É D I TO R I A L - E DI TORI A L Une des questions que l’on me pose le plus souvent concerne notre processus de création de produits. Avec le choix de produits d’origine italienne qui s’offrent aux consommateurs—lesquels ne sont pas forcément confectionnés en Italie— comment parvenons-nous à demeurer pertinents pour notre clientèle toujours grandissante ?

La réponse est simple : on se tourne vers notre mission. Elle nous guide et nous empêche de se laisser séduire par la facilité ou les prétendues opportunités qui deviennent finalement des distractions.

Chez Favuzzi, nous sommes avant tout des amoureux de la culture, de l’histoire et de la gastronomie italienne.

Si le produit n’apporte rien à l’offre déjà disponible sur le marché et ne provoque pas une émotion qui nous transporte dès la première bouchée, on passe notre tour.

Bien sûr il y a les impératifs, comme le respect du terroir. Le pesto doit provenir de Gênes et contenir du basilic d’appellation d’origine protégée. Il en va de même pour la crème de pistaches de Bronte, la tomate San Marzano de Campanie et la marmelade d’agrumes de Sicile. L’ingrédient et sa transformation doivent être associés au même lieu où le savoir-faire et les particularités du terroir fusionnent pour engendrer quelque chose d’unique et d’inimitable.

Enfin, il y a les artisans avec qui nous devons partager des valeurs communes d’intégrité, de rigueur et d’excellence sans lesquelles il serait impossible d’envisager une union. Les voyages, les rencontres, les tablées et les idées s’entremêlent et guident notre processus décisionnel, pour finalement se traduire par quelque chose d’incomparable et de personnel : un produit signé Favuzzi.

One of the questions I get asked most often pertains to our product creation process. With the abundance of Italianoriginated products available to consumers— of which not all are made in Italy— how do we remain relevant?

The answer is simple: we rely on our mission. It guides us and prevents us from opting for the easy way out and socalled opportunities that end up distracting us. At Favuzzi, we are above all lovers of all things related to Italy—its culture, history and gastronomy. If the product doesn’t add value to what’s already available on the market or trigger an emotion that transports us upon the very first bite, we are not interested.

There are, of course, essential requirements such as respect for the terroir. Pesto must come from Genoa and include basil protected by a designation of origin.

The same goes for pistachio cream from Bronte, San Marzano tomatoes from Campania and citrus marmalade from Sicily. The ingredient and its processing must be sourced from the same place where the know-how and particularities of the land come together to create something unique and irreproducible.

Then, there are the artisans with whom we must share common values of integrity, rigour and excellence, without which it would be impossible to consider a union. Travels, encounters, dinner parties and ideas interlace and guide our decision-making process, expressing themselves into something that is unmatched and personal: a Favuzzi product.

We are very excited with the thought of receiving the keys to our latest acquisition: a new distribution centre in Alberta to better supply the province’s foodies with brand name products such as Joe Beef, Mandy’s, Au Pied de Cochon, Planeta, Acetum, Favuzzi, Marqués de Valdueza and several other brands from here and abroad!

Si l’hydroxytyrosol est bien connu pour son puissant pouvoir antioxydant, l’oléocanthal constitue le principal composé phénolique de l’huile d’olive qui possède des propriétés anti-inflammatoires et antioxydantes. L’oléocanthal exerce des effets préventifs et thérapeutiques pour de nombreuses maladies et pathologies : par exemple, il réduit l’inflammation de l’arthrite, combat et prévient le cancer, et ralentit la maladie d’Alzheimer. Selon de nombreuses études, la faible incidence des maladies inflammatoires dans la population méditerranéenne est en partie attribuable à la consommation des composants phénoliques présents dans l’huile d’olive extra vierge.

Une huile de qualité supérieure aura une teneur en oléocanthal nettement plus importante et sera donc meilleure pour la santé.

Il convient de mentionner que l’huile d’olive est la seule huile végétale renfermant de l’oléocanthal.

Hydroxytyrosol may be well known for its powerful antioxidant properties, but the main phenolic compound in olive oil is oleocanthal, which boasts anti-inflammatory and antioxidant properties. Oleocanthal provides both preventative and therapeutic effects for many diseases and conditions. For instance, it decreases inflammation resulting from arthritis, fights and prevents cancer, and has a slowing effect on Alzheimer’s disease. Many studies have shown that the low incidence of inflammatory diseases in the Mediterranean population is, in part, attributable to the consumption of the phenolic components found in extra virgin olive oil. A high-quality oil will contain considerably more oleocanthal and will therefore be healthier. It is worth noting that olive oil is the only vegetable oil that contains oleocanthal.

METTEZ-VOUS TROP DE SAUCE ?

ARE YOU PUTTING TOO MUCH SAUCE? Contrairement à nos habitudes culinaires, dans la cuisine italienne traditionnelle on utilise la sauce tomate pour bonifier le plat, et non pour lui voler la vedette. Il faut privilégier la même qualité supérieure pour la sauce et les pâtes, et respecter l’équivalence des proportions. Voilà pourquoi notre format de sauce tomate de 480 ml est idéal pour napper un sac complet de pâtes de 500 g ! Il n’en faut ni plus ni moins pour avoir l’impression d’être attablé dans une véritable trattoria italienne !

Pour assurer une cuisson uniforme, sortez le rôti à l’avance pour l’amener à la température ambiante avant d’amorcer sa cuisson. Mieux encore, ficelez votre longe de porc, assaisonnez-la avec de la marinade sèche à la toscane Favuzzi, puis laissez-la reposer à la température ambiante pendant environ une demi-heure avant de la faire cuire. Le sel contenu dans la marinade donnera du goût à la viande tout en l’attendrissant davantage.

Si vous désirez préparer une sauce crémeuse pour accompagner votre rôti, combinez des pommes et de l’oignon dans un robot culinaire jusqu’à ce que le mélange soit homogène, puis servez la viande tranchée avec la sauce, servie à côté. Cet excellent mets peut être préparé à l’avance et conservé au réfrigérateur. Lorsqu’elle est réfrigérée, la viande est plus facile à couper en tranches fines. Au moment de servir, réchauffez votre sauce crémeuse et versez-la sur la viande. Ce petit truc vous permet de réchauffer le rôti parfaitement et d’éviter de l’assécher à force de trop le faire cuire.

To ensure even cooking, remember to bring the pork loin to room temperature before roasting it. Better yet, you can tie the pork loin with butcher’s twine, season it with Favuzzi Tuscan meat rub and allow it to reach room temperature for about half an hour before cooking it. By doing so, the salt in the rub will give flavour to the meat, making it even more tender. If you want to make a creamy dressing for the meat, blend the apples with the onion until smooth, then serve the sliced meat with the dressing on the side. This is a great recipe to prepare in advance and store in the refrigerator. Bonus: you’ll achieve perfectly thin slices when the roast is cold. To serve, reheat the dressing and pour it over the meat. This is a fantastic way to warm the meat, ensuring it doesn’t become dry from overcooking.

Chaque région italienne possède sa propre recette pour créer une focaccia, ou schiacciata : moelleuse et aérée, dense et croquante, avec des olives, des tomates et, bien sûr, une huile d’olive exquise – les recettes sont infinies et varient selon les traditions locales et les habitudes familiales. Voici la focaccia toscane typique, connue sous le nom de schiacciata, garnie d’une généreuse couche de tapenade d’olives vertes Favuzzi qui lui confère saveur, couleur et texture. Servez-la en entrée ou mettez-la dans votre panier à pain lors de réunions spéciales entre amis.

Le secret : laisser la pâte lever tranquillement. La quantité de levure déshydratée est faible par rapport à la quantité finale de farine utilisée, ce qui favorise une levée lente et régulière pour produire une focaccia légère, aérée et facile à digérer. Vous pouvez également utiliser un levain. Pour ce faire, remplacez simplement la levure déshydratée et ajoutez 200 grammes de levain hydraté à 100 %, puis suivez les étapes de préparation de la recette.

Every Italian region has a recipe for focaccia, or schiacciata: light and airy, thick and crunchy, with olives, tomatoes and of course, exquisite olive oil. The recipes are endless, influenced by local traditions and family habits.

This is the typical Tuscan focaccia, known as schiacciata, enriched with a thick layer of Favuzzi green olive tapenade that adds flavour, colour and texture to the focaccia.

Serve it as an appetizer or add it to your bread basket for special gatherings with friends. The secret here is to allow the dough to rise slowly. The quantity of active dry yeast is small compared to the final amount of flour used to make the focaccia. This promotes a slow and steady rising, while providing a soft and airy focaccia that will be easy to digest. If you want to use a sourdough starter, substitute the active dry yeast, and add 200 grams of 100% hydrated starter, then follow the steps as outlined in the recipe.

WHAT IS A SAGRA?

Sagra : mot italien issu du latin sacrum, qui signifie « sacré »; au pluriel, on écrit sagre. En Italie, une sagra est une fête locale ou un festival villageois qui met à l’honneur les produits alimentaires. À cette occasion, on décore les rues avec des étalages appétissants, on s’adonne aux danses populaires et à la musique, et, bien sûr, on en profite pour faire connaître ses spécialités gastronomiques. L’événement est souvent consacré à un produit ou à un plat local dont le nom qualifie alors le mot sagra.

Sagra is an Italian word derived from the Latin “sacrum”, which means “sacred”. In the plural form, it is written as sagre. In Italy, a sagra is a local celebration or village festival where food products are celebrated. It involves decorating the streets with appetizing displays, folk dancing and music, and of course, showcasing one’s culinary specialties. The festival is often dedicated to a local product or dish, the name of which is called sagra.

Lors d’une sagra, il est également courant d’organiser une reconstitution historique et des épreuves sportives comme une joute ou une course de chevaux menée par des cavaliers costumés; l’événement s’appelle dans ce cas un PALIO. La date de la sagra varie légèrement d’une année à l’autre, et les festivités se déroulent généralement pendant plusieurs jours dans la ville même pour être ainsi accessibles au plus grand nombre. Le calendrier de l’Italie comporte aujourd’hui une multitude de sagre qui se succèdent tout au long de l’année.

During a sagra, historical reenactments and sporting events, such as a joust or horseback races led by costumed riders, are also commonly organized. In this case, the event is called a PALIO. A sagra can take place at different dates from year to year, and festivities are usually held over several days, in the city itself, to ensure accessibility to as many people as possible. Nowadays, the Italian calendar features a number of different sagre throughout the year.

Arancina or arancino? There’s much debate in Sicily over whether the name is female (ending in “a”) or male (ending in “o”). In fact, Sicilians on Western and Eastern sides of the island are split between the words when they reference a single arancini. For example, in Licata—where recipe author Alessandra is from—they call it arancina, the female version, of which she is very proud.

However, some say that the word arancina comes from “arancia” (orange) which originated during the Arabic colonization, between the IX and XI centuries. The Arabs would form rice balls using the palm of their hands, and would flavour it with lamb meat and saffron. They had a tendency of naming their polpette (any form of meatball) after a fruit it reminded them of, and could therefore have been inspired by one of the land’s most abundant citrus fruit. The secret to making the best arancini is cooking the rice properly.

Cette pratique est liée à l’idée que le bonheur doit être partagé. Une Journée nationale, La Giornata del Caffè Sospeso, célébrée le 10 décembre (également Journée mondiale des droits de l’homme), a même été instaurée en 2011 pour perpétuer la tradition !

This gesture of solidarity consists in paying for two coffees at the bar: your own and that of another person in need, who can ask the barkeeper for a “pending coffee”. This practice is based on the belief that happiness should be shared. A national day, La Giornata del Caffè Sospeso, celebrated on December 10 (which also happens to be Human Rights Day), was even instituted in 2011 to uphold this tradition!

Torréfaction à l’italienne, torréfaction lente. Ce type de torréfaction d’inspiration italienne se caractérise par une cuisson des grains plus longue, soit de 18 à 20 minutes, à basse température (de 375 à 445 °F [de 190 à 230 °C]).

La torréfaction lente permet une cuisson plus uniforme des grains sans les brûler, de leur surface à leur centre, à la manière d’un bon pain que l’on cuit lentement pour favoriser la dispersion de la chaleur.

Italian-style roasting is synonymous to slow roasting.

This Italian-inspired process is defined by its slow and steady approach to roasting the beans, more specifically between 18 and 20 minutes at a low temperature (375 to 445 °F [190 to 230°C]). Slow roasting results in an evenly cooked bean, from surface to center, without burning them. Just like bread, this slow process encourages even heat distribution.

Roasted many times per week, our coffee is always fresh and at its best. While this slow roasting method may not be the most productive or cost-effective approach to roast coffee, it certainly offers several benefits on the flavour front: chocolate and nutty aromas, a comforting taste and a nice length in mouth. With the North American method, burner heat is swiftly increased to accelerate colouring, reduce roast time and consequently, decrease production costs. As such, the resulting coffee isn’t as rich tasting.

The World Barista Championship (WBC) is the most important international coffee competition, and it is organized each year by the World Coffee Events (WCE). As such, yearly more than 50 participants are challenged to prepare coffees, in a timed performance, in accordance to rigorous standards.

La MARMELADE est un produit fabriqué à partir de sucres et d’agrumes (sous forme de pulpe, de purée, d’extraits aqueux, de jus ou de zeste/d’écorce). Les fruits autorisés pour sa préparation sont l’orange, la bergamote, le cédrat, le citron, la mandarine et le pamplemousse. La teneur en fruits du produit fini doit être supérieure à 20 %.

La CONFITURE est un produit fabriqué à partir des sucres et de la pulpe de tous les autres types de fruits.

Il n’y a donc aucune autre restriction. La teneur en fruits du produit fini ne doit pas être inférieure à 35 %.

Ainsi, les abricots, les pêches, les prunes, les pommes et les fraises font de la confiture, tandis que le citron, l’orange, le pamplemousse et la mandarine font de la marmelade.

MARMALADE is a preserve made from sugar and citrus fruits (in the form of pulp, puree, aqueous extracts, juice or zest/peel). Only the following can be used when making marmalade: orange, bergamot, citron, lemon, mandarin and grapefruit. The fruit content in the finished product must exceed 20%.

JAM is a product made from sugar and the pulp of any fruit, other than citrus fruits. A minimum of 35% fruit content is required for this product to be considered a jam.

As such, apricots, peaches, plums, apples and strawberries can turn into jam, while lemons, oranges, grapefruit and mandarins become marmalade.

La reine Marie de Médicis, qui habitait en France, tomba malade et se vit diagnostiquer une grave carence en vitamines. Elle demanda alors aux hommes de son armée d’aller lui chercher les plus beaux agrumes du monde; ils partirent donc en Sicile ! Comme le voyage à cheval était très long et que les agrumes allaient inévitablement se détériorer, les soldats transformèrent les oranges en préparation concentrée. Sur les coffres renfermant cette fameuse préparation, on pouvait lire l’inscription « Marie malade », qui pouvait être lue « Marimalade » et qui finit par devenir « Marmelade ».

Queen Marie de’ Medici, who lived in France, fell ill and was diagnosed with a serious vitamin deficiency.

She asked her army men to gather the very best citrus fruits they could find—so off to Sicily they went!

Because the citrus would inevitably spoil given the long horseback journey, the soldiers transformed the oranges into a concentrated concoction. They stored it in a chest on which the words “Marie malade” (which translates to Marie sick) could be read as “Mariemalade”.

This eventually morphed into “Marmalade”.

Our producer is the first in Italy to offer superior quality marmalades that are also certified and backed by the Italian Consortium. Our PGI organic Sicilian red blood orange marmalade is made with moro, tarocco and sanguinello oranges—these famous pigmented blood oranges typically found in Catania.

En Sicile, on les appelle bigne ou sciu, une déformation du terme français « chou ». Ces petits choux, généralement fourrés de crème de ricotta ou de pistaches, se retrouvent immanquablement sur la table dominicale de tous les Siciliens. Ils sont également garnis de sucre à glacer ou d’un glaçage au chocolat (glassa) blanc ou noir. Lors de la préparation des scia, vous devez tenir compte d’une chose importante : commencez la veille si vous utilisez de la ricotta pour qu’elle puisse s’égoutter correctement afin d’en éliminer tout le siero et qu’elle devienne aussi sèche que possible.

Il s’agit d’une recette traditionnelle de la région de Catane qui est préparée pour la festa dei morti (fête d’Ognissanti), au début du mois de novembre. L’origine du nom Rame di Napoli (« cuivre de Naples », en français) remonterait à l’époque du royaume des Deux-Siciles. À la suite de l’annexion de la Sicile au royaume de Naples, les Bourbons ont décidé d’utiliser le cuivre, plutôt que l’or ou l’argent, pour fabriquer leurs pièces de monnaie. En l’honneur du nouveau royaume, les Siciliens ont créé ce délicieux biscuit, qui ressemblait à la nouvelle pièce de monnaie.

In Sicily, they’re called “bigne” or “sciu”, a distorted version of the French term “choux.”

They are usually filled with ricotta or pistachio cream, and it’s a dessert that Sicilians always have on their Sunday spread. They are also topped with icing sugar or with “glassa” chocolate frosting made from either white or dark chocolate. One important thing to consider when making scia: a critical first step needs to happen the day before, and that is, to take the ricotta and let it drain properly, so all the siero is gone and it has dried out as much as possible.

It’s a traditional Catanese recipe—i.e. from the Catania region—typically made and eaten during the Ognissanti celebration known as “festa dei morti” at the beginning of November. The first use of the name Rame di Napoli (or Copper of Naples) is said to date back to the Kingdom of the Two Sicilies. Following the annexation of Sicily to the Kingdom of Naples, the Bourbons decided to make coins out of copper, rather than with gold or silver. In honour of the new kingdom, Sicilians created this delicious cookie, intended to replicate the new coin.

Le gâteau Stroscia de Pietrabruna illustre parfaitement l’étonnante simplicité de la cuisine italienne. Farine, huile et sucre sont les principaux ingrédients de ce délicieux dessert. Il suffit de les amalgamer à la main, puis d’enfourner le mélange pour que la magie s’opère. Quelques ingrédients de qualité, manipulés avec soin par des mains expertes, suffisent à créer une excellente gâterie italienne. Cette recette traditionnelle, inventée il y a des siècles au pays de l’huile d’olive extra vierge, lui rend hommage. Son nom est dérivé du verbe stosciare, qui signifie « briser » ou « rompre » en dialecte ligure. Il s’agit en effet d’un gâteau friable, qui est traditionnellement craqué à la main et jamais coupé au couteau.

À LA RENCONTRE DE NOS ARTISANS M E E T O U R A RT I S A N S Alors qu’ils n’avaient que 20 ans, Nino Marino et son ami Vincenzo ont lancé leur entreprise de pâtisseries dans la ville de Bronte, en Sicile.

Quinze ans plus tard, leurs panettones et tartinades sont toujours confectionnés à la main avec des ingrédients locaux, comme la pistache verte de Bronte (AOP), grâce à un savoir-faire traditionnel.

Nino Marino and his friend, Vincenzo, were only 20 years old when they founded their confectionery business in the Sicilian town of Bronte. Fifteen years later, their panettones and spreads are still made by hand, with local ingredients such as green pistachios from Bronte (PDO), and true to traditional methods.
