It has been six months since Radwa Matar of Millersville officially opened the doors to Koshary Station, 4 S. Prince St., Millersville. The restaurant, which serves traditional dishes from Matar’s native country of Egypt, is the culmination of her many years of experience in the food industry and her desire to share a piece of her culture with the local community.
The Penn Manor Marching Unit (PMMU) Booster Club will host a barbecue fundraiser on Saturday, Aug. 19, at Stauffers of Kissel Hill, 301 Rohrerstown Road, Lancaster. Meals will be available to purchase for a set cost, and they will include a half-chicken from Nolt’s Chicken BBQ, a baked potato, applesauce, a roll and a drink.
Meals will be available at 10 a.m.
While the deadline for preorders has passed, there will be a limited number of meals available for purchase that day. Walk-ins will be accepted until 2 p.m. or until supplies run out.
Those who have preordered dinners must pick them up by 1 p.m.
The booster club has organized the annual event for several years, and it functions as one of PMMU’s largest fundraisers. Last year, the barbecue meals were sold out within 30 minutes, prompting the organizers to increase their supply
for this year’s sale. PMMU’s booster club frequently hosts a variety of other fundraisers in addition to the chicken barbecue, including sub sales, a candy sale on Valentine’s Day, whoopie pie sales and bingo nights at schools in the Penn Manor School District.

The funds raised by the booster club’s events make up the majority of its budget; the rest of its resources are supplemented by charging fees for student activities. One of PMMU’s largest regular expenses is paying for music licensing, which is
required for each piece that the band uses for a show. The money raised by the booster club is also used to compensate PMMU’s music instructors, drill writers and instrument technicians.
Although the marching band has access to certain resources through Penn Manor High School’s music department, many of its operating costs are funded solely through the booster club’s efforts. Expenses crop up for many miscellaneous needs, including uniform dry cleaning, food and lodging for distant shows and maintenance on the trailers that the band uses to transport its equipment.
PMMU is currently preparing for a busy 2023-24 season, which will entail 10 football game performances and six band competitions.
This year, PMMU will participate in conferences through USBands, a national organization that coordinates competitive marching band events. The marching band will travel to various conferences throughout eastern and central Pennsylvania.
The theme of this year’s show is “The Road Not Taken,” which is derived from the eponymous poem by Robert Frost. The show will focus on the subject of diverging paths in both a literal and figurative sense. The members of the marching band are currently preparing for the season at summer band camp, which takes place Monday through Friday each week from 8:30 a.m. to 5 p.m. “The kids put in so much work for the show,” said Brian Pursel, president of the booster club. “It’s really amazing to see a diverse group of students with different backgrounds and personalities mesh for a common cause.”

Matar moved to West Lancaster in 2006 after her husband, Mohamed Ibrahim took a job as a machine operator for Kellogg’s. Matar began working in the cafeteria for Hempfield School District, as well as local commercial kitchens and catering services, where she gained valuable insight on different aspects of the culinary world. Although she enjoyed her work, Matar developed and held onto a vision to open a restaurant of her own someday and share a piece of Egypt with her new community. Last year, she left her position in a school cafeteria to realize her dream.
The road to opening Koshary Station wasn’t an easy one. Not only did Matar need to apply what she had learned from years in the industry, but she also had to become familiar with the logistics of operating her own business. During her time working in a school cafeteria, Matar learned how to organize a stock room and a walk-in cooler, keep track of expiration dates and shipment times and ensure the entire kitchen remained clean. Matar also served over 300 children a day, which she credited with teaching her how to regularly interact

Since opening Koshary Station, Matar has been met with a wave of support from the community. Matar and Ibrahim moved to Millersville three years ago, and Matar said she continues to be amazed by the warmth of both her neighbors and her customers. “It’s blown our minds to see people supporting us,” Matar added. “Everyone is willing to try something new and learn more about Egyptian food. Some customers come in every week and introduce us to a new friend each time.”
Not only is Koshary Station a product of Matar’s own experience and work, but it is also a testament to the overwhelming support she has received
from her friends. In June, Matar needed to make an emergency trip to Egypt to visit a family member who had fallen ill. Although it would result in losing money and customers, Matar had planned to close Koshary Station for two weeks while she was away. Without hesitation, Matar’s friends Riham, Yasser and Zaenab stepped up to operate the restaurant in her stead, dedicating all of their time to ensure things ran smoothly.
As a new business owner, Matar has learned to navigate challenges such as accounting for periods of time where business slows down; for example, many of her regulars are college students who do not remain in Millersville during the summer. Matar is planning to expand her menu and introduce a new special every week. She has also added a small section in the restaurants to sell souvenirs from Egypt, such as T-shirts and small trinkets.

In July, Koshary Station partnered with Church World Service (CWS) to offer meals for refugees in Lancaster. Through the partnership, patrons are able to donate a meal for a set price, which Matar then collects and gives to CWS for distribution. “For people who move here from Africa or the Middle East, (a traditional meal) is like a piece of
them,” Matar said.
Fresh produce is available through the Loft Community Partnership’s food pantry program.
United Way of Lancaster County awarded the Loft Community Partnership a $30,000 grant to support the sustainability of its current food pantry program through the launch of the 717 Food Recovery program. This program will enhance the Loft’s ability to continue providing fresh, local whole foods to neighbors in need.
The Loft Community Partnership was one of 11 Fellows to receive a grant through the United Way Level Up & Launch campaign. In addition to the initial grant, United Way of Lancaster County has also
pledged to match up to another $30,000 in donations received for the Loft Community Partnership through Tuesday, Oct. 31, 2023. To help the Loft reach its goal of $30,000, patrons can donate at https://uwlancaster.givenow. stratuslive.com/lul.
Since January of this year, the Loft has been serving an average of 220 households each week at its client-choice food pantry. In June alone, 1,060 different individuals shopped at the Loft Food Pantry for groceries, fresh produce, meat, diapers, toiletries, and paper products.
The Millersville senior luncheon is held on the fourth Monday of each month from noon to 2 p.m. at the Millersville VFW, 219 Walnut Hill Road, Millersville. The next luncheon will take place on Aug. 28.

“Historically, we’ve done a lot of work in Lancaster city,” said Kevin Nofziger, business development officer with ASSETS. “But more of our clients are coming from all over the county.”

ASSETS was started by the Mennonite Economic Development Associates (MEDA) in an effort to create stateside opportunities for entrepreneurs. “We are a CDFI (community development financial institution),” said Nofziger, who noted the organization plans to expand beyond Lancaster County. ASSETS can offer loans from $1,000 to $50,000. Three main lending products are available: a small business loan of up to $10,000; an
impact loan of up to $30,000; and a special Reimagining Our Community loan of up to $10,000 for one year at 1%, accompanied by a 30% matching grant.
Loans are only the beginning of what ASSETS offers. Entrepreneurial training programs and boot camps, which run from six to 10 weeks, include the Business Validator and Incubator classes, housed in the Women’s Business Center. ASSETS marketing coordinator Kirsten McWilliams said the Incubator offers entrepreneurs the opportunity to “fine tune strategies within their business and tell (their) story.” “At the end,
they have this business model to take out to the world,” she said. Impact consulting is also available.
ASSETS CEO Jamie Arroyo called the organization a “onestop shop for starting and growing a business.”
“Entrepreneurs can come to us to develop a business plan and get in-depth information on financing,” he said. “Our biggest strength is that we pair education with training and lending.” Arroyo added, “We are going to walk alongside the entrepreneur on their journey.”
