From Me To You...

Those of you who know me understand that I love to travel. Covid put the kibosh on that for a while, but I am beginning to spread my wings again. In fact, I am writing to you from a foreign country - not the trip I planned, but it has it’s bright spots nevertheless.

In my youth I would fill a backpack with whatever clothes were clean, grab my camera, and I was off. Not a care for creature comforts, not much planning at all, but with a ton of enthusiasm!

As I have aged my requirements have changed somewhat. The itinerary is considered, reviews taken into account, and excursions mapped out along the way. Packing is more specific too; I have to factor in comfy shoes and adequate layering. What stays with me on the plane now must allow for all the electronic devices - plus chargers.

The most useful necessity I travel with though, is my own pillow. I cannot emphasize enough the value of sleeping with the right pillow. Imagine traveling to a far-flung location and you can’t appreciate all the glory of those Roman ruins because you have a crick in your neck. It is the little things that make so much difference.

On this particular trip I am in the land I grew up in, so my packing became even more challenging. I had to bring enough clothes for

varied weather possibilities, the aforementioned electronic devices, adapters so I don’t blow up said electronic devices, and most importantly, room to bring home delicacies form my youth.

Although I can have almost anything shipped to me in the US, it is vastly more expensive, and I don’t get to try things first. Plus, there are Easter Eggs like you wouldn’t believe here. Giant hollow chocolate spheres filled with yummy confections!

Then there is coffee. I do love my coffee, and recently, thanks to a discerning relative who introduced me to Nespresso, I have become a coffee snob. As with my pillow, a great cup of coffee sets me up for a wonderful start to my day. And as I only drink one cup a day, it has to be good! I used to travel and make-do with whatever coffee I could find, but on this last trip I decided that as I was going for an extended stay, and I knew that the only coffee on offer would be instant, I would have a machine shipped to my location. Oh boy am I glad I did. Not only did I find it for a third of the original price but now I can gift it to my hosts when I leave. You could say I gave them two gifts, the joy of a cheerful morning, plus a new appliance.

The Dr. Is In

March is upon us and that means Spring Break for our kiddos is quickly approaching. Providing our children an opportunity to take a break from classroom learning can be a double-edged sword. As a Pediatric counselor, I frequently get questions from parents about how to keep their kiddos entertained during this time.

First and foremost, boredom is not a bad thingPsychologist Aaron Benjamin has been quoted saying “Boredom ignites your creativity.” Provide age-appropriate items like art supplies, books, or things to do outside, and let your child solve their own boredom. You can also use this time to help your child learn valuable life skills such as cooking, cleaning or even planting a garden (March is the perfect time in Arizona). If you don’t know how, take the opportunity to learn together by watching YouTube videos, joining a Facebook group, taking a class or finding a neighbor who can teach them. Teach your child compassion by volunteering at a local animal shelter or food bank. I am also a huge fan of playing games with children and teens as a way of connecting. Some of the games they might really enjoy include

Jenga, Uno, Tacos vs Burritos, Candyland, Chutes and Ladders, Clue, Life, Battleship or Phase 10. The UnGame (a stack of cards with age-appropriate questions) is also great to incorporate in many of these games and gives you the chance to really get to know your child.

Outside your home, there are also some amazing low cost/free activities in the state. Many valley museums including the Phoenix Art Museum, Heard Museum, Children’s Museum and even the Desert Botanical Gardens have free museum days- call to find out the days and times. We are also incredibly blessed as March is the perfect time to get outside and go hiking so try out the Victory steps, hike the White Tanks or travel a bit farther and hike Vulture Peak. If you have the day, take find a town to explore like Jerome, Bisbee or Tombstone to learn more about the state’s history.

Overall, my biggest advice to you as a parent is to use this time as a way to connect with your child. As an adult they won’t talk about the lack of dust in the house, but they will talk about the trip you took together or the museum you visited.

Yum Yum Citrus Salmon Sheet Pan recipe

Sheet pan salmon ingredients: 1 pound salmon 2 cups broccoli florets 1 small sweet potato, cubed 2 cups asparagus, cut into 1-inch pieces Citrus glaze ingredients: 1 orange 1/4 cup soy sauce 1 tablespoon honey 1/2 teaspoon salt 3 garlic cloves, minced Directions for glaze: Cut the orange in half and slice half of it into thin slices. Large slices can be cut in half.

Add to a bowl and combine with soy sauce, honey, salt and garlic cloves. Mix well and set aside.

Directions for salmon: Preheat oven to 400 degrees F. Line the sheet pan with parchment paper.

Coat the sweet potatoes with some oil, salt and pepper and bake for 5-7 minutes.

While the sweet potatoes are baking make the citrus glaze.

Remove potatoes from oven, add veggies and mix well.

Create a middle section to add the salmon.

Pour the glaze on top and bake for another 1518 minutes until salmon is cooked.
