pril sees the beginning of the Holy Month of Ramadan, a time for fasting, reflection and self-growth. It’s also a time for observing the time-honoured traditions that bring people together and, in our cover story (p29), we take a look at some of those traditions from around the Muslim world. We’ve also come up with some

great ideas to make the most of the after-dark hours that, mostly, don’t involve

feasting.

Speaking of feasting, while the usual big Iftar and Ghabga gatherings are off the table due to pandemic restrictions, there are still plenty of options for great smaller get-togethers. We’ve rounded them up (p56) and have also included dining and brunching events that’re happening up to the start of Ramadan (p62).

For the foodies among you, anticipate a touch of the green eye towards our Sara, who got the chance of a cooking class with none other than celebrity chef Wolfgang Puck (p40). And we’ve also introduced a new feature (p46) – Voice From the Kitchen – in which we’ll be chatting to the island’s top chefs each month. April is Chef Yann Bernard Lejard who talks about food as an artform.

The Holy Month will soon be upon us, a time for spiritual awakenings and reflection. Ramadan brings the Islamic world together under an umbrella of self-restraint, contentedness, perseverance, and togetherness.

Though, this year, the world may not be able to celebrate this time in all its spiritual communal glory, we’ve rounded up some wonderful traditions from across the globe that make Ramadan, well, Ramadan.

We’ve also come up with some great ways to get together in the after-dark hours that don’t necessarily involve feasting. And, for those who are new to the region, there are Ramadan dos and don’ts to help you enjoy this special time.

Gergaoon

his is undoubtedly the most joyous Ramadan tradition we’ve come across, full of smiling children, melodic songs, and sweets. Known as Gergaoon in Bahrain, there are other variants throughout the Gulf such as Karkee'aan in Saudi Arabia, Gargee'aan in Kuwait, and Hag Al Leylah in the UAE. Gergaoon is celebrated after the breaking of the fast on the 14th night of Ramadan. It’s a cheerful tradition, half way through the Holy Month, to reward Muslim children for fasting.

Youngsters dress up in their traditional clothes, carry decorated bags and walk around their neighbourhoods singing the Gergaoon song, in hopes of some neighbourly treats. Girls wear rich, colourful, embroidered jalabiyas and gold jewellery, while boys are adorned in traditional Bahraini thobes, jackets, and caps.

Historically, children were given dates, rice and wheat, but these days the gifts are more likely to be sweets and nuts.

“I remember wearing my traditional jalabiya and wanting to always top my look from last year, and sharing candy with my cousins. It’s definitely one of my fondest memories growing up,” Says Noor Jassmi.

Under normal circumstances, Gergaoon celebrations can be found at malls and festivals across the island – arrangements for this year have not yet been announced but there are usually henna applications, puppet shows, face-painting, and traditional stories and it’s once celebrations expats have also taken to heart.

Fanous

amadan is all about starry nights and the crescent moon, and Egypt takes the concept of lighting up the night sky a step further. The country’s people gather together to welcome the Holy Month with colourful fanous – intricate lanterns that symbolise unity and joy – decorating the streets.

There is much ancient folklore about the origins of the lanterns, but a popular tale dates their use to a night during the Fatimid dynasty. It’s said locals gathered to greet the Caliphate Al-Muʿizz li-Dīn Allah as he arrived in Cairo on the first day of Ramadan.

Military officials held candles, sheltered with wooden frames against the wind, to light the dark streets. Over time these wooden creations have been elevated to become a chaotic array of colours, now displayed across the entire country, spreading light during the Holy Month.

“I remember going to the markets with my mum just before Ramadan. The streets would be flooded with lanterns of all colours and sizes and this little trip became our yearly tradition before Ramadan. It’s a way for parents to get their kids excited about Ramadan, and when we were buying things to prepare for the month, buying a fanous was number one priority,” says Nadine Abulnasr, an Egyptian national.

Despite having no direct link to religion, the fanous has become a universal symbol for Ramadan with its intricate designs, and dancing rays of colourful lights.

Chaand Raat

he last night of Ramadan is always cause for celebration and, since this is based on the lunar siting, it makes the actual day of Eid a mystery until the night before, creating excitement and enthusiasm around the Muslim world. Some might say, it brings more excitement than Eid-al-Fitr itself, as the streets of Pakistan, Bangladesh, and India come alive with festivity.

As soon as the moon for Eid is sighted, the women of South Asia rush to the markets for Chaand Raat. Chaand means moon, and raat translates to night, so the name literally means the ‘night of the moon’. After the final Iftar of Ramadan is completed and the moon for the commencement of Eid is sighted, droves of women and girls flock to the local bazaars to celebrate this auspicious night.

Most shopkeepers remain open late into the night and the true fun lies within the old alleys and streets. Some of the most important shops are those selling bangles and henna. Bazaars are adorned with makeshift stalls dripping with bangles of all designs, sizes, and colours. Women gather around to try on various assortments for the next day and you can easily lose your voice amongst the laughter and bargaining that occurs.

The henna stands also attract large queues of women and children alike. Intricate and elaborate designs are created on hands, feet and arms, instilling even more excitement.

Mashaal Gohar, from Lahore, Pakistan, says this is her favourite time of year. “There is so much life and commotion on the streets that it just instils the spirit of the occasion within you. My family and I go every year to this little local alley, that only allows oneway traffic, and we stand on the edges waiting in line for henna.”

Drumming at Dawn

T

he thudding sounds of drumbeats can be heard loud and clear in Ramadan on the streets of Turkey.

Since the days of the Ottoman Empire, those fasting during Ramadan have awoken to the sound of a drum beating early in the morning for Suhoor, and that tradition has been kept alive to this day. Despite technology gracing us with alarm clocks in our phones, more than 2,000 drummers still roam the streets of many areas in Turkey, rousing the community to take Suhoor before commencing their fast.

These drummers dress in traditional Ottoman attire, including a fez and vest adorned with traditional motifs, paying homage to their lineage and culture. They make their rounds with their traditional double-headed drums known as davul, beating in unison, and sometimes chanting a song or poem.

“This drumming tradition was an integral part of our Ramadan experiences back in Turkey,” says Ece Omayma Yigit. “It’s like a communal alarm, that gives us a magical sense of togetherness, knowing that all our neighbours in the community are partaking in the same religious customs as we are.”

To keep the tradition alive, the Turkish government has also implemented a membership card for drummers to instil a sense of tradition in those who play and encourage the younger generation to take part.

Pandusan

leanliness is an indispensable fundamental of faith in Islam, both physically and spiritually. We cleanse our minds and bodies before and during prayer five times a day, and many Muslims around the world take this purification further when practising special occasions. One great example is the people of Indonesia at the beginning of Ramadan.

Padusan (meaning ‘to bathe’ in Javanese dialect) is a deeply embedded purifying tradition in which Indonesian Muslims cleanse themselves just before the Holy Month of Ramadan begins. This ritual is intended to purify the body and soul before starting the fast. Traditionally Indonesian Muslims gather at springs, natural pools, and lakes. Several groups in central and east Java soak their bodies from head to toe, releasing all dirt and toxins to the earth.

The act of pandusan is a combination of tradition and culture, blended to create lasting customs. Springs already hold a profound divine connotation in Javanese culture and, thus, are an integral part of ablution for the Holy Month. The act is said to have come about by a practice spread by the Wali Songo, a group of well-regarded priests who were the first missionaries to transfer Islamic teachings throughout Java. The tradition was always observed one day before Ramadan in the pools at mosques or in the spring wells designated by the palace, but now people may also cleanse themselves in the comfort of their own homes.

Nyekar

he practice of religion in Indonesia is frequently mixed with old traditions, cultivating unique practices and rituals. Such is the pre-Ramadan tradition of nyekar. This word comes from the root word sekar, which means flowers, and the verb nyekar, meaning to spread flower petals (on a burial ground).

This is an act of paying respect to departed family members.

According to early Javanese beliefs, the month of Ramadan marks the start of a new life cycle and the completion of the previous one. Therefore, you must pay your respects to the lives that are no longer with us. People get together to pray at, clean and visit graves, usually a week before Ramadan begins. It is customary to decorate the graves with pleasant smelling flowers and is deemed disrespectful if non-fragrant flowers are used. Although there is no hard rule against them, as we learn from Putri Hapsari. She says: “Some people think non-fragrant ‘wild’ flowers are worthless and using worthless flowers is disrespectful to the dead. However, for those who cannot afford anything else, wildflowers are better than none.”

This small tradition is just another way families gather to pay tribute to their loved ones once a year, it’s a moment of joy when they come together to talk about the departed and offer stories of their lives.

These, and other Ramadan traditions, serve to help Muslims create a sense of community wherever they find themselves throughout the world.

RAMADAN AFTER DARK Check out our save and splurge ideas for making the most of your Ramadan evenings.

Splurge – Not exactly a splurge but there is the opportunity to buy snacks and souvenirs if you go explore Qal’at al-Bahrain, also known as Bahrain Fort. One of the Kingdom’s two Unesco World Heritage sites, the fort and the surrounding areas are lit up at sunset and make for a great hilly stroll. There’s also the fort museum and coffee shop and, sometimes during Ramadan, you can experience the cannon firing there to signal the breaking of the fast.

Tip – Take a snack if you’re breaking your fast on the road.

Tuck In

Stay Fit Save – Join a workout session. With gyms and studios now open, it’s easy to find a healthy alternative to the many Iftars on offer, maybe choose a group dance class and meet new friends while you’re at it. Or take advantage of one of the many outdoor workout sessions that are still available, even though the gyms are open.

Splurge – Hire a personal trainer for the month to make sure you don’t lose sight of your goals and slip into the all-toofamiliar pattern of joining in with the feasting, undoing your day’s fast. Most trainers will offer a monthly rate or you could even just book a few sessions and ask the trainer to give you a programme to follow.

Tip – Whatever your workout, stay hydrated.

Step Out Save – Lace up your trainers, put your best food forward and head out for a walk. It doesn’t have to be anywhere fancy, just get out into the open air and experience the tuneful call to prayer to mark the end of the day’s fast. It’s a great reminder that you’re in the Middle East and those who return to their homelands always recall it with fondness.

Save – Pack a picnic basket and head out into the desert at sunset with family, or the friends in your bubble. There are few more beautiful ways to break your fast or just take in some of the most relaxing scenery on the island. Grab a cold box and pack traditional options such as dates, cold meats and dips and, of course, halwa or kunefe. Add some simple, quiet music. Don’t forget the Vimto. And make sure to take your rubbish home with you.

Splurge – Book a villa, perhaps at Al Areen, The Ritz-Carlton, Bahrain, or Reef Resort, and break your fast in privacy but with the benefit of some great hotel food and amenities. Enjoy a catered feast knowing you can retire to the comfort of your own cosy bed once you’re done, without the hassle of a drive home. And you can even book a wake-up call for suhoor.

Saddle Up Save – Get on your bike and explore the island while the weather’s still cool enough to enjoy it. Perhaps gather a group of friends for a safe, socially distanced way of getting in some fitness at sunset. There are numerous cycling routes online, just make sure your bike has lights and try to wear something reflective for safety.

Splurge – Book a cycling tour. Kashta Tours is running sunset bike rides every day during Ramadan. Distances, routes and timings will vary depending on sunset timings and attendees but, wherever you go, you’ll be guaranteed a good time.

Tip – If you’re going on a long ride, invest in some cycle pants!

Save – Get your adrenaline rush behind the wheel of a go-kart, a steal at just BD8 for a 15-minute run at the Gulf Speed One track in Juffair. There’s an arrive-and-drive package where you can just go alone and have some fun or several other options and corporate deals too. Time to strap on that helmet and go.

Splurge – Take some inspiration from the F1 and head to Bahrain International Circuit where you’ll find a huge range of experiences, from taking you own car or motorbike around the world-famous track to getting behind the wheel of a genuine SR1 race car and putting the pedal to the metal. Nighttime experiences are usually available throughout Ramadan.

Tip – As with all high-speed activities, stay safe out there.

Board Not Bored Save – The playing of board games is a Bahraini Ramadan tradition. It’s a great way to relax after the Iftar meal and is usually a fixture at numerous Iftar tents. With the usual big gatherings curtailed this year, in the interests of safety, why not host a socially-distanced board game night at home.

Don’t actually own any board games? No problem. Pop into one of the charity shops, such as the BSPCA Thrift Shop or the Dogfather’s Second Hand Shop, where you’ll usually find a good selection.

Splurge – Head to the Raven’s Nest board game and tabletop café, in Jannusan. Again not a true splurge, because it’s really good value for money, but an opportunity to sample some seriously sinful cakes and coffees while you check out a great selection of games and maybe meet some likeminded souls.

Tip – You’ll need to book a slot in advance at Raven’s Nest.

RAMADAN: THE RULES

For locals or long-time expats, accepted Ramadan behaviour is something we are well aware of. But for new arrivals, or those who may have become a bit blasé or even rusty on social norms after so long locking ourselves away, read on for our tips on how to enjoy this special time.

DO: Remember that fortified beverages will not be available to buy during this period, either at shops or hotels.

DON’T: You should not be seen eating, drinking, or smoking in public during daylight hours. This includes chewing gum.

Most hotels will have one screened-off outlet open during the day if you really do need refreshment but remember to be respectful as you are entering and leaving.

DON’T: Get stressed. Office hours are usually shorter for those who are fasting, and business may not run as smoothly as usual. Your Muslim colleagues may also be tired from the upside down hours, so, be patient.

DO: Say the right thing. When greeting Muslim friends or colleagues wish them “Ramadan Kareem” or “Ramadan Mubarak” which basically translate to wishing a generous or blessed Ramadan. Remember, Ramadan is a spiritual time, it’s not all about feasting!

DO: Watch what you wear. While Bahrain is one of the most liberal countries in the Gulf, during Ramadan you should dress modestly. That means being covered from neck to knees. No short shorts or bare shoulders please, especially in public places such as malls or at Iftar or Ghabga gatherings.

DO: Accept invitations. If you’re lucky enough to be invited to join Muslim friends for the breaking of the fast you will enjoy a festive but at the same time spiritual gathering. But always remember social distancing and recommended numbers and make sure to wear your mask and wash your hands. If you are going along to a Ramadan gathering, it’s customary to bring a small gift for your host. Dates are a favourite, or traditional sweets. If in doubt, stay home and stay safe.

DO: Drive safely. Of course, this goes without saying at all times but it’s even more important during the Holy Month.

Roads can get particularly frantic as fasting drivers may be rushing home to break their fast so it’s a good idea to take extra care around sunset.

DON’T: Let your music offend. Loud music is considered inappropriate during Ramadan. Turn the volume down in your car and use headphones if you need your tunes when in public places.

DON’T: Eat in the office. While many places have a space set aside for those who are not fasting, be considerate of your Muslim colleagues. Avoid highly aromatic foods and don’t eat in front of them unless they say it’s OK to do so.

DON’T: Miss out. There are plenty of hotels and restaurants serving delicious Iftar and Ghabga meals, but seating will be limited, so don’t leave dinner reservations until the last minute.

Manuela Brode We chat to the GM of the new Hilton Garden Inn Bahrain Bay.

When you started out as a receptionist back in 2002, did you envisage hotels becoming a career? Did you ever expect to get to the level of GM? I absolutely did and even before my first receptionist role.

My vision to make a career in hotels and hospitality started at the age of 14, during a two-week internship at the Hilton Berlin. We had the Prime Minister of France staying with us and I was delivering flowers to his suite and assisted with housekeeping tasks. On that day I decided I would pursue a career in hospitality. My passion for the industry grew from there and is still unchanged today, after 22 years.

The question on dreaming of a GM role started in my early years as our general manager at the time was one of the very few female hotel leaders, in charge of a property with 589 rooms and a team of nearly 300 members. She inspired me with her leadership and challenged and mentored me.

Of your previous postings, which has been your favourite and why?

I would probably say my placement in Nairobi, Kenya, was one of the most surprising experiences. The opportunity to enjoy a safari in my free time was unique; discovering animals in the wild and the beauty of nature coupled with East African hospitality will always have a special place in my heart.

One of my very first positions, as guest relations in Malta, is certainly worth a mention as it was my first time living abroad. Malta was not part of the EU then and I was one of the few expats in the country. It was also my first work experience in a resort hotel. I enjoy regular visits back when possible to reconnect with long-term friends who became my family away from home.

Also, my experience in Dubai, my first time in the Middle East, back in 2010. Working with the most diverse and inclusive team from across the world helped me grow, not only professionally but personally too. Then, we only had two Hilton Hotels in Dubai. Now, there are more than 20.

How does being pre-opening GM differ to doing the job when the property is up and running? Do you plan to stay once open?

In pre-opening it is all about building your team, creating your story and selling it to future guests and partners as 38

well as connecting with the community. It is very theoretical, in many ways, and also hands-on as every team member, regardless of role and position, will assist to unpack, unfold and arrange linen, equipment and tools to be guest-ready in time. You will always need to have a Plan B, C and D for everything during pre-opening – Plan A might not go ahead as planned. At Hilton we have a wonderful system to support all GMs to success.

After opening is mostly about guests, team member development and revenues and ultimately profits. Managing hotels is all about creating extraordinary and safe guest experiences, being the best place to work for our team members and delivering results to our owners. As operating GM, you observe existing processes, review and challenge them to continuously improve, analyse your and your team’s performance and work on ways to enhance.

My contract is planned to not only open but also manage the hotel after opening.

Please tell us a bit about Hilton Garden Inn Bahrain Bay. When will it open and what will be on offer?

Our Hilton Garden Inn Bahrain Bay will feature 192 rooms and suites with all of them enjoying unobstructed sea views and overlooking the skyline of Bahrain Bay. Our spacious

one-bedroom suites and plenty of connecting rooms will be great for families and long-stay guests.

Our own restaurant ‘together & co’ as well as ‘together and co lobby cafe’ will offer the right mix of local Bahrain specialities to international cuisine. The direct connection to The Avenues mall allows our future guests to connect business with leisure. Four meeting rooms benefit from natural daylight and offer the latest AV equipment for any kind of meeting setup.

Our hotel is opening very soon, and we are looking at a date in quarter two of this year.

How have you enjoyed your time in Bahrain so far and what are your favorite things to do when you are not working?

Since my arrival, the experience has been fantastic. Bahrain and its people have been extremely welcoming to me, even during times of social distance. I enjoy the open views to the sea wherever you go on the island and the heritage and culture. I love to explore new areas when I am not working, I’ve already visited the National Museum, discovered the Pearl path in Muharraq and one of my favourite things is a to enjoy a late local breakfast shared with friends during days off. ✤ fact magazine

eturning to the Kingdom of Bahrain to one of his modern American steakhouses, CUT by Wolfgang Puck, I was honoured to meet the Austrian chef himself, while the weather was still bearable for a delightful al fresco lunch overlooking striking views of Bahrain Bay. A force to be reckoned with, Puck has been recognised for his modern French cooking in kitchens all over the world – as well as his collection of Wolfgang Puck companies that includes more than 20 fine-dining restaurants, kitchen and food merchandise, cookbooks and even coffee products that are currently being sold across the globe.

Four Seasons Hotel Bahrain Bay welcomed the culinary legend back to the island for Formula 1 weekend. And the team paid tribute to Ma Maison, the legendary 1970s’ West Hollywood restaurant, where Puck took the culinary world by storm at the age of 25!

Bringing some of his special dishes to the Bahrain restaurant’s exclusive menu for the weekend, we were actually able to join Chef Wolfgang, behind the scenes at CUT by Wolfgang Puck, where he gave me a one-on-one class on how to make his infamous Loup De Mer en Croute, right from scratch!

As he began to prepare the fish, he spoke about his journey, highlighting California Nouvelle, the cuisine introduced at Ma Maison. It made the eatery a huge hit in the 70s and is still, to this day, credited with getting Chef Wolfgang’s career off the ground. fact magazine

“My mother was actually a pastry chef,” he said, explaining the inspiration behind many of his dishes, “and fish is actually the healthiest dish to make!” Beginning his preparations for the infamous fish in puff pastry, I asked how he was able to come up with this conceptual dish at such a young age and how it had become well known in such a short period of time.

“I used to make fish at Ma Maison for dinner almost every day. It was actually the kitchen’s special, every night! Why? [laughs] I had a very small kitchen back then, and couldn’t cook enough fish in a sauté pan all at once… But I could make it like this and put two, three, even four big fishes into the oven together. When they were ready, I would bring them out to the Dining Hall, and everyone would ask ‘What is that? We want it too!’.”

Cooking the recipe with only fresh seabass fillets, I followed the chef into the kitchen where we waited for the pastry to finish cooking in the oven and added the final touches on the dish, with the help of the venue’s Executive Chef, Brian Becher. Then we took our seats for a fabulous dinner.

Setting the almost-too-good-to-eat dish, avec deux sauce — because two sauces will always be better than one — right by the terrace overlooking the remarkable bay area, I was able to indulge in a one-of-a-kind Seabass in Puff Pastry, it was no shocker that the entire experience was breathtaking from start to finish.

Promising us that he would’ve loved to spend longer on the island, Chef Wolfgang laughed and pointed back into the restaurant, saying: “I would be back more often, but I know Chef Brian has this place under control for now.”

RECIPE REVEAL Chef Wolfgang Puck shares one of his favourite recipes for you to try at home.

Loup De Mer en Croute Ingredients Serves six l 2 tablespoons olive oil l ½ cup celery (110g), sliced l ½ cup leek (45g), julienned l ½ cup carrot (60g), julienned l salt, to taste l white pepper, to taste l 1 cup heavy cream (240mL) l 1 whole sea bass, cleaned l black pepper, to taste l 2 tablespoons fresh tarragon, chopped l 2 sheets puff pastry l 2 eggs, beaten l Fresh parsley, to serve l Lemon wedge, to serve

1. Heat olive oil in a medium pan over medium heat.

2. Add the celery, leeks, carrots, and a pinch of salt and white pepper, and sauté until the vegetables start to cook down.

3. Add the cream and stir to coat the vegetables. Cook until the cream is thickened.

4. Remove the pan from the heat.

5. Line a baking sheet with parchment paper. Roll out both sheets of puff pastry until they are ⅓-inch thick. Transfer one sheet of puff pastry to the baking sheet.

6. Cut the sea bass along the back to remove the spine, then butterfly open. Season with salt, pepper, and tarragon.

7. Scoop the cooked vegetables onto one side of the fish, then fold over the other fillet.

8. Transfer the fish to the centre of the sheet of puff pastry.

9. Brush egg wash around the fish, then lay on the second sheet of puff pastry, pressing around the fish to seal. Use a paring knife to cut away the excess puff pastry in the shape of a fish.

10. Brush the top of the puff pastry with egg wash and use the leftover pastry scraps to decorate the fish with an eye and gills. Use the tip of the knife or the large opening of a pastry tip to draw scales on the body and tail.

11. Chill in the refrigerator for at least 30 minutes.

12. Make the Chive Butter Sauce: In a medium saucepan over medium heat, combine the white grape, lemon juice, shallots, and tarragon. Reduce until only a ¼ cup (60ml) of liquid remains. Add the cream and reduce until the mixture thickens slightly.

13. Slowly whisk in the butter, one piece at a time, until the sauce is glossy and thickened.

14. Remove the tarragon stem and season with salt and pepper. Stir in the chives.

15. Preheat the oven to 375℉ (190℃). When the oven is heated.

Bake the fish for 15 to 20 minutes, or until the pastry is golden brown.

16. Transfer the fish to a platter and garnish with fresh parsley and lemon wedges.

17. To serve, cut the fish into individual portions and plate with a drizzle of Chive Butter Sauce.

You started out in street art, how did that segue into cooking?

Art attracts me like a magnet. From an early age, I was passionate about all kinds of artwork. My grandparents owned a private art collection, thus I was always admiring sculptures and canvases from renowned masters.

This time influenced my sensibility undeniably and gave me a certain regard and consciousness for creativity. Street art came naturally and became a mechanism of expression. It stimulated me early to identify the direction of my work.

Earlier on, the direction was to astonish observers with an intriguing optical satisfaction, but the visual jolt of street art and coded messages hidden in street artwork was also going to reflect in food; a message must come from my work. Pioneering the philosophical process, progress and result, I express cooking and plating as if we exist, along with our joy and our emotions. The use of single or multiple vibrant colours follows the lines of breathing. I am expressing life and the way we live it.

When did you first step into a kitchen professionally and what are your recollections of your training?

I entered a professional culinary environment at 15 years old, in a Michelin-starred restaurant in the south of France. I was at the same time studying at a famous ecole hôtelière for my first culinary grade. As far as I can remember, the discovery of reality [of the kitchen] was a one-of-a-kind experience. The learning process in school was amazing, I still have in my mind the first days in the kitchen as a first-year student, with the third-year students slicing an entire fresh salmon, preparing fumet, sauces, and garniture. It was a wonderful universe opening in front of me.

What a rich learning process given to a young man. Additionally, from the precise cooking technical skills learned in a kitchen, we were also able to learn all the classical repertory of the French Haute Cuisine and pastry in the technological course. I received an intense, complete knowledge combined with theoretical teaching covering most of the contemporary food and beverage sciences.

What do you find the most challenging and most enjoyable parts of your current role?

If we are to identify the most challenging part of my current role, we need to speak for the present and take into consideration the unexpected and unprecedented situation that the world is going through. I can say proudly that in every challenge lies opportunity, concretely I see the hope of reimagining our work, rethinking our way of operating, redefining our vision of excellence. More than

ever, we need in this time to reposition our relations with our guests, we need to understand the emerging trends, and pursue them to inspire life's most meaningful journeys. The joy in my current role is coming from the satisfaction and happiness of the Ladies and Gentlemen of The Ritz-Carlton, the relationship that we have built between us and that helps us to provide the finest personal service for our guests. The most enjoyable part of my work is undeniably to see the satisfaction of my team.

Can you share with us your signature dish or style and explain what makes it so special to you?

My inspiration is the essence of my artistic expression. I have defined the extreme situation and stressful moments that build in me the capacity for finding the imaginative location of my unsuspected, instinctive knowledge, where my passion and desire for cooking come to life.

I define a worldwide culinary art movement, where the guilty pleasure of eating meets the emotional visual sensation. I, as a precursor, undertake the responsibility to define and create a style, a unique vision, as it is my only purpose in my culinary passage. The style distinguishes itself by the intolerance of my subconscious that allows the freedom of the movement, the intensity of the colours; the visuals are meaningful and the taste is memorable. In the quest for infinite beauty and flavour ecstasy, where the signification and interpretation of cooking are subjective, my signature is always unexpected! ✤ fact magazine

Bringing years of culinary experience to Salero Bahrain, Chef Juan Luis Pérez and the team have put together a Ramadan set menu, running alongside the à la carte offering, that provides an all-in-all satisfying experience from start to finish.

Arabic coffee is served on arrival and to initiate breaking your fast dates, dried apricots, figs, almonds, and walnuts are pre-set on the table. And these are quickly followed by guests’ choices of hot and cold dishes and the incredibly flavoursome Spanish Pardina Lentil Soup.

My favourite starters from the menu stand as the pisto with grilled cheese, which was perfectly seasoned and flavoured, and the spinach and dried fruits salad with honey dressing – a great combination that excited my taste buds and appetite for more.

With a chef who’s originally from the east coast of Spain, it is no surprise that the main dishes on the Ramadan Set Menu, contain a variety of authentic paellas, served in the traditional pan. Guests can pick their choice of protein, from marinated roast chicken (my absolute favourite), slow-cooked lamb shank or shrimps, which is then prepared with the bomba rice in a method that aims to complement your chosen dish accordingly.

Making sure to end on a sweet note, Salero has come up with a selection of desserts that combine various elements of Spanish cuisine with the traditional foods we are accustomed to during Ramadan. Bringing out an incredible presentation of Date Iced Parfait, Chef Juan explained that the parfait was a combination of mousse and ice-cream that is then decorated with dried fruit compote, almonds and pistachios. Muy Bueno!

With eccentric art pieces all over the restaurant, radiating the true essence of Spain, the atmosphere at Salero makes it easy to be comfortable and relaxed, making your visit to the venue one that is natural and easygoing.

Despite the restaurant being completely centred around Spanish cuisine, Chef Juan and the team have successfully incorporated different Ramadan concepts into their dishes, ensuring that the spirit of the season is very much still apparent during the Holy Month.

Now, we all know the F in FACT stands for food, so it was no surprise that we’d set our minds on a mission to try each of the cuisines, in the interests of research. So, here we go!

Out came five different platters of starters, with two options from each cuisine. My attention was immediately directed to the focaccia from the Italian menu. Still warm and fresh from the kitchen, and brought out with an arrangement of cheese, the Italian menu scored a point with this one! At a close second, the panko spring vegetables with garlic dip from the Vegan menu was also one that we couldn’t get over – perfectly crispy on the outside and bursting with flavours, it was nothing like we had expected.

Bringing out a round of soups to complement our appetisers, With such a wide variety of options, we began passing the different bowls amongst us, making sure we tasted of each of the different flavours. The winners of this round?

The Tom Yam Kai with cherry tomatoes from the Asian menu, and the Wild Mushroom with Truffle from Vegan – another point for the vegan lunch!

Heading onto the stars of the show, out came five different main courses, giving us a taste of five of our favourite cuisines. I was incredibly impressed by the Beyond Vegan Burger, that was toasted to perfection and served alongside fries.

Whilst the Arabic main course was a perfectly seasoned and marinated Oriental Mixed Grill, we were pleasantly surprised by the Pla Rad Prik Thai from the Asian lunch. Served alongside white rice, the reef fish was liberally doused in spicy and sweet tamarind sauce and then seasoned with basil, making an explosion of different tastes and flavours that were superbly representative of the cuisine.

An honourable mention should also go to the Italian main course – a Beef Ragout Fusilli with salsa verde, served with onion crisps in a wellpresented manner. Buonissimo! I'm going back for more of this one, definitely.

After clearing everything in sight, the lovely team at Teatro reminded us that the journey was still not over – out came a selection of desserts ranging from Tiramisu to Um Ali to even a selection of fresh tropical fruits! Tied between the Asian and Indian choices, we were surprised by the Tab Kim Krob (water chestnuts, melon and sweet coconut milk) and the traditional Gulab Jamun. Both were filled with flavours and yummy goodness to help us end it all on a sweet note.

Now, here’s my advice on how to do it right: grab a couple of your friends for lunch, and make sure each of you orders a different cuisine – the portions make it perfect to share and that way you’re getting the opportunity to try more than one cuisine at a time!

or many years we at FACT magazine have had the privilege of thoroughly inspecting and test driving a large array of motor vehicles from a diverse range of brands. We have not, however, had the opportunity to get behind the wheel of a Mitsubishi model, that is until now. The Japanese manufacturer dates its motor car origins as far back as 1917 with the introduction of the Mitsubishi Model A. This hand-built, seven-seater sedan was the company’s first series-production automobile and now, over 100 years later, FACT gets to test drive the latest seven-seater compact SUV, the Xpander, compliments of the great team at Zayani Motors.

The Xpander has a striking and unique look to its exterior. In order to accomplish this bold concept, the designers at Mitsubishi have styled this moderately sized, multi-purpose vehicle (MPV) to look more like a sports utility vehicle (SUV) by giving it a rugged finish and high ground clearance. Staring at it head on, this car has a futuristic look to it with its chrome upper grille, sweptback headlights and daytime running lights that sit low down on the bumper. The LED lamps sit in crystal-like blocks and have been situated in a higher position for increased visibility. At the flanks, well designed side bumpers, side panels and rear quarters complete the sturdy and chiselled look, whilst 16-inch diamondcut alloy wheels in a two-tone finish add a touch of class. At the rear, the L-shaped LED combination lamps extend onto the tailgate and emphasise the vehicle’s sturdy posture. It is also possible for the exterior of the Xpander to be customised through the use of body kits and different wheel options.

Once Inside, we were immediately impressed by the sporty and spacious Interior as well as the high-quality materials used throughout the vehicle. The supportive front seats are set in a very upright position and give you a commanding view of the road ahead. The steering wheel sports both tilt and telescopic adjustability allowing you to find the perfect driving position. The second and third rows of seating are also spacious with plenty of head and leg room, allowing the Xpander to be called a true seven-seater. When the rear seating is in the upright position, the boot can hold an item or two of luggage. However, the rear seats can be folded down completely flat which expands the storage capacity to the largest in its class. There is plenty of other storage space on offer throughout the vehicle, including the glove box, drink holders, door bins, seatback pockets, a floor console box, a passenger seat undertray and an underfloor luggage area. Each of the three rows of seating has their own 12V power supply adjacent to a convenient storage space. Entertainment and hands-free operation are provided by the responsive and clear 7-inch Smartphone-link Display Audio (SDA) which is compatible with both Android Auto and Apple CarPlay.

Performance-wise, the Xpander houses a 1.5-litre, 16-valve dual overhead camshaft engine with advanced Mitsubishi Innovative Valve timing Electric Control system (MIVEC), allowing the car to carry seven adults uphill with relative ease. With reinforced suspension, high-performance shock absorbers and a lightweight body, we found this car to be very comfortable to drive as well as responsive and easy to handle. An added bonus is the quietness of the ride as all noise and vibration is absorbed by special materials incorporated into the interior design. This combined with a

great air-conditioning system and four rear roof vents ensures a pleasant experience for all occupants.

As far as safety features are concerned, the Xpander boasts a Reinforced Impact Safety body (RISE) that efficiently absorbs energy and maintains high cabin integrity in the event of a collision. All four doors are also equipped with a support beam to reduce door deformation in the event of a side collision. Additional safety features include Emergency Stop Signal System (ESS), Antilock Braking System (ABS), Active Stability Control (ASC) and Hill Start Assist (HAS). All of this, combined with very few blind spots, ensures a safe journey for you and your loved ones. ✤

But it has recently engaged in a series of reliability tests on road and track, in various driving conditions as well as intensive coldweather trials on the snow-covered roads of the Valtellina and at the Ghiacciodromo Livigno (Sondrio), Italy’s most notable snow and ice circuit.

Early reviews for this high-action thriller have been promising but, be warned, if you have read the books and are a Clancy fan, you may find this way off the mark from the original.

Sure, a lot of people started with a marketing major in college, but many have taken different and interesting paths to end up in this career. I graduated from Art College Public Relations & Advertising. I never thought that I would go into marketing until I had my first interview, which was not for a marketing position, not even close to it! to do something creative, learn new things, and to be ‘different’. And that’s definitely marketing!

What are the best and worst things about your job?

The best thing, among thousands, is the learning part; it doesn’t matter how much you learn there’s always a new challenge/opportunity waiting to be solved/discovered. Also, you never feel bored because you don’t repeat yourself by doing the same tasks everyday… it’s fun. The worst part is that not everyone understands the value of marketing and the longterm strategy. If I were to describe marketing with all the best and worst aspects in two words, it’s sweet and

sour – you can’t enjoy the sweetness without tasting the sourness.

What is your must do during Ramadan in Bahrain.

Ramadan. You can feel it from the warm family gatherings. You can smell it from the special dishes you have during this Holy Month. You can see it from the colourful outdoor lights. You can live it in the late and fun nights with your friends. This is how I feel, smell, see and live it, but what I love the most during Ramadan is the family gatherings. Since I was young, we have a special tradition in the family where the whole family (with my uncles’ families) gather to have Iftar together and play challenging games.
