The renowned bike trails at Kiwarrak will soon include accessible trails for adaptive bikes, extra amenities and a bbq area courtesy of funding from the Bushfire Local Economic Recovery fund, co-funded by the Australian and NSW Nationals in Government. I’ve lived in Forster all my life and I’m in Year 7 at Taree Christian College, and I’m also in the Great Lakes Band and the Forster Tri Club. I love to walk my dog, Daisy, on One Mile Beach, throwing ball and really enjoy art. I have entered the Pacific Palms Youth Competition a few times and my most recent art is a clay sculpture of a koala/toaster mash-up. - Trent Hopper

It’s an easy 2.5 hours’ drive north from Sydney on the M1 to Tea Gardens, at the southernmost tip of the Barrington Coast, and 3.5 hours’ drive to reach Pacific Palms, via the scenic Lakes Way, or Forster-Tuncurry via the M1/Pacific Highway route.

NSW Trainlink services run between Sydney and Newcastle, with connecting coaches from Newcastle to Tuncurry. The XPT Train service from Sydney stops at Taree and Gloucester.

Fly

Busways provides daily services from Newcastle to several Barrington Coast towns. The 150 Bus Service runs between Taree and Newcastle (both directions) via Forster, Hawks Nest and Tea Gardens, with stops including Boomerang Drive Blueys Beach, Tiona Holiday Park at Pacific Palms and The Lakes Way, Smiths Lake.

FlyPelican operates a regular flight schedule between Sydney and Taree. Flight time is approximately one hour, with departures from Sydney Airport T2.

Local identity and purveyor of fine seafood, Matt Monin, is renowned for the finest and freshest seafood in the area, sourced via his vast network of local fishermen supplying prawns, oysters, whole snapper, calamari and everything in between! And the iconic Monin Seafoods in Rodmay Street, Tuncurry is now being joined by a new location at Red Spot Jetty on Little Street, Forster. Watch all the action of daily auctions at Wallis Lake Fishermen’s Co-Op in Ray Street, Tuncurry, where buyers from Sydney and other parts of the state bid on the day’s catch. For over 40 years the co-op has been selling its fine, fresh daily haul. The lakes and ocean here are replete with all manner of marine delicacies so you can always head to a shoreline or jetty, drop a line, and try your hand at hauling in your own fresh catch.

What's cooking in Monin's kitchen?

Getting the perfect photo for social media puts a lot of pressure on people to come up with ‘the perfect dish’. Many people I know are scared to cook seafood, but it really isn’t hard, and you definitely don’t need 11 different herbs and spices to make it taste good!

Ingredients

Method

Green prawns - Peel and de-vein

Preheat oven to 220c

Fresh garlic cloves

The two magic ingredients for cooking seafood are good quality produce and LOVE – lots of it! Don’t get too caught up in the hype of strictly sticking to a recipe, half of the time we ad lib when cooking and it comes out sensational.

In each hot pot place approximately 50ml of olive oil and 25g butter and divide the garlic, chilli and parsley between each pot. Place the lid on and cook for about 10 minutes.

Fresh red chillies (seeds in or not) Fresh parsley – chopped roughly

Salt & pepper

Divide the prawns between each pot, replace the lids and return pots to oven for a further 6-8 minutes, or until prawns are cooked through.

Lemon wedges

The pots are extremely hot so be careful!

So, get out there grab some fresh seafood today and give it a crack!

Crusty bread to serve

We love to cook Garlic Chilli Prawn Hot Pots at home. We like to use Australian green King prawns as they have great texture and flavour.

TIP: Most recipes suggest leaving tails on to serve but, really, do you want to use your fingers to pinch the tail of the prawn with hot oil on it while you are at the table? Not me.

Sprinkle with salt and pepper to serve, lemon if desired, and crusty bread to dip and soak up the sauce. YUMMO

he local art scene is booming, with active engagement across all levels of the community. In fact, the investment and patronage shown to artists in the region goes beyond just the financial, such is the collective endorsement and pride these talented and creative locals have engendered. Quite aside from the numerous galleries throughout the region that exhibit local artists, many businesses, schools, retail outlets and public and privately owned spaces proudly share colourful, eclectic and eye-catching art for the enjoyment of all. The café, Plunge Forster, houses the Blue Dust Collective Gallery that features art by a collective of local artists; the street-side exterior wall of Blueys Motel on Boomerang Drive at Blueys Beach has been transformed into a stunningly curated art installation, One Square Gallery; and the Lake View Gallery sits within The Pacific Palms Recreation Club (The Recky) on Wallis Lake at Pacific Palms, exhibiting new works every six weeks. The Manning Regional Art Gallery in Taree presents a diverse and outstanding exhibition program throughout the year showcasing, emerging and established artists, group and solo shows and high-profile touring shows;

Pacific Palms Arts Inc. supports creative arts projects and events in the region and the inception of its monthly self-guided Arts Trail through Pacific Palms has provided a welcome opportunity for artists and art lovers to connect. Operating on the last Sunday of every month, studios, galleries and artists open their doors to visitors keen to explore the local art scene. With a determined interest to foster all forms of creative talent, Pacific Palms Inc. was disappointed to have to place its scheduled inaugural Writers’ Festival on pause in 2020 due to COVID restrictions. But the organisers are undeterred. The much-anticipated Writers’ Festival looks set to become another successful annual fixture for the organisation, along with its popular long-running Art Festival and Youth Art Exhibition.

The concept of showcasing talented artists’ 1 square metre artworks, on the exterior wall of Blueys Motel at Blueys Beach, to create a colourful drive- or walk-by gallery, has proved a real winner with locals and visitors alike, says One Square Gallery Curator, El Rattray.

I

n just a few short years, the outdoor street art installation on Boomerang Drive has grown in status and popularity among the local art community and budding young artists. Each year, One Square Gallery provides the Annual Youth Prize, as part of the Youth Art Exhibition held in conjunction with Pacific Palms Arts Inc, with the 2021 prize going to Caitlin Franolich for her work entitled “Ribbit”. 15-year-old Caitlin, a student at Great Lakes College Tuncurry, said her entry was submitted by her teacher on her behalf because she wasn’t confident that her work was good enough. The prize was an affirmation, she said, that “…my art was recognised as something to be proud of.” Caitlin’s works are informed by general scenery, history of culture, animals and nature, and she encourages other young artists

n your hands" is the third in the Take 3 For The Sea artwork series, and the newest 1 x 1 metre art installation at One Square Gallery – outdoor street art located at Blueys Motel, Blueys " Beach. The Take 3 For The Sea movement began in 2009 when two friends, marine ecologist, Roberta DixonValk, and youth educator, Amanda Marechal, looked for simple actions to address the complex problems of plastic pollution killing wildlife and damaging the planet. Over 80% of plastic pollution comes from land-based sources and the rest from ocean-based activities. Plastics never decompose they just continue to break down to a micro-level and have detrimental impacts on our beautiful marine life.

Joining forces with environmentalist, Tim Silverwood, Take 3 was officially launched in 2010. The ‘action’ is easy for all of us … “Take 3 pieces of rubbish with you when you leave the beach, waterway or anywhere … and you have made a difference,” says Head of Education and Co-founder, Marechal. REVIVING CONNECTION to language and land through art

A revival of their language, which had all but disappeared by the 1960s, has ignited a passionate and inspiring journey for the Gathang people in our region, who are sharing these insights with the broader MidCoast community through language, stories and art.

R

ecent exhibitions by local Biripi artists including Raechel Saunders and Brittany Cochrane, are part of an exciting groundswell of renewed connection to the history, culture and language of the custodians of the MidCoast land – the Birrbay (Biripi), Guringay (Gringai) and Warrimay (Worimi) people.

In 2010, the Muurrbay Aboriginal Language and Culture Cooperative at Nambucca Heads, together with linguists, published a Gathang dictionary of over 1000 words, compiled by Amanda Lissarrague from research based on Nils Holmer’s recordings of Uncle Eddie Lobban, one of the last Gathang speakers. Including translations of Gathang stories told by Uncle Eddie, historical records and knowledge of the Gathang people today, “A Grammar and Dictionary of Gathang” has opened an exciting door that reconnects the ancient past to future generations for the Birrbay, Warrimay and Guringay people of our region – to the extent that Gathang is now available as a TAFE course! A

n innovative pilot program at Great Lakes College, which provides creative techniques and visual art as an outlet for young girls to get through hard times, has proved so successful it is now rolling out across the state. Launched in 2008, and created by Awardwinning local artist, Donna Rankin, Heart to Heart connects students to their peers through painting. Participants in the program are equipped with the tools to assist them to build positive mental health and resilience.

Heart to Heart uses creativity and mindfulness to enhance wellbeing and resilience in girls and young women who have experienced trauma, or who are struggling mentally and emotionally in their adolescent years, giving them the skills and insights that allow them to confidently navigate their way to a healthier young adulthood. Taking place in a safe school classroom environment, the carefully structured 8-week program leads the students through the

process of painting a masterpiece in oils. The Heart to Heart team includes a Master Artist, Facilitator, Mental Health Worker and Police Youth Liaison Officer who guide the students through their Heart to Heart journey. "Heart to Heart is a transformative early intervention program that really works and has lasting impacts,” says Donna. “The magic happens when we stop after an hour of painting and have a 'heart to heart', when students can learn skills including observation, compassion for others, developing trust and meaningful relationships, meditation, calming techniques and managing stress and anxiety. “We aim to heal broken hearts by re-connecting with spirit through the creative arts.” Heart to Heart is now reaching other NSW regions including the Hunter Valley and Northern NSW. hearttoheartaustralia hearttoheartaustralia

A

stalwart of the local area, John Mansour and his family have deep roots in the region’s community and commercial stories. His grandfather, Baheeg (Bill) Saad, was an early migrant to Australia from Lebanon, settling first in Sydney, with his wife, Mary, before moving to Taree in 1938 where he started a fruit and vegetable business. By 1959 it had expanded to include a milk bar and café in which his five children helped before and after school. Manning Shoes was first established in 1954 by the Mansour and Saad families and Bill’s two eldest children, John and Noreen, were charged with running the business in Victoria

Street, Taree. With Manning Shoes now boasting five iconic stores across Taree, Forster and Port Macquarie, John Mansour was inducted into the 2019 MidCoast Business Awards’ Hall of Fame in 2019. Aside from being a much-liked member of the community, John is also highly regarded for his business savvy and, despite his solid ties to the past, his active and energetic embrace of the future. A natural and honest communicator, John takes a keen interest in council matters and has served on advisory committees, happy to tackle the hard issues while maintaining great working relationships. Add to that his membership of the Cape Hawke Surf Lifesaving Club and the Great Lakes Ironman Triathlon Association for many years, assisting in the establishment of the Ronald McDonald Forster Beach Cabins, and his sustained support of numerous charities, events and sporting groups, and John Mansour’s personal investment in this region is undeniable! The growth of Manning Shoes and John’s community status are testament to his strong family and community values, and those cornerstones provide the foundation for his continued and heartfelt endorsement of growth for the whole of this beautiful region.

hen COVID-19 hit, entertainer Emily Harlow found herself relocating from Sydney to Pacific Palms. “It was a very different pace for me, but I adored the community here and wanted to be a part of it,” says the singer and dancer who had spent many years travelling the world performing. A passionate, and qualified, practitioner of Pilates, an exercise system that was first embraced by dancers to enhance strength, posture and flexibility, Emily was keen to share those benefits in her new community. “Pilates has always a part of my life and, for me, it’s just the best thing ever! It’s a mental and physical discipline, a work ethic and a complete co-ordination between mind and body. I think everyone needs it in their life. It’s all about feeling comfortable in your body and maintaining a healthy, happy and functioning body so we can enjoy day to day life.

career in advertising took Anna Godfrey from her hometown of Taree to university and then Chicago, USA to work with one of the largest global ad agencies, DDB. Returning to Australia in 2001, a new marketing position with McDonald’s saw her again travelling around the world as Director of Innovation for Australia and New Zealand, and in a global role helping other countries develop and launch innovation. “I have helped many companies around the world to think differently and create big ideas for their business,” Anna says. Marriage to Scott, and the arrival of their first daughter, Alice, introduced Anna to the very real working mum juggling act and by the time second daughter, Lara, arrived, Anna had started her own innovation and marketing business, The Switcher, to share her expertise with other businesses. She also joined Raw Innovation, an organisation that helps businesses grow through innovation, inspiration and strategy, as an Innovation Facilitator. Despite her exciting and busy working world and global travels, as a mum Anna felt the pull back to the Taree region. “Scott and I were keen to raise country kids, and we knew that the Mid North Coast was the best place in the world to live, so we built our house and moved the family back home to Cundletown.”

Soon welcoming daughter number three, Stella, Anna turned her attention and skills to the local area and local businesses, becoming a proud member of Team Taree. Billy Hughes knows his stuff when it comes to local scenic drives and 4x4 action!

s the managing director of Tuncurry-based Hunter East Coast (HEC) 4 x 4, Billy is the go-to for locals and visitors who want to know where and how to explore this slice of heaven on four wheels. “There are plenty of nice trips that come to mind, ranging in difficulty from Toyota Prius to Nissan Patrol,” says Billy. “Definitely the most memorable is Whoota Whoota Lookout, especially on a clear day, and it’s just a 30-minute drive from Forster. This is an outing you can take in a standard road car too. The views are breathtaking, so pack the whole family and a picnic and, on your way back down, you can continue your adventure and see the biggest tree in NSW, roughly 15 minutes past Bungwahl service station. “Next on my list would be a day on Tuncurry beach, (or sandbar if you are down Pacific Palms way). You will need a vehicle permit from the visitor information centre for these drives and a 4WD is a must. It’s also very

Re Take3 schools’ program to reduce plastic waste

idCoast Council, in partnership with take3.org, JR Richards and Hunter Local Land Services, is now bringing the important Take 3 For The Sea program to MidCoast schools. The schools’ program hopes to create student leaders who are aware and vocal on the issue of plastic waste, says Take3 CoFounder and Head of Programs, Roberta Dickson-Valk. “We want to see those student leaders getting out there and being impassioned, being the voice of change in their local communities and their schools.”

Started by two Aussie mates, Green Caffeen is one of those businesses trying to make a difference, noting that the average Australian coffee drinker uses 500 single use coffee cups every year. “That’s 7.5kg of plastic that goes straight into landfill or, even worse, into our oceans,” they say. Partnering with cafes across the country, Green Caffeen established a reusable coffee cup business model that works for café owners, coffee drinkers and the environment! Ingredients

Method

500g ricotta cheese

Pre-heat the oven 180 degrees.

½ cup grated/shaved parmesan

In a large bowl, mix the ricotta, parmesan, spring onions, eggs, defrosted spinach, nutmeg, sea salt and pepper together until well combined.

5 spring onions, chopped 3 eggs

Grab a 25cm x 30cm baking tray (ceramic or glass preferred) and grease with oil.

375g frozen spinach, defrosted ½ tsp nutmeg (optional)

Place 3 filo pasty sheets down (they should fit pretty well straight down.)

Sea salt and pepper to taste 9 sheets filo pastry (Sesame seeds and egg white to finish)

Spoon half the cheese mix on top of the pastry and gently level out across the tray. Lay another 3 sheets of pastry then the remaining cheese mix on top. Finish with 3 sheets of pastry. Brush the top of the pastry with egg white and sprinkle with sesame seeds. Bake in oven for approx.. ½ hour – until nice and brown on top.
