Artists To Celebrate Holiday Season
BY ADRIAN ESCHENWALD
LancasterCounty Art Association (LCAA), 149 Precision Ave., Strasburg, announced its yearly holiday shows, “Winter Wonderland” and “Merry Miniatures.” The free shows opened on Nov. 20 and will end on Friday, Dec. 23; they are open for viewing Thursdays, Fridays and Saturdays from 11 a.m. to 4 p.m. and Sundays from 1 to 4 p.m.
Each year, the winter shows revolve around different themes that incorporate aspects of the winter months. “Winter Wonderland” features several types of winter scenes made from a variety of mediums such as photography, oil paints, sculptures and mixed media.
“Merry Miniatures” is a collection of smaller pieces for sale that portray a variety of subject matter in oil paints and other mediums. “If people are buying gifts, they don’t necessarily want them to all be of winter scenes,” said Patricia Keller of LCAA. “(The winter shows) are always very festive; I love seeing how different people interpret the holidays and winter theme.” Each 12-by-12-inch piece in the “Merry Miniatures” show is for sale.
LCAA is also selling Christmas banners made by Constantine Kermes, a member of the organization who passed away 25 years ago. Kermes created stylized artwork featuring Amish subjects while he was a member of LCAA and used to give the banners to members of the community. The banners are 18-by-4inch silkscreen pieces, depicting various holiday scenes and local areas. LCAA is selling the banners at a set price, and all proceeds will benefit the organization directly.
In LCAA’s Steinmetz Gallery, featured artist Brenda Blank is displaying paintings that were inspired by locations in Lancaster County and were made from watercolors and other paints. Blank is a self-taught
artist that is locally based, and most of the paintings in the collection are for sale.
LCAA will host a membership show in January and a garden show in February. “The garden show always gets a big turnout of people that want a break from winter,” said Keller. “When you’re in the throes of winter, it’s nice to get a breath of fresh air.”
Keller also noted that LCAA is always looking for new members who are either professional or amateur artists. “There aren’t many places where new and non-professional artists can display their work,” said Keller. “As members of LCAA, they can get their work out there and have the accomplishment of working on something that is shared with a lot of people.” Members of LCAA also have access to classes and shows year-round.

Once summer break returns each year, most people embark on beach trips or other vacation getaways. Anika Hurst, a student at Eastern Mennonite University (EMU) and a Conestoga native, had other plans in mind this past June.
Hurst spent most of her summer conducting research in Australia with a group of six other students- two other students from EMU, three from Bridgewater College and one from James Madison University. This was the first excusion in a series of research trips funded by a three-year, $300,000 grant from the National Science Foundation. The research initiative, Tephritid Fruit Fly Multidisciplinary Australian Research Collaboration for Biosecurity, or T-MARC-BIO for short, was created with the goal of discovering ways to monitor and control the invasive species and reduce the negative effects of pesticide use globally. “When I see someone in need, I help them,” said Helen Bechtold. And for more than 30 years, Bechtold has been doing just that by providing a free Christmas meal to seniors. Bechtold and Sis Luzader are known as the “Columbia Christmas Ladies.” They will once again offer the meal on Christmas Day, Sunday, Dec. 25. It will be available for pickup only at the Hambones Social Club of the Columbia Borough Fire Department, 726 Manor St., from 11:15 a.m. to 12:15 p.m.
The meal will include turkey, ham, mashed potatoes, a vegetable, a roll and butter, cranberry sauce and a dessert. It is available to anyone age 55 or older, regardless of income. “It’s for anyone who might be alone on Christmas or who doesn’t have anyone to celebrate with,” Bechtold said. “Christmas is such an important holiday to seniors. I think it’s when they miss their family and friends the most. Rather than sitting at home alone, they can come out and get a meal and know someone is thinking of them.”
Bechtold began serving the meal in the 1990s, when she took over as director of the Columbia Senior Center. “I was a little upset when I realized I was asked to give up my Christmas Day to do this, but I soon found I really enjoyed it,” she said. “When I see the seniors smile, it makes me happy.”
She noted that the giveaway is a community effort, and she emphasized that help is especially needed this year. Each senior not only takes home a meal but also receives a bag of grocery items and small treats such as cookies or candy. “The cost of everything has gone up, so we really need donations,” Bechtold said. The Columbia Lions Club supports the project, and Bechtold receives discount grocery items from Blessings of Hope, but she said she’d gladly accept donations from individuals as well. Anything that is left over from the meal is donated to the Veterans Affairs hospital and personal care homes in the area.
Bechtold said she hopes to return to in-person dining next year, and she noted that the meal has never been canceled, even during the height of the pandemic. “We get people from all over Lancaster County and York, and we’ve even had people come from out of state,” she said. “If a senior needs or wants a meal for Christmas, they can get one.”
Providing the meal also requires help from many volunteers, Bechtold remarked, noting that helpers include members of the Donegal High School wrestling team, who set up and assemble goodie bags on Christmas Eve. A core group of about a dozen people help with the meal, some of
whom have volunteered since the beginning, Bechtold said.
Meals will be available by reservation only. To reserve a meal, call Bechtold at 717397-2267 or Luzader at 717684-0128 by Friday, Dec. 16.

Outdoor Holiday Decorating Tips Offered
The holiday season is here, but home and business owners still have time to plan and execute an outdoor lighting display. According to Neil Brenneman of Christmas Decor of Lancaster, a franchise member of the Christmas Decor network, the key to deocorating is having a plan. To create a plan that is right for local homeowners or businesses within a budget, he offered several pointers.
Start by finding a decor focal point. Identify the property’s most attractive features - a porch, the front door, some shrubs or a perfect treeand focus attention there with garlands, greenery and lights.
Then complete the look by enhancing other areas of the property. Outline windows or
rooflines with lights or tuck hints of color into the landscape to complement the focal point design.
Brenneman recommended keeping the decor simple and knowing when to stop decorating. Too many themes and colors will detract from the focal point. He noted that a clean, uncluttered display is more attractive, safer and more cost-effective.
Members of the Christmas Decor Franchise Network have been decorating homes and businesses since 1986 and now create outdoor holiday displays in more than 350 markets in 49 states and Canada each holiday season. For more information about Christmas Decor, contact Brenneman at 717318-1941 or christmasdecor oflancaster@gmail.com, or visit www.christmasdecor.net.

Amid resistance, Maathai planted millions of trees that changed the landscape of Kenya and the world. She founded the Green Belt Movement and mobilized friends,
family, and even strangers to help her plant trees and respect the environment.

fruit flies are a dangerous horticultural pest in many countries, and affect trade barriers between nations.
The group first landed in Sydney, where it spent a few weeks becoming oriented for its research a couple hours outside the city. Hurst and two other students then traveled to Queensland to work with the Queensland Department of Agriculture and Fisheries, while the rest of the research group remained in Sydney to conduct lab work.
Hurst and her group were focused on ecological field work and learning more about the behaviors of the Tephritid fruit fly. “Our goal was to look at the fruit fly and determine its flight patterns,” said Hurst. “It’s always been difficult to track them. We wanted
to see if there was a bias in (the fly’s) patterns.”
Hurst and her group used harmonic radar tags to keep track of the insects. After marking the flies with the small tags, the students released them into papaya fields. The harmonic tags emit a frequency that researchers can use to find their location by using what is called a RECCO unit. RECCO units are primarily used in search-and-rescue efforts to locate survivors in catastrophes such as avalanches by receiving the frequency emitted from the harmonic tags.
Hurst’s group also conducted trials to determine if specific chemical compounds were more attractive to the flies, in an effort to assist with the management of the pest. “I
absolutely loved it. It was such a beautiful trip and the work was fun,” Hurst said.
“The community and people I worked with were wonderful.”
Hurst grew up in Conestoga, where she attended Conestoga Elementary School, and she graduated from Lancaster Mennonite High School in
2020. She is now majoring in environmental studies at EMU and minoring in Spanish and biology, and will return from her semester abroad in Peru in mid-December.

Baking is a tradition in many households, and goodies include cakes, pies, and cookies. Cookies are a tradition passed down through the ages. In medieval Europe, small spiced cookies were exchanged as treats, and people still bake and share gingerbread cookies today.
Cut cookies are especially prominent during the holiday season, with some families having favorite cookie cutter shapes and dough recipes. Certain techniques can make baking sessions easier and help to ensure consistent results any time of year.
Working on a lightly floured, cool surface, such as a cutting board or stone counter top, is recommended. Bakers should never work on a warm surface, which can cause dough to
spread and stick.
The dough can be rolled out between two sheets of baking or parchment paper to prevent it from sticking. Betty Crocker recommends a thickness of about 1/8 inch, unless noted in the recipe. The parchment paper also enables rolled-out dough to be easily transferred to a refrigerator or elsewhere.
When rolling out dough, portioning the dough into a few smaller amounts allows it to roll out more easily. This will also help it to chill more readily.
Cookies cut most easily when the dough is chilled. The dough should be refrigerated for as long as possible, ideally an hour or moreeven overnight. The more chilled, the firmer the dough will be.
Rubber rolling pin rings that slip onto each side of the rolling pin can help ensure that the dough is being rolled out to a uniform thickness.
Cookie cutters should be dipped in flour with each cut. It is a good idea to work from the center and move out to the edges when cutting out designs. When cutting, it is a good idea to maximize space and avoid scraps and rerolling.
Some expert bakers say that metal cookie cutters cut cleaner than plastic ones. Whichever cutter is used, the cookie should be cut by pressing straight down. The cookie cutter should not be twisted or jiggled when being used. Doughs with a high butter content can help, as the extra grease helps separate the dough from the cutters.
If cut cookies have gotten warmer, placing them in the freezer for a few minutes will help them firm up again before baking. This will help to ensure the cookies will not spread or become misshapen while baking.
Extra steps may seem like they will take a lot of time. However, the extra effort and attention to detail may help produce better results.

Medical Students Win Scholarships
Five area students were selected as recipients of the 2022 Lancaster Medical Society Foundation scholarship awards. The competitive process, which makes selections based on character, motivation, academic achievement, and financial need, included submissions from applicants throughout Lancaster County.
As part of the application, students were required to write an essay explaining why they have chosen to pursue a career in medicine. The selection committee chose the awardees through a blind review process.
This year’s recipients are Launick Saint-Fort of Ephrata, Nicole Hanselman of Manheim, Hannah Kuntz from Elizabethtown, Rhea Sullivan from Landisville and Kevin Chao of Lancaster.
Saint-Fort, a trauma research coordinator, graduate of Penn State Berks and first-year medical student at the Pennsylvania State College of Medicine, was awarded $4,500. For Saint-Fort, whose younger years were spent as a child slave in Haiti, medical
school and a potential career as a physician were beyond her wildest dreams. She noted that in childhood, she contracted various illnesses that could have been prevented with quality medical care, which was not available to her.
Hanselman, an Elmira College graduate and research specialist currently in her first year at Saint James School of Medicine in Illinois, received a $3,500 award. She explained that her passion to pursue medicine was conceived in a small orphanage in Vietnam, where she lived after losing her parents and oldest sister. Placed in the orphanage at age 7, Hanselman was assigned to care for the sickest babies, but could only do so much to ease their pain and suffering.
Kuntz, a former medical assistant with AmeriCorps and a graduate of Rochester Institute
of Technology, is a first-year student at the Pennsylvania State College of Medicine. Her passion for medicine was fostered through her volunteer experiences working with underserved populations in Lancaster city and later in Rochester, N.Y. Sullivan, a fourth-year M.D. and Ph.D. student at the Pennsylvania College of Medicine and a graduate of Pennsylvania State University Schreyer Honors College, shared that her decision to pursue a career in medicine came after experiences she had in college, including witnessing the deaths of both a fellow college student and then a neighbor as a result of addiction.
Chao, a former medical scribe and volunteer smoking cessation counselor, is a Saint Joseph’s University (formerly University of the Sciences) graduate and second-year student at Drexel University College of Medicine. Chao’s choice to pursue medicine grew from childhood experiences with the health care system. Born with a heart abnormality that was incredibly difficult to manage, he credits his parents, pediatrician and cardiologist for their tireless care, giving him a life that he would not otherwise have had.
Chao, Kuntz and Sullivan were all awarded $2,000 scholarships.
Founded in 1991, the Lancaster Medical Society Foundation is a 501(c)(3) organization that was formed to grant scholarships to students from Lancaster County who are accepted at or continuing a medical degree at an accredited allopathic or osteopathic medical school.
The scholarship foundation is supported by the Lancaster County medical community, through hospitals and health systems, group practices, individual medical society members, local businesses and Lancaster-area residents. Since its inception, more than $282,000 in scholarships have been given to local students.
