From Me To You... With the rise in services like Netflix and Hulu, it is easier to catch your favorite show and watch at your leisure than ever before. This has also led to the phenomenon of binge watching - sitting through a season or series at a time. In reality I have been doing my own form of binge watching for years, turning on House Hunters or Friends every night. There are advantages to screening shows this way. You can fully immerse yourself in the story and follow complicated plot lines more easily. If you are watching a show you have seen before then multitasking comes into play. For example as I write this I am streaming The Big Bang Theory in the background. Bazinga! Something that occurred to me is that the way shows are written will have to evolve as we turn more to binge watching. I was watching Grey’s Anatomy and when I saw it originally the plot lines made sense. However, once I started watching one episode after another, the stories seemed to speed up. Relationships

blossomed, evolved and ended in a matter of hours, not weeks as I remembered it. The sheer number of disasters also became somewhat comical when viewed that way. I mean, how many horrible things happened to that cast and the poor patients they treated? Subway pole pinning two strangers together, a man attacked by his girlfriend’s lion, near drownings, plane crashes, car crashes, it makes you think twice about visiting Seattle. Shows like Grace & Frankie and Santa Clarita Diet are released all at once. You can see the whole thing as quickly or slowly as you want. It makes the gaps between seasons harder to wait for but I guess you can’t have everything. I have also come to realise that the significance of the show you pick has increased in importance. If you dip in and out of a show once a week for half an hour or an hour it is not too much of an investment of your time. Now with binge watching, there better be something that makes one series worth the days or weeks you will be spending together. Something light and silly or a drama that pulls you in perhaps. Maybe a historical romance, you know so you can learn something while you fritter away all those hours. I was planning on starting Game of Thrones next week but with all the backlash over the last couple of episodes I am rethinking that choice. Which shows do you love to watch? Email me with your favorite shows that you think are worth binge watching. I look forward to your recommendations!

Torreon Topics Welcome to another issue of Torreon Living Magazine! I am excited to announce the hiring of the next Executive Chef at Torreon, Jerry Destefano. Jerry was born and raised in northern New Jersey about 20 miles from New York City. He attended Seton Hall University in New Jersey and graduated with a degree in Business Management. Family is extremely important to Jerry and he will be joined in Show Low by his

8 Estrella Publishing - Torreon Living Magazine

wife Brittany, 3 year-old son Romey and their four dogs, Jenna (Australian Shepherd), Yogi (Collie mix), Gadget (Heeler) and Callie (Pit Bull) which have all been rescued and are constant companions.

Jerry comes to us from his most recent position as Sous Chef at the Troon Privé managed Entrada at Snow Canyon in St. George, Utah. Throughout Jerry’s career the pace and atmosphere of the kitchen have always been intriguing. Over his years in culinary he has been a sponge, soaking up as much information as he could from everybody with whom he worked. This allowed him to excel and climb the ladder very quickly. What attracted Jerry to a career in culinary was the opportunity for teamwork and camaraderie in the kitchen while the team strives to achieve the goals placed in front of them. “My philosophy as a Chef is to grow and develop those around me while providing quality, consistency and variety in the culinary experience of our membership.

June 2019

I feel like the ‘perfect menu’ has a good variety of items and is a collaborative effort among the culinary team utilizing everyone’s strengths.” Jerry believes member feedback and communication are essential to culinary success and looks forward to meeting many new faces once he is on property. Some of Jerry’s favorite dishes to prepare include short ribs and scallops. He really enjoys eating Italian food as his family originated in Italy. “My grandmother inspired me to cook because of all the delicious Italian food she made for us growing up.” When Jerry isn’t working he enjoys being outdoors. His hobbies include rock climbing, skiing, mountain biking, hiking, swimming and camping, all of which make Show Low and the White Mountains of Arizona a perfect destination. Growing up Jerry played many sports including baseball, football, tennis, soccer and basketball. To this day he is an avid fan of his hometown teams: the Mets, Giants and Knicks.

Relocating from St. George, Utah will definitely be a change as his wife was born and raised there. “We are sad to leave our family and friends in Utah while, at the same time, extremely excited about the opportunity to lead the culinary team at Torreon and this new chapter in our lives.” We are looking forward to the culinary future at Torreon the Jerry at the helm. The Torreon Grille and The Cabin are both open and we look forward to serving you and your family soon. Enjoy the summer and all Torreon has to offer,

Summer Recipe

Chilaquiles (chi-la-keylays) is a traditional Mexican dish, comfort food and hangover cure. In a Mexican household nothing goes to waste so this was generally a dish made with tortillas that had begun to stale. It is one of my favorite breakfast dishes, especially since you can get creative and add chicken, brisket, or pork. It can be made with red or green sauce, although I personally prefer the salsa verde variety. Top with some over easy eggs and I hope you enjoy them as much as I do! Ingredients 16 corn tortillas 2 tablespoons extra-virgin olive oil ½ teaspoon fine-grain sea salt 2 teaspoons extra-virgin olive oil 3 cups salsa verde—can be homemade or purchased 2 tablespoons chopped cilantro 4 fried eggs 1 avocado, diced 1 cup crumbled queso fresco 3 tablespoons chopped red onion or green onion 2 tablespoons chopped cilantro Directions Preheat the oven to 400 degrees with racks in the upper-middle and lower-middle positions. Line two large baking sheets with parchment paper for easy clean-up. Brush both sides of each tortilla lightly with oil. Stack the tortillas, 4 at once, and slice them into

8 wedges. Repeat with remaining tortillas. Divide the wedges between the two baking sheets and arrange them evenly across the pans .Sprinkle half the salt over one pan and half over the other. Bake, swapping the pans on their racks every 5 minutes, until the chips are curling up at the edges and some are starting to turn golden on the edges. Once the chips are out of the oven, warm the olive oil in a large, stainless steel skillet. Once it’s shimmering, add the salsa verde and be careful to avoid splatters. Raise the heat to medium-high and bring the mixture to a simmer, then remove the skillet from the heat. Stir in the tortilla chips and cilantro until all of the chips are lightly coated, then cover and let rest until the chips have softened slightly, about 2 to 5 minutes. Uncover the pot and add the toppings of your choice, then divide the chilaquiles onto individual plates. The chips will continue softening with time, so chilaquiles are best served promptly. Golf Tips

Playing the Slopes. The slopes here in the White Mountains are the best in the state and I sure hope many of you enjoyed some pretty epic conditions this past winter. As of you have noticed our golf courses here at Torreon have some slope to them as well. These slopes could almost be thought of as Torreon’s second defense, the first being the wind. This tip will give you a few things to help you with playing on the slopes here at Torreon.

much as three clubs up from the standard shot (ie Normal shot calls for a Pitching Wedge but you would use a 7 iron). Lastly, be sure and swing the club up the slope and not into the slope. The picture below shows my shoulder angle matching the angle of the slope, and the red arrow indicates my weight is primarily on my back foot. The strategy for playing downhill slopes is going to be largely opposite of the uphill slopes. Here you are going to play the shot with a more lofted

club. Most importantly, angle your shoulders down the slope with your weight more toward your front foot, this will help you to not hit the Up hill Slopes can be challenging for players sometimes leading to chunked shots or ones that ground too far behind the ball. Lastly, you’ll swing the club down the slope. For further instruction end up short of their intended target. Big Lake

The great state of Arizona; where you can drive a short few hours from the heat of the city to the cool mountains of northeastern Arizona. Here you will find mountains that boast of ponderosa pine trees, creeks, rivers, and stunning mountain lakes. One of the Forests that make up part of the state is the Apache-Sitgreaves National Forests. This forest covers over two million acres of beautiful mountain country in east-central Arizona. The Apache National Forest ranges in elevation from 3,500 feet to nearly 11,500 feet and is named for the tribes that settled in this area. The area from Mount Baldy east to Escudilla Mountain is often referred to as the White Mountains of Arizona. From the edge of the Mogollon Rim south of Hannagan Meadow, the land drops precipitously into the high desert around Clifton. On the Sitgreaves, the major attractions for visitors from all over the world is the Mogollon Rim, which have some of the most amazing views of the state, to the many lakes and recreation campgrounds located near Woods Canyon Lake, to Show Low, all the way up to the amazing Big Lake located on the Springerville Ranger District. Big Lake is considered one of the White Mountains’ best fishing lakes in Northern Arizona. Sitting at 9,000 feet in elevation and spans over 500 acres with an average depth of 16 feet, it is the perfect habitat for Rainbow, Brook and Cutthroat trout. Because this lake sits so high in elevation, it does freeze and road access is restricted due to heavy snow. However, there are many winter activities such as snowmobiling, snow shoeing and skiing at the nearby Sunrise Ski resort. 12 Estrella Publishing - Torreon Living Magazine

Big Lake Recreation Area is a perfect getaway for those who love camping, hiking, fishing, and being outdoors in the cool mountain air. Campers have a choice between 5 different campgrounds located near Big Lake itself. These campgrounds are; Rainbow Campground, Grayling Campground, Cutthroat Campground, Brookchar Campground, and Apache Trout Campground. This recreation area is the main base to set out to explore other lakes in the area as well as the Black River located on the East and West Fork. With temperatures averaging 75 degrees, Big Lake is a much sought out relief from the triple digits of the Arizona deserts. With such cool temperatures, hiking or biking the many trails in the area is a pleasant and peaceful experience. Wildlife frequents the area from many types of birds, squirrels, deer, elk, and yes the occasional black bear. In the fall, you can sit in your campsite and listen to the elk bugles. Big Lake is truly an amazing place to take your family, to get away from the heat, and just to experience nature and the outdoors in the most magnificent backdrop Mother Nature has to offer. Campgrounds are managed by Recreation Resource Management of America, Inc., a private concessionaire for the United States Forest Service. For more information about the campgrounds located at Big Lake, you can call 928-537-8888 or visit their website at www.rrmofa.com . The Love Kitchen The Love Kitchen first opened its doors in 1986 and has been serving 10’s of thousands of those in need every year since. We have a firm belief that anyone can walk through our doors and break bread at our tables. So many show up for a nutritious meal that will see them through each day. There is a goal to make them feel at home while at the Love Kitchen because some do not have one. Amongst those are our local veterans, homeless, single parents, senior citizens, children and families that are going through hard times. Many of our clients are homeless veterans and the time that they spend here gives them a respite from life on the street, a place to relax, where they feel safe and comfortable and a part of a community. Others are in a transitional situation and spend time with our volunteers and engage in sharing their story. Some have recently lost a loved one and may just need that companionship of others to keep them from feeling alone. ALL are welcome here. There is one thing that each of our guests have in common with one another. They come through our doors hungry and thankful for the meals we provide. Many are surprised by the cross section of people they see coming for a meal. Women, men, children, all ages and ethnicities. Hunger does not discriminate and sadly, coping with hunger every day is a reality for many. The Love Kitchen is the only soup kitchen in the White Mountain area at this time and serving a

large part of both Apache and Navajo counties. 1 in 4 children goes home to no food for them to eat. Summer months come and our kitchen serves a huge purpose in making sure they have one nutritious meal each day while also supplementing with food boxes. 1 in 5 adults deal with the same fate and it is estimated that many of those are veterans. Senior Citizen numbers are rising with having less then needed food in their home to sustain a healthy life. 1 out of 7 are falling into this category. Many are also struggling with homelessness. Ten percent of those are veterans. Our Ministry relies on financial donations from the community and our annual fundraisers. At this time we receive no government grants. Being creative with our fundraisers is the key to helping raise the money to help through the harder times. Summer months seem to be the hardest as we see a big decline in monial donations. Unfortunately, hunger has no month or holiday. It just always exists. You don’t have to be homeless to be hungry. For many low income families, difficult choices have to be made: the choice to buy food or pay rent, to buy food or by a winter coat for a child. For many soup kitchen guests, being able to come here for a meal allows them and their families to remain in their homes. A choice none of us wants to make. Our hope is to be a beacon of light in what may be a very dim one for some. We happily accept food (perishable & non perishable) , cash/check, gift cards, household items, cleaning supplies, etc. at 1715 S. Penrod, Pinetop, AZ. Our weekly hours are: Monday, Tuesday, Wednesday, & Friday a hot meal and food distributed from 11:30am-1pm. Thursdays are open as food is available. If you would like to send in a donation, our mailing address is PO Box 1373, Pinetop, AZ 85935. We hope to end hunger one day so that no one has to go to bed wondering when their next meal is coming. Until then we have an open door policy and welcome anyone. Lynn Lewis, Love Kitchen Director

Volunteerism at Veteran’s Village ‘V’ stands for victory Not everyone can wear their commitment to volunteering on their sleeves, but a few good people here in the White Mountains know what that is all about. Those people are the special men and women who give of their time to the Walking Down Ranch, Veterans Village in Lakeside. However, the need for lending a helping hand is great and by volunteering your time, whether you are a seasonal resident or full time, you will be stretching the positive outcomes a long way.

comes from the Veterans Village Thrift Store. The store is always in need of donations as well as wonderful volunteers who can clean, sort, price, and keep the store full of donated items that are then purchased by the public. In case you think that only community volunteers do the heavy lifting, the majority of the veterans who reside in the village cabins also take an active role in the upkeep and maintenance of the facilities while they reside at the village. For further information contact Maggie Heath 602 689 8056 walkingdownranchinc@ gmail.com www.walkingdownranch. org
