Write a Personal Manifesto

I have long been a fan of personal manifesto; it is a great way of reminding us what we believe in and what we stand for. It also fosters commitment, provokes change and helps us stay on the right track,.

So what is it?

Simply put, a personal manifesto is a statement of your ideas, intentions and/ or vision.

The beautiful thing is, you don’t have to be a writer, artist or a politician to draw up your own personal manifesto. You can write anything you want in it. Anything you stand for. There are no rules.

Here’s how to write your own in three steps: 1. Get inspired Read what others have written, but don’t feel you need to copy any of those; that would defeat the purpose.

2. Make notes Grab a book and start writing. Here’s a very simple, beginners manifesto template that you can play with: • I love…

• I believe…

• I am committed to…

3. Live it Don’t let your manifesto sit in a drawer; hang it over your workspace, put it on the fridge or make it your desktop background.

Keep in mind that your priorities and goals will change over time. So, keep going back to your manifesto every once in a while and update it.

Here is a short segment from my own manifesto (not necessarily in order): 1. All children should be loved and cuddled.

2. Laughter is for everyone.

3. There should only be chocolate desserts. All others should be against the law.

4. We need more honest conversations.

Always offer your honesty with best intentions and demand honesty from others.

5. Everyone should write their own positive personal manifesto.

Mindfulness on your Winter Walks Getting out for walks in winter is vitally important to our health and wellbeing.

We need direct sunlight to hit our retinas at the back of our eyes to activate the production of serotonin and cortisol.

A lack of sunlight increases the production of melatonin, the sleep hormone. A lack of serotonin can lead to depression and low mood, an increase in melatonin will leave us lacking in energy and lethargic. The ‘winter blues’ is a very real possibility at the darkest time of year. One way of remedying this is to get out in nature as often as possible.

Walking about in the cold and wet doesn’t always hold much appeal for people. But, if we can take a different attitude to winter then our walks can be totally transformed!

Mindfulness has become a popular practice for people here in the west over the last few years, it is a practice that can improve mental health and general wellbeing, it’s proven to reduce anxiety and best of all it can be applied to almost any activity. If you have ever tried a meditation or mindfulness practice and not achieved the results you’d hoped for then I’d recommend looking no further than taking your mindfulness practice outdoors with you when you go walking.

Here’s my five tips that will transform your walks into a mindful experience during the winter months: 1. Awareness of Body and Breath – Notice your body and breath as you walk. Notice how your heart beat and breath changes as you exert yourself.

2. Adopt a Child-like Attitude – Look at the world as if for the first time, think of the wonder and curiosity that a child see the world with and adopt this attitude for yourself. Warning – this could result in a snowball fight.

3. Follow Wild Tracks – This is great for adopting a ‘wandering’ mindset on your walk. When the ground is wet it can be easier to see the tracks of wild animals, follow these tracks and see where they go, what animal might have made them?

4. Note Seasonal Changes – Notice what changes as the seasons pass. This can be the emerging snowdrops, the arrival of swallows, or which trees are first to lose their leaves.

5. Winter Tree Identification – Identifying trees in winter requires a deeper exploration of the tree. You need to look closely at the branches, buds and bark, so get yourself a simple tree ID guide and head out into a woodland.

Visiting Vietnam My adventure began in Hanoi, Vietnam’s charismatic capital where old meets new.

The Ho Chi Minh Mausoleum is a sombre attraction visited by many but my personal highlight was a walking tour along a single track railway line where the trains pass within one metre of the houses’ front doors and children play happily on the track. It was fascinating to see how the locals live and we were greeted by smiles along the way. The walk took us through farming areas and across the river where we found a coffee shop. Vietnam is the second largest coffee producing nation - and they love it served with sweet condensed milk it’s very different to Starbucks!

From Hanoi we took the long but really interesting drive to the UNESCO World Heritage Site of Halong Bay on the northern shore of Vietnam and boarded a beautiful traditional style Junk Boat called ‘Jasmine’. During the sail we stopped at caves, a local beach and also visited the ancient fishing communities at Cau Van. The food on-board was excellent - we were even taught how to make traditional Vietnamese spring rolls! This is a really relaxing way to see some of this amazing scenic country.

The following day we flew to Hoi An which is a thriving port with busy ancient streets packed with shops selling spices, coffee pots and all manner of clothing – This is a great place to haggle for bargain items

including silk lanterns, linens and local art – or just relax on the beautiful beach. From Hoi An we took a day trip to My Son: this little known attraction is also a UNESCO World Heritage Site, and home of the Cham people. The temples date from between the 4th and 13th Centuries and, sadly, were badly damaged by American bombing in 1968: the crater remains as a painful reminder. For the best experience, visit at sunrise.

Whilst in Hoi An, I took a Vespa tour one of the best excursions I have ever experienced. We met locals weaving mats and making rice crackers visited a local boat yard where traditional large wooden fishing boats were made. The scenery was absolutely incredible, passing through rice paddies and farmlands and watching the farmers drying corn, chillies and tending their peanut plants.

From Hoi An, we took our next flight to Ho Chi Minh City - formerly known as Saigon and still called Saigon by the locals.

The old Saigon was the capital of French Indonesia - known as Paris of the Orient and plenty of the Grandeur survives today, with the Opera House nestling alongside fine restaurants and designer boutiques.

In total contrast, we headed to the famous Cu Chi tunnels where visitors can visit

a small section of the staggering 125 miles of tunnels on various levels where the Vietcong guerrillas used numerous tactics to live, eat, cook and avoid capture In Saigon you can also visit the War Remnant Museum: but please be warned it is very harrowing and contains detailed photographic images you may find disturbing. The 60’s style Reunification Palace - site of the famous storming of the tanks on April 30th 1975 - is also worth a visit; see the meeting rooms, maps and original tanks on display.

On our last day, we drove to My Tho - a bustling town in the agricultural region of the Mekong Delta. We enjoyed travelling along the river and seeing the beautiful birds that populate the area, stopping briefly at a honey farm for honey tea. On the way back, we visited the stunning Vinh Trang Pagoda, which dates back to the 19th Century and is famous for its Giant Buddhas.

Gardening Tips and Advice December - Winter Frost As we approach the shortest day of the year in December you will need work to keep you warm outside, such as digging and tree pruning. Check your winter protection and if you have a greenhouse make sure the heater is working. Hopefully there are not too many jobs left to do this year so you will have time for some ďŹ reside garden planning.

Check your winter protection structures are still securely in place.

2.

Check that greenhouse heaters are working.

3.

Insulate outdoor taps and prevent ponds from freezing.

4.

Prune open-grown apples and pears (but not those trained against walls).

5.

Take hardwood cuttings.

6.

Keep mice away from stored produce.

7.

Reduce watering of houseplants.

8.

Prune acers, birches and vines before Christmas to avoid bleeding.

9.

Harvest leeks, parsnips, winter cabbage, sprouts and remaining root crops.

10.

Deciduous trees and shrubs can still be planted and transplanted.

From a very young age, we are nourished by stories in so many different ways – be it a bed time read; a Grandfather’s recollection; a Mother’s wisdom; a friend’s exaggeration – stories are held at the heart of who we are, who we have been and who we are yet to become.

It is this notion of nourishment, so generously held within the sharing of stories, that totally illuminated my experience at Cleopatra’s. This little bistro in the heart of Holt is overflowing with nostalgic nibbles, sworn secret family recipes and a palpably passionate team who immediately make you feel at home. Every dish on the menu is developed with love, in light of the many memories and stories that owners, Helen and Philippe, have gathered through their own travels and heritage – and believe me, they have many a tasty tale to tell!

Inspired by Head Chef, Philippe’s, Greek heritage and South African home, Cleopatra’s embodies a unique fusion between these two different cuisines. Alongside traditional Greek mezze and authentic dishes like Feta Psiti, you will also find a whole host of South African spiced wonders, including the star starter: Beef Fillet Strips.

Tender and generously portioned strips of medium rare beef fillet rest in a fragrant butter sauce.

Garlicky and delicately spiced, every drop of this lip-smacking sauce was unashamedly mopped up with the accompanying pitta bread. Seriously, if you’re wanting to keep it light, don’t dare yourself with the challenge of eating this without finishing every bite of spicy, buttery, juicedrenched bread. You will not succeed.

For my starter, I had a hankering for mussels, so the team very kindly agreed to make me a smaller portion of the main course, Mussels in a Cream and White Wine Sauce, which is made fresh to order and only ever with South African white wine that they are happy to serve by the glass. Our exceptional waitress, Megan, warned me that I was likely to end up drinking the sauce straight from the bowl like soup… and she wasn’t wrong. As the mountain of steaming hot mussels reached our table, the dizzying wafts of this dreamy dish hit me. The mussels were plump, soft and unlike any Quentin Tarantino film, satisfyingly grit-less. The sauce they sipped through yawning shellfish lips was rich with cream, robust with fresh flavours of garlic and parsley, and beautifully seasoned. I wanted to literally dive head-first into this big bowl of indulgent sauciness but I didn’t…because I’d only just washed my hair… so I settled for slurping it straight from the bowl.

With a clattering tower of empty shells and two plates clean enough to go straight back in the cupboard, we concluded that chapter one of this culinary tale had been pretty spellbinding – and we were very ready for the second.

This restaurant is special. Rooted within a genuine passion for authentic cuisine and the history of a multi-cultural, food-loving family; the foundations from which Cleopatra’s grows is nourishing in every sense of the word. You will leave with your curiosity refreshingly quenched, your appetite wholeheartedly satisfied, and if Philippe has anything to do with it, your sobriety entirely abandoned! Steeped in soul, spirit and story, I urge you to immerse yourself in the heart of this homely bistro.

Eggless, Fatless, no Added Sugar Fruit Cake

INGREDIENTS 170g/6oz self-raising wholemeal flour

110g/4oz apricots, chopped

50g/2oz ground almonds

Rind of orange or lemon

2 tsp mixed spice

275ml / ½ pint water

450g/1lb mixed fruit

2 tbsp orange juice

110g/4oz dates, chopped

METHOD Soak fruit in liquid overnight.

Add dry ingredients and combine.

Bake in 2lb loaf tin for 1 ½ hours at 160oC, (cover with foil for last ½ hour).

For a festive option, use this as a base for Christmas cake and just top with marzipan and icing.

New Year’s Resolutions

By EssentialsMAG environment contributor ROB RENOUF Year’s end is often a time to take stock and plan for the future. It’s particularly pertinent now, as the coming decade may well be the most significant in human history.

There’s a clear scientific consensus that our planet is facing a climate and ecological emergency and human actions are a major contributory factor.

The UN says we need to keep global warming below 1.5oC and this requires rapid, far reaching and unprecedented changes in all aspects of society. We’re already at 1.1oC and without urgent action we’ll reach 1.5oC in just twenty years.

Even if every country delivers on all their current promises to reduce emissions, we’re heading for warming of over 3oC by 2100.

Human activities are taking a terrible toll on the natural world; a million plant and animal species face extinction this century. Loss of pollinating insects and changing weather patterns threaten our ability to feed ourselves.

When people talk about ten years to save the planet, they’re not arguing the world will end in 2030; they’re saying that our actions over the next decade will determine whether we can avert the most catastrophic future impacts.

So what are the most important things we can do right now to help?

Individual changes – the two things likely to make the most difference are changing our diet and flying less. We’ll cover these in more detail in future editions, along with many other ways we can make positive contributions. When other people see us making changes it helps raise awareness and promote behaviours that are better for the environment.

Demand government action – individual actions are really important, but won’t be sufficient alone. Without changes to legislation, investment in greener infrastructure and incentives to change behaviour it will be impossible to achieve transformation on the massive scale required. The run up to an election is a great opportunity to tell politicians what we want them to prioritise. As general elections are normally every five years, we need our next two governments to deliver all the necessary action.

Whilst the situation can seem bleak, I’d suggest it’s more useful to focus on the opportunity we still have to change the course of history – future generations will not have this gift. When making our New Year’s resolutions I hope we all consider whether we will be the ancestors that future generations are thankful for.

Financial News with Hadlow Edwards Year End Rambles. It only seems like a matter of a few months since I threw the Christmas decs back in the attic! Another year has whizzed by. We have settled into our new offices and despite the best efforts of our politicians - we at least have managed to conclude most of our own and our clients plans for 2019.

Here are a few random ramblings I came across this year which caught my eye...

Deal or no Deal. In 1965 a 46-year-old American lawyer made a deal with his 90-year client, Mrs. Calment. He agreed to pay her a monthly income of $2,500 for the rest of her life. On her death the agreement was, her luxury apartment would be his. Well - she died in 1997 aged 122, the year AFTER the lawyer died. Now that is ‘getting your monies worth’!

Holding your nerve. A second US story about a chap who had lived in a rent-controlled apartment in New York for many years. He had a long-established tenancy. The problem was, the apartment block was in the way of a major hotel development. Every other tenant had moved out for healthy six-figure-sums into new homes. The last occupier absolutely flat refused. Building work started all around him - still he sat tight. After nearly three years the developers had no option but to make a final offer which he accepted. He settled for £14 million and a new apartment. Ouch!

Saying it as it is. It was widely reported this year about a young lady appearing in small claims court, not for the first time, for non payment of debts. The Judge commented “you have a very good job. Can’t you live

within your income?” The young lady instantly replied - “Your Honour, I can’t even live within my credit!” Now there is a case for a little financial education.

Japan, Rugby World Cups and Chicken. One semi-final and the final both ended in abject disappointment whoever you were supporting (unless you are South African, I suppose!). But Japan saw a great tournament this year. Just bear in mind that in Japan every well know fried chicken restaurant (other brands are available) are already fully booked for the 25th December. In 1974 in a moment of marketing genius - the Japanese public were persuaded by the advertising team that chicken was the dinner of choice in the West on Christmas Day. And all this time on it’s fully booked months in advance every year.

Fair Play. Detective Robert Cunningham offered his waitress a share in a $1 lottery ticket rather than a tip, which she accepted and they duly chose their numbers. The numbers came up - big time. The detective and the waitress shared $6m paid to them over 21 years from 1984. Now that’s a tip!

We are pleased to announce that our annual pop-up Christmas Shop will be at Ty Pawb on Market Street in the town centre for a second year running, as well as keeping our stadium shop open as normal. Our opening hours for both shops over the Christmas period will be announced shortly.

Why Ty Pawb? Ty Pawb ticks all the boxes for us as a football club. It is a cultural community resource, which celebrates Wrexham's cultural heritage and identity and we as a community club have bought into this strongly. We want to connect with our fan base as much as we possibly can, and by us having a Christmas Store in the centre of the town will help us do that.

What dates will you be open? We will be open at Ty Pawb from Monday 25th November for a full month through until Christmas Eve. It will be open 7-days-a-week, with our opening hours changing this year to 9am-5pm Monday-Saturday, and 10am-4pm on Sunday's. Our stadium shop will also be open as usual throughout this period and of course you can shop online with us 24/7 through our official website www.wfcshop.wst.org.uk.

If any times change supporters will be updated via our social media channels.

What will be available to buy for supporters? Our full range will be available from our stadium shop as usual, with a limited but exciting range available from Ty Pawb including all three of this seasons kits, and new items for this year such as 'Racecourse Ground' wall decors, cufflinks, reindeer soft toys, and water bottles. Also back in stock due to popular demand are new designs of Birthday and Christmas cards, Cufflink sets and Teddy bears.

Eat, Drink and Be Merry Christmas time mistletoe and wine, and beer and mince pies and turkey and that very trendy gin! There is so much food and drink to indulge in over the festive period, but this is not going to be a piece on what not to eat or drink rather it is a celebration of all the wonderful foods that are around at this time of year. The only bit of advice I would give is, go out and buy smaller plates for Christmas dinner, a great hack for not over-indulging on Christmas day. It is proven that if you use a smaller plate you will consume less food, sensible really! Some of the plates you can buy now are as big as car wheels and what we all do is fill that plate up, not good for portion control at all.

Christmas dinner is a brilliantly balanced meal providing us with some excellent nutrients it’s about getting the balance right!

Turkey - is a wonderfully low-fat high protein food, excellent for growth and muscle repair.

Most of the fat is contained in the skin so don’t feel tempted to indulge, throw it in the bin.

The vegetables - we have at Christmas are wonderfully for providing us with vitamins, minerals and fibre. Try steaming as most vegetables contain water soluble vitamins, so if you cook them in lots of water the vitamins are lost in the water you discard.

Sprouts are brilliant for providing fibre, just don’t eat too many or the mother-in-law won’t be happy!

Roast potatoes - are an important part of Christmas dinner, potatoes are a great starchy carbohydrates but try roasting them in a healthier types of fat rather than goose fat or lard use rapeseed, sunflower, vegetable oil or olive oil instead all these are low in saturated fat but provide polyunsaturated fats or monosaturated fats which are good for our heart health and taste great too.

And then to pudding! – Christmas pudding is packed full of succulent dried fruit such as sultanas, raisins and apricots as well as being a source of iron they also provide some calcium too. Served with custard or half fat crème fraiche for a nutrient boosting Christmas pud. See this month’s EssentialsMAG recipe for my fat-free, no added sugar fruit loaf that you can make all year round.

The Diary of a Chainsaw Sculptor

BY AWARD-WINNING SCULPTOR SIMON O’ROURKE Burning the candle at both ends!

It’s not unheard of to be too busy when you’re in charge of running a business, and this year has been no exception! I began the year with some great commissions like the Dragon of Bethesda, featured in EssentialsMAG earlier this year. The hype generated by the dragon brought on an influx of enquiries that have filled most of my time this year!

I didn’t realise the consequences of booking in commissions one after the other until it was too late, when in late June I reached the point where I was struggling to function, and needed a few days of doing nothing in order to recoup some energy and get my brain going again! The importance of rest and relaxation in the creative world is often overlooked, as so many people don’t see that the brain, like your muscles, needs rest periods to be able to function normally!

One of the most challenging commissions of this year has been portraits of three football players for Queen of the South club in Scotland. My design was the three players cut from a single log, standing

facing away from each other, with a ball in the centre and each of their heels touching the ball. It’s a very complex design, especially having to get a good likeness of each player too! The finished sculpture was unveiled on the 19th October at the grounds of Queen of the South.

The sculpture took me a lot longer than I had anticipated, and a few commissions were delayed as a result. This project has really made me stop and think about my own physical and mental capabilities, and has reinforced the fact that I’m only human, and I need time between projects to plan, think, and recuperate!

One Step at a Time

By EssentialsMAG fitness contributor LEE EASON It’s officially cold now, and taking a trip up Mount Snowdon recently, really hit home how much the weather can change in an instant. One important thing I noticed on the mountain as I made my way down the Pyg Track, was the choice of clothing, especially footwear, being worn by individuals. Anyone who has ventured up this route, or any other mountain terrain, will understand that correct footwear is essential for protection.

This brings me onto a subject I am passionate about, and that is having a professional shoe fitting and gait analysis done, whether you are a keen walker or a marathon runner.

I discovered I was wearing shoes half a size too small before I had an analysis done by Rich at Triactive in Chester, who was incredibly knowledgeable in this field.

A gait analysis is done in steps: • You are asked a few simple questions to do with your running/walking habits.

How often? Distance? Any injuries or niggles? For enjoyment or for an event?

• Then, a neutral shoe is worn for the gait analysis where you run on a treadmill for approximately 45 seconds so you can be filmed.

• A static test is carried out to ascertain foot function.

• You will then go through the analysis with the professional, discussing technique and what shoe would be appropriate for your gait and running style.

• I was then left to browse shoes for my specific foot type with no pressure to purchase.

I tried on various shoes and ran in them on the treadmill to test them out.

• You can also be recommended insoles as an alternative to add more cushioning etc...

Touching briefly on the festive period looming, brings us on to over-indulgence. Let’s face it - it’s going to happen to most of us, so there’s no need to feel guilty and go on a crazy diet plan!

Christmas Time at Orchard Care Group People living in our care homes can be assured that they are individually treated with kindness and respect, and this is the case all year round. We recognise that a lot of people living in our care homes will spend Christmas time, what is usually a traditional family celebration, away from their loved ones. It is because of this that Orchard Care Group begin planning early for our Christmas celebrations.

We propose to all our residents a plan of festivities and celebrations commencing from the 1st of December, so that there’s a real Christmas feel within our homes. This includes decorating the homes with Christmas trees and other festive items where residents are encouraged to become involved. We also look at traditions and nostalgia by reminiscing with people about Christmases gone by and share stories in the lead-up to Christmas Eve and Christmas Day. People are assisted to either make crackers or Christmas cards. Arrangements for people to attend a church service are made, but we also arrange a carol service to be held within the homes. This is by either inviting local school children to visit and sing, or engaging with the Royal British Legion.

Traditional mince pies are prepared in the kitchens from early December giving an aroma that ignites a memory of Christmas. And during the lead up, Christmas films are shown.

All staff at Orchard Care Group are aware that people living in our homes may experience sadness and loss grieving for loved ones during Christmas. With many families living long distances, or overseas, the companionship and festive excitement within our care home can soften the pain of separation and loneliness. We therefore ensure that people have a real sense of “belonging” during this special time of year, and families are invited to join their loved one for a Christmas lunch.

Our homes have an official Christmas party, usually a week before Christmas, where there is entertainment and a buffet. Extra staff are brought in to ensure that the party is full of fun and celebration.

Staff will usually wear a themed outfit, or Christmas jumpers, and will join in with the singing to support residents to enjoy the event.

Toe Walking

By SIAN BOFFEY at Therapy Stars You may never have noticed, but some children tend to walk up on their toes, rather than keeping their heels down. This is referred to as "toe walking". But why do they adopt this position?

In many cases, the reasons are never known. Some walk like that from very early on, as soon as they are on their feet. Others develop their walk in this position as they get older.

Often children choose to walk on their toes for some of the time, as a game or to avoid a cold floor for example. But toe walking refers to children who walk up on tip toes for most of the time and often struggle to correct their position by keeping their heels down.

Toe walking can be very common and many toddlers grow out of it.

However, it can also be associated with other conditions where children may have tight Achilles Tendons due to spasticity (rigidity) in their muscles. Some children may also seek sensory feedback so adopt a toe walking position as a sensory strategy.

But for many there can be no definite reason for toe walking-this is known as idiopathic toe walking. Most children who are idiopathic toe walkers end up with some degree of tightness in their Achilles Tendon and calf. This is because the calf does not get a full stretch when in a pointed position, as it is when toe walking. But part of toe walking can also be attributed to habit...and this is often the hardest part to rectify. Therefore early intervention can be extremely beneficial.

There are several methods of physiotherapy treatment that may help toe walking.

Firstly, a full physiotherapy assessment would be required. The Therapist would look at muscle length, particularly around the calf and Achilles Tendon and assess muscle strength, especially the muscles of the lower limbs and core (back, hips and abdominals).

They will also examine a child’s foot position and check the development of the muscles in and around the feet. The Physiotherapist would then provide an exercise programme that involves parents encouraging appropriate activities that help to target the particular areas identified during the assessment.

What Christmas food can pets eat?

Skinless and boneless white meat such as turkey is okay for dogs and cats, but be careful that it's not covered in fat, salt or gravy. It's best to keep to your pets eating their appropriate food.

Helping pets feel calm at Christmas • Try to keep food, exercise, bed and toilet break routines the same as consistency can help pets feel more secure.

• If you have guests coming over, let your pet meet people at their own pace.

• Give them somewhere cosy and quiet to retreat to, away from all the excitement, where they won’t be disturbed by anyone. Leave toys there to help them associate the area with positive experiences.

• For cats, you can also give some hideyholes to retreat to in case they feel unsure. Try on top of wardrobes or under furniture – even cardboard boxes can make good hiding places.

• Christmas is a busy time and there’s a lot to do and people to see, be careful about leaving your pet alone for any period which might cause them distress.

• If you’re spending Christmas day with friends or family and your dog is coming with you, take something which smells familiar, like their bed, to help them feel secure. Take some of their toys and chews to help keep them entertained.
