Welcome

RAFAEL BRULL

Air Europa enjoys a very special relationship with the world of music. For many years, we have accompanied leading Latin American artists on their journeys across the Atlantic; today, many of them are ambassadors for our airline. We are proud to be part of their daily lives, travelling with them to destinations where thousands of people await them to enjoy their art. That emotional connection which music creates between people from different cultures, bringing them together, even when they do not share the same language, is what unites us. Just as music does, Air Europa also connects, year after year, millions of passengers travelling to their destinations, and we strive to provide them with a unique experience that goes far beyond the mere provision of a service. That is why we could not be prouder to sponsor Shakira’s historic run of concerts in Spain as part of her Las Mujeres Ya No Lloran World Tour. By 11 October, the Colombian artist – one of the world’s leading ambassador’s of Latin culture – will have performed twelve consecutive concerts in Madrid at the venue known as Macondo Park, in what will be the biggest musical event of the year in Europe. We are privileged not only to have transported the singer and her entire team to this event, but also to have helped bring some of the more than 600,000 people who will attend her shows. Perhaps you will be one of the lucky ones. Colombia is one of our star destinations in the Americas. We have been flying there for a decade and, from 18 December, we will be adding a new destination: Barranquilla, Shakira’s hometown. Nothing happens by chance. Thank you for choosing us. Enjoy your flight. EUROPA | 3

// In Andalusia, fried fish is usually served with lemon or lime (above), as a few drops of their juice cut through the richness and bring out the flavour.

ENG A light dusting of flour, clean oil, a controlled temperature (between 180 and 190 °C) and a secret which, as they say at Toro Tapas (@torotapas_elpuerto), “starts, without a doubt, with the ingredient”: the fish. This is the foundation upon which a dish with a distinctly Andalusian character is built. But, as Jorge Martín of the Dani García Group puts it, “pescaíto frito is not a set recipe, but a snapshot of the coastline and the moment”. A changing coastline, as Luis Miguel Menor of Bar Guerra (barguerra.com) explains: “From the estuaries of Cádiz to the rocky seabeds of Almería, via the cliffs of Granada and the salt marshes of Huelva, Andalusia doesn’t fry fish in just one way because its coastline is equally diverse.” And so, in Huelva and Cádiz, species such as the acedía, cuttlefish, puntillita and dogfish reign supreme, whilst in Málaga it is the anchovy, red mullet and horse mackerel. A seemingly simple recipe, yet one whose technique requires pinpoint precision to preserve “the fish’s character intact”, ensuring it arrives “at the table piping hot, crisp on the outside and juicy on the inside”, notes Martín. “A memorable fried dish is one that, once you’ve finished eating it, leaves you

with no greasy aftertaste”, sums up Sergio Martínez, of Puente Romano Marbella. But there’s more to this hallmark of the South than meets the eye: it has history. “In the old days, they used to fry it on the beach, in an iron cauldron over the embers, braving the wind,” Menor recalls. “It was the fishermen’s meal; they would use the time to mend their nets, discuss how the day’s catch had gone and share stories as the oil sizzled in the pan.”

stretching back four thousand years. This is confirmed by an encella – a ceramic mould used to shape the cheese – dating from the Talayotic period, the prehistoric culture of the talayots, monumental stone structures, which is preserved at the Museu de Menorca. The cheese became closely associated with the name of Mahón, the port from which, in the 18th century, it was shipped to other markets. The tradition lives on in the llocs, the rural estates where it is made, and in customs such as wrapping the curd in a fogasser – a cloth that gives the cheese its shape when pressed and tied. It also remains on the table, sharing the limelight with products such as the tomàtiga de ramellet – essential, alongside Mallorcan olive oil, for pa amb oli, or for a good sofrito in arròs brut, or dirty rice (literally!), named for the cloudy appearance of its broth.

Prohias often points out. The same coastline yields anchovies from l’Escala, sea urchins in winter, and Palamós prawns, with a “mild and slightly sweet flavour”, according to Quim Casellas, chef at Casamar. Yet the region’s larder extends inland, with rice from Pals, the vineyards of Vall-llobrega and Calonge, and vegetables from Llofriu. Sea and mountains define a cuisine that respects produce and tradition. The Modernist poet Joan Maragall turned the origins of the Empordà into a myth: a shepherd from the mountains and a mermaid from the sea draw closer until they meet in the bell mig del pla (the middle of the plain), just like its cuisine.

Here, the terrain means that vines must be grown on terraces that defy gravity, with slopes that can exceed 45 per cent, and viticulture becomes a labour-intensive endeavour that remains largely manual and borders on the heroic. But “that difficulty” means that the grapes (primarily the Mencía variety for reds and Godello for whites) possess “very distinctive characteristics. Yields are lower, but the ripeness and quality are superior to those of other areas”, explains Iván Gómez, managing director of the Regina Viarum winery. Vineyards, canyons, rivers and even monasteries make up an extraordinary landscape which has now become, as Gómez explains, “a destination where viticulture, gastronomy and tourism come together”. Calvero: a contemporary take on Madrid’s culinary scene

Right in the heart of Madrid, Calvero offers cuisine where the ingredients take centre stage. Located at Gran Madrid | Casino Colón, the restaurant reinterprets the flavours of the capital through a contemporary lens. When the produce is good, it doesn’t need much else. That’s why Calvero’s menu evolves with the market, focusing on seasonal ingredients selected for their quality and prepared using meticulous techniques that respect their flavours and textures as much as possible. Behind this philosophy is chef Juanjo López, the driving force behind La Tasquita de Enfrente. of the Vega de Aranjuez have fed Madrid. As early as the reign of Philip II, they cultivated crops brought from the New World here for the first time, including tomatoes, peppers, and potatoes. Strawberry runners arrived at the Royal Site of Aranjuez in the 16th century from Versailles itself. And in the 18th century, asparagus came from the Netherlands. These crops, along with artichokes, were considered ‘fine’ during the reign of Charles IV, in contrast to other ‘ordinary vegetables’ – leeks, onions, pumpkins… – and helped give distinction to this fertile plain; today they remain emblems of its market gardens. Stories from a bygone era that live on today in Madrid’s contemporary haute cuisine. Spain can also be discovered between two slices of bread. The Paquito is a sandwich made with suckling lamb, lamb or Spanish kid goat, which is taking the country’s bars and kitchens by storm. Its great success lies in the fact that there is no single recipe; instead, every chef creates their own, using different types of bread, cuts of meat, sauces and ingredients. The lamb may be roasted, stewed, shredded, or sliced. That’s why trying a Paquito in Madrid can be a completely different experience from enjoying one in Barcelona, Valencia, Zaragoza or any other city. The initiative was launched in 2019, spearheaded by INTEROVIC, to give a product deeply rooted in Spanish culinary culture a more informal, contemporary and urban expression. Nord preserves one of the most distinctive agricultural landscapes in the Levante region: a market garden where the xufa (chufa) plays a leading role, to the extent that it is the main area in Europe where this tuber is grown. Its sandy soils, enriched with beach sand, and a warm, humid climate provide the ideal conditions. And it gave rise to one of Valencia’s most recognisable drinks: orxata (horchata). But the identity of this region does not end there. The garrofó and ferradura beans, essential ingredients in Valencian paella, are two of the local bean varieties grown here, alongside other named varieties, such as bajoqueta, roget and bajoca. In 2026, Rialto’s Moscovitas – delicate biscuits with Marcona almonds and chocolate – will celebrate their centenary. And just two years ago marked the centenary of the carbayón, a puff pastry filled with almonds and egg yolk, created by Camilo de Blas confectionery; its name derives from carbayu, the oak tree that gave its name to the term for the people of Oviedo.

ENG The Colombian artist was treated to a surprise inspired by her hometown, Barranquilla, upon her arrival in the capital, ahead of the first of the twelve concerts she is due to give in the city at Macondo Park. Shakira arrived in Madrid on 14 September to the rhythm of 130 dancers from her hometown of Barranquilla. This marked the start of a historic series of twelve concerts in the Spanish capital, held at a venue transformed for the occasion into a magical Macondo Park. The internationally renowned Colombian artist, whose residency is sponsored by Air Europa, was pleasantly surprised by this welcome to the sounds and rhythms of her homeland, thus kicking off one of the biggest musical events of the year, not only in Spain but also in Europe. Shakira was met at Madrid-Barajas Airport by a large group of national and international journalists, as well as officials from Barranquilla, fans and 44 | EUROPA

representatives from Globalia and Air Europa. Visibly moved, she expressed her gratitude for the warm welcome as she returned to Spain to perform once again, eight years after her last concert, as part of her El Dorado World Tour. The figures for this residency, organised by Live Nation Spain, have reached unprecedented levels. In addition to being the largest consecutive concert run ever staged in Spain, it managed to sell out all tickets in record time for a venue with a capacity for over 50,000 people. The venue, featuring various art and cultural spaces that round off a unique sensory experience, pays homage in its name to the novel One Hundred Years of Solitude, by the Colombian writer Gabriel García Márquez. Shakira’s presence in Madrid also serves as a prelude to the launch of Air Europa’s new route, which will connect Madrid and Barranquilla with three flights a week from 18 December.

Novedades para los pasajeros de largo radio Updates for long-haul passengers Air Europa is enhancing the in-flight experience with new amenities in Business and Economy Class, as well as introducing a complimentary pet kit.

The long-haul travel experience takes another step forward with Air Europa ON, the excellence and quality programme through which the airline continues to redefine its service offering. The airline has introduced new features for Business and Economy passengers, committing to a more refined, personalised and distinctive experience, designed to make every flight an even more welcoming and memorable journey. Business Class passengers are already enjoying a revamped amenity kit designed with sustainability in mind, the main addition being a pair of slippers to make the hours spent flying even more comfortable. This initiative, which is proving very popular with customers and is helping to transform the in-flight experience, bringing it closer to the comfort of a hotel room, joins other improvements introduced in recent months. These include the introduction of high-speed satellite Wi-Fi, a complete overhaul of the onboard drinks menu and the introduction of new, state-of-the-art noise-cancelling headphones. Meanwhile, since this summer, Economy Class passengers have been able to purchase the new Economy Comfort Set for five euros, which includes everything needed to rest more comfortably during their journey: an eye mask, a toothbrush, comfortable, in-flight socks and earplugs. This is in addition to an upgrade and enhancement of the in-flight meal and snack service, as well as the provision of free headphones for all passengers. Furthermore, the airline has introduced a free pet-friendly kit for long-haul passengers travelling with their pets, which includes a bag dispenser and a water bowl to make their journey easier. Since its launch in April, Air Europa ON has driven improvements aimed at optimising the customer experience, covering ground operations, in-flight services and maintenance.

108’ +12

Director: Craig Gillespie Reparto // Cast: Milly Alcock, David Corenswet, Eve Ridley Año // Year: 2026.

Based on the screenplay by Ana Nogueira, the film explores a lesser-known chapter in the character’s life: her traumatic past before becoming protector of Earth. Far from the shadow of Superman, the story follows a Kara marked by loss and rootlessness. The film blends space science fiction with a galactic western.

Musical films have been an extraordinary showcase for promoting Spanish culture, both at home and abroad. Although many productions were created with a clear commercial aim and simple plots, the popular films featuring folk singers turned the spirit of the ‘copla’ into a genuine phenomenon. Drawing inspiration from the costumbrista world portrayed by writers such as the Quintero brothers, production companies capitalised on the enormous box-office appeal of well-known singing stars. Unforgettable films such as Estrella de Sierra Morena starring Lola Flores, Esa voz es una mina starring Antonio Molina and El emigrante starring Juanito Valderrama won over the general public thanks to the charisma of their stars.
