From Me To You... Have you heard the phrase ‘rooting for the underdog’? It occurred to me the other day that I had been using it at face value for many years without thinking about what it actually means.
easy as eating a piece of pie’ because making pie or cake for that matter is not always simple, for one thing I never have enough eggs in the house...
I was watching my new puppy play with Hank (our 5 year old Goldendoodle) and by play I mean Bandit was pushing his luck and Hank was tolerating the shenanigans. In this scenario you may have thought that Bandit at 20lbs and half a foot tall would be the aforementioned underdog. But no. Poor Hank has displayed a strong propensity for not being the Alpha Male in this household and as such is losing the fight before it even really gets going. Pretty soon Bandit will out weigh Hank and truly rule the roost. So for now we all pretend that Hank is schooling the puppy as I root for him, the larger, sweeter of the two. The true underdog.
‘Stab someone in the back’ is a particularly nasty one. I guess the act of betrayal can be as painful as being stabbed, depending on the person and level of trust that is broken. The sneaky suggestion that because it is from behind, you would not see it coming adds to the viciousness of the act.
Having started down this path of understanding, I thought about other phrases and idioms that I have been using at face value. For example ‘a piece of cake’ or ‘easy as pie’. I believe there are a few words missing there. It should read ‘as

Ever think about what ‘quitting cold turkey’ actually means? This idiom is said to have originated in the early 20th century and suggests that a person who suddenly quits something addictive—such as drugs or alcohol—suffers from side effects that make them look and feel like a cold, uncooked turkey. This includes pale (very white) skin and goose bumps. At least that one has an explanation! Although not a phrase, Oxtail Soup was my favorite meal for many years until one day I realized that I was eating OXTAIL SOUP. Never again. ‘Can’t see the forest for the trees’ is one that happens to me often. I get caught up in the little things and loose sight of the big picture. The minutiae of a thousand small tasks prevents me from seeing that the reason we do all those small things is to be able to enjoy the larger scope of our lives. Family, friends, love and laughter. Hold onto those things when the trees start to crowd in on you.

Buffalo Bill Come visit several of the most memorable characters of the Old West at Buffalo Bill’s Tavern & Grill in Show Low, Arizona. These figures are wood carved and known to be the most size-like and lifelike of many of the western personalities. The Artist and Sculptor, Dee Flagg; lived and worked in Scottsdale and was well known throughout the United States and Canada for his genius at wood carving. Dee thoroughly researched each of his characters even to the acquisition of primitive hand-woven britches worn by Billy the Kid. His works are in several southwest collections and museums. More speed needed?. Sure, simply swinging harder is one way to go, but I think the secret to longer, straighter shots is swinging smarter. Here are 4 small improvements, each of which will add 5 mph of clubhead speed. That’s 5 mph faster! The result? You’ll get the extra distance of your dreams. 1. Tee the Ball in the Center of the Clubface It’s a no-brainer, but even Tour Players can misalign the club at address, soling the driver with the ball off either the toe or the heel. If you don’t play the ball off the exact center, you make it more difficult to hit the sweet spot at impact. And that’ll cost you. Missing either a quarter inch toward the toe or the heel is the same as swinging 1 mph slower through impact, even if the strike is made on the center groove. Always check to make sure you’re lining up with the ball in the center of the clubface, and with the equator of the ball even with the top of the clubhead. It’s hard to see for yourself, so ask a friend to help. Don’t lose yards by overlooking a small detail that’s easy to get right. 2. Stop the Sway Like the Tour pros, constantly try to improve your swing. One of the biggest mistakes can be eliminated from a swing motion is swaying off the ball in my back-swing, especially when hitting driver. When you sway, you create a “reverse C” at the top, with your lower body angled to the right of the ball and your upper body bent significantly toward the target. This creates a lot of inconsistency at impact and takes away leverage. The way it’s fixed is to set an alignment rod against the right hip. The rod reminds one to turn instead of sway, and also to get behind the ball without a ton of lateral lower-body movement. Replacing the “reverse C” with more of an “I” shape lets you fire your body to the left through impact with ease, fueling better contact, speed and power. Stability is the first key every Estrella Publishing - Bison Living Magazine
weekend player should work on if they want to hit it longer. 3. Carry a Light Stick Not many players can swing slow and hit it long—you need to increase speed if you want to increase distance. I see a lot of middle- to highhandicaps get loose before a round by swinging two irons simultaneously, or by using a heavy training aid. All this does is train your body to move slower. When world-class sprinters work on speed and explosive movement, they do it by running downhill. Apply the same theory to your warm-up. Practice swinging fast, not slow. A great way to do it is to grab an alignment stick or an old driver shaft and swing it as fast as you possibly can 10 or 12 times just before you tee off. Your driver will feel heavier than normal when you first pick it up, but your body will have retained the speed from the drill. Swing a light stick or shaft to warm up and you’ll pick up a mile or two in swing speed pretty quickly. 4. Swing Wide to Narrow Wide swings are powerful swings, but simply tracing a wide arc won’t help you add speed. The trick is to take the club back with your left arm extended and keep the grip as far away from your head as possible, then snap the grip down close to your body at the start of the downswing. Moving from a wide position at the top to a narrow one in your downswing sends your swing speed off the charts. But don’t overdo the “wide” part and keep your right arm straight in your backswing. Let it fold normally.Think “high hands” at the top. You’ll easily feel where the lag happens in your downswing, because your grip is soft. Not only will this drill improve your feel for lag, it will increase your lag, too. Keep swinging, and look for the right moment to release the lag and begin squaring the clubface. It should happen at about thigh height. You’ve got it right when your drives fly straight—and about 15 yards farther than before. ~ Lloyd Harvey, PGA July 2019

BBTG
We’re almost in the full swing of summer and that means BBQs, picnics, golfing with friends, fishing, sightseeing & a host of other activities that go along with the season. But the common denominator in all these activities is the company, whether it be family or friend.
BBTG has become a sort of gathering nook for the previously mentioned to sit & talk, watch sports on the monitors or just gaze out at the pines, all in this relaxed atmosphere. Then, here comes the food which just eases its way into the conversations. Lots of appetizers for the choosing like the fried green tomatoes
served with chipotle sour cream for dipping, or the hand made panko crab cakes on a bed of mixed greens with our house made remoulade. Interesting dishes worth talking about add to the dining experience. House specialty bison brisket sliders served on corn meal dusted slider buns topped with bbq sriracha whiskey sauce, blue cheese crumbles and french fried onions. No secret to any of the recipes here, just ask for the Chef & he’ll step by step you all the way. It’s always surprising to come in and check out the daily specials, especially now where we can work wonders with lighter dishes like our loaded bison brisket nachos or our summer Cobb salad. Nothing is more pleasing to be summoned to the dining room at a guest’s request to chat about their dish or for them to just be able to put a face and a conversation with their food. Give a holler when you come in. say, “ I read about your menu in the article”. The proof’s in the pudding ! Barclay Thompson, Executive Chef, BBTG

American Flag Pie If you haven’t worked with a sour cream pie dough before, it’s wetter and more pliable than a standard butter crust dough. Don’t worry, it will firm up when it chills. INGREDIENTS Crust: 3 1/2 cups flour 3 1/2 teaspoons sugar 1 1/2 teaspoons salt 14 ounces butter (3 1/2 sticks), cut into cubes 7/8 cup sour cream (that’s 3/4 cup plus 2 Tbsp) Strawberry filling: 3 1/2 pounds strawberries, hulled, quartered 1/2 cup sugar 2 teaspoons orange zest 4 Tbsp cornstarch, flour, or minute tapioca Blueberry filling: 1 pint blueberries (about 0.6 lbs, 280 g) 3 Tbsp sugar 1/4 teaspoon cinnamon 1 teaspoon lemon zest 2 teaspoons lemon juice 2 Tbsp cornstarch, flour, or minute tapioca Egg wash: 1 egg white 1 teaspoon of milk or cream Special equipment: One 13 x 18-inch rimmed sheet pan Star-shaped cookie cutter
METHOD 1. Make the pie dough: Cut the butter into cubes and let sit out for a 10 minutes to take the chill off. Whisk together the flour, sugar, and salt in a large mixing bowl. Add the butter and toss to coat with the flour. Using your (clean) hands, work the butter into the flour until the mixture resembles a coarse meal. Add the sour cream and mix with a fork until well incorporated. Knead with your hands until the mixture comes together as a ball. Divide into 3 equal sized balls of dough (it helps to use a kitchen scale). Form the balls into rectangular discs. Sprinkle with a little flour and wrap individually with plastic wrap. Chill for 1 to 2 hours or overnight (can freeze this point if making several days ahead). 2. Make berry fillings: Put the quartered strawberries in a large bowl and toss with sugar, cornstarch (or flour, or minute tapioca), and orange zest. In a separate smaller bowl, put the blueberries, sugar, cinnamon, lemon zest, lemon juice, and cornstarch (or flour or minute tapioca), and toss to combine.

3. Roll out the dough for the bottom crust: Line the bottom of a 13 x 18-inch rimmed sheet pan with parchment paper. Remove two dough discs from the refrigerator and let sit for 10 minutes to soften a bit. On a clean, lightly floured surface, roll out one disk to 11 x 17-inches and arrange on half of the sheet pan, with an inch of edge over the sides of the sheet pan. Roll out the second disc and cover the other half of the sheet pan. Fold the dough over along the edges and crimp. Remove any excess dough from center. Form into a ball, then use your hands to roll into a long rope. Crimp that rope of dough and form a rectangle in one corner of the sheet pan. This is where your berries and stars will go. The dough will help keep the blueberries from running into the strawberries. (If you don’t have excess dough at this point, no worries, you will later when you cut away the stars and stripes.) Put in the refrigerator to chill.

4. Make egg wash: In a small bowl, whisk together the egg white and milk or cream. 5. Roll out dough for stars and stripes: Remove third rectangular disc of dough from the fridge and let sit for 10 minutes to soften a bit. Roll out so that the longest point is 18-inches. Use a dinner knife (blunt) or a pizza wheel to cut out stripes. You’ll need 2 stripes that are about 18 inches long and 1 1/2 inches wide, and 2 stripes that are about 10 inches long and 1 1/2 inches wide. Use a star shaped cookie cutter to cut out stars. Place stars and stripes on a cookie sheet, sheet pan, or large plate. Brush with egg wash. Chill. 6. Preheat oven to 450°F. 7. Fill the pie and top with stars and stripes: Spread the strawberries over the part of the sheet pan where the red and white stripes should be. Scoop the blueberries into the corner where the stars should be. Arrange the stars and strips of dough on top of the berries to form the flag. Chill for 10-15 minutes before baking. 8. Bake: Bake at 450°F for 15 minutes. Then tent with foil and lower the heat to 375°F and bake for another 45 to 55 minutes or longer, until the filling is bubbling. Remove from oven and let cool at least an hour before serving. www.simplyrecipes.com

My 5 Favorite Spots around Show Low for Photos or just taking it all in. Some of these locations may take a little hike to get to and the possibility of an early morning wake up to get to experience the sunrise. But no matter what it will be worth it!
you can capture the clouds, the still water and the sunset light working with each other. 2. Los Caballos Trail #638: You don’t have to hike far from the trailhead here to get a shot the sunset and serenity. Grab a chair and walk about 30 yards from the parking area and it will become evident where to see the sun setting behind the Ponderosa’s across the canyon. 3. Show Low Bluff Trail: This is a new favorite of mine. This is a relatively new trail in Show Low.
1. Fool Hollow Lake: One of my all time favorite locations any time of the day, but the best time to capture the lake and its beauty is either at sunrise or sunset. Located along 260/White Mountain Blvd across from the red roof’s of the Cellular One complex is a parking area. Show Low Creek flows through this area and in the early morning or sunset you can catch the creek flowing with the green riparian grasses mixed with the dew of an early morning sunrise is breathtaking 4. Pintail Lake: There are so many opportunities for great photos anytime of the day. The trail out to the lake is now paved and is fully accessible. A short walk will take you to a nice viewing deck overlooking one of the ponds and is just awesome to just sit and let nature present itself. There is also a bird viewing structure that will allow you to get pictures without disturbing the wild waterfowl. Midday you will see these brightly colored lizards out along the trail and they are really fun to watch.
5. Show Low Lake and Show Low Creek: This I guess is a twofer. On the north side of the lake near the fishing dock you can take the trail that takes you around the lake and is just beautiful anytime and across the dirt road that takes you there is the headwaters of Show Low Creek. Early morning and evening you can sometimes find elk and deer crossing the creek. One can hike down the creek and explore or just hang out up on the ridge above. Eric S. 4th of July Safety Happy July! With temperatures climbing across Arizona, we try our best to stay cool. But with Fourth of July, fireworks and backyard barbeques, staying cool can sometimes mean showcasing adult habits that may not seem inherently dangerous, but when observed by kids, can become so.
Drinking is a very common component in social gatherings. For cookouts on national holidays, like Memorial Day or Labor Day, or even just celebrating birthdays, anniversaries, and other events, often drinking plays a central role. Independence Day is no exception. In fact, it is the top beer-drinking holiday in the U.S., according to Market Research. And when you’re spending your entire day relaxing and having a good time with friends, you may not realize exactly how much you’re consuming. Besides the fact that adults should always drink responsibly, it’s important to realize that parents’ behaviors can quickly become learned behaviors by their kids, particularly when it comes to alcohol. As you might expect, drinking alcohol is a completely learned behavior; kids learn to drink by imitating what they see. If a child or teen sees their parent constantly drinking at social gatherings, they may begin to think consistent drinking at these sorts of events is ok. And teens may even begin to partake in it themselves, and at an early age. The summer is more dangerous when it comes to teen drinking overall; more teens will have their first drink of alcohol on a summer day compared to a day during the school year, according to a survey from the Substance Abuse and Mental Health Services Administration. And on holidays when drinking is more prevalent, this risk only increases.
one of the deadliest days of the year for drivers. According to Mothers Against Drunk Driving (MADD), last year between the evening of July 1 and the morning of July 5, 188 people nationwide were killed in crashes involving drunk drivers. Parents can show kids that drinking and driving is wrong by not drinking and driving themselves. Remember that children look to their parents as role models. Although parents may tell their kids “do as I say, not as I do,” kids will still learn from their parents’ behaviors. So this Fourth of July, whether you’re hosting the local neighborhood cookout, heading to the pool with friends, or making your way to the local high school to see the city’s firework display up close, showcase responsible drinking habits, and remember not to drink and drive.
