join Us.’ I couldn’t even finish the first 4-mile training run. But, I kept coming back,” said Margie.

Aardvark Sports Shop’s Team Vark, a 16week half marathon training group, gave Margie the support, encouragement, and running companions she needed

to complete the 2016 Philadelphia Marathon. However, after enduring particularly brutal race day conditions, with a 20 degree wind chill factor and winds up to 60 mph, Margie was eager to complete another: the 2017 Pittsburgh Marathon.

“I had such a blast in Pittsburgh because I got to run on my 60th birthday, in the city I was born in. That was my present for myself,” said Margie, who teaches nursing at Gwynedd Mercy University and owns Alpha Optical.

completed 3 marathons and 12 half marathons, with plans for 2 more marathons this year. As a token of her appreciation to Aardvark, Margie, who has dabbled in art her entire life, created a pen and ink picture of the D&L Towpath, which she presented to the store last fall.

“Aardvark has truly changed my life…my artwork has improved, my health has improved, and my outlook on life has improved. When I feel really moved by something, I produce art. That picture is a sincerely felt thank you from my heart for all of the quiet support and the belief in me that I could do this,” said Margie.

Fresh Face: Rise Above Hair Studio A S H L E Y M AT L O C K W A S having a bad day. But when she got in the car, iconic punk band Black Flag’s song “Rise Above” was playing. We are born with a chance.

Rise above! We’re gonna rise above! I am gonna have my chance. Rise above! We’re gonna rise above! “This is what I’m going to name my salon,” Ashley recalls thinking.

Ashley had been a beloved stylist on Bethlehem’s South Side for the last ten years since graduating from Paul Mitchell’s The Vision Academy in 2008. But she had begun to feel it was her time to grow (no pun intended!) and do her own thing.

Her new salon, Rise Above Hair, opened in January.

She wanted to stay on the South Side because of the community there.

“I love this location and area,” she says. “Everyone’s so helpful and kind. Everybody knows each other, everybody helps each other, and that’s really nice.”

Walking into Ashley’s salon, you’ll see the upbeat punk rock aesthetic decor, with many of the colorful posters and other artwork coming from her friend Andy Po at HomeBase. If you’re lucky, you’ll meet Ashley’s sweet and friendly pup, Dottie, who will lie by your feet while you get your hair done.

Ashley has a flair for cuts with character. “I do a lot of texturized short haircuts,” she says, “and a lot of blonding, fashion color with Pulp Riot.” She also enjoys helping male clientele, and has a great men’s hair care line, Reuzel.

After less than six months, Rise Above is already growing.

“So the five year plan is to bust out of here and have a bigger space,” still on the South Side, she says. Ashley hopes to hire another stylist this summer and be fully staffed by the end of the year, too.

FIG VOICES New sounds of our City in partnership with Lehigh Valley Underground.

Voices: Stacy Gabel T H E P O P U L A R I D E A in local music circles is that singer-songwriter Stacy Gabel burst onto the scene this year. However, a closer look at Lehigh Valley’s promising star reveals a seasoned artist.

A singer since the age of three, Stacy is also a guitarist, pianist, actor, and model whose performance credits include national commercial, TV, and film roles. She sings locally with the Bethlehem Bach Choir, The SwingTime Dolls, Secret Coda Acoustic Duo, and has a musical theatre education from the American Academy of Dramatic Arts (AMDA) in New York City, and a degree in TV production from Kutztown University.

“Everyone thinks I just came out of nowhere and suddenly started playing music,” Stacy says. “I’ve always been a singer and a performer.”

After New York and Los Angeles, Stacy moved back to the Lehigh Valley and joined the music scene. On March 4, she won four 2018 Lehigh Valley Music Awards at SteelStacks: the Discover Lehigh Valley “Discovered Artist” Award; the Fan’s Choice Award; Outstanding Song; and Outstanding Female Artist in a tie alongside Julia Sommer.

“That day was just amazing. I didn’t expect to win anything.”

A music and theatre instructor by day, Stacy has continued to perform throughout the region, with a big Musikfest performance on Monday, Aug. 6 at 6 pm on the Martin Guitar Lyrikplatz stage. She also plans to record her debut album soon.

“I’m consciously making an effort to write more this year,” Stacy says. “The Music Awards inspired me to get out there and do more original music as a solo musician.

At this point, I’m writing as much as I can.”

Authentic: Bethlehem’s Bounty CSA W H E N C H R I S W E S T learned about the controversies swirling around agrochemical company Monsanto ten years ago, he decided he wanted to grow his own food.

During one of his free periods working as a project-based draftsman, he interned at the Rodale Institute in their Agriculture Supported Communities program. That’s where he met Bob Drake, manager of the Monocacy Farm Project, where the CSA program known as Bethlehem’s Bounty, which Chris founded and runs, is located.

Right now, the CSA (which stands for Community Supported Agriculture) has eight workshares and about 20 paying members. Though Chris is currently the sole owner, he wants that to change.

“I want to focus on having the CSA owned by the workers,” Chris says, “so they can make decisions instead of me dictating everything.”

The American philosopher John Dewey believed that you didn’t really have democracy unless you had democratic control by the very people who work in the institutions and communities that make up society. Chris is sympathetic to that view.

For Chris, Bethlehem’s Bounty is not only about providing fine organic produce, but having those in the Bethlehem community own the fruits of their labor—and in a small but significant way, owning more of their own lives.

“I think we have democracy outside of work,” he says, “but we don’t have it inside of work. I want the people who do the work to own the work.”

“I want to get more people involved,” Chris says, “who are dedicated and who also live within the community. They can share in the profits and the surplus we provide.”

Bob Drake, who is now the manager of the project, had long experience with agricultural projects all over Africa.

But he decided he needed more formal tutelage, so he took an internship at Rodale Institute in Kutztown to learn organic farming—and was soon recommended to the Project.

Since 2013, Bob, along with a troupe of indispensable volunteers, has tended the ten-acre project, which seeks to use land and resources at Monocacy Manor in the Franciscan tradition to model stewardship and care of the earth, foster community involvement, provide educational opportunities, and serve the needs of the poor. In fact, half of the farm’s space is dedicated to growing

The Project has grown to include community garden plots, a CSA, education programs, demonstration gardens—and of course, their GrowHealthy Community initiative, which currently provides fresh produce to 10 soup kitchens, pantries, and shelters in the Lehigh Valley.

WHILE MANY CHILDREN look forward to a long holiday weekend, some kids don’t—because they aren’t sure whether they will have enough food to eat. It was this problem that inspired Nikki Testa, a mom on a mission, to found the Backpack Pals program. Nikki and her friends, family, and community volunteers provide backpacks full of donated non-perishable nutritious food items for 185 children at 10 Bethlehem Area School District schools each month.

Sands Bethlehem is one of the local companies that helps support Backpack Pals. They have supplied and installed the shelving in the food storage room, and supply food to the program on a regular basis. Sands Cares Team Members, pictured here, volunteer time to help pack the backpacks for distribution several times throughout the year.

T H E M I S S I O N O F Hispanic Center Lehigh Valley is to improve the quality of life of Hispanic and other families by empowering them to become more selfsufficient, while promoting an intercultural understanding in the Lehigh Valley. One of HCLV’s most important programs is the Choice Food Pantry, which has been managed for over six years by Coordinator Bennie Eliason, an inspiring leader to an energetic and dedicated team of volunteers.

“After six-plus years of work in this field, I’ve come to one very important conclusion: that self-sufficiency looks entirely different

depending on the person,” Ms. Eliason says.

“It’s because of this perspective that I can see past all the stereotypes and statistics and work with and advocate for all my families in all facets of life.”
