COUNTRY CRUST CINNAMON BREAD
From the kitchen of Beth Fladmark as published in the cookbook “vaer saa od – Come and Eat”
INGREDIENTS
• 2 Packages dry yeast • 1/2 Cup sugar • 2 Eggs, beaten • 6 to 6 1/2 Cups flour • 1/2 Cup sugar • Soft butter • 2 Cups warm water • 1 Tablespoon salt • 1/4 Cup salad oil • 1 Cup raisins • 1 Tablespoon cinnamon
DIRECTIONS:
Dissolve yeast in warm water. Stir in sugar, salt, eggs and salad oil and 3 cups flour. Beat until smooth. Then mix in enough flour to make dough easy to handle. Turn dough onto lightly floured board and knead until smooth - 8 to 10 minutes. Place in greased bowl and turn greased side up. Cover. Let rise in warm place until double. Punch down. Divide in half. Knead ½ cup of raisins into each half. Roll each into rectangle 18 x 9. Brush with soft butter. Mix ½ cup sugar and cinnamon. Sprinkle each with half sugarcinnamon mix. Roll up, beginning with short side. With side of hand, press each and seal. Fold ends under. Place in greased pan. Brush with salad oil. Let rise. Bake 375 degrees 30 to 35 minutes.
