The delightful smell of fresh waffles being made wafted out of the kitchen at Leacock Presbyterian Church, 3181 Lincoln Highway East, Paradise, on the afternoon of March 21. Volunteers led by mission committee co-chairs Lois Eshleman and Bonnie Rice were hard at work creating the waffles for the chicken and waffle community meal that was held later that afternoon.

The church provides free, hot meals for the community in the church fellowship hall on the fourth Thursday of each month at 5:30 p.m. Recent offerings have included hot dogs and sauerkraut, and upcoming selections will feature lasagna and ham and green beans. “We always have traditional picnic fare in June,” reported Rice, who noted that hamburgers and hot dogs will be served. According to Eshleman, two meals that always offer the same menu are the November

Thanksgiving feast and the Christmas meal. Both those meals are also offered on the second Thursday of the month rather than the fourth.

Volunteer meal preparers begin working at 1:30 p.m. on the day the meal will be served. Usually only four or five workers are needed, but waffles require more helpers, and eight had gathered to prepare the March meal. At 5 p.m., more than 20 volunteers generally arrive to help serve. Food donations for the meal often come from the Weis grocery store in Gap, The Factory Market, and church members.

Eshleman recalled preparing the first meal about 20 years ago with Marie Brackbill. “We were scared to death no one would show up, but we had 25 (attendees),” recalled Eshleman. Rice, who has experience working in a school cafeteria, joined forces with Eshleman in 2011. At one time, about 100 area residents attended monthly, then COVID-19 restrictions hit

in 2020, and the church stopped serving meals. They resumed the practice in June of 2023, and now prepare for 100 and serve from 50 to 85. “We hope to work our way back (to more attendees),” shared Rice.

Eshleman said that around Thanksgiving of 2023, numbers

had increased. “Over the winter it dropped off again,” she noted, adding that she hopes to see more attendees as the weather improves.

“You should come at Christmas when Bonnie makes centerpieces that are given away,” said Eshleman. “She makes different ones every year, and they are really nice. We

have red and green tablecloths,” she added, noting the decor is especially festive for that meal.

There are a few roadside springs in the greater New Holland area. One popular site is located in the Welsh Mountains, bordering both the Pequea Valley and ELANCO school districts.

While some local residents utilize the spring regularly, the safety of drinking the water from any roadside spring is worth questioning. “People assume the water (from springs is) tested, and it’s not,” said Linda Saad, senior member of the ELANCO

The Pequea Valley School District (PVSD) First Choice Career program endeavors to help PVSD students discover and work to achieve their goals in their first career choice. To give Pequea Valley High School (PVHS) seniors an opportunity to share their First Choice journeys, a special portfolio night was held at the school on March 6.

Students and family members gathered in groups in 20 rooms of the school. Three facilitators were assigned to each room as well.

Students gave individual presentations that included information about themselves, including their hobbies, interests, and school activities. Students discussed the path they took to discover their career choice and the next steps they planned to take, and they shared appreciation for those who have helped them along the way.

Senior Marina Sassman, who grew up in Gap, spoke about her love of painting, baking, and reading, as well as her participation in concert choir, FFA, and field hockey. She noted she

In March’s “From the Attic” column, Faye Mummau related stories about her mother’s household activities. This month, the Historical Society of Salisbury Township highlights the kitchen tools in its collection.

Some kitchen tools go back to the early 1900s and were still in popular use in the 1950s. As new tools gradually entered the kitchen, those from grandmother’s era were hung on the walls, sold or thrown away.

Many utensils such as potato mashers and cheese graters would have been used almost daily in the early 20th-century kitchen. When electricity in the home

became more common, the new time-saving equipment was fast replacing the old, labor-intensive ways. Not all items, in fact, were at first considered a real improvement. The electric mixer may have mashed potatoes with a flick of the switch, but using that old handheld potato masher was quieter and much quicker to clean. A busy mother often found that mashing potatoes was an opportunity to vent frustrations of the day when toddlers and their siblings clamored for attention while she tried to have dinner ready by 6 o’clock. And, yes, most households sat down to dinner together at that hour.

The old scales may not have shown the weight down to the 0.001th degree, but it was close enough for the average cook. All you had to do was place the object on the flat plate on top and the weight was instantly viewable.

Vitamins had been discovered in 1913 and well researched in the next 25 years. The importance of Vitamin C for a healthy immune system was stressed by scientists in the 1930s and 1940s. The tomato was found to have high levels of Vitamin C.

One item in the historical society’s collection is a bushel basket, meant for carrying large amounts of fresh food at one time, including tomatoes. The frugal cook could buy vegetables by the bushel and preserve them for winter months.

The “modern” homemaker made sure that her preserved tomato supply offered at least three servings a week for each member of her family from November to June. For a family of four, that

For a group of local veterans, breakfast is the most important meal of the day.

Sure, the nutrition is important. But the real sustainability comes from fellowship, shared experiences and compassion.

The group goes by the name of Lancaster County Veterans Breakfast Club (LCVBC). While it’s sort of a cross between a self-help outreach program and a support group, it’s also a reminder that United States veterans have always come up with ways to get the job done.

“There’s a camaraderie

with all of us,” said LCVBC founder Bill Terry. “There is a bond. We are all brothers and sisters. It’s honoring those who have gone before us. There’s an understanding that we gave to the defense of our country. It’s what all of us have in common. It might have been a higher calling because it’s not for everyone.”

LCVBC meets on the third Saturday of every month. Over the past five years, the breakfast club had met at a restaurant in Bird-in-Hand before a fire temporarily shut down the restaurant.

has been influenced in her career choice by her family, counselors, and First Choice Career coordinator Jared Erb. Sassman stated that classes in horticulture, painting, and ceramics have helped her to learn about herself. She noted that she is a visual learner and an animal lover and that taking animal science classes led her to her choice of studying to be a veterinary technician. She hopes to attend a Lancaster County college and take part in an internship to enhance her schooling and give her experience with medical care for animals. “I fell in love with the idea,” she noted, adding that the only animals she is nervous about working with are frogs and snakes.

Student Zachary Huyard

has attended PVSD schools, along with a local private school, and he has been homeschooled. He noted that he loves outdoor hobbies including hunting and fishing and that he is a follower of Christ. “My family has taught me to work hard no matter what and put God first,” he noted, adding that he has been on mission trips outside the country and worked at

a cheese stand as well as in landscaping. After helping to complete the work needed to flip a house and doing an internship with a real estate agent, Huyard decided that his first career choice would be real estate. He has already purchased and flipped a local home, and he is planning to take realty courses online late in the year. “That was cool,”

said Huyard of the house flipping experience, noting that he also plans to attend a discipleship training school in Montana and complete mission work in Nepal in this coming year.

Jaiden Meyer is a PVHS senior who loves Philadelphia sports, summer, and his Jeep Wrangler. As part of his presentation, Meyer noted that he has played soccer since age 5 and that he served as captain of the fall 2023 PVHS team. He also noted that he loves to travel to see new places and learn about other cultures. Meyer has attended both PVSD and ELANCO School District schools. He currently works two jobs - one as an intern with the PVHS athletic director posting to social media accounts for the school and Lancaster-Lebanon League and the other in the team store for the Lancaster Stormers baseball team. He noted that his mother’s vision for his education has played a role in his choices, but he also credited friends and employers for influencing him. In his next chapter, Meyer hopes to combine his love of basketball with work in social media. He plans to take a gap year, working part time until he turns 18 and then working full time and setting up a financial plan to help him attend college.

Juelz Lynch mentioned hobbies such as skateboarding and fishing in his presentation. He noted that when he was younger he loved both soccer and football and would change uniforms in the car between practices so he could play both. Lynch spoke about working at Kitchen Kettle, Bird-inHand Family Restaurant and Smorgasbord, and Cracker Barrel. A lifelong PVSD student, he noted that he is a hands-on learner who is willing to try new things and work at a new skill until he has mastered it. He first tried coding as an elementary school student, and he has learned about cybersecurity and computing through a PVHS class. His first career choice is computer technology. He plans to attend Thaddeus Stevens College of Technology and then utilize internships to further his knowledge

in the field. He noted that he appreciated his family’s support and motivation toward his career goals.

meant canning over 100 quart jars of tomatoes in some form, whether they were whole, cubed or made into sauce. Adding beans, peas, limas, corn and carrots provided enough of those vegetables that could be served once or twice a week. That’s a lot of preserving! And all this was done in the heat of summer, with no air conditioning.

As electricity became more common in the home, electric refrigerators replaced ice boxes.

“Freezer lockers” were often available at the local store and prepared vegetables or fruits could be stored in the rented boxes, which were usually 24 by 30 by 15 inches in size. The homemaker prepared her winter supply of fruits and vegetables and then trundled them to the freezer building. As winter

progressed, a family member would make a trip to the locker for a week’s menu supply.

In Salisbury Township, Byler’s Market in Gap had freezer lockers rooms well into the 1970s. By that time, enough homes in the township had home freezer chests that the community one

was no longer necessary.

Those who have their grandmother’s kitchen utensils in their home, whether they use them or just display them, should take a moment to remember the many hands that prepared meals for loved ones using those utensils down through the generations.

ULTWMA sets flea market

The Upper Leacock Township War Memorial Association (ULTWMA) will host its last monthly indoor flea market of the season on Saturday, April 6. The flea market will be held in the Veterans’ Hall of the War Memorial Building, 54 W. Main St., Leola, from 7 a.m. to 1 p.m.

More than 37 vendors will offer items such as crafts, toys, health care products, Hot Wheels products, glass items, puzzles, train items, collectibles, books, antiques, seasonal arrangements, tools, team sports items, and traditional flea market and garage sale bargains. Refreshments will also be available for purchase.

There is no admission charge. Parking is available

at the rear of the building. Proceeds will support the maintenance of the War Memorial Building. For

Cavod to present “To Neverland”

LCVBC has scheduled meetings at 6:45 a.m. on April 20, May 18 and June 15 all at the former Revere Tavern, 3063 Lincoln Highway East, Paradise. Many of the breakfasts are paid for by sponsors, including local businesses.

“It didn’t start out with a mission,” said Terry, a resident of East Hempfield Township and a Vietnam War-era Navy veteran. “It was just a way to get vets together. It was a time to have breakfast with other veterans. Then some gentlemen began stepping up and paying for the breakfast. Now we have a jar and pass it around and collect funds for veterans’ groups. We’re still giving back to the community, even though some of us have already put our lives on the line.”

A typical LCVBC gathering could include the Pledge of Allegiance, a prayer, the relaying of jokes and a guest speaker.

“There seems to be a lack of understanding toward what veterans have done,”

said Terry. “If you were not in battle, it’s much easier to get acclimated back into civilian life. If you were in battle, it is hard.”

Anywhere from 100 to 130 local veterans show up for the breakfasts. Most hail from the Vietnam War era, but the group also includes veterans of World War II, Korean War, the war in Afghanistan and other military conflicts.

“The interaction that goes on there is great,” said Terry. “There is an element of support to it.”

According to the United States Department of Defense, less than 1% of the country’s total population is currently serving in the military, and only about 10% of the total population are veterans. Nearly 17 veterans commit suicide each day, according to the United States Department of Veterans Affairs.

“Vets wear hats so we can identify each other,” said Terry. “It’s not for the civilians. It’s so we know who served. I’ll look for the hats

when I’m handing out business cards for the breakfast club. The breakfast club is a way to come out and be with like-minded people. For some, it’s a way to continue to serve the community.”

Saad has a degree in forestry with concentrations in soil science and water resources. Formerly, she worked in water testing at a local lab, where she oversaw the water quality program and the quality of the testing programs.

Jennifer Fetter, director of the Center for Agricultural Conservation Assistance Training and Water Resources Program team leader with Penn State Extension, backed Saad up, saying, “Because roadside springs typically emerge from aquifers very close to the ground surface, they are highly susceptible to contaminants from whatever is happening on the nearby landscape.” Fetter mentioned human waste from septic systems and contaminants from agricultural operations, along with other waste systems, noting, “(These) pose one of the greatest risks, as they carry fecal coliform bacteria and other gut pathogens that are frequently found in the waters of roadside springs.”

Fetter’s comments are supported by the results of a study, which will be repeated this year.

“In our 2013 study of roadside springs in Pennsylvania, 91% of springs studied had coliform bacteria in them,” reported Fetter. “(Nearly 100%) failed at least one of the drinking water standards that public water supplies are held to.” The upcoming study will explore additional potential contaminants. “Many roadside spring pipes were installed a very long time ago and have the potential to be lead-based,” commented Fetter. “We do see very high corrosivity in roadside spring water, which means that springs are likely to leach lead from those pipes and contaminate the water in those cases.”

“If it’s near a road, it could pick up oil, antifreeze, and petroleum products,” added Saad.

Saad went on to point out that many people who have been drinking water from a particular road -

side spring for years believe that water is safe. “The assumption that because you have gotten it there all your life and had no problems (doesn’t hold water),” said Saad, who noted that contaminated water is a danger to infants with digestive systems that are not fully developed, elderly people, and those with compromised health. “If you’ve been getting your water from a spring and have not faced a contamination issue, it does not mean that the water is safe or couldn’t become contaminated at any point.” She relayed stories of individuals who have had issues with biological amoebas but suspected the flu or food poisoning rather than the water. She noted that parasites are a concern as well.

Fetter elaborated on Saad’s comments about the sensitivity of some individuals to contaminants. “Individuals with strong and healthy immune systems are much more likely to fight off pathogens from all sources before they become full-blown illnesses,” Fetter explained. “Infants, elderly, and immune-compromised individuals typically feel more significant effects from pathogens like bacteria and parasites.” Fetter also noted that lead contamination can impact children more during their early developmental stages.

Fetter added that contaminants are not detectable by human senses. “They have no color, no smell, no taste. Spring water, or any water, can appear crystal clear and still be incredibly harmful to your health,” she stated.

Saad cautioned that investigating the area near the spring for possible contaminants may lead to a false sense of security. “You may walk the area and not see the water above ground, but you don’t have any idea how far back it surfaces or whether it surfaces in heavy rain or during seasonal events,” she said.
