In this issue, generosity, history, progress – and pumpkins. Lots of pumpkins.

What a pleasure, and a reminder of time passed, to hear from Neal Pendergraft about his family’s generous refreshment of the downtown park his family created for the city in 2001.

An absolute flurry of major renovation to Pendergraft Park at 200 Garrison Avenue is all but complete. The family’s philanthropy has blessed Fort Smith twice at that address – with the original gift of the lovely park and with their second, current gift to pay for and oversee its full facelift, with new paint and new roof, powerwashing and landscaping. It looks new again.

Twenty years ago, the Pendergrafts purchased a special section in our 1-year-old magazine in order to honor their husband and dad at the time of the park’s opening. It was tremendously gracious of them, as we had already intended to publish a feature on the park. They insisted they wanted two more pages of special advertising to publish their own tribute and photographs.

But we understood. They were actually very kindly supporting our fledgling magazine. We have never forgotten that after our first issue, Neal mailed us a check for a two-year subscription for himself and his mom. What a pledge of faith in the magazine’s survival!

Encouragement is what the Pendergrafts give so many others. Their giving of funds and of their time and counsel encourages a myriad of public projects in education, history, in progress and vision in our hometown.

I thought of this generous family again when we talked with Calline Ellis, who has written a first-hand account of the beginning of formal nursing education in Fort Smith. That program at the University of Arkansas - Fort Smith is seated in the Pendergraft Health Sciences Center. Her recollection of the establishment of nursing education, 50 years ago, underscores the value of public education to the well-being of all of our lives. The RN program she helped build opened the field of nursing to men as well as women and gave all the students the chance to attain a career occupation needed everywhere.

We are fortunate that so many graduates of the nursing program continued to live and give skilled care in our region.

Now, UAFS’s bachelor of science in nursing program is joined by programs in surgical technology, imagining sciences, health care administration and dental hygiene.

My favorite RN and a graduate of this local school of nursing is David Payne, also known as travel chauffeur and husband of Donna Payne, senior editor of the magazine.

During the Covid-19 pandemic, just going for a drive has been relatively safe recreation.

They like to take a long day’s drive together just to see what they might see.

I never expected their destination would be a circus cemetery. You’ll enjoy her report and photos of this surprising, fitting and touching graveyard in Hugo, Okla., about 2.5 hours southwest of here. It is notable for more than its circus folk interred there.

Friend and writer Carmen Taylor regales us with everything about the official vegetable of October. I didn’t know what an All-American the pumpkin is. The scramble is now on to get one or several for yourselves. It has not yet become apparent whether this year is pumpkinabundant or if there’ll be a pumpkin shortage.

Tiny trolley seats!

A report on our Christmas project, my Aunt Kathy’s Dollhouse: A team of talented friends is working toward displaying it for kids at December’s annual Polar Express event at the Fort Smith Trolley Museum. This has inspired our miniature construction contractor, Sonny Robison, to create a trolley stop in its imaginary neighborhood, with a 1:12 scale streetcar! Folks have donated or loaned us some miniature items to add to the furnished house. Get in touch if you want to play house and trolley with us!

The events page have slightly altered forms of fun, not lesser but necessarily different: The symphony plans a picnic concert! We love this ingenuity of persevering! Have fun and be safe.

Family refreshes downtown park

R

oss Pendergraft Park, a gift to the city given by the late Donrey Media Group executive’s family in 2001, transformed the tornado-scarred 200 block of Garrison Avenue to the public’s benefit by creating a beautiful park that also serves as a visual gateway to the city.

The handsome Federal-style red brick structure was mindfully designed by Guest Reddick Architecture to echo the adjacent federal courthouse at the Fort Smith National Historic Site. Its open front faces a pavilion with a circular brick pattern inlayed and a fitting landscaping surrounds it. It serves as a stage, bandstand for concerts and venue for many memorable public celebrations.

But after 20 years of use, maintenance was needed. Pendergraft’s son, Neal, on behalf of his mother, Donnie, and sister, Lauri, knew that an endowment for upkeep also had been created at the time of the family’s original gift. When he offered to use that fund for a thorough facelift to the park, the City of Fort Smith Parks Department gratefully accepted.

“He’s making us look better, but credit goes to him and his family,” said parks department director Doug Reinert. “We are all appreciative of what the Pendergraft family has done for us.” By handling the project privately, a comprehensive facelift is nearly completed, including a new roof, pigeon mitigation, acid-washing and painting and many other details, Reinert explained.

Neal Pendergraft indicated that many have helped. “Doyle Hopkins Construction, Park Partners and City of Fort Smith” are the team, he said. “Doug Reinert at Parks Department has been great to work with. Tom Hanna has helped out, working as our representative. Phil White helped me find Doyle.

Mike Smets and Megan Raynor with Park Partners have facilitated for us. I was proud to hear that organization was started by my old friend Greg Smith.

Once complete, we hope folks will start using it again for events.”

It’s a second generous gift to the entire city, thanks to the Pendergrafts.

All about pumpkins

Pumpkins Never Came to America That’s right. They didn’t. Never did. Tell it like you’re telling a spooky story, but it’s really an interesting fact.

The story of the pumpkin’s appearance in America began some 12,000 years ago. By digging into our ancestors' ecology and artifacts, archeologists find evidence to help tell the tale of human history before any written records existed.

Research in horticultural practices reveals that pumpkins were not brought to America. There were deliberately invented – in the general region where we now live.

Arkansas and the surrounding mid-South region is one of only seven areas on Earth where independent agricultural revolutions (crop domestication) happened. Humans living here were some of the last on the planet, but the first in North America, to give up their less stressful, healthier hunter-gatherer lifestyle when they decided to cultivate food crops, first being pumpkins. Indigenous Americans invented pumpkins, sometime around 2000 BC. Pumpkins are a domesticated, cultivated gourd that also is a type of squash. Today’s gourd is decorative, squash is still edible, but the pumpkin can be edible or decorative and, once a year, can become a spooky jack-o’-lantern.

Disney made the pumpkin into a movie star

In 1950, Walt Disney’s animated feature Cinderella opened in theaters across the United States and became one of the highest-grossing features of that year. The magnificent horse-drawn coach that carried beautiful Cinderella to the ball was a pumpkin placed under a magical spell. Since then, many replicas of rounded, pumpkin-shaped carriages have been used for carriage rides, princess parties and especially weddings.

American literature gave us pumpkin heads

Credit Washington Irving for the idea of a terrifying headless horseman who carries a jack-o’-lantern for his head, using it as a weapon to throw at Ichabod Crane in the 1819 gothic story “The Legend of Sleepy Hollow.”

Pumpkin-headed characters have abounded ever since, including Tim Burton’s animated “Pumpkin King” Jack Skellington, whose face is easily carved, along with his pumpkin-nosed, ghostly dog Zero.

Choose the perfect carving pumpkin Stick to basics. Most of those big, orange, won’t-tip-overeasily pumpkins can be carved and transfigured into glowing ghouls or works of art.

If you buy a decorating kit or carving tools and stencils, instructions may suggest a certain type of pumpkin based on overall shape, texture or skin toughness. Otherwise, picking one with “Jack” or “Halloween” in its title is a safe bet.

For a classic, hollowed pumpkin, an adult should cut a circle around the stem and scoop the insides down to the tougher outer shell. Save the seeds! Kids can participate, but only adults should use sharper carving tools.

If all else fails, let the kids pick the pumpkin and, when they’re finished carving, cutting and decorating, that pumpkin will be perfect.

For lighting a jack-o’-lantern, safer methods than burning candles are now available. Try a battery-operated, flickering LED light. They’re cool to the touch and long-lasting.

An alternative that leaves a pumpkin whole and, therefore, longer-lasting, is to use stencils as a guide for painting a design with a paintbrush or permanent marker.

How your pumpkin can live again!

Yes, your pumpkin can have many lives! There are at least two ways to return it to nature. The first is easy – cast your pumpkin seeds into fertile soil, covering them lightly, and perhaps new pumpkin plants will emerge. You can simply enjoy the leafy vines on your compost pile.

The other natural disposal method is to feed your pumpkins, whole or carved, to wildlife. If discarding a whole pumpkin, be sure to smash or break it open.

Preparing your pumpkin’licious fall feast for deer and other wildlife can begin as soon as you bring home your perfect jack-o-lantern pumpkin home. Give that pumpkin a nice bath. It may have been treated with insect repellents or have a shiny coating to catch a shopper’s eye.

As soon as you start scraping all those squishy, seed-filled innards, put them in a plastic pail, bowl, or zip-lock bag. As you carve that scary smile and eyes, nose and such, add those chunks to the innards.

Smile! Carving, cleanup and pumpkin mess has been easily handled, and you and your animal or bird friends will be delighted with the yummy, autumn dessert you whipped up and set out.

Which pumpkin makes the best pies?

Back to pumpkins as food: Pies are the classic pumpkin dish. If you choose to start with a whole pumpkin, pick from a variety that are generally called sugar or pie pumpkins. Baby Bear, Cinderella and Dickinson varieties usually top the list.

Most sugar pumpkins range between 4 to 8 pounds and might look weird, almost mutant, but that’s normal. After all, their real job is to transform into a sweet and smooth puree and help your made-from-scratch pie be yummy.

Not up to blending your own puree? You can still serve up a fabulous pumpkin pie. Use canned pumpkin puree. Libby’s brand is made with their own select Dickinson pumpkins.

Use with any recipe that calls for puree rather than pumpkin pie mix, which already includes spices and sugar, and season according to your own preferred recipe.

Noting 50 years of public nursing education in Fort Smith

ecently, I ran into Harold Trisler, RN, ADN, and he brought to my attention that 2021 is the 50th anniversary of the first graduating class of associate degree nurses from Westark Junior College in 1971. Harold and his wife, Susan, are graduates of the second class, 1972. We agreed this anniversary is significant. - Calline Ellis

I was an educator and Susan and Harold Trisler (above) were high school graduates who had enrolled in the School of Nursing at Westark Junior College when we first knew each another in the brand-new Associate Degree of Nursing program.

Nurses traditionally had been trained by and within the hospitals where they would be expected to work.

These “diploma” programs did not admit men and required women to be single and live in a dorm. Marriage meant the student must drop out of school.

The idea of educating nurses rather than training nurses was sweeping the country. Our population was much more mobile and hospitals could no longer count on their diploma graduates working in their hospital. St. Edward’s and Sparks agreed to close their schools in sync with Westark starting nursing education so the community would not suffer a shortage of nurses.

In 1968, Carolyn Moore, who had been chair of the Sparks School of Nursing, had a planning year to start the Westark program.

Susan Chaney and I were hired in 1969 and the first class was admitted in September. St. Edward’s closed its school in 1970 and transferred their students to Sparks. In 1971, Sparks graduated its last class of diploma nurses and Westark graduated the first class of associate degree in nursing students.

Susan and Harold Trisler were one type of students the program attracted. They entered after they graduated from high school. Many of our ADN students were older, seeking a second career or fulfilling a lifelong dream to be a nurse.

The Trislers passed Arkansas licensing exams to become registered nurses. It became their lifetime work. Both have retired from Sparks Regional Medical Center after full careers in nursing leadership positions, he as a director of nurses and she as a head nurse.

We have many nurses with advanced degrees in Fort Smith who started as Associate Degree Nursing graduates.

They are nurse anesthetists, clinical specialists and advanced practice nurses, all of which require a minimum of a master's degree.

Nurse educators need a doctorate degree to meet state board and National League of Nursing accreditation requirements. Both the American Nurses Association and the National League for Nursing endorse a Bachelor of Science in Nursing as the entry level for professional nursing.

However, qualified applicants apply to accessible programs. Westark’s program accessible to those in our area and the quality of the student and the graduate was enviable.

Westark graduates were sought after by recruiters across the nation.

Many graduates achieved advanced degrees and those who didn’t have the opportunity served in leadership positions in our locale.

When I retired in 1984, we had 10 classes of graduates with 100 percent pass on the state board exam. That was a lot of pressure and I worried about the first one not to pass.

In the spring of 1970, the three of us were exhausted so we hired Sara Edminston to help grade drug cards and run the on-campus lab.

There were 36 graduates in May 1971.

The former junior college became the University of Arkansas-Fort Smith in 2002.

UAFS still has an LPN program, but graduated the last class of ADNs in 2014.

They admitted the first class of Bachelor of Science in Nursing in 2008 and graduated the first BSN class in 2010.

Once the BSN program started, 700 applicants wanted the BSN and only 30 wanted the ADN, so the ADN program was phased out.

Times change, impacting nursing education, credentialing and practice and nursing will meet the challenge.

We will do whatever needs to be done to meet the unmet health care needs of our society.

Contributing writer Calline Ellis had been a head nurse at Sparks and taught at its nursing school when Moore recruited her to help develop the ADN program at Westark.

For the next 20 years, Ellis taught and was an administrator, also supervising practical nursing, paramedics, surgical technology and medical technology. She “retired” in 1994 but developed the University of Central Arkansas outreach program for a Master’s Degree in Nursing, offered through Westark’s University Center.

Ellis stepped out of retirement for two more teaching stints when needed by the UAFS program. She maintains her RN credentials.

Today’s UAFS Nursing Program is state of the art Prospective nurses are educated today at the UAFS College of Health Sciences in the Carolyn McKelvey Moore School of Nursing in the Pendergraft Health Sciences Building. They will earn a bachelor of science in nursing. A four-year or accelerated 15-month program are offered.

Health sciences is led by interim dean Dr. Lynn Korvick and the nursing program is headed by Dr. Paula Julian.

“Both Dr. Julian and I started at bedside,” said Korvick. Becoming an educator as a career came after their hands-on experience as RNs. Reflecting on the 50th anniversary of nurse education at UAFS with these two leaders, it is obvious that professionalism and compassion are still its ethos. Students receive an extraordinary level of support in both academics and individual encouragement of their own well-being.

Compared to the original equipment shown above, there is a universe of state-ofthe-art technology involved in nursing education. The teaching of care, both academically and hands-on, is fully integrated with the advanced technology nurses must constantly master.

In addition to the BSN program, there are degree programs in surgical technology, imaging sciences, health care administration and dental hygiene.

Graduates in all of those fields are more in demand than ever before.

“We all are very passionate about student success,” Korvick said. “The students are our north star.”

“I would have to add that Dr. Korvick is a very present dean,” Julian said. “All the students know their dean.”

It’s a larger program now, 50 years on, but a through-line of dedication still shines brightly.

SHOWMeN’S REST Small town is final resting place for stars of the big top

I

f you’re looking for an unconventional day trip, head to Hugo, Okla., where you will find a most unusual cemetery.

As a railroad hub in the early 1900s, Hugo for decades was a popular winter headquarters for up to 20 traveling circuses, earning it the nickname “Circus Town, USA.” After the death of his brother in 1961, circus owner D.R. Miller bought all of the plots in a large section of Mount Olivet Cemetery, named it Showmen’s Rest and dedicated it to circus performers. The rectangular area is marked off by granite posts, each topped by a small elephant statue. In the center is a large headstone with a carving of a performing elephant up on two feet. Underneath is etched "A Tribute To All Showmen Under God's Big Top." One of the most remarkable gravestones is dedicated to Big John Strong. Entirely carved out of stone, it is a massive three-ring circus tent with Big John’s impressive figure etched into its face. The marker designates him as “the man with more friends than Santa Claus.”

Other great performers buried at Showmen’s Rest are high-wire artist Huberto Weber, elephant trainer William H. Woodcock and circus entrepreneur Jack Moore. Zefta Loyal still celebrates her title as the “Queen of Bareback Riders.”

You also will find the gravesite for everyone from animal trainers to jugglers to high-wire artists, from all aspects of the circus, from performers to bookkeepers to truck drivers and everything in between.

Elephant trainers Ted Svertesky, who died in a circus train wreck, and John Carroll, who was crushed by one of his animals, both have graves decorated with elephants. While most of the performers chose epitaphs that grandly immortalized their talents, cemetery founder Miller’s grave says simply, “Dun Rovin.”

This monument is the centerpiece of the Showmen’s Rest section of Mount Olivet Cemetery.

This circus cemetery also is the final resting place of William Edmond “Buster Brown” Ansley, the small man who played the part of Buster Brown for 28 years, and Max Bryan “Turk” Robinson, the original Marlboro Man. Mount Olivet Cemetery also contains a Bull Riders Reprieve section, with the graves of rodeo stars Freckles Brown, who was the first to ride “the unrideable bull” Tornado, and bull-riding world champion Lane Frost. Frost died in 1989 after a bull struck him in the back with his horns following a successful ride.

Halloween Hi Hat Cupcakes Cupcakes 1 box of white cake mix, plus ingredients needed to prepare 1 box of dark chocolate cake mix, plus ingredients needed to prepare Frosting 10 large egg whites 3 cups granulated sugar 1 tsp. vanilla Orange gel food coloring 2 cups semi sweet chocolate chips 4 tbsp. vegetable oil or shortening Preheat oven to 350 degrees. Line 24 cupcake tins with liners and set aside.

Prepare each cake mix according to box directions. Keep in mind that since you are using two boxes, you will only need half of each to make 24 cupcakes. Place half of each prepared batter in a gallon size freezer bag – extra batter can be frozen until needed.

Color white cake batter desired shade of orange. Place a large spoonful of each batter into prepared cupcake tins, filling to about 2/3 full. Bake until tops spring back when lightly touched in the center, about 15 minutes.

Let cupcakes cool completely on a wire rack before frosting.

Frosting: In a large, grease-free metal mixing bowl, whisk egg whites and sugar over a pot of simmering water. Continue simmering the water and whisking the mixture until it forms a syrup – get a bit between your fingers and rub together. If you still feel coarse granules of sugar, cook for a while longer.

Once you have a thick, smooth syrup, remove from heat and place bowl on your mixer. Using the whisk attachment, beat on low for 5 minutes. Add vanilla and orange gel color and increase speed to high and beat for five minutes more. The frosting should form stiff peaks.

Using a large piping tip, pipe frosting high on cupcakes.

Place in the freezer for about 10 minutes while you prepare chocolate coating.

Chocolate Coating: In a microwave-safe bowl, microwave chocolate chips and oil/shortening, stopping to stir every 30 seconds until smooth. Dip cupcakes in chocolate, frosting side down. Allow excess to drip off, then place on plate. Store in refrigerator to keep chocolate coating firm.

GHOST CUPCAKE CONES Cupcake Cones Favorite cake mix, plus ingredients needed to prepare Flat-bottomed ice cream cones Buttercream Frosting 11⁄2 cups (3 sticks) salted butter, slightly softened 1/3 cup heavy cream 51⁄2 cups powdered sugar 1 tbsp. vanilla extract 3 tbsp. light corn syrup Prepare cake mix according to package directions. Fill flat-bottomed cones that have been set in a muffin tin 2/3 full. Bake according to package instructions and let cool.

Frosting: In the bowl of your mixer, beat butter, heavy cream and extract on low until blended. With the mixer on low, slowly add powdered sugar until just barely mixed.

Add corn syrup and beat on high for one minute. If frosting is too thick, add a bit more cream until desired consistency is reached. Fold in desired amount of coloring.

Use jumbo decorating piping tip to create soft-serve ice cream look. Add two black sugar pearls (or use frosting) and a bit of black frosting for a mouth. * Divide your frosting into three colors and pipe candy corns, too!

SWEET & SALTY CANDY CORN BARS 1 (10.5 oz) bag Fritos 1 cup light corn syrup 1 cup granulated sugar 1 cup peanut butter 2/3 cup candy corn Butter a 7x11 or 8x8 pan and set aside.

Pour Fritos in a large bowl, using a wooden spoon to break into large pieces.

In a heavy saucepan over medium heat, heat corn syrup and sugar to boiling, stirring occasionally. Once boiling, remove from heat and add peanut butter, stirring until smooth.

Pour mixture into bowl with Fritos, stirring to coat.

Press mixture (buttering your hands helps) into prepared pan. Sprinkle candy corns on top and gently press into surface.

Let bars cool to room temperature before serving.

Season ticket holders will have designated areas of provided seating, but there are several areas for those who take their own seats or blankets. This option may be more comfortable for many ticket holders. Those who are not season ticket subscribers will need to take their own seating.

The salon-style show is special because the art center will have artwork hanging floor-to-ceiling featuring art from all walks of life. Anyone and all ages from toddlers to seniors can enter their own artwork in this final exhibition. Just take your artwork, ready for hanging, to the art center on Oct. 4-5. During the Oct. 30 celebration, there will be prize drawings, food trucks, fun activities, live music and more. Those who come wearing their Halloween costume will be entered into a special prize drawing. Why? Planners say “because we’re all getting old and we need to celebrate and connect!” The reunion includes some get-together times for each school and other events to be held with all schools at once. At this time, Northside alums plan a 6:30 p.m. June 10 party at Rolando’s, $15, and a school tour on Saturday. The combined event, with dinner, will be held at Wyndham Hotel on Saturday night, $25.
