From Me To You...

but you will have to check in with a ticket agent at the airport.” Great! So there is more time to add. Heck, I might as well bring a large suitcase if I have to wait (it is included for free on international flights so woo hoo!). Back to the timeline. I am getting in my car at 4am which means I get up at... you guessed it, 3am. With that annoying sound mocking me, “You could have flown in the afternoon!” it seems to say.

For years now, my alarm has been a blaring, cacophony of sound. An angry klaxon, shrieking at me, “Wake up! Wake Up! WAKE UP! The noise would jar me out of sleep and hurtle me into whatever horrible thing I had decided I needed to wake up early for. Flights I couldn’t miss, children who had to go to school, deadlines I had to make. Ahem, you get the idea. Well this is not a good way to start your day. Take it from me, all that does is get me angry and I always manage to book a flight that means I no-one wants to start a trip angry. So I recently have to get up at 3am. Why? I have no idea. had an epiphany. Why not change my alarm Perhaps that is the cheaper flight, or in the frenzy to something soothing? My phone has at least of making sure I don’t miss out on a deal I ‘forget’ a hundred options to choose from, with many that a relaxing 8am flight means I need to be more that I can download - just as soon as I there 3 hours before which puts me at 5am. Still figure out how to do that. My children have had do-able. Oh, right, I live almost an hour from the a ton of different alarm clocks through the years. airport. So now I need to be in my car, passport I remember one that yelled “Get out of bed you in hand, bags packed to the limit (but not over) so lazy child!” in a Simpsons character’s voice, one I can avoid checking in. Why not check in online that you had to throw at a wall, and the latest you say? Great idea, but I can never check in version is the most torturous of all. You have to online. I must have been flagged somewhere solve a math problem to switch it off. Now the because I always go through the online process problem is something simple like “What is 7x6?” in a vague hope that this time it will be different, However at that time in the morning what I hear only to be denied at the final page. “We are sorry is, “If a train leaves Newark at 10am and the cookies need 17 minutes to bake, what color is the cat?” Not good. I resolved to use something that would gently wake me, ready to start the day with a smile on my face. I found a sweet chiming song that starts quietly, gradually getting louder if you don’t turn it off. Fantastic, I am ready for my 3am wake up call. Funny thing though, I find that I can hate anything that wakes me at 3am, even the sweet, dulcet chimes that seem to mock me anyway. I guess I am just not a morning person. But will I remember that the next time I book a flight? Probably not.

On Our Cover The six Fishburn children are Army Brats, and have lived all over the country and in Europe several times. Their father is a retired Army Officer, and their mother is a Behavior Analyst here in the West Valley.

The move to Arizona was for their mother’s work. Until then, the triplets had never been to Arizona before. The children all agree that Estrella is a great place to live, go to school, and enjoy life. Of all the places they’ve lived, the triplets have decided Arizona is one of their favorites. They like the cool winters, the friends they’ve made through this great school system, and they love the desert plant life—especially the saguaro and ocotillo. They agree that the sunsets against the Estrella Foothills can’t be beat. The Fishburn children of Estrella consist of Jeron, a 21-year-old college student who is currently taking a 2-year break from his studies to serve a 2-year service mission in central Europe (Austria, Germany, and Switzerland) for his church; a set of 18-year-old twins, Faun and Georgia, who just graduated from Estrella Foothills High School this

Estrella Publishing - Up The Hill magazine

past May, and are now in their freshman year of college in Oklahoma; and finally, a set of 12-yearold triplets, Manon, Johana, and Pehrson, all in 7th grade together at Westar Elementary this year. They have lived in Estrella for 3 ½ years. They love Westar, their teachers, and their principal, Mr. Bogart. Though the oldest three kids have left home now, the triplets say their favorite thing about living in Estrella is going to South Lake to play basketball, volleyball, and to run the path. All three have been part of the Cross Country team for Westar, and Manon placed in every meet last season. They ran in the 5K portion of the Oklahoma City Memorial Marathon (over 25,000 runners) last spring, and Manon placed 10th in her age division (ages through 19), and 23rd overall in womens. They are looking forward to the next Cross Country season at Westar, and are ready for it! They also participate on the Westar Volleyball team, and have learned a lot from the coaches and teammates here. They are so happy they’ve had this opportunity to be a part of the Estrella community, and some of the triplets want to stay in Arizona and go to ASU when they graduate.

Germs!

Although a quick daily clean might keep some of the bacteria at bay in your kitchen, it’s important to remember that germs are lurking in the dark corners often overlooked! That raises your risk of getting sick. These are three places in the kitchen where germs like to hide, along with things you can do to clean up your act. 1. Your refrigerator It’s true, germs can and do hang out inside your refrigerator, especially in the meat and vegetable compartments. In the NSF study, these tested positive for E.coli, salmonella or listeria 36 percent of the time. To keep food safe, discard food that’s past its prime, and maintain a consistent temperature level in the fridge, ideally between 40 and 32 degrees Fahrenheit. You should also get in the habit of regularly cleaning refrigerator door handles and meat and vegetable drawers! 2. Your dishwashing station Be honest. How long has that kitchen towel been hanging on that loop by the kitchen sink? A

6 Estrella Publishing - Up The Hill magazine

week? A month? Can’t remember? If you’re not careful about how often you wash your towels, your kitchen rags could become a breeding ground for dangerous, stomach-sickening germs. According to researchers from the University of Mauritius, towels can develop some nasty bacteria - the kind that causes foodborne illnesses - when they’re used for a full month. Yuck! To keep things cleaner, get into the habit of grabbing a clean towel every few days. Sponges should not be used for longer than two weeks. 3. Your food prep surfaces Don’t be deceived by the spotless appearance of your countertops, sinks and cutting boards. The NSF study discovered that fecal coliform has a presence on these surfaces - 45 percent of kitchen sinks, 32 percent of countertops and 18 percent of cutting boards. Even if these are wiped or rinsed daily, it’s important to take the extra step to keep bacteria from lingering on these surfaces where they can contaminate your food. Before you gather your ingredients, wash all meal prep areas with hot, soapy water. Now that you know what to do to combat hidden bacteria lurking in your kitchen, you can prepare meals and feed your family with much greater peace of mind.

Money Matters Time to Think About Year-End Investment Moves We’ve still got a couple of months left in 2018, but it’s not too soon to start thinking about some year-end investment moves that might benefit you.

Add to your IRA. For the 2018 tax year, you can put up to $5,500 into your traditional or Roth IRA, or $6,500 if you’re 50 or older. You have until April 15, 2019, to contribute to your IRA for 2018, but why wait until the last minute? Increase your 401(k) contributions. You already may be investing in your 401(k) or similar employer-sponsored retirement plan, but you should always put in enough to earn your employer’s matching contribution, if one is offered. Make changes in response to life events. In 2018, did you experience a major life event, such as a marriage, divorce or addition of a child? Or did you change jobs or retire? Any of these events could lead you to adjust your investment plans, so now may be the time to do so, possibly with

Estrella Publishing - Up The Hill magazine

the help of a financial professional.

Review your investment mix. At least once a year, it’s a good idea to review your investment mix to ensure it’s still suitable for your goals and risk tolerance. Sometimes, even without your taking any action, your portfolio might change in ways you hadn’t expected. For example, suppose you wanted your portfolio to contain 60% stocks and 40% bonds and other investments. After a period of rising prices, though, the value of your stocks may have increased so much that they now occupy 65% of your portfolio – which means you may be taking on more risk than you had originally intended. Consequently, you may need to rebalance your portfolio to get back to your original 60% to 40% ratios. (Keep in mind that everyone’s portfolio mix will depend on their individual situations.) These aren’t the only year-end moves you may want to consider, but they can help you close out 2018 on a positive note. Plus, they can serve as a reminder that you need to be vigilant as you keep working toward your financial goals. Submitted by Chris Carlton of Edward Jones

Simply Thankful

As Thanksgiving approaches we take inventory of our lives and what we are grateful for. For most of us it is pretty much the same from year to year. Our family, friends, job, health, home etc., things we take for granted the rest of the year. But what if you had few to none of these things? I have spent the last two years travelling between here and Kenya. I have gone to bed with the threat of waking up to war. I have shared my room with rats, snakes, cockroaches and many other crazy African bugs. And I have learned to not take so many things for granted in my life. Working at a children’s home with 184 kids and living in their culture I have seen the poorest of poor. I have lived in the bush and at times without running water, electricity and common conveniences to us here. What I have learned is heart wrenching and joyful at the same time. These kids have come from various situations, some survived near death, torture and other atrocities hard to imagine. They are true survivors. The children at the home have next to nothing, but they are happy! They have become friends and family under the amazing directors on the ground there. They are given a chance at an education on the 20-acre compound with their own private school. They eat three good meals a day and have dorms with beds and bathrooms. Bathrooms are a true luxury and not easy to find when travelling around Kenya. Usually it’s a cho, meaning a wood hut with a hole in the ground and you better be carrying tissue with you too. These children also get medical care that very few can afford. Even with these amazing opportunities at the home, they still live in a way that most westerners could not understand. The first thing people here usually say to me is “how awful and sad it must be”, but It’s not. It is obviously not an easy life, but I am humbled to be a part of these kid’s futures and helping 10 Estrella Publishing - Up The Hill magazine

make their little piece of the world better. It is not easy driving through the villages and towns and seeing all the help that is needed by so many, sometimes it makes me wonder if I’m truly making any difference. Then I look at everyone I work with, and as a group we are making a difference. I can say my experience in living there has taught me to be grateful for not only the big things in life but things that no one here even thinks about. I am overwhelmed when I come back and grocery shop, the technology we have, the ‘I need it faster attitude.’ When you sit at a bank or office for literally 4 or more hours for your turn, you learn patience whether you like it or not. It is always more of a culture shock for me to return to The States then returning to Kenya since life is hard but simple there. I am always happier when I’m there because there is so little pressure. I wish everyone could have the experience of living in a third world country. I sit on the Kenyan side of the board and now that I’m here for a longer duration and working, my purpose is still to help bring awareness about Kenyan struggles and especially the wonderful children’s home that has stole my heart. As this holiday season comes around again, be thankful, be grateful but most of all don’t forget to count the ‘little’ things that we have been blessed with. When the pie burns, the turkey is dry, crazy Aunt Mary lets her mouth run off and you missed that Black Friday deal. Take a breath and step back. Look around at what is important and let it go. After all It’s not really that important in the big picture. This comes from a girl who once was on that side of perfection and admittingly can still go there but has come a long way which is owed all to the hard but simple life, the 184 kids and my Kenyan Friends. The Bug Guy Before I became part of the pest management industry, I associated the sound of crickets with memories of my childhood. That distinct sound is created when male crickets rub their wings together. This sound is a dinner bell to scorpions. Pests need three things for their survival: water, shelter and food. The elimination of water and moisture is paramount in making your home inhospitable to creepy crawlies. In fact, by simply eliminating, or even reducing moisture, you can greatly diminish the likelihood of infestations of a myriad of pests including sowbugs, cockroaches, silverfish, centipedes, millipedes, crickets, and the dreaded scorpions that eat all of them. When pest proofing your home, if there’s evidence of any moisture, make a point to fix any leaky water pipes under utility or bathroom sinks and be sure the washing machine lines are intact. Many of our fellow Estrella residents have experienced our monsoon season and need to ensure their homes are properly dried. Otherwise, not only will the pests mentioned above be

Estrella Publishing - Up The Hill magazine

problematic, but damp wood is especially attractive to termites. With the extensive damage they can cause, it’s essential to take preventative steps now to protect against them. Of course, moisture elimination is only part of the pest-proofing equation. It’s also important to remove offerings of shelter that may be lurking in and around your house. Most spiders and insects come into the lower levels of homes through cracks and crevices. Walk around the exterior of your home and use caulk to seal any openings you see. Pay particular attention to holes from utility lines and plumbing that come into your home. It’s important that you don’t seal off the weep screed, as this is a necessary vent for your exterior walls. If you see a lot of cobwebs in a certain area, there’s a good chance there’s a pest entry point nearby. Be sure to keep foliage trimmed back from your home and keep the rocks from piling up to the foundation of your house. As the leaves come down, be sure to remove them from gathering around your house as decaying leaf piles are very attractive to pests. Submitted by Larry Cash, of Estrella Mountain Pest Control

Business Spotlight Michelle Jewell is the owner of The Insurance Lady AZ, a company that helps you take the worry out of signing up for Medicare. Michelle did not start as an insurance agent, she was (and still is) an artist at heart. Sadly the business side of getting art into the hands of consumers took her away from the creative side that she loved. During this time Michelle’s Grandmother and Aunt were trying to unravel the complexity of Medicare enrollment. Michelle saw their frustrations and helped them as best as she was able. Having seen the need for someone to help those like her relatives, Michelle went to her good friend who was an insurance broker. She mentored Michelle and soon Michelle was a licensed broker too. Now she talks all over the state educating others on Medicare in addition to being on talk radio for 3 years at 960am Intelligent Talk Radio. Michelle shared an interesting fact with me, over 60% of people get their information about Medicare and the enrollment process from a

neighbor. That does not seem like the best policy, considering you will be stuck with your decisions for a whole year and these decisions can make a huge financial difference in your life! To gain more comprehensive knowledge Michelle recommends reading Aging In Arizona, Insights For The Elderly & Their Families - a book that addresses the financial, social, medical and spiritual needs and challenges of getting older. The authors of the book asked Michelle to write the chapter on Medicare (you can find it on Amazon). “It is a terrific resource for those getting older, or those with aging parents. Michelle loves the freedom and rewards her job gives her, she can give power back to a demographic that is so vulnerable. She gets to help people find a plan that is a good fit for them in their life. The enrollment period for Medicare is short and many people feel pressured to make a snap decision. If you are one of those people contact Michelle at 602.828.9937 or Michelle@ TheInsuranceLadyAZ.com and let her help you.

Lunch Box Ideas Packing a healthy lunch is one of the easiest ways parents can support their child’s education during the day while they can’t be there. Many traditional healthy foods aren’t necessarily kidfriendly, which leaves moms and dads wondering how to pack a wholesome lunch that will actually get eaten. Fortunately, a little creative thinking and a few simple lunchbox tricks can help you create tasty meals that will fuel your kids throughout the school day. Consider these ideas and be inspired to create your own kid-approved combinations.

Think outside the loaf: Sandwiches are a lunchbox staple, but that doesn’t mean you’re limited to two pieces of bread. To add variety and boost nutrient intake, incorporate fun variations. For example, use whole-grain tortillas to create wraps, or, go one step further and cut up the rolls for bite-size “sushi” that makes it fun for lunching. Another idea: use whole-wheat waffles as the sandwich ends and fill with peanut butter and banana or cream cheese and apples.

yellow peppers. You’ll keep things visually stimulating and the various colors of fresh foods mean they are getting a variety of vitamins and minerals.

Slurp up soup: Cold lunch doesn’t necessarily need to be cold. Get a reusable insulated container and get ready to delight those kid’s taste buds with vitamin-rich soup. Whether you choose a hearty alphabet soup bought from the store or decide to make a batch at home, look for options packed with different vegetables and limited salt. Simply heat up in the morning and it will be ready and waiting come lunch time. Protein pick-me-up: Protein helps kids feel fuller for longer, getting them through those lengthy school days. It’s important to pack a protein source in lunch, but meats aren’t your only option. Eggs are high in protein, so try hardboiled or scrambled and pack in an insulated container. Other kid-friendly foods high in protein include cottage cheese, Greek yogurt, beans and many nuts or nut butters. You are what you eat, so it’s important to choose your children’s foods wisely.

Colorful creations: Ever notice how everything associated with kids has tons of color? Children are attracted to vivid hues and you can use this to your advantage when you pack lunches. Put a rainbow in every lunch by packing colorful produce such as green cucumber, cherry tomatoes, purple plums, orange carrots and

Connections

During the holidays, friends and families gather to celebrate and spend time together. This is a wonderful opportunity to create meaningful connections between people of different ages. However, it’s not uncommon to struggle with how exactly to do this when those of different generations, political and cultural beliefs, and religious backgrounds often seem worlds apart. If you’re looking for thoughtful ways to connect all generations of your family, from the youngest to the oldest, and bypass divisive topics these smart ideas will inspire.

encourage meaningful conversation, plus the app allows you to record, share and keep the stories and voices - of family and friends forever. Plan a game or movie night Games and movies are timeless activities that appeal as much to Grandma as they do to your 5-year-old. By planning a game or movie night, you’ll bring everyone together for a good time. Consider finding a board game or movie that was popular when you or your parents were kids so

Passing down trades and traditions Older generations have wisdom, experience and many traditions to share with those willing to learn. Talk with loved ones about their favorite traditions and then ask which they could teach to family. You might be surprised what older generations cherish as traditions. For example, consider organizing a time for everyone to bake a time-honored recipe together. Perhaps it’s learning a holiday tradition that provides a cultural experience that younger generations have never done. Keeping an open mind and trying something new together is guaranteed to be a bonding experience. Storytelling and archiving One of the most meaningful ways people of different generations can connect is through sharing stories. Sometimes you just need a little help getting the conversation started. That’s why Atria Senior Living, inspired by its residents, created Atria StoryWise, a curated collection of cards featuring thoughtfully selected topics and cues designed to spark memories and fuel conversation. You can spur conversation with loved ones in a similar manner with the Atria StoryWise companion app, available free to everyone. everyone enjoys their time together. To make the day even more special, shop for old-fashioned candy and snacks that spark nostalgia. You may have to order some items online, but it’s worth the effort because everyone will think it’s fun to sample the treats that were popular during different decades. Use these ideas to transform your next holiday into one filled with memories. You’ll inspire new connections between family members as you laugh, love and live life to the fullest.

Wine Pairings Have you ever looked at a wine list and wished it actually told you what the wine tastes like? Have you ever wanted wine connoisseurs to stop swirling and sniffing, and just take a big sip? Well, you’re not alone and Dan Dunn is on a mission in the name of all things craft to take the stuffiness out of wine, make it more approachable, and let people know it’s not about the glass you drink it out of, it’s what’s in it that matters. Better yet, buck tradition, ditch the fancy stemmed glass and grab a rocks glass. “Bourbon barrel-aged wines are trending right now, and they are a great gateway for guys who typically drink craft beer and bourbon,” says Dunn. Forget everything you’ve heard about pairing wines with Brie and apples, he says. In the man’s own words, here are Dunn’s pairings. 1. With a big, juicy burger Think of a great hamburger as you would a classic artist such as Paul Simon. Both are

Estrella Publishing - Up The Hill magazine

something special on their own, but when paired with the right partner - be it a robust cabernet sauvignon or a spindly, curly-haired tenor from Queens - well, that’s when the real magic happens. Alas, Simon and Garfunkel called it quits a long time ago, but I’m happy to report that cab and burgers are still making beautiful music together. 2. With pork The pig is indeed, as Homer Simpson once put it, “a wonderful, magical animal.” You should know going in, though, that pairing with pig is a delicate dance. For smoky roasted pork, you can go with a little richer, heavier red - say, cabernet sauvignon - but try the same thing with a honey or maple-glazed ham and you’ve got a mouthful of clash. For sweeter preparations, think midbodied reds like a bourbon barrel-aged red blend, aged in charred bourbon barrels for 6 months, delivering a finish as smoky as it is smooth. 4. With lamb No matter how it’s cooked - grilled, braised or roasted - that rich, savory meat demands robust red wine at its side, like a nice zinfandel, with its larger-than-life berry fruit character. The bottom line is, if you enjoy the wine then drink up!
