Greetings from this experimental digital issue of Entertainment Fort Smith. Don’t panic – our August issue will be a big, regular print edition celebrating 20 years of publication.

Like almost every other business, service or publication, we’ve had to make new strategies and make adjustments in response to the COVID-19 pandemic. Going digital, just this month of July, is the strategy we’re trying.

The very real risk of exposure to the virus right now in Fort Smith and our readership area led us to publish digitally. Almost everyone is using their phone, computer or other device for shopping, information and entertainment right now. In fact, all data shows that nationally and locally we’re relying on digital media more than ever.

So, here we are online only in July, but we’ve done it as a digital replica issue to, we hope, keep E Fort Smith comfortable and familiar to you.

As you read, click on any ad to go directly to the advertiser’s web content. In fact, click on any highlighted link to learn more about the articles and events we’ve included. If you have a friend who’s not as familiar with reading magazines digitally, please be kind and help them learn.

Since the pandemic began, the magazine praised the ingenuity, inventiveness and courage to change practiced by our familiar institutions.

Schools went to online learning and some things teachers and school districts have tried have been amazing. Other ideas had to be tested and discarded. Businesses have let employees work from home. Our libraries have been inspiring in encouraging patrons to try digital resources.

Restaurants learned fast to deal with touchless pay, online-based delivery companies and have streamlined take-out service.

To live responsibly and do commerce at the same time is still not solved, but we all have to master new things, to stay healthy. To live.

Take inspiration from Sister Chabanel, profiled in this issue by Kevin Taylor. This Sister of Mercy, working as we speak at Mercy Hospital Fort Smith, is marking 66 years of nursing. Be like Sister Chab. She speaks highly of the technological progress she witnessed in the field of medical care over her many years of service – and how it has benefited humanity.

Keep calm, learn new things, carry on.

We didn’t anticipate that we’d be saying au revoir to our friend and colleague Claude Legris in this issue. We have no doubt we’ll meet again because he’s our buddy. It was a pleasure to write of his great career and accomplishments.

But now that he’s retired, oh my, how his dial is going to go to 11. Claude can be silly on the job (answer a call from his number and you may be greeted by Elvis, a member of three Stooges or the disembodied radio voice of the late Pat Porta). But as a private citizen, off the job? It’s going to be so much fun, if we can ever get him away from his grandchildren.

We also didn’t know what would or wouldn’t develop for our events calendar, understandably.

But there are many activities and programs to enjoy, some now from your armchair and a screen and a few live, in-person events. If you attend them, please, please, please follow the safety measures your hosts ask of you, so we will all learn how to successfully, safely adapt.

years of devotion through nursing

ister Chabanel Finnegan wasn’t yet of school age when she was called to the Lord. She was young when called to be a nurse, too.

“My dad had two sisters who were Sisters of Mercy,” Finnegan said. “I remember one time, I was about 4 or 5, and my aunt (Melanie) picked me up and put me on her lap and said, ‘Are you going to be a Sister of Mercy?’

“I just had a feeling that nursing and a Sister of Mercy kind of went together.”

This month, Finnegan reaches the remarkable milestone of 60 years with Mercy.

“I’ve actually been in nursing for 66 years,” she said.

Sister Chabanel (her colleagues call her Sister Chab) has navigated through the COVID-19 pandemic the same way her coworkers at Mercy Fort Smith have done – without missing much of a beat.

Sister Chab has served at Mercy Fort Smith since 1999. “This is the longest I’ve been anywhere in my life,” she chuckled.

"We are blessed and inspired by Sister Chab's loving presence and devotion to serve others as a Sister of Mercy for the past 60 years,” said Ryan Gehrig, Mercy Hospital Fort Smith president. “She is a dear friend to us all and a personal mentor who has helped me through some challenging times. Sister Chab lovingly reminds us of our call to bring to life the healing ministry of Jesus and to do so in the tradition established by (Sisters of Mercy founder) Sister Catherine McAuley."

A very early call to nursing Born in the tiny hamlet of Rose Hill, Miss., a community in Jasper County due south of Meridian, Sister Chab and older brother Charles graduated from St. Angela Academy in Akin, S.C., in 1954.

(The family moved there for two years before returning to Mississippi.)

Sister Chab said she spent much of her youth in Hattiesburg. Her dad, Charles, was a farmer by trade, though he also later worked in construction, which is what took the family to South Carolina for awhile. The late Ruth Finnegan was a homemaker, Sister Chab said.

“When I was still young, 5 or 6, I felt a calling to be a nurse,” Sister Chab said. “Most of the sisters I knew were teachers. I just had a feeling that nursing and a Sister of Mercy kind of went together.”

Sister Chab began nursing school in 1954.

“The year I made my first vow as a Sister of Mercy was the year I began as a student,” she said. “That year, I went to St. John's in Springfield (Mo.).” She has worked in Vicksburg, Miss., St. Louis and New Orleans, among other stops.

The changes have been plenty. “There were no ICU (buildings) when I started,” she said.

There was no plan for COVID-19, either.

But when the country came to a screeching halt, people learning first-hand what a pandemic was, hospitals stepped up.

“The changes in health care are unbelievable. To see how the COVID-19 was handled, their (Mercy officials) ability to be flexible and be creative has been incredible,” Sister Chab said. “When I began my health care ministry, we had landline phones, purple mimeographs, and maybe a manual typewriter. Now, we have unbelievable technology everywhere. I am in awe of the knowledge and skills our healthcare providers must have today to provide excellent care.”

Even though COVID-19 became a common phrase by late spring, Sister Chab believes Mercy officials will continue to “strengthen our Mercy culture.”

“While virtual care was already in place in Mercy before Covid, it will continue to improve, and probably become the preferred style of visit for many people,” Sister Chab said. “The use of all technology calls us to strengthen our Mercy culture of personalized care and respect for each person, serving God by serving others.”

Learning at bedside Graduating from nursing school in 1960, Sister Chab was eager to enhance her on-the-job skills.

“At the time, even the education for nursing was changing,” she said. “It was mostly in the diploma program. We learned by doing, because we were bedside. Over the next few years, there were 8

internships. I certainly appreciate the academics, but I feel there’s something missing at how nurses learn to be at the bedside.

“You need the knowledge – and academics.”

Doctors realized in the 1960s the importance of cardiac arrhythmias as a source of morbidity and mortality in myocardial infarctions, which led to routine cardiac monitoring in ICUs. “Physicians realized they could do cardio resuscitation,” Sister Chab said. “Some physician started doing the pumping on a patient (having a heart attack) and the patient survived. Over the next few years, hospitals began building ICUs and looking at better care for cardiac arrhythmia patients.”

By that time, she had established herself at St. John’s Regional Health Center in Springfield.

As her career progressed, Sister Chab earned more degrees. “In the late ’80s and early ’90s, I was asked to get my graduate degree in ethics,” she said. “After that, I was more involved in mission services.”

“Sister Chabanel lives out the mission of Mercy every day of her life,” said Father Paul Fetsko, vice president of missions, Mercy Fort Smith. “She is a source of comfort and wisdom to our co-workers, but her influence also extends beyond Fort Smith, even to such faraway places as Guyana. She is Mercy.”

Sister of Mercy The road from rural Mississippi to Sister of Mercy is far simpler in today’s world. People aren’t necessarily lining up to become nuns, but restrictions have been lifted.

“Part of it is the culture of the world,” Sister Chab said. “In the past, there were very limited ways you could serve. You could become a nurse or a teacher.”

In the mid-1960s, the Vatican Council changed the laity of the church that opened up ministry, including all women.

“I think women realized they could be a service to the church,” Sister Chab said. “Many of them found themselves serving, but being able to be married and have families.

“I think God has a plan there sometimes. I think the role of the laity and the role of the religion's life is to be an influence on others.”

Sisters of Mercy is an international community, Sister Chab said.

“They are in the United States, but also in places like the Philippines, South America and Guam.”

Seeing is believing Mortality isn’t something people can avoid. But it doesn’t mean nurses don’t care any less.

“I remember one of our patients was dying,” Sister Chab said. “Her daughter was trying to get there from out of state. The nurse said, ‘Don't worry, your mother won’t be alone.’ It was so meaningful that the nurse had stayed with her mother to not let her die alone.

“When the daughter arrived and was told what happened, she was very appreciative. This happens a lot.”

“I do believe that prayer and showing care to an individual makes a difference in their recovery,” Sister Chab continued. “That’s why we’re so clear. If they asked to be prayed for, we encourage that.

Many people would like to have a prayer; it gives them a great deal of comfort.

“For those that are dying, it’s a big comfort.”

AN APPRECIATION

Claude Legris is leaving the building – Miss Laura’s, that is

W

ell, this is a first,” I thought to myself when I met the new executive director of the Fort Smith Advertising & Promotions Commission, Claude Legris, almost 20 years ago. My task was to take his picture on his first day in command at Miss Laura’s Visitors Center.

I found that he had brought along his entire family. For the photo. We posed them on the beautiful staircase in the historic mansion – his wife, Paula; their daughter and son, his mother, father and even his brother.

“Who brings his whole family to his first day of work?” I wondered privately, while also finding this new guy and his clan to be extra nice. It was apparent they were all very proud of him.

As Claude himself might say in a dead-on impression of Al Jolson in the first talking picture (he’s a wickedly good mimic), “You ain’t seen nothin’ yet!”

We quickly found out who brings their whole family on day one as the chief of attracting tourism to Fort Smith. He does. They’re part of him.

For the next two decades, we saw Claude bring his whole life to his work of attracting tourism and national name recognition to Fort Smith.

Not only did he immediately mesh with the accomplished, existing staff – he amplified their strengths and soon demonstrated the professional skills he had built at his previous posts in much bigger tourism markets, including Tulsa, Nashville and Philadelphia.

Numerous awards, increased recognition for the city and gains in tourism, meetings and conventions have resulted from his energetic and imaginative efforts. Such accomplishments have continued for two decades. Through genuine connections that Claude forged with his friendly, helpful nature and professional acumen, Fort Smith has enjoyed more synergy with the Arkansas State Parks and Tourism departments and the hospitality industry. Our city’s profile rises ever higher as a destination.

With his entire family and his whole self, he also took his place in Fort Smith as a hometown he loves and serves. “True to his school,” having attended Southside High when his parents moved him here as a teenager, he was an avid band parent. He found belonging in a civic club. He’s loyal parishioner of his family’s church. He and Paula took tender care of their parents until the end of their lives. He watched his children marry and adored grandkids that followed in time. Ask him, he has pictures.

Claude extended the resources of the A&P Commission to outstanding new ideas created here, helping to develop and sustain them.

Those included popular annual events such as Frontier Fest, now Western Heritage Month; the Steel Horse Rally, the Unexpected Project, the Chaffee Barbershop Museum and historical district attractions, the many stages of development of the riverfront, its two performance stages, walking trails and skate/bike facilities.

He partnered with and nurtured our existing attractions such as the Fort Smith National Historic Site, Museum of History, Trolley Museum and Belle Grove Historic District’s Clayton House and walking tours.

Claude drew a big circle around us on the map and linked greater Fort Smith with tourism in Van Buren, Lake Fort Smith State Park, northwest Arkansas attractions and over the river, in cooperation with the nations of the Five Civilized Tribes.

As A&P director, Claude helped to recruit the hotel industry to gain a second, first-class hotel adjacent to the Fort Smith Convention Center.

Perhaps more than any other time, Claude brought his personal genius and theatricality to the “Bring It Home” campaign to locate the U.S. Marshals Museum here. Scheming with an extraordinary group of volunteers, he helped to create goosebump-raising experiences for the museum site selection committee as its members toured the city and saw firsthand its deep historical significance to the U.S. Marshals Service.

Committee members found themselves parked in Oak Cemetery at the gravestones of the real marshals and deputies of the marshal service’s storied past, right here where the greatest number of officers were killed in the line of duty. They met local descendants of those men. They sat in Judge Isaac C. Parker’s courtroom and were taken to the banks of the Arkansas River where one local descendant family offered (and donated) land so that the U.S. Marshals Museum would face the Indian Territory that was the service’s vast jurisdiction in the rough, dangerous Parker era.

As the climax of their scouting visit, Claude and the local gang led the site selection committee into the Fort Smith Convention Center where a capacity audience was shouting chants of “Bring It Home! Bring It Home!” and waving a sea of placards with the same three words.

“Go ahead,” Claude said to the search committee’s director as he led him to the podium amid the chanting crowd. “You tell them no.”

Feb. 21, 2001 – With our one megapixel digital camera, the magazine captured Claude Legris and his family on his first day of work.

The rest, as they say, is history. Of course, Fort Smith was chosen.

After the win, Claude continued as a volunteer to fundraise to build the museum. He and his good pal Dick O’Connell, then the serving U.S. Marshal for the Western District of Arkansas, created a two-man presentation for a speaking tour. These two lively fellows were, by turns, entertaining, deeply moving and very effective, winning the support of many early donors. After the official U.S. Marshals Museum Foundation formed, Claude continued to serve it in any way needed while devoting himself fully to his real job leading the Fort Smith A&P Commission.

“He was instrumental in Fort Smith being selected as the site for the U.S. Marshals Museum,” said Jim Spears, former circuit judge and ex officio president of the museum’s foundation board. “This was a monumental accomplishment for our city. He didn't do it alone but I can't imagine it happening without him.”

Spears, who had not known in advance of his friend’s retirement plans, wanted to add more to the credit he believes Claude is due for both his “real” job and the volunteer community-building work he took on.

“I got to be really good friends with him working on a couple of ‘Gridiron shows we put on to raise money for new ballfields following the loss of Andrews Field for girls softball. He is a talented showman and a heck of a leader,” Spears said. “He put together the Mayor's 4th of July fireworks show for years. These two things were not in his job description.

That sums up Claude; over and above the call of duty. Another is Christmas Honors. Without Claude and Phillip Merry, that outstanding project would not have happened.”

Spears also pointed out the A&P was asked by the City of Fort Smith to manage the Fort Smith Convention Center. “As a result of his leadership and the staff he developed, revenue from the facility has increased in each of the last seven years.”

In the likely case that his friend Claude won’t let his retirement and accomplishments be celebrated, Spears asked to say this: “The respect this man deserves in incalculable. When you see Christmas wreaths in the National Cemetery or children playing on the fields purchased with Gridiron proceeds on the riverfront and the beautiful Marshals Museum, remember Claude Legris because none of it would have happened without him,” Spears said. “It wasn’t in his job description. It was a labor of love.”

The reasons this magazine owes Claude our thanks are many. Our mission to publish a city/regional magazine that shows both residents and visitors the best qualities of Fort Smith closely overlaps with the purpose of the advertising and promotion commission Claude led.

He guided my late partner Linda Seubold and me, as publishers, to effective collaborations with statewide Arkansas Parks & Tourism efforts.

He nominated the magazine for its “Henry” Award, a statewide recognition for long-time media support of tourism and state parks.

Under his leadership, the A&P Commission has been recognized with this statewide honor for a range of projects, such as the 2017 Bicentennial, designation as a national top destination for Western tourism, the “Bring It Home” campaign, Marshals Museum commemorative coin and more.

Legris also held the A&P’s own GRIT Awards, “Giving Recognition In Tourism,” to recognize outstanding local people for efforts in development of attractions, customer service and other aspects of the tourism sector. He likes giving recognition to good work even more than getting it.

While he will be missed in his career role, his friends and this editor are certain that Claude will always be head cheerleader for Fort Smith.

We also know the only title he ever really wanted is “Pipére” – granddad. We know his family comes first. He brought them with him, on day one.

A table set with memories and gracious tradition

W

hen Mary Carleton Young was growing up in El Dorado, she was given four parties just for her high school graduation. Her mother owned the little shop where brides registered for silver, china and crystal and was the trusted authority on proper etiquette for any occasion. Although she and Robert Young III live much less formally, this woman draws on good home training for parties.

Designing their dining table as the setting for an auctioned private dinner brought back memories of her family’s gracious traditions as she selected heirloom candlesticks, china, crystal and silver handed down from her mother and grandmother, along with silver goblets and other tableware from the Young family of Fort Smith.

“Mary dearly has a place in her heart for every item,” said Earl Douglas, event designer and producer of Bob Miller’s 90th Birthday Celebration, the April Designer Showhouse Ball 2020. It will be held Sept.

26 to benefit the Community Rescue Mission of Fort Smith. Five private dinner parties will be auctioned, including one at the Young home, catered

by Stonehouse at Chaffee Crossing.

On the back of each dining chair, Mary’s grandmother’s formal damask napkins are displayed. “I think these are from around 1915. They have my grandmother’s initials,” she said. The damask pattern is woven with so fine a thread that one has to hold the fabric up to the light to discern the intricacy.

To capture her stories and memories prompted by each heirloom, Mary is hoping to spend time with a visiting daughter soon, recording family history. The high bidder for this venue will host five guests at a table that reflects generations of hospitality from two Arkansas families.

CAMARA SAFARI Home to the world’s wildest places and its rarest exotic creatures, a world most see only in wildlife documentaries and exciting backdrops in movies. Never in my wildest dreams did I believe this born and raised Arkansan would explore the wilds of Africa.

In 2019, my co-adventurer Nancy Raney and I signed up with a travel agency for this Southern Africa & Lake Kariba tour.

Kruger National Park, South Africa Our Africa adventure began in Kruger National Park. At 7,500 square miles, it is the largest park in South Africa. Our home base for the coming three nights was embedded deep within the heart of bush country at Buffalo Rock Lodge. The lodge was comprised of a large open-sided dining area/bar, offering wildlife viewing even while dining or having evening drinks. This central hub was surrounded by guest dwellings with thatched roofs, wood floors and canvas walls.

Upon arrival our guide, Ndaba Ncube, wasted no time in starting our quest to bag the “Big Five” (photographic) trophies. The vehicle for our evening safari was an open-air off-road 4X4, with three rows of elevated bench seats behind the driver, offering unobstructed views for each passenger. On this first, short outing, in addition to capturing photographs of two Big Five trophies (elephant and Cape buffalo), we also collected our first photos of hippos, warthogs, impalas and an assortment of brightly colored birds.

The highlight occurred while rumbling along a narrow dirt road in near darkness, spotting a shadowy figure slowly strolling along the path towards us.

Nearer and nearer, the animal continued to close the gap. Thirty feet, then 25, and at 20 feet, we were just able to make out what appeared to be spots covering the sides of our visitor. A leopard!

The graceful feline paused briefly at the front of the vehicle, in Norma Desmond style, and then strolled alongside it, within inches of our excited troupe.

Over a delicious breakfast prepared by Chef Henry, there was excited chatter about trumpeting elephants and laughing hyenas serenading us during the night. Everyone enjoyed a picture I had taken of a fresh giant pile of elephant dung deposited overnight beside our porch.

On our first full day of safari, we successfully bagged another member of the Big Five when Ndaba spotted a rhino munching contently on a bush.

A lioness and cubs taking a peaceful nap were not concerned by onlookers. The bright colors of a yellow-billed hornbill at Kruger National Park.

Hwange National Park, ZIMBABWE Hwange National Park is renowned for its unspoiled grasslands, acacia woodlands and herds of regal sable antelope.

Sable Sands Lodge is arranged similarly to the previous lodge, except our housing units were constructed of painted stucco. The lodge overlooked a shallow pool of water about 100 yards away, making for great wildlife viewing while lounging on nearby daybeds. Once again, no fencing separated us from the wildlife.

Our Hwange safaris took us through tropical teak forests, beneath majestic Acadia trees, and across vast savannah plains for which the park is famous. We not only spotted large herds of the regal sable antelope but also many of the area’s 400 known bird species.

During one of our three days there, we parked next to a small watering hole. At times 50 or more elephants were standing in the pool, playfully slinging water and mud over their backs and sides with their trunks.

Crocodiles lounged on the banks while Springbok antelope strolled nearby. There were also warthogs, impala, wildebeest, roan antelope and numerous elegant waterfowl.

Observing these animals in their natural habitat was one of the experiences that made the trip special. These parks are large enough for the animals to live naturally. Having been born and raised within the park, they are accustomed to the safari vehicles. The vehicles have not harmed them, so they, and we, were not seen as a threat.

Our final day in Hwange, Ndaba had been speaking with another guide who had heard a pride of lions calling to one another while on a hunt.

The quest to photograph our final trophy took us off-road, navigating through dense underbrush and past secluded watering holes. We flushed a pack of jackals.

Leaning over the side of the vehicle, Nancy spotted a lion footprint and our driver redirected the search. Shortly afterward, our efforts were rewarded.

Our driver maneuvered the jeep to within 10 feet of a lion nestled under the shelter of a tangled bush. The male did not even acknowledge our presence, snoozing contently with a full belly and a half-eaten zebra carcass above his shaggy head.

As we maneuvered about the thicket, we discovered three female lionesses and eight cubs enjoying the aftermath of their successful kill.

THE SMOKE THAT THUNDERS:VICTORIA FALLS Victoria Falls truly deserves its title as one of the Seven Natural Wonders of the world. With the Zambezi River pouring 500 million cubic meters of water per minute, plummeting over the edge into a gorge more than 100 meters below and nearly two kilometers wide, words cannot do it justice.

Drenched by the upward drifting spray, Nancy and I walked a path that bordered the bluffs of the rainbow-framed gorge. It was truly magnificent, but we agreed the only way to effectively capture this larger-than-life experience was from the vantage of a helicopter. We were right! Viewing the entire feature from that above was an experience of a lifetime.

During our stay at Victoria Falls, our tour had also arranged an excursion to a local market to shop for food, which we later delivered to a bush community. The villages are very primitive, with pit toilets, no running water, and a small solar panel for electricity to power a radio. The women walk up to three miles each direction to fetch water in large pots carried on top of their heads.

We also visited a privately funded primary school. The children were very friendly and happy to see us. They spoke fluent English, demonstrating the effectiveness of their schooling.

CHOBE NATIONAL PARK, BOTSWANA Although it was hard to believe the trip could get any better, our tour saved the best for last.

Chobe National Park is one of the largest parks in Botswana. With its vast size and incredibly diverse terrain, from floodplains and marshes to forest and mopane-tree woodlands, it offered some of the best animal viewing we experienced on the trip.

The Elephant Valley Lodge is set apart by a watering hole only some

50 feet from the dining area. Observing the parade of elephants, baboons and assorted other wildlife visiting the pool as we ate our evening dinner was surreal.

The highlight of this adventure was a boat safari down the Chobe River. It was as though all the animals ventured to the shoreline to bid us farewell. What a great setting, leisurely drifting along the river’s calm waters, with savannah grasslands for as far as the eye can see on one side and wide-open beaches framed by thick undergrowth on the opposite shore. It was perfect for observing the everyday activities of a wide variety of animals.

Long lines of elephants lumbered down to the river for a final evening drink. Scores of impalas grassed on lush vegetation bordering the beach. We saw families of hippos both in and out of the water, one even chasing our boat. Crocodiles lined the shoreline, sleepily raising one eyelid when we drew too close. And the waterfowl, incredible!

Our adventure climaxed with an orange sunset spanning the horizon, silhouetting openbill storks perched on the naked branches of a tree.

WRITER’S NOTE: When Nancy and I embarked on our African Adventure in 2019, we had been considering delaying it another year, due to commitments we had at that time. With the unforeseen arrival of the COVID-19 pandemic, we are so thankful that we did not, for it is hard to say when the opportunity for such a trip will occur again. I believe we should learn not to delay our adventures, because we are not always in control of our destinies.

Chicken any way you like it THAI COCONUT LIME FREEZER CHICKEN 1 â „4 cups coconut milk 2 tablespoons basil 1 tablespoon xylitol (sugar substitute) 1 ounce cilantro 1 ounce fresh lime juice 1/2 teaspoon salt 1/2 teaspoon garlic 1 teaspoon lime zest (optional) 20 ounces boneless, cooked chicken breast 20 ounces broccoli flower clusters In bowl, mix coconut milk, basil, xylitol, cilantro, lime juice, salt and garlic. For more citrus flavor, add lime zest, if desired.

Add chicken, broccoli and sauce to 1-gallon ziptop freezer bag. Squeeze out any air and seal bag.

Freeze bag flat up to 1 month.

To cook: Thaw in refrigerator overnight. Heat oven to 350 degrees. Place in glass, 8-by-8-inch pan and bake 20-25 minutes.

CUBAN CHICKEN SANDWICH

GRILLED CALIFORNIA CHICKEN WRAP 2 boneless skinless chicken breasts 2 tbsp. garlic mayonnaise 2 large flour tortillas 1 cup baby spinach leaves 1 small tomato 2 slices bacon, cooked and crumbled 1/2 cup shredded Cheddar cheese 1/2 small avocado, sliced Preheat the grill to medium-high; lightly coat the grate with cooking oil. Grill the chicken, turning as needed, for 15 minutes or until cooked through and well-marked. Transfer to a plate. Reduce the grill to medium-low. Spread the mayonnaise just below the center of the tortillas, leaving space on the sides. Top with spinach, tomato, bacon, a cooked chicken breast, Cheddar and avocado.

Firmly fold the bottom half of the wrap over the filling, fold in the sides and roll up to completely enclose filling. Lightly coat the outside with cooking spray. Place the wraps on the grill. Toast for 3 minutes per side or until golden.

Cut each wrap in half on an angle. Serve immediately.

1 pkg. thinly sliced boneless skinless chicken breasts 2 tbsp. olive oil 1/2 cup plus 1 tablespoon bottled Mojo marinade 1/2 cup mayonnaise 2 tbsp. stone ground or Dijon mustard 4 (6-inch) soft hoagie rolls or French bread loaf 4 slices deli ham 8 slices Swiss cheese 8 hamburger dills slices 2 tbsp. butter, softened In a resealable plastic bag or shallow dish, combine the olive oil, 1/2 cup of Mojo sauce and the thin sliced chicken breasts. Let marinate for about 5 to 10 minutes.

Heat a grill pan or heavy skillet over medium high heat. Remove the chicken from the marinade, letting the excess drain away. Discard the marinade. Grill the chicken slices for 2 to 3 minutes per side until done.

Chicken is done when a meat thermometer inserted in the center reaches 170 degrees. Transfer to a plate.

In a small bowl, whisk together the mayonnaise, the mustard and the remaining 1 tablespoon of Mojo sauce. Split the rolls lengthwise. Spread the Mojo mayo over both cut sides of the rolls. On the bottom half of the roll, layer the chicken, the ham slice, the Swiss cheese, and pickle planks.

Cover with the tops of the rolls.

Heat the same grill pan over medium low heat. Brush the sandwiches with the softened butter. Place the sandwiches on the grill pan and press with a small heavy skillet. Cook over low heat for about 2 minutes, turn and continue cooking until the meat is warmed through, the cheese is melted and the rolls are crispy and golden, about 2 to 3 minutes more.

Transfer the sandwiches to a cutting board, cut in half and serve with plantain chips.

WHAT’S COOKING GRILLED CALIFORNIA CHICKEN WRAP

SLOW COOKER RANCH BARBECUE CHICKEN 1 ½ pounds boneless, skinless chicken breasts 1 ½ pounds boneless, skinless chicken breasts 1 ½ cups chicken broth 2 tablespoons ranch salad dressing mix 2 cups barbecue sauce 1½ cups chicken broth 2 tablespoons ranch seasoning mix 2 cups barbecue sauce

In the slow cooker, place the chicken, broth and 1 tablespoon of the seasoning mix. Cook on high for 3 to 4 hours or low for 6 to 7 hours until the chicken is tender. Shred with two forks, drain excess liquid, and place back into the slow cooker. Stir the remaining seasoning mix with the barbecue sauce and pour back over the chicken. Stir well and cook for another 45 minutes. Serve warm on sandwiches, in tortillas or over rice or salad.

BARBECUE CHICKEN CORNBREAD 1 lb. fresh boneless skinless chicken breasts 1 tbsp. olive oil 1/4 tsp. salt 1/8 tsp. black pepper 3/4 cup barbecue sauce 1 (4-oz.) can diced green chilies 1 tbsp. unsalted butter 1 (8.5-oz.) box corn muffin mix, prepared according to package 1/3 cup shredded cheddar cheese 1 tbsp. chopped green onion Heat a lightly greased grill or grill pan to medium-high heat.

Season the chicken breast with olive oil, salt and black pepper.

Grill the chicken for 8 to 10 minutes on each side, until cooked through. Chicken is done when a meat thermometer inserted in the center reaches 170 degrees. Remove the chicken from the grill, let rest for 2 to 3 minutes, then shred into bite-sized pieces.

In a bowl, combine the shredded chicken breast, barbecue sauce and green chilies. Mix to combine and set aside.

Preheat your oven to 400 degrees. In a medium cast iron skillet, melt the butter over medium-high heat. Swirl the butter around the skillet to coat all sides. Pour the prepared corn muffin batter into the hot skillet. Place in the preheated oven for 5 minutes to set the bottom crust.

After 5 minutes, remove the skillet from the oven. Top partially baked cornbread with the barbecue chicken and shredded cheddar cheese. Place the skillet back in the oven and continue baking for an additional 10 to 12 minutes, until the cornbread is baked, the chicken is heated through and the cheese is melted. If you like browner cheese, then turn on the broiler and set to high.

Broil for 2 to 3 minutes more. Remove the chicken cornbread from the oven. Sprinkle with chopped green onions and serve.

BALSAMIC HONEY-GLAZED CHICKEN SAUTE 4 boneless skinless chicken breasts 1/2 tsp. salt 1/4 tsp. black pepper 2 tbsp. olive oil 1/2 cup chicken stock 1/4 cup balsamic vinegar 2 tbsp. honey 1 tsp. minced garlic Salt and pepper the chicken.

In a large skillet, heat the olive oil over medium-high heat. Sauté the chicken for 3 to 4 minutes on each side until lightly golden.

Remove the chicken from the

skillet and cover to keep warm.

In a glass measuring cup or small bowl, combine the chicken stock, balsamic vinegar and honey. Stir to dissolve the honey. Add the garlic to the skillet and sauté for 30 seconds. Stir in the chicken stock mixture and bring to a boil. Reduce the heat to a simmer and add the chicken back to the skillet. Simmer for 4 to 5 minutes until the chicken is cooked through.

Add a drizzle of glaze. Serve over rice or with sauteed vegetables.

BAKED CHICKEN PARMESAN 4 thinly sliced boneless, skinless chicken breasts 2 tbsp. olive oil 2 cloves garlic, thinly sliced 1 can whole tomatoes (15-ounce) 1 tsp. sugar 2 tbsp. fresh basil, chopped 2 tsp. fresh oregano, chopped 2 egg whites 1 cup whole-grain salted crackers, pulsed in a food processor until fine 1/4 cup grated Parmesan 1 tbsp. fresh parsley, finely chopped 8 oz. fresh mozzarella, thinly sliced Cooked pasta for serving Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 20 to 30 seconds. Add the tomatoes and sugar.

Cook, smashing the tomatoes, until flavors develop and the sauce is thick and chunky, about 15 to 20 minutes. Stir in the basil and oregano and remove from heat.

Preheat your oven to 425 degrees. Spray a 9x13-inch baking dish with cooking spray. In a shallow dish, whisk the egg whites with 2 tablespoons of water until frothy. In another shallow dish, combine the cracker crumbs, Parmesan cheese and chopped parsley. Dip each chicken breast in egg whites to coat; let excess drip away. Dredge the chicken in crumb mixture, pressing, to coat both sides.

Place the chicken in the baking dish and mist with cooking spray. Bake until crisp and chicken is cooked, about 20 to 25 minutes.

Remove the baking dish from the oven.

Turn the oven temperature to broil. Spoon the tomato sauce over the chicken and top with mozzarella slices. Return the chicken to the oven and broil until the cheese has melted and the top is lightly browned.

Toss the pasta with the remaining tomato sauce. Place the chicken alongside the pasta.

Serve with garlic bread and a side salad.

WHAT’S COOKING BUFFALO CHICKEN MACARONI AND CHEESE 1 package (3 pounds) boneless, skinless chicken breasts 2 cloves garlic, minced 2 1⁄2 cups 2 percent milk 1 can fire-roasted tomatoes (15-ounces) 6 cups shredded Gruyere cheese 1 cup fresh bread crumbs or Panko crumbs 1 lb. curly pasta 1 tsp. smoked paprika 1/2 tsp. salt 1/4 tsp. black pepper 6 tbsp. olive oil 2 cups chopped celery 1 cup diced onions 2 tbsp. flour 2 tbsp. Sriracha sauce 1/2 cup pickled jalapeño 1 ball smoked mozzarella (1/2 pound), cut into 1/2-inch chunks 1 cup crumbled blue cheese Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 minutes. Drain.

On a plastic cutting board, cube the chicken breasts into bite-sized pieces. Toss with 1 tablespoon of olive oil and season with smoked paprika, salt and pepper. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken cubes and cook for 5 to 7 minutes until browned on all sides. Transfer to a plate and set aside.

In the same pot, heat the remaining 4 tablespoons of olive oil. Add

the celery, onion and garlic and cook for 5 to 6 minutes until vegetables are softened. Whisk the flour into the vegetable mixture until smooth. Cook for 1 minute. Whisk in the milk and Sriracha sauce and stir until thickened, about 2 minutes. Remove from heat.

Stir in the tomatoes, jalapeños, Gruyere cheese, smoked mozzarella and cooked chicken cubes. Fold in the cooked pasta and toss to coat.

Preheat the oven to 400 degrees. Spray a 9-by-13-inch casserole or baking dish with cooking spray. Pour the pasta into the prepared baking dish and top with Panko crumbs and blue cheese crumbles.

Bake in a preheated oven for 10 to 15 minutes until bubbly and golden on top. Let the casserole rest for 5 to 7 minutes before serving.

Serve with a side salad for a complete meal.

Try topping the casserole with bacon, scallions or even corn chips or corn flakes for extra crunch.

GARDENING

The light show in your garden is more than meets the eye

W

hether you call them fireflies or lightning bugs, it may be surprising to know that these pretty twilight twinklers have a background story of intrigue, poisoning, deception, bug burglary and even cannibalism! Who knew these lovely living lanterns had such a fascinating secret life?

First, they are neither flies nor bugs, so both common names are incorrect. They are actually flying beetles. Lampyridae are a family of insects in the beetle order Coleoptera.

It is estimated worldwide there are more than 2,000 firefly species. There may be as many as five species blinking in your Arkansas backyard.

While I spent my childhood chasing fireflies and making living lanterns in my grandma’s Mason jars for fun, the light of fireflies can be useful to humans.

Farmers in the Mekong Delta of Vietnam have depended on these creatures as light that made them able to farm after nightfall. That is how prolific the lightning bugs have been at times in that region.

Tourists have traveled to places as different as the Philippines and Tennessee to see the natural phenomenon of great masses of fireflies.

People all over the world also chase fireflies for scientific research. Scientists study how living creatures as diverse as fireflies and other, more rare and exotic organisms such as night light mushrooms and deadly jellyfish are able to create light, a process called bioluminescence.

I spoke with Dr. John D. Hopkins, an associate professor and entomologist with the University of Arkansas Extension Service, about fireflies from a scientific point of view.

“Bioluminescence is a chemical reaction,” he explained. Within a firefly’s body, oxygen combines with a chemical called luciferin and an enzyme called luciferase to make light.

Scientists are excited about this “cool light” because light without heat, created with natural substances, could have enormous advantages over light powered by electricity.

Bioluminescent light can be created in laboratories. Its uses have potential in areas as diverse as medical research to military weapons.

In fact, fireflies are in space!

The International Space Station conducts studies of luciferase, luciferin and ATP, a basic component of living creatures. And yes, the substance emits light, even in space.

Agricultural scientists have found that the

larvae of the firefly are voracious eaters of slugs and snails and are being studied for possible biological control of certain pests. Firefly larvae, which do not eat plants, could replace some pesticides, benefiting the environment.

I have enjoyed watching their little lights blink in my backyard as if it were nature’s mysterious light show. But the flashing of fireflies isn’t random.

Males and females light up their abdomens in specific patterns to attract a mating partner of their own species. They’re actually flashing “Look at me, ladies!” and “Hey, good-looking!”

In many instances, the male fireflies fly but females live on the ground, flightless.

All nocturnal creatures need to communicate in the dark. Some nighttime spiders stomp their feet, crickets chirp – fireflies flash.

Their buggy equivalent of blinking neon signs, however, can be seen by predators who may read the flashes as “Hey! Eat me!”

For self-defense, most species of fireflies have a natural poison that keeps them from being eaten by birds and predatory insects. They taste nasty.

Imposters, thieves and cannibals?

The survival strategies of fireflies gets even darker. So-called “femmes fatales” of the Photuris species of firefly are not born with the ability to produce this poison. They can only get it by consuming a male Photinus (a different species). To lure the male close enough to eat him, they mimic the flash pattern of the female Photinus the male is seeking.

The plot gets even more devious as these femmes fatales use another way of getting their prey: kleptoparasitism – or parasitic stealing.

This occurs when a female sees a male caught in a spider’s web and snatches him. The outcome often depends on the size of the spider and the speed of the thieving firefly!

To humans, however, fireflies are harmless.

They don’t bite or sting. They are not a pest to your garden, either.

Summer is the time for firefly fun You don’t need fancy equipment to enjoy fireflies – just go outside around dusk and wait for the flashing, usually just above the grass.

To increase your chances of seeing them, turn off as many lights as you can. Make it dark!

You can use a small flashlight to imitate their flashes if you learn their flash patterns. Don’t aim at them directly. It will scare them away.

If you want to catch a few and you need a flashlight to see them, put a piece of blue plastic or paper over the flashlight, as it is believed fireflies don’t perceive blue light.

I find it helpful to use an inexpensive net I bought at a local hardware store. Catch the beetles gently and put them in a jar with holes in the lid. Put a moist towel or leaves in the jar to keep the air humid.

Enjoy these living lanterns for a little while and then carefully release them, the same night.

Don’t handle them when you have used chemical bug repellant on your skin. If you are trying to discourage mosquitoes, use a plantbased spray.

Many factors may be reducing the population of these insects, and other insect species, both here and all over the world, but it has not been determined if there really are fewer fireflies.

You don’t have to be a scientist to help find the answer. There are online groups for “citizen scientists” where you can learn how to protect and count fireflies so they will be around to enchant us for all the summers to come.

July 8 Tommy Terrific’s Wacky Magic Show: A Magical Fairytale Online Tommy Terrific’s Wacky Magic Show is back (on Facebook LIVE) with a new show, “A Magical Fairytale.” This magic show is a unique blend of laugh-out-loud comedy coupled with sensational magic, combined with an educational approach that is all about having fun with books. The show features Tommy as a big kid who shows up to watch his Uncle Fumpernutter perform a magic show.

Cherokee Nation National History Museum, Heritage Center reopen Cherokee Nation is reopening its cultural tourism sites starting July 15, with enhanced safety procedures of physical distancing, limited occupancy, enhanced sanitization and required use of face masks.

Upon reopening, Cherokee Heritage Center will debut the 49th annual Trail of Tears Art Show and Sale, the longest-running Native American art show and competition in Oklahoma. The juried show runs through Aug. 4 and features painting, sculpture, pottery, basketry, graphics, diverse art forms, jewelry, miniatures and photography/digital art. A virtual reception will be shared on the heritage center’s Facebook page at 7 p.m. July 10 to announce the winners of more than $15,000 in prize money.

The Cherokee Heritage Center is the premier cultural center for Cherokee history, culture and the arts, located six miles south of Tahlequah at 21192 South Keeler Drive, Park Hill, Okla. One of its attractions is Diligwa, a 1710 Cherokee village. The village provides a chance to experience Cherokee life in the early 18th century and features 19 wattle and daub structures, 14 interpretive stations, and a detailed historic landscape, on four acres.

Visitors witness daily life, guided through interpretive stations where crafts are demonstrated, stories are told and Cherokee lifeways explained. A marble field and stickball field showcase Cherokee games that are still played today.

Originally built in 1869 on the main town square of Tahlequah, the Cherokee National History Museum is in Cherokee National Capitol building, which housed the tribe’s executive, legislative and judicial offices until 1906.

July 16: United Hebrew Congregation Temple The United Hebrew Congregation Temple is a hidden gem of Mid-Century design. It was designed in the International style by Fort Smith architect E. Chester Nelson in 1956. After being damaged by fire in 1970, it was rebuilt with the help of Nelson’s nephew, architect Bob Laser.

July 23: Dr. Neil Crow Sr. House The Crow House was designed in 1968 by John G. Williams, founding faculty member and longtime chair of the Department of Architecture at the University of Arkansas. This house represents one of six projects in the architect’s “mature period,” in which Williams had truly developed his own unique style.

July 30: Oscar Chambers House The Chambers House was designed in 1962-63 by Fayetteville architect Ernie Jacks. With instruction and inspiration from his mentors, who happened to be some of the country’s most well-known Mid-Century architects, Ernie Jacks designed a truly remarkable home for Oscar and Jo Chambers.

Book a library appointment

W

hile continuing to serve its patrons with curb service check-out, providing a myriad of online materials from audiobooks to movies and even by making self-produced videos, the Fort Smith Public Library is again opening its doors at the Main Library. Patrons can now book a 30-minute appointment to visit the library the old-fashioned way – in person.

Those who make appointments by phone or online may enter the library, where all staff are now stationed. The three branch libraries remain closed. All programs are still held online.

All appointments are set on the hour for a timed, half-hour visit. A limit of up to 25 people is a capacity that allows for generous distancing between anyone in the building, according to library director Jennifer Goodson. Dewey’s Cafe is closed. Sofas in the periodicals area have been put away for now and computers are spaced apart at every other carrel. At information counters, department desks and check-out windows, clear sneeze guards have been installed.

Children must be with their parents at all times. The children’s area has a room available where parents can use a computer and keep children with them.

Announcements are broadcast when the timed visit is almost over, allowing patrons to finalize their check-out or sign off the computer. Then staff spend the rest of the hour disinfecting all the “touch� surfaces, restrooms and equipment before the next visitors enter.

Library fines have not been charged while the library buildings have been closed. Overdue fines will begin accumulating on July 13. All returns should be made at the exterior return slots. Appointments are available by phone or at the library website for times between 9 a.m.- 5 p.m. Monday-Friday.
