Ascorbic Acid

• Used as an antioxidant in conjunction with sodium, or preferably potassium metabisulphate.

• Used mainly to neutralise any caustic residues remaining after cleaning. Also used to remove any ‘cardboard’ odour or flavour from filter pads prior to the filtration of wine.

Grape Juice Concentrate 68 Brix

• A juice concentrate extracted from grapes with various levels of sugar to increase sweetness of wine. Available in Neutral, Red, Gordo, Cabernet, Shiraz and Chardonnay at 68 Brix.

• Seeded into white wines under refrigeration to reduce the time required for cold stabilisation and to avoid the precipitation of unsightly crystalline deposits in bottled wines.

Di-Ammonium Phosphate (DAP)

• Used as a yeast nutrient and provides nitrogen to the yeast during fermentation. Also used to remove hydrogen sulphide during fermentation.

CarboChem CA50

Activated charcoal is used to remove colour and to remove off-odours.

• Activated carbon decolourising properties – decolourising applications involve removal of large molecular compounds, which require activated carbon with a well developed macro-pore structure.

• Absorption process of activated carbon – activated carbon is nonpolar, which results in an affinity for non-polar compounds, such as organics. These compounds are bound to the surface of the activated carbon by the absorption process.

Malic Acid

• Added to wines where the malic levels are low. Malic acid can be added to maintain the natural balance of tartaric/malic acids found in grapes used to make wine.

Potassium Carbonate (Food Grade)

• Juice or wine of high acidity/low pH is best treated with potassium. A reduction in TA of 1.0g/L requires an addition of 0.62g/L of potassium carbonate.

Potassium Metabisulphite

• PMS contains approximately 58 percent sulphur dioxide. It is added to juice/wine for its antibacterial and antioxidant properties. 10g/100L is equivalent to 50ppm SO2.

Potassium Bicarbonate (Food Grade)

• Potassium Bicarbonate is used for de-acidification of grape juice, must or wine for improving quality or rounding off of flavours. It forms carbon dioxide and precipitate potassium bitartrate.

PVPP (Polyclar VT)

• A synthetic fining agent used in wine as a specific absorbent for phenolic compounds, particularly in pressings, which lead to astringency and browning of white wines. Essentially a gentle fining agent that removes phenolics without decreasing the aroma of the wine.

Soda Ash Dense

• Used to clean and deodorise oak wine barrels and wine making equipment.

Tannins AQ

• Adds perceived ripe fruit characters – gives depth and complexity. Slight mocha lift reduces vegetative characters. Gives a more rounded mouth feel, fills the mouth out more. Medium grain less complex than PQ. Dose rates of only 100ppm at the crusher have proved highly beneficial in colour retention. Dose rates up to 200ppm removed off flavour characters from poor quality grapes, also giving excellent colour retention.

Volclay Bentonite (KWK)

• Sodium Bentonite is a hydrated aluminium silicate consisting of layers/sheets of negatively charged atoms. Bentonite is mostly used after fermentation to clarify both white wine and to remove positively charged particles such as proteins.

Sodium Percarbonate

• Stabilised grades of sodium carbonate peroxyhydrate, these odourless, free-flowing powders provide a source of alkaline hydrogen peroxide and soda ash for use in a wide range of applications.

Enzyme Solutions – Enzymes

Enzymes

The Enzyme Solutions business segment delivers unique, innovative, biotechnology derived products and technical services that provide environmentally positive solutions to customer needs.

Enzyme Solutions provide dedicated customer and product support and on-site training through tailored programmes of technical expertise in optimising enzyme selection and process parameters.

Enzymes can deliver numerous benefits in the wine making process. On the processing side, they help achieve significantly higher recoveries, increase pressing efficiencies, maximise free run and throughput, improve juice clarity, reduce lees losses and facilitate easier flotations and racking. Specialty enzymes can also improve wine quality by releasing increased volatile aromatics and extracting and stabilising higher levels of colour. Technically, enzymes are naturally derived proteins that act on specific organic compounds and speed up biochemical reactions. In the wine making process, enzymes, especially pectinase blends, break down the biochemically complex

grape cell walls, releasing more juice and softening the grape matrix. This in turn leads to the several process benefits mentioned above. By effectively breaking down the grape skin and cell structure, pectinases also make it easier to process challenging ‘slip skin’ grape cultivars. Pectinases are best added at the crushing stage, so that they get sufficient reaction time. More importantly, instead of adopting a ‘one size fits all’ approach, the complex biochemistry of the grape cell wall and the different types of pectinases makes it vital that the right type of enzymes are selected to achieve the desired process objectives and to maximise cost benefits.

Optivin Pectexel

• A special pectinase blend designed specifically to aid the manufacture of Sauvignon Blanc in typical New Zealand conditions.

• The combination of different non GMO pectinases delivers efficient depectinisation at low temperatures and helps release and retain aromatics.

Optivin Aromatic

• An enzyme system designed to release aromatic terpene compounds bound to sugar molecules within the grape cells.

• The Optivin Aromatic also contains considerable depectinising activity, thus delivering additional processing benefits.

Optivin Botry

• An enzyme system that breaks down glucans contributed to by botrytis infections. Left untreated, these glucans increase the viscosity of wine, making filtration extremely difficult or impossible.

• The application of the Optivin Botry significantly reduces the viscosity and aids easy filtration, thus serving as safeguard in an infected crop year.

Enzyme Solutions - Fermentation Aids

Fermentation Aids

Sluggish or stuck ferments remain a major concern for winemakers during any vintage. Ensuring good hydration of budding yeast and adequate nutrition of fermenting yeast are some of the most critical steps in ensuring a healthy fermentation. Budding and fermenting yeast differ in their nutrition requirements.

Budding yeasts

The cell walls of budding yeast are highly permeable and hence readily ingest any nutrients provided at the hydration stage.

Fermenting yeast

These show lower nutrient ingestion capabilities, especially towards the later stages of fermentation.

An appropriate supply of micro and macro nutrients including nitrogen and carbon sources, vitamins and inorganic minerals provided at the right growth stage can thus ensure strong yeast growth and complete fermentations.

Ferm Assist

• A unique blend of a high efficiency protease combined with yeast nutrients to help ferments continue to completion. The protease breaks down complex proteins into amino acids and peptides, thereby providing multiple sources of YAN for the growing yeast to assimilate and use during the later alcohol stressed stages of fermentation, when the capacity to ingest external nutrients is low. By ensuring nutrient availability at such critical stages in the fermentation, Ferm Assist allows the yeast metabolism to continue towards a smoother and complete ferment.

METHOD

Addition:

Make a slurry of the product by dissolving the product in water or fermenting juice. Add the slurry slowly to the fermentation tank as the presence of solids could cause foaming.

Timing:

Ferm Boost – add at the begining offermentation at the yeast hydration stage.

Ferm Assist and Ferm Classic – add on second or third day of fermentation at approximately 1-2 Baumé drop.

Ferm Boost

• Designed for budding yeast, this blend of inactivated yeast has been specially formulated to meet the nutritional requirement of the growing yeast. While the yeast sacs and hulls provide a rich source of vitamins and amino acids, glutathione protects the young yeast cells from being killed through osmotic shock. Together, this results in a healthy yeast hydration and a rapid increase in yeast numbers.

• A premium DAP free fermentation aid.

Enzyme Solutions – Winery Waste Management

Sanizyme

Winery waste management is an international problem and Connell Brothers – Enzyme Solutions have worked closely with Australian wineries to develop a specific blend of microbes and enzymes that will assist in the breakdown of organic matter and reduce harmful effects on the environment and reduce mal-odours around the winery. The degradation of organic matter in septic tanks and industrial ponds traditionally relies on the activity of the inherent microbes present in the input feed. This biological activity is easily thrown out of balance when excessive or changing organic loads and harmful chemicals enter the system. The imbalance in the microbial system results in sub optimal break down of organic contents, producing unpleasant odours, high sludge and scum levels, frequent clogging and cleaning difficulties.

Activity

Sanizyme is a specially designed combination of concentrated enzymes with billions of microbial spores to help restore this natural microbial balance and promote a more efficient system operation in a chemical free, eco-friendly and natural way. The high activity, multi-enzyme system in Sanizyme quickly breaks down the organic material such as fats, proteins, starch and cellulosic material into nutrients that help the billions of spores to rapidly germinate into active bacteria. The increased bacterial activity further results in the continual production of additional enzymes which go on to liquefy and digest the sewage contents.

Results

The end result is an increase in liquefaction and reduction of solids, reduction of odour, easier disposal of waste and a safe and easy maintenance system. Regular use of Sanizyme thus rejuvenates tired systems and maintains efficient operation of septic tanks and waste pond water systems.

Initial dose – slurry in 50L of tepid water and spray over pond’s surface. NOTE: Maintain through regular addition in winery traps and drains.

Repeat every 2-3 weeks as a part of compost rotation Add to compost in solution with seaweed fertiliser/molasses and tepid water solution for best results. Repeat every time you re-wet the compost and turn solution for best results.

Sanizyme

• Bacteriological and enzyme waste treatment compound.

• Formulated to contain billions of organisms that are necessary for the digestion of waste found in septic tanks and winery waste systems.

• Contains enzymes that break down and solubilise waste materials, providing the food necessary for ongoing and rapid bacterial growth and multiplication. The enzymes include lipase for fats, cellulase for cellulose, protease for protein and amylase for starch.

• Contains wetting agents to increase the contact between the enzymes and the waste materials.

Enartis

Bentonite – Plux Compact

• A bentonite obtained by a special procedure – its activation rate is designed to produce a protein removal efficiency comparable to that of sodium bentonite with lees volume generation similar to that of calcium bentonite. Consequently, even when used at low doses, Plux Compact combines excellent fining and protein removal properties with limited amounts of lees.

• Effervescent granulated potassium metabisulphite for sulphating grape bins and tanks. When added to wine, it rapidly dissolves on the surface of the liquid, assuring that its antioxidant effect is maintained where it is needed. Aroma White

• Saccharomyces cerevisiae selected for the production of fresh and fruity white wines. It has a good ability to produce fermentation aromas. Because of a very small production of riboflavin, it helps in preventing the appearance of the undesirable ‘light struck flavor’. Alcohol tolerance to 15% v/v. Optimum fermentation temperature range 15 to 24°C.

ES 488

• ES 488 is a strain recommended for the production of new world style red wines destined for aging. It enhances and intensifies the varietal characteristics of very ripe red grapes. In particular, it enhances red fruit aromas (raspberry, cranberry, red currant and kirsch cherry) and increases complexity by adding mineral, spicy (licorice) and floral (violet) notes. The resulting wines are already aromatically expressive at the end of the alcoholic fermentation.

• This blend of two different strains is highly performant in preventing and curing sluggish and stuck fermentation. It can also successfully produce wines from dehydrated grapes. Alcohol tolerance up to 16.5 percent v/v. Optimum fermentation temperature range 12 to 34°C.

Oak Super Fine Medium Toast

Established in the Barossa Valley in South Australia in 1990, Suber Oak began research into the production of toasted oak products in a form that could be used in wine making as an alternative to barrels.

The use of these oak adjuncts gives winemakers great flexibility in extracting a range of flavours from the oak at considerable savings to the winemaker.

Oak source – forests of Jupilles Bercé, Tronçais, Jura and Pennsylvania.

Seasoning – dried at the place of origin and in Australia prior to processing.

• Added to the must during primary fermentation, provides quick extraction of tannins, aids in stabilising colour and provides oxidisation protection.

• The fine oak is used as a fermentation oak, it is also suited to longer term maturation of the wine. Because of the smaller sizes, extraction is quite fast.

Best food safe practices require all surfaces to be rendered hygienically clean and bacteria free. Within wineries this is accomplished by using an alkaline source to clean, a sanitiser or terminal disinfectant to kill bacterial microbes, followed by a pH check and microbial swab testing for confirmation of hygiene assurance.
