Carta del director/CEO’s letter

¡BIENVENIDO

A BORDO!

WELCOME

ABOARD!

¡Feliz viaje! Dear Passenger, Celebrating 92 years is about much more than honoring our history; it is building on the legacy of the Caballero Águila by connecting Mexico with the world. Throughout these nine decades, we have been guided by a single vision: to deliver a travel experience that goes beyond expectations for every generation. Today, we look to the future with the same determination that has guided us since our very first flight. We continue to strengthen our network of more than 120 routes, operate one of the most robust fleets in Mexico’s aviation industry, and expand a digital ecosystem that makes every journey simpler and more seamless. We are also enhancing the on-board experience with improved entertainment and connectivity, while continuing to build an even more efficient operation. Our performance earned us recognition from Cirium for the second consecutive year as the world’s most on-time global airline. As we celebrate this anniversary, we thank you for the trust you have placed in us. Your support inspires us to continue shaping the future of aviation in our country. Have a wonderful flight!

Home to the Spurs, the city has become much more than just another stop on the map. It is a genuine alternative for those seeking a sophisticated destination, but also for anyone who might envision something more permanent: a city where luxury does not necessarily mean excess, but rather the possibility of living well, surrounded by history, culture, and a new energy.

San Antonio is now the sixth-largest city in the United States, ahead of names that, at least in the popular imagination, might seem more prominent: Las Vegas, Washington, D.C., San Diego, or Denver. More interesting than its size, however, is the way the city has managed to grow without erasing the traces of its past. Many of the buildings constructed for the 1968 World’s Fair are now part of San Antonio’s architectural identity. Among them are the Tower of the Americas and the Hilton Palacio del Río, built using modular units in a record-breaking 200 days. Today, these landmarks form part of the cityscape welcoming The Monarch San Antonio, one of the city’s newest hotels and one of its most sophisticated ventures into contemporary luxury. The experience begins even before you arrive. The hotel offers guests a Rolls-Royce, perfect for turning the ride from the airport into something more like a proper welcome than a simple transfer. Its location could hardly be more convenient: downtown is just minutes away, while the River Walk – the waterway that has become one of

San

the city’s major tourist attractions – is practically on its doorstep. Not far away is Pearl, one of the neighborhoods that best illustrates San Antonio’s recent transformation. What was once a brewery is now an urban complex where restaurants, shops, residences, and cultural spaces coexist. The revitalization of this former industrial site went beyond preserving its architecture; it also found a way to bring it into the present and make it part of a new way of experiencing the city. Pullman Market is perhaps one of the best examples. Here, the concept of reuse extends even to the ingredients: an almost zero-waste production system makes use of products throughout the entire chain. What is not used at the bakery may find a second life at the pizzeria; what remains there can make its way back into another restaurant’s kitchen. A simple logic that, implemented on this scale, makes resourcefulness part of the experience. And it is around the table that Pearl truly reveals its personality. Ladino restaurant offers a Mediterranean interpretation of cuisine, and one of the best ways to experience it is to order the “Table of Joy” and let the chef decide what will be served. Isidore, meanwhile, proudly displays a Michelin star on its façade and stands out as one of the city’s strongest culinary offerings. Its cuisine follows the rhythm of seasonal ingredients, making the tasting menu the best way to experience it. There is no shortage of options when night falls either.

According to local wisdom, San Antonio has 11 months of warm temperature and one January, a climate that explains much of the city’s outdoor lifestyle. Inside Emma Hotel, housed in the brewery’s former main building, Tavern & Club Room offers a more intimate setting for a drink. The hotel itself is well worth a visit: its industrial architecture blends with carefully designed interiors and spaces reserved exclusively for guests. Spending a couple of nights here does not sound like a bad idea. For those who prefer to explore a destination through its wines, ReRooted Wine Tasting is located very close to downtown. This tasting room is dedicated to a selection of Texas labels that could easily merit an article of their own. It is yet another sign that San Antonio is building a culinary identity that extends far beyond its classics. But if there was one experience that ultimately won me over, it was Bohanan’s Prime Steaks and Seafood. It is still difficult to understand why it has not accumulated more accolades. It has everything one expects from a great luxury restaurant: long tablecloths, impeccable service, and waiters moving through the dining room with bottles in a perfectly rehearsed choreography. The steaks, the undisputed stars of the menu, are prepared with precision; the wine selection is exceptional, and the service rivals that of the finest restaurants. Its location across from the Majestic Theatre also makes it possible to put together one of those plans that seem designed for a perfect evening: dinner followed by a walk across the street to

see a Broadway show. During my visit, Hamilton was playing. It is difficult to imagine a better way to end the day. San Antonio’s cultural scene also deserves time. The Botanical Garden is a must, not only for its biodiversity, but also for the way art is incorporated into the landscape. During my visit, Patrick Shearn’s kinetic installations transformed the experience: structures that at first glance resemble real trees ultimately reveal themselves as metal sculptures whose colorful elements respond to the movement of air and light. Another essential stop is the McNay Art Museum, founded in 1954 and considered the first modern art museum in Texas. Its architecture itself tells part of San Antonio’s story: the museum began in a Spanish Colonial-style home and, over time, added new galleries and architectural languages that coexist with the original building. Its permanent collection includes works by artists such as Pablo Picasso, Georgia O’Keeffe, Henri Matisse, Diego Rivera, and Edward Hopper, while its temporary exhibitions keep its focus firmly on the present. In the end, perhaps this coexistence is the best way to understand San Antonio. A city built on historic foundations, yet seemingly uninterested in living solely off its past. Between World’s Fair landmarks, former breweries transformed into neighborhoods, a new generation of hotels, forward-looking restaurants, and an increasingly vibrant cultural scene, San Antonio has found its own way to evolve.

Features

Founded in the 1920s, it acquired a small parcel of the iconic Le Montrachet Grand Cru in 1978. This winery is located three hours south of Paris, in Chassagne-Montrachet, Burgundy, one of the most prestigious villages for growing Chardonnay. All of its white wines, from the Village and the Aligoté-based Bouzeron to its legendary Montrachet Grand Cru, are glorious. They also produce a few reds, but this is the place to discover and learn about their whites. As a friend of mine says: “In Bordeaux, there is plenty to buy and little to taste; in Burgundy, there is plenty to taste and little to buy,” a reflection of the region’s tiny production volumes. Access is extremely limited, and the visit includes a tasting of more than 20 white wines, primarily Chardonnays from different vineyards and vintages in Chassagne-Montrachet and Puligny-Montrachet. It is a unique opportunity, as those vineyards, separated by just a few feet, can have a completely different taste… and cost.

VIRGINIE TAITTINGER, MONTAGNE DE REIMS, CHAMPAGNE Virginie Taittinger comes from one of Champagne’s most storied families. Her father, Claude Taittinger, headed the Taittinger maison for more than 45 years, while on her mother’s side, she is a descendant of the Heidsieck family. Following the sale of Taittinger in 2005, she decided to create her own project and spent four years searching for the best vineyards and perfecting her savoir-faire. Her first vintage was produced in 2009 and was not released until 2019, reflecting a philosophy in which time is the most important ingredient. Today, together with her son Ferdinand, she produces fewer than 90,000 bottles a year from Premier Cru and Grand Cru vineyards. All of their Champagnes spend at least four years aging on the lees, resulting in finer bubbles, greater complexity, a silky texture, and elegant integration.

Mikaela is a small family project in the village of La Alberca de Záncara, about two hours from Madrid, in Castilla-La Mancha. Here, Aurelio García is making some of the wines that have surprised me most in Spain in recent years. He works with old Bobal vineyards where the Júcar River once flowed, an area reminiscent of the Northern Rhone because of its rounded-stone soils (cobblestone). García describes his wines as village wines: the production of each label is very limited, and every wine comes from old vineyards, some dating back more than 70 years and others planted as far back as 1912. The visit starts in the vineyard, followed by a small picnic, and ends with a tour of the winery and a tasting of its top wines, such as Mikaela and La Infanta.

Lo considero “The new kid on the block” en Ribera del Duero.

Pinea is a project I greatly enjoy drinking, visiting, and recommending. I consider it Ribera del Duero’s “new kid on the block”. The winery is the realization of a dream shared by two Mexicans: Vicente Pliego and Hugo del Pozo, who began by producing great Ribera del Duero wines and are now embarking on a new chapter focused on single-vineyard wines, such as Castillo and Korde, with each label seeking to express a specific vineyard. Winemaking is led by Pliego, with consulting from Andres Vignoni, one of the most interesting names in Argentine wine. The visit – booking is required – includes the vineyards, winery, and an extensive tasting that provides an excellent understanding of the project’s philosophy and evolution.

Ceretto is located in the heart of the Langhe, very close to the town of Alba in Piedmont, surrounded by some of the finest Barolo and Barbare co vineyards. This family-owned winery is highly focused on producing food-friendly wines, mainly for its two restaurants: the three-Michelin-starred Piazza Duomo and the trattoria La Piola in the town center. The visit begins with a tour of the vineyards and organic garden, followed by the barrel-aging area and foudres — large wooden vats — and ends at the famous “Acino,” a glass bubble suspended among the vines that has become one of the region’s icons. I highly recommend trying the 2019 or 2020 Barolo Bricco Rocche, and buying a few bottles to cellar at home..

The Mazzei family, one of Italy’s most storied families, has been making wine for more than 600 years. Today, the 16 th generation remains at the helm of Castello di Fonterutoli, a small village between Siena and Pienza. The family also has a fascinating historical connection: Filippo Mazzei was a friend of Thomas Jefferson and helped introduce wine culture to the United States at a time when it was virtually nonexistent. What I like most is that you can spend the entire day there, or several days if you stay on the property, and use it as a base for exploring this part of Tuscany. Beneath the castle lies the underground winery, designed to move the wine using gravity. The estate offers several tour options, ranging from 45 to 170 euros, and also has an osteria, where guests can enjoy older vintages.

Best breakfasts in life? The ones that stay closest to the heart. The first meal of the day, the one that breaks the overnight fast, is often deeply personal, almost like a conversation with oneself. And as this quiet ritual of introspection unfolds, it brings with it an unhurried sense of joy, inspired by the taste of freshly brewed coffee, still-warm bread, fresh cheese, and fruit at its peak, like the custard apple I devoured not long ago at El Bodegón restaurant in Lima, followed by a classic butifarra sandwich. Although eggs are considered an essential breakfast staple in Western culture, I confess that I cannot stand them because of a childhood trauma I have never managed to overcome. I always feel a little sorry when people tell me they skip breakfast because, to me, it is a joyful meal. I believe that

even in the grayest of times, hope can return with a single sip of exceptional tea or coffee. Whenever I travel, I especially enjoy having breakfast at hotels because getting there requires nothing more than pressing the elevator button. Even if I am not hungry, I head downstairs out of pure curiosity, fascinated by how breakfast changes from one country to another. I lived in Switzerland for five years, and one of my favorite dishes was Bircher müesli, a recipe created by a doctor named Bircher-Brenner. It combines rolled oats soaked in a little milk, then mixed with yogurt, grated green apple, walnuts, and berries. I recently ordered it at Belmond Maroma on the Riviera Maya, and I can honestly say it was one of the best versions I have had in Mexico. Mira Earth Studios hotel in Valle de Guadalupe delivers breakfast baskets to its guests filled with eggs, a chilaquiles kit, avocado, a rustic loaf, Bruma Bakery pastries, yogurt, berries, homemade granola, juice, and more. As delicious as everything was, I especially enjoyed the do-it-yourself aspect, finishing the dish in the kitchenette of my room. Some breakfasts have truly left a lasting impression on me, such as the one served at Cheval Blanc Paris. They won me over with the extraordinary quality of their bakery and pastry selection—from flaky croissants and pain au chocolat to their different varieties of baguette. One would expect nothing less from Maxime Frédéric, who was named the World’s Best Pastry Chef in 2025 by The World’s 50 Best Restaurants. I also vividly remember the weekend brunch at the Bvlgari Hotel Roma, served at Niko Romito’s restaurant. The dessert table was gloriously indulgent, featuring fruit tarts, tiramisu, maritozzi, panna cotta with wild strawberries, and citrus-soaked sponge cakes. Not to mention the impressive selection of cheeses, antipasti, and oysters. It is the kind of buffet where you wish you could stay for days just to taste everything. But if we are talking about something even more distinctive and memorable, I have to mention breakfasts created by Michelin-starred chefs. Le Coquillage, the three-Michelin-star restaurant of chef Hugo Roellinger in Brittany, France, welcomes many of its diners to spend the night at its boutique hotel and enjoy a magnificent breakfast the next morning. Oysters, fish and pork rillettes, paté en croûte, house-made breads baked with ancient grains in a woodfired oven, crepes, fruit, cheeses, and charcuterie make for an extraordinary spread. The experience is completed by the beautiful light streaming through the windows and the breathtaking view of Mont Saint-Michel in the distance. Farther north, in La Madelaine-sous-Montreuil, another chef who holds two Michelin stars, Alexandre Gauthier of La Grenouillere, also serves a dreamlike breakfast in the heart of the countryside. I had never cared for rice pudding until I tasted the one he serves in the morning: perfectly cooked, delicately sweet, with tiny flecks of vanilla visible throughout, simply unforgettable. The morning feast also includes house-made charcuterie, jams and spreads, aged cheeses, freshly baked madeleines, a rustic country loaf, and a laminated brioche worthy of a world championship.

From the jungle of Yucatan comes a contemporary reinterpretation of the region’s botanical richness. Its universe revolves around melipona honey, an ancestral ingredient transformed through dermocosmetic science into treatments that honor the Mayan legacy with precision.

In their latest collection, Julia y Renata transform language into matter by exploring the voice as gesture. Silhouettes, textiles, and volumes evoke whispers, pauses, and echoes in a design exercise where fashion transcends clothing to become a form of expression. They use silk, linen, and cotton and work on them from experimentation.

ACC-098-INFLUENCE-MERIDA.indd 66

Here, rather than a stay overnight, the invitation seems to be to slow down. In a world of options centered on Mayan cuisine, Huniik crosses the line and manages to distinguish itself from similar concepts which, at times, lack the drive and energy needed to create something truly their own. Its contemporary approach revolves around regional ingredients, traditional techniques, and the culinary teachings of Chef Roberto Solís, who has brought a new perspective to Yucatecan cuisine. Today, in a space inspired by Mayan cenotes, the chef emerges from his “den” every night to cook in front of a small group of diners. The open kitchen allows the distance between those who cook and those who eat to practically disappear. Yucatecan flauta made with hoja santa and strained corn tamal are among the dishes that shine in their own right, ultimately showing why Huniik has found a place of its own in the global culinary scene.

Ángeles Mastretta’s classic reaches screens under her daughter Catalina Aguilar Mastretta’s direction, in a production that rediscovers a classic of Mexican literature. When Mal de Amores became a literary phenomenon in 1997, reaffirming the international success its author had already achieved years earlier with the unforgettable Arráncame la Vida, for filmmaker Catalina Aguilar Mastretta it was not simply a famous novel: it was the work she had watched take shape on her

mother’s desk. Today, nearly three decades later, the story of Emilia Sauri makes its ultimate leap to screens around the world through a new Netflix series. There is no better voice to direct the project that Catalina (Ginny & Georgia), who combines the skill of an established career in film and television with the unconditional love of someone who grew up devouring these pages. The director read Mal de Amores for the first time at 12. “I was at my maternal grandmother’s house during summer vacation and I read it in just a few days,” Catalina recalls. “My cousins were playing outside and I didn’t want to go out because I was hooked on the story. I remember thinking that Emilia Sauri was an extraordinary woman, and I wanted to follow all her adventures.” Bringing the project to Netflix required a dual perspective: reconnecting with the fascination of that 12-year-old girl while applying the maturity of a 41-year-old filmmaker who understands the demands of streaming. Above all; however, it meant conveying the spark of both the novel and her own upbringing to the rest of the production team. “It was essential for me to keep that perspective and to communicate it to the rest of the crew and cast, so that we would all feel a personal connection to Emilia’s story,” the filmmaker explains. “Ultimately, it’s the story of a very affectionate family in a hard world: an intimate, complicated universe filled with unconditional love while the Revolution unfolds, bringing things that are hard to understand and accept with it”. Even though Ángeles Mastretta often jokes about not being consulted as much as she would have liked, Catalina says her mother was very involved in the project, as it was essential to her for the author to be happy with the outcome. For years, long before the production became a real project and while it was still a shared fantasy, both of them would talk about what the novel might look like on screen and which actors could bring its characters to life. “Once we started, consultations about the cast andthe direction of the adaptation became constant,” she adds. “And then there were plenty of things we didn’t agree on,” she laughs. The successful filmmaker laughingly recalls the first time her mother visited the set of the Sauri family home. “She stood in the middle of it and said, ‘This isn’t what the Sauris’ house looked like. This one is beautiful too, but this isn’t it.’ Well, this is how I imagined it,” the director shares fondly, understanding that the magic of an adaptation lies in the freedom to reinterpret imagined worlds. In fact, one of the series’ most innovative visual contributions is its approach to the Mexican Revolution. While traditional screen portrayals tend to depict this period through the arid landscapes of the countryside or desert, the series unfolds against the vibrant urban life of the time. Mal de Amores is also a work in which Aguilar Mastretta’s cinematic rigor pays the most heartfelt tribute to Ángeles Mastretta’s legacy: reminding us that, in the face of adversity, love and intelligence remain the best remedies.

Aeroméxico Cargo fortalece su infraestructura/ Aeromexico Cargo

strengthens its infrastructure

Air cargo is one of the aviation industry’s greatest strengths, and every shipment has a story that begins long before it reaches its destination. That is why Aeromexico Cargo has introduced its first freezing chamber at Terminal 2 of Mexico City International Airport (AICM), strengthening its capacity to handle products that require special conditions. Operating at temperatures of up to -30°C, this new facility helps preserve the integrity of temperature-sensitive cargo while it moves through the airport. With this addition, Aeromexico Cargo expands its capabilities to support an increasingly specialized and competitive operation.
