Closing The Year In Style ‫نختتم العام بأناقة‬ Without a doubt, this is the best time of the year in the Gulf. The days are balmy and the evenings festive. It’s the perfect season to take a road trip and, in our cover story, we do just that, heading to Portugal for the official first test drive of the new Ferrari Amalfi. This latest addition to the prancing horse stable is designed for those who want to enjoy sporty driving without sacrificing comfort and style and we expect it to prove popular with the region’s Ferraristas. It’s also a wonderful time to be on the water and we highlight new offerings from Amels and Ferretti, all of which have debuted in the last few months. Step aboard with us and take a look around. We have regional connections in the Horology pages with a celebration of a UAE icon and a new timepiece featuring Arabic numerals. And we go international in the style pages, with classic English tailoring from dunhill and Italian influences at Prada. In hospitality, we visit one of the newest openings in Qatar, the Swissôtel Corniche Park Towers Doha, where vitality and sustainability go hand in hand, and head to Anantara Palais Hansen Vienna, for a taste of wintry luxury in the Austrian capital. Amels 60 MEMORIES The 60-metre Amels 60 MEMORIES is a spectacular superyacht, the seventh in the acclaimed Amels 60 Limited Editions series, from a design which has already established itself as one of the most successful in its category. MEMORIES benefits from years of insight into owner preferences and charter dynamics. With room for up to 12 guests in six staterooms and a crew of 12 plus a captain, she is perfectly suited for both private enjoyment and commercial operation. The owner, working closely with Damen Yachting and build supervisors Moran Yacht & Ship, customised MEMORIES to their personal taste with outstanding features such as the folding owner’s suite balcony on the main deck and a spiral staircase with an illuminated handrail, providing a dramatic central focal point. Award-winning exterior design by Espen Øino is defined by long, elegant lines and a modern profile. Expansive outdoor areas include a 162sq/m sun deck, a large fold-down swim platform and a foredeck with touch-and-go Helideck. The Owner introduced custom features, including a redesigned sun deck with a large sofa and a ceiling-mounted television replacing the traditional dining area. The bridge deck aft has been transformed into an on-deck cinema, offering an immersive outdoor entertainment experience. For the interiors, MEMORIES marks the first collaboration between Amels and Harrison Eidsgaard, delivering a distinctive, contemporary interior with a refined take on beach house luxury. The London-based studio created a warm, welcoming atmosphere with natural materials, wide oak planking, subtle bronze accents and fluted detailing throughout. Ben Harrison, Director of Harrison Eidsgaard, explains: “This interior is undeniably contemporary, a home from home with a refined, sophisticated take on beach house luxury. We’ve concentrated on the detail and how it is executed, and that’s where you really see the difference between top brands like Amels and other shipyards. There are little touches of stainless steel, antique bronze, fluted details and lots of natural oak. Wood in wide stave floor planking and the ceiling provides a tactile, warm ambience.” For guests, MEMORIES delivers a charter experience defined by generous lounges and dining areas, wellness spaces and direct access to the sea through the Beach Club and expansive swim platform. The yacht’s overall length is 60 metres while she measures 10.4m at the beam with a gross tonnage of 853GT. The vessel has a maximum speed of 15.5 knots and a range of 4,500nm at 13 knots. MEMORIES carries two luxury tenders including an 8.9-metre Ribeye Beachlander. he new 24.47m flybridge model is the result of a stylistic evolution process involving architect Filippo Salvetti for the exteriors and the IdealItalia team for the interior design. The most innovative features include large windows offering uninterrupted views of the surroundings, plus an optional sliding door on the starboard side of the salon; perfectly separated spaces ensure total privacy and exterior areas are optimised. On the exterior, the vessel combines a modern aesthetic with the brand’s signature identity. One of the characteristic features is the gradual slope of the flybridge’s lines down towards the stern, breaking with the tradition that they are parallel to the hull. The result is a perfect balance between timeless elegance, dynamism and impressive volume. IdealItalia focused its interior efforts on layoutrelated choices and architectural decisions with the aim of enhancing the elegance of the interiors, at the same time as ensuring functionality and intelligent design. The design features premium materials in soft neutrals with mirrored surfaces and luxurious finishing. MAIN DECK On the main deck, the seven-square-metre beach area in the stern features a fold-out sofa in the transom that transforms the space into a sea-view terrace. The 15sq/m cockpit has a spectacular glass parapet created to extend the view outside and towards the beach club, providing access to the crew area from the port side walkway. The salon is bathed in light thanks to extensive glazing, one of the signature features of the boat, which offers breathtaking, uninterrupted views. The generous interior volumes are further enhanced by the exquisite arrangement of the furniture to maximise liveability and by the two-metre ceiling height. The two interior decor moods available are Classic – which taps into earthy elements – and Contemporary, featuring glowing woods and fabrics in fresh hues inspired by the colours of the sea. The three different living area layouts available meet different needs in terms of style and functions. The standard version has a large custom-made sofa on the port side with an optional Molteni coffee table, combined with a free-standing TV placed on the starboard side cabinet. In addition to the living area, the dining area in the standard version contains a Minotti smoked glass dining table suitable for eight diners, with chairs designed by Alf DaFré. The fully appointed galley has its own separate space, with direct access to this area through a sliding section of the wall. On the starboard side, opposite the dining area, a sliding glass door is available on request, looking outwards and amplifying the dialogue with the water. ollowing a very welcome invitation from Ferrari Middle East and Euro Motors Bahrain, we arrived in Lisbon from the Gulf and were swiftly transferred south to the Pine Cliffs Resort in Albufeira — a setting that felt entirely appropriate for the unveiling of Ferrari’s latest Grand Tourer. After a welcoming drink overlooking the Atlantic, the Hadag team spent the evening listening intently to Ferrari designers and engineers, gaining insight into the thinking behind the new Amalfi before watching footage that introduced the car in detail. It was a refined, unhurried start — one that allowed the philosophy behind the model to unfold naturally. The following morning, we regrouped early and headed out on a test-drive route designed specifically for the Amalfi. The course traced the coastline around Albufeira before climbing into the surrounding mountains, combining flowing roads, elevation changes and wideopen views. As Ferrari’s new front-mid-engine V8 2+ coupé — and the model created to replace the Roma — the Amalfi arrives with a clear mandate: to evolve the Grand Touring concept for a modern audience. From the first kilometres, it was evident that this Ferrari had been shaped with balance, composure and everyday usability firmly in mind. A MODERN SCULPTURE The Ferrari Amalfi presents itself with a composed, contemporary elegance. Finished in its launch colour, Verde Costiera — a light teal inspired by the reflections of the Amalfi Coast — the sculpted bodywork subtly shifts character as light moves across its surfaces. It is expressive without excess, refined without restraint. The design follows a fluid, minimalist philosophy, with clean surfaces and sculpted volumes forming a sleek, monolithic speedform. At the front, the absence of a traditional grille is immediately noticeable. A floating body-coloured wing sits above a dark recessed band integrating sensors and lighting, while a long, sculpted bonnet stretches forward, hinting at the twin-turbo V8 beneath. The lower splitter adds visual width and a sense of purpose. Along the sides, a wedge-shaped theme and lighting units integrated into technical cuts create a sense of motion even at rest. At the rear, precise graphic cuts conceal the taillights, referencing Ferrari heritage through a modern lens. A wide diffuser communicates aerodynamic intent, while the integrated active rear spoiler remains discreetly hidden until required. The overall effect is cohesive and assured — a design confident in its clarity. MINIMALIST MASTERY Inside, the Amalfi adopts a dual-cockpit layout that envelops both driver and passenger in two visually connected cells. The new steering wheel returns to physical buttons, improving ergonomics and ease of recognition while driving. The iconic aluminium start button has also returned, positioned on the left. Three displays anchor the digital experience. A 15.6-inch digital instrument cluster presents driving and vehicle dynamics information with clarity, while the 10.25-inch central touchscreen controls multimedia, navigation, climate, seat functions and vehicle settings. movements, nearly 30 calibres gathered over decades, is the source of this mechanism. Each was safeguarded for the day it could return to life; La Ravenale fulfils that longheld intention. Restoration required intuition, patience and an uncompromising respect for authenticity. With no spare components available, every original part was preserved. Jewels frictionset into the bridges and mainplate, remained in place during engraving; anglage and découvertes were finished with traditional wooden-peg tools; historical calibrationmarks were re-established by hand, renewing a dialogue that began a century ago. The repeater mechanism remains discreetly integrated. Nothing on the dial reveals its presence; the slide activating the chiming sequence blends seamlessly into the case architecture. The white-gold case reveals a double back adorned with opal and jade marquetry. The dial displays a deep blue achieved through a calibrated PVD treatment, depositing an ultra-thin layer of colour in a vacuum to create exceptional chromatic depth, a contemporary gesture within an object shaped by ancestral craft. Master artisans were used to translate Parmigiani Fleurier’s ideals into form. Their work spans engraved bridges, sculpted gold, stone marquetry and a hand-forged chain requiring nearly one hundred hours to complete by Switzerland’s last master chainmaker. s longstanding retail collaborators, the companies chose to craft the LM Perpetual EVO, which is limited to just seven pieces, and the LM Perpetual Baguette Diamonds, of which only five have been produced. Both feature signature blue highlights and are powered by MB&F’s awardwinning Perpetual Calendar calibre. This collaboration not only recognises the Seddiqi family’s role in horology but also celebrates the deep friendship between the two partners. First released in 2015, the GPHG awardwinning Legacy Machine (LM) Perpetual has become a strong favourite amongst MB&F aficionados. The 75th Anniversary edition is housed in a grade five titanium case, engraved with the anniversary theme. It stands out thanks to the same striking blue colour first featured on the LM101 MB&F x H. Moser especially created for Ahmed Seddiqi in 2020. The LM Perpetual Baguette Diamonds inaugurates a first for the Legacy Machine Perpetual series: a refined bezel set with 48 baguette-cut diamonds. The case is crafted in stainless steel, engraved with the 75th Anniversary message. Like its EVO counterpart, it also features the same signature blue colour but applied on the dial plate, with contrasting black sub-dials displaying the time, day of the week, month and date. Created by Northern Irish watchmaker Stephen McDonnell and premiered in 2015, the LM Perpetual calibre was – and still is – one of the

most innovative perpetual calendar systems to exist in modern watchmaking. Legacy Machine Perpetual uses a ‘mechanical processor’ consisting of a series of superimposed disks. It sets the default number of days in the month at 28, then adds the extra days as required by each individual month – thus every month has the right number of days and there is no skipping over redundant days, which poses a risk of damage. Using a planetary cam, the mechanical processor also enables quick-setting of the year so that it displays correctly in the four-year leap year cycle. Legacy Machine Perpetual takes advantage of its fully integrated movement to place the perpetual calendar mechanism on top of the movement main plate so it can be appreciated from above. And, to ensure maximum visibility, it uses skeletonised subdials (except for the time indication) that appear to float above the complication with no apparent support from below.

CLASSIC ENGLISH TAILORING .‫فن التفصيل اإلنجليزي العريق‬ dunhill’s latest collection under Creative Director Simon Holloway, continues the core themes of English classicism and casual elegance.

The blade-cut silhouette, with its natural sporting shoulder, along with the Duke’s stylistic panache, threads throughout. The collection features varying shades of noble camel hair, topcoats, from rare pale blonde to classic gold and ginger in both single- and double-faced versions, are crafted in the House Bourdon-cut or as tailored balmacaans paired with coordinating blazers and wide-wale corduroys. While peacoats and bridge coats are crafted in deep navy Melton and set with burnished brass buttons. Acknowledging the importance of informal formality, refined coats, blazers and outerwear are layered with substantial sweaters knitted in heritage stitches, subtly patterned shirts and haberdashery. Core to the dunhill proposition, perfect tailoring for town is cut in formal chalk striped suits with immaculate double-face topcoats in charcoal grey and navy blue. Continually inspired by the dunhill archive, car coats are cut from charcoal grey suede shearling and fine wool whipcord, a further iteration is seen in an elevated double-faced ebony French lambskin, with a cashmere tartan bonded lining.

As is so true to the house, and to the eclecticism of British style, more expressive looks such as tattersall blazers worn with citrine cords and a clashing heather blue shirt imply a sense of playful hedonism. Donegal tweeds artfully clash against velvet for day and layering in both textures and garments is key. The collection’s high point comes in Tyrol-inspired pieces. A cavalry twill driving jacket with carved horn buttons, a gentlemanly Loden coat modernised by its double-face construction and a striking alpine green blazer worn with black cotton cashmere selvedge denim jeans. For evenings, smoking jackets, featuring tie-print motifs including the house paisley, come in velvet, ancient madder silk or wool twill. Cocktail graduates into black-tie as the two tenets of British taste are on full display. The opulence of tartan suits with matching coats are the height of English eccentricity. While stoic lounge suits in black velvet and perfectly plain midnight blue, midnight green and all-black barathea embody dunhill’s 131-years of tailoring finesse. New evolutions of existing footwear families feature throughout the season, adding colour, tone and texture to the evergrowing proposal.

Throughout the collection, each piece speaks of intention to buck the latest trends, a yearning for dressing that’s an expression of personal style rather than bowing to socialmedia-influenced looks and feelings. A movement Prada refers to as a deep exploration of human nature and emotional impulse.

find exploring a new hotel super exciting! From brand-new rooms and facilities to avant-garde dining spots and innovative spa treatments. I have yet to meet someone who wouldn't be delighted at the opportunity. I’m a lucky girl who got to experience one of the newest properties in Qatar. As the name suggests, the new address is located by the Doha Corniche, a seven-kilometre-long waterfront promenade. A detail that I enjoyed in the mornings for a casual stroll and in the evenings for a run. The nice weather allowed me, alongside a big crowd of locals and tourists, to enjoy this fantastic part of Doha. I absolutely loved the vibes, the illuminated boats offering short trips around the coast and the incredible art pieces along the path. The hotel's honeycomb-inspired façade adds to the West Bay skyline, standing out for its stunning architectural design – I witnessed many people snapping photos in front of it, definitely a building that catches the eye. As soon as I stepped into the lobby, I was welcomed by Sandeepani, the Guest Relations Manager, and a colourful welcome drink. While the exterior focusses on the bees' sense of community and purpose, the interior reflects a local touch with abstract green mosaics on the walls that represent Qatar's national tree, the Sidr, a symbol of strength, offering healing qualities. After some time appreciating the installation and the beauty of the space, I checked in smoothly and was in my Vitality Room in no time.

Rest and Recreation The hotel features 342 contemporary guest rooms and suites across 38 floors, along with 121 branded residences. My Vitality Room was on the 10th floor and the view of the corniche was beyond spectacular, especially the sunrises. It had the most comfortable bed, automatic curtains, a living area with a sofa and a desk for those wanting to work with a view. However, the ultimate detail in this room was the special fitness wall, accompanied by a screen that lets you select the exercise sequence you would like to follow – absolutely brilliant! For those who enjoy keeping physically active, I can't recommend this room enough. I am not an athlete, but, as mentioned earlier, I do like running and try to get out at least a few times a week. With the corniche just outside the hotel, I couldn't resist and, after my run, I would head back to my room and enjoy some stretching or core programmes to complement my cardio. I also enjoyed working while sitting on the stability ball, which was available in my unique room. The bathroom was filled with all the necessary amenities. For the most delightful shower, the space included dual shower heads – a rain shower and a detachable handheld unit – as well as a bathtub. But the feature that caught my attention was the smart toilet (with automatic lid, opening/closing via sensors). We’re talking about a hotel that’s all about comfort with a touch of tech to pamper its guests. Relaxation Has a Name For a property that has recently opened, having an operating spa is a remarkable asset. Pürovel Spa & Sport offers a wide menu of pampering experiences with Swiss DNA. The wellness space is quite extensive, incorporating 10 treatment rooms (including ladies', men's and unisex areas), a fitness centre, yoga studios and an outdoor infinity pool with views of the sea. The Swissôtel brand carries sustainability at its core. With that in mind, there are tones of green and décor inspired by nature everywhere – I believe this enhances the sense of calm and tranquillity. At Pürovel, each room is named after flowers (ladies' side) and trees (on the men's side) from the Swiss Alps. What I liked most is that there is a changing space with a closet inside the treatment room – a thoughtful touch. I headed there to embrace the Swiss Vitality Bliss, a signature massage that uses cryo balls, cupping and hot stones to help release muscle tension. It started with a classic hand massage to activate my circulation, followed by the cupping therapy. The suction created by the cups helps increase blood flow and loosen tight muscles without the pain of pressure points. The hot stones came after. Heat is recommended for achy muscles, which means they were perfect to follow up on cupping. On my back, before applying the hot stones, the therapist used the cryo balls. Cryo therapy is indicated for sore muscles and is perfect for after intense workouts. While heat promotes relaxation and soothes muscle tension, a cold massage with roller balls improves blood circulation and reduces inflammation. It was a unique experience that delivered deep relaxation. I highly recommend it for anyone with knots or stiffness here and there.

‫أجد استكشاف فندق جديد أم ًرا في غاية اإلثارة! من الغرف والمرافق‬ ‫الحديثة كل ًيا إلى المطاعم العصرية وعالجات السبا المبتكرة‪ .‬لم‬ ‫شخصا ال يسعد بهذه الفرصة‪ .‬أنا فتاة محظوظة ألنني‬ ‫أقابل بعد‬ ‫ً‬ ‫حظيت بتجربة اإلقامة في أحد أحدث الفنادق في قطر‪.‬‬ ‫كما يوحي االسم‪ ،‬يقع الفندق الجديد على كورنيش الدوحة‪،‬‬ ‫وهو ممشى ساحلي يمتد على طول سبعة كيلومترات‪.‬‬ ‫ومساء بممارسة‬ ‫صباحا بنزهة هادئة‪،‬‬ ‫استمتعت بهذا المكان‬ ‫ُ‬ ‫ً‬ ‫ً‬ ‫رياضة الجري‪ .‬سمح لي الطقس الجميل‪ ،‬برفقة حشد كبير من‬ ‫السكان المحليين والسياح‪ ،‬باالستمتاع بهذا الجزء الرائع من‬ ‫الدوحة‪ .‬لقد أعجبتني األجواء كثي ًرا‪ ،‬والقوارب المضاءة التي‬ ‫تقدم رحالت قصيرة حول الساحل‪ ،‬والقطع الفنية المذهلة على‬ ‫طول الممشى‪ .‬تُضفي واجهة الفندق المستوحاة من خلية‬ ‫النحل لمسة جمالية على أفق منطقة الخليج الغربي‪ ،‬وتتميز‬ ‫رأيت العديد من األشخاص‬ ‫بتصميمها المعماري المذهل ‪-‬‬ ‫ُ‬ ‫يلتقطون الصور أمامها‪ ،‬إنه حقً ا مبنى يلفت األنظار‪.‬‬ ‫بمجرد أن وطأت قدماي الردهة‪ ،‬استقبلتني السيدة سانديباني‪،‬‬ ‫مديرة عالقات النزالء‪ ،‬ومشروب ترحيبي زاهي األلوان‪ .‬وبينما يركز‬ ‫التصميم الخارجي على حس مجتمع النحل وهدفه‪ ،‬يعكس‬ ‫التصميم الداخلي لمسة محلية مع فسيفساء خضراء تجريدية‬ ‫على الجدران تمثل شجرة السدر الوطنية في قطر‪ ،‬رمز القوة‬ ‫التي تقدم خصائص عالجية‪ .‬بعد قضاء بعض الوقت في تقدير‬ ‫هذا العمل الفني وجمال المكان‪ ،‬تم تسجيل دخولي بسالسة‬ ‫ووجدت نفسي في غرفتي "فيتاليتي" في وقت قياسي‪.‬‬

‫الراحة واالستجمام‬

Fine Food, Warm Welcome My culinary journey at Swissôtel Corniche Park Towers Doha started with breakfast at The Quarter, with views of the corniche and plenty of sunlight illuminating the room. Starting the day with this vibrant energy, accompanied by fruits, hot coffee and freshly baked flatbreads with cheese and eggs prepared to my request, was the best start for a splendid day. Lunch happened at Azal, a restaurant that took my taste buds on a trip through Persian flavours, with timeless recipes such as saffron rice and Mahiche (lamb shank slow braised with onion, garlic and saffron). We had a marvellous spread showcasing a cuisine I am not very familiar with but eager to know more about. The freshly baked flatbread arrived, and I couldn't resist pairing it with the delicious dips available, such as Borani Bademjan (with an eggplant base) and Mast Khiar (yoghurt with cucumber and mint). But the star dishes were the charcoal-grilled lamb chops and skewers, with juicy, beautifully seasoned meat. My favourite meal was at Embers. A fine-dining eatery that celebrates smoke and heat with food prepared on open flames, from delectable beef cuts to vegetables. It also has a special fridge and counter for one of the restaurant's specialities: aged meat. Slabs of Himalayan salt are also available for special preparations made directly on the salt blocks. The chef prepared a fantastic course for my dining companion and me, including Josper-roasted carrots with a caramelised touch, the most delicious eggplant miso that I have ever tasted, scallops prepared with seaweed hollandaise sauce cooked to perfection and the signature dessert, the Lava Roasted Peach – a touch of fire in every course, absolutely fantastic! And there’s more, L'Assiette provides an allday dining experience with a wide selection of teas and bites. The Node Coffee pairs artisanal pastries with signature blends and Chezelle is a patisserie and chocolate boutique. I’ll Be Back Swissôtel Corniche Park Towers Doha is one of those hotels that, once experienced, you want to keep returning to either for the incredible hospitality of its staff, the state-of-the-art facilities, the impressive rooms or the culinary offering that not only feeds your soul but also offers incredible views of the corniche. I felt my goodbye to the team was more of a see-you-later kind of farewell. ‫الفندق‪ ،‬لم أستطع مقاومة إغراء الجري‪ ،‬فبعد انتهائي منه‪ ،‬كنت‬ ‫أعود إلى غرفتي ألمارس بعض تمارين التمدد أو تمارين تقوية‬ ‫استمتعت بالعمل‬ ‫عضالت الجذع‪ ،‬باإلضافة إلى تمارين الكارديو‪ .‬كما‬ ‫ُ‬ ‫أثناء الجلوس على كرة التوازن المتوفرة في غرفتي المميزة‪.‬‬ ‫كان الحمام مجهزًا بجميع وسائل الراحة الضرورية‪ .‬ولتجربة‬ ‫استحمام ممتعة للغاية‪ ،‬تضمن المكان رؤوس دش مزدوجة – دش‬ ‫مطري ووحدة يدوية قابلة للفصل – باإلضافة إلى حوض استحمام‪.‬‬ ‫لكن الميزة التي لفتت انتباهي كانت المرحاض الذكي (مع غطاء‬ ‫أوتوماتيكي يفتح ويغلق عبر أجهزة استشعار)‪ .‬نحن نتحدث عن‬ ‫فندق يركز على الراحة مع لمسة من التكنولوجيا لتدليل نزالئه‪.‬‬

‫بدأت رحلتي في عالم الطهي في فندق سويس أوتيل كورنيش‬ ‫بارك تاورز الدوحة بوجبة اإلفطار في مطعم "ذا كوارتر"‪ ،‬مع‬ ‫إطالالت على الكورنيش والكثير من ضوء الشمس الذي يضيء‬ ‫الغرفة‪ .‬كان بدء اليوم بهذه الطاقة النابضة بالحياة‪ ،‬برفقة‬ ‫الفواكه والقهوة الساخنة والخبز المسطح الطازج مع الجبن‬ ‫والبيض المحضر حسب طلبي‪ ،‬هو أفضل بداية ليوم رائع‪.‬‬ ‫تناولنا الغداء في مطعم أزال‪ ،‬الذي أخذ براعم تذوقي في‬ ‫رحلة عبر النكهات الفارسية‪ ،‬مع وصفات خالدة مثل أرز الزعفران‬ ‫وماهيتشي (ساق لحم ضأن مطهو ببطء مع البصل والثوم‬ ‫لمه‬ ‫والزعفران)‪ .‬استمتعنا ببوفيه رائع ُيبرز مطبخً ا‬ ‫ُ‬ ‫لست ُم ً‬ ‫كنت أتوق لمعرفة المزيد عنه‪ .‬وصل الخبز‬ ‫تماما‪ ،‬لكنني‬ ‫به‬ ‫ُ‬ ‫ً‬ ‫المسطح الطازج‪ ،‬ولم أستطع مقاومة تناوله مع الصلصات‬ ‫اللذيذة المتوفرة‪ ،‬مثل بوراني بادمجان (بقاعدة من الباذنجان)‬ ‫وماست خيار (زبادي مع خيار ونعناع)‪ .‬لكن األطباق التي كانت‬ ‫النجمة الحقيقية على الطاولة هي شرائح لحم الضأن المشوية‬ ‫على الفحم وأسياخ اللحم‪ ،‬بلحمها الطري والمتبل بشكل رائع‪.‬‬ ‫كانت وجبتي المفضلة في مطعم إمبرز‪ ،‬وهو مطعم فاخر‬ ‫ُحضر أطباقه على نار مكشوفة‪،‬‬ ‫يحتفي بالدخان والحرارة‪ ،‬حيث ت ّ‬ ‫بدءا من قطع اللحم البقري الشهية وصو ًلا إلى الخضراوات‪ .‬كما‬ ‫ً‬ ‫يضم المطعم ثالجة ومنضدة خاصتين بأحد أطباقه المميزة‪:‬‬ ‫أيضا ألواح ملح الهيمااليا لتحضير أطباق‬ ‫اللحوم المعتقة‪ .‬وتتوفر ً‬ ‫رائعا لي ولرفيقي‪،‬‬ ‫خاصة ت ّ‬ ‫أعد الشيف طبقً ا ً‬ ‫ُحضر مباشر ًة عليها‪ّ .‬‬ ‫تضمن جز ًرا مشو ًيا على خشب جوسبر بنكهة الكراميل‪ ،‬وألذّ‬ ‫حضرة‬ ‫باذنجان ميسو تذوقته في حياتي‪ ،‬وصدفيات بحرية ُم ّ‬ ‫بصلصة هولنديز من األعشاب البحرية مطهوة بإتقان‪ ،‬وحلوى‬ ‫الخوخ المشوي على اللهب البركاني المميزة ‪ -‬لمسة من النار‬ ‫في كل طبق‪ ،‬ببساطة رائع!‬ ‫وهناك المزيد‪ ،‬يقدم مطعم "السييت" تجربة طعام طوال اليوم‬ ‫مع تشكيلة واسعة من الشاي والوجبات الخفيفة‪ .‬ويجمع "ذا‬ ‫نود كوفي" بين المعجنات الرائعة ومزيج القهوة المميز‪ ،‬بينما‬ ‫"شيزيل" هو متجر للحلويات والشوكوالتة‪.‬‬

rom the moment we arrived, Vienna revealed its charm with an effortless grace — refined, historic and inviting in a way only great cities can be. That early glimpse of Vienna’s character soon emerged as the rhythm of our entire stay. The city greeted us with an elegance that felt both welcoming and wonderfully grand — wide boulevards, crisp winter air and a sense of history that made every corner feel like the prelude to an opera. Our invitation to experience the newly reimagined Anantara Palais Hansen Vienna Hotel had set expectations high. After all, it is not every day that one checks into a former World’s Fair masterpiece on the iconic Ringstrasse. Originally crafted by Theophil Hansen in the 19th century and reimagined in 2025, this landmark promised grand architecture, cultural artistry and indulgence in equal measure. We were ready for all of it — ideally with an Einspänner, the city’s signature coffee, in hand. A Welcome Etched in Elegance The hotel’s façade rose before us like a perfectly framed painting — stately, symmetrical, and unmistakably Viennese. Inside, the welcome ritual immediately set the tone. The team had a way of making the formal feel familiar; check-in was swift, gracious and filled with those small touches that remind you why five-star hospitality is an art form. Our suite was a blend of modern refinement and historic personality, the kind of space that encouraged both exploration and the irresistible urge to sink into the nearest armchair. Throughout the hotel, Anantara’s in-house design team refurbished 62 guest rooms and 90 suites, across a range of configurations – the largest number of suites in the city – blending historic appeal with contemporary polish. Many feature balconies, 3.5-metre ceilings and oversized windows, while triple-glazing keeps the Ringstrasse bustle out. No sooner had we unpacked than dusk settled over the city, signalling our first appointment: an aperitif at Theo’s Lounge & Bar. Theo’s had already gained a reputation for marrying innovation with Viennese café culture. The mixologists worked with local fortified juices, seasonal produce and even ‘ugly’ herbs — a sustainable philosophy we applauded while pretending we always knew which fermented fruit skins contributed to a cocktail’s profile. As the Ring Boulevard lights appeared outside, the bar shifted from chic café to evening destination, and we happily shifted with it. A guided tour of the property revealed the scale of the transformation. Neo-Renaissance bones, modern luxury and curated design touches came together seamlessly. But the showstopper awaited upstairs: Vienna’s largest Presidential Suite — an impressive 408sq/m that can offer up to four bedrooms — where Executive Chef Dieter Stamminger hosted a private dinner. ‫منذ لحظة وصولنا‪ ،‬كشفت فيينا عن سحرها برقة آسرة‪ ،‬مدينة‬ ‫راقية‪ ،‬عريقة‪ ،‬وجذابة‪ ،‬كما هو حال المدن العظيمة‪ .‬وسرعان ما‬ ‫أصبح ذلك االنطباع األول عن شخصية فيينا هو السمة المميزة‬ ‫بأناقة آسرة‪ ،‬تجمع بين‬ ‫إلقامتنا بأكملها‪ .‬استقبلتنا المدينة‬ ‫ٍ‬ ‫الترحيب والفخامة‪ ،‬بشوارعها الواسعة‪ ،‬وهوائها الشتوي المنعش‪،‬‬ ‫وعبق التاريخ الذي جعل كل زاوية فيها أشبه بمقدمة أوبرا‪.‬‬ ‫المعاد‬ ‫لقد رفعت دعوتنا لتجربة فندق أنانتارا باليه هانسن فيينا ُ‬ ‫تصميمه حدي ًثا سقف توقعاتنا عال ًيا‪ .‬فليس من المعتاد أن ُيقيم‬ ‫جزءا من معرض عالمي على شارع‬ ‫المرء في تحفة معمارية كانت ً‬ ‫رينغشتراس الشهير‪ .‬هذا المعلم التاريخي‪ ،‬الذي صممه ثيوفيل‬ ‫هانسن في القرن التاسع عشر ُ‬ ‫وأعيد تصميمه في عام ‪،٢٠٢٥‬‬ ‫وعدنا بمزيج فريد من الهندسة المعمارية الرائعة والفنون الثقافية‬ ‫الراقية والرفاهية المطلقة‪ .‬كنا على أتم االستعداد لكل ذلك‪،‬‬ ‫وخاصةً مع فنجان من قهوة آينسبينر‪ ،‬القهوة المميزة للمدينة‪.‬‬ ‫ترحيب محفور باألناقة‬ ‫بدت واجهة الفندق أمامنا كلوحة فنية متقنة الصنع‪ ،‬مهيبة‬ ‫رسخت‬ ‫ومتناسقة‪ ،‬وذات طابع فييني أصيل‪ .‬في الداخل‪ّ ،‬‬ ‫طقوس الترحيب األجواء فو ًرا‪ .‬كان لدى فريق العمل قدرة على‬ ‫سريعا‬ ‫جعل الرسميات تبدو مألوفة؛ كان تسجيل الوصول‬ ‫ً‬ ‫ُعد‬ ‫ولطيفً ا‪ ،‬ومليئًا بتلك اللمسات الصغيرة التي تُذكّ رنا لماذا ت ّ‬ ‫الضيافة من فئة الخمس نجوم فنًا بحد ذاته‪.‬‬ ‫فريدا من الرقي العصري والطابع التاريخي‪،‬‬ ‫مزيجا‬ ‫كان جناحنا‬ ‫ً‬ ‫ً‬ ‫ٌ‬ ‫مساحة تُشجع على االستكشاف وتُغري باالسترخاء في أقرب‬ ‫كرسي مريح‪ .‬في أرجاء الفندق‪ ،‬قام فريق التصميم الداخلي في‬ ‫جناحا‪ ،‬بتصاميم متنوعة ‪-‬‬ ‫أنانتارا بتجديد ‪ 62‬غرفة ضيوف و‪90‬‬ ‫ً‬ ‫وهو أكبر عدد من األجنحة في المدينة ‪ -‬ليجمع بين سحر التاريخ‬ ‫ولمسة عصرية أنيقة‪ .‬تتميز العديد من األجنحة بشرفات‪ ،‬وأسقف‬ ‫بارتفاع ‪ 3.5‬متر‪ ،‬ونوافذ كبيرة‪ ،‬بينما يحجب الزجاج الثالثي صخب‬ ‫شارع رينغشتراس‪ .‬وما إن فرغنا من ترتيب أمتعتنا حتى ّ‬ ‫حل‬ ‫الغسق على المدينة‪ُ ،‬معلنًا موعدنا األول‪ :‬تناول َم ْ‬ ‫وب ُم َ‬ ‫ش ّه‬ ‫ش ُر ٌ‬ ‫في"ثيو الونج آند بار"‪.‬‬ ‫اكتسب "ثيو" بالفعل سمعة في الجمع بين االبتكار وثقافة‬ ‫المقاهي الفيينية‪ .‬عمل خبراء الكوكتيل باستخدام عصائر‬ ‫محلية معززة‪ ،‬ومحاصيل موسمية‪ ،‬وحتى أعشاب قد تبدو غريبة‬ ‫للوهلة األولى ‪ -‬فلسفة مستدامة أثنينا عليها بينما كنا نتظاهر‬ ‫خمرة تُساهم في نكهة الكوكتيل‪.‬‬ ‫بمعرفة أي قشور فاكهة ُم ّ‬ ‫تحول المقهى‬ ‫ومع ظهور أضواء شارع رينغ بوليفارد في الخارج‪،‬‬ ‫ّ‬ ‫التحول‪.‬‬ ‫من مقهى أنيق إلى وجهة مسائية‪ ،‬وقد استمتعنا بهذا‬ ‫ّ‬ ‫كشفت جولة إرشادية في الفندق عن حجم التحول‪ .‬فقد‬ ‫امتزجت عناصر العمارة الكالسيكية الحديثة‪ ،‬والفخامة العصرية‪،‬‬ ‫لكن المفاجأة الكبرى‬ ‫بسالسة تامة‪.‬‬ ‫المتقنة‬ ‫ٍ‬ ‫ّ‬ ‫ولمسات التصميم ُ‬ ‫كانت تنتظر في الطابق العلوي‪ :‬أكبر جناح رئاسي في فيينا ‪-‬‬ ‫ويضم ما يصل إلى أربع‬ ‫بمساحة شاسعة تبلغ ‪ 408‬أمتار مربعة‪،‬‬ ‫ٍ‬ ‫ّ‬ ‫غرف نوم ‪ -‬حيث استضاف الشيف التنفيذي ديتر ستامينجر‬ ‫خاصا‪ .‬مزجت األطباق بين األطباق النمساوية والفيينية‬ ‫عشاء‬ ‫ً‬ ‫ً‬ ‫تم تنسيق ّ‬ ‫طبق‬ ‫كل‬ ‫لمسات‬ ‫الكالسيكية مع‬ ‫ٍ‬ ‫ٍ‬ ‫عالمية راقية‪ ،‬حيث ّ‬ ‫ٍ‬ ‫أجواء ت ّ‬ ‫ُطل على مناظر خالبة للمدينة‬ ‫بشكل رائع وتقديمه في‬ ‫ٍ‬ ‫ٍ‬ ‫وفخامة راقية‪.‬‬ ‫ٍ‬ ‫مدينة تستحق التجول‬ ‫رغم أن الفندق كان نجم رحلتنا‪ ،‬إال أن فيينا استحقت بجدارة‬ ‫مكانتها الخاصة في برنامجنا‪ .‬بدأنا صباحنا بنشاط وحيوية‬ ‫مع فطورنا في مطعم براسيري صوفي‪ ،‬ثم انطلقنا في تجربة‬ ‫مميزة تتبعنا فيها خطى ثيوفيل هانسن نفسه‪ .‬من مبنى‬ ‫البرلمان إلى أكاديمية الفنون الجميلة‪ ،‬بدا إرث هانسن المعماري‬ ‫جليًا في كل مكان بمجرد أن عرفنا أين نبحث‪.‬‬ ‫أضفت زيارة متجر "إيه إي كوشرت"‪ ،‬صائغ المجوهرات للبالط‬ ‫اإلمبراطوري‪ ،‬بريقًا خاصًا ليومنا‪ .‬كان ذلك المكان الذي يمتزج فيه‬ ‫التاريخ والحرفية بشكل وثيق لدرجة أنك تتوقع أن ترى أحد أفراد‬ ‫العائلة المالكة يقف في الطابور‪.‬‬ ‫تناولنا الغداء في مطعم شوارز كاميل‪ ،‬الذي يعود تاريخه إلى‬ ‫عام ‪ ،1618‬حيث استمتعنا بمقدمة شهية لتراث فيينا الطهوي‬ ‫قبل أن ننطلق الستكشاف أجواء المدينة االحتفالية‪ .‬وعلى‬ ‫مدار فترة ما بعد الظهر والمساء‪ ،‬تجولنا في ثالثة أسواق لعيد‬ ‫الميالد‪ ،‬بما في ذلك سوق راثاوسبالتز كريستكيندلماركت‪ ،‬وهو‬ ‫أكبر أسواق فيينا‪ ،‬حيث يتميز كل سوق بأجواء فريدة من نوعها‪،‬‬ ‫بدءا من الساحات الكبيرة المضاءة وصو ًلا إلى األفنية الصغيرة‬ ‫ً‬ ‫األكثر حميمية التي تفوح منها رائحة التوابل والمكسرات‬ ‫المحمصة والعنب الساخن‪.‬‬ ‫كان من أبرز اللحظات مشاهدة المشهد األيقوني في ساحة‬ ‫راتهاوسبالتز‪ ،‬حيث ُيطلق قلب أحمر ضخم من برج ويحلق في‬ ‫سماء الشتاء معلقً ا بحبل‪ ،‬مصحو ًبا بموسيقى خاصة‪ ،‬ليضيء‬

Neo-Renaissance bones, modern luxury and curated design touches came together seamlessly. A City Worth Wandering Though the hotel was the star of our journey, Vienna demanded — and deserved — its own space on our itinerary. Breakfast at Brasserie Sophie energised our morning, followed by a Signature Experience tracing the footsteps of Theophil Hansen himself. From Parliament to the Academy of Fine Arts, Hansen’s architectural legacy appeared everywhere once we knew where to look. A stop at A.E. Köchert, jeweller to the Imperial Court, added a sparkle to our day. It was the kind of place where history and craftsmanship sit so closely together that you half expect a member of the royal family to step into the queue. Lunch at Schwarzes Kameel, dating back to 1618, offered a delicious introduction to Vienna’s culinary heritage before we set out to explore the city’s festive side. Over the course of the afternoon and evening, we wandered through three Christmas markets, including Rathausplatz Christkindlmarkt, Vienna’s largest, each offering its own atmosphere — from grand, illuminated squares to more intimate courtyards filled with the scent of spice, roasted nuts and mulled grape. A definite highlight was witnessing the now iconic scene in Rathausplatz in which a big red heart is released from a tower and floats across the winter sky by cable, with its own musical accompaniment, to light up a tree decorated with glowing, illuminated hearts. The giant Christmas tree in the square and nearby ice rink are fabulous but it was the heart display that truly stole the show, a magical experience that we won’t soon forget. Against a backdrop of winter and festive lights, it became clear that Vienna wears the season exceptionally well. The following morning brought another highlight: the Spanish Riding School. Watching Lipizzaner stallions train with such precision and calm felt like witnessing a centuries-old dance — graceful, disciplined, and entirely enchanting. The Heart of Our Stay As much as Vienna captivated us, the Anantara Palais Hansen Vienna Hotel continually drew us back with its effortless charm. Breakfasts were an indulgent ritual. The Signature Buffet showcased Austrian specialities alongside mezze, and the à la carte dishes from Chef Stamminger ensured mornings began with flavour and finesse. Sparkling grape or a classic Viennese coffee? We tried both — for research purposes, of course. Dinner on our second evening elevated our appreciation even further. EDVARD, the hotel’s Michelin-starred restaurant led by Head Chef Paul Gamauf, delivered a tasting journey rooted in sustainability and creativity. By day it felt bright and welcoming; by night, intimate — sober wood finishes and aged mirrors offset by playful floral wallpaper and rich velvet. The seasonal tasting followed the natural cycle of the year, spotlighting local and regional ingredients that were cooked, pickled, preserved and even processed into low-waste beverages. Sommelier Klaus Lechner — from unusual grapes to thoughtfully crafted juices — made each course memorable. It was an unmistakably modern expression of Viennese gastronomy. Throughout our stay, service remained impeccable. From the warm guidance offered by the team to the seamless organisation of experiences, everything reflected a commitment to hospitality that was both heartfelt and sophisticated. old flavours and complex use of spices are the essence of Indian cuisine, balancing sweet, salty and sour with a spicy kick. We all know that if this kind of food doesn’t come with some heat, something must be wrong. The country’s diversity is reflected in its food, which varies from region to region. I didn’t grow up eating this type of fare, so every time I embark on an Indian culinary journey, the flavours always surprise me positively – it’s like discovering sensations and combinations that my brain can’t quite relate to – exciting. Gymkhana at Katara Hills Doha, LXR Hotels & Resorts offers a menu that mainly highlights Northern recipes. The restaurant has an impressive vibe, with dark parquet floors and olive-green chairs with gold accents that resemble the elite clubs of India. The walls and ceiling are covered in wood panels in dark brown and green tones, creating an atmosphere of sophistication. The massive crystal chandelier hanging imposingly in the centre of the ceiling is a showstopper that steals the scene. The terrace décor is a bit different, with light tiled floors and beige furniture surrounded by greenery – perfect for the upcoming cooler months. Our feast at Gymkhana started with some appetisers under the Nashta section of the menu. I learned that this word actually means Hadag Magazine

breakfast, so I believe these small bites can also be eaten as the first meal of the day. The Kid Goat Methi Keema was a concoction of minced baby goat meat cooked with fenugreek, which was quite pronounced, creating a distinct flavour. The mix was not precisely a paste, but not as grainy as minced meat usually is; the texture was perfect for spreading on the soft pao (bread) that accompanied it. We were told to add finely chopped onions and a squeeze of lemon for the perfect bite. For my dining companion, this was her favourite dish – comforting yet tasty. For me, the Aloo Chaat was the winner. The main ingredient is potatoes, which at Gymkhana were fried in small cubes and combined with chickpeas. Served with tamarind sauce and sev (deep-fried chickpea flour that adds a crunchiness to the dishes), it was a balanced explosion of sweet, savoury, tangy and spicy flavours. This dish is all about the variety of textures, from crispy to creamy, to play with your taste buds. Seasoned with chaat masala (a spice blend with salty and sour notes), paired with earthy accents from roasted spice seeds and a touch of sweetness from chutneys and garnished with yoghurt and sev – yes, it sounds like everything is happening in this dish (and it is). Still, somehow it works beautifully, and I couldn’t stop going back to it throughout the meal. We also tried the Patiala Fried Chicken and the Kasoori Chicken Tikka, Moong Sprouts & Kasundi Kachumber. Patiala is related to a royal style of cooking that originated in the Punjab region of North India. It’s known for its richness, robust flavours and heavy use of aromatic spices. The fried boneless chicken was marinated in tamarind sauce and coated with coriander and cumin seeds, with a touch of mint, chilli and onions. The meat was tender, with a sharp hint delicately enhanced by a touch of sweetness. Kasoori refers to kasuri methi, which are dried fenugreek leaves that provided a unique, slightly bitter, aromatic flavour to the second chicken dish. Marinated overnight, the chicken is cooked in the tandoor oven, giving the meat a firmer texture. It also had a lemony and saffron accent, and it was the spiciest dish of them all – if you like super heat, this is the pick for you. We then moved to the mains, to my delight (I am a huge fan of curries), we had a lovely selection that included Goan Prawn Curry and Chicken Butter Masala. I have to confess that I love prawns, so this dish had my name on it. Originally from the coastal Indian state of Goa, it is vibrant, spicy and tangy, with a creamy richness from the use of fresh coconut milk. Despite its texture, it felt really light and full of flavour. The classic Chicken Butter Masala was rich, super creamy and sweet with a balanced touch of mild spices and a tang from tomatoes. It was not overwhelmingly hot and the chicken was cooked to perfection, exceptionally soft to the touch of the fork, but still firm enough. A comforting duo that we gobbled down with basmati rice and a variety of naans (plain, cheese and garlic). We also tried the Dal Lasooni, a lentil curry with an intense garlic touch, and Saag Makai, a thick gravy made with spinach and corn, which paired well with the mains. Gymkhana offers delectable dishes, but that’s not all. The drinks are as delicious as the food. We tried the Green Park Swizzle 92

(super refreshing with cucumber, mint and elderflower), Billiard Room Punch (made with jasmine tea, it had an intense strawberry flavour), 4th Rifles (with a prominent pineapple touch enhanced by ginger and cinnamon flavours) and last but not least, the Quinnie Sour (fresh lemon and ginger, tonic and the detail that made all the difference, curry leaves). We ended the meal with two traditional desserts: Gulab Jamun and Falooda. As expected, the Gulab Jamun, fried dough balls, was warm, soft and spongy, soaked in a fragrant sugar syrup infused with cardamom and rose water, delicious! It was the first time I had tried Falooda and the whole concept of the dessert was a bit too wild for me. Made with sweet basil seeds, vermicelli noodles, milk and rose syrup, topped with saffron kulfi (Indian ice cream) and nuts, the mix of textures and intense flavours matches this cuisine, which is all about bold, complex flavours. Gymkhana offers a feast for your palate and an ambience that is cosy and grand at the same time, perfect for a meal with your loved ones. ‫ت ّ‬ ‫المتقن للتوابل جوهر‬ ‫ُشكل النكهات الجريئة واالستخدام ُ‬ ‫المطبخ الهندي‪ ،‬حيث يوازن بين المذاق الحلو والمالح‬ ‫والحامض مع لمسة حارة‪ .‬جميعنا نعلم أنه إذا لم يكن هذا‬ ‫تنوع‬ ‫بد أن هناك خل ًلا ما‪ .‬ينعكس ّ‬ ‫النوع من الطعام حا ًرا‪ ،‬فال ّ‬ ‫الهند في طعامها‪ ،‬الذي يختلف من منطقة إلى أخرى‪ .‬لم أنشأ‬ ‫على تناول هذا النوع من الطعام‪ ،‬لذا في كل مرة أخوض فيها‬ ‫دائما بشكل إيجابي‬ ‫رحلة طهي هندية‪ ،‬تُفاجئني النكهات‬ ‫ً‬ ‫ إنه أشبه باكتشاف أحاسيس وتوليفات يصعب على عقلي‬‫أمر مثير‪.‬‬ ‫استيعابها ‪ٌ -‬‬ ‫يقدم مطعم جيمخانا في كتارا هيلز الدوحة‪ ،‬مجموعة فنادق‬ ‫ومنتجعات ‪ ،LXR‬قائمة طعام تسلط الضوء بشكل أساسي‬ ‫على وصفات شمال الهند‪ .‬يتمتع المطعم بأجواء ُمبهرة‪ ،‬مع‬ ‫أرضيات من خشب الباركيه الداكن وكراسي باللون األخضر‬ ‫الزيتوني بلمسات ذهبية تُحاكي األندية النخبوية في الهند‪.‬‬ ‫تغطي الجدران والسقف ألواح خشبية بدرجات البني الداكن‬ ‫واألخضر‪ ،‬مما يخلق جوًا من الرقي‪ .‬تُعد الثريا الكريستالية‬ ‫الضخمة التي تتدلى بفخامة في وسط السقف تحفة فنية‬ ‫تخطف األبصار‪ .‬يختلف ديكور التراس قلي ً‬ ‫ال‪ ،‬حيث يتميز‬ ‫بأرضيات قرميدية فاتحة وأثاث بيج محاط بالخضرة ‪ -‬مثالي‬ ‫لألشهر الباردة القادمة‪.‬‬ ‫بدأنا وجبتنا في مطعم جيمخانا ببعض المقبالت من قسم‬ ‫علمت أن هذه الكلمة تعني في‬ ‫"ناشتا" في قائمة الطعام‪.‬‬ ‫ُ‬ ‫األصل وجبة اإلفطار‪ ،‬لذا أعتقد أن هذه اللقيمات الصغيرة‬ ‫أيضا كأول وجبة في اليوم‪ .‬كان طبق "كيد جوت‬ ‫تصلح‬ ‫ً‬ ‫ميثي كيما" عبارة عن مزيج من لحم الماعز الصغير المفروم‬ ‫المطبوخ مع الحلبة‪ ،‬والتي كانت نكهتها قوية ومميزة‪ .‬لم‬ ‫تماما‪ ،‬ولكنه لم يكن خشنًا كاللحم‬ ‫يكن المزيج معجونًا‬ ‫ً‬ ‫المفروم عاد ًة؛ كان قوامه مثال ًيا للدهن على خبز الباو الطري‬ ‫ناعما وعصرة‬ ‫الذي ُق ِّدم معه‪ .‬نُصحنا بإضافة البصل المفروم‬ ‫ً‬ ‫ليمون للحصول على لقمة مثالية‪.‬‬ ‫بالنسبة لرفيقتي على المائدة‪ ،‬كان هذا طبقها المفضل – مريح‬ ‫ولذيذ في آن واحد‪ .‬أما بالنسبة لي‪ ،‬فكان طبق "آلو شات" هو‬ ‫الفائز‪ .‬المكون الرئيسي هو البطاطس‪ ،‬والتي ُقليت في جيمخانا‬ ‫على شكل مكعبات صغيرة وجمعت مع الحمص‪ُ .‬قدمت مع‬ ‫صلصة التمر الهندي و"سيف" (دقيق الحمص المقلي الذي‬ ‫يضيف قرمشة لألطباق)‪ ،‬فكانت انفجارًا متوازنًا من النكهات‬ ‫الحلوة والمالحة والحامضة والحارة‪ .‬يدور هذا الطبق حول تنوع‬ ‫القوام‪ ،‬من المقرمش إلى الكريمي‪ ،‬ليلعب ببراعة على براعم‬ ‫التذوق لديك‪ُ .‬متبل بـ "شات ماساال" (مزيج توابل بنكهات مالحة‬ ‫ومقترن بلمسات ترابية من بذور التوابل المحمصة‬ ‫وحامضة)‪ُ ،‬‬ ‫ومزين باللبن الزبادي‬ ‫وقليل من الحالوة من الصلصات الهندية‪ُ ،‬‬ ‫و"سيف" – نعم‪ ،‬يبدو وكأن كل شيء يحدث في هذا الطبق‬ ‫بشكل رائع‪ ،‬ولم أستطع‬ ‫متناغم‬ ‫(وهو كذلك)‪ .‬ومع ذلك‪ ،‬فهو‬ ‫ٌ‬ ‫ٍ‬ ‫التوقف عن تناوله طوال فترة تناول الطعام‪.‬‬ ‫أيضا دجاج باتياال المقلي ودجاج كاسوري تيكا مع براعم‬ ‫ج ّربنا ً‬ ‫مونج وكاسوندي كاتشومبر‪ .‬يرتبط أسلوب باتياال بالطهي‬ ‫الملكي الذي نشأ في منطقة البنجاب بشمال الهند‪ ،‬ويشتهر‬ ‫بغناه ونكهاته القوية واستخدامه المكثف للتوابل العطرية‪.‬‬ ‫تم تتبيل الدجاج المقلي منزوع العظم بصلصة التمر الهندي‬ ‫وتغطيته ببذور الكزبرة والكمون‪ ،‬مع لمسة من النعناع‬ ‫والفلفل الحار والبصل‪ .‬كان اللحم طر ًيا‪ ،‬بنكهة الذعة خفيفة‬ ‫معززة بلمسة من الحالوة‪ .‬أما كاسوري‪ ،‬فيشير إلى كاسوري‬ ‫ميثي‪ ،‬وهي أوراق الحلبة المجففة التي أضفت نكهة عطرية‬ ‫فريدة‪ ،‬ذات مرارة خفيفة‪ ،‬إلى طبق الدجاج الثاني‪ُ .‬ينقع الدجاج‬ ‫قواما‬ ‫طوال الليل‪ ،‬ثم ُيطهى في فرن التندور‪ ،‬مما يمنح اللحم‬ ‫ً‬ ‫ً‬ ‫تماسكا‪ .‬كما تميز بنكهة الليمون والزعفران‪ ،‬وكان الطبق‬ ‫أكثر‬ ‫جميعا ‪ -‬إذا كنت من محبي الطعام الحار‬ ‫األكثر حرارة بينها‬ ‫ً‬ ‫جدا‪ ،‬فهذا هو خيارك األمثل‪.‬‬ ‫ً‬ ‫ثم انتقلنا إلى األطباق الرئيسية‪ ،‬ولسعادتي الغامرة (أنا من‬ ‫كبار محبي الكاري)‪ ،‬كان لدينا تشكيلة رائعة شملت "كاري‬ ‫الروبيان الجواني" و"تشيكن بتر ماساال"‪ .‬يجب أن أعترف أنني‬ ‫أعشق الروبيان‪ ،‬لذا كان هذا الطبق كُ تب باسمي‪ .‬ينحدر هذا‬ ‫الطبق في األصل من والية غوا الساحلية الهندية‪ ،‬وهو نابض‬ ‫بالحياة‪ ،‬حار وحامض‪ ،‬مع قوام كريمي غني من استخدام حليب‬ ‫جوز الهند الطازج‪ .‬على الرغم من قوامه‪ ،‬إال أنه بدا خفيفًا جدًا‬ ‫ومليئًا بالنكهة‪ .‬أما طبق "تشيكن بتر ماساال" الكالسيكي‬ ‫فكان غنيًا‪ ،‬كريميًا للغاية وحلوًا مع لمسة متوازنة من التوابل‬ ‫طاغ‪،‬‬ ‫الخفيفة وحموضة من الطماطم‪ .‬لم يكن حارًا بشكل‬ ‫ٍ‬ ‫ُ‬ ‫وطهي الدجاج بإتقان‪ ،‬ليصبح ناعمًا بشكل استثنائي عند‬ ‫لمسه بالشوكة‪ ،‬ولكنه ال يزال متماسكًا بما يكفي‪ .‬ثنائي مريح‬ ‫التهمناه مع أرز البسمتي وتشكيلة من خبز النان (العادي‬ ‫والجبنة والثوم)‪ .‬جربنا أيضًا "دال لَسوني"‪ ،‬وهو كاري العدس‬ ‫بلمسة ثوم مكثفة‪ ،‬و"ساج ماكاي"‪ ،‬وهو مرق سميك مصنوع من‬ ‫السبانخ والذرة‪ ،‬وقد تماشى بشكل رائع مع األطباق الرئيسية‪.‬‬ ‫يقدم جيمخانا أطباقًا شهية‪ ،‬ولكن هذا ليس كل شيء‪.‬‬ ‫المشروبات لذيذة بقدر الطعام‪ .‬جربنا "جرين بارك سويزل"‬ ‫(منعش للغاية بالخيار والنعناع وزهر البيلسان)‪ ،‬و"بليارد‬ ‫روم بانش" (المصنوع من شاي الياسمين‪ ،‬والذي تميز‬ ‫بنكهة فراولة مكثفة)‪ ،‬و"فورث رايفلز" (بلمسة أناناس‬ ‫بارزة معززة بنكهات الزنجبيل والقرفة)‪ ،‬وأخيرًا وليس آخرًا‪،‬‬ ‫"كويني ساور" (ليمون طازج وزنجبيل‪ ،‬تونيك‪ ،‬والتفصيل‬ ‫الذي أحدث الفارق‪ ،‬أوراق الكاري)‪.‬‬ ‫‪93‬‬

he Ritz-Carlton, Bahrain is a well-known for its beautiful beach and pool area, good vibes and delectable dining experiences. With the weather reaching its prime in this part of the world, the property has added a new, charming spot to the long list of eateries on offer: La Terrace. Located beyond the revolving door that leads to the pool area, I was surprised by how cool the place looks. It has its own character with a menu that pleases all palates. The décor is edgy, with grey floors, massive black umbrellas and black-and-white chairs with turquoise cushions. My party and I were there during sunset, and it was an enjoyable experience that I haven’t felt in a while. Maybe it was the nice weather, the DJ tunes, good company, a new menu to explore or the sound of water splashing in the pool a few metres away, but it just felt right, as if I had unplugged from the urges of the day and just embraced a feeling of relaxation. For me, an aspect that makes good food even better is having knowledgeable, friendly staff. Abhishek assisted us throughout our dining journey with patience and attention to our many requests. He also helped us pick items from the expertly crafted menu. The selection is an ode to classic French dishes with a local and Mediterranean twist, perfect to accommodate all diets and preferences. We placed our orders and, in no time, the dishes started arriving at our table. The Niçoise Salad, a classic recipe originating in the coastal city of Nice, France, is traditionally made with tomatoes, hard-boiled eggs and tuna. At La Terrace, it was also accompanied by green beans, cooked potatoes, green leaves and onions, with all ingredients plated in separate portions. The confit red tuna was the best part, with a tender, flaky texture and luxurious flavour, far moister than typical canned tuna, absolutely delicious. The Spanish Octopus was next, grilled to

perfection and accompanied by rocket salad and cherry tomatoes. This delicacy is one of my dining companion’s favourite seafoods and we were all excited to try it. In my opinion, octopus should be prepared simply to highlight the incredible qualities of this oceanic treat – and that’s precisely what we got. The grilling process added a charred, smoky flavour, revealing a tender, succulent consistency with a slightly sweet, mild aquatic touch that was far from fishy – one of the winners in an evening of strong contenders. Still in the seafood business, we tried the Oysters On Ice, six pieces of the freshest samples I have ever had in my life, and Garlic Prawns. I know, it was a marine feast! The prawns were butter-poached, meaning they were cooked slowly and gently in melted butter at a low temperature. This cooking style prevents food from becoming tough, keeping it moist and juicy. The lemon and parsley added the final touch, giving it a luscious bite. Moving on to mains, we tried a great vegetarian pick: Tagliatelle with Mushroom and Truffle Cream. As expected, the warm dish was as comforting as I wanted it to be – rich, decadent and earthy, with deep umami flavour. The truffle provided a musky and pungent aroma that married beautifully with the mushroom’s meaty notes, enveloped in a silky, creamy sauce – it was luxurious and indulgent, and I kept going back for more. From the Signature Dishes section of the menu, we tried the Truffle Croque Monsieur, which Abhishek insisted on (thankfully) and Steak Frites, which is commonly served in French and Belgian brasseries. We initially didn’t go for this because it’s usually just a fancy grilled cheese. However, La Terrace elevates it to an entirely new level; the bread feels like it was made as a sophisticated puff pastry, generously filled with Emmental cheese, turkey ham, truffle shavings and, last but not least, truffle béchamel sauce. The crispy exterior and rich filling delivered an exuberant bite, with complex flavours that somehow harmonised – perfect for cold nights when all you want is a meal with intense notes. The steak was beautiful: US prime striploin (250g), cooked in herb butter, served with fluffy, salty French fries and salad. Classy venues serving high-quality meat often provide special cutlery to enhance the experience and at La Terrace, we received nice-looking Laguiole French knives. The meat was juicy and succulent with a deeply browned crust – heaven on a plate for a carnivore. On a side note, if you are a caviar enthusiast, there is a Caviar Service on the menu offering Kaspian Caviar served with sour cream, chives, chopped egg white and yolk, shallots, capers, blinis and crispy and boiled potatoes. You can choose from 10g to 125g. To end our meal, we tried two French desserts: Crepe Suzette and Profiteroles. The crepes were flamed in a very theatrical tableside performance by Pastry Chef Rajashekar. A delicate sweet made with thin pancakes folded in quarters, served in a caramelised orange sauce. The dough was super light, with pieces of orange confit and fresh segments. A mouthful of striking flavours that we all loved. The profiteroles had a choux pastry that was crispy on the outside with a slightly moist interior and, to my joy, it was not filled with whipped cream 96

‫ُيعرف فندق ريتز كارلتون البحرين بشاطئه الجميل ومنطقة‬ ‫حمام السباحة الرائعة‪ ،‬وأجوائه المفعمة بالحيوية‪ ،‬وتجاربه‬ ‫المميزة في تناول الطعام‪ .‬ومع بلوغ الطقس ذروته في هذه‬ ‫المنطقة من العالم‪ ،‬أضاف الفندق مكانًا جديدًا ساحرًا إلى قائمة‬ ‫المطاعم الطويلة التي يقدمها‪ :‬ال تيراس‪.‬‬ ‫يقع "ال تراس" خلف الباب الدوار المؤدي إلى منطقة المسبح‪،‬‬ ‫وقد فاجأني المظهر األنيق والعصري للمكان‪ .‬يتمتع المطعم‬ ‫بطابع خاص وقائمة طعام تُرضي جميع األذواق‪ .‬الديكور جريء‬ ‫وكراس باألبيض‬ ‫ومميز‪ ،‬بأرضيات رمادية‪ ،‬ومظالت سوداء ضخمة‪،‬‬ ‫ٍ‬ ‫واألسود مع وسائد باللون الفيروزي الزاهي‪.‬‬ ‫كنت أنا ورفاقي هناك وقت الغروب‪ ،‬وكانت تجربة ممتعة‬ ‫لم أشعر بها منذ فترة‪ .‬ربما كان الطقس الجميل‪ ،‬أو أنغام‬ ‫الدي جي‪ ،‬أو الرفقة الطيبة‪ ،‬أو قائمة الطعام الجديدة التي‬ ‫استكشفناها‪ ،‬أو صوت الماء المتناثر من المسبح على بعد أمتار‬ ‫قليلة‪ ،‬لكن كل شيء بدا مثال ًيا‪ ،‬وكأنني انفصلت عن ضغوط‬ ‫اليوم واحتضنت شعو ًرا عميقً ا باالسترخاء‪.‬‬ ‫في رأيي‪ ،‬ال يكتمل تميز الطعام دون فريق عمل خبير وودود‪.‬‬ ‫لقد كان أبهيشيك مثاالً للخدمة الراقية؛ فقد رافقنا طوال‬ ‫تجربتنا الطعامية‪ُ ،‬مظهرًا صبرًا واهتمامًا دقيقًا بجميع‬ ‫استفساراتنا وطالباتنا‪ .‬كما كان له دور بارز في توجيهنا الختيار‬ ‫المصممة ببراعة‪ .‬تُعد هذه التشكيلة‬ ‫األطباق من قائمة الطعام ُ‬ ‫طعمة‬ ‫بمثابة تحية متقنة للمأكوالت الفرنسية الكالسيكية‪ُ ،‬م ّ‬ ‫بلمسة محلية ومتوسطية ساحرة‪،‬مثالية لتناسب جميع‬ ‫األذواق والتفضيالت الغذائية‪..‬‬ ‫طلبنا طعامنا‪ ،‬وسرعان ما بدأت األطباق بالوصول إلى‬ ‫طاولتنا‪ .‬سلطة نيسواز‪ ،‬وهي وصفة كالسيكية من مدينة‬ ‫ُحضر تقليد ًيا من الطماطم‬ ‫نيس الساحلية في فرنسا‪ ،‬ت ّ‬ ‫والبيض المسلوق والتونة‪ .‬في مطعم ال تيراس‪ُ ،‬ق ّدمت معها‬ ‫أيضا الفاصوليا الخضراء والبطاطا المسلوقة وورقيات خضراء‬ ‫ً‬ ‫والبصل‪ ،‬مع تقديم كل مكون في طبق منفصل‪ .‬كانت التونة‬ ‫الحمراء المطهوة ببطء هي األفضل‪ ،‬بقوامها الطري والمفتت‬ ‫ونكهتها الفاخرة‪ ،‬فهي أكثر نداوة من التونة المعلبة‬ ‫العادية‪ ،‬لذيذة للغاية‪.‬‬ ‫ومقدما‬ ‫بعد ذلك‪ ،‬جاء دور األخطبوط اإلسباني‪ ،‬مشو ًيا بإتقان‬ ‫ً‬ ‫مع سلطة جرجير وطماطم كرزية‪ُ .‬يعد هذا الطبق الشهي من‬ ‫جميعا‬ ‫بين المأكوالت البحرية المفضلة لدى رفيق طعامي‪ ،،‬وكنا‬ ‫ً‬ ‫متشوقين لتجربته‪ .‬في رأيي‪ ،‬يجب تحضير األخطبوط ببساطة‬ ‫إلبراز جودته المذهلة ‪ -‬وهذا ما حصلنا عليه بالفعل‪ .‬أضفت‬ ‫عملية الشواء نكهة مدخنة مميزة‪ ،‬كاشفةً عن قوام طري‬ ‫وعصاري مع لمسة بحرية خفيفة وحلوة قلي ً‬ ‫ال‪ ،‬بعيدة كل البعد‬ ‫عن رائحة السمك ‪ -‬كان هذا الطبق من بين األطباق المميزة في‬ ‫أمسية حافلة باألطباق الرائعة‪.‬‬ ‫في إطار حديثنا عن المأكوالت البحرية‪ ،‬جربنا محار الثلج‪ ،‬ست‬ ‫قطع من أشهى ما تذوقته في حياتي‪ ،‬باإلضافة إلى روبيان‬ ‫بالثوم‪ .‬يا له من وليمة بحرية! كان الروبيان مطهوًا ببطء في‬ ‫الزبدة المذابة على نار هادئة‪ ،‬مما يمنع قساوته ويحافظ على‬ ‫طراوته وعصارته‪ .‬أما الليمون والبقدونس فقد أضفيا لمسة‬ ‫نهائية رائعة‪ ،‬مانحين إياه مذاقًا ال ُيقاوم‪.‬‬ ‫انتقاالً إلى األطباق الرئيسية‪ ،‬جربنا خيارًا نباتيًا رائعًا‪ :‬تالياتيلي‬ ‫مع الفطر وكريمة الكمأة‪ .‬وكما هو متوقع‪ ،‬كان الطبق‬ ‫الدافئ مريحًا وغنيًا كما أردته تمامًا – كثيفًا ومترفًا وترابيًا‪،‬‬ ‫ومسكية‬ ‫بنكهة األومامي العميقة‪ .‬قدمت الكمأة رائحة نفاذة ُ‬ ‫تزاوجت بجمال مع النغمات اللحمية للفطر‪ ،‬مغلفة بصلصة‬ ‫ومبهجًا‪ ،‬ولم أستطع‬ ‫حريرية وكريمية – كان الطبق فاخرًا ُ‬ ‫التوقف عن تناوله‪.‬‬ ‫من قسم األطباق المميزة في القائمة‪ ،‬جربنا طبق ترافل كروك‬ ‫موسيو‪ ،‬الذي أصر أبهيشيك عليه (لحسن الحظ)‪ ،‬وستيك‬ ‫فريتس‪ ،‬الذي ُيقدم عادة في المطاعم الفرنسية والبلجيكية‪.‬‬ ‫في البداية‪ ،‬لم نكن ننوي طلبه ألنه عادة ما يكون مجرد جبنة‬ ‫مشوية فاخرة‪ .‬ومع ذلك‪ ،‬يرتقي "ال تيراس" بهذا الطبق إلى‬ ‫تماما؛ يبدو الخبز وكأنه ُصنع كعجينة مورقة‬ ‫مستوى جديد‬ ‫ً‬ ‫راقية‪ ،‬محشوة بسخاء بجبنة اإليمنتال‪ ،‬ولحم الديك الرومي‬ ‫المقدد‪ ،‬ورقائق الكمأة‪ ،‬وأخي ًرا وليس آخ ًرا‪ ،‬صلصة البشاميل‬ ‫بالكمأة‪ .‬القشرة المقرمشة والحشوة الغنية قدمت قضمة‬ ‫مبهجة‪ ،‬بنكهات معقدة تآلفت بشكل ما – مثالية لليالي‬ ‫الباردة عندما ال ترغب سوى بوجبة ذات نكهات عميقة‪.‬‬ ‫رائعا‪ :‬ش لحم ستريبلوين أمريكي ممتاز (‪250‬‬ ‫كان الستيك‬ ‫ً‬ ‫قدم مع بطاطس مقلية‬ ‫جرامًا)‪ ،‬مطبوخ في زبدة األعشاب‪ُ ،‬‬ ‫وم ّ‬ ‫مالحة وشهية وسلطة‪ .‬غالبًا ما توفر األماكن الراقية التي تقدم‬ ‫لحومًا عالية الجودة أدوات مائدة خاصة لتعزيز التجربة‪ ،‬وفي "ال‬ ‫تراس"‪ ،‬حصلنا على سكاكين الغيول الفرنسية الجميلة‪.‬‬ ‫كان اللحم طر ًيا ولذيذًا مع قشرة بنية عميقة – إنها جنة في‬ ‫طبق لعشاق اللحوم‪.‬‬
