Sunny days ahead

There’s a quote that says, “The sun always shines after the storm.” And here in Columbia, we know that to be true.

When I think of summer, I’m transported to the front porch—sitting in a rocking chair, a bowl of boiled peanuts and a glass of sweet tea in hand, listening to a good, slow thunderstorm roll through. The smell of rain hitting hot grass is a scent that stays with you. And when the clouds finally part, my family piles into the boat and heads for the water—still and smooth, like glass. That’s the kind of peace only a Carolina summer can bring.

But this season, the sunshine is more than a feeling. It’s a call to action. Now more than ever, the most powerful thing we can do is stay rooted. Shop local. Eat local. Give local. The small businesses, makers, nonprofits, and farmers that make Columbia unique (and delicious) are relying on all of us to show up.

Thankfully, we have a lot to celebrate, too. Did you know that June 2025 is now officially South Carolina Trails Month? A huge thanks goes to the Palmetto Trail and our state for making that happen.

And new businesses are launching around us all the time. This summer, our Fig Authentic, Matt Catchpole, will open Ikie Lu Record Club in West Columbia—adding to the city’s fantastic lineup of restaurants, cafés, and bars that you can see in the Columbia Economic Development spreads. And Palmetto Place Children and Youth Services, our Social Mission for 2025, continues to do incredible things for the community. It’s a reminder that the good work being done in our own backyard continues to grow and flourish.

Authentic Matt Catchpole

The sun was setting over 601 N. Lucas Street as Matt Catchpole spent the evening tidying up his latest passion project, the upcoming Ikie Lu Record Club. He purchased the property back in June 2024 and spent nearly the whole year overseeing painstaking renovations, transforming what once was a church building into a modern, cozy lounge for music lovers to enjoy.

After several months of work, Ikie Lu was truly taking shape: an eclectic array of mid-century modern furniture, record players, speakers, and artistic renderings of jazz greats lining the back wall of the bar. Similar to the wine lounges of Europe, he wanted to create a distinct, immersive experience in West Columbia: rooted in jazz vinyls, lively conversation, and elevated takes on casual fast dining.

With a Paul Simon record playing in the background, Matt looked around and realized he had unintentionally created just the type of place his grandmother—the original Ikie Lu— and his late father would have loved to lounge in.

Known to most as Ida Louise, only her closest friends and family called her Ikie Lu—a nickname that originated from

her days playing drums in her high school marching band and a folk instrument called a wash tub bass, also known as a “gut bucket,” among friends. Matt wanted the same sense of informality, of close familiarity, to encompass every part of his record club.

After describing the atmosphere as a blend of high-brow and low-brow, Matt shared, “We want it to be the nicest blue collar place you’ve ever been.” Think: caviar-topped hot dogs paired with chilled champagne.

Already, news and excitement are circulating in our local food scene and beyond. For the 2025 Columbia Food and Wine Festival, Matt hosted chefs Claudia Martinez and Connor Hinderks at Ikie Lu Record Club for a collaborative kitchen event—attended by national and regional publications like Eater and The Local Palate.

With buzz growing about the club, Matt’s hope is to push the envelope for the city’s food and beverage offerings. “I believe that if you want things to be a little bit better, make them a little bit better, right?” Matt said. “Be a big part of that, and kind of set the tone. And then don’t take less.”

INGREDIENTS

2 cups peaches, peeled and halved

1/3 cup limeade, frozen concentrate

¼ cup pineapple juice

½ cup sugar

2 cups ice

INSTRUCTIONS

Make it in one simple step: Add the ingredients to a blender and mix until you get that smooth “slush” consistency. Serve immediately, and enjoy!

PIMENTO CHEESE SPREAD, 12 serving s

• 16 ounces medium sharp cheddar cheese, coarsely grated

• 14 ounces Miracle Whip

• 1 (4-ounce) jar diced pimentos, drained

• 1 teaspoon black pepper

• ½ teaspoon garlic powder or fresh minced garlic

• ½ teaspoon onion powder or fresh minced onion

Combine in a large bowl. Serve immediately with crackers, or serve on a sandwich.

TOMATO PIE, 8 servings

• 1 teaspoon dried basil

• ½ teaspoon Kosher salt

• ½ teaspoon black pepper

• ¼ teaspoon garlic salt

• 1 pound tomatoes, peeled and sliced

• 1 frozen deep-dish pie crust, pre-baked according to package directions

• 1½ cup shredded Italian cheese blend

• ¾ cup mayonnaise

Preheat the oven to 350 degrees. Mix seasonings together in a small ball. In the pre-baked pie shell, arrange tomatoes in a single layer with slight overlap and top with half the seasoning blend. Add another layer of

tomatoes, then top with the rest of the seasoning. Mix the shredded cheese and mayonnaise, then add to the top of the pie in an even layer. Place the pie on a baking sheet and bake for 35 minutes, until the cheese at the edge is golden brown and bubbly.

ERNESTINE RAWL’S PEACH COBBLER, 8 servings

• ½ cup unsalted butter or margarine, melted

• 1½ pounds yellow peaches, peeled and sliced

• 2 cups granulated sugar

• ¼ teaspoon Kosher salt

• 1 cup all-purpose flour

• 1 large egg

• 1 teaspoon baking powder

• 1 teaspoon pure vanilla extract

• 1 cup whole milk

Preheat the oven to 350 degrees. Pour the melted butter into a 9”x13” cake pan. In a large bowl, mix the peaches, 1 cup sugar, and 1/8 teaspoon salt. In another bowl, whisk together 1 cup sugar, flour, egg, baking powder, vanilla, 1/8 teaspoon salt. Add the milk, and whisk until there are no lumps. Pour the batter into the cake pan, then top with the sugared peaches while letting the juices run off. Bake for 50–60 minutes, until the top is golden brown.

Seventeen years ago, while spending Independence Day on the beach surrounded by family and friends, Johnny Folsom and Toddy Smith remarked on how military service members defending our country overseas couldn’t be with their loved ones today to celebrate. That’s why Johnny, Toddy, and their sons Andy Folsom and Cam Smith launched Salute from the Shore: to honor these heroes, and all those who serve, who spend the Fourth

of July protecting our freedoms. For the last 16 summers and counting, Salute From The Shore has given thousands of South Carolina beachgoers a truly spectacular flyover from Myrtle Beach to Bluffton, recognizing the brave men and women who sacrifice for our freedoms. With a lineup featuring a C-17, F-16s, and a fleet of vintage warbirds, there’s no better way to celebrate America’s independence than to pay tribute to our military and share your salute!

Social Mission Palmetto Place Children and Youth Services

As the days grow warmer and schools let out for the summer, teenagers and young adults in need are losing the structure and support they come to depend on during the school year. It’s imperative that we support our community year round, and the need to invest in and care for our community becomes even more critical as schools are closed. Palmetto Place, a nonprofit organization dedicated to supporting and housing youth in crisis, is on a mission to create a safe and nurturing environment for teens who have nowhere else to turn. This summer, they’re projected to welcome a recordbreaking 250 residents.

Every child deserves to simply be a child, and that’s exactly what the staff at Palmetto Place works tirelessly to provide: opportunities for fun, learning, and growth. Oftentimes, these children and teens step into a parental role for their siblings—and sometimes even their parents. For these young people, Palmetto Place is more than just a shelter—it’s a safe, supportive community where they can thrive.

Palmetto Place relies on monthly donations—especially during the summer months—to ensure they can continue providing for their residents when they need it most. Building lasting relationships with donors in our community is key to the organization’s success. With these donations, Palmetto Place is able to meet a wide range of needs for its residents, including food, toiletries, prescriptions, clothing, bedding, and school supplies. But it’s not just about the essentials; it’s about offering these children experiences that help them feel seen, supported, and empowered.

Palmetto Place accepts donations of plant seeds and gardening supplies, or you can volunteer your time to assist with landscaping.

One of the incredible initiatives Palmetto Place is running this season is their Summer Fund campaign, aimed at sponsoring trips for residents and giving them opportunities for fun and engagement. Last summer, the team took their residents on a trip to Charleston to see the beach for the first time and enjoy a day of fun in the sun. The team also frequently takes their residents on smaller trips to the skate park, to grab an ice cream cone, and to play rounds of kickball outside—giving them as many experiences as possible.

The dedicated staff—including 17 in-house team members and a leadership team of 10—work closely with residents to build trust and a sense of belonging. They celebrate every milestone, attend graduations, and show up day after day to cheer on the success of each resident. As Palmetto Place continues to grow and support more youth in need, community involvement is more important than ever. Whether through donations, volunteering, or simply spreading the word, every act of kindness has the power to transform a life. By choosing to donate, volunteer your time, or share a home-cooked meal, you can make a lasting difference.
