Culinary creativity meets compassion

“Get ready for a night of sizzling excitement and paw-some fun!”

said Tammy L. Jalbert, executive director of Columbia Animal Shelter. “Join us at Chopped for Charity to benefit the Columbia Animal Shelter - where culinary creativity meets compassion!”

The second annual Chopped for Charity will be held on Saturday, March 29, from 6 to 9 p.m. at Country Barn Farm Market, 211 S. Donerville Road, Lancaster.

Modeled after the Food Network show “Chopped,” the event challenges participants to create a dish using ingredients from a mystery box. Contestants may also use additional items from a shared pantry, but each dish must prominently feature all of the mystery ingredients.

The chefs competing this year

are Ethan Greer, Chef M and Javan Small. Greer is a restaurateur native to York County. He founded Taqueria El Camino, a Latin restaurant located in Dover, in 2020. He also operates

three locations of Greer’s Burger Garage and is the co-owner of The Franklin Street Social in Red Lion.

Chef M (also known as chef Michelle Andrews) has a passion for global flavors and traditions.

She specializes in private dining,

customized meal plans and culinary education. After attending culinary school in Colorado, she opened her own business serving York and surrounding communities in 2020.

Small grew up in Maryland and at Misawa Air Force Base in Japan. He has resided in York since 2015 and has worked for more than 20 years in various culinary environments. A graduate of Johnson & Wales University, he trained in Luxembourg and worked at a Michelin Star restaurant. He worked for several food service companies in New England before serving as executive chef at restaurants in Allentown and Easton. For the past two and a half years, he has worked for York Country Day School.

At Chopped for Charity, guests will enjoy a buffet dinner, live entertainment and information about the shelter’s mission and

“This year, we are focusing our efforts on helping to preserve Wrightsville’s history by joining with several other nonprofit organizations to restore the burial grounds and conserve the aging tombstones of the Mount Pisgah Cemetery, located on Mulberry Street in Wrightsville,” explained Lisa Burk of Historic Wrightsville Inc. “Mount Pisgah Cemetery is the final resting place of our African American friends and neighbors from years past, with residing families large enough to support two African American

Methodist Episcopal churches.”

Old Towne Night will feature a presentation by Duane Raber and Rebecca Anstine, both members of the South Central Pennsylvania Genealogical Society.

Agriculture makes its mark on Lancaster County

Every five years, the United States Department of Agriculture conducts its Census of Agriculture, collecting information about the country’s farming activities. The most recent census, which examined the state of farming during 2022, revealed the following facts.

• Pennsylvania led the U.S. in the percentage of its producers who were under the age of 35 - 12.7% - and Lancaster County was one of only two counties in the nation with more than 1,000 young producers.

(Lancaster County had 2,057.)

• Pennsylvania boasted 49,053 farms, and Lancaster County had 4,680 farms - 9.5% of the farms in the state.

• Four percent of Lancaster County’s farms operated organically.

• Eleven percent of the county’s farms sold directly to consumers.

• Ninety-eight percent of the county’s farms were family farms.

• The total market value of products sold by Lancaster County farms in

2022 was $1.85 billion, accounting for 18% of agriculture sales in Pennsylvania.

• Lancaster County’s top crops in acres were corn for grain, 95,549; forage, 65,142; soybeans for beans, 51,695; corn for silage/greenchop, 35,988; and wheat for grain, 24,101.

• The county’s harvest included 847,584 tons of corn for silage/ greenchop; over 17 million bushels of corn for grain; over 2 million bushels of wheat for grain; 442,901 bushels of barley for grain; and 42,221 bushels of oats for grain.

• Lancaster County’s livestock totaled 13.7 million layers; close to 10.4 million broilers and other meat-type chickens; close to 7 million pullets (young hens); 322,153 hogs and pigs; 235,758 turkeys; and 182,218 cattle and calves.

• Approximately 82% of all agricultural products in Lancaster County were livestock, poultry, and their products; about 18% were crop related.

• Lancaster County ranked No. 1 in Pennsylvania in many agriculture categories, including total market value of agricultural products sold and total livestock, poultry, and products sold. The county had the highest sales in the state in grains, oilseeds, dry beans, and dry peas; tobacco; and other crops and hay. Within the livestock category, it leads the state in sales of poultry and eggs; cattle and calves; milk from cows; hogs and pigs; and sheep, goats, wool, mohair, and milk. The county is seventh in the U.S. for poultry and eggs.

• Lancaster County also earned high ranks among the 3,144 counties in the United States: seventh in poultry and eggs and 10th in overall livestock, poultry, and products.

• There were approximately 56 commercial chickens (layers, pullets, and meat-type) per person in Lancaster County in 2022, according to estimated population information from the Census Bureau.

surrounding the cemetery,” Anstine said. “My part is to tell the stories of families, focusing on some Civil War veterans. We’ll talk about some of the caretakers also.”

Anstine’s background in genealogy can be traced back to her teenage years, when she began researching her own family. Since then, she’s taken classes and workshops on researching.

“When people go to a cemetery, they generally look at a tombstone that might have the birth datedash-death date. I research that dash - where did they live, what did they do, what is their story?” she stated. “And in researching that story, it brings history to life and helps to understand the who, what, why and where of events and knowledge of the past is so important today.”

Raber will discuss the decision of Riverside Masonic Lodge 503 to clean and restore the headstones of the 11 Civil War veterans buried in the cemetery. He will also talk about the efforts made by caretakers, including the Mount Pisgah Cemetery Association, family members and community organizations, to restore the site.

“I didn’t start working with my family genealogy until 2019,” Raber said. “It is important that we preserve the history of those buried in the Mount Pisgah Cemetery and remember their history and many contributions to the Wrightsville community. We have made progress cleaning and are looking forward to restoration and preservation training this year in order to proceed with quality repairs.”

Tina Charles will also provide information at Old Towne Night, focusing specifically on one gravesite: the site

of Mrs. Anna Grayson, the only female veteran in the cemetery.

“Like Becky, I’ve always been fascinated by cemeteries and the stories they hold. I believe in ‘defining the dash,’” she said, noting that she got into genealogy in her 20s. “I’m a co-founder and past board member of the Friends of Lebanon Cemetery, a nonprofit dedicated to preserving the history of those interred in York County’s African American cemeteries. My connection to Mount Pisgah, however, predates that, as I first learned about it while conducting genealogy research for a friend descended from the Barton family, whose brothers served in the Civil War.”

While working with Anstine and Charles on restoration and preservation, Raber mentioned that he had always been curious about Anna Grayson.

“He thought he had seen something indicating she might have been part of the 6888th Central Postal Directory Battalion,” Charles said. “I immediately dove into the research

and was able to confirm that she was indeed a member of that historic unit. I’m honored to have been asked to share her story as part of the upcoming presentation.”

Anstine noted that it’s especially timely to discuss Grayson as the 2024 movie “The Six Triple Eight,” starring Kerry Washington, is streaming now. She hopes people will come out for Old Towne Night to learn more about the past.

“(I hope) that this would be an opportunity to learn about Wrightsville’s past that hasn’t really been explored,” she commented. “Over the years, I’ve found that most people do not know the stories of their families nor the area that they live in. An individual mentioned one time that he wondered why there were no people like him in Wrightsville. He knows now that Wrightsville not only has a black cemetery but was once a thriving community for African Americans.”

Conservancy

“We are proud of our part in its evolution and are happy to see the Lancaster Conservancy steward Historic Hellam Preserve for future generations.”

The Conservancy has already initiated historic and natural resource research. Once the property is acquired, the Conservancy will develop a management plan for the preserve that focuses on its unique historic, natural and cultural resources.

“The Graham family chose to donate the property to the Conservancy because they believe in our vision for the preserve and our plans to use the site interpretively to educate visitors on the evolution of our natural and cultural landscape throughout history,” said Fritz Schroeder, Conservancy president and CEO. “The Conservancy focuses on conservation education, and we look forward to working with regional partners to help interpret the history of the site.”

The preserve will also allow the Conservancy to protect significant cultural resources from the native peoples who inhabited the region to the European immigrants who populated the region in the 18th century. Schroeder noted that focusing on the impact of Native Americans will also be a priority.

“We plan to partner with researchers and historians to learn more about the indigenous and Colonial history of the site,” he said. “We look forward to working with partners to help interpret and share the story of native peoples and other human history alongside our own efforts to educate the community on conservation.”

In addition to serving as a future public nature preserve readily accessible to the residents of Hallam Borough and Hellam Township, the Ingrid Graham Historic Hellam Nature Preserve will serve as the Conservancy’s engagement and education center in York County, helping to tell the interrelated story of human and natural histories.

Along with the Conservancy’s hands-on conservation education programming, engagement activities at the preserve will include interpretation of the restored 18th and 19th century historic structures. The preserve also features key infrastructure such as parking, shelter for inclement weather and restroom facilities.

“Lancaster Conservancy has protected over 3,000 acres of natural lands in York County along

the Susquehanna River since 2015,” Schroeder said. “Our work in York County is focused on the Susquehanna Riverlands Conservation Landscape, which is designated by the Pennsylvania DCNR and includes the municipalities that border the river in York and Lancaster counties. When we protect natural lands and waterways along the Susquehanna, we help protect the health of this amazing and important river that provides recreational opportunities, drinking water and wildlife habitat.”

More specifically, he shared, the Graham Nature Preserve will be part of the Conservancy’s Hellam Hills Conservation Area, which stretches from Wrightsville to the Codorus Creek and encompasses more than 1,000 acres of contiguous forests including Wizard Ranch, Robert A. Kinsley and Roundtop nature preserves.

The Conservancy also operates Climbers Run Nature Center as its educational programming hub in Lancaster County. In 2024, the Conservancy served more than 1,300 local students and plans to expand its conservation education offerings on both sides of the river in the coming years.

preserve, it will take time for everything to be up and running for public use, Schroeder said.

“We would expect the planning process to take several years before the property is fully open to the public,” he remarked. “Educational workshops and opportunities to volunteer are listed on our volunteer page, and some of that programming will begin in 2025.”

He added that the organization is proud to receive the preserve and expand its mission.

“Ingrid Graham’s passion for the history of this land has created a space that will now educate youth for years to come,” he stated, adding that the organization is eager to partner with York County schools and youth programs to expand experiential outdoor learning. “From a conservation perspective, the Conservancy will create a plan and strategy to nurture the forest, wetlands and riparian buffers that protect Kreutz Creek.”

Baking Bread: Flatbread will be offered on Thursday, March 27, from 6 to 8 p.m. The class will cover the basics of ingredients, techniques, and variations for flatbreads, which include pita, naan, and focaccia. Meet a Mini Forest: The Miyawaki Method will be held on Sunday, March 30, from 1:30 to 5 p.m. Developed in the mid-20th century by Japanese botanist Akira Miyawaki, the Miyawaki Method is a planting technique that focuses on the rapid establishment of woodland vegetation in spaces that have not recently seen forest cover, such as yards, abandoned lots, and agricultural fields.

In the class, participants will tour the Horn Farm’s Miyawaki plots and learn about site preparation, soil, succession, plant selection and placement, and upkeep. The group will also plant a plot, experiencing the steps for sowing a mini forest from start to finish.

A variety of other classes will be offered this spring, as well.
