WELCOME TO STOKE PARK 4

STOKE PARK

Welcome to Stoke Park 2019 has kicked off in spectacular fashion as we celebrate our 111th anniversary since becoming the UK’s first Country Club! There have been many fantastic social events which have taken place already such as our Captain’s Day and ‘Meat’ the Chefs evening (both featured in the magazine) and, of course, The Boodles 2019! Stoke Park’s golf and tennis teams continue to have huge success in competition – many congratulations to all the those who have not just triumphed but have been great ambassadors to our Club. Special mention must go to our Golf Scholar, Conor Gough, who won the ‘Performance of the Year’ award at the England Golf awards, which was then followed by an invitation by Tommy Fleetwood to compete in the British Masters – huge congratulations to you Conor! As always, Stoke Park are adding new facilities, and I am very much looking forward to testing out the two new Padel courts which are up and running and also improving my golf on the new pitching area and short game area. This year we have continued to receive wonderful awards and accolades, and were delighted to be recently named the ‘No.1 Golf Resort in England’ by National Club Golfer, with them also stating that “Only Gleneagles and Turnberry are on a par with Stoke Park among British golf resorts.” You will notice, with this being our 11th issue of the magazine, we have decided to celebrate all of our amazing front covers from the past 10 editions on the front cover of this issue. I hope you enjoy the magazine and I look forward to seeing you at the Club!

20

Years at the Club

Nick Downie catches up with our Director of Golf, Stuart Collier, who this year celebrates his 20th year at the Club!

S

tuart, first and foremost many congratulations on your 20 years at the Club! Since you first started, how has the Club changed over the years? I think probably the biggest change in the entire business it that it is now a family Country Club and an all-encompassing resort. Whereas I would say in 1999 it was more of a golf club with accommodation. The Pavilion wasn’t there, from the putting green and security hut onwards there was no official car park, there was a parking area but mostly golfers parked around the front of the house and putting green, we were very much in transition from Stoke Poges Golf Club to Stoke Park as we now know it. At the time we had 27 holes of golf and 21 bedrooms on the estate, you know when you’ve got more golf holes than bedrooms you can see where the primary focus was. I think that’s been the biggest change. And talking about change and investment in the Club facilities, over the past 20 years what has changed from a golf perspective? I think the biggest change has been the golfer’s expectation. People have always and will always expect the golf course to be well

They enjoy travelling the world and playing you might find at a traditional private members club, our primary golf on wonderful golf courses and also doing business on the golf focus is all about the membership. There is a huge interaction from course. When you come back to your home club you don’t want to the members in club events such as The Captain’s Day, where we saw feel that what you are getting on a day to day, week to week basis is a 144 members all coming together and everyone having fun socialising. drop-in standard from some of the world class experiences you’ve had We have the overseas tours and competitions. The golf is always at elsewhere. We have had to raise our game to make sure we are keeping the core of everything we do, and people are trying hard to win the at the forefront of the golfing experience for our members and that competitions, but when the golf finishes the social side kicks in and means delivering much more than a round of golf. The principles of everyone has a great time! The whole process of the trips allow new the game and the round haven’t changed, but actually everything else members to bond with existing members, and around that has moved on massively. Take for when you are home from the tours and come example the practice facilities, going back 20 back to the club and attend any of the roll ups years we would only need to collect balls on or competitions you will see plenty of familiar the driving range twice a week, whereas now I think perhaps the more traditional faces which makes you feel at home and part we have a robot out there working 24 hours a members club attract a certain type of of something. When I arrive in the morning there’s someone on golfer, whereas here you have a huge blend of the Club is unique and many new members the range hitting balls, late every evening in of all different types of people and golfers. who have joined this year have commented on how they can’t believe how lovely everyone is – the summer there’s someone out on the range Stoke Park is a perfect hybrid, the ideal it’s a very welcoming club! working on their golf hitting balls. You may only have an hour but want to get into it, is Stoke Park the free to hit some balls, practice on the short right place for them to join? game area and not necessarily have the time to play a round or a I would say certainly it is. I think what we’ve created is the ideal few holes. Therefore, we have to make sure that the facilities which pathway for any new golfer. the course, we then help you transition what you have learnt onto the golf course. At a point when you are then starting to play, we would say right now is the time for you to think about becoming an Academy Member. The Academy Membership is the ideal stepping stone towards becoming a regular golfer, and what better way to start getting out on the course than with the people who you have gone through the group programme with. Again if you are learning to play with 10-12 people and transitioning through that journey to become

a golfer all together, automatically you have people to play the course with, support you and socialise with – it is again that real sense of community you have at Stoke Park. With the Academy membership you then get to play our Lane Jackson Course, 9 holes to play every day of the week and not only that as a member you have access to the practice facilities, which are absolutely world-class and enjoy the benefits of being a club member.

I can honestly say that new facilities about to open such as the pitching area? I can’t remember the last time that phrase was used. The ongoing Yes, the pitching area is about to open, so that will be a great area to investment made by the family since 1993 and the vison Mr King develop your skills from 100 yards and in, the next phase after this had, has become a reality and has certainly eradicated any feeling will be the implementation of 3 GolfZon simulators on the range next amongst the members that the best interests of the Club were not to the Golf Academy building. A Triumphant CAPTAIN’S DAY O

ur much-anticipated Captain’s Charity Day was held on Saturday, 1st June on the sunniest day of the year so far, which really set the tone for the occasion. An early 8am start saw 144 members arrive for the Vegas Scramble Golf Tournament where they were met with a breakfast BBQ and Indigo’s pop up Indian kitchen serving delicious food. Club Captain, Mani Sharma, was on hand to greet everyone whilst the ladies from the Golf Team raised funds for his chosen charity, Buckinghamshire MIND. The 18-hole shotgun start was enjoyed by all, especially with the addition of the gin and tonic station on the 7th hole supported by Fever-Tree and the team from Gordon’s Pink Gin! Indigo Bar and Grill followed up with a triumphant lunch at the 15th tee gazebo kindly provided by Mani and to round off the sweltering day, an ice cream van was on hand to deliver some cooling down treats to all players.

Mani welcomed those attending with a drink’s reception followed by a four-course, black tie, gala dinner, incorporating a Miami themed Heads and Tails fundraiser, a Live Auction and a Silent Auction for his charity. We are thrilled to announce that the day as a whole raised in excess of £20,000 which will go a very long way in aiding Bucks MIND’s services. The evening was rounded off by Mani’s son AMiR, a talented professional singer, who entertained the attendees with super music alongside the live DJ. Thank you to Mani Sharma for providing such a wonderful event – a truly tremendous day to remember.

Academy News Chris Murtagh, our Head of Instruction, gives us an insight into what’s happening at the David Leadbetter Golf Academy

T

here has been significant facility upgrades at the Golf Academy this year. We will, over the coming months, be opening the new wedge range to the left of the first tee, along with the new putting green, which is located at the back of the driving range. The wedge range, designed by David Leadbetter, will offer members the opportunity to work on shots from 100 yards in and provide instant feedback on their distance control. The current swing studio has been upgraded and in turn will have more of the latest custom fitting equipment from Callaway and for the first time will be able to offer a putter fitting service courtesy of Odyssey. We have installed new artificial tees at the driving range, on the new wedge range and in the swing studio. These tees are fitted with RSI protection underneath the surface to reduce risk of injury during long practice sessions. The final project for this year will be to install three GolfZon GDR simulators within the current undercover practice area. These simulators will provide academy students and members with the ability to practice on all 27 holes at Stoke Park. In addition, the simulators will come with movable teeing plates to simulate all the different lies that you will experience on the course. In August we will be welcoming David Leadbetter back to Stoke Park. During David’s time at the Club he will be conducting members clinics, as well as hosting a two day coaching conference for

20 STOKE PARK

professionals from all over the world. Alongside David, the conference has a host of guest speakers including former England Cricket Captain and Stoke Park President, Andrew Strauss and current Performance Director of British Athletics, Stephen Paulding. Following the conference the Academy Team will also benefit from a two day training course with Jean-Jacques Rivet who is Head of Biomechanics at the European Tour. This will provide the coaches with further knowledge in an area that is vitally important in performance coaching. It has been a busy year so far at the Golf Academy and we are looking forward to seeing more members, and visitors, looking to improve their golf over the summer months.

A Swinging

Success!

Nick Downie catches up with Stoke Park Elite Scholar, Conor Gough, following his incredible year winning the British Boys Amateur at Royal Portrush, playing for Europe in the Junior Ryder Cup, winning the Faldo Series’ Major Champions Invitational at Bella Collina in Florida, and being selected in the squad for the Walker Cup which culminated in winning the prestigious Performance of the Year Award at the England Golf Awards! This award then led to a very special invitation from Tommy Fleetwood (who won the same award previously) to compete at the British Masters... Conor, firstly many congratulations on your incredible year. You’ve made us all very proud at the Club and we are all very excited as to what the future may hold. You’re just back from playing at the British Masters, tell me about this experience? The British Masters was a great experience. I didn’t play my best golf but got to see what the top players are like and also got to meet quite a few of the top English players. What did you learn from the experience and has it inspired you to work even harder at your game? I learnt that the pros are just as good as what you think or even better and it’s inspired me to practise much harder so that I can get to their level and start doing what I love.

22 STOKE PARK

What are your goals for the season? My goals for the season: • Win at least 3 competitions • Get picked for Walker Cup • Win the European Boys What would it mean to be selected for the Walker Cup? It would feel amazing getting picked for the Walker Cup but never the less it won’t be the end of the world, I’ve still got plenty of time for that so I won’t be putting any added pressure on myself to make it. I’m just going to play golf like I usually do. What are your plans beyond this season? Next season I have no exams so looking forward to a big season and my game should be in better shape than this year due to the lack of golf because of the exams. You have met many golfing greats over the past year. Who is your golfing hero and have you had a chance to meet him/her yet? I met Tiger Woods at the Ryder Cup; he’s definitely my golfing hero for sure!

MEN’S CAPTAIN’S TOUR This year’s Men’s Captain’s Tour took place in Marbella at the start of May. This was the fifteenth anniversary of the tour and once again we had a great uptake of members wanting to participate with 36 golfers travelling for four days of competitive golf and camaraderie. The selection of quality golf courses and guaranteed weather on the Costa del Sol made this a strong venue for the tour and on both counts Marbella certainly delivered. The format for the tour is matchplay with the Captain’s team taking on the Professional’s Team, after a heavy defeat in Turin for the Captain’s team last September Mani was very keen to ensure his team were ready for battle. The first two days are played in a better ball format followed by singles matches on the final day. Mani decided to front load his playing order with a strong couple of pairings leading the way on the first day at the Marbella Club. This tactic paid off with Chris Hancock and Bryan Anderson securing the first point and Michael Jacobs and Vice-Captain Paddy Mattar following up to give the Captain’s team a 2-0 lead. The remaining matches were reasonably tight and the Captain’s team took a 5-4 lead after the first days play.

The selection of quality golf courses and guaranteed weather on the Costa del Sol made this a strong venue for the tour...

We headed off for the wonderful Real Club de Sotogrande for the second days play and this time around it was the Pro’s team that led the way with Joe Murphy and Tony Maycock securing the first points for the Pro’s team, John Sweeney and Dave Gerson earning a half against two Past-Captains Briggs and Anderson and then Chris Murtagh and Patricio Apey on his tour debut making it 2½ points from a possible three in the first three matches. Things could not be tighter after the second day of better-ball matches with the Pro’s team winning day two 5-4 leaving the overall match score at 9-9 heading into the singles.

STOKE PARK 25

The stunning Finca Cortesin Golf Club, previous host to the World Match Play Championships in 2009, 2011, and 2012, was the venue for the climax of the tour. In previous years the Pro’s team has won the singles day but after reviewing the draw sheet for play this one was going to be too close to call. The first match out turned into a titanic battle with Pro’s team stalwart Phil Fretwell taking on Adam Webb. Phil had control of his singles match, two up with only three holes left to play. Never one to give up Adam won the 16th and 17th holes to take the match to the final hole, a dramatic par five finish which provided both players with a chance for birdie. After two good drives from both players Adam decided to lay up and give himself a comfortable wedge to the green, never one to shirk a challenge Phil took on the green in two and smashed a beautiful three wood to the front edge. Phil rolled his eagle putt up to comfortable birdie range and after a good wedge shot to the green, Adam unfortunately didn’t manage to convert his birdie chance leaving Phil to finish with a birdie four on the last hole and secure the first point for the Pro’s

26 STOKE PARK

team. The strong start continued with an unexpected 8 ½ points from the opening ten matches for the Pro’s team, wins for Stefano Ravagnan, Simon Allard, Ian Murphy, Tony Maycock, Patricio Apey, John Sweeny and Stuart Collier put the Pro’s team in a dominant position. The Captain, Mani Sharma did his best to lead his troops to victory with an impressive 8 and 7 win over his close friend Kos Dhaliwal but this was the only full point from the first ten matches. There was to be no late flurry from the Captain’s team as the Pro’s team inflicted the heaviest ever singles defeat and overall winning margin on tour running away with a 12½ to 5½ point win in the singles and a 21½ to 14½ overall score and another victory for Pro’s team making it eight wins in the last nine years. Vice-Captain Mattar was seen making copious notes throughout the tour as he begins working on a masterplan to reverse the alarming trend of victories for the Pro’s team. We wish him all the best in 2020, with the venue still to be confirmed surely the only way is up for the Captain’s team!

Padel at the Park

Stoke Park adds Padel to its award-winning facilities!

W

e are delighted to announce the addition of two Padel courts to our award-winning sports facilities. In doing so Stoke Park becomes the first 5 Star Hotel to have Padel courts in the UK and is the only club in Buckinghamshire, Berkshire and Oxfordshire to have this facility. Stoke Park’s tennis members will have access to the Padel Courts, as will guests staying in the hotel. Although first introduced to the UK in 1992, Padel has been played for over 100 years and has become a sporting phenomenon throughout many Hispanic nations including Spain, Mexico and Argentina. Tom Murray, Marketing Director from British Padel commented: “We are delighted that Stoke Park has become a member of British Padel and have added padel courts to their wonderful facilities. To have such a prestigious venue adding Padel has really helped us in achieving our official sporting status, which I am delighted to say we have achieved with our recent merger with the LTA. We currently have 60 padel courts in the UK, and now with these two additional courts at Stoke Park, it really is helping the popularity of the sport.”

Chester King, Chief Executive of Stoke Park added: “We are very excited to be adding Padel to our Health and Racquet facilities at Stoke Park, which also include 13 tennis courts (6 Wimbledon Spec Grass, 3 Indoor and 4 Floodlit Artificial Clay). Padel is a brilliant game and so much fun – we are looking forward to our tennis members, and hotel guests, being able to enjoy.” Our members have already been raving about Padel, with many commenting on the sport being one which you can pick up a racquet and play immediately, whatever your ability, and also the great social aspects of the game in that you can only play doubles. Whilst proving very popular with tennis players, many ex/current squash players are relishing the opportunity to play. We also have three Padel coaches – Marc, Shaun and George – who are available for lessons. With our Stoke Park Padel Championship soon to be announced get your Padel lessons booked in! Also due to the slightly different technique used to play Padel, the Stoke Park PT’s are offering specific Padel conditioning sessions so please do enquire in the Gym if you would like these. To find out about Tennis and Padel Memberships at Stoke Park please contact the Membership Team on 01753 71 71 79 or email membership@stokepark.com To discover more about Padel, please visit www.britishpadel.org.uk

Padel Tips

Nick Downie catches up with our Padel coaches, Marc, Shaun and George for 5 tips to help you play the perfect game of Padel 1 Try to keep the ball low by using slice so the opponents have to bend and hit the ball upwards. Slice will also keep the ball low off the side and back walls. 2 Try to serve and volley as it’s easier to win the point from the net in Padel. 3 When returning both players are back. Try to use the lob to take the net position away from the serving team. 4 Move up and back as a team. If your partner moves back then you move too and vice versa to move to the net. 5 Try to use placement and angles rather than brute force (unless it’s an easy smash) as this is less likely to hit the side wall, mesh or back wall full toss which means the ball is out.

A Truly Harmonious Experience with

Harman

Jeremy Webb visits Harman Kardon’s new customer sound studio in Munich for the launch of the Lexicon SL1 speaker

M

usic has been described as the Art of Noise, but sadly it is not being listened to in the same way as generations in the past once did. Sound is literally being overlooked as the world becomes obsessed with images and people concentrate less on one thing. Music is everywhere in our lives but we are paying less and less attention to it. Harman the luxury audio manufacturer wants people to take time to appreciate music again and learn to listen properly, as I experienced in an exclusive session with Frank Filipetti a multi-Grammy-winning music producer. The new audio studio opened on May 9th in Munich, where I experienced the superb Lexicon SL1 speakers which have SoundSteer technology allowing the user to create a sweet spot for the sound in the environment where the speakers are located. This is done through an App on your smartphone or tablet. During the demonstration, we were told how listening is a skill and can be learnt and improved. I have always appreciated music more when totally being immersed in it, eyes closed and focused on the lyrics and melody. This process was encouraged by the panel of experts Harman had gathered at the launch to explain the benefits of taking time to appreciate sound. Frank has coined a phrase, “Wholistic listening” where you deep listen and shut out the background noise all too present in the world now. He also encourages people to listen to a complete album by an artist rather than continually shuffle music. This allows the truly creative nature of the music to come through. The SL1 speakers are truly

34 STOKE PARK

great allowing the listener to detect sounds like the recording artist intended, which are often missed from lesser quality products. Whilst in Munich, I visited Harman’s Acoustic Garages where Sound Engineers work with car manufacturers to develop audio systems for their cars. Currently, 50 million vehicles are fitted with a Harman product as they own several of the leading car audio companies providing numerous OEMs. I saw Harman’s Clari-Fi software system, which works to sharpen all audio sources to deliver the perfect sound within the vehicle. It is a superb function and will become more widely available throughout the range of companies Harman owns. These include Bowers and Wilkins, Mark Levinson and Bang & Olufsen, equipping marques like BMW, Lexus and Maserati. Harman has their own design company Huemen who consult with car manufacturers to design the audio systems looks, making sure they blend with the marque’s own design principles. 3D sampling and model making is key in the creative process and Huemen are now working with other parties outside of the car audio sector. It was clear to me from seeing and experiencing the Harman products, staff and facilities that this company is focused on quality, luxurious equipment. They are also very interested in their customers, whether this be a car company or purchaser of a speaker system. They care they get the best possible experience, a Harmonious experience. www.harman.com

RELAXATION R&R - Time to Spa! Everyone needs a little R&R and the Stoke Park Spa is the perfect place for it…

In a slight twist on the meaning of R&R, we wanted to introduce two fabulous treatments available in the Spa, one of which is for pure Relaxation… the other for Results! For Relaxation we have our Merveille Arctique Spa Ritual | 115 mins | £185 (peak £200) A new Spa Experience where Scandinavian rituals meet the abundance of Boreal Algae. Inspired by Scandinavian Heat Therapy, THALGO has created Merveille Arctique, a new 115 minute Body Ritual, where soothing warmth alternates with invigorating cool, incorporating Swedish Massage and Deep Tissue Massage techniques for incredible relaxation and wellness. This Nordic sensory experience comprises fragrances with captivating aromas and surprising textures, and techniques choreographed to the nearest millimetre, initiating the five senses to three phases of complete release: Heat, Cool and Relaxation. A welcome ceremony – an essential introduction to customise the treatment transforms it into a tailored ritual with a Korean relaxation technique which prepares the body and spirit to let go. Phase 1: SOOTHING WARMTH – 30 mins Lulled by the waves of a hydro-massage bath and intoxicated by the relaxing vapours of the Merveille Arctique Effervescent Crystals, the spirit flits away to the Icelandic hot springs. Enriched with Icelandic Lichen Oleate, with soothing and relaxing powers, these emollient effervescent crystals soften the skin during this exhilarating immersion.

40 STOKE PARK

Phase 2: INVIGORATING COOL – 30 mins Applied with invigorating friction, a scrub with salt flakes and Cryo-Extract of Boreal Algae transforms every centimetre of the skin, awakening and stimulating the epidermis. Phase 3: THE MERVEILLE ARCTIQUE RELAXATION MASSAGE – 55 mins This exclusive massage is inspired by Swedish Massage and Deep Tissue Massage – two techniques renowned for their muscle relaxation effects. The legs, back, nape of the neck, arms and stomach are treated in rhythmic cycles with intense Swedish techniques – petrissage, stretching, rolling, loosening – combined with specific Deep Tissue techniques – warm-up, pointed sliding and tracing – to release each area of tension. The soothing warmth of the spa therapist’s expert hands is followed by the invigorating cool of relaxing massage balls for a symphony of stress-releasing heat exchanges at the surface of the skin. The whole body and spirit lighten, harmonise and rebalance. The end-of-treatment ceremony concludes this moment of tranquillity with exclusive patented rocking and stretching techniques, gently awakening the soothed, relaxed and energised body.

For Results we have our Thalgo Cellulite Corrector | 55 mins | £105 (peak £120) More powerful than a manual palper-rouler massage and more precise than a motorised one, this customised treatment uses the patented manual Body Palp instrument and five specific all-new movements. Inspired by Cupping Therapy, the Body Palp comes with patented cupping glasses in two sizes and offers pleasant, manually controlled suction in a specific area with unsightly deposits, even in delicate areas such as inside the knee, arm, gluteal fold, etc. To make the skin more receptive to slimming active ingredients, the Thalgo Cellulite Corrector treatment begins with a smoothing exfoliation which alternates with a “hot-cold effect” double wrap. Next is the Body Palp Massage. This reduces dimpled skin, smooths cellulite, refines volumes, resculpts the body and reshapes the buttocks with an exclusive push-up technique for personalised, rapid, long-lasting results. Welcome to Hunar, an aesthetics clinic which brings Harley Street Experts under one roof to transform both men and women from top to toe with very little downtime. Hunar is an ancient word meaning a person who has accomplished a level of expertise and uses the skill gained to the best of their ability. Hunar Clinic is the brainchild of Dr Puneet Gupta and his wife, Dr Prerna Mittal, who have both worked in the aesthetics arena for many years. After realising there was a gap in the market, they decided to set up a brand new, state-of-the-art clinic, by bringing the best Harley Street Consultants together under one roof, giving Clients a five-star service in the home counties. Dr Gupta said, ‘This is a dream come true and we can’t wait to welcome clients to our new premises in Gerrard’s Cross, Buckinghamshire, only a 25-minute train ride from Marylebone in London’. Joining the team will be the expertise of Mr Constantinos Kynakides, a vein surgeon, who treats a variety of vein related conditions, such as varicose veins and thread veins and is also a consultant vascular and endovascular surgeon. Alongside will be Mr Davood Fallahdar, a fully accredited consultant plastic surgeon, who specialises in aesthetic surgery, reconstructive surgery and skin cancer. Dr Prerna Mittal, who specialises in all facial and a variety of body aesthetic treatments,

including the new hyaluronic acid injectable, Profhilo. Dr Mittal believes that ‘aesthetics should be used to create a natural look without causing the loss of expression or the ‘plastic’ look’. Dr Gupta is one of the UK’s leading aesthetic physicians offering Vaserlipo and microcannular liposuction, or ‘Microlipo’ and microcannular liposuction (created by the American inventor of the procedure, Dr Jeffrey Klein). Microcannular is considered one of the safest and most advanced techniques available today as the procedure is performed under local anaesthetic, requires virtually no recovery time and leaves no scarring. 25 years

of culinary masterpieces… our fabulous Executive Chef, Chris Wheeler!

O

ver the past 25 years, Chris Wheeler has been wowing guests with his innovative cuisine and incredible personality.

From being the right-hand man to Jean-Christophe Novelli, to heading up the kitchens for the past 17 years at the multi-award winning Stoke Park, Chris’s ability to create exquisite, mouth-watering dishes has won much praise from both the international media and the many guests who have enjoyed his food over the years. Janet Harmer, Associate Editor of The Caterer, recently stated “Chris Wheeler is one of the most genuine and loyal chefs in the hospitality industry.” In 2016 he was named the Hotel Chef of the Year (over 250 covers) at the prestigious Hotel Cateys and has entertained millions on Saturday Kitchen, Sunday Brunch and Great British Menu. In 2017 he was appointed the UK Ambassador for the Quality Standard Mark Beef and Lamb Scheme and continues to raise a fortune for charitable causes. 2019 saw Chris travel to Tokyo, cooking at Japan’s most prestigious food festival and to showcase British Beef and Lamb. He also launched his debut cookbook The Ginger Chef ‘Served Up’. The book, which features over 65 recipes to suit all appetites, was created so that you can create at home dishes which guests at Stoke Park have been raving about for years. As one journalist recently wrote ‘People who love to eat are always the best people... and if Mr. Wheeler is around to feed them they’re also the luckiest.’

ROAST FILLET OF CASTERBRIDGE BEEF with Oxtail & Marmite Ragout, Crispy Pancetta, Truffle Potato Terrine, Curly Kale

Serves 4 Preparation time – 45 mins Cooking time – 4 hours (due to Oxtail) INGREDIENTS • 4 x beef fillet, 175g/6oz each For the oxtail and Marmite ragout

• 1 onion, peeled and halved • 200g/7oz oxtail • 1 sprig of fresh thyme • 1 sprig of rosemary • 1 carrot, chopped • 1 stick of celery, trimmed and chopped • 1 clove garlic, peeled • 1ltr/1 3/4pt veal or beef stock • Salt and freshly ground black pepper • 1 tsp Marmite • 100ml/4fl oz red wine jus

For the cep purée

• 100g/4oz cep mushrooms • 2 tsp double cream For the watercress purée

• 2 tsp double cream • 200g/7oz watercress For the potato terrine

• 2 potatoes • 50g/2oz butter To serve

• 4 slices of pancetta • 100g/4oz shimeji mushrooms • 100g/4oz curly kale

METHOD 1. For the ragout, preheat the oven to 170°C, 325°F, Gas 3. Place the onion halves in a roasting tin and bake in the oven for 10 minutes. Remove and leave to one side to cool. Trim the oxtail and place into a deep roasting tray with the thyme, rosemary, carrot, celery and garlic. Cover with the beef stock and cook for 4 hours in the preheated oven until tender. Once cooked, remove the oxtail from the liquid, take the meat off the bone and flake into a bowl. Season. Add the marmite and 4 tbsp of the red wine jus. 2. Meanwhile, prepare the potato terrine. Peel and thinly slice the potatoes. Melt the butter, and add to the potato slices. Season and layer into an ovenproof dish, then cook in the preheated for 30 minutes until golden brown. Turn out and cut into 4 thick slices. Keep warm until ready to serve. 3. Remove the onion layers and fill 4 layers with the oxtail mix. Return to the oven for 5 minutes to reheat. These are now ready to serve. 4. Place the pancetta slices between 2 sheets of greaseproof paper on a baking tray, weigh down with another baking tray to keep the pancetta flat and then cook in the oven at 180°C, 350°F, Gas 4 for 12 minutes or until golden brown. Remove from tray, leave to cool and crisp up. 5. For the cep purée, sweat the mushrooms in a pan, add the double cream, season and then blend, either with a hand-held blender or in a food processor, to a smooth paste and set aside until ready to serve. 6. For the watercress purée, bring the double cream to the boil, add the watercress, season and then blend to a smooth paste. Set aside until ready to serve. 7. Sweat the mushrooms in a little olive oil, season and set aside. 8. Deep fry the kale in a little oil at a high heat for approximately 15 seconds until the kale becomes crispy. Remove with a slotted spoon and drain the excess oil off on a paper towel. Leave to cool. 9. Season the beef and seal on all sides in a hot pan. Transfer to the oven and cook for approximately 5-6 minutes for medium rare, cooking longer for different preferences. Once cooked leave to rest for 8 minutes then slice each fillet into 3 slices. 10. To serve, place the potato terrine at the top of the plate then place the oxtail-filled onion at the bottom of the plate. Arrange your slices of beef around the plate, add 3 dots each of watercress and cep purée around. Drizzle the red wine jus around and garnish with the mushrooms, crispy kale and pancetta.

complete this intimate setting with hanging lanterns. They use the freshest ingredients from various regions in Vietnam to showcase traditional flavours in a new and innovative way. Many of the dishes are served on bamboo platters and lotus leaves to preserve the traditional Vietnamese atmosphere. The exquisite menu includes everything from live seafood dishes to grilled satay skewers. Their signature spring rolls have various fillings from fresh vegetables to lobster and glass noodles with a choice of delicious garnishing’s, like the hoisin and peanut sauce. For dessert, you can try the popular Vietnamese street dish, the banana pancake, which is served with freshly picked fruit and creamy vanilla ice cream. Service, as you’d expect from the Shangri-La brand, was on point with attentive and friendly staff eager to help and ensure your stay not only meets, but exceeds, all expectations. Whenever I visit any city I always check to see if they have a Shangri-La hotel – it is a luxury brand that always delivers what you expect – and sometimes that little bit more! An Oasis in Oman

Christina Raptis visits the beautiful Rotana Hotels Collection lllll here is something refreshing about unassuming Oman, neither as developed nor glitzy as neighbouring Dubai it has managed to retain some of the charms of the Arab world as it might have been many years ago. For a long-haul, luxury, long-weekend break, it is essential to allocate every second to enriching your mind, body, and soul. When jet-setting to the Middle East there is no better way to start this enrichment than boarding a flight with Oman Air. We were lucky to be flying business class! Here you’ll feel like you just hopped onto your very own magic flying carpet. Business Class offers a secluded – and spacious – cabin, where we could really begin to unwind from busy city life; whether that be by immersing oneself in the travel tales of Lawrence of Arabia, or selecting a film from the wide offering of in-flight entertainment channels. We were waited on by a friendly, and helpful, host of attendants, who brought us an exquisite array of food, and drink, with menus that cater to every taste. We truly wanted for nothing, from the minute we entered the first-class lounge, to the first steps we took onto the airplane. The first stop on our journey, we spent dipping our toes into the culture of Northern Oman, best experienced by visiting the historical capital city of Muscat. We stayed at the centrally located

T

Sundus Rotana hotel, a contemporary upscale business hotel conveniently located minutes away from Muscat International Airport. The hotel is the ideal base for corporate and leisure travellers visiting the Sultanate’s busy capital, as it’s close to the city’s major landmarks, attractions and commercial districts. However, the true star of the hotel is the award-winning Teatro restaurant, offering an extensive range of five different types of cuisine from Thai to Chinese, Japanese, Indian and Italian all under one roof. Of course, you cannot visit Muscat without meandering through the narrow streets, where you might stumble into Mutrah Souq, Muscat Royal Opera House, Sultan’s Palace, or Mutrah Corniche, and be astonished by their Arabesque magnificence. At midday, as the sun illuminates the white stone mosques, you will definitely feel like you are at the heart of the Silk Road. After a night in Muscat we were whisked away on Oman Air for a short hour and a half flight to Salalah, the capital city of southern Oman’s Dhofar province. I must say the service and amenities in Business class on Oman Air are second-to-none and this was one of the few times I hoped the flight lasted longer! Never a delay when you need one!

Our expectations were exceeded during our stay at the Sundus Rotana, and if this was a precursor of what to expect on the final leg of our trip, we were in for a treat! The Salalah Rotana Resort exudes luxury, from the dazzling pools, interiors, and amenities, highlights of which include the private Club Rotana dining venue, access to the VIP Laguna Beach, and Zen the Spa. The waterfront resort’s 422 rooms and suites are beautifully built on the ocean front, around lagoons, water features and man-made canals. Salalah, and the neighbouring city of Dhofar, have an enchanting history that cannot be overlooked, which we discovered first-hand, when we were taken on a private tour by a knowledgeable Omani local guide Ali, whose national pride shone through at every moment on the tour with his favourite saying “I know you will love it, you will really, really love it!” making us all smile every time it was repeated! He regaled us with stories of King’s and Merchants, as we explored the ancient city of Sumharam, parts of the Frankincense Trail and breathtaking hidden wadis. The beaches in Salalah are amongst the best in the world – white sandy stretches that meet azure skies, a perfect harmony… with only our footprints left behind! Oman is one of those rare countries that not many people have yet fully discovered – the amazing culture, ancient history, incredible

beaches, welcoming people make it a country you should urgently add to your bucket list. Explore beyond the cities, where the desert, mountains, wadis, and shorelines call to those looking to see the Middle East’s natural side. Trust me; it’s a side that reflects the real Arabian Peninsula. fter greeting us at the airport, our private Chalet N chauffeur took us on a scenic meander through the mountains, passing the royally renowned ski resorts of St. Anton, Kitzbühell, Zürs and Lech, which led us to the highest point of the mountain resorts, Oberlech. This is where the famous 6-star deluxe Chalet N is tucked away at an impressive 1,660m altitude. It boasts a stunningly picturesque view of the world famous Arlberg massif and unspoilt stretches of white slopes. The charming, historic chalet, previously known as ‘The Schlössle’ which was a famous castle in Oberlech,

80 STOKE PARK

is now known as Chalet N, which in itself is raising the values of its predecessor to a standard far higher than any luxury property in the world. Greeted by pleasant, well-dressed chalet staff upon arrival, there’s an instant sense of grandeur and charm as you enter. Masterfully designed by well-renowned German designers Scharmer Schaschl, the impressive design is evident from the outset, capturing the perfect harmony between modern architecture and the surrounding nature. Chalet N features seven suites and one mastersuite and provides accommodation for 22 guests exclusively. The sizeable suites all boast king size double beds, large living spaces, luxurious bathrooms, walk-in closets, and your own private balcony with a splendid view of Lech and Oberlech.

Chalet N couldn’t be better suited to those avid skiers. Fully equipped with a heated boot room, a working lift and a ski-out area straight onto the glistening slopes, the chalet is situated in the centre of an incredible skiing resort El Dorado where you’re positioned amongst 350km of fresh, snowy slopes. The bustling town of Lech is only a 10-minute car ride or ski from the chalet and is home to delicious Austrian eateries, vibrant Après-ski bars and an incredible luxury shopping centre. Just for the experience, you should pop into Strolz and pick up a souvenir, or for those looking for some bougie ski-wear you’ll be spoilt for choice! You’ll find everything from a bespoke Fendi one-piece, a Moncler gilet for yourself – and your pooch, or some suave Goldbergh salopettes. After a spectacular morning of skiing with a private guide from High Zürs Ski Guides, we spent the afternoon relaxing in the incredible Chalet N Spa and Wellness area. To say this spa is spectacular would be an understatement; the facilities include an exquisite landscape pool surrounded by a generous choice of loungers, a double treatment room, a private hair stylist, a relaxation area, steam showers, a hay sauna, a Finnish Sauna, steam bath and two cold basins. We enjoyed a bespoke massage, which was expertly tailored by the therapist, combining traditional Thai and healing Ayurveda techniques. To top off the treatment, there was a platter of fresh fruit, tea and a vast selection of delicious chilled drinks awaiting us outside. For those fitness fiends, there is also a fully-equipped gym with top of the range Technogym equipment. Other facilities include a cosy home cinema, library and not to forget the exquisite dining experience – headed up by Chef Kevin Micheli, who recently won European Chef of the Year, 2018. The gourmet dining can be tailored to your taste-buds, if you have any requests the kitchen are sure to accommodate. From Wagyu fondue to homemade schnitzel, the food isn’t short of a Michelin star standard when it comes to dining. There’s a fantastic wine cellar and cigar lounge, sporting a selection of exquisite wines from around the globe. Wine tasting is also upon request, which is strongly recommended given the incredible knowledge of the in-house Sommelier. A truly unique, blissful experience to say the least – suitable for those looking for the ultimate in luxury chalet accommodation in an affluent ski resort which is, quite literally, fit for a King! Golfing in Girona Azzy Asghar visit the glorious Hotel Camiral, PGA Catalunya Resort

T

..o say that the resort is located a well hit Driver away from the airport might be exaggerating about how far we can hit a ball (something a golfer would never do!) but, it truly is a very short (car) drive away. Enter into the forested woodland and rolling green estate of PGA Catalunya Resort to the luxury 5-star Hotel Camiral. This chic and design-led haven is a mixture of luxury, comfort, elegance, and sleek design. With striking interiors designed by Lazaro Rosa-Violan the hotel capitalises on the natural views with the Pyrenees serving as a backdrop. Rooms and suites connect the outdoors with the interior with an earth-toned design scheme and expansive views of the landscaped gardens, golf course, and mountains. With details that pay homage to the surrounding area, the rooms have oak flooring, hand-painted Spanish tiles, and gilded mirrors. With a prime location in the city of Girona, there is plenty of culinary heritage and tradition to explore in one of Catalan’s major cities. Girona is situated only an hour’s drive from Barcelona making it easy to explore for a day if it is not your first point of call. With historical treasures and monuments including picturesque streets, medieval villages, monasteries,

and churches, the city is steeped in old-world charm. Wander into some of the most authentic and vibrant local dining venues to experience Girona the way the locals do. Girona Food Tours offers a ‘Flavours of Girona’ experience encompassing a four-hour discovery tour of the vibrant local dining scene. Discover the city through its culinary delicacies, with just one stop being the Rocambalesc Gelateria, an ultra-chic, ultrafun and colourful ice-cream shop run by Jordi Roca, the youngest brother and pastry chef of the famous Roca clan. Our fabulous guide Pat made the tour so much fun as we took in the sites whilst enjoying copious amounts of tapas and, of course, ibérico ham! She even regaled us with all the lyrics from the musical Les Miserables! As the perfect long weekend adventure location, guests are encouraged to explore within the resort and close by. With something for everyone, the resort offers cycling, hiking, walking, fishing, horseriding, wine-tasting, and hot air balloon rides. Discover the area’s natural eco-systems with group nature walks led by an expert biologist, lessons in horticulture in the resort’s organic vegetable garden, and cycling trips around the local area.

The piece de resistance, of course, are the resort’s two exceptional golf courses. The Stadium Course is ranked the No.1 course in Spain, No.3 in Continental Europe and named among the World's Top 100, and the Tour Course, which provides constant challenges and spectacular holes to delight players of all levels. Having played on the Stadium course, the grounds are impeccable and each hole is as challenging as the next and the scenery is breathtaking. An experience I will never forget! After a long day on the course, relax in the Lounge Bar for a taste of local dishes from fresh seafood to local tapas. Their enviable list of whiskeys from all around the world can be enjoyed all throughout the day, or indulge in an exclusive cocktail created by their master bartenders. Restaurant 1477 offers European cuisine with distinctly Catalan influences from local artisan food producers. Whether you choose to sit in the inside dining space or on the outside patio, each dish is presented with creative flair. Accompany your dish with a glass of wine from their carefully selected wine list focusing on Spanish wines. The charming city of Girona is the perfect escape from the hustle and bustle of Barcelona and a stay at Hotel Camiral and PGA Catalunya Resort is the perfect destination for all things golf, nature, culture and epicurean delights.

he physical benefits of a sport such as tennis are well documented; sport is known to be beneficial to health, helping keep weight down, lowering blood pressure and improving heart and lung function. The Local Tennis Leagues (LTL) run mixed-sex tennis leagues for adults on public tennis courts across the country, and it asked its players how they felt their health had changed since regularly playing tennis. In conjunction with Oxford University this study revealed how tennis players felt they’d changed since taking up the game: • • • • • • • • •

90% felt fitter 86% have improved mood/mental health 77% have made friends 76% feel part of a community 74% felt mentally sharper 72% are now more active 32% have lost weight, of which 84% have lost up to half a stone 16% more than a stone

84 STOKE PARK

Tennis at Stoke Park is a huge part of what is on offer at this amazing Country Club, Spa and Hotel. We are fortunate to have world class facilities; three indoor carpet courts, four floodlit artificial clay courts and six Wimbledon spec grass courts. Subject to planning this month on two new acrylic courts with a seasonal bubble, we will eventually have all of the Grand Slam surfaces on offer for our members and guests at Stoke Park, giving them a wide choice of playing surface. There is a lot on offer for Stoke Park members. Players can access up to eight hours of coach led social sessions which are all held indoors so are guaranteed on a weekly basis. We run numerous club teams – this summer we are running nine teams who compete during the week and at weekends. Our Men’s Vets 1st and 2nd teams won division 1 and 4 respectively in the Winter Bucks league which is a great effort and many of our members have also represented Buckinghamshire in Senior County Competitions at over 35’s, 50’s and 55’s. We have a thriving ladies team section with close to 50 ladies in the midweek league squads where we field four teams. Mixed Vets have worked their way up from the bottom league and have now reached the dizzy heights of division 1 Bucks Winter League. A fantastic effort!

The social life at the Club is thriving and we are now having special fancy dress tennis tournaments based around the four grand slams of the year, as well as more social events for tennis members in the pipeline, in addition to what we do currently. Every month our members compete in the Jack Groves Trophy. Since September 2018 there has been a revamp of the entire tennis programme at Stoke Park following the appointment of Marc Codling as Head Tennis and Padel Coach and Amy Turner as our Tennis Secretary. Marc is an LTA Level 5 coach who brings with him over 25 years of experience in the tennis coaching industry. There is now a seamless flow of players through the Adult Programme, from beginners to 1st team level players, and there are now social, competitive and coaching opportunities for all levels. New players are assessed and signposted to the right direction. Health and fitness members have been encouraged to take up tennis with our “time for tennis courses and an incentive to upgrade their membership to include has proved really popular and we have had over 35 people do this.

86 STOKE PARK

The junior programme, which is open to non-members and to children in the wider community, has also massively boomed with numbers on the weekly programme increasing by 200% since September. The Red ball team (8 and unders) is looking forward to their first taste of competition in the LTA Team Tennis competition later this month. We are keen to work with LTA initiatives, and the community as a whole, to drive up the awareness of tennis. Following the Davis Cup win by GB in 2015, the LTA has been actively trying to promote tennis to increase tennis participation levels, hence the “Tennis for Kids campaign was started. The six week course is aimed at 4-11 year olds and serves as a great introduction into tennis. The courses are heavily subsidised and all players get a racquet, balls and a personalised T-shirt. We look forward to offering these courses over the summer so WATCH THIS SPACE! Enjoying some of the world’s greatest supercars, Azzy Asghar goes

California Cruising Lamborghini Huracan Performante

Engine: V10, 90°, MPI (Multi Point Injection)+ DSI Horsepower: 610hp Transmission: 7 speed dual clutch Acceleration: 2.9s to 100 kph Top Speed: 201 mph

The way the word ‘Lamborghini’ rings off the ear almost sums up the beautiful iteration that this car is. The Huracán Performante has been re-designed from the ground up to create the ultimate supercar and has both aesthetics and performance unparalleled in its class. The car was designed with one specific goal – to be the fastest. It has been completely updated and is vastly different from other Huracan’s with improvements in the engine, steering performance and suspension. Patented ultra-lightweight materials contribute to the decrease in weight and the introduction of an innovative, active aerodynamic system improves the performance level and driving experience. The engine is an aspirated V10 with the supercar achieving top speeds in excess of 200mph. The engine is the clear highlight of this car, but both the exterior design and interior cabin live up to and exceed all expectations. There are near infinite customisation options in the interior to give you a personal touch and truly create your own dream car that is, in truth, so many people’s dream car! www.lamborghini.com

Mercedes E53 AMG Cabriolet

Engine: AMG - enhanced 3.0L inline-6 turbo Horsepower: 429 hp Transmission: AMG SPEEDSHIFT® TCT 9-speed Acceleration: 4.4 sec to 100 kph Top Speed: 155 mph

The E53 AMG is arguably the most aesthetically beautiful model in the current Mercedes range. It incredibly manages the impossible task of balancing a daily runner with a supercar of genuine street credibility. The E-Class cabriolet has only been around since 2017 and is one of the first hybrid AMG’s. Don’t let the word ‘hybrid’ confuse you about the car’s performance. It perfectly encapsulates the essence of Mercedes motto “The best or nothing”. The engine roars with a raw, mechanical passion, yet it is fully electrified thanks to Mercedes making ground-breaking advances in motoring technology. The engine even can recapture energy during deceleration adding more efficiency with the raw power that every motorist looks for. As you’d expect of a Mercedes, aside from performance and reliability, luxury is paramount. They say real beauty is on the inside and here the Benz triumphs. The list of customisation to create a bespoke car is endless and has options such as the steering wheel with hand-sewn, embossed Nappa leather side grips and massaging front seats. This beautiful cabriolet offers a unique open-air driving experience that is truly the only way to travel – especially in the glorious Californian sun. www.mercedes-benz.co.uk

Ferrari GTC4 Lusso T

Engine: 3.9-liter V8 - 90° turbo Horsepower: 602 hp Transmission: 7-Speed Dual Clutch Acceleration: 3.5 seconds to 100 kph Top Speed: 199 mph

I was fortunate enough to be loaned a beautiful 2018 Ferrari GTC4 Lusso T, on a recent trip to the City of Angels. Even here, where supercars are as commonplace as waitresses waiting to be discovered as the next Sophia Loren, this car turns heads and draws admiring nods of approval and sometimes those of envy. They are indeed amongst the most desired and most powerful cars ever made but they drive like your everyday car. Of course, the technology and raw power is all there under the hood but this car is as able on a shopping trip down Rodeo Drive as it would be on the vast open freeways of California. The cars are so well built nowadays that they come with a four year unlimited mileage warranty. But don’t let the practicality fool you about the car’s performance. The V8 engine roars from standstill to 100kph in around 3.5 seconds. Fuel efficiency has also increased 30% from the previous model. All you really need to know is that this is Ferrari’s most versatile and practical car. It is utterly joyous to drive and even in Hollywood, this car is the real star! www.ferrari.com

Aston Martin DB11

Engine: V8 - V12 Horsepower: 503bhp and 600 bhp respectively Transmission: Eight-speed automatic Acceleration: 4 seconds - 3.9 seconds to 100 kph Top Speed: 187 mph - 200 mph

This four-seater hard top with a soft cover option is truly a work of art, whose clean lines and sculpted body is another masterpiece, from the brand synonymous with effortless style. The new DB model is the most fuel efficient Aston Martin has ever built. Underpinned by a new bonded aluminium body structure that combines lightness and strength, the Aston sets the benchmark in class for sporting Grand Tourers and helps the legendary DB line to pinnacles not seen before. The trademark design is ever-present yet has been evolved to be even more sleek and contemporary. Familiar elements such as the iconic radiator grille have been reinterpreted, its lines and features amplified and celebrated. DB11 exploits its inner strength and immense performance with completely re-worked chassis, suspension, steering and electronics. A genuine supercar that is as comfortable and fun as your daily drive in town or out on the open road stretching its very ample legs! www.astonmartin.com

FROM BOARD ROOM TO BANQUETING

Experience an event like no other at Stoke Park!

From speaking to many members and guests who have visited Stoke Park over the years it was wonderful to hear that they all had incredible memories of their time here. They had all visited for different reasons, whether it was for a business meeting, a wedding, a team away day (of which there are so many fun activities to do!), The Boodles Tennis, a golf or spa day, charity event, car launch, to staying in the hotel or simply having a party with family and friends… they all expressed cherished memories. A great theme of what they were saying was that “if you know Stoke Park, you love Stoke Park.” Our dedicated Events Team take great pride in making your event, whatever it may be, an incredibly special occasion and help you plan the event every step of the way. Our beautiful Georgian Mansion has nine stunning function rooms, perfect for any event. As you will see from the photos, they can be transformed from a boardroom to a glamorous dinner party, and we can theme the parties too (check out the Mad Hatter’s Tea Party!)

98 STOKE PARK

Here is our selection of 10 wines to try from the Stoke Park wine list:

Mâcon Uchizy, Gerald et Philibert Talmard, 2017 A classic white Burgundy from Macon, made by Gerald and Philibert Talmard, harvested so as to obtain a very fresh, precise wine. Sancerre, Lucien Crochet, 2016 A really expressive Sancerre from Gilles Crochet, brimming with aromatic lime and broad citrus notes, a real clarity of expression as this bursts with cool crisp, star fruit, tangerine and lime pith on the palate. Meursault, Les Charmes, Dessus, 1er Cru, Château de Meursault, 2014 A wine that manages to be simultaneously 'solaire' and saline, with a touch of butter and crisp lemon zest and white flower notes. Very smart indeed. Rosé, Château Unang, 2017 A pale rose/peach coloured Rosé, with wild strawberries at its core and subtle lychee notes on the nose. The mouthfeel is soft, delicate and the palette is a blend of citrus fruits, most notably pomelo, followed by gooseberry. Château La Grande Maye, Côtes de Castillon, 2014 A blend of 85% Merlot and 15% Cabernet Sauvignon – lovely notes of violets and cut flowers mingle with velour textured fruit. Cain Concept, Napa Valley, Cain Cellars, 2010 Dark purple in colour with cassis, cocoa and sweet redcurrant, the Cain Concept 2010 is a blend of vineyards and hails from one of the cooler vintages in the last decade. Rully, Les Preaux, 1er Cru, Eric De Suremain, 2015 One of the great value reds in Burgundy – fresh, crunchy, red and black cherry flavours, as open, lovely and digest as ever with a slightly dark profile than is usually the case. A little fullerflavoured and more complex than usual but as gentle and alluring as ever. Barolo, Azelia, 2013 A compelling and generous blend that offers surprising complexity for a "regular" Barolo. Sweetly-scented fruit with a bold, spicy and savoury side too. The flavours are fresh and fruity, notes of small, black and red berry with a hint of liquorice. Ribera del Duero, Aalto, 2015 A powerful, age worthy Aalto, with fruit from 9 villages and vines ranging from 40-100 years old. Floral then spiced aromas melt into notes of blackcurrant, tea and fine chocolate. Château Petit Vedrines, Sauternes, 2015 Petit Vedrines is the second wine of the high flying Doisy Vedrines. Under the stewardship of Olivier Casteja, Doisy Vedrines has become one of the most consistent and best performing of the big names in Sauternes.
