THE ROLE

An opportunity has arisen for a Chef de Partie to join our amazing Catering Department - the Catering team play such an important part in the life of the students, staff and visitors alike. The Chef de Partie shall be responsible for assisting the Kitchen team to provide tasty offerings to the College, Fettes Trust, Westwoods Health Club and other subsidiary companies.

Specifically, the Catering Department provides three meals per day throughout term time and during the Summer Language School ‘term’ and one meal per day for primarily non-teaching staff at other times, subject to the needs of the department to close for training, cleaning and holidays.

Reporting to the Executive Chef, the Chef de Partie will be required to work 35 hours per week, 5 over 7 days and be able to work additional hours as required for core business and functions within the College. They should react quickly, efficiently and courteously to customer needs, and to the request of duty management, whilst maintaining the cleanliness, hygiene and safety of the Catering Facilities.

Main Duties and Responsibilities

• Assist in the development of both Student and hospitality menus.

• Assist in the delivery of service on the food counters, following all customer service standards.

• Ensure that all food is stored, handled and packed at the correct temperature and in accordance with food handling and hygiene regulations.

• To serve, when required, on food counters following all customer service standards.

• Use machinery as shown and trained to equipment is used safely and in accordance with legislation, and reporting issues to your line Manager.

• Ensure the quality and presentation of all food is to the highest standard

To ensure all work areas are always kept clean and waste is recorded and disposed of correctly.

• To be competent and skilled to work in all areas of preparation, cooking and serving.

• Ensure all Health and safety legislation is always compliant.

• Always provide excellent levels of customer care

• To be responsible for monitoring and recording, day to day production schedule of each menu item.

• Comply with food hygiene and health and safety regulations and procedures

• Any other reasonable duties as required in the provision of Catering Services

It is not an exhaustive list of activities, and staff may be asked to carry out duties commensurate with the grade of the post. All staff are expected to accept a reasonable amount of overtime if requested from time to time. We reserve the right to adjust employee’ shifts to cover the requirements of our business and cover annual holidays, although we make every attempt to minimise this.

PERSON SPECIFICATION

• Have a passion for providing excellent customer service

• Have a strong background in a similarly high volume / high quality establishment

• Excellent time management skills

• Passionate about food and delivering high standards as a matter of course

• Be a competent multi-tasker, who can work under pressure, and as part of a happy and committed team

• An Intermediate Food Hygiene qualification would be preferable, and experience of allergen legislation and special diets would be useful.

• Be aware of Health & Safety requirements within a catering environment

• The demands of this role include the ability to be on your feet for the daily rostered hours and a high level of manual handling and physical dexterity. A capacity to deal with the requirements and demands of meeting service deadlines is required

This is a permanent full-time role, working 35 hours per week 5 days over 7, early or back shift, with overtime available.

Annual Salary: £22,932 (£12.60 per hour),

You will be opted into the Fettes Trust Non-Teaching Staff Pension Scheme after 3 months service. This scheme is a money purchase one and full details of it and your options will be made available to you prior to your opt-in date. The Fettes Trust will contribute to the scheme and your contribution will be subject to the minimum overall combined employer and employee contribution limits set by the Pensions Regulator. Fettes operate a contribution matching scheme up to 10% of base salary.

ABOUT FETTES

Fettes College is a leading HMC co-educational boarding and day school close to the heart of Edinburgh. It has a strong tradition of academic, sporting and cultural excellence underpinned by outstanding pastoral care. Fettes opened its doors in 1870 and became fully co-educational in 1980: it is now an independent school of some 800 students. There are 590 students in the Senior School (13-18 years) and 210 students in the Preparatory School (7-13 years). The academic staff in the College consists of the Head and 91 full-time members of the Common Room. Our Prep School shares the same site and consists of a further 29 full-time teaching staff.

The school stands on a magnificent site of approximately 100 acres, but still within walking distance of Edinburgh’s city centre. The historic main building holds the Chapel, Library, the English, Classics and History Departments as well as the Medical Centre and two boarding houses. A large purpose-built teaching block (the Spens Building) houses Art, Modern Languages, Mathematics, Economics, Geography, and Music. The Theatre, Science Laboratories and Dining Hall are adjacent. The Preparatory School and seven further boarding houses (including Craigleith, our U6th House, specifically designed to prepare students for university) are also on the campus. Our sports facilities (including extensive playing fields, two all-weather pitches and a private Health Club) are excellent.

As well as our teaching staff we employ over 220 Non-Teaching Staff across the many departments, including Estates, Security, Housekeeping, Finance, Human Resources, Admissions and Marketing with a pervading sense of community amongst staff, students and parents alike.
