Welcome to this issue—and to the beginning of summer.

As adults, summer doesn’t always feel quite like it used to. The long, carefree months of childhood have given way to busy schedules and daily responsibilities. Still, there’s value in pausing to reflect on the summers of our past and finding ways to savor the ones ahead.

Think back to those school-free days, filled with endless adventures. Try to recall the familiar scents and flavors—and the people who helped shape those memories.

For me, the best summers were spent playing with my older siblings and cousins, running barefoot through the yard while our parents and grandparents watched from the porch, smiling. I’d follow my dad and sister to the horse barn, mimicking their every move. I can still hear the crack of my grandpa opening a can of beer as he spent the day grilling ribs—ribs so perfect, they’ve never left my memory.

Now, summer looks a little different, but the heart of it remains. Some traditions stick, others evolve. The people may change—some gone, some new—but the spirit of the season is carried on in those we share it with.

These days, I see my nephews chasing each other around the yard while I smile from the sidelines. I hear their little footsteps trailing behind me, copying everything I do. I watch them standing knee-high beside their grandpa, clumsily holding a fishing pole. They’re living their summers just like I lived mine.

Summer has a beautiful way of repeating itself—just with new faces, new places, and new memories.

The piece I wrote for this issue is inspired by one of those cherished memories—my late PaPa’s ribs. I was just a toddler then, but watching him grill while our family laughed and played around him remains one of my fondest memories. I credit him with my love of BBQ and a good, cold beer.

The History of Texas BBQ

Texas barbecue has deep roots—a history much richer than what meets the eye. Indigenous people were smoking wild game long before European settlers arrived. When Germans and Czechs immigrated in the 1800s, the groundwork for Texas barbecue was well established.

These Central European newcomers brought with them butchery skills and a love for sausage. They opened meat markets where the leftovers were smoked and sold as a practical, tasty way to preserve meat. Over time, barbecue evolved from preservation into tradition—served on butcher paper with simple sides like pickles and white bread.

Texas barbecue now spans four main styles based on location: Central Texas, East Texas, West Texas, and South Texas. Central Texas focuses on brisket, salt-and-pepper rubs, and indirect smoking with post oak. East Texas meats
