Welcome to the Celiac and the Beast 2014 Gluten-Free Holiday Guide! The holidays are my favorite time of year - the food, the family, the cupcakes, the gifts from "Santa" even though I'm a grown adult. However, the holidays are also a very difficult time for those with celiac, non-celiac gluten sensitivity, or those avoiding gluten. The holidays for "normal" people are full of baking flour, gluten in the gravy, stuffing and dressing full of gluten, and even gluten in your gifts (thanks for the body care set I'll never be able to use). But we can have an amazing holiday season - full of gluten-free love, joy, cheer, and safe food. For the filling: 2 cups pureed pumpkin 1 cup canned, unsweetened coconut milk ½ cup light brown sugar, firmly packed 1 Tbsp. maple syrup 1 Tbsp. corn or tapioca starch 2 tsp. vanilla 1 tsp. ground cinnamon ½ tsp. ground ginger ¼ tsp. ground nutmeg 1/8 tsp. ground cloves

Udi's Snickerdoodle Cookies www.udisglutenfree.com **PRODUCT SPONSOR** For the cookie crust: 16 Udi’s Gluten-Free Snickerdoodle Cookies (about 1 ½ packs) 3 Tbsp. vegan margarine or non-dairy alternative, melted Directions 1. Preheat the oven to 425°F 2. Place the Udi’s Snickerdoodle Cookies in a food processor and pulse to form fine crumbs. Transfer to a bowl and stir in the melted non-dairy butter alternative, combining well. 3. Press the dough evenly into a 9-inch pie plate with fingers to form a crust, pushing up the sides and pressing firmly. 4. Bake for 7 to 8 minutes, until crust begins to brown. Set aside to cool. 5. Reduce the oven to 325°F. 6. Make the filling by combining all the remaining ingredients in a large bowl and beating or whisking until smooth and well combined. 7. Pour into the baked crust and bake for one hour or until a knife inserted in the center comes out clean. 8. Allow to cool completely before serving (about 2 to 3 hours). Serve cold or reheat in oven at 350°F for 15 minutes. Makes one 9 inch pie

Ingredients: 2 1/4 cups Bob's Red Mill 1to-1 Gluten Free Baking Flour 1 tsp baking soda 1 tsp salt 1 cup (2 sticks) butter, softened 3/4 cup sugar 3/4 cup packed brown sugar 1 tsp vanilla extract 2 large eggs 2 cups chocolate chips 1 cup chopped walnuts (optional)

Directions: 1. Preheat oven to 375° F. 2. Mix flour, baking soda and salt in small bowl. Set aside. 3. Beat butter, sugar, brown sugar and vanilla extract in large bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture and beat until well-blended. Stir in chocolate chips and nuts. 4. Roll dough into balls, about two tablespoons each. Place 2 inches apart on ungreased baking sheets. 5. Bake for 11 to 13 minutes or until golden brown. Cool on baking sheets for 5 minutes. Move to wire rack to cool completely. Makes 36 cookies.

Directions: 1. Using a large food processor, pulse the confectioner’s sugar, pecans, and coconut until the pecans are finely chopped and tossed well with the sugar. 2. Using an electric mixer or the food processor, beat together the butter and pecan mixture until fully integrated. Beat in the vanilla and the orange zest. Slowly add the flour and salt, beating or pulsing until blended and a soft dough is formed. 3. Cover the dough tightly and refrigerate until cold and firm, not sticky – at least 2 hours. 4. Preheat oven to 325° F. Scoop cold dough into large teaspoon-sized balls and roll between your palms to form a round ball. Place each formed ball onto a parchment-lined cookie sheet 1-2 inches apart. 5. Bake for 15-20 minutes, or until the edges begin to brown slightly. Remove to cool on a wire rack for 5 minutes. 6. Sift approximately 1/2 cup confectioner’s sugar into a small flat-bottomed bowl, then gently toss each cookie in the bowl to lightly coat with sugar and serve. Ingredients: 2 cups granulated sugar 2 tbsp water 1 cup crispy thick-cut bacon, cooked and chopped 1 5 oz. package Sante Cardamom Cashews Directions: In a medium-sized, heavy saucepan, place sugar and water and mix. Set on high heat and allow to boil and bubble, using a wet pastry brush to wet down the sides if needed. Once the sugar turns a dark amber color, remove from heat and mix in half the bacon and cashews. Spray nonstick spray on a heavy baking sheet carefully pour hot sugar mixture in the pan. Gently place the other half of the bacon and cashews on top, and allow to cool for at least an hour.

Directions: 1. Preheat oven to 350 ĚŠ F. Grease your pans with coconut oil. Combine wet ingredients (pumpkin, eggs, coconut sugar) in a large mixing bowl until soft (use fork or potato masher). 2. Directions 1. In a small bowl, whisk together oil, lemon juice, sea salt and pepper; set aside. 2. Scoop out the avocado flesh from each half and chop one of the halves; leaving the other shell in one piece. In a large bowl; combine chopped avocado, tomatoes, red onion, spinach, and basil; mix well to combine. 3. Place the avocado shell on a plate; scoop tomato mixture into cavity of the avocado and serve topped with granola.
