The grand unveiling of Hyderabad's most expansive rooftop bar and kitchen took place in the heart of the Financial District. This state-of-the-art culinary haven features gourmet cuisine and expertly crafted cocktails. Its elegant and sophisticated decor complements the breathtaking cityscape visible from its vantage point. The launch event was a remarkable evening, with attendees revelling in the music, delectable drinks, and sumptuous food. WHAT'S HAPPENING I
Platform 65 is India's Largest Train restaurant, set in a quirky rail theme that is bound to set your heart chugging when the train brings your food onto your table. A train-themed restaurant that is focused on providing experience-based dining where the food is served on a mini toy train. Recently, they organised a Halloween themed dinner week filled with a spooky Halloween atmosphere, creepy decorations, and special music. The restaurant was decked out in mysterious decor, and the staff in costume to add to the festive ambience. Platform 65 is a multi-cuisine restaurant serving lip-smacking dishes from the Chinese, North Indian, Andhra, and Telangana cuisines. The tables have mini railway tracks, and the decor is set up such that each table has a station name like Ahmedabad, Trivandrum, Kanpur, etc. The best part is how the food is served—your favourite dishes come chugging onto your table in toy trains straight from the restaurant’s kitchen! Their must try dishes include the Velluli Kodi charu, a scrumptious chicken broth, Konaseema Kodi pakodi- a crispy chicken that leaves a spicy after taste, kuchupudi chicken- full of spices and masala just as an Andhra dish should be, gongura mutton biryani- slowcooked rice and meat with a tangy sour flavour and the boneless special mutton biryani that needs no introduction. As the day unfolds, I dive into meetings with clients and collaborators, working closely to bring visions to life. I thrive on the energy of curating events, so my afternoons are often spent at networking events and connecting with fellow entrepreneurs, all in the pursuit of creating memorable experiences for both businesses and attendees. I thoroughly dedicate my evenings to my family and myself, to maintain a perfect work life balance.
Q. How did you get into Brand Marketing & Event Curation? My journey into brand marketing and curation was a natural progression from my journalistic roots and passion for understanding human psychology. The transition from being a news anchor and editor provided me with a unique perspective on storytelling, which I seamlessly integrated into the realm of marketing. Curiosity about consumer behavior and a drive to bridge the gap between brands and their audience led me to explore the dynamic world of curation, where I found my true calling. Q. Tell us a funny incident which happened with you. One of my fondest memories was during a particularly challenging event setup. Despite unexpected setbacks, the team rallied together, showcasing incredible teamwork and resilience. I COVER STORY In conversation with Neeha Reddy How do you personally celebrate Diwali, and what are some of your favourite traditions or rituals associated with the festival? Diwali is one of my favourite festivals. Every year we invite our friends and family over to share the joy and love with each other. We celebrate it together by bursting crackers (eco friendly crackers), sharing sweets. The making of rangoli early in the morning, getting ready for the day and preparing the dishes for our dinner is what makes it special when you have your loved ones with you on this special day. Are there any special dishes or foods that are commonly prepared during Diwali in your family? DESSERTS!!! Mom makes all kinds of my favourite sweets for Diwali. My favourite would be Rava laddu and home made hot Jalebi. What are some common decorations and symbols associated with Diwali for you? Every year I look forward to decorating the house for Diwali, I look up for ideas and start gathering ideas. The most common decorations I do every year is having diya, lanterns, all over the house and making rangoli. Can you share a memorable or heartwarming Diwali experience from your life? Diwali is a festival that cultivates togetherness. One of my fondest Diwali memories would be that of the year 2021, when we celebrated Diwali with orphan kids. I COVER STORY In conversation with Muskan Sethi How do you personally celebrate Diwali, and what are some of your favourite traditions or rituals associated with the festival? Diwali for us starts with Lakshmi & Ganesh Pooja at home. I love celebrating with my loved ones with good food and by decorating the house with flowers, diyas etc. This time of the year is for dressing up and enjoying time with my family. Sometimes we play cards and other games too. Are there any special dishes or foods that are commonly prepared during Diwali in your family? Moreover, using marigold and roses to decorate the house is a yearly tradition. Can you share a memorable or heartwarming Diwali experience from your life? Every year before I was married, we would visit my grandparents on Diwali. We would do a Pooja and feast on delicacies prepared by my grandmother. These are dear memories. Since I come from the land of Bhagwan Shri Ram, where Diwali was celebrated to welcome him back after 14 years of Vanavaas, we celebrate this festival with Diya’s all over the house, rangoli, and pray to Lakshmi maa - the goddess of prosperity and wealth. Every year on Diwali my family gathers and it’s the best time. The best ritual is to be able to sit in puja being performed by Papa just like our childhood days, and wait to jump on the sweets ;-) Are there any special dishes or foods that are commonly prepared during Diwali in your family? Of course, being a UP’ite how can I forget the main sweet that we wait for every year - Gujiya and also dahi vada (not a sweet), but still the best. As a child I used to wait for Diwali, because we would receive sweets from different people, me and my siblings would eagerly wait to eat them all. Memories that will last forever. What are some common decorations and symbols associated with Diwali for you? Diwali is the festival of lights for every Bharatiya, there is diya all over the house and outside the house, my sister in law does beautiful rangoli at the entrance of the house, and there is genda phool decoration all around the house. Can you share a memorable or heartwarming Diwali experience from your life? I have so many memories from every festival we celebrate. As a child I used to wait for Diwali because I would receive 500 rupees and clothes from mummy papa, I was never a fan of bursting crackers but the idea of getting gifts was just out of the world feeling.As we grow old we miss all those little moments that make life memorable. Diwali is all about love and light and some glam. I celebrate Diwali with my loved ones every year and it’s always intimate with close friends and family. I’m a little less indulgent in sweets throughout the year but I make sure I let loose and indulge myself in lots of gulab jamun, motichur ladoo and cashew Burfis and freshly made kheema samosas during Diwali season because everybody deserves a cheat day once in a while. What are some common decorations and symbols associated with Diwali for you? I don’t really believe in celebrating Diwali with crackers and stuff because it not only causes a lot of pollution but also the furry ones are the most affected during this time and they don’t deserve to be unhappy and scared because of our minute happinesses, after all they are our family too. Instead I’d love to light up the whole house with diyas, flowers and enjoy some nice food and quality time with family and friends. Every Diwali we perform Kedareswara Nomu at our home. The vratham is performed early in the morning in presence of the entire family. We prepare various vegetarian dishes. A special dish is made with 9 different vegetables as an offering to the goddess. You can see us enjoying a lot of Telangana cuisine. What are some common decorations and symbols associated with Diwali for you? We decorate the entire home with lights and flowers. We also send Diwali hampers to all our close associates and friends and family. In the evening we meet with all our cousins and family friends. We have been observing green Diwali for the last couple of years, so we restrict our usage to echo friendly green crackers. Can you share a memorable or heartwarming Diwali experience from your life? The entire Diwali season is heartwarming as we keep meeting friends and family for Diwali parties. Would rather say the entire month is memorable.

Coco Tango, By Junior Sous Chef & Pastry Chef- Anvesh Bhandari at Hyderabad Marriott Hotel and Convention Center Ingridients: Cashew- 600gms Sugar - 350gms Water - 200ml Cocoa Powder - 200gms
For Malta Orange Marmalade: Blanched Peel & Orange Juice - 3 nos Sugar - 60gms For Garnish: Cocoa Nibs - 100nos Chocolate glaze - 70gms Bronze Dust - 2gms
Step 1 – Orange Marmalade 1. Take washed oranges, cut length wise into halves and further into quarters. 2. With a sharp knife de-skin the oranges to further remove the rind, roughly chop up the rinds 3. Blanch orange rind, strain and refresh with cold water (Quick tip, repeat this process thrice, 4. this gives you less bitter tasting marmalade). 5. In a heavy bottomed pan, add blanched orange juice, sugar, orange rinds and bring to a boil; 6. reduce the heat to medium low and simmer for about 40 to 50 minutes, cook until a jam like 7. consistency. 8. Completely cool down the mixture and store in a glass container. Step 2 – Orange Mixture 1. In a heavy bottomed cast iron kadai, combine together sugar (175 gms) & water (100 ml). 2. Melt them together without discoloring, when the syrup reached 112 degrees Celsius add 3. orange marmalade and cashew powder, stirring continuously. 4. Cook the mixture on a low flame till all combined into a dough like consistency. 5. Immediately remove onto a clean work surface. 6. Mix around with a spatula to get a smooth texture (Quick tip: Work very fast, keeping in 7. mind not to over knead as this will secrete the oils from the cashew). 8. Allow the mixture to completely cool down before we move to the shaping process.

Cover the entire surface with chocolate glaze and sprinkle cocoa nibs when it is damp. 7. Measure 25mm lengthwise and breadthwise and with a sharp knife cut into perfect squares. 8. Brush the top with bronze dust.

Silver Pistachio, By Sous Chef Kailash at Novotel Hyderabad Ingridients: Pistachios - 500gms Sugar - 500gms ghee - 50gms Powdered green Cardamom - 3gms Silver Vark (for garnishing) -2 Method 1. Soak the pistachios in warm water for about 20 minutes. 2. Drain the water and remove the skin of the pistachios and 2-3 drops of food colour in a mixer to blend them to form a smooth paste. 3. Then prepare a sugar syrup by dissolving the sugar in the water. 4. Add the pistachio paste to the sugar syrup and keep stirring. Add the cardamom powder and cook for a few minutes. 5. grease a plate using the ghee and spread the pista mixture on it. 6. Then roll in to desired shapes and garnish with the silver vark.

In a kadai, shallow fry almonds, pistachios, cashews and figs separately. Mix all the roasted nuts together and shallow fry. 3. When done take the mixed nuts off the kadai and store aside 4. heat kadai again, add hone and jaggery, cook until the jaggery dissolves completely and bring to a boil. Add desiccated coconut to the mix. 5. Add all the roasted nuts into

the jaggery mixture and stir for 4-5 minutes. 6. Remove the mixture onto a clean work surface and allow to cool Step 2 (Shaping the Final Produc t): 1. Knead the mix gently. 2.
