Former mayor recalls plan to care for donkey taxis THE situation of the donkey taxis in Mijas Pueblo continues to be a matter of discussion not just with expatriates, but Spanish politicians as well.

The president of the local Partido Popular (PP), Angel Nozal, has once again put forward his proposals for the area with regard to the care of animals.

He wants to see the creation of a shelter for abandoned animals in the EL Barrio quarry and the creation of accommodation for the donkey taxis According to the former mayor, the current accommodation which is located in an area adjacent to human habitation is unsanitary and needs to be moved and would have been whilst he was in power had the funds been available.

“Now there are no excuses. They (the current council) still have a year and a lot of money in the bank. If they do not, it will be in our 2019 programme,” he said.

Democracy coming MARBELLA Council is considering plans to acquire computer software that will allow the direct participation of residents in decisions.

It hopes to have the new tool in place within the next two months, Councillor Felix Romero has indicated.

The vision behind the move is to create a ‘voting community’ that functions as a communication channel between the local authority and residents.

It would act as a two-way street, where initiatives and proposals could be brought

forward from the public, but also where the Council can consult them directly when important decisions are being made.

Any ‘votes’ that residents would make via the computer tool would not be binding, but would carry a notable moral weight.

The Council estimates that its investment in such an application could exceed €10,000, and the venture would need to provide value for money.

The software would also need to be robust and safeguarded from fraudulent use such as multiple online voting.

Eleanor Stack, Commanding Officer of HMS Duncan said “My ship’s company is excited about returning to the Mediterranean before undertaking KIPION (Gulf duties) tasking later this year.”

HMS Duncan arrives in Malaga to act as Flagship to NATO Mediterranean fleet

The type 45 destroyer will conduct defence engagement activities alongside NATO partners in the Mediterranean for three months, and will lead the group through

a series of high profile exercises.

At the end of this tasking, Duncan will sail to the Gulf to take up the UK’s standing commitment to the region.

One dead in multiple pile up THERE was a multiple crash near Sotogrande on Sunday evening, which resulted in the death of one person and injury to three others.

According to reports from the emergency services 112, four vehicles were involved in the incident, which happened on the A-7 motorway near to the Arroyo de Guadalquiton and required the attendance of the Guardia Civil, several ambulances and the Fire Brigade.

Currently unconfirmed reports suggest that a lorry was involved in the accident, and that one vehicle was overturned, leaving the road in the direction of Cadiz blocked for some hours.

to that MALAGA Council has declared its commitment to the welfare and protection of the city’s pets with ambitious proposals to tackle abandonment and abuse and to build canine parks.

It is working in tandem with various charities, such as the Society for the Protection of Animals and Plants and the AMAN (Animal Friend) Association, and will contribute more than €100,000 in aid in 2018.

The Council is also looking at its aid budget, so that those who are unemployed and have a dog can get their pet sterilised.

This action will be developed in parallel with other initiatives that promote environmental sustainability for the benefit of animals.

Part of this will be the creation of a genetic census of dogs which live in the city. There will also be more efficient management of urban colonies of feral cats.

Malaga’s Councillor for Environmental Sustainability, Raul Jimenez, has defended the need to encourage the sterilisation of dogs, because it means unwanted litters are avoided.

BUMPS in the road to success are emerging for bicycle sharing company OFO, with Marbella being the latest city to witness theft and damage to the bikes.

A deal had recently been reached between Marbella Council and OFO for the gradual introduction of 500 dockless bicycles in the area.

The system uses a smartphone app to unlock bicycles, charging an hourly rate for use.

However, the bikes have been damaged, discarded in fields, and allegedly even stolen to be repainted and sold.

This is clearly not what the company or Public Transport Councillor, Jose Eduardo Diaz, envisioned when initially presenting the roll out, when he said that “sustainable mobility is a priority and we thank OFO for

trusting Marbella to develop an innovative project that promotes the use of bicycles as a means of urban transport.”

OFO operates in more than 250 cities and the problem is not exclusive to Marbella.

In an effort to address the problem, OFO introduced a credit score system last June that penalises antisocial behaviour (such as bicycle dumping and traffic violations).

Users will be barred from using the service once all their points have been deducted.

Conversely, positive behaviour (such as reporting lost or damaged bicycles) will be rewarded.

OFO’s local teams around the world are working with interest groups in each city to explore solutions.

Tech to the future

THE City Council has launched the programme ‘Marbella Digital’ with more than 40 proposals to boost the entrepreneurial industry and increase the number of companies.

Councillor Cristobal Garre explained that “We have been working on this initiative since September, through the Marbella Business Incubator, and it will be developed throughout this year. The intention is to promote an innovative and technological city that generates talent.”

The councillor has specified that the first of the plans of ‘Marbella Digital’ will be a gathering in the Business Incubator on January 31 and will bring together companies, programmers and investors in the digital sector.

Similar meetings have been earmarked for the last Wednesday of each month throughout the year, since as Garre pointed out “The important thing is not to have a building, but to give it content by creating a community of entrepreneurs.”

The Council, in collaboration with the Incyde Foundation, will promote digital innovation actions in small and medium enterprises in the province.

Other plans envisioned by ‘Marbella Digital’ include a School of Investors and Programmers, the celebration of a ‘Start-up’ weekend, and mentoring from international experts about co-working.

Bed-almadena BENALMADENA became the Andalucian town with the second highest number of tourist visitors staying in hotels last November.

In fact the number grew by 58 per cent compared to the same month in 2016.

Overnight stays stood at

34,000, the best figure since 2011.

Data from the Hotel Occupancy Survey of the Institute of Statistics reveal that the average stay in Benalmadena was 5.78 days, also putting it in second place behind Almuñecar.

Although the hotel occupancy data for the month of December 2017 is still unknown, indications show that it exceeded three million overnight stays, something that has only happened three times in the last 12 years.

Spain’s got talent THE tourism sector in Torremolinos is set to be boosted by the creation of a ‘talent bank’ of professionals.

Companies in the industry will be able to mine the database, in order to get in touch with a range of individuals and projects.

The idea is to allow different businesses to feed on their ideas, and in doing so enrich the business network of the locality.

Part of the talent bank will focus on those people who were excluded from the selection process that the Council is carrying out, within the popular free face-to-face and online programme of ‘digital hosts.’

This initiative aims

to train people through contact with more than 20 experts in tourism and digital strategies, so that they become well versed in what the sector has to offer in Torremolinos.

After submitting their proposals in digital strategy, 10 applicants to the programme will be selected for a personal interview, with five going through to receive the training.

A local government source has commented that “The proposals received demonstrate the excellent technical quality of the participants, who have developed a multitude of projects dealing with digital marketing, sports tourism, family, LGTBI and other subjects.”

Going to the dogs

MALAGA COUNCIL is considering creating a specialised police force for animal welfare.

The Environment Committee has pledged to scale up efforts to help animals, especially dogs.

Spokesman for citizens, Juan Cassa, has requested that a study be undertaken by the Council to assess the feasibility of the measure.

Animal Welfare Councillor, Mario Cortes, has pointed out that there is already the Nature Protection Group (GRUPONA) of the local police, but that with DNA tests for animals being introduced he would certainly look at the proposal.

The Council has also taken action to help people with limited financial means to sterilise their pets, to avoid unwanted litters.

CONSTRUCTION of a new children’s play area in the Teatinos-Universidad district of Malaga City has been completed at a cost of almost €60,000.

The new park occupies an area of 405 square metres, 250 of which are occupied by the playground.

A fence encircles the entire area and there are two entrances at both ends.

The recreation area has several swings, some climbing obstacles, and a carousel. It is located between Calle Antonio de Cabezon and Diego Fernandez Mendoza.

PLAYING IT COOL: The new playground will be a hit with children.

Coca Cola delivers on its campaign EMPLOYEES of the Coca Cola Malaga factory have delivered 2,500 kilos of food, which was donated to the Bancosol Food Bank.

This is the result of a ‘Christmas Factory’ campaign which was held in all the European Partners’ factories.

The delivery of the non-perishable food was overseen by the manager of the Coca Cola factory, Alejandro Garcia, and the manager of the food bank, Susana Delgado.

Coca Cola European Partners (CCEP) is a leading company in the European mass market sector, and is the largest independent Coca-Cola bottler in the world (by revenue).

CCEP serves a population of more than 300 million people in 13 countries.

AN investigation, in which the University of Malaga (UMA) has been involved, has concluded that the consumption of extra virgin olive oil reduces the risk of heart disease by 30 per cent.

Researchers from across Spain, including Dr Enrique Gomez-Gracia of the UMA, have participated in the study and the benefits of the polyphenols found in olive oil are clear.

According to the latest report by the World Health Organisation (WHO), more than 31 per cent of the world’s deaths are caused by cardiovascular problems. In Europe, the figure rises to a full 45.6 per cent.

A decade ago the project Predimed (prevention through a Mediterranean diet) was started, to try to find nutritional solutions.

Gomez-Gracia has argued that it is

difficult to find a drug that reduces the risk of cardiovascular disease by 30 per cent.

“However, research in this field continues and there may soon be drugs with better results,” he added.

The study analysed 7,500 healthy people between 55 and 80 years of age who were at risk of cardiovascular diseases, and they were distributed into three groups.

Some were given a low-fat diet, others were given 30 grams of nuts a day and the third group used a litre of extra virgin olive oil during the week.

The data from the experiment shows that regardless of how the third group had lived before the test, once they consumed regular amounts of olive oil their relative risk of heart disease decreased by 30 per cent.

Preventative Medicine at UMA, commented, “The number of people who can benefit from this research is very high. The most important thing is that no matter when you start with this diet, it always gets better.”

Hydroxytyrosol-related foods have been shown to protect against cardiovascular disease.

Hydroxytyrosol is a phenolic compound in virgin olive oil and wine - essential elements of the Mediterranean diet.

Repairs all along the watchtowers

MIJAS is to undertake improvements to two of its four watchtowers, improving conservation and accessibility in the process.

Councillor for Historic Heritage, Fuensanta Lima, has announced the plans in light of the Department of Public Works’ drive to preserve sites of historic importance.

“This is an initiative that seeks to add value to these coastal towers, preserving the history of our town and making it accessible to residents and visitors,” said Lima. “Heritage sites which are characteristic to the area, offer a valuable alternative to sun and beach tourism.”

All necessary documentation is being prepared to begin the work as soon as possible, and the project is among 18 that have been approved across Andalucia.

Councillor for Sites of Cultural Interest, Juan Jose de la Rubia, comments, “We are talking about a project that we have been trying to carry out for years, and for which we have found technical solutions to allow visitor access inside. We must also do this in a way that respectfully preserves the image of the towers.”

The works are crucial to prevent further deterioration to the 16th century structures.

An exhibition FITUR for purpose AT this year’s International Tourism Fair (FITUR) in Madrid, Marbella is focusing its attention on gastronomy and major sporting events.

The mayor, Angeles Munoz, has presented the ‘intense programme’ of activities that is on show at FITUR 2018, which ends tomorrow (Saturday).

Munoz wants to prioritise “the most important tourism fair in Spain” and views it as a fantastic opportunity to highlight the potential of the city.

“Tourism is our main industry and this year we have, at the national level,

very important data, placing us as the country with the second highest number of tourists in the world, behind only France and ahead of the United States.”

The programme actually began on Wednesday at the Palacio de Santa Coloma, featuring Michelin starred chef Dani Garcia. The Marbella stand there is 150 square metres with two halves. One focuses on presentations and the other is aimed at the business sector and the local media.

The agenda evolved on Thursday, with promotions based on the

gastronomic delights of Marbella.

There will be a ‘Live Cooking’ workshop, a ‘Chefs and Kids’ event and various other promotions featuring the best chefs of the province.

Today (Friday) will see attention moving to the major sporting events being held in Marbella this year. These include the Davis Cup, an Ironman (extended triathlon), and the Vuelta cycling race.

A city that welcomes spies MAYOR of Marbella, Angeles Munoz, has announced a new installation of three webcams in different parts of the city.

The idea is to “Show in real time the enviable climate of the city to the world, mainly to future visitors and potential tourists,” she said.

Munoz was accompanied by the municipal Technical Manager of Innovation, Jose Ayllon, and the company representative who has developed the webcams, Francisco Gutierrez.

The three cameras are located in the Marbella Golf course of Las Chapas, in Magna Marbella (with a view of Nueva Andalucia and the mountain area), and in the Puente Romano resort.

The public can access the webcams through the web portal www.marbella.es.

Munoz emphasised that it is a tool “that can be used by any person and any service company in the city.”

Work is already underway to add other golf courses and hotels to the project, aimed at future clients.

Ayllon added that, “This project complies with the legislation on data protection and will allow us to compare ourselves with other world cities.”

AT the age of 11, Martina D’Antiochia, a Laude San Pedro student, had her first book released and the Spanish print run has just sold out.

Now aged 12, it was arranged with her parents that she should give an exclusive print interview to RTN following their return from Argentina, where they had spent Christmas and the New Year.

A charming and tiny girl, who has just turned 12, Martina explained that she has actually been writing books from a very early age but she kept her activity to herself. It was only relatively recently that she admitted to her parents what she was doing.

This is no self-publishing venture, as she obtained a contract with a publishing company who produced La Diversión de Martina - Un desastre de Cumpleaños (Fun with Martina - A Birthday Disaster) which is a story of a birthday celebration which went wrong, but turned out fine thanks to friends.

There is an element of real life and a healthy dose of make believe in this story, but so successful has it been that in February the second book ‘Aventuras en Londres’ (Adventures in London) will be released.

Martina explained that at the moment the books (of which two more are in preparation) are only published in Spanish, but she does

Martina D’Antiochia: With her father at Laude School. hope to be able to have them translated into English eventually, although the next big project is to see them published in South America.

Quite a success for a 12-yearold, but this almost pales into insignificance when she reveals that her YouTube Channel now has 1.6 million subscribers and her latest video has been viewed by more than 500,000 people.

When asked how this phenomenal success came about, the young lady smiled and said that because she had a homework project on social media she had to

view a number of YouTube videos and decided that she could have fun doing a video herself.

With the permission of her parents, she recorded and uploaded her first video, which school friends liked and shared through Instagram and Twitter, which led to her incredible following.

Speaking of school, when asked whether this success had set her apart from her peers, or if there was any bullying because of her achievements, Martina was very clear that this was far from the case.

They are almost as excited as

she is about her achievements and sometimes give her ideas for her shows and love it when she invites them to appear with her.

Even at this young age, she feels that this is a dream come true, but she has now set her heart on becoming an actor once she leaves school, although she has also become involved in recording a song for charity.

Shyly, Martina explains that she doesn’t really enjoy singing or have a particularly good voice, but when other Spanish YouTubers asked her to become involved in recording a song for charity, she really couldn’t say no.

Having achieved so much so quickly, Martina is a very grounded young lady who still loves to watch the Disney Channel, chooses Ariana Grande as her favourite singer and she loves meat Paella.

Although her parents were present during the interview at Laude School (which has been very supportive of their talented pupil), they didn’t prompt her and indeed she didn’t need any prompting as she had a ready response to every question.

It was interesting to learn that the school offers both English and Spanish curriculums and that Martina had chosen the Spanish path, although when asked if she thinks in English or Spanish, she admits to being mentally multilingual.

TOURISM in Greece, Germany, France and Turkey has been ravaged by the refugee crisis. These countries have endured lethal terrorist attacks that have damaged a crucial source of taxes.

Off-the-beaten-path locations like Bulgaria and Croatia are raking in travel revenues. Poland and Hungary, along with the Czech Republic and Slovenia, are expected to benefit from an increase in tourists, who before the crisis would opt for more conventional destinations.

Spain has endured dreadful attacks but dodged the refugee related violence bullet suffered by France, Germany, the Low Countries and Sweden. Hotel occupancy in Brussels plummeted to 62 per cent.

Germans are playing it safe and staying at home behind locked doors. Heidelberg suffered a 40 per cent drop in Far Eastern tourism and

a 10 per cent drop in American visits.

This summer, Europe and transit country Turkey have been put under enormous pressure as a direct consequence of NATO aggression dubbed ‘war on terror’. According to Turkey’s ministry of tourism, approximately 41 per cent less tourists visited the country compared to the same month last year.

After terrorist attacks in Ankara and Istanbul, June arrivals hit 2.5 million. In the same month last year the number was more than 4.1 million.

The ministry noted a remarkable decrease of tourists from Germany and Russia. Arrivals from Germany in June fell by almost 38 per cent, while visits from Russia dropped by 93.1 per cent.

Russia’s security concerns for its citizens have since been met by Turkey and Egypt. High spending Russian tourists are now restoring the prosperity of resorts that once contributed greatly to each country’s tax revenues.

Greek tourism has also been devastated since German Chancellor Angela Merkel notoriously flung open Europe’s doors, Greece being a transitory country.

Christiana Kalogirou, regional governor of the North Aegean, told euractiv.com that the immigration crisis had seriously affected tourism in the region. The island of Lesvos suffered a 68 per cent drop in visitors compared to 2015.

According to latest data, tourist arrivals to the north Aegean Sea’s islands has dropped by 70 per cent.

Mytilene’s airport services published figures show a 62.8 per cent decrease in foreign passengers in Lesvos in July In July 6,841 European tourists landed on the island of Lesvos. In the same month last year, 18,373 people landed. On the island of Chios in July 535 visits were recorded.

Last July the number was 1,887.

The ‘Heat Seeker’ back on the heavyweight trail

by John Smith HEAVYWEIGHT boxer, Adam Machaj, who spent several months training in Marbella is now back in the UK preparing for his next fight.

He got a little sidetracked after leaving Spain and was one of 25 people chosen out of the thousands who applied to take part in the latest SAS Who Dares Wins TV programme on Channel 4.

Now in its third series, the programme sees former SAS soldiers putting recruits through the same training as that used by the elite and world-renowned British Army unit.

In the first programme in the series, Adam was featured quite heavily as he was the largest participant at 6ft 8ins and 19 stone, winning his first test by knocking out an opponent in two minutes in the combat round.

Speaking to RTN, Adam explained that whilst he was

determined to participate to the fullest extent and wanted to win, his feet let him down and he had to throw in the towel.

The competition took place in the Atlas Mountains in Morocco and none of the contestants were paid for their participation, but although the show edited the activities to two days, he was actually in the camp for nearly five before he decided that his boxing career was more important than the programme, as his feet became increasingly more blistered.

As it happens, he didn’t leave a moment too soon as both feet were badly infected and the infection spread to his kidneys soon after.

The start of 2018 finds him in a much happier frame of mind as ‘The Heat Seeker’, as he is known, is back in training with support from manager Frank Duffin and Kevin Marree Boxing, get-

ting ready for his first fight of the year which is expected to take place in early March in Blackburn, England.

boxers, he plans to train hard and fight hard, but on a personal basis he has now formed a very happy relationship with model, Tiffany Rose.

Not so cool cats by

M o n d ay morning and it was the time of year that I dread and Ozzy and Woody, our two rescued felines, positively hate.

It was the day for their annual booster shots.

Not that they have any awareness of dates, but as soon as they catch a glimpse of the pet carrier being carted in, they do a 0-60 that makes the Jaguar F Type look pedestrian as they dash for their hidey-holes.

When they were young it was a relatively easy task to coax them into the carrier

together, but as time passed they wised up to the fact that this contraption meant a trip to a strange smelling building, peopled by stranger smelling humans, intent on stabbing them in the neck with a vicious looking spike.

So we gave up trying to take them together because invariably, as we opened the door to push cat number two inside, cat number one would explode out and disappear for the next three hours, necessitating a phone call to the vet to make a fresh appointment.

We tried bringing the basket in to the house several days in advance, just to get them used to seeing the darn thing there. It worked, but only once, because stupid they are not.

Now we make two separate appointments and go for the full-on approach.

This entails me whistling nonchalantly then making

a quick grab and bundling one of the little dears into the carrier before he knows what’s happening. Looks good on paper, but in practice it has one serious flaw.

Out go all four legs splayed across the door of the carrier, clinging on for dear life like a cartoon cat and shrieking disapproval.

Twenty minutes later and bloodied, I arrive at the vets with Ozzy silently pressing himself into the rear of the carrier. His philosophy seems to be: ‘If I can’t see them, they can’t see me’.

Now the situation is reversed, because just you try getting him out, but eventually we do. Then with the poor little bloke trembling, and desperately snuggling into me, he takes his medicine, after which of course he leaps back into the carrier like it’s the most desirable place on Earth.

I take him home, have a

quick mug of desperately needed tea, liberally laced with brandy, then repeat the whole process with Woody, who the Princess has thoughtfully isolated in the galeria.

It’s a bit easier this time, but w h e r e as Ozzy lapses into silence after capture, Woody is intent on giving i t large vocally, and breaks into the cats’ version of The Ball of Inverness, all 28 mucky verses.

If the vet’s office was any further away, this would have me leaping from a moving vehicle in desperation, but as it is, on entering the waiting room Woody’s vocal talents have the dogs howling; a hamster going toes up, and the charming

But that’s all behind us now, at least for another year. The boys are sprawled on the back of the sofa like tree leopards, and seem to have forgiven me.

The tin of red salmon probably helped.

In a presentation entitled Stars of the West End, three well-known and successful performers who have played leading roles in a number of musicals will be presenting a number of the best-loved songs from musical theatre, many of which they performed in.

Mike Sterling has had leading roles in Les Miserables, Phantom of the Opera, High Society and Oliver in London and on tour, including two memorable visits to China and was the Phantom for several years, appearing on a cast recording as well as an anniversary CD. Lucy Van Gasse has appeared in contrasting roles in Wicked and Sound of Music as well as being part of the classical cross-over band Amici Forever having obtained a degree in Music from Cardiff University.

Kate Galston has come to the fore in musicals recently having played the role of Diva in Priscilla Queen of the Desert after being a successful session singer for several years as well as working with stars such as Richard E Grant.

THE hilarious side-splitting comedy Caught in the Net written by the master of mirth Ray Cooney is coming to the Salon Varietes Theatre.

Manchego Cheese Steven Saunders FMCGB The Little Geranium La Cala de Mijas & Marbella

www.thelittlegeranium.com LAST weekend I was invited to Toledo near Madrid. I had never been to Toledo and I was excited to be able to visit one of the oldest cities in the world.

Toledo is in the Mancha region and has been there for over 2,000 years.

References to this beautiful walled city date back as far as 59 BC. Once the capital of Spain, before Philip II moved the court to Madrid in 1561, the Castile Mancha region is also where

the original Manchego cheese comes from. Made from Manchega sheep milk albeit it is now produced all over Spain.

Manchego is best eaten when aged between 60 days and two years.

This buttery crumbly cheese is delicious sliced thinly with Iberian ham, crusty bread and some local olives.

It is made from sheep’s milk, either pasteurised or raw, the latter being called Artesano (Artisan) which I found in Toledo and it was delicious.

In local shops here on the coast you will find many versions of Manchego cheese, but not many that come from the Mancha region unless you specify.

Ask at the cheese counter for Mancha Manchego, and always ask for Viejo (Old) cheese for the best flavour.

Like all ingredients when you have a knowledge and understanding about

them they become far more exciting and interesting.

At the Little Geranium people often ask me what they can do with Manchego, other than eat it sliced thinly and cold.

“So much” I reply! So here for my readers are some ideas, my top 10 things to do with Manchego.

When cooking with Manchego, always gently melt it for best results. This way you can still taste the salty, zesty and buttery flavours of this delicious cheese.

• Cajun spiced gambons glazed with Manchego • Rare steak, grilled Manchego cheese, glaze, rocket leaves • Crispy fried Manchego in breadcrumbs with sweet chilli dip • Padron pepper, olive and Manchego pesto • Chorizo, padron pepper and Manchego pizza • Sliced potato baked with chorizo and Manchego • Croquetas of Manchego red pepper mayo

• Grilled asparagus with Manchego shavings and truffle oil • Crostinis of Iberian ham, figs and Manchego drizzled with honey • Wild mushroom risotto with truffle oil and Manchego

There is so much more, if you stop and think, that you can use Manchego for. Just like you would use any other cheese, but eating a good Manchego with aged Iberian ham for a lunch time snack is difficult to beat!

Red pepper mayo

For the Manchego croquetas (serves 4) INGREDIENTS 75g butter

breadcrumbs into three separate bowls. Coat each croqueta in

275g flour

the flour, then the egg and finish with the breadcrumbs.

500ml milk

2 large egg yolks

Put the remaining flour, the eggs and the panko

Deep fry the croquetas in batches until golden-brown.

75g soft white breadcrumbs

Remove and drain on kitchen paper.

200g Manchego cheese, cut into cubes

*If you like you can add chopped Iberian ham about 2

1 small bunch fresh coriander, chopped

tablespoons at stage 2.

1 jar of roasted red pepper, patted dry 2 garlic cloves blanched in boiling water first for 2-3 mins to take away the heat of the garlic and then chopped 1 teaspoon Dijon mustard 4 teaspoons fresh lemon juice 250 ml vegetable oil

2 teaspoons truffle oil 2 free-range eggs, beaten 100g Japanese panko crumbs salt and freshly ground pepper

METHOD

Melt the butter in a large saucepan, whisk in 200g/7oz of the flour and cook for 2-3 minutes. Whisk in the milk slowly until you have a thick sauce, this is called a béchamel sauce.

Season.

Stir in the fresh breadcrumbs, cubes of cheese and coriander.

Add the truffle oil.

Put in the fridge to chill for 3-4 hours. Shape the chilled mixture into small cylinders or barrels.

Preheat a deep-fat fryer to 180C

Directions 1. Place egg yolks in a food processor.

2. Add red peppers, garlic, mustard, and lemon juice. Pulse ingredients until well combined.

3. With motor running, add olive oil in a slow, steady stream (mixture should become thick and emulsified). Season with salt and pepper.

4. Refrigerate in an airtight container for up to 1 week.

Note you can replace the fresh eggs and the olive oil with a ready made mayonnaise if you prefer. You would need to add about 250 ml of mayonnaise.

What your tongue says about your health Bumps, patches, and spots in your mouth can be harmless. But sometimes, they can give clues to what’s going on with your overall health. Infections, stress, medication issues, and even ageing can make their marks on your tongue.

Find out what your tongue is telling you and when you should see your doctor or dentist.

White patches Creamy white spots on your tongue could be thrush, a fungal infection. It often happens after an illness or medications throw off the balance of bacteria in your mouth. White patches that look lacy could be lichen planus, which means your immune system is attacking the tissues in your mouth. If you see hard, flat, white areas that can’t be scraped away, it could be leukoplakia, which is linked to cancer. Let your dentist know about any white patches you see.

‘Hair’ on your tongue If your tongue has a coating that looks like black, brown, or white fur, you might have hairy tongue. Those ‘hairs’ are proteins that turn normal, small bumps into longer strands, where food and bacteria get caught. It should go away when you brush or scrape your tongue. If you have hairy, white patches that you can’t scrape off, it might be oral hairy leukoplakia. It can happen to people infected with viruses like Epstein-Barr or HIV. Black tongue Hairy tongue can be black in colour. But your tongue can also go dark after you take an antacid with an ingredient called bismuth. For some people, it stains the tongue black when it mixes with saliva.

It’s harmless and goes away once you stop taking the medicine.

Many men have surgery followed by one or more of the other treatments which can help stop the cancer coming back in the future.

Smooth tongue A tongue without any small bumps on the top may look glossy red. You may get it if you don’t get enough of some nutrients like iron, folic acid, or B vitamins. Infections, coeliac disease, or some medications can also cause it. If you have patches of smooth areas next to bumpy ones, it could be geographic tongue. The spots can come and go, and sometimes they hurt or burn. It's harmless, but it could be linked to psoriasis or lichen planus.

Macroglossia It’s when your tongue is too big compared to the rest of your mouth. It can take up so much room that your doctor might find imprints of your teeth on its sides.

Your doctor will try to figure out and treat the underlying condition, which may be hypothyroidism, an infection, or allergies, among others.

Bumps Under the tongue is a common spot for canker sores - small, painful, reddish bumps that come and go on their own. A single, painful bump at the tip could be transient lingual papillitis, lie bumps, which can pop

How to use a dog headcollar MOST dogs that pull have learned to do so over a period of time. The longer they have been doing it, the harder it will be for them to change. In most cases, a fresh approach is needed by introducing an alternative to the lead and collar.

For really strong dogs, or dogs who may be reactive out and about, it’s worth considering using a headcollar at first, especially if there is a risk of you being pulled over. As they are worn on the dog’s face, and the point of contact is typically under the chin (much like a horse headcollar), you have more control enabling you to teach loose lead walking safely.

There is a wide range of headcollars available on the market. As with all good dog training equipment, it must be introduced to your dog in the right way, and it must be used in conjunction with the right technique. If you don’t do this, it is likely to result in your dog hating having to wear it, and feeling distressed and frustrated during a time when he should be having fun.

For a dog that has never worn a headcollar,

it will feel very strange to suddenly have something placed over the bridge of his nose.

Most dogs will attempt to remove this by either rubbing their faces on the ground or pawing at it.

To teach a dog to fully accept walking on a headcollar, you must firstly teach them to wear it at home before attaching the lead.

Remember to be really positive and enthusiastic when introducing a headcollar, so that is it clear to your dog that this unfamiliar object is a good thing.

• Unpack your headcollar and allow your dog to fully investigate it. While they are doing this make sure you read the instructions, and make sure you’ve sussed out which way it goes on. Prepare some tasty food and feed your dog, while encouraging them to push their nose through the loop of the headcollar.

This should only be for one or two seconds at a time. You can also get your dog used to the sound of the clip. Remember to be really positive and enthusiastic at this time, so that it is clear to your dog that this unfamiliar object is a good thing. Take things slowly and

end on a good note.

• Repeat this process every few hours so that your dog becomes really familiar with the way that it sounds, and how it feels.

• When the headcollar is fully attached, it is really useful to get the dog comfortable wearing it on a walk without attaching the lead to it (ie by having the lead attached to the collar or harness). It’s important to keep them busy and focused during these early stages, as unless you do this, their attention may be drawn to the headcollar, which may lead them to attempt to remove it. Use treats to gain their attention and walk quickly to keep their mind off it.

• Consider your dog’s learning ability, stress and frustration levels. Don’t ask for too much, as in order to benefit from the maximum results of the headcollar it must be introduced slowly. It’s much harder to undo this if you rush and cause your dog to dislike the headcollar.

• Once your dog will wear the headcollar, attach one end of your training lead to it, and attach the other end to either the collar or the harness. Attaching it to both points

is extremely important because, as well as having a safety back up, should the headcollar break or be pulled off, you will be able to steer and control your dog much better by doing this.

• Practise using this together in places where there are minimum distractions remember, be very generous with your treats when your dog responds to your technique.

When this is working well, begin using it in slightly busier areas.

It’s extremely important to remember that it takes more than just equipment to change a dog’s behaviour. It must be used with the right technique, applied by a positive enthusiastic owner.

A headcollar should never be a long-term solution to your dog’s lead pulling. It’s a great tool for teaching your dog to walk on a loose lead, and it can be a great time saver if you’re rushed and can’t commit the time to train properly. However, it should always be our goal to teach your dog to walk calmly without it, so applying the right technique is the key to success.

BONSAI is the ancient art and craft of creating a landscape in miniature in a shallow pot or container.

The tradition of bonsai includes careful placement of stones, mosses, lichens, soil mixture and other materials.

It uses highly refined methods of care, to reduce a tree’s growth to appear as a full sized tree in proportion to the rest of the the features in the bonsai container.

The word bonsai means planted tray (shallow container).

It is a great way to enjoy gardening using artistic garden design skills. Through attention to detail, using so many different materials, such as beach shells, hollowed logs, naturally occurring

stones, and a huge variety of pottery designs designed especially for bonsai plants, a miniature garden is developed.

The tradition of miniature landscapes goes back thousands of years. Their care was a part of eastern meditation practice in temples, and they were considered valuable gifts by royalty in Asia. The Japanese developed the concept of miniaturising trees with various methods as a Buddhist practice, including Zen gardening.

A bonsai had special importance, as people were able to take their garden with them, or present them as a gift or family heirloom.

Creating a bonsai can be as easy or complicated as you like. Basically you need a shallow container, free draining quality soil mixture and a suitable long lived tree with small leaves to allow proportion to the container.

The selection of the tree should take into consideration the climate it will grow in. A tree that grows easily in the natural environment where you are will generally do best, unless you plan to have the bonsai in a controlled environment.

If the tree is an outdoor plant it will not do well indoors for very long.

Tropical trees such as ficus that are used as indoor plants are a better choice if you plan to have your bonsai indoors.

Maintaining a bonsai requires detailed care to remove excess leaves, branches and roots to maintain proportion. Wiring and clamping can also be used to shape the tree into the desired form to suit the landscape concept. Watering application is different to most houseplants, due to the smaller soil volume requiring more frequent application. Simple watering devices can be used to ensure constant watering supply.

They also need supplementary nutrient application to maintain health, but not too much or it will stimulate excess growth. Very light, or diluted applications are required frequently. A minimal amount of slow release fertiliser and weak liquid fertiliser in the water supply is a good solution.

Bonsai is a wonderful challenge of patience and discipline, with long lasting benefit, providing a fascinating focal point to feature in your balcony, patio or terrace.

The tournament will take place from February 2-4 in Marbella, and it will be the third time the Davis Cup has been hosted in the city.

The mayor of Marbella, Angeles Munoz, has been supervising the installation project which started this week and which will last until January 29.

On completion, the capacity of the grandstand will reach 9,000, to cater for the influx of Davis Cup fans who will be descending on Marbella.

“Marbella is ensuring that Puente Romano has the best courts for this tie,

with two of the world powers fighting for the title,” said Munoz.

“It is a great sporting and tourism event that the whole city feels is its own.

A multidisciplinary team has worked from the beginning to coordinate all areas and make the competition a success,” she added.

FUENGIROLA Council sports councillor, Pedro Cuevas, has revealed that horse riding will remain on its list of funded sports activities.

An agreement has been signed by the Council and the Samuel Oliva Equestrian Centre, located in Cerro del Aguila in the neighbouring town of Mijas.

“This agreement with the Samuel Oliva Horse Club will mean that we can offer the Fuengirolenos the opportunity to learn about the world of horse riding at very affordable prices” said Cuevas.

“Our intention is to be able to offer the widest possible variety of sporting activities, and equestrianism has its place within that.”

The deal with the Samuel Oliva Equestrian Centre, means that anyone who wishes to get involved and is a resident, will receive a 20 per cent discount.

Activities in the club will include an initiation to dressage, and groups of ponies provided for young children.

Also, four male rowers have set a world record for the fastest crossing of the Atlantic. George Biggar, Dicky Taylor, Peter Robinson and Stuart Watts spent 29 days and 15 hours at sea during their 3,000 mile crossing from the Canary Islands to the Caribbean.
