From Me To You...

If you are privileged to live long enough you will come to realize that everything changes.

Relationships change, circumstances change, heck even people change. The key in life is to roll with those changes, learn from them when you can, and move along to the next phase in your life.

Personally I usually enjoy change. As an optimist I will always look for the good in a situation or person, and that means that even when something knocks me for a loop I will dust myself off and find the positive. In fact I have come to see change as a personal challenge. What can we do with this? Does it open up opportunities that were not there before? Moving across the country can be scary but what about the new best friend who is waiting to be discovered? Or the amazing vistas that you have only seen on a computer screen? What about the smell of creosote after it rains? OK, not everyone will like that one but I do!

Perhaps my love of change is inherited, my paternal grandmother lived in government housing and could not afford to buy a new house. So the people on her street would swap homes every few years. My uncle emigrated to New Zealand to effect change in his life - a poor farmer, he saw an opportunity to work for land in a new country and he lived out his life as LICENSED, BONDED & INSURED - LOCALLY OWNED FRANCHISE 4 Estrella Publishing - It’s A Grand Life magazine

a contented kiwi farmer, with many acres to call his own.

I love moving, not the physical effort of the job, but the change and newness of a different situation thrills me. Of course moving is a time consuming and expensive proposition and is not always realistic, so when I am in one place for too long I start to change my house on the inside. Some would call it updating, for me it releases the pressure of ‘sameness’.

I have known people who have bought a home after visiting the model and placed their own versions of that furniture in exactly the same configuration as the home they first saw. Crazy.

And they kept it that way, for as long as they owned the house! Now that makes my head ache.

When my husband worked in corporate America and was away on business trips I would make the most dramatic changes. He would return to rooms painted different colors and furniture rearranged. I have even moved rooms around inside the house. One of our daughters commented that during her childhood she had a bedroom in almost every room of the house. True story. Now that he works from home I have to fly thing by him first. My long suffering husband has come to accept my need for change and usually agrees with my ideas although painting the kitchen white took me two years of persuasion, but as soon as the first door was done he agreed it was the right move.

Now that I think of it I can remember my father often using the phrase, “A change is as good as a rest.” I believe I have taken that expression to heart and I encourage you all to do the same.

On Our Cover Our handsome cover model this month is Colonel Phil Hanson. A 5th generation Arizona Native his family relocated here from Arkansas in 1876. Phil’s great-grandfather was a doctor, realizing that life in Arkansas after the Civil War held little opportunity for him he became the Wagon Master of a 24 wagon train headed for the Arizona Territory. He settled in Springerville just east of Show Low as the town’s doctor. The family still has a home there and Phil has fond memories of his daughters spending summers there.

Phil attended Arizona State University where he joined the Advanced Army ROTC and after graduating he attended basic training at Fort Still, Oklahoma. In 1955 Phil was deployed to Korea where he spent some of his 16 months stationed near the Demilitarized Zone.

“There were incidents all the time, with spies coming across the DMZ,” he says.

He spent 6 years with the Army including time spent in Fort Collins then Germany with his new

wife and baby. Never having been away from home before, his wife found it hard to adapt. Phil was honorably discharged and continued to serve in the Army Active Reserve until 1985, retiring with the rank of colonel.

Phil moved his family to Utah where he became the Personnel Director at University of Utah Hospital. A divorce in 1978 prompted a move to Phoenix where he took the position of Personnel Director at Boswell Hospital. Phil retired as Human Resource Director there in 1999.

Phil joined the Military Order of the World Wars in the 60’s and has maintained his membership ever since, even holding office for many years.

Phil also served as our State Representative for 4 years which he enjoyed tremendously. He met many interesting people and was instrumental in keeping Luke AFB operational.

“The art of politics is negotiation and compromise. If we had more of that in politics today we’d all be much better off,” he says.

His love of country and dedication to service is clear. As he says, “Freedom is not free. Our service men and women pay the price.”

Garden Frittata

Fresh vegetables mixed with eggs and cheese make for the perfect meal. Note: This recipe adheres to the rules of many specialty diets, including vegetarian, keto and gluten-free.

Ingredients: 4 Eggland’s Best Eggs (large), beaten 2 tablespoons butter 1 teaspoon finely chopped fresh garlic 1/2 cup chopped onion 1 cup chopped fresh spinach 1/4 teaspoon salt 1 tablespoon chopped fresh basil leaves 1/3 cup shredded Parmesan cheese 1/4 cup chopped cherry tomatoes Directions: • Melt butter in 10-inch skillet until sizzling; add garlic and onions.

• Cook over medium heat, stirring occasionally,

4-5 minutes or until onions are translucent.

• Add spinach, saute 2-3 minutes or until spinach is wilted.

• Whisk eggs and salt together in bowl.

• Add eggs to vegetable mixture in pan; sprinkle with basil.

• Cover; continue cooking 4-6 minutes or until center is almost set.

• Sprinkle with cheese. Cover; remove from heat. Let stand 2-3 minutes or until cheese is melted.

• Cut into wedges. Garnish with chopped tomatoes.

Health Care Powers Of Attorney The medical healthcare power of attorney identifies an agent, a trusted family member or friend, who can give consent to medical treatment if you cannot. If insurance requires transfer to a skilled nursing facility before going home from the hospital, your agent can arrange that for you.

Different from other states, the Arizona allows you to authorize your health care agent to follow your instructions for burial or cremation.

Otherwise, when there is no surviving spouse,

all of the children or other family members may have to be consulted. Another difference from other states is the mental healthcare power of attorney which helps avoid costly court intervention when there is mental illness, brain injury, dementia or Alzheimer’s.

If a person does not have these healthcare powers of attorney, the court must give authority to act. An attorney is needed for the patient and a different attorney for the petitioner. After a court investigation, a hearing is held in open court—in about 45 days after a petition is filed.

Meal Prep

Can you imagine opening your fridge to find a full week of healthy, delicious food prepped and ready to be eaten? That sure would make sticking with your diet and achieving fat loss a whole lot easier. The idea is to plan out all of your meals on the weekend, then do the shopping and the prep for the entire week. This day is labor intensive, but then your food is ready-to-eat for the next 6 days.

Here’s my 5 Step Meal Prep Guide to make your next food prep week really simple: Step One: Planning Get out your notebook and get planning.

1) How many meals do I need each day?

2) How many servings do I need for each meal?

3) Find your recipes 4) Focus on a core group of ingredients 5) Make enough of some recipes for leftovers.

6) Make your list

Step Two: Grocery List A few things to keep in mind…

1) Pay attention to recipes that you’ll double or triple and make sure to include all ingredients 2) Organize your list into these sections: Meat/Seafood/Egg - Organic Produce - Herbs/ Flavors - Pantry Items 3) Check for items that you already have Step Three: Shopping It’s time to head to the grocery store! Take your list and, if you’re lucky, a helper to your local store and go through each section item by item.

Step Four: Food Prep You have options when it comes to the actual prep of each of your meals. Here’s a good game plan if you don’t want to fully cook everything on Sunday: Fully make the baked goods for the week, chop all vegetables, gather all seasonings, and fully cook Monday’s dinner.
