Southwards, beyond the High Atlas Mountains, the intense, pure light of the pre-Sahara brings out tones of red, brown, ochre and gold contrasted by touches of greenery and an arching canopy of blue. It is in this arid yet beautiful land that many have lost their hearts and fallen in love with proud villages and little oases set within a fantastical landscape. This is exotic Morocco, remote and lost in time, a region that yields its treasures to those willing to venture a little further and follow the route to the tranquil Ameln valley in the west or the spectacular DrĂ˘a valley south of Ouarzazate with its thousands of date palms. For over 30 years, Philippe Starck has been defying the boundaries of imagination and creativity, redefining shapes, textures, materials and the way we use space. A leading figure of the New Design movement, his name ranks along the likes of Raymond Loewy, Henry Dreyfus and Christian Dior of influential designers who helped shape the post-war era. But Starckâ€™s influence continues into the 21st century, where he stands amongst Jean-Paul Gaultier and Damien Hirst as the pioneer of a new era. Unlike many New Design stylists, however, he has outgrown the artistic snobbery of creating shocking, one-off luxury items, but has instead developed into a prolific designer whose products range from exclusive and bespoke to everyday, mass-produced items. A true designer, Starck has created, shaped and moulded across the disciplines, applying his gifted touch to architecture, interior design, graphic art, fashion and his first love, industrial design. In so doing he has produced everything from buildings and shop interiors to cars, yachts, windmills and the practical household items we use on a daily basis. Applying his voluptuously streamlined style, he has breathed new life and added both glamour and fun to everyday products and utensils, injecting them not only with colour and a new visual perspective, but also heightening our senses through unusual combinations of materials, such as plastic and aluminium, fabric and chrome, and glass and stone.

The fresh perspective of unconventionality Starck is an enigma, in the true tradition of a creative genius, yet where many wrap themselves in the mystery of the artist, Philippe Starck is not afraid of taking responsibility and coming down to earth. Yes, he designs weird, wonderful and impossibly exclusive projects such as the Virgin Galactic spaceport in New Mexico, and a whole string of elitist hotels, restaurants, nightclubs and jewellery stores from Paris and London to New York, Moscow and Hong Kong. The difference is, Philippe Starck is also happy creating inexpensive products such as the Juicy Salif, a stylised yet inexpensive juicer that has since become a cult item. Famously uncomfortable discussing design at length, he has had many an interviewer at their wit’s end. Asked what he wanted to become as a youngster, he typically answers ‘composer’ or ‘astrophysicist’. Instead he attended the École Nissim de Camondo in Paris, founding a design firm in 1968 that specialised in inflatable objects, a popular theme at the time. A year later, Pierre Cardin joined him as art director, but it was in 1982 that Starck’s career really took off, when President Mitterrand asked him to redecorate the private chambers of the Elysée Palace.

Next came Café Costes, now an institution of cool, and since then Starck has never looked back, working on the Royalton Hotel on New York’s East 44th Street to create a hotel design that helped spark the boutique hotel genre. His style continues to evolve as his über-cool hotels, shops, restaurants, nightclubs and bespoke items spread across the continents, but again he finds time to pen designer corkscrews, bottles, labels and chairs – many of them stylish but also affordable. Having spent his youth looking at aeronautical designs take shape in his father’s workshop Philippe Starck’s passion for drawing and creating is understandable. To him it is the most natural thing in the world, not an elitist process wrapped in artistic exclusivity. From his mother he inherited an elegant, poetic outlook on life that he calls ‘panache’. It is the mix of these two elements, the wondering, imaginative mind and the hands that are trained to give visual shape to those thoughts, which make the designer. Going against the grain fires the creativity of this great designer – especially when the grain consists of self-important, pseudointellectual babble. A visionary but also a man of action, Starck is a robust character who loves his subject matter and uses all his senses the way a great chef does to create masterpieces that offer pleasure and add spice to our lives.

“Being a Roux, I suppose I was always expected to be a chef” For most of us, the search for perfection is an unremitting one. No matter how well we perform, there’s always a higher standard that’s just outside of our grasp and, even when we do reach the dizziest heights of our careers for a few awe-inspiring moments, there’s an inevitable tumble back down from complete greatness. It’s always with an air of amazement, therefore, that I meet people or clans who have not only been at the very top of their professions for years and years, but actually helped to redefine the very parameters of their craft. When brothers Michel and Albert Roux, who hail from a family of French pastry makers, arrived in England back in 1971 to open their first restaurant – the now-legendary Le Gavroche in London where Albert held the reigns for a couple of decades – few could have guessed the influence the pair would go on to have over British high-end cuisine. With skills to burn teamed with ample side portions of determination and business savvy, they were soon opening their second restaurant in the small village of Bray, Michel’s The Waterside Inn. To call these two establishments significant is like describing Gordon Ramsay as mildly successful. With a commitment and flair that few Brits had witnessed before in a restaurant, The Waterside Inn became a Mecca for gastronomes and, in 1987, the restaurant was awarded three Michelin stars – the highest possible decoration. Almost 20 years later, Michel and Albert were named ‘the most influential chefs in Britain’ by Caterer and Hotelkeeper magazine. Small wonder as, at the time The Waterside Inn first opened its doors, British gastronomy was a culinary laughing stock – all chips, black pudding and stodgy cakes – but that little slice of France on the banks of the Thames, where Michel served ‘classic French cuisine with a modern twist’ started a ripple that became a landslide. For the fact that England is now home to some of the best restaurants and chefs anywhere in the world – from Anthony’s to The Fat Duck – the brothers Roux must take plenty of credit. Perhaps even more incredible is the commitment to continual excellence; they haven’t lost a single one of those three Michelin stars in any of the 21 years since. “Accolades such as Michelin stars are actually really important to me,” says Alain Roux, Michel’s son who is now the Chef Patron at The Waterside Inn. “They are a form of recognition and motivate me towards the best possible work every single day.” Just as Albert’s son has now taken over his father’s whites at Le Gavroche, Michel has taken a step back here. “It’s in my heart; I will always be involved,” explains the chef with the OBE. “However, for the past six years, I’ve only put my whites on to cook away from The Waterside Inn. I’m enjoying spending every day relaxing!” Just as he’s stepped away from the kitchen, Michel allows Alain to field most of the questions – he’s passed on the spotlight as well as the reigns. “Being a Roux, I suppose I was always expected to be a chef,” says Alain. “However, strangely, I always wanted to follow my cousin and my uncle – not my father!” He’s inherited quite a charge and, also, a weight of expectation; but these sit easy on the shoulders of the affable Alain. “The key is never to get complacent and always to question what you do. Service after service, each has to be your best, while bringing in ‘new creation dishes’ throughout the year is also extremely important.” The menu at The Waterside Inn changes four times a year, in order to accommodate seasonal ingredients. If you’ve never had the fortune to visit, then you must book at once. At the end of a picturesque road and right on the banks of the Thames, the location is idyllic. Swans and rowing boats float by, but you’ll be hard pressed to notice. The fare is just too spectacular. Dishes such as the pan-fried lobster medallion with a white port sauce and ginger flavoured vegetable julienne at once soothes and assaults the taste buds; the roasted Challandais dusk with lightly spiced prunes, green ‘Puy’ lentils and a ‘Grande-Chartreuse’ jus literally blows the mind – who knew food could taste this good? – while I defy anyone not to melt after just a spoonful of the warm rhubarb soufflé enhanced with raspberries.

“I suppose inspiration comes from everywhere,” continues Alain. “From visiting countries, food markets, reading books and talking with customers and my family. I also love talking to other chefs who use differing styles. I respect and admire the likes of Ferran Adria and am very interested in molecular gastronomy, but I still have a lot to discover. It’s bringing all these influences together that’s important.” Almost as impressive as the food, however, is the atmosphere in The Waterside Inn. Every night feels like a command performance, but the staff are more like treasured friends than austere actors. It’s an ambience that Michel and Alain have actively promoted. “Looking after your staff and customers with the highest respect is very important, as is being surrounded by the best team,” says the Chef Patron. “The Waterside Inn is about cooking to an extremely high standard along with the skills of Diego Masciaga – one of the best front of house managers in the industry – and his team.” Not for the first time, the word ‘family’ springs to mind. In fact, ‘keeping it in the family’ might as well be the Roux motto. When asked to name his favourite restaurant away from The Waterside Inn, Alain responds immediately: “Le Gavroche – my cousin, Michel Roux Jnr’s restaurant.” So, who takes on the daunting task of cooking when the tribe gets together? “Actually, my ‘mum number 2’ [Michel’s second wife] Robyn does it.” A brave lady indeed. But the Roux have always been keen to widen their embrace and reach out to an extended family. A fine example of this is the Roux Scholarship which, in 2008, celebrates its 25th year. Britain’s biggest and most prestigious competition for young chefs, this year’s judging panel includes such culinary heavyweights as Gary Rhodes, Brian Turner and the Fat Duck’s gastronomic alchemist Heston Blumenthal. The winner receives up to three months’ training at a three Michelin-starred establishment in Europe – all expenses covered – in addition to a whole range of other prizes. Previous winners include Andrew Fairlie and Sat Bains; basically, winning the Roux Scholarship is a short-cut to culinary greatness. “The scholarship is really important to the whole family – we want to invest in the future of our art because it’s been our lives and always will be.” In fact, on several occasions, the Roux family have organised backers, guaranteed bank loans and prepared contracts for young chefs looking to set up on their own, insisting that shareholders could not refuse to sell shares back to the Chef Patron. Being part of the Roux’s extended family is a great place to be. When you consider all these parts as a whole, then it’s hard to deny that the Roux family is the most important thing ever to happen to British cuisine and the foundation for its current lofty position. “High-end dining is more popular here than ever before. British food surpasses the standards of most other countries, but also the British have become a very ‘foody’ population,” says Alain. “There are more and more high-end restaurants, as there is real demand, with people interested in and knowledgeable about healthy eating.” While insiders and gastrophiles appreciate the Roux’s contribution, on the whole, the family has shied away from the media spotlight that so many other chefs have wholeheartedly embraced. “I’ve no problem at all with celebrity chefs. In my opinion, most have really helped the industry by raising standards and interest.” If the last 25 years have been a lesson in unrelenting perfection from The Waterside Inn, then what does the next quarter century hold? “Well, I’m sure my father will just keep going for as long as possible, purely to annoy everyone,” Alain jokes. “Whereas I’ll retire as soon as possible and leave the hard work to everyone else! Seriously, we’ll just see what the future brings and keeping striving to do the best we can. Hopefully, we’ll all live a long and healthy life.” It’s a fine aspiration and, you can bet, that at the centre of it all will be the importance of family.

SPYKER THE ULTIMATE STATEMENT OF BESPOKE INDIVIDUALITY The past 15 years have seen a revival of small engineering firms specialised in making state-of-the-art sports cars – some even reviving great racing names such as Bugatti and Ascari. Among the finest of these mostly British, Italian, German and French marques, comes a manufacturer of sumptuous bespoke sports cars: Spyker.

Handmade to every individual owner’s preference, the luxurious Spyker super cars revive the grand tradition of Holland’s finest carmaker, once known as the ‘Rolls Royce of the Continent’. The founders of the marque, Jacobus and Hendrik-Jan Spijker, were leading coachbuilders, their craftsmanship culminating in the golden state coach built for the coronation of Queen Wilhelmina in 1898, and still in use today. 1898 was also the year in which they built their first motor vehicle. By 1903 their advanced 60/80 HP model became the first car with a six-cylinder engine, permanent four wheel drive and independent brakes, setting the tone for a twenty-year period that was to make Spyker synonymous with quality, technological innovation and legendary racing successes. Characterised by their circular radiators, the cars were especially popular in the Dutch East Indies and Great Britain, where they earned fame along the grandest makes of the day. The onset of the First World War led to a merger with the Dutch Aircraft Factory N.V., and saw the company branch out into aeroplane manufacture, adopting its new logo – a spoke wheel with horizontal propeller across it – and slogan: Nulla tenaci invia est via (For the tenacious no path is impassable). Both are once again proudly borne on today’s Spykers. The aeronautical connection was clear in the design of the new, post-war cars, which featured both aviation technology and aerodynamic design. Perhaps the most famous classic Spyker of all is the C4, a highly advanced luxury car that set new endurance and speed records across Europe. It was to be a grand swansong, as the company ceased trading in 1925 and a legendary marque faded from the scene until revived by the visionary Victor Muller in the late nineties.

Hand-built Perfection Spyker’s slogan seems made for Victor Muller, the man who not only revived the famous name but also ensures the new company is the embodiment of the original marque’s philosophy. For that reason, every Spyker is a bespoke, handmade work of engineering art in an age of mass-production and standardisation. With an almost frightening dedication to perfection and excellence, Muller has created a scuderia where engineers, designers, coachbuilders and craftsmen come together to produce super cars that are as luxurious as they are fast and powerful. True to their innovative heritage, today’s Spykers continue to feature uniquely ingenious engineering, tuned to perfection and coupled with voluptuously crafted brushed aluminium dashboards and stitched leather trimmings that marry aeronautical cues with modern design. Inside a Spyker, be it a C8 Spyder or the new C12 Zagato, opulence does not detract from the true racing credentials and performance of these road-going racing cars. The success of the Spyker Squadron racing team, which uses the slightly modified Spyker C8 GTR2, in endurance races such as Le Mans and Sebring, is building an impressive racing pedigree that feeds straight back into the mainstream C8 and C12 models. Although it only raced during the 2007 season, the Spyker Formula One car adds immeasurably to that body of expertise. Most of all, however, this is an exclusive car with beautiful lines, built as the company says: ‘By motoring enthusiasts for the most passionate of car lovers; people who do not only want to have the best car money can buy, but who want to have it built especially for them, to their exact specifications.’ This much is clear from the almost free palette of colours, finishes and additional options, which range from personalised inscriptions to matching sets of Louis Vuitton luggage specially designed for a perfect fit. A personalised web page is created for each car, enabling the owner to watch the progress during manufacturing and to record its history from thereon out.

One point on which Spyker does not compromise is its design ethic, in which no parts bins are raided and everything is developed from scratch. The ultra-stiff space frame and handcrafted body panels are manufactured from aluminium, sculpted in sensual rounded forms that reflect a desire to create a harmony of proportions in which the car looks right from all angles. Voluptuously styled details such as aluminium air intake tubes and mirrors reflect a design ethos in which detail adds to the basic shape – but only if it also performs a practical function. Form and function are moulded in this almost architectural purity of design. Not surprisingly, the Spyker C8 Laviolette won the award for engineering excellence granted by the Institute of Vehicle Engineers when it was unveiled at the British Motor Show in October 2000, and subsequent models have attracted an equally long list of honours. Other acclaim has come from the likes of the duPont Car Registry’s Exotic Car Buyers Guide 2005, which proclaimed the Spyker C8 Spyder as ‘Best New Exotic Car 2006’. Naturally, this is a vehicle reserved for the very rich, but for those who can afford it the Spyker is an expression of personality almost as individual as the owner itself.

The exotic looks of the Spyker have attracted the attention of the film industry. To date, Spykers have featured in Basic Instinct 2: Risk Addiction, and ROGUE.

The Giorgetti Company is an exclusive manufacturer of finely crafted furniture in the finest of Italian tradition. Founded in 1898 in the little northern Italian town of Meda, this family business is in many ways typical of its genre, with much emphasis placed on the workmanship, design, quality and tradition that has brought forth a well-respected name, and that typifies furniture houses in this segment of the market. Architectural design One of the things that sets Giorgetti aside is the fact that most of its designers are architects. At first thought the idea of architects designing furniture pieces may seem strange, until you realise that some of the greatest industrial designers have been architects. “Architects bring with them a profound knowledge and pure sense of design that is perhaps more rounded and allows them to conceive of things as diverse as chairs, orange squeezers, cars, shoes, pens, glasses and indeed buildings in a way that is out of the context of the item itself and connected to the greater world around it,” says Antonello Mosca, leading designer at Giorgetti and himself a qualified architect. “By not being cabinetmakers or car engineers ourselves we can bring a sense of freshness to the design of these items, much like the aeronautical engineers who revolutionised car design with the post-war Saabs.” As architects, these designers bring not only a link to the world of art but through their technical knowledge of materials also aid in the innovative use of new styles and production techniques. “There are two kinds of designers,” says Antonello, “those who design variations of existing styles and those who innovate. To do the latter, and always be at the forefront of developments, requires thinking out of the box and attempting to look at things with fresh eyes and approach them from ever-changing angles.” This continuous process through which the Giorgetti designers put themselves represents true innovation, as it constantly challenges existing principles and seeks to discover new ones. “Design is a highly conceptual thing,” says Antonello. “It starts as a vision or an idea in your mind, but when you’re working on something that has to be a functional working item it also becomes a very practical issue, as you have to find practical solutions to fit the highly unusual shapes and forms that your imagination has given birth to. This is where our teams at Giorgetti excel, working together to produce pieces that are durable, functional, strong, flexible, easy to use and clean while also being an item of beauty and rare expression that will light up any room.”

Yes, Paris is not one of the world’s most popular tourist destinations for nothing. Just step out and marvel at the elegant buildings, walk the broad boulevards, visit the museums, soak in the café society and be seduced by those chic boutiques. This city has it all to offer; just don’t think you can come to grips with a place as big and as fascinating as this in one visit. To unravel the many layers that truly make up Paris takes an understanding borne out of many years of experience – some even say a lifetime. MONUMENTAL PARIS A first visit should include all the famous monuments and icons. After all, who wouldn’t be excited to see the Eiffel Tower or stand before the Louvre for the first time? In a city with so much to see it is good to get your bearings, but looking at the map brings a poetry of names with it that sparks a sense of recollection: Bd. St. Germain, Place de la Concorde, Faubourg Saint Honoré, Montmartre… Fact is, you can see many of the most famous sights without ever having to stray too far from the Seine, lifeblood of the city since classical times, when it was a Gallo-Roman town called Lutetia. At the very heart of it all is the Ile de la Cité, the little island between the north and south banks that holds not only Notre Dame but also many of the city’s secrets deep within its vaults. For those interested in archaeology, this is the place to be, yet for most visitors it will be a whirlwind pilgrimage to the Louvre and adjacent Tuileries Gardens and the Place de la Concorde, along the Parc du Champs de Mars under the shadow of the Tour Eiffel, and up the broad Champs Elysées towards the rising outline of Napoleon’s triumphal arch – one of the most famous sights in the world.

CAPITAL OF CHIC As if to underline this, the modern Arch of La Défense prolongs the perspective of Napoleon’s two triumphal arches, thus maintaining a tradition of symmetry and geometry that is at the heart of this city’s architectural harmony. Elegant boulevards, some running along the original, pre-Greenwich zero meridian, are lined not only with museums and monuments, but also with elegant apartments, trendy cafés, stylish boutiques and the kind of fine dining venues that the French are famous for. In the capital of fashion, perfumery and cosmetics, great names such as Chanel, Dior and Boucheron have their own outlets, but equally impressive are grands magasins like the Galleries Lafayette or Printemps – each with its own magnificent rooftop restaurant. For a melange of décor, style and tradition, not to mention some of the finest cuisine anywhere, there is an entire listing of first class eateries that maintain the city’s position as the centre of gastronomic excellence. But there is more, much more. The Hôtel des Invalides, the Panthéon, the Jardins du Trocadero or the Saint-Sulpice church, made famous by The Da Vinci Code. Better preserved than most cities, with a centre still resplendent in Haussmann grandeur, there is an increasing mingling of old and new, with the Musée D’Orsay – a 19th century railway station that houses a museum – contrasting with Jean Nouvel’s ultramodern Musée du quai Branly or Richard Rogers and Renzo Piano’s famous Centre Pompidou. In fact, an entire glass and steel high-rise centre has joined the Paris skyline in recent decades. The modernist skyscrapers of La Défense may not be so different from those in a multitude of cities, but their impressive clustering to one side of the city – where it doesn’t detract from the beauty of classical Paris – is a poignant example of the French knack for planning and seeing the bigger picture. After all, this city is a masterpiece of urban planning and revival, the creation of Baron Haussmann lovingly nurtured and added to today.

ROYAL SPLENDOUR AND REVOLUTION But the elegance of the Boulevard Saint Germain or Place de l’Opera is contrasted with many a grimy back street. The royal opulence of many a palace or imposing church is likewise juxtaposed with the spirit of rebellion that has lived here since 1789. Fiercely independent, Parisians have stormed the Bastille, raised barricades against advancing cavalry and even created a Paris Commune that lasted for several months before government troops finally broke through and the last communards were finished off within the walls of Père Lachaise cemetery. This revolutionary and bohemian spirit lives on in Montmartre and in the seedy streets around Place Pigalle, now a red light district but once a colourful den of thieves. Think Moulins Rouge, the Can-Can and the coming together of intellectuals, artists, philosophers and romanticists such as Proust, Picasso, Hemingway and de Beauvoire in noisy, smoke-filled cafés. And here begins another facet of Paris; the more elusive human face of the city, which shows it off as a place of romance, happiness, pain and longing. From bloody uprisings to wartime invasions, Paris has seen its share of misery and, but somehow emerged out of the smoke with most of its finest treasures intact. It is once you become familiar with Paris’s landmarks, geography and above all, its story, that you begin to understand its people – a vital ingredient for really getting to know this most enticing of cities. Only then, when you know your way around the smaller, lesser-known streets, cafés, restaurants, local markets and night scenes, can you really say that you have experienced Paris. Discovering these delights, and mixing with local people in such colourful off-the-track areas such as the Canal St. Martin, or Belleville, is a process that is as rewarding as it is enlightening.
