It’s fun for everyone. It’s a beneficial activity in a health-conscious society. It’s become readily available.

It’s easy to play and easy to learn.

Those are just a few of the reasons why pickleball is one of the fastest growing sports in Lancaster County, and in America.

But this pickleball phenomenon we are experiencing isn’t a fad; it’s a trend. Pickleball possesses staying power.

Denise Garrafa is an energetic and enthusiastic pickleball instructor and coach who lives in Strasburg.

"Anybody can play it," said Garrafa. “Once you play it, you’re hooked. It’s not intimidating. It’s not expensive.

You can go with your spouse, and you can go with your friends. It’s not a hard sport to learn, but it’s a hard sport to master. It’s so much fun, it’s addicting.

Pickleball has been around since the mid 1960s. But the game seems to have burst onto the Lancaster County athletic scene during the pandemic.

“I think it exploded here in Lancaster during COVID,” said Garrafa. “It was more popular in Florida and California. It’s a domino effect.

People tell friends how awesome it is. There were very few courts before COVID. Now there are very few townships (in Lancaster County) that don’t have it.

“I don’t know how many people in Lancaster County play pickleball, but I can tell you it’s a lot,” continued Garrafa. “A lot of newly retired people come to me, then they fall in love with it and it leads to friend-

ships. Then you take your pickleball paddle on vacation because you can play it anywhere.

While pickleball in Lancaster County has grown substantially over the last seven or eight years, the sport’s ceiling remains unknown.

“I would definitely say it has not peaked,” said Garrafa.

“It used to be just older people playing, but that’s not true anymore. I’m teaching kids, and that’s the future of the sport. I don’t see it dropping off either. But it may level off at some point.

“It does not require athleticism,” Garrafa added. “Anybody can do it; I’ve taught players from 5 to 90. Anybody can learn it. That’s why I think it’s so popular. I don’t think you should ever judge a book by its cover. A lot of people play it really well.”

Pickleball can be played indoors or outside, played as doubles with a partner or played as singles. It can be played as a pastime, as a form of recreation, as intentional exercise or competitively.

There also exists a rating system that tracks players’ level of competition and skills. But there’s really no wrong way to play pickleball.

“It’s going to help your heart,” said Garrafa. “It’s going to keep you in shape. Pickleball has helped so many people. It’s developed friendships. It just brings everybody together. You get to meet people because you get to play with so many people.

“There’s a women’s league in Hempfield where the women play three times a week,” added Garrafa. “These ladies look forward to playing, then they’ll meet up and do crafts. Pickleball players have their groups. They are their people now. It’s opened up worlds for some people.”

Pickleball is played on 20-feet-by-44-feet courts divided by 3-foothigh nets and enclosed by boundaries. The players use hard oversized paddles to strike and direct a hollow plastic ball.

“Pickleball is a combination of tennis, ping pong and badminton,” said Garrafa. “You play to 11, you’ve got to win by two and you can only score points when you’re serving.

“I’m biased, but I think you should take lessons if you want to get good,” Garrafa continued. “Drilling is huge. You’ve got to practice to get muscle memory, and playing is important.”

Currently, there are more than 30 pickleball facilities across Lancaster County, both recently constructed or reimagined from former tennis courts. Among the more popular local pickleball venues are Overlook Community Campus in Manheim Township, Lititz recCenter, the Lampeter-Strasburg YMCA, City Center YMCA in Lancaster, recCenter, Hempfield Racquet Club West Athletic Club and Greenfield Industrial Park, as well as other township and municipal recreation parks, community centers and churches.

From just about any spot in Lancaster County, pickleball players are just a short drive away from the game they love.

“There are so many places to play now,” said Garrafa.

“Some people are putting private pickleball courts in their backyards.”

Garrafa is employed by the Hempfield recCenter, the Lampeter-Strasburg YMCA and the Willow Valley Communities.

She gives private pickleball lessons and group lessons and leads clinics.

Pickleball is her full-time job.

“It is definitely my passion,” said Garrafa, who’s been instructing for 10 years. “I love the game. I love to teach. I was a stay-at-home mom, and then I found pickleball. I’ve had many people come up to me and tell me, ‘This gives me peace for two hours.’ I feel like pickleball is therapy for many

people. I tell everyone that I have the best job in the world.”

Through her coaching and instruction, Garrafa introduces individuals to the game and teaches them the fundamentals and the rules of the game. As they advance and confidence grows, players learn strategy, footwork and different types of shots.

“I instruct as we’re playing,” said Garrafa. “It’s live action, and you understand what I’m saying, and we’ll do fun things too. It’s very fluid. I’m very specific. I’ll ask my players, ‘What are you looking for?’ And I’ll (tell) them what they need. I have literally taught thousands of people to play pickleball. I’m in the community, and it’s a pretty tight community.

“I think there’s a misconception that pickleball is an old person’s sport,” concluded Garrafa. “Once people get into it, that misconception goes out the window. I think people should try pickleball. Go out and play it. Take some lessons or watch some games. It will change your life.”

How to Hygge

Bringing Less Stress and More Coziness Into Your Home

T

he hardest thing about hygge is how to pronounce it. The Scandinavian design and lifestyle concept is all about being soft, cozy, easy and minimal. So, let's get the hard part out of the way. “Hygge” is pronounced “hoo-gah.”

Hygge is a Danish and Norwegian concept that focuses on comfort and contentment.

“It’s the act of creating a cozy life,” explained Abbie Breckbill, retail operations manager at Sweetish, a Swedish candy store in downtown Lancaster. “It’s about curating a collection of items in your home that are actually meaningful to you - items with memories attached and items that bring a certain feeling when you see them.”

Breckbill, who practices hygge at home, said the concept is all about creating a little space in your home specifically dedicated to coziness.

“No scrolling on your phone, which is easier said than done,” Breckbill said. “It’s about actually being in the moment and just appreciating a quiet moment. It’s very meditative.”

Breckbill even starts the day in a hygge mindset, explaining, “When I wake up in the morning, I try to stop for a moment, and I don’t think about anything I’m about to do for the day, even for five minutes. I feel like taking that pause really does make a difference.”

At Drom, a Nordic- and Scandinavianinspired store affiliated with Sweetish, a small alcove is dedicated to display gnomes and features the piped-in gentle sound of crickets chirping to create a hygge nook.

“It doesn’t have to be a whole room in your house,” Breckbill said. “It could be a chair with a special blanket that makes you feel especially cozy when you use it.”

For Emmy Ullum Hansen, who came to the United States from Denmark in 2017, hygge brings a sense of home away from home.

“When I moved here, there were a lot of things I really missed dearly from home, things I grew up with which I took for granted,” she said. To remedy the situation, she stocks her stand at Lancaster’s Central Market, called Nord Scandinavian Food & Hygge, with Danish treats. For local families, this idea can extend to filling your home with items that bring you comfort and remind you of your heritage, she said.

Practicing hygge in your home is easy.

“It does not require a lot of money or effort,” Breckbill remarked. “It’s about living simply having small things that bring you a real feeling of happiness and coziness. You don’t have to buy a ton of things to have a hygge life.”

Breckbill’s home in the city has become a haven away from the stresses of everyday life.

“I like being really intentional with what I bring into my home, and I like having a little space where, after a long day out and about, coming home, sitting down in that spot, I can relax,” Breckbill said. “I have a special blanket that brings a nice feeling of ‘OK, now is rest time.’ I’ll make myself a cup of tea and just sit and enjoy it.”

In fact, Breckbill noted, the only effort required to enjoy hygge is restraint.

Think warm and fuzzy.

LOOKING TO PRACTICE HYGGE IN YOUR HOME?

Try these suggestions from Breckbill and Ullum Hansen.

Scrutinize your possessions

“Have your children look at their possessions and pick which ones have special meaning to them,” Breckbill suggested. “Help them set up a little hygge spot in their bedroom.”

Put on plush socks, grab a soft blanket, light a candle or sit in front of a roaring fireplace and just “be.”

Look at your lighting

“Danes will spend a lot of money on lighting; it’s a priority,” said Ullum Hansen. “You cannot create hygge in harsh lighting.” She recommends warm, low lighting and using ambient light from candles or a fireplace.

Embrace physical media

“Spend time reading a book together rather than scrolling,” Breckbill said. “I’m still working on that, because I love to read, but man, scrolling is easy.”

Consider comfort food

A sister concept to hygge is the Swedish practice of fika, Breckbill said, adding, “This is about taking a little break out of your day to maybe go outside, sit in a cozy spot and enjoy a little snack or drink.” Ullum Hansen agreed, noting, “Hygge and fika go hand in hand, just in different languages. There’s overlap between the two concepts.” For food inspiration, families can visit Nord in Central Market and try open-faced “smorrebrod” sandwiches, danishes imported from Denmark or artisanal hot dogs.

Slow down

Ullum Hansen encourages people to embrace the slower lifestyle of her homeland. “I think we all have less work-life balance here, and we should work to be present and in the moment,” she said. “Take time to have a family night, no phones, no calls and no work. Just be in the moment.”

Be appreciative

“This all goes back to being in the present, in the moment,” Ullum Hansen explained. “It sounds so simple, but it’s part of hygge - appreciate what you have instead of looking at what you don’t have.”

Get crafty

“A hygge family activity could be doing a craft together, such as learning to felt and making an object together, or learning to crochet together,” Breckbill recommended. “Then you’ll have a cozy reminder of the time you spent together and something you made together as a family.”

Keep it simple

Above all, embrace the easiness of hygge to get the most out of the concept. “You don’t need to buy anything to practice hygge,” Breckbill remarked. “You just need to add in a little pause to your day. Take time as a family to all sit down together and just enjoy time together. Step away from the busy activities you’ve done that day, and just all be together.”

T

he start of a new school year presents a fresh opportunity for students. Parents know that the start of a new school year also means a return to the hustle and bustle that many households with school-aged children have grown accustomed to. When that hectic period begins, parents may wonder if their children are overscheduled and, if so, what effect that might be having on their performance in the classroom?

A 2024 study published in the journal Economics of Education Review found that modern students could be dealing with a host of adverse consequences due to what's piled onto their plates during the school year. According to the study, the amount of homework students are assigned coupled with the abundance of extracurriculars students now participate in is not helping them to build their academic skills but is harming their mental health by increasing feelings of anxiety, anger and depression.

Choosing where to draw the line regarding students' schedules is not an exact science. But parents can consider a number of strategies as they seek to avoid overscheduling their kids in the coming school year.

Take an age-based approach. While parents may feel structured activities can benefit kids of all ages, some childhood development experts note that organized activities may not be as beneficial to younger children as they are to older kids. Andie Stallman, a clinical and developmental health and psychology specialist and the childhood and play expert at Imagination Playground, notes that childhood development professionals suggest that organized activities prior to age six and seven are not developmentally appropriate. Stallman notes at this age kids should be encouraged to discover their own interests through self-directed play and exploration. Kids can still engage in organized activities at this age, but the focus should be on fun and socialization more than building skills and improving performance. As kids advance through elementary school, parents can talk to them about organized extracurricular activities and which ones, if any, they want to participate in.

Keep a running dialogue about the schedule.

Parents understandably don't want kids to quit, but it's also important that kids are encouraged to let Mom and Dad know if they feel they have too much on their plate. The American Academy of Child & Adolescent Psychiatry recommends parents encourage kids to be open about their schedules, especially if they feel overwhelmed by their obligations, and let them know that it's alright and healthy to take a break. The AACAP also urges parents to talk to kids about their thoughts and feelings when children repeatedly resist an activity.

Learn to spot the warning signs of an overscheduled child. Children do not want to disappoint their parents, so even those encouraged to share their thoughts about their activities and schedules may hesitate to speak up if they feel overwhelmed. With that in mind, parents can learn to spot the early warning signs that a child may be overwhelmed, which the AACAP notes include:

Making excuses or refusing to go to the activity Feeling overtired or not having enough time to sleep Exhibiting problems with organization or struggling to meet deadlines Declining school grades Unexplained physical symptoms, such as headaches or stomachaches Increased anxiety It can be difficult for parents to avoid overscheduling kids. But it's important that parents remember the value of free time for youngsters.

Loyalsock Canyon Vista Loyalsock Canyon Vista is an iconic view in Worlds End State Park in Forksville. The overlook gives you a bird’s-eye view of the Loyalsock Creek carving its way through the mountains. You can also see the park’s day use area far below.

Visitors can hike there via the Canyon Vista Trail or drive there via Mineral Spring and Cold Run roads (open seasonally). In the winter, snowmobiles can access the vista when conditions permit.

THE HEALTH BENEFITS OF DAIRY

A healthy diet is composed of a mix of nutrient-rich foods and beverages. The United States Department of Agriculture includes dairy as part of its MyPlate program, which recommends foods and serving sizes of those foods from different food groups. For the purposes of the USDA guidelines, dairy includes milk, cheese, yogurt, lactose-free milk, and fortified soy milk and yogurt. However, dairy also may include cream cheese, sour cream, cream, and butter.

Recommendations regarding dairy consumption depend on age, gender, height, weight, and physical activity. Around two to three cups per day may be advised. However, the USDA says about 90 percent of Americans are not getting enough dairy. Dairy plays an important role in personal health. Here's a look at why dairy is a key component of a healthy diet.

Dairy supports bone health. Calcium comprises the main mineral in the bones of the body. Healthline advises

that dairy is often the best source of calcium in the human diet. Evidence indicates that dairy can help improve bone density, reduce the risk of developing osteoporosis, and lower fracture risk in older adults. Dairy, when consumed with calcium-rich leafy greens and legumes, ensures people get enough calcium to affect bone improvements.

Dairy improves vitamin D levels. About one billion people across the globe

have vitamin D deficiency, while 50 percent of the population has vitamin D insufficiency, reports the Cleveland Clinic. Vitamin D is produced in the body through exposure to the sun and also comes from dietary sources. Vitamin D is a nutrient the body needs, along with calcium, to build strong bones and keep them healthy.

Dairy products are often fortified with vitamin D to work in conjunction with calcium for good health.

Dairy helps to sustain energy levels. Dairy provides a source of high-

quality protein and essential amino acids. Protein can curb hunger and help a person feel satiated longer. Dairy can help a person maintain fitness performance and may also be used for weight management.

Dairy promotes gut health. Fermented dairy and foods in the dairy

group that contain live cultures can add beneficial bacteria to the digestive tract to foster a healthier microbiota, according to U.S. Dairy. Cheeses, yogurt and kefir are fermented foods. These foods may improve digestion and gut barrier function.

Boost the immune system. Dairy contains protein, vitamin A, zinc,

and selenium, which work together to strengthen the body's immune system. Dairy contains all nine of the essential amino acids that are responsible for supporting the immune system and building and repairing tissue, says Dairy Farmers of America.

Those who want to incorporate more dairy into their diets are urged to choose low- and nonfat versions, which do not contain as much saturated fat as fullfat dairy. Saturated fat can contribute to elevated "bad" cholesterol (LDL) numbers and increase the risk of heart disease. Harvard Health suggests no more than 20 grams of saturated fat per day for the average 2,000-calorie diet, making low-fat dairy options a smarter choice.

Homemade Chicken Noodle Soup

Ingredients: 3 1/2-pound whole chicken 10 cups low-sodium chicken broth 8 carrots, peeled and sliced 6 stalks celery, trimmed and sliced 3 onions, peeled and sliced 2 cloves of garlic, peeled and minced 8 sprigs fresh parsley

Directions:

For the chicken stock 1. Rinse the chicken inside and out under cold running water. Place the chicken in a large pot, set over medium heat and add the chicken broth. Add 1⁄4 of the carrots, 1⁄3 of the celery and 1⁄3 of the onions. Add the garlic, 2 sprigs parsley, thyme, bay leaf and enough water to just cover the chicken. Bring broth to a boil, reduce heat and simmer for about 1 1⁄4 hours, or until chicken is very tender, skimming any foam from the surface of the broth.

2. Remove chicken from broth and place in a colander to drain and cool. Strain the broth through a very fine mesh strainer into a large, clean soup pot. Discard the vegetables used to flavor the stock.

For the soup 1. Skim any fat off the top of the strained broth.

2. Remove and discard the skin and bones from the chicken and cut the meat into bite-sized pieces; set aside.

3. Melt the butter in a large Dutch oven set over medium heat. Add the remaining carrots, celery and onions and cook for about 7 minutes or until the onions are translucent. Add the chicken pieces and chicken stock; season with salt and pepper. Bring soup to a simmer and cook for about 30 minutes or until the vegetables are tender.

Directions: 1. Peel and core 2 apples and chop together with 1 cup of the chestnuts. Set aside.

Ingredients: 2 cups roasted, shelled chestnuts, divided 4 medium apples, divided 3 tablespoons olive oil, divided 2 tablespoons butter 1⁄2 cup onions, chopped 2 tablespoons fresh garlic, minced 1⁄2 pound ground pork 1 cup panko breadcrumbs 1⁄4 cup chicken stock 1 teaspoon fresh thyme, plus additional for garnish 2 teaspoons kosher salt, divided or to taste 1 teaspoon pepper 1 4- to 5-pound whole chicken Handful fresh bay leaves, for garnish

2. Preheat oven to 350 F. Heat 2 tablespoons olive oil and the butter in a large skillet over mediumhigh heat. Add the onions and cook until soft, about 4 minutes. Add the garlic and cook another minute. Add the pork and cook until browned, about 3 to 4 minutes.

3. Stir in the chopped chestnuts and apples, breadcrumbs, stock, and thyme and continue to cook for another minute until everything is well combined. Season with 1 teaspoon salt and pepper.

4. Stuff the mixture into the chicken cavity and tie the legs together to secure. Season the chicken with additional salt.

5. Transfer chicken to a roasting pan. Add the remaining apples and whole chestnuts to the pan; drizzle with 1 tablespoon of olive oil. Bake for about 1 hour and 30 minutes.

6. Remove chicken from oven and let rest about 5 to 10 minutes before serving. Garnish with additional thyme and fresh bay leaves.

Directions: For Ginger Snap Crust 1. Preheat the oven to 375 F. 2. In a bowl, combine the ginger snap crumbs, butter and brown sugar and mix well. Transfer to a 9-inch pie pan, and press into the bottom and up the sides with your fingers. Place another pie pan on top of the crust and press firmly to smooth and pack the crust.

3. Bake until golden, 10 to 15 minutes. Remove from the oven and cool. Brush the crust with the egg white.

Refrigerate, tightly covered, for one hour before using, or freeze for up to 6 weeks.

For sweet potato filling 1. Preheat the oven to 400 F. 2. Place sweet potatoes on a foil-lined baking sheet and bake until very soft, about 1 hour.

3. When potatoes are cool enough to handle, halve and scoop out enough flesh to measure 2 cups, discarding skin. While potatoes are still hot, add butter and mash until almost smooth; small lumps of potato should remain.

4. Whisk together eggs, sugar, allspice, ginger, and salt.

Stir in evaporated milk, lemon juice and vanilla. Gradually add egg mixture to sweet potatoes, whisking gently to combine. Pour the filling into the cooled pie crust.

5. Bake for 20 minutes at 400 F. Reduce the heat to 325 F and bake until the filling is set around edges but still jiggles slightly when shaken, about 20 more minutes.

Remove from the oven and let cool slightly, about 30 minutes.

For meringue 1. In a large bowl, beat the egg whites until soft peaks start to form. Slowly add the sugar while beating constantly.

Beat until glossy and stiff peaks form, being careful not to overbeat the meringue.

2. Preheat the broiler. While the pie is still warm, spread the meringue evenly over the filling, smoothing out to the pastry edges to seal. Place under the broiler and cook until the meringue is golden brown, about 1 minute.

3. Remove from the oven and let cool completely on a rack, about 1 hour. Serve.
