When Fortune Smiles

C

lyde Brooks is used to giving, not receiving. As a single dad raising four children, he has always been laser focused on putting his family first. A proud man, he rationalized everyone has some kind of burden to bear and so, on a wing and a prayer, he would get through another day, keeping the “chink in his armor” to himself.

Clyde never smiled Issues with his teeth forced him to always cover his mouth, drink with a straw, and be self-conscious of his chewing. Still, as resourceful as he was, he always seemed to find a more pressing need for the

money he put aside for dental work—like putting his children through college. Working alongside his brother at the company his brother founded, Country Window Cleaning, Clyde got to know Dr. Mandy Holley. For years, they took time to chat when Clyde washed her windows at her home and office. One day, out of the blue, he asked her about dental plans and insurance. When she inquired about what his dental issues might be, he was hesitant to share. When he did, it released emotions he had been holding in for many years and they both found themselves in tears.

It just so happened... Each year, Dr. Mandy's practice, Aesthetic Dentistry of Georgetown, gives back to the community by bestowing the gift of a new smile to one deserving person. They ask only that, in return, the recipient pay it forward in his or her own way. Called Smile Freely, the program is now in its seventh year and about the time Dr. Mandy and Clyde had their chat, excitement was already building as she and her dentists, Dr. Mark Duncan and Dr. Krista DeCoursin (at right) and their eight team members, worked together to review possible candi-

dates. Who would be chosen to receive a smile makeover at no cost? One name kept coming to mind and soon they were all in agreement. This year, they would help Clyde Brooks find his smile again.

A new beginning

As Clyde remembers it, he scheduled an appointment at Aesthetic Dentistry for an exam and initial discussion about payment plans to improve his smile. When the doctors shared their decision, it took him some time to comprehend that his new smile would be a generous gift from this practice. This big, strong man, who had hidden so much of himself for so long, shed tears of joy and, when he did, there wasn’t a dry eye in the house. This relationship-based practice—known for its unique approach to dentistry, which incorporates a person’s emotional, mental, and physical health—got right to work. Clyde agreed to the two to six month commitment to lifestyle changes and better health. Practice owner, Dr. Mandy, covered the costs of materials and, this year, Dr. Mark donated his time to do the dental work. The rest of the team joined in to support Clyde in any way they could. Today, Clyde has a lot to smile about, starting with learning how to smile openly again, and it isn’t as easy as it may sound. Slowly, his confidence and self-esteem, hidden for so long, have begun to re-emerge and he is becoming the man he always knew he could be. He is happy to be the father who makes his children proud, he’s lost 60 pounds, feels and looks great, and still can’t believe how blessed he has been.

Changing lives Although Aesthetic Dentistry opened 17 years ago and may be one of the older practices in the area, Dr. Mark says their distinctive approach to their craft is what sets them apart. Their team of younger dentists has made a personal commitment to their continuing dental education. Though they do accept insurance, their self-pay services allow them to offer alternatives to insurance company mandates. Investing in state-of-the-art technology keeps them on the cutting edge. This includes two new pieces of equipment that each sell for as much as a Lamborghini. Dr. Mark says , in just one visit, a patient’s images can be loaded into a software program, resulting in a crown that can be made and fitted into the patient’s mouth, all before the anesthetic wears off.

The Aesthetic Dentistry team starts every day with a morning huddle. They review the day’s schedule and share any “wins,” aiming to start the day on a positive note. Dr. Mandy says their practice is all about relationships, first and foremost. GISD is Ahead of the Safety Curve ~Executive Director for Campus and Student Services fter the Uvalde shooting, the Texas School Safety Center sent a list of safety considerations to schools across the state. These included access control standards that provide a safe environment for students and faculty, as well as proactive safety measures for campuses—things Georgetown ISD has been doing for years. “Like me, every parent, principal, and teacher, when those things happen, asks, ‘Are we doing all the right things to make sure it never happens here?’ ” says Heather Stoner (photo), GISD’s new executive director for campus and student services. “Knowing they sent this list out is reassuring, because all the things we need to be doing, we’re doing.”

FOCUS ON SAFETY In June, Heather transitioned from director for campus operations and Title IX to executive director for campus and student services. She oversees counseling and health services, campus and district operations, Title IX, and student attendance. Before coming to GISD, she served in Lago Vista ISD as an elementary and high school principal, assistant principal, teacher, and coach. An elementary school principal when the Sandy Hook school shooting happened in 2012, Heather remembers being on the front lines as school leaders navigated a new education scene with safety measures that added lockdown drills to the fire drill schedule. She continues to marshal that dedication to school safety to GISD. “The safety of kids, especially at the elementary level, is always going to

be our priority. Without that, nothing else matters,” she says. “We are being proactive in our approach, with things in place to prevent something from happening. If something does happen, we are prepared to respond effectively.”

MANNER AND MEANS Heather describes GISD’s safety approach as a collaboration with Georgetown PD, which provides school resource officers and guidance for campus safety through after-action safety drill feedback and membership on district safety committees. The district’s safety measures include the following: Each school conducts all required safety drills, including more than the required number of lockdown drills so students and staff can rehearse their responses to various emergency situations.

The district's previous three bond cycles included projects to improve safety and security including secured entrances for campuses, radio system, alert apps, and a secured walkway between GHS and the annex/Richarte. Anonymous Online Reporting System allows students or parents to report incidents anonymously that may endanger individuals or the school, available at Georgetownisd.org/staysafe. Instead of simply disciplining students who are on the wrong path, the district provides support, including mental health resources. “If they’re on a negative path to violence, it’s about intervening early and giving them support to try to change that path,” Heather says. Georgetown's New Police Tchief

C

ory Tchida has been Georgetown’s Chief of Police—officially—for a month but has been in the boss' chair for more than a year. “It’s been a year filled with incredible challenges,” he says. “But, my focus has been on maintaining the level of service Georgetown has come to expect. Everyone pulled together and it was, as it has been, our line-level employees who shouldered the burden, and they do it well.” He adds being in the fastest growing city in the nation brings additional pressure so he is always looking and soliciting for ways to do more with the resources the department already has, including leveraging technology where he can.

THE BEST OF THE BEST Chief Tchida says maintaining the high standards of hiring, recruiting, and retention in the current market is as challenging for a first responder agency as it is everywhere else. "We are still in a COVID environment and we are also not seeing a high turnout for available jobs. This is especially difficult because it takes 13 months to train up a fully operational officer. However, the city has given us funds to overhire, which enables me to hire a recruit to replace a current employee before he or she leaves. That overlap puts us ahead of the curve and able to meet the needs of the community." The Chief says one goal is to 'sell the just cause' to recruits. While many say they want to help people, he asks why they choose law enforcement to do it. He says, "It's not about the high speed adrenaline they show in the academy ads. This job is about what happens on a daily basis and I look for life experiences I can build on to make this a good choice for them." 12

CommUnity Chief Tchida continues to drive the CommUnity initiative all over Georgetown. "We take every opportunity to engage with microcommunities; HOAs, businesses, youth, faith groups, and others. The point of that outreach is the value it adds to our work by allowing us to look at ourselves through others' lens. A recent brainstorming session led us to up our social media presence—look beyond Facebook to platforms that are popular in other demographics." He is also strengthening relationships through mandatory Arbinger1 training. "Research shows most opinions about law enforcement come from personal experience. I tell my officers they are the ones deciding how people feel about us. I tell them, 'If a person's car is broken into, it might be the 20th time you've written one up, but it's a major life event for the victim. You need to make it a big deal for you too—not talk on the radio or look at your watch.' We're affirming the mindset that the citizen is their purpose and not an obstacle to getting back to the street for something more interesting.' "

WISH LIST While Georgetown is still an extremely safe place, he asks citizens to remember Sir Robert Peal's admonition that the police are the public and the public are the police. "One of our biggest problems is unlocked cars and homes. He says, "While our victims are local, the scammers are nearly always overseas. We are constantly working to educate the public and related businesses to be on the lookout for how scammers operate because, unfortunately, once the money is gone, there's nothing we can do. ROYAL MENTORS Teachers Helping Teachers

P

eggy Howard remembers facing a steep learning curve as an elementary teacher in Michigan. “You look back on your first year and think, wow, I knew nothing,” she says. Now she and 20 other retired teachers are looking forward to passing on their know-how to a new generation of educators through Jarrell ISD’s Royal Mentor program. “There are so many retired teachers in the area who want to inspire and motivate our younger teachers. They have a wealth of knowledge; we hope to tap into that knowledge and help teachers new to the profession,” Assistant Superintendent Pennee Hall says. The brainchild of Pennee and her former colleague, the teacher mentorship program aims to support educators who have one year or less of experience. “Research shows we lose teachers between zero and 5 years of service. Hopefully we

can facilitate support to get them through those first crucial years. They need help because teachers young to the profession have so much to do and learn that they may become overwhelmed,” Pennee told mentors at a luncheon in June. “They need a cool, calm, collected voice to provide support and say, ‘You can do it.’ ”

FIRST YEAR IN SCHOOL Starting in the fall, mentors will be paired with teachers at Jarrell’s four schools. Each will be entrusted as a safe space and sounding board, and will also sit in the classroom to offer suggestions between classes on how to handle problems with students. Executive Director of Teaching and Learning Patty Cote finds this new paradigm surprising but refreshing. “When I was a teacher,

I would rather have cut off my foot than let anyone know I was struggling,” she says. “It was a different generation, and unfortunately I grew up in a time of teaching when we were very competitive. Teachers now are hungry for that feedback. Generationally, new teachers are so much more open to it and even seek to know, ‘How will I be supported on my campus?’ ” Former teachers like Susie Hutson are only too happy to provide that support. “I think it’s great for the older generation to give back to the younger generation in this way,” she says, having taught in New York and California before making her home in Sun City. “Teaching is so important. Rescues, Shelters, Fosters... In May, Georgetown was ranked the fastest growing city in the U.S., and as the human population skyrockets, so does the pet population. Since the 1990s, the Georgetown Animal Shelter has averaged 1,750 annual pet and wildlife intakes, works to reunite lost pets, and helps animals find new homes. “Despite our small size and growing animal population, we have achieved 'no-kill' status with a 90 percent or greater save rate for seven consecutive years and are on our way to making it eight!” Animal Services Manager April Haughey says. WILCO ANIMAL SHELTER Lost and abandoned animals find a safe haven at the Williamson County Regional Animal Shelter, the only shelter solely dedicated to caring for furry friends in, Round Rock, Cedar Park, Hutto, Leander, and the surrounding area. Despite constant overcrowding, the shelter has maintained a 90 percent save rate for 12 years, thanks to a community that always answers the call for fosters and adoptions when the shelter reaches critical capacity. Community Programs Coordinator April Peiffer says, “We have had critical capacity issues all year, and we hope for community’s support every day through adoptions, fostering, volunteering, and donating. This will help us answer the community's call to our service—saving lives.”

To support pets and their owners, the shelter operates a food pantry and participates in the Emancipet Voucher Program to assist residents. The shelter also offers low-cost microchipping and city licenses to promote quick reunions. Shelter staff work with local businesses and organizations to host adoption events, donation drives, education, and special promotions. Plus, make plans for the Kittens in the Library adoption event Aug 12 and Oct 4.

Another part of that life-saving mission is volunteering, which provides extra hands-on help that raises the quality of care for the dogs and cats. The transport program also allows the shelter to send dogs to other areas of the county, while the off-site adoption program helps animals get adopted at partner stores. LIVING GRACE CANINE RANCH What happens when someone is no longer able to care for a pet? Rhonda Minardi asked herself this question when her mom was diagnosed with Stage IV pancreatic cancer and her mom was less concerned about herself than her lifelong pet companion, Lucy. A few years later, Rhonda came across a local shelter giving tree. After realizing all the remaining pets on the tree were senior dogs, she delivered more then $3,000 in goods to fill every wish list request. She also learned Texas shelters have the highest rate of euthanizing unwanted senior pets with no place to call home. One year later, she founded that home—Living Grace Canine Ranch—a 501(c)3 animal welfare organization, in Bertram, Texas. “It was a new chapter for old dogs and

the people who love them,” Rhonda says. Today, thanks to Rhonda and her community of support, 98 dogs live at the ranch and 22 live in family homes as part of the Forever Foster Program. A $12 monthly donation provides medicine for seniors with conditions like diabetes and kidney and heart disease.

When overcrowded shelters reach a point at which they are forced to euthanize, Texas Humane Heroes steps in. Texas Humane Heroes was established in 1979 as the Humane Society of Williamson County before acquiring shelters in Leander and Killeen and rebranding. It is a no-kill nonprofit organization that rescues dogs and cats from overwhelmed shelters throughout Central Texas. Just this year, 1,511 of their animals have found forever homes, including George (below) after he spent more than 600 days with the organization. “We couldn’t figure out why he wasn’t being adopted as he was the best dog ever!” marketing manager Sam Rogers says. “A couple weeks ago, he found his forever home. Our whole team was ecstatic and so proud of George.”

the organization to take in animals with extreme medical needs. “Just this year we took in a dog with a massive 6-pound cancerous tumor, a dog with multiple broken bones in her legs, a dog and cat with broken pelvises, and several animals with traumatic injuries that required amputation, surgery, or rehabilitation,” Sam says. Texas Humane Heroes currently houses 255 animals at both shelters and is always in need of donations and volunteers.

HARLEY'S ANGELS After a fire claimed her home and the lives of four of her dogs, Regina Roberts (photo right) searched for a way to overcome her depression. She and her husband Gary found it by starting Harley’s Angels Dog and Cat Sanctuary (named for one of their dogs whose persistent barking during the fire saved their lives) and dedicating their lives to helping animals faced with adoption challenges like age, size, and medical or temperament issues.

Harley’s Angels’ mission is to help residents heal, trust, and learn social skills so they can be placed in loving homes. “However, for many of them, this will never happen,” Lisa Dixon with Harley’s Angels says. “So for those, Harley’s is committed to them for their lifetime.” Today, Harley’s houses 44 dogs in cottages in Florence and has helped countless more, from an injured Yorkie that was hit by a car that now lives the life of a senior in Sun City, to a bubbly pit bull in need of ongoing cancer surgeries as well as a foster home.

After shopping, if your stomachs start growling, you’ll be pleased by our numerous restaurant choices. Back in 2019, Governor Gregg Abbott signed SB 476 into law, which permits Texas restaurants to decide for themselves whether dogs are allowed on their patios. Nearly 40 area restaurants—just following the law, of course—now welcome people and their pooches. We're sure that puts a smile on the Governor's face since he invites everyone to “follow the latest tails” of his own golden retrievers, Pancake and Peaches, on Twitter. Downtown eateries include Gumbo's, Wildfire, 600 Degrees, and Roots. At Wolf Ranch you can share space at Moe's, Cotton Patch, and Fish City; and elsewhere in Georgetown try Simmer Down and Rentsch Brewery, to name just a few.

Policies at large chain stores like TJ Maxx and Walmart may differ so it’s best to contact individual stores first. Downtown, however, things are a little more casual. At La Bella Casa, owner Jemme Lynn Wilks says her golden doodle, Murfie, and golden retriever, Finn, greet customers at the door and look forward to canine visitors. Princess Marlie, her other golden doodle, holds court nearby. Elsewhere in Georgetown, you are welcome to shop with your pup at Home Depot, PetSmart, Hobby Lobby, and Tractor Supply Co. rowing up, Jimmie Oakley put ants in a jar full of dirt and watched them build tunnels. “It was fascinating to see a colony of ants working together. When I learned about bees, I thought they were a whole lot more interesting.” As scholarship program chair for the Williamson County Area Beekeepers Association, Jimmie says, “Consider the hive as a super organism—each bee could be considered a cell. Each cell carries oxygen, nutrition, and waste, and each has a responsibility. Some gather water to cool the hive, others gather pollen to feed baby bees, nectar to turn into honey, or propolis—a plant antibiotic—to disinfect and seal the hive. What they all have in common is an allegiance to protect, maintain, and reproduce the hive.” A similar love of beekeeping and commitment to pass it on to a new generation of beekeepers are what drive the Wilco Area Beekeepers Association. Formed in 1980 at the urging of Bill Victor of Hutto, a former state bee inspector, the group works to educate beekeepers and community members through presentations at schools, fairs, and a youth scholarship program. At first, about 15 beekeepers gathered in an upstairs room at the bank in Taylor. Today, 140 meet virtually or at the library to learn and share beekeeping expertise.

A HOBBY FOR ANY AGE While beekeeping is something you can do on your own, beginners are encouraged to attend club meetings and Beekeeping 101 sessions, as well as sign up for a mentorship program. Targeting younger apiary enthusiasts, Jimmy laughs that the scholarship program 30

THE BUZZ ON BEEKEEPING was launched after members realized “all we have here are old beekeepers.” The program has drawn nearly 150 students over the last 36 years and awards three or four scholarships annually to students 12 to 18 years old. Each receives a hive, bees, and equipment to complete the year-long project. Jimmie says it is a great family project that often extends beyond the project timeline. “When the kids go off to college, they leave the bees with their parents, some of whom have continued to keep them for years.” While not every participant will become a beekeeper, all learn the value of bees and how important they are to the environment and food production process. And “every once in a while, one pops up and sticks with it,” Jimmie says. One scholarship recipient was even inspired to major in wildlife biology. In 2018, the club partnered with the city to provide bees for pollination at the Heritage Community

Garden and the gardeners shared great appreciation for better developed and tastier fruits and vegetables. Partnering with the city was a win-win, Jimmie says. In addition to pollinating the garden and establishing another prime location to set bees, it created a teaching yard for the youth scholarship program.

Members will be selling honey to fund the scholarship program while educating the public on all things bees. Keeping Pets Safe

POP QUIZ: What do you do when your dog is barking at a snake?

W

hile you’re enjoying park hikes and trips to the beach, don’t forget that we’re not the only ones out and about in the summer. Snakes tend to be more active in the warmer months, resting in dark, cool spots or hunting for food at dawn or dusk to avoid the heat. While most local snakes are not venomous, it is wise to encourage your pets to ignore or avoid them on the off chance they do come across a dangerous species. Angela Jones, Georgetown's animal control supervisor, recommends owners don't take home safety for granted. "Always have a quick check of the porch and surrounding areas rather than just opening the door, particularly in the evening when they are soaking up sun energy to get them through the night. Keep an eye on wood or rock piles, shady areas, or condensation drips."

THE HELPFUL ONES According to Joe Plunkett, a Sun City snake wrangler, we should also remember to be nice to the ”good” snakes in our area. Rat, bull, brown, and earth snakes are beneficial and help control our rodent and pest population. Fewer rats and mice can help your dog avoid contracting leptospirosis, a bacterium that can be spread to people.

DANGER NOODLES Most venomous snakes in Central Texas are pit vipers, which is a focus for avoidance education. Fred Reyna, owner and trainer at Texas Snake Avoidance says, "Rattlers, copper36

heads, and water moccasins are beneficial in nature; they are only a problem if they bite us. A baby rattler's venom is most potent until it is about three months old, but an older snake has more volume and either of them will unload everything they have in order to survive." If, despite your best efforts to avoid common habitats, you encounter a snake with your dog, it is best to keep your pet under control and walk away. He adds that snakes are primarily defensive and will not chase a dog or a human so simply steering clear is key to bite prevention. "Most snakes are just trying to survive and will leave on their own, or you can gently spray the critter with a hose until he moves away." To maximize safety for your pet, Fred says, "Dogs can be taught to avoid snakes and perhaps just need a refresher now and then. We adapt dogs for avoidance using live snakes but, on your own, owners can also work on training their dog to return when called even when excited about another animal." calm. There is no home treatment for a venomous snakebite. Suction kits and tourniquets should not be used, and NSAIDs (ibuprofen) may increase bleeding. Benadryl and antibiotics will also not help as venom is not a histamine. Just get to a vet quickly." Fred adds it is not necessary to identify the snake but do keep your pet calm and keep the bite site below heart level if you can. He recommends antivenom treatment at the vet. Joe adds, "Regular vets do not always stock antivenom, but local emergency veterinary hospitals such as Central Texas Veterinary Specialty & Emergency Hospital in Round Rock generally do. Before transporting an animal that has been bitten by a rattlesnake, call ahead and make sure the vet hospital is able to provide appropriate treatment." Wellness from Ketamine? A MENTAL RESET IS POSSIBLE

WHAT IS KETAMINE? Ketamine has been around for decades, but its role as a potent tool against depression, anxiety, and chronic pain is relatively new. Ketamine was initially developed as a surgical anesthetic; it received FDA approval for this use in 1970 and is now considered an essential medication by the World Health Organization. An initial treatment plan typically consists of six ketamine sessions spread over two weeks. Each appointment lasts approximately 90 minutes to allow patients to prepare and recover adequately before and after their infusion. During a treatment session, most patients experience a brain trip. ven in a post-pandemic world, it may sometimes be tough to settle on recreation or entertainment options that satisfy everyone. Plus, enjoying the ambiance of a restaurant only lasts as long as the meal. Parks close after dark. Amusement centers are expensive. Movies are two to three hours in the dark. Worse, it is too hot outside and many of our options may start to feel old hat. But there's hope.

Families and fun seekers in Georgetown are finding a trendy way to hang out and discover new things without a time limit: MICROBREWERIES. These friendly establishments are popping up all over Georgetown and Williamson County. Not only do they create and serve locally sourced brews of all kinds to entice beer lovers, they offer a plethora of activities and social opportunities for the soft drink and cocoa crowd as well. Regardless of which group patrons fall into, everyone will enjoy the chance to try new things.

GO FOR THE BEER While the variety of activities and engagement have enhanced patrons' happy hours and nights-out experiences, the quality of the ales and lagers being produced are, of course, a big draw. Young adults who frequent breweries with family and friends agree that yes, anyone can grab a six pack at the store and hang out with friends for a fraction of the cost, but there is something special about local ingredients, tasting rooms, and beer made fresh on the premises. 44

All microbreweries build their menus with locally sourced craft beer so there is always something new to taste. On shelves and in the taps, Classic IPAs stand next to innovative meads and ales and all a beer lover can do is savor a taste of everything.

THE EXPERIENCE Georgetown's Mason and Hannah Carmichael (facing page) frequently visit breweries to try new beers and meet people with similar interests. Mason says, “The first time I came out, there was a soccer game on the big screen. I ended up watching the whole thing in the brewery and talking with a bunch of strangers. Two of my favorite pastimes—beer and soccer—came together. That was it for me.” Breweries like the Barking Armadillo in Georgetown encourage customers to connect and socialize, especially with people they didn't come with. Mason says some of his fondest memories involve meeting new people at breweries. For this couple, a typical date night means exploring new taverns around town.

IT'S A FAMILY THING If watching the game isn’t your cup of ... beer, consider that this new brewery vibe is nothing like the bars your parents went to. They are family and dog-friendly and focus on fun for everyone. Local tap rooms in particular are large, spacious, and generally clamorous, so fussy infants, precocious toddlers, or off-leash dogs never disrupt the flow.

n antidote for thirst for heat-weary Texans, beer has been a staple of Lone Star libations since the 1840s, when German and Czech immigrants arrived in Texas and shared beer recipes with their new neighbors. Texans were grateful for the beverage that turned out to be much tastier than the beer they had been making from the only ingredients they had—potatoes and persimmons. The newcomers brought recipes for lager beer, which was made from yeast that ferments near the bottom of the tank. Texans savored the cold-brewed drink in those early days and many brewers took to making their lager beer in the winter months then storing it in cellars and even caves to keep it from spoiling in the Texas climate. According to the Texas Historical Commission, beer making in Texas grew from 19 homebrewers to 44 corporate breweries from 1840 to 1875. But things really took off in 1883, when

German brewer Adolphus Busch collaborated with local businessmen in San Antonio to build the original Lone Star Brewery. His brewery was mechanized, large scale, and able to transport beer across the region in wagons, which brought down the price per serving everywhere.

"THE NATIONAL BEER OF TEXAS" Even though Adolphus' original brewery became a casualty of Prohibition, another brewer began producing under the Lone Star name in 1940 and carried on the brand so widely known and associated with Texas to this day.

As well, the Texas legislature passed two bills in 2019 that allow craft brewers to sell a small amount of beer to go or deliver products directly to consumers. They later passed HB 1024 in response to the impact of and losses from COVID-era restrictions on the industry. That win for the industry means craft beer fans can also include their favorite beers in their to-go food orders or meals delivered to their homes.

Despite being relatively new in Texas, craft breweries are among the fastest growing sectors of the food and beverage industry and contribute billions to the state’s economy. Small beer breweries, tap-, and tasting rooms mean new experiences and big revenue for big cities and small towns as pandemic-weary travelers and daytrippers opt for staycations or close-to-home recreation that includes ingredients and tastes from local sources.

Today Texas has a healthy brewing industry, with craft breweries making up more than half of the industry’s jobs in the state. The beer they produce puts Texas in the top 10 in terms of volume and results in a variety of tastes around the state—traditional German brew in the Hill Country or a mug of cold lager after hiking through Big Bend National Park.

“This might not be a good idea,” Brian thought. “But as soon as we opened, it was game on.” With a vibe that is less Sixth Street and more Fredericksburg, Hell or High Water features live music on Fridays and Saturdays as well as local sports on TVs, which makes for a community gathering place for high school sports. Traditional beers flow as do guest taps from other area breweries, wineries, and distilleries so “there’s a little bit of something for everyone.” That includes pub fare like fish-n-chips, wings, burgers, fries, salads, and seafood, as well as signature pulled pork nachos and southwest style chicken Alfredo.

BUILDING ON SUCCESS

A

bout 20 minutes west of Georgetown is a brewery that welcomes both families and the bar crowd seven days a week. Running a brewery didn’t exactly start as a calling for Brian Holmes. “I started brewing as I wasn’t 21 and it was an easy way to get beer,” he says with a laugh while recalling his time making beer in college. After serving in the U.S. Air Force, he and accomplished fellow home brewer David Meyer joined forces on a brewery business plan. Their plan, however, didn’t get off the ground for a long time thanks to rejections by banks wary of loaning money to a couple of guys with no

Although the partners were originally just looking for an easy way to get beer, the brewery has become much more. Brian says he now genuinely enjoys the process—after adapting his five-gallon production at his home in Leander to 310 gallons at the brewery. And they've gotten pretty good at it, if the four-and-a-half star reviews online are any indication. “It’s a bit of an ego trip when someone says, ‘This is one of the best beers I’ve ever tasted,’ ” he says.

For their part, Hell or High Water’s customers enjoy the friendly service, down-to-earth atmosphere, and great beer and food, all of which drew Mike Larson during his

One meal in particular won him over. “I traveled the world and tasted the wings everywhere and searched for the best wings,” he says. “This place has the best.” That and the chicken Alfredo he enjoyed on a recent Tuesday night. A few barstools down, Cedar Park fire sergeant Jeremy House echoed Mike’s enthusiasm for the dish. After teaching a class at the Liberty Hill Fire Department and being urged to check out the brewery, he visited Hell or High Water a couple times before trying the dish that’s kept him coming back ever since. “That chicken Alfredo sold me,” he says, adding that the staff are friendly and helpful in explaining the beers to those unfamiliar with the beverages.

KEEPING IT LOCAL Overall, the brewery team is glad they’ve been able to create a food and beer destination that keeps central Texans from having to travel far for a brewpub experience. “We don’t want people to drive downtown to Austin to get a craft beer or a decent glass of wine with their meal,” Brian says. He remembers when former Mayor Rick Hall told them when Hell or High Water opened its doors, “Everyone is so happy they don’t have to drive far to get a meal with a craft beer, craft cocktail, or wine.”

ou no longer have to leave your dog at home to enjoy a drink out with your friends. Dog parks with biergartens are popping up all over the country, marrying canine hangout time with happy hour and Williamson County is no exception. Since 2012, Dog House Drinkery & Dog Park on CR 175 in Leander has been marshaling a loyal following of canine and human customers, and summer is a great time to visit. The 2.5-acre dog park and bar are shaded by towering oak trees and awash with tennis balls and water bowls.

FOR DOG LOVERS At first, dog mom Jodie Hooks began frequenting Dog House as a patron. “I fell in love with the vibe of the place, and I brought my own fur baby at least three times a week. I thought it was the perfect scenic and safe setting for my dog and me. Luckily, at that time, the original owners were in the market to sell, and Jodie was in the market to purchase. “I was lucky they chose to sell to me because a lot of people wanted to buy the property. They vetted me pretty hard because they wanted to make sure that their dream and legacy were carried out with the right person.”

ROUND OF A-PAWS They certainly made the right choice. Identifying as a dog park that happens to have a bar, Jodie’s mission is to cater to the doggos first. “I love being the provider of a community dog park where dogs can run safely off their leashes, get to know other dogs, work out, play, smell things, and enjoy the atmosphere. Humans just come with the dogs,” she laughs. “It gives me goosebumps to see returning dogs dragging their owners into the park with their tails wagging and ears sticking straight up because they genuinely love it here.” Okay, maybe Jodie and friends like humans a little bit. Every Wednesday is Trivia Night. The games begin at 7pm and they announce the topics ahead of time so patrons can decide which will be their lucky night. Prizes include free beer and gift items, plus bragging rights for the winners while their dogs play in the park.


The main park area is a fenced half-acre with plenty of shade and an inside-thefence bar.

Last month, Dog House held their fifth annual Summer Splash Party fundraiser for the Williamson County Regional Animal Shelter. Attendees enjoyed swimming pools, doggie ice cream, raffles, and a swimsuit contest for the dogs.

The off-leash dog park is membership only. Day passes can be purchased for $8 per dog; yearly passes are available for $150. The annual pass is just $30 for a second dog.

The human side also hosts fundraising events year-round, including a swimsuit and Halloween costume contest. Follow them on Facebook and Instagram for trivia topics and the most up-to-date events.

A separate area connected to the main park is reserved for dogs under 30 pounds. The front area of the property includes a 10,000 square foot off-leash space used for adoptions, training, yappy hours, birthday parties, and other general use. Dogs are always welcome in the bar area. Well-trained park attendants armed with water bottles are on the lookout for dogs who “pawty” too hard.

Children under the age of 16 are not allowed in the off-leash area but there are plenty of activities in the front of the park.

The Grateful Life

T

he fireworks were a few weeks ago but I am still enjoying the sense of thankfulness that came to mind among the flashbangs and mosquito swatting. Thinking about freedom and such, I reminded myself that sometimes it's enough just to be happy in a moment. It was a nice break from the worldly negativity that never seems to go away, and grateful people are the happiest and most emotionally healthy, right? So I thought about it and was happy in that moment that so many people in this great country are able to spend money just to watch it burn, albeit high in the sky in pretty colors. Then, as it normally does when I'm pondering, my Poppy side took over and I thought... how thankful is every bouncer and bartender in the nation to realize that for the next year or so, they don't really have to do math when checking IDs. Everyone born in 19-anything can come on in and have a drink. Let's talk about how happy I am for dopamine. How great is it that our brains actually reward us every time we achieve even the smallest goal in life? My ex used to call me a "relief junkie" and it's wonderful to know that while he meant it as an insult, there is a scientific reason I look so forward to making my deadlines every month or paying off my credit cards (again). I'm just addicted to accomplishing goals and thus, a dopamine junkie be I. I'm also grateful that I was today years old when I found out the chainsaw was invented for childbirth. Nice that no one in the modern age needs to know that. My friend Nate (who is 12—why would HE need to know that?) shared that bit of trivia and, turns out, it was a 1780s hand-crank medical device and not the world's worst horror movie. Still... I'm ever more grateful for modern medicine. I'm super thankful for that last knuckle on our pinky fingers. Each is perfectly formed—and located in just the right spot—to make a little shelf for cell phones so we can hold them and text with the same hand. Having just come back from a long road trip, I'm also grateful (again) to live in Texas. We drove though beautiful country and lovely little towns for days and, while I envied their lush greenery (from plenty of rain), I realized we totally live in a prosperous little bubble in this state. In other states, the answer to what is this pandemic

recession thing of which I hear on the news was evident in empty streets, dark businesses, and diners we got off the highway to stop in but were not open, or were only offering delivery—sights I'm just not accustomed to here. Sad to see, but I guess those are the folks who are packing up moving here. Go Texas! I'm grateful that people in Hollywood didn't forget how to make a blockbuster movie in the past couple of years when no one went to the theaters. Even though there are infinite 'artsy' flicks we're supposed to say we like, movie makers haven't given up on dinosaurs, fighter pilots, and superheroes that completely consume us while we shovel in the popcorn and never take our eyes off the screen. Ready for "Harry Potter and Indiana Jones & That Time We All Had Fun at the Movies" anyone? Fire. We just built a fire pit in the backyard and I am grateful anew for this most basic element of the universe. Sitting in a popup chair in the quiet, with nary a device, I seem to be able to stare at the flames for an endless amount of time without being bored. I love the comfort, the heat, and the very primal sense of time travel to when people were content to do no more than look up at the stars and talk until they had to get up and hunt down breakfast. Then I remember to be grateful I don't have to stalk a McMuffin before eating it. Also today, I'm happy someone posted a TikTok about brown noise being helpful for focus and sleep to my ADHD brain. I'd never even heard of it a week ago but I am suddenly able to do things like write this column in less than four hours—without thinking about food, checking my email, or procrastinating with more TikToks. Even my prayer time is more meaningful because I turn on the brown noise app and my attention lasts way beyond, "Heavenly Father, I thank... look, a bird!" Seriously, if you haven't tried it, find an app (use headphones). So, since I made my deadline early, I'm going celebrate with a hit of dopamine from vacuuming up all the dog hair in my living room (again). Hey, it's a goal, even if it's replicated daily, so it counts. AU G U ST 2 0 2 2

FRYING WITH BEER BATTER Heat oil to 355°. This batter works with any type of oil, but sesame, sunflower, or extra-virgin olive oil are recommended. Before frying, check mixture density. Dip a piece of vegetable or fish into the batter: if the mix covers the ingredient with a thin and consistent film, flow it into the oil. If it does not coat your food evenly, add flour or beer to correct the density. Maintain batter temperature as low as possible to take advantage of the thermal shock. Fry until golden, then place on a plate lined with paper towels with the help of a slotted spoon. Serve as soon as possible.

• ¾ cup American wild ale with fruit • 1 giant scoop good-quality vanilla ice cream • Raspberries for garnish (optional) It’s important to add the ice cream to the beer, rather than vice versa, to ensure that it will float and not stick to the bottom of the glass. Garnish with two or three raspberries if desired. Serve immediately with a spoon and a straw. 62

BEER BREAD This beer bread comes together quickly and needs no kneading. • 3 cups sifted flour • 1 Tablespoon baking powder (omit if using Self-Rising Flour) • 1 teaspoon salt (omit if using Self-Rising Flour) • 1/4 cup sugar • 1 (12 ounce) can beer • 1/2 cup melted butter (1/4 cup will work, but I use 1/2 cup)

Preheat oven to 375°. Prepare a bread loaf pan or 8" square pan. Mix dry ingredients first, combining them thoroughly with a whisk before adding beer. Add beer, then stir with a spoon until combined. Add a small amount of melted butter to bottom of pan. Pour batter into loaf pan. Pour melted butter over mixture. Be sure to put an extra pan or some foil beneath your bread as the butter might overflow. Bake 1 hour for a bread loaf pan. If using an 8" square pan check it around 45 min. and every 5 min until done. Remove from pan and cool at least 15 minutes.

“Delaney George"

It’s hard to imagine Delaney George wouldn’t be spreading joy today if not for Living Grace Canine Ranch.

B

efriending people from all over the community, helping senior residents adjust to a new home and even find their voice again— Georgetown’s newest canine celebrity Delaney George has touched many lives since joining The Delaney at Georgetown Village’s family last November. Awaiting euthanasia in a Dallas shelter a year ago, George was rescued at the last minute by a Living Grace volunteer who had seen his “Last Chance” post on Facebook. The Bertram ranch for senior dogs became his new home for a few months, during which he also received skin disease treatments.

Knowing several senior communities welcome canine visitors, Living Grace founder Rhonda Minardi suggested The Delaney become a forever foster home for George, while Living Grace continues to manage his medical and financial needs. “I told Rhonda we could try it for two days,” Delaney Memory Care Director Amanda Herndon says. “We fell in love with him immediately. We called her and said, ‘We’re not giving him back.’ ”

A NEW, NEW HOME It took a week for George to come out of his shell, and he has been helping others come out of theirs ever since. “We had residents who rarely came out of their rooms or went outside. He gave them a purpose to go outside for walks. We’ve had nonverbal residents with later stage dementia who began talking to him. If we have people who are agitated, exit seeking, or having a tough time, or new residents feeling a little uneasy in a new environment, George spends time with them and helps them relax.” George is not just popular at The Delaney. “We have people requesting to see him and take him for walks. I have to make appointments for visits, he’s so popular,” says

Mindy House, who handles George’s social media. “It has snowballed into people bringing treats, beds, clothes, and blankets. He’s quite famous. We had a huge birthday party for him in May and more than 100 people showed up. Just out of the blue, people will say, ‘I’m passing through, can I meet George?’ He touches so many lives. You can’t have a bad day with George.”
