Simply my love for cooking and entertaining. Food brings people together and I love to communicate through my food. Listen it will be some conversation, lol.

2. What other career would you have taken if you had a choice?

Well, that would be Law Enforcement. I was a Corrections Officer for 10 years. I decided to leave to pursue the culinary world.

3. Where do you live?

I live in New Jersey, (from Harlem, NY), very close to New York City. Is that a great place to be a Chef? It is a great place to be because New York is a melting pot of every cuisine imaginable.

You can taste, and go home and either do your best rendition of the dish or put a spin on it.

4. What’s your favorite dish to cook?

That is such a tricky question to answer but I think it would be my Short Rib Mac & Cheese.

5. Favorite dish to eat?

Shrimp & Grits

Corner Social in Harlem. Not just for the food but for the atmosphere, the people, and great vibes.

7. What’s a tip to someone who wants to be a Chef?

Don't ever give up ! Listen to yourself and not the negativity from others. Your path is yours and you should not walk it but run all up and down with it. Success will come with hard work, drive, and consistency.

8. For folks that don’t know how to cook but want to learn what’s the first step?

Practice a simple recipe and perfect it.

Don't be afraid of the kitchen, it is your friend, lol. If you try becomes a fail, try again!

9. What do you offer in your business?

I am a personal chef who can come to your home and cook for you in a small setting, I prepare meal prep for those on the go, and I cater private events whether it is local, or destination events, and I have my own line of flavored Olive Oils & Balsamic Vinegars called Haute Pantry.

10. If you could collab with a chef who would it be?

Iron Chef Justin Sutherland. To be the first African American Iron Chef is an amazing fete. I grew up watching the original Iron Chef and then Iron Chef America, he has broken a boundaries that some don't even know about.

More About Chef Jima

Chef Jima is known for her bold flavors and sassy personality to say the least.

She grew up in a home with deep southern roots. This is where, at an early age, she learned that the quality of food was essential to great living and great company. As a child, she watched her relatives prepare mouthwatering meals from scratch. The kitchen at the Woods house was a plethora of enchanting smells that conjured thoughts of the south.

Beginning her professional career as a Corrections Officer, Chef Jima gave up her lucrative job to pursue her passion for food and cooking to enter the culinary industry. by Angie Evans Vice President & Chief DEI Officer PPL Corporation Louisville, Kentucky I’m so excited that the McCormick Sunshine seasoning is finally available at retailers. I’ve been watching the McCormick website for months trying to buy it. I love how Tabitha’s Vegan recipes can be used by non-Vegans. For Father’s Day and Juneteenth, I cooked Sunshine Salmon. On a fresh salmon filet, I rubbed olive oil then coated it with McCormick Sunshine seasoning in a glass pan sprayed with olive oil. I baked it covered with foil for 20 minutes on 375 degrees.

Then pulled the foil off for the final 5 minutes. Adjust the cooking time based on how you like your salmon.

Final Review: The Sunshine Salmon was delicious. The seasoning is light and flavorful with a Caribbean vibe. I love that it has no salt. If you want more flavor, add more seasoning. I can’t wait to try it on chicken next.

Grilled Ceasar Salad

INGREDIENTS 3 tablespoons mayonnaise

INSTRUCTIONS 1.

2 tablespoons Worcestershire sauce 1 tablespoon Dijon mustard 1 teaspoon red wine vinegar

2 cloves garlic, minced 3/4 cup extra-virgin olive oil, plus more for grilling 1/4 cup freshly grated Parmesan Kosher salt and freshly ground black pepper 2 hearts romaine lettuce, cut in half lengthwise Store bought croutons

Preheat a grill to medium-high heat.

In a bowl, add the mayonnaise, Worcestershire, mustard, vinegar, and garlic and whisk until combined. Slowly whisk in the olive oil. Add the Parmesan and continue to whisk. Season the dressing with salt and pepper.

Drizzle olive oil on the romaine hearts and season with salt and pepper. Place the romaine cut-side down on the grill and cook until nicely marked 2 to 3 minutes.

Place the romaine hearts, and croutons on a Plate or Board and serve with the Caesar dressing.

Shrimp & Grits

INGREDIENTS Grits 2 cups reduced-sodium chicken broth 2 cups half & half milk 1/3 cup butter, cubed 3/4 teaspoon salt 1/2 teaspoon pepper 3/4 cup uncooked old-fashioned grits 1/4 cup shredded sharp cheddar cheese 1/4 cup shredded parmesan cheese 1/4 cup shredded gruyere cheese

Shrimp 1 pound uncooked medium shrimp, peeled and deveined Sauce 8 thick-sliced bacon strips, chopped 1/4 cup small-diced red peppers 1/4 cup small-diced yellow peppers 1/4 cup small diced onions 3 garlic cloves, minced 1 teaspoon Cajun or blackened seasoning Garnish 4 green onions, sliced on the bias

In a large saucepan, bring the broth, milk, butter, salt, and pepper to a boil. Slowly stir in grits. Reduce heat. Cover and cook for 15-20 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm.

In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 4 teaspoons of drippings.

Sauté the peppers, onions, garlic, and seasoning in the bacon drippings until they soften. Add the shrimp and sauté until they begin to turn pink. At the last minute of the cooking process, stand the shrimp up on the butterflied side to get a good crisp on them.

Remove the shrimp and set it aside. Stir in reserved bacon; heat through.

Plate your grits in a bowl, add the shrimp on top with the tails upward, then drizzle the sauce over the dish. Garnish with the sliced green onions and serve.

SHRIMP TIP! How do you peel and devein shrimp?

To peel shrimp, use your thumb, and release the shell from the meat by pulling the shell, starting where the legs were attached to the tail. You can leave the last segment of the shell on the tail end for presentation purposes. To devein shrimp, use your paring knife or a fork to move down the back of the shrimp to expose and remove and discard the dark-colored string.

Food for the Soul: Key to Living Your Best Life

The soul is defined as the “Will, Mind and Emotions” of a person. It’s the inner essence of a person. The soul is the fuel that drives your body’s actions, can escalate or deescalate your reactions to what is around you and the key to ‘living your best life.’ Why? Because it is the real you. Not the ‘you’ that you show the world but the real you that lives down inside of you each and every day of your earthly life. When you die, your soul goes back to the God that gave it. God breathed into man and he became a living soul. What you feed the soul is of the utmost importance because it is the part of you that will never die. It lives forever. So what’s on the menu for your soul? For me, I crave and fight daily to feed my soul with: Prayer – God is my utmost nourishment for my soul. I am connected to Him and talk to Him daily because just like I feed my body daily, I must feed my soul daily.

Peace – To have a balanced and productive soul, I have to pursue and drive out anything that comes against my peace. I don’t operate well in confusion 24 | Envision Magazine January - March 2021

or turmoil. I pursue and fight for my peace.

Positive People – I have a choice of who I want in my inner circle and I choose positive people. I may do business with people that are negative naturally but my inner circle is MY choice. You only get this one life on this earth. Who you spend your time with, which is very limited, is of the utmost importance.

Choose wisely.

Positioning for Greatness – The core values of my family growing up was God, Faith and Work. This is my life’s mantra and I stick to it but the work is intentional and strategic. I am daily positioning myself for greatness and the abundant life that God sacrificed for me to have. I don’t waste a minute of any day. Let’s go!

International Foods: Exposure to the New

My husband, Brian Royston and I love to travel, experience and try new foods throughout our travels. Brian is a foodie. He is an excellent cook, loves to discover new foods and then create incredible dishes. One of Brian’s two mantras are ‘don’t say that you don’t like a particular food until you try it. If you don’t like it after you have tried it, fine but until then don’t say that you don’t like it.’ When we travel, we don’t eat in restaurants that are located in our local city or surrounding area but local to that place we are visiting. As his wife, I have tried so many different foods it’s not funny. After 16 years of marriage, I am up for the challenge scary as that may be. A few things about trying new or especially international foods are: Exposure. When eating International Foods, you are exposed to different textures, flavors, styles of cooking and accompanying side dishes.

New People and Places. You meet new people because normally, the

persons working in the international restaurants are native to that culture, land and understands the food intimately.

Open Heart and Open Mind. When trying something new, have an open heart and mind to be adventuresome.

Ask questions about what’s in the food or how it is prepared because if you have certain food allergies, that is important but if you are like me and have no food allergies, go for it.

In our recent travels, we were gone 10 days and I believe that we didn’t eat the same type of food any day of that business trip. Sunday, we ate Turkish Food, Monday was Indian, Tuesday was American Fusion, Wednesday was a different American Fusion, Thursday was Seafood and Friday was Japanese.

This list is clearly a variety of food in one week. What new foods are you willing to try? Get reviews. Ask friends for suggestion and then try it.

You could like it. Let’s go!

These are nerve racking times for investors. The stock market is up one day, and down the next three days!

This is the kind of uncertainty and volatility that makes some investors sell their stocks and put all their money in a bank money market account.

Well do not despair’ we have been here before. In the words of Mark Twain:

“History doesn’t always repeat; but it often rhymes”

We have been here before, as a matter of fact what we are witnessing today is the natural order of things.

Water will always find its level, and stocks will often reveal their true value.

This pullback or sell off in the market is effectively pruning back a lot of the over growth we have had in the stock market. This is the arrival of the check after a few years of irrational exuberance and a Go Go mentality regarding the stock market.

Make sure you stay true to your risk tolerance and manage for the growth you need; not the maximum you can get. And the best way to know this information is to establish and maintain a comprehensive financial plan.

Review your plan, rebalance your investment portfolio as needed, and make sure you are maintaining the proper levels of cash reserves.

And remember; Keep building wealth, Peace!

So don’t panic sell or try to time the market. Embrace the swings by taking advantage of this opportunity to buy some good companies at lower prices. Consider keeping 50% to 60% of your portfolio in safe or guaranteed holdings.

So, let’s talk about the 5C’s of Credit.

Have you ever asked the question, how do lenders see MY credit? Let me share with you how to obtain the much-needed credit. If you do not know the lending factors that can affect your personal or small business from getting the money to fund your

business OR INCREASE YOUR BUYING POWER, then you are stuck in a rut. Let’s face it! Are you CREDITFIT, CREDIT WORTHY? What we do not want is you to continue going to payday lending, cash advances lenders -because these interest’s rates and payouts can get expensive. Are you paying attention to the 5C’s of credit? It does not matter if it is personal or business credit.

Character – Most lenders will run your credit report. Even non-bank lenders will also run a criminal check.

They want to determine your integrity.

Lenders want to make sure they are not making a mistake. If you know that as a borrower that something is there, it is best to share it.

Capital – What are you putting into the company. What are you trying to purchase? Are you putting something in the game? Are you making personal investment? Most businesses start with little to no credit. They normally go to family and friends to get started.

Your next round may be crowdsourcing or raising more capital.

What does your profit-loss statement look like to borrow money? It could be 10-30% depending on the lender.

Collateral – Is something goes wrong how do we get our money back. Most lenders do not care about your personal assets- they just want their money back.

The collateral is to encourage the borrower they want it back. They cansuggest taking collateral on your home, building or car. They also look at your at experience and your projections. How do you plan to pay back by using your assets? As an experienced lender with over ten years of experience, think very seriously about using collateral. If you do not pay back the loan, your personal assets will be at risk of loss.

leverage? An example - If you can service a loan with $500,000 with no mortgage and no job. Your house could be your leverage. They look at your personal income and your business income.

Conditions – What is affecting the loan, economic and legal. What are the trends of the market? What is happening in the industry? What is consumer lending talking about? Make sure you stay up to date.

Lottery Winnings, Dream Come True or Reality Show Nightmare?

Imagine purchasing a $20 lottery scratch off and winning $1,000. You’re thrilled down to your toes. You head over to the lottery headquarters to collect your payout, but they inform you it will be held for back child support payments. Yikes! Some of us don’t see it coming until we’re faced with the situation.

The good thing is that child support won't automatically be increased based on lottery winnings.

You want to avoid making the mistake of thinking money you won doesn't count as income when determining child support orders because it's not wage income. Several court cases have previously established that lottery winnings do in fact count as income for determining child support even if the winnings are taken as a single lump sum payment.

Most of us would agree that children should be entitled to share in the increase in status economically from their noncustodial parent. Otherwise, they would have received this benefit if their parents had remained married. But it’s not just newly drafted NBA or NFL players that are affected. After a divorce, if the noncustodial parent experiences a windfall, the parent that has custody has a right to ask for a portion in child support. In more instances than not, child support arrears are automatically deducted from lottery

winnings and settlements once taxes and tax liens have been satisfied.

Before they cut you a check, they will withhold for income taxes (federal and state), and research other debts you may have. They have the authority to pay on court judgments, back taxes, and student loans, which carry a federal guarantee. Most states also allow their lottery agencies to verify and withhold past-due child support in any amount.

So, they can legally take 100% of your winnings to pay down your federal debt.

If you are like me, you love to eat good food.

I am such a foodie.

For as long as I can remember, my church had bake sales filled with pies, homemade cookies, jams, and candies.

But did you know that selling those

homemade goods could be illegal?

With the rise of food trucks and the turn in the economy, more people are venturing into the food industry. Every other week, I get a text message about a fish fry or plated dinners for sale as a fundraiser or just to make a few extra bucks. Every weekend, I discover a new food stand or food truck set up

nearby. Seems like nowadays they are everywhere. More food trucks than the traditional restaurants are easier to find.

Anyone who knows me would say I am a darn good attorney, but my heart lies in entrepreneurship. I love seeing small businesses launch and thrive.

However, while I always seek to support aspiring entrepreneurs and small businesses, I can't escape thinking about how everything, treated differently.

The differences that matter include the methods these foods are processed and/or packaged, the ingredients used and how they are grown, and the ways they are sold.

Homebased processed foods include pies, jams, jellies, popcorns, breads, cakes, and cookies. These are the food the maker creates using ingredients purchased from a store or supplier.

Other items may be candies, like peanut brittle, trail mixes, and seasoning made from store-bought ingredients.

Micro-processed foods, on the other

hand, are foods created using the main ingredient grown or produced by the maker and not a third party. These are pickled vegetables, salsas, sauces like hot sauce, barbeque sauce, marinades, and seasonings made from homegrown herbs and canned fruits or vegetables.

The last category includes fruits, herbs, and vegetables grown in your garden and can include things like eggs harvested from pets or small farm birds. including the food I eat, ties into the law.

I know you probably had not even thought that the food you order from these places had anything to do with the law until I just said something. But as your “Sista’ Girl in the Law,” I won’t leave you wondering.

In short, this is what I know and what you need to know before you start advertising that you are selling plated dinners, sandwiches, and cakes.

These types of food cooked in your home, made in your kitchen, or grown in your garden are considered “Cottage Food.” Cottage foods are 57

regulated in almost every state. As true with any law, every state is different in regulating and handling food trucks, homemade goods, and cottage foods. And further, even some localities and smaller counties or cities add even more regulations to the mix.

Licensing, permits, and registration of these food producers and So here is an overview, there are three main types of cottage food types: home-based processed foods, home-based micro-processed foods, or homegrown. Each category may be treated differently.

The differences that matter include the methods these foods are processed and/or packaged, the ingredients used and how they are grown, and the ways they are sold.

These factors all determine how these items may be sold (if they are allowed to be sold) and where they can be sold. Many of these items may not be legal to sell, such as many meat products, even if just on the roadside at stands or from a table set up in your front yard. Most cannot be sold online or shipped through the mail. Others cannot even be sold at farmers’ markets.

Laws regulating the sale of cottage foods are ever-changing and dependent on where you are. For example, in Kentucky, foods that may not be allowed to be sold at a fair or festival may be allowed to be sold directly from a home kitchen if picked up or personally delivered. The buyer purchasing the item is also the same person who consumes the item.

The number of laws has increased but are necessary to protect the public and consumers of cottage goods from illness and/or death. Foods that were previously not regulated have become more and more restricted. Because every jurisdiction dictates what is appropriate in that state or locality, I

cannot list them all. Just please be sure you use diligence in making sure what you are allowed to make and sell before you plan that next church bake sale or your kids set up their innocent lemonade stand in the front of your home.

We all have seen the rise of nosy ladies who will call the cops on you. These laws just create another thing to get you, but you are not left without your own secret weapon. I have warned you. Besides… you can always count on your “Sista’ Girl in the Law” to have your back. Once you ensure you are legal, be sure you save me a plate. In Due Season!

By Pastor David & First Lady Linda Smith New Bethlehem Missionary Baptist Church In 2020, we were faced with a worldwide pandemic. The President’s Coronavirus Guidelines for America, and the CDC on March 16, 2020, called upon Americans to slow the spread of COVID-19 by avoiding social gatherings in groups of more than 10 people. Things changed from walk ins to using drive-thru, pickup, or delivery options at restaurants and bars, and we all had to avoid visitation at hospitals and nursing homes just to name a few. As a pastor and wife in ministry, we had to immediately adapt from in-person worship to a hybrid experience. However, prior to the pandemic we always talked about writing a book. It was in August of 2019 at the National Convention of gospel choirs and Choruses, where I attended a workshop about writing your first book. The instructor was Mrs. Julia Royston of BK Royston Publishing. After attending the first day of class the next day I was unable to attend due to a ministers meeting, so I asked my wife Linda to attend. She attended the class and Mrs. Royston insisted that we get started writing.

But it was not until 2020 during the pandemic that we begin writing our first book entitled Family Matters.

Later that year our book was released in November, and we begin the marketing campaign in December. As 70 | Envision Magazine January - March 2021

time continued, we were still ministering with a hybrid congregation but on April the 8th 2021 I received a text asking for permission to air one of our Sunday morning services. A month later Ms. Elizabeth Cannon from Envision-Radio.com reached out and invited our church ministry New Bethlehem MBC to be a part of a Sunday morning weekly broadcast.

God is Faithful when you are faithful.

We believe everything happens in seasons.

Ministry means to meet the needs of others, so my wife came up with the name “RetiredPartyof2” since we are both retired from our jobs. We have ventured to do a RetiredPartyof2 podcast. After 30 years of pastoring, this is another way outside of the church where we can still minister, counsel, and teach people how to live life from a biblical perspective. It’s also another way, as an amazing couple, to see the things that God can do when you work together. The podcast content is a way to create a safe place to dialogue with an audience from all over the world. This is another season of grace and favor.

We also look forward to leaving a legacy for our grandchildren as it

relates to generational wealth. Family is important to us and it’s our desire to look at other streams and sources of income to leave as a legacy. Another season in our life is our Partyof2-360 Photo Booth. So, the best is yet to come.

A Call for Prayer

Desperate times call for desperate measures. And prayer is a powerful weapon against the devices of the enemy.

What is a call for prayer?

One definition says, a call for prayer is a summons for participants of a faith to attend a group worship, or begin a required set of prayers.

In this case, it is a global call for Christians to come together on one accord and pray for healing of our land, particularly the United States of America.

As a country, we are overcome with racism, hatred, abuse, poverty, police brutality, suicidality, a pandemic, remnants of an insurrection, and numerous mass shootings. This is a desperate clarion call for a shifting of hearts.

Proverbs 15:8 reads,

The Lord hates the gifts of the wicked, but delights in the prayers of His people. how to pray” in The Model Prayer, which is also called The Lord’s Prayer. Christians often learn this prayer in their childhood.

Oftentimes, many pastors teach The ACTS Prayer Model: ● Adoration – praising God for who He is to us ● Confession – humbly acknowledging our sins before God ● Thanksgiving – praising God for what He has done and expressing gratitude for it in a posture of gratitude ● Supplication – petitions are asking God to provide for our needs or the needs of others like our family, friends, communities, and even the nation Corporate prayer is so important to the Body of Christ and for the life of the church, which is signified by gathering in

various size groups to pray and praise together in love and unity.

Over the last five years, our women’s ministry group meets on a Prayer Call every Monday evening that includes a brief devotional, but also the submission of prayer requests. We pray for one another and for many in our community. The requests are logged in a prayer notebook. Each member also has a prayer journal that is specific about topics to pray about like anxiety, forgiveness, depression, faith, doubt, finances, forgiveness, and even our enemies. These journals also provide examples of and templates for prayers.

For those who find it challenging to begin a consistent prayer life, I would suggest using Bible-based devotionals and resources to strengthen both your faith and your consistency in prayer.

Additionally, a few years ago, we did targeted prayer through community Prayer Walks where we went to certain neighborhoods or locations within the city to pray about a specific area of affliction or a stronghold. This practice later expanded to Prayer Drive-Thrus where people drove through the church parking lot to receive prayer led by the ministry team and other church leaders.

To those who position themselves in a constant posture of prayer as intercessors and prayer warriors, keep the faith and keep praying! Don't ever 80 | Envision Magazine January - March 2021

think your prayers are wasted. God hears the cries and the hearts of His people. Even when words sometimes escape us, Romans 8:26 says,

And the Holy Spirit helps us in our weakness.

For example, we don’t know what God wants us to pray for. But the Holy Spirit prays for us with groanings that cannot be expressed in words.

I want to continue to encourage the Body of Christ to answer the urgent call for prayer with commitment, consistency, power, and uniformity of heart to heal our nation and to lead others to salvation through Jesus Christ.

May we do as 1 Thessalonians 5:16-18 says,

Rejoice always, pray without ceasing, in everything give thanks; for this is the will of God in Christ Jesus for you.

God’s Instruments

Recently the Adventist Musician Network International (AMNI); formerly the Adventist Musician Network (AMN); suffered the loss of our beloved CEO, Sarah Sulton, however, as in any situation in life, there is a lesson that can be learned for our edification. Sarah was an example of “I must work the works of Him that sent me, while it is day…”. As she diligently worked to spread God’s message through the Music Ministry of AMNI, to every part of the world that she was able to. Whether it was by guiding artists careers, highlighting artists for more exposure to giving honor to those who have especially stood out through the gift of music that God has given them.

This type of ferver to spread God’s love provides a perspective to being God’s Instruments, a Gospel Recording Artist, Jonathan Nelson recorded a song “I Am Your Song”, which included the following lyrics.

“Sing through me Lord, Sing through me, Your heart, Your simple melody, Orchestrate Your symphony through me…”

If we were to update these words to highlight the thought of being God’s Instruments, it may be expressed in this way…

“Live through me Lord, Move through me, Your Love, Your daily ministry, Order Your will through me.”

Instruments, declare each morning, “Sing (live/move) through me” No matter what your ministry may be, whether it’s music, preaching, teaching, feeding the hungry or just telling others that God loves them, know that God is willing and ready to “sing (live/move)” through you.

When we have come to the place where we turn our will over to God’s will, we will be able to “work the works of Him that sent me…” Our daily mission should focus on being the representatives of our Father and to be used as His
