Summer has officially arrived with the solstice and it seems the weather may have finally gotten the memo too A 7-day forecast of sunny skies and soaring temperatures does a lot to make up for that unpredictable June we just experienced. With summer in mind, it’s easy to think of lazy days at the lake and road trips to visit friends, and completely overlook all the great activities and events happening right here in Downtown Kamloops.

This is only partially a shameless plug for downtown – promise –and six years into business in this community, summer and downtown are synonymous for me. From fabulous annual events like RibFest and the Downtown Merchant’s Market that I keep an eye out for every year, to my weekly visits to the Farmers’ Market, to the incredible lineup of local eateries, breweries, shops, and of course ice cream parlours, there are wonderful summer memories to be made right here at home.

In this summer edition of Small Talk, we ’ ve paired this appreciation for local and added a heavy dose of the ideal summer vacation spent traipsing around the Mediterranean. A European holiday is the last thing our budgets or schedules can handle this summer, but that doesn’t mean a summer spent in Kamloops can’t be equally enjoyable if approached with the right frame of mind.

Brimming with inspiration to help us all fully embrace summer, I hope you make memories to last a lifetime. Here’s to an incredible summer!

“This is my favourite summer salad, the dressing is to die for!

Level: Easy

Total: 55 min

Prep: 15 min

Inactive: 30 min

Cook: 10 min

Yield: 12 servings

– Calli
A taste explosion with every bite.

3 tablespoons good olive oil

1 small French bread or boule, cut into 1-inch cubes (6 cups)

1 teaspoon kosher salt

2 large, ripe tomatoes, cut into 1-inch cubes

1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick

1 red bell pepper, seeded and cut into 1-inch cubes

1 yellow bell pepper, seeded and cut into 1inch cubes

1/2 red onion, cut in 1/2 and thinly sliced

20 large basil leaves, coarsely chopped

3 tablespoons capers, drained

For the vinaigrette:

1 teaspoon finely minced garlic

1/2 teaspoon Dijon mustard

3 tablespoons

Champagne vinegar

1/2 cup good olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

Step 1

Heat the oil in a large saute pan Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed

Step 2

For the vinaigrette, whisk all the ingredients together

Step 3

In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers Add the bread cubes and toss with the vinaigrette Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavours to blend.

It’s a simple salad to whip up whenever you have guests come over!
