BEEF SAN CHOY BOW

Ingredients ȩ 20g dried sliced shiitake mushrooms ȩ 1 cup boiling water ȩ ¼ cup light soy sauce ȩ ¼ cup oyster sauce ȩ 1 tbsp caster sugar ȩ ½ tsp sesame oil ȩ 1/3 cup Chinese cooking wine or dry sherry

Steps ȩ 1 ½ tbsp vegetable oil ȩ 2 cloves minced garlic ȩ 2 tsp grated fresh ginger ȩ 1 large chopped red chilli ȩ 3 green onions or shallots sliced plus extra to garnish ȩ 600g beef mince ȩ 12 iceberg lettuce leaves ȩ Steamed rice to serve

1. Soak mushrooms in boiling water for 15 minutes or until rehydrated. Strain and keep water aside.
