From Me To You... The world is full of distractions. As I sit down to write this column, for example, I am listening to music (brain building Grieg but admittedly it is a distraction), looking out the window at my neighbors washing their vehicle, smelling my breakfast cooling on the counter, and a myriad of other small things. One distraction that I love is television. In particular cooking shows. There is nothing more enjoyable to me than watching other people cook and thinking that if I had the time or the patience I too could make a perfect Mille Feuille or Beef Wellington. I am also realistic enough to know that I probably shouldn’t try them if I want to keep the waistline I have worked so hard for. I know some people who cook for others and do not eat anything themselves. Not me. I am the ‘taste a little as you cook then dig in when it is ready’ kind of person. One cooking show that I delight in is The Great British Baking Show. Not only is there a cornucopia of delightful food, but the contestants are a joy to watch. They all get Hotchkiss Financial has been originating Conventional, FHA, and VA purchase and reenance loans throughout Arizona for thirty years. After watching Bread Week I decided it was high time to get back into the kitchen and whip up a country loaf. In my youth I baked all the time. I joke about Mille Feuille but I can actually make it, rough puff pastry and all. Now this baking occurred at a different altitude and hemisphere so the ingredients are not at all the same. Did you know that flour contains different amounts of gluten depending on where you are in the world?? Something to be aware of if you are making bread. Needless to say, my recipes no longer work, so I scoured the internet and set to baking. The first day (I had forgotten how long it takes to make bread) yielded one sprained wrist (kneading accident), flour in my eyes and a slightly dense loaf. Not to be defeated I ate it with as much butter as I could slap on it and the next day I adjusted my kneading, proving and baking times and I managed to bake a pretty decent loaf of bread. I think I may try to make Beef Wellington after all. Someday...

their instructions and off they go. Then something wonderful happens. They start to help each other. Even the hosts get in on the act. “What can I do to help dear?” They often ask, grabbing a large bowl or sifting an ingredient. And when the time draws to a close all the contestants jump into action. “I’m done, love, what can I do?” Or “Let me put those on your plate for you!” One time a contestant noticed an oven that had not been turned on and she helpfully told her fellow baker as she turned it up to the correct temperature. I love it! It is their competitive camaraderie that makes me smile. My husband doesn’t understand it at all, shaking his head in bemusement. “Don’t they realize this is a competition?” he mumbles under his breath as he walks away.

Bison Golf Swing like Tiger – Period!
body allows the body to follow or trail the club head. Work on your sequencing so that the body is not ahead of the swing, the swing leads the body. Have fun and Play Well! ~ Lloyd Harvey, PGA
The accolades regarding the Tiger Woods golf swing are endless; however only a few of the most talented players in the world can make a move like Tigers’. Let’s select just one aspect of his golf swing that we can incorporate into our own swing. Most notable in this picture is that Tiger has rotated his upper body so that his back is facing the target at the top of the backswing. The posture established at address is maintained and is clearly seen in the angle created from the hips to his head. At the top of the backswing, where is the weight distributed? The rotation of the right hip moving behind him along with the rotation of his upper body forces the balance of the weight to move to the inside of the right foot. It’s a similar motion to that of starting and old fashion lawn mower when one would pull the rope to start the motor. Once this move is perfected, the rest is easy! The arms and hands relax and just drop in front of the body while keeping the momentum of the rotation that was revved up during the backswing. So, it’s a turn away from the ball on the backswing, then the downward arm swing followed by a full rotation through the impact zone. The speed of the club swinging past the

Buffalo Bill
For many years I had the opportunity to display western collectibles at 2 separate museums. Bison Museum at Bison Ranch and Bison Museum in North Scottsdale. Both displayed thousands of original and replica items from the wild west days during the mid to late 1800’s. When the opportunity arose to open a hospitality facility in association with Bison Golf it seemed natural to incorporate many of my museum collections to enhance the eating and drinking experience. William F. “Buffalo Bill” Cody has been my most adored western figure. His experience and passion for the western lifestyle far exceeded most men of his time. The back of our menu captures who Buffalo Bill was and why he’s a legend today. At Buffalo Bills Tavern and Grill you have the opportunity to dine along side the true likeness of the legend and view many of the original items from his era including an original pair of show gloves worn by Buffalo Bill. The back bar is filled with original items and representations of western lifestyle. The exciting aspect of Buffalo Bill’s life introduces
us to all aspects of the western lifestyle. First and foremost, the American Bison, also known as buffalo, the most remarkable mammal to inhabit the earth. The Native Americans who inhabited North America survived utilizing the gifts of the bison/buffalo. Within the Wild Bill Hickok room houses the wood carved likenesses of Billy the Kid, Wyatt Earp, Wild Bill Hickok, Calamity Jane, Jesse James and Daniel Boone. These life size and life like figures were hand carved by one of the greatest wood carvers ever, Dee Flagg who was an Arizonan. Wild Bill and Buffalo Bill were long time friends with Wild Bill appearing in many of Buffalo Bills Wild West Shows. Whether you come to Buffalo Bills Tavern and Grill for lunch, dinner or just to socialize with friends we encourage you to take the time to walk around and view the many collectibles that we hope will enhance your overall experience with us. Lawmen Of The Old West STEVE LONG
Steve Long was a six-foot, six-inch Laramie, Wyoming lawman who didn’t take guff from anyone. For instance, on October 15, 1867 four cowboys decided to roust some greenhorns from Illinois. But the greenhorns weren’t intimidated, and they tied into the cowboys. Deputy Marshall Long arrived, and commanded the brawlers to stop. When they wouldn’t, Long pulled his pistols and proceeded to shoot them. Three of the Illinois men and two cowboys ended up dead. That stopped the fight. But, that’s nothing compared to what happened two months later. Two prospectors in the Baby Doll Saloon were arguing over who was to buy the next round of drinks. Deputy Long showed up and told them to stop. One of the
prospectors told the Deputy to mind his own business. Long again pulled his pistols, and started shooting. When the smoke cleared, not only were the two prospectors dead, but two innocent bystanders were also shot. Evidently, the people of Laramie were willing to tolerate Steve Long’s methods, because they did result in a quieter town. What the people of Laramie didn’t know was that Deputy Long was earning some money on the side as a robber. It caught up with him a year later. He tried to ambush a prospector. In the process, Long was shot in the shoulder. He managed to make it back to town, and went to his fiancée’s house. She patched him up, and then she went to the head of the local vigilante committee and told him about what happened. The next day, October 18, 1868 Deputy Sheriff Steve Long was found dead hanging from a tree. Dakota Livesay

Pinetop-Lakeside History The Penrod cabin was located near the Phipps cabin. William Penrod set up another shingle mill in the meadow below his cabin. In 1888, 10 years after coming to the White Mountains, William Penrod and his sons were hired by Col. Cooley to build a new ranch house, forage station and telegraph office south of Pinetop. This was the famous Cooley Ranch, a stopover for all freighters and travelers by stage on the road between Holbrook and Fort Apache. According to a history of Pinetop and Lakeside written by Leora Schuck, William Penrod came in 1886 and built a cabin and a mule-powered shingle mill like the one they had in Show Low. Pinetop grew to be quite a town. It had a Post Office, store and small school. The store belonged to a man named McCoy. It provided staples for the families from Lakeside and Woodland as well as Pinetop. The families of John Colvin, who built a small sawmill, and John Adair moved into the area shortly after the Penrods had settled it. A telegraph line between Holbrook and Fort Apache was built in 1889.

By 1891, Pinetop was a growing community. Settlers earned extra cash by freighting, working in Hall’s sawmill, or shearing sheep for one of the large sheep outfits. Sheepmen had moved into the country in the late 1880’s. The sheepmen summered in the mountains, but drove their sheep to the Salt River Valley for the winter, returning in the spring. (The old Heber-Reno sheep driveway is still in use.) In the late ‘80’s and ‘90’s cattle belonging to the Hashknife Outfit also roamed the range as far north as the Navajo Reservation and as far south as the White Mountains and Mogollon Rim. There were also large herds of feral horses running in the mountain country which early settlers trapped and broke for their own use, or sold. Drought and blizzard broke the Hashknife by the turn of the century, but the sheep outfits remained until the 1920’s. Most of the early settlers were hospitable and sociable. With only a few scattered settlements, people all over the country knew each other. Ralph Penrod said they believed in feeding the Apaches who came around to visit, not fighting with them. The Penrods built a six-room house which was always open to those in need. The early settlers entertained themselves with dances, horse races and sports. A few settlers were already living in Lakeside and Woodland areas when Penrods homesteaded in Pinetop. Among them were about six LDS families, according to the records of the Show Low Stake. In 1884, Hans Hansen, Sr., a native of Denmark, was called to be bishop of the Show Low Ward. In those days, it extended from Linden and Adair (Fools Hollow) to Ft. Apache. In the Show Low Stake History, it is written: “Bishop Hansen was a familiar figure on his little bay mule, making his bishop’s calls from town to town, (it took him a month to make them all.) November 2019
Hans Hansen, Sr. left Show Low in 1891 when his house was burned down. He moved to the Warren Ranch in Pinetop, where he stayed for about a year, then to Woodland in 1893. Schuck said: “He bought a squatter’s right there from Joseph Stock and added rooms to the small log house. The area had been called Fairview, and by some of the irreverent, Hog Town.” It was called Hog Town because of Al Young’s hogs which ran wild in the woods. Later, the area was named “Woodland” by Mormon President Jessie M. Smith
In 1905, the bottom fell out of the sheep market and many of the sheepmen had to sell out. Niels Hansen, Han’s younger brother, took the opportunity to buy the Will Amos ranch in December, 1905. He moved his wife and six children to Lakeside in the spring of 1906.
Hansen and his son, Hans Hansen, Jr. did all the rock work at Fort Apache, many of the first houses in Whiteriver, and nearly all the two story brick houses in the area.
When the founders of Pinetop and Lakeside came to the mountain, it was a different prospect from ours that they saw.
The only store in Lakeside was run by Billy Scorse, an Englishman, for whom Billy Creek is named. He was the only permanent year round resident until the Mormon families came. Scorse grew some hay, sold a few groceries, but made the bulk of his living selling liquor to soldiers from Fort Apache at his “Last Chance Saloon.” Scorse had 40 acres on the creek and squatters rights to some land in town, according to a 1950 interview with Hans Hansen, Jr. The 1890’s saw the development of farms and orchards, legal battles over water rights, and the first attempts at schooling. The first schools were held in homes, woodsheds and root houses. In 1896, a school district was formed. Catherine Whipple, a descendant of those Pioneers wrote: “In those early days the schooling the children received was very scanty, two to five months in a year.” In 1903-04 all the water on the Mountain dried up except Adair Spring, and Pinetop settlers had to haul water from it. The following year, the Pinetop-Lakeside settlers experienced the wettest year they had seen. That may have contributed to a decision to build a reservoir in 1904. Niels Hansen surveyed Show Low Creek in that year and decided where to build dams and irrigation ditches. Estrella Publishing - Bison Living Magazine
At the south end of Niels Hansen’s barn one spring day in 1906, six men sat in the sun and named the town “Lakeside.” They were John L. Fish, John Heber Hansen, Joseph Peterson, Louis E. Johnson and Alof Pratt Larson.
Leora Schuck said, “Countless mature trees stood tall and straight, their trunks smooth and free of branches many feet off the ground. With a minimum of underbrush, one could see vistas through the trunks for hundreds of yards...It may be that sheep kept the small stuff grazed off, or that fires from the lightning cleared the ground. It was only after the sawmills came in and cut down many old trees that new young pines suddenly sprang up in jungle-like proportions.” Even as late as 1924, the essential character of Pinetop and Lakeside were not changed. An account in the Globe “Silver Belt” said: “Several mountain streams are nearby. One of these, fed from a great spring, serves for the irrigation of the acre home lots of the villagers...In winter, thousands of wild ducks visit the streams fed from the springs in the vicinity to feed on watercress.” There are few left whose memory goes back to the days of Leora Schuck’s childhood “when we roamed the forest from Show Low to Paradise Creek and from Lake Mountain to Forestdale, unstymied, unfenced, unrestricted, except for a scattering of homesteads that we had to go around. And we knew everybody. Ah, yes, those were the days.” Wrtten by Jo Baeza November 2019
