Rudy’s pride themselves on creating a “relaxed neighbourhood” atmosphere, whilst still retaining the rustic aesthetic of a traditional neapolitan pizzeria.

For Rudy’s it’s all about the pizza, the dough is made on site daily by the pizzaolos using 00 Caputo flour, it takes 24 hours to double ferment and then just 60 seconds to cook, which makes Rudy’s pizzas soft and light. Sustainability By Justin Binks, Director at SEBO UK

It’s one thing to read about the plastic that’s being dumped in our oceans, quite another to find yourself swimming in a sea of the stuff. I had an amazing diving holiday in the Maldives at the end of last year and fulfilled a life-long dream to swim with Manta Rays. I was lucky enough to experience an astonishingly diverse array of marine life, yet my joyous trip-of-alifetime also brought me face-to-face with the devastating effect plastic waste is having on our delicate marine ecosystems. Exploring the atolls today requires navigating the plastic chairs and other human-made debris that floats in this most beautiful region of the planet. Back at the villa, swathes of rubbish drifting past, was not an uncommon sight. The locals informed me that much of the waste plastic comes from Far Eastern recycling centres, where it is taken to be burnt. A significant amount of the plastic arriving there originates from the UK, as an increasingly our recycling is sent to the East. Due to open storage, huge quantities get blown out to sea in the process, I was told.

My ocean experience was enough to convince me unequivocally that sustainability is no longer just a desirable option, it’s essential. And at SEBO, it’s something we prioritise and plan for. Where commercial vacuum cleaners are concerned, although perhaps not to the same extent as the domestic market, the trend has been towards disposal. This is especially the case where they have been bought on price, rather than performance. For the environment, and the long term, this is actually an expensive way to operate, particularly where the poor performance of low-quality vacuum cleaners

can reduce the life expectancy of floor coverings leading to them being replaced more often. It can also lead to them being in a poor condition for much of the time they are in situ, with a negative effect on customers perception of cleanliness and giving an impression of low standards. The most successful hotels recognise the crucial importance of clean and well-presented premises. It is a major part of their continued success. At SEBO we have resolutely stuck to the principal that our vacuum cleaners should perform well on a continued basis, and be built to last. Engineered to be durable and reliable, they are designed from the outset to be easily and affordably repaired, if that should become necessary. Any parts that do need replacing are clearly identified material-wise, so that when it finally comes to recycling, the process is efficient and easy. When you factor in the productivity, durability and performance of our vacuum cleaners, they are not the cheapest, but they aren’t expensive – and they certainly are an investment in the future.

Hotelier & Hospitality Design

Back at home, alongside a rise in household recycling, there has been a rise in everyday products that are disposed of, rather than repaired. It could be argued that the belief that products can be easily recycled has made people feel less guilty about throwing them away. But how many of these realise where their discarded appliances end up, and how much actually end up as landfill?

Black Ivy hotel transforms guest experience with integrated technology solution Black Ivy is a stylish neighbourhood bar and boutique hotel, located in the leafy Edinburgh suburb of Bruntsfield.

The hotel boasts 22 uniquely designed bedrooms and two busy bars and a popular food offer, dishing up classics with a twist, averaging 1,000 covers a week.

Having undergone a significant investment by Caledonia Inns two years ago, Revenue Manager, John Mustard also wanted to upgrade Black Ivy’s outdated technology to support the hotel’s focus on delivering exceptional customer service.

The Drafthouse, specialises in offering a range of lagers, craft creations and guest taps on rotation and is renowned for its Tank Beer. Also featuring a stage area, regular live entertainment is a big hit. Outside, there is a 60-seater al fresco Terrace, which overlooks Bruntsfield Links Park. Featuring fire pits, customers enjoy a campfire vibe outside and with two full-size table tennis tables inside, the venue is a great place to mix business with pleasure.

Zonal was the only solution to go for according to John. Having worked with Zonal throughout his 30 year hospitality career, John had never found a technology partner that could match the range of solutions offered by Zonal and the 24/7 support service. “I have worked with other technology providers over the years, but Zonal always stands out for its intuitive, smart design and reliability. Zonal spent 40 years perfecting the technology, which always keeps up to speed with advancements, so you know it’s going to work, be relevant and not let you down.” "Zonal support is excellent; the Help Desk is quick to respond any time, even at weekends." Following its refurbishment, Black Ivy has fast become popular with locals, as well as with visitors to Edinburgh.

For John and his Black Ivy team, Zonal technology has made managing all the different elements of the business seamless. Zonal’s EPoS system connects with the hotel’s property management system (PMS), Rezlynx, so residential guests can bill any drinks and food directly to their room tab. “For us this is a big plus of Zonal; its technology is incredibly flexible so can integrate with other technology solutions that we may have, such as Rezlynx.” This means that Black Ivy's Zonal EPoS is the single reporting vehicles for its account team, giving them real-time data that allows them to keep a handle on sales and overheads.

But it’s not just about operations, the customer journey is also key to Black Ivy’s success. Zonal’s kitchen management system, Kitchen iQ, has been a game changer along with iServe, a handheld electronic order pad that offers access to EPoS functionality on an iPod or iPad from anywhere in the venue. “With two bars, including our popular Terrace, switching to iServe has been a winner for our team. They no longer have to run back and forth to the bar to process orders, giving them more time to focus on our customers. Food orders are also fed directly into the EPoS system and sent through to the kitchen, again saving time and the risk of mistakes. “Our chefs really liked Kitchen iQ as the system makes their lives easier and less stressful. Now if you ask them would they go back to paper, the answer is a resounding no!”

If you think Zonal’s integrated hospitality technology solutions could help your hotel business, get in touch: 0800 131 3400

Hey, Alexa – how do I make sure I’m building the restaurant of the future?

By Luis De Souza, CEO of NFS Technology Group

What’s the biggest challenge facing today’s restaurateurs? Costs? Labour? Customer loyalty? Maybe… Or maybe the biggest challenge of all – the one that arches over everything – is this:

How can I make sure I’m building a restaurant that’s ready for the future? Look at how the pace of change is speeding up. When electricity was introduced, it took 30 years to reach 10% of homes – but smartphones had 40% adoption within a decade.

Online big spenders

Our Aloha restaurant management technology already goes far beyond the old definition of POS, as thousands of contented customers around the world have already found out, 140,000 to be exact!

Online ordering for delivery is also a modern-day phenomenon – analysts Deloitte say 40% of customers prefer to order online, and when they do, they are likely to spend up to 15% more.

It enables customers to find and reserve a table at your restaurant online or via an app, then reduces their wait once they arrive with graphic seating plans.

If you haven’t yet responded to it, you and your restaurant are running a huge risk. Not only of being left behind, but of failing entirely as your customer base moves away from you.

The software then ensures their food is delivered fast by staff using handheld devices to order at tableside. The order is either sent instantly to the kitchen or held until its prep time requires it to be sent.

Hotelier & Hospitality Design

Restaurant customers have changed too, and never so much as in recent years. Casual dining has soared, with diners eager to eat and go within 40 minutes.

So at the Restaurant Show, we’re demonstrating something that’s very new, and very exciting.

As technology experts working at the forefront of restaurant management software, it’s our job to spot and respond to trends from their inception.

Payment is also taken at tableside – splitting the bill is a cinch – so guests can pay and go.

Afterwards, captured data enables you to create targeted email campaigns that will appeal to your customers’ tastes and drive up loyalty.

And loyalty pays off. A leading London restaurant group recently told us their Aloha-supported loyalty programme is going down a storm with customers, who spend up to 42% more than non-loyalty guests.

Allergy risk reduction Allergy concerns are a thing of the past, because Aloha by NFS is supported by chef-designed Kitchen CUT technology that enables allergens to be tracked to individual ingredient level as menus and dishes are created. Aloha works with self-service kiosks and tablets for fast food and casual dining, connecting to kitchen automation and reducing the wait even further.

The transaction goes like this: Your customer: “Hey, Alexa – open the app for my favourite restaurant.”

Behind the scenes, your front and back of house workflow improves because human error is removed from the picture and communication becomes effortless.

Labour and stock control Labour is better controlled because Aloha’s comprehensive reporting gives a full view of how many staff are needed at any time, even providing useful forecasts.

Stock control is also improved, because the software identifies best selling dishes and spots trends, enabling you to match procurement to actual requirement and reducing your food waste. It makes economical and environmental sense.

So what’s the exciting news we’ll be sharing at the Restaurant Show? Nothing less than the next step in customer ordering. Delivery as a service for restaurant guests has exploded in popularity, thanks to companies such as Deliveroo and Uber Eats. It’s enabled restaurants who have never before considered home delivery to develop entirely new revenue streams, and is sure to continue to grow – one service is even offering restaurants the opportunity to use its ‘dark kitchens’ to meet demand. Our new Voice Ordering service harnesses the power of Amazon’s Alexa voice assistant to provide customers with an incredibly effortless link to your restaurant.

Your customer says yes or no, making another selection, then agrees the delivery or collection time – and the order is relayed instantly to your kitchen while payment is taken automatically.

What restaurant POS now really means This is why we no longer speak about Aloha as ‘point of sale’. Instead, the core foundation of restaurant technology is a world-class platform-of-sale, integrating with different software providers that connect a guest seamlessly to your restaurant. Because the restaurant of the future knows that one size no longer fits all when it comes to that important connection. Diners demand an unprecedentedly personalised service that caters specifically for them – and Aloha, with its easy integration, enables your restaurant to build what you need to keep them happy. We’re looking forward to the Restaurant Show, and we hope to see you there: we’re ready to show you the way you can really build the restaurant of the future.

Paying homage to the historical architecture and period features, the rooms still retain age-old features flecked with modern touches.

Each en suite echoes the décor, with detailed wallpaper and vintage mirrors combined with stylish baths and spacious walk in showers. The family suite features a snug reading corner, fully stocked with bed time stories and bean bags for little ones, plus bunk beds with reading lights to keep them entertained. With attention to detail at every turn, the bedrooms also come equipped with fully-integrated smart LED television, as well as fast fibre WiFi connection, for uninterrupted FaceTime, Skype and online browsing. The rooms also use a keyless entry system, so guests only need their mobile to gain access.

Like with everything at The Red Lion, community and locality is at its heart. Sticking to the pub’s core values, the rooms are stocked with high-quality products from the likes of Nespresso and Aromatherapy Associates, as well as breakfast baked goods sourced from the local bakery ‘The Wild Goose Bakery’.

Bailiffscourt Hotel & Spa Overview With stunning, panoramic views, Bailiffscourt Hotel & Spa part of the renowned Historic Sussex Hotels collection, exudes the highest standard from every aspect of this fabulous hotel. This Medieval-styled historic house, with parts dating back as far as 1927 is one of West Sussex’s many treasures. Situated in Climping, with breath-taking views of the countryside. Entering this building feels like stepping into another world where every attention to detail is met and even the smallest aspects are tended to with highest level of care and attention.

Hotelier & Hospitality Design

With an on-site spa, gym & fitness studio, heated indoor & outdoor pools, tennis courts just to list a few facilities, Bailiffscourt really is the perfect location for a short break, as well as equipping perfectly for Weddings & parties.

Hotel Openings & Refurbishments

The Room The Bailliffscourt has many different rooms available, with the unusual room names taken from the fields surrounding the hotel, dating as far back as 1610! I highly recommend taking up the option to see the map from the in-house staff.

Full menu available here.

The Food Dining in the restaurant within the building, had an extremely medieval feel to it. Serving a wide range of comfort food using ingredients usually solely from Sussex itself – meets modern twist dishes, I opted for the Salmon to start, Beetroot cured sliced salmon, horseradish cream, olive and rosemary cracker,

Breakfast was a slightly more informal affair, Showcasing a modern outlook on classic British dishes with a commitment to quality ingredients and depth of flavour, the breakfast menu consisted of a variety of cooked and continental options with a selection of pastries and fruit juices. Bailiffscourt Hotel & Spa really has the feel of a home from home, where the traditional look has met with the modern touches in harmony. A great place to while away Sunday afternoons with the beautiful afternoon tea option, eat with good friends or simply relax & take in the stunning views & history.

I was lucky enough to be given a classic cosy room during my stay. The room was an excellent size, with double, twin or king beds all available, as-well as suites. The room had character and came with its very own en-suite bathroom, work desk and satellite TV. I found the hotel room extremely clean and tidy and the views were simply stunning. Each room offers complimentary Wi-fi to their guest, so a perfect destination for people on their travels or working away from home.

root veg slaw, beetroot pearls and The Chicken – a deliciously cooked Roasted cornfed chicken supreme, creamed potato, morel mushroom cream sauce, spring greens, port jus for the main course, both of which left me both satisfied and craving more.

Contract lighting is our specialism Ensuring the right lighting for your restaurant, bar or hotel project takes a lot more effort than you might think. You need to find a balance between what looks good, what your budget allows and what is available to you within your project time restraints. This is where contract lighting companies like Chantelle Lighting come in. We have 30 years’ experience working with designers, architects, contractors, managers and more, ensuring the smooth delivery of lighting for projects big and small. Not only do we manufacture our own stylish high quality products that are on trend and look great, we also supply them in large quantities and carefully ship them to your chosen destination. We carefully consider the needs of each and every project, constantly offering advice and asking questions to make sure the solution meets the brief, as well the practicalities of the space. To us, understanding what ambience you want your lighting design to achieve is just as important as the budget you have to spend. It is our job to make the lives of our clients easier; not more difficult! As such, we draw on over three decades’ experience to offer measured and considered advice at every stage of the process. Unless of course, you are seeking an off-the-wall, bespoke fitting, of course – that’s where we let our imaginations run wild and we’re yet to disappoint! Designers and Architects need re-assurance that they are collaborating with a knowledgeable, experienced lighting specialist they can trust to deliver results from concept to completion. That’s exactly what they get from us, taking a simple sketch to reality, through various stages of 3D renderings, sample creations to delivery of the actual product. Alternatively, if they’re looking for an off-the-shelf product, or range of products, available to them at fast turnaround speeds, that too we can deliver. To us, it’s all about meeting individual needs and demands.

Hotelier & Hospitality Design

We’re also here to consider the logistics of getting the lights on site; trust us, that is all too often a last minute consideration until, the fitting won’t go through the door!

We know how to transport those fragile items seamlessly, what needs to be considered before the fitting gets to site and what potential tools, machinery and manpower is needed to get them in situ. Some of these fittings are extremely weighty! Lest not forget the service you receive from Chantelle Lighting throughout; design, quality, efficiency and price are all vital elements, but experience a poor service and its that you’ll remember above anything else. Chantelle Lighting is a family firm which puts your interests at the heart of everything we do; you look good, we feel good. To discuss your next project, please contact us on 01282 877877 or email

Focus, France’s premier fireplace company exhibits for the first time at 100% Design, London Stand No. C19B Focus has come a long way since its founder Dominique Imbert created a fireplace design like no other: the first 360 degree pivoting fireplace made from a dramatic forged steel hearth with an extended flue, that has become the trademark of the company. The story starts in the foothills of the Cevennes in the medieval fortress town of Viols Le Fort, where it still has its HQ today. The company has grown from one man beating metal to a growing workforce of nearly 100 in the South of France. Its reputation for its handcrafted fireplaces has gone global, with Focus being specified by some of the world’s leading architects on projects ranging from houses to hotels. Focus has built its reputation on research and development and now includes 17 gas models in its catalogue. Focus gas fires emulate flames and the play of a real wood fire to an astonishingly authentic degree, whilst eliminating its disadvantages. All the gas fires in the Focus range are equipped with a CE-certified gas burner that can operate with either natural gas or propane. The state-of-the-art combustion system in Focus gas fires guarantees both ease of use and high performance.

Hotelier & Hospitality Design

Recently Focus has designed Slimfocus, a DEFRA approved fire which is ideal for urban areas where there are restrictions on wood burning fires and stoves. The Slimfocus is a periscope of flames. Its hearth is either suspended (in which case it can pivot) or supported by a base and fixed in place. Its streamlined shape takes up little space, whether it is positioned centrally in a room, near a wall or in a corner. Its exceptionally fluid lines make it one of Focus’s most stylistically revolutionary fireplaces.

Focus has also recently launched a range of white metal fires. In a bold move Focus has selected classic models - the award-winning Gyrofocus,Domofocus and Bathyscafocus - from its extensive collection and transformed them into the white knights of interior design. Offering a lighter touch to interior schemes, the whiteness shines out and provides a delicate contrast to the roaring flames within. As Dominique Imbert explains how the white colour gives the model a totally different look: “The play of light and shadow that is reflected on the white surface brings lightness to the metal body and transforms it into a luminous sculpture whether the fire is on or off.”

The satin white surface of the fireplace is easy to maintain. For small alterations, a paint spray resistant to intense heat is provided. Focus fireplaces, chimneys and stoves combine beauty and brains, function as well as form; to create a range of nearly 70 designs for inside and outside. A large number of Focus models come in either wood-burning or gas versions, with a choice of finishes and colours allowing individual customisation to complement customer projects. The Focus collection includes ceiling, wall, built-in and outdoor fireplaces which look equally at home in broad range of spaces from houses to hotels, from lofts to bungalow, barns to beach dwellings and so much more. There is a world of possibility when using these sculptural products. With statement style and campfire charm, a selection of Focus’ elegant models are also available for outdoor

use - for warming, cooking or both. Alfresco evenings are one of life’s simple pleasures, and when the temperature dips, a Focus fire will elegantly extend the enjoyment of a garden or outside space. These architectural centre pieces not only create a convivial atmosphere when they are in use, they make a style statement all year round, so the outside can look as beautiful as the inside whatever the weather. A range of Focus’ outdoor fires and barbecues, mix earthiness with elegant aesthetics and ease of use.

Focus has been the recipient of many international awards in recognition of innovation and design. Most recently Focus was awarded the prestigious Iconic Award 2019. This is awarded by the German Design Council and is an international competition for architects, designers & construction sector. Focus was Winner of the Interior Innovation category. Focus is always ahead of the curve and with its Augmented reality app it offers customers the opportunity to visualise a Focus fireplace in their project. An essential planning tool for interior designers and architects as it allows for a realistic 3D visualisations. In addition, a specific program allows you to see the model of your choice from all angles, thanks to the automatic scaling option. Easy to use, the app is available on Google Play and App Store. Practical information - App available in French, English, German, Italian, Spanish.

Hotelier & Hospitality Design

The finish of each model has been designed specifically to resist outdoor conditions: each fireplace is treated with an anticorrosion coating and a resistant black paint or hematite rust that transforms over time, creating a beautiful patina.

Andaz Liverpool Street

There really is no other hotel that compares to The Andaz.

As you arrive you will be welcomed by the fantastic staff who will check you in and offer you a glass of bubbly whilst you wait. You can either be checked in at the main desk or via the glowing IPad’s in the lobby. I must say this is a very relaxed and enjoyable start to your visit. You will be taken back by the sheer size of this Hotel. This grade II listed building was originally built in 1884 and perfectly differs from the exquisitely old fashioned high ceilings, grand room space, mosaic flooring and marble staircases to ultra-modern style throughout the entire hotel. The building is made up of two wings (East & west) this gives you an idea of just how extravagant this spacious London hotel is. Something that is not usually the case in the city.

There are over 200 rooms within the hotel which are generously spacious and stylish. The bathroom and wash area boost a beautiful décor. All of our rooms feature a Nespresso™ coffee machine, complimentary mini bar and Wi-Fi, a smart TV, luxurious Yukata robes and bath amenities from British skincare brand REN. Imagine a Hotel Room... Imagine you enter a hotel room after a long day of meetings or perhaps a family outing, touring Paris with three kids, grandma and your spouse. Your Apple Watch says you walked twenty thousand steps, you are exhausted and all you want to do is lie down on the bed, plug in your cell, catch up with the news or post the pictures from your day of touring. This scenario plays out at thousands of hotels around the world everyday. You need power - power to charge your phone, and all of your family member’s phones. Where do you plug in all of these devices? Hopefully, your hotel accommodations have considered the guest’s overwhelming need to charge up. Hotel stakeholders - property owners, brands and management companies have begun to realize the importance of accessible power for everyone. Along with internet access, convenient charging is THE primary concern of hotel guests. They expect rooms to be fully provisioned with accessible outlets at the nightstand to easily charge their devices.

Now... Imagine you enter a hotel room and there are a few wall sockets, but because you are traveling internationally, your device is incompatible with the available outlets and even worse, you have forgotten your adapter. You may call the front desk only to be frustrated because they don’t have any extra adapters.

CubieBlue® incorporates Bluetooth® speakers and allows guests to stream their personal music, delivering a pleasing and crisp audio experience. Featuring simple one touch pairing and personal control via guest’s own mobile device, CubieBlue® delivers a truly enhanced guest room listening experience.

Hotels guests travel to and from different parts of the globe. Some guest’s devices require either a UK (Type G) or EU (Schuko) socket. To solve this problem, Brandstand developed the innovative CubieBlueXB, based on the popular CubieBlue® Bluetooth® Alarm Clock. CubieBlueXB offers one of each type of socket - one UK and one EU. This clever solution satisfies guest’s power needs because odds are, European travelers will have one or the other plug type.

In order for hotels to ensure the best customer experience in terms of guest facing power and charging, Brandstand offers a line of alarm clocks for the UK, European and Middle East hospitality markets with a variety of power options including: surge protected, tamper resistant 220V, EU or UK outlets, USB-A ports and Qi wireless charging. Each product makes it easy to charge up multiple devices and offers additional power and charging at the nightstand

The success of CubieBlue® is based on a clear user interface and an alarm clock that does not feel like an afterthought. The unique one knob design of CubieBlue’s alarm clock is well thought out, simple to use and a device that hotel guest’s will actually use! Guests no longer ask the question: “How do I set the alarm?” Nor do they worry that the alarm will not wake them on time.

Meet The Studio Behind The New Look Raffles Singapore, Champalimaud Design Based in New York City, Champalimaud Design is an award-winning multi-disciplinary firm recognised for its visionary concepts which span both hospitality and residential projects. options, updated accommodations, and a new suite category. By incorporating local influences throughout and remaining true to its heritage, Champalimaud Design thoughtfully layers a memory of old Singapore with a contemporary and artful approach.

Above: Raffles Singapore, redesigned by Champalimaud Design and unveiled for the first time in August 2019

Founded almost 30 years ago by Lisbon-born Alexandra Champalimaud, the studio is now run by five Partners who are all specialists in their respective fields. In addition to Alexandra Champalimaud, Partners include CEO Ed Bakos, Jon Kastl, Winston Kong, and most recently, Anna Beeber.

As a national monument, special attention was paid to the preservation of the original colonial architecture throughout the renovation. All of the public areas are re-planned to increase social engagement and create an ease of flow between spaces. With a sensibility that is much more contemporary than its previous design iterations, there’s an emphasis on maximising scale through the careful curation of custom furniture in sumptuous shapes, ornate screens, locally sourced heritage antiques, and impactful lighting. The new reception and lobby lounge - once iconic places frequently visited by dignitaries and diplomats - is transformed into an elegant reception with a curated dining menu and now serves as the gateway to the hotel’s alluring spaces for dining and imbibing: Tiffin Room, Writer’s Bar, La Dame de Pic, Long Bar, and Butcher’s Block. The palate is composed of the original black and white contrasts juxtaposed with caramel, shades of green, and creamy neutrals. Light floral references and gilded trimming along with a bejewelled chandelier add a layer of refinement to the overall vision.

Known for creating luxury environments for a global client list which includes the likes of The Plaza New York, the legendary Troutbeck hotel in Upstate New York and The Gainsborough Bath Spa, Champalimaud Design was approached in 2013 by Raffles Singapore and tasked with the monumental goal of a complete redesign of Singapore’s oldest and most iconic hotel. The studio was presented with a unique challenge of maintaining an ambience intrinsically tied to the hotel’s unique 130 year long history, whilst at the same time taking the hotel in a renewed design direction through a meticulous update and refresh. The coming year will see Champalimaud Design take on a number of high profile openings. Other projects include One Waterline Square, a luxury high-rise development on the Hudson River in Manhattan which represents an unprecedented approach to urban living, as well as Su Casa, a private retreat nestled in Puerto Rico’s most exclusive resort which has undergone a complete renovation by Champalimaud Design following Hurricane Maria which ravaged the island in 2017. One of the most recent projects undertaken by Milk is a bespoke sauna and steam room installation at Broughton Hall Estate, creating the design and fabrication of a truly unique project. From an initial customer brief we delivered the design concept through to detailed production and fabrication drawings, material sourcing and fabrication. All in-house processes that led to the creation of a truly unique thermal experience. The sauna created for this installation was manufactured within Milks workshop and was created as a result of the complicated assembly of laminated timber elements. These elements were then CNC’d to form the 148 individual components required to form this unique sauna cabin. The prime grade Hemlock Timber used for this installation was sealed and protected against the rigors of operation by applying 3 coats of Supi Sauna Wax, a product by Tikkurila. A Milk designed circular feature ceiling light was installed mirroring the corporate image of the wellness facility, casting a wonderful light across the curved interior of this sauna. The fluid interior space is complimented by the installation of a Harvia Globe sauna heater. The steam room installation was created in partnership with Wedi Systems UK Ltd, made up of 28 individually formed segments, these were bonded together, sealed and vapour-proofed, ensuring a durable substrate for the Christian Botteganove mosaic tiling. As ever for Milk these mosaics were installed by the uniquely talented Sharon Taylor of Viva Tiling. The hand crafted ceiling light to match that of the sauna but to cater for the specific thermal requirements of the steam cabin, again reflecting the Avalons corporate symbol, compliments the lustrous lines of the steam room interior and that of the sauna heater.

“Milk are exceptionally proud of this installation, it’s a very real reflection of our design and manufacturing ambitions and the inhouse artisan skills we can bring to bear”.

Literally raising the roof:

At Hilton’s brand new Tower of London bar What do you do when you want to create the latest destination rooftop bar in London, but don’t want your vision to be hampered by the elements? You turn your outdoor bar into an indoor bar – or an indoor, outdoor bar, if you’re the DoubleTree by Hilton Hotel London – Tower of London. Jason Eastwood, Managing Director of Canopies UK, reveals how the sky really was the limit when it came to making sure guests can enjoy the iconic views of London from Hilton’s Savage Garden bar, whether it’s day or night, raining or sunny. Canopies UK were contacted by the hotel’s owner to help transform the former Sky Lounge site on the 12th floor into a 8,870 sq ft, 400 capacity lounge bar, including a feature bar, cocktail lounge, dining areas, private spaces, as well as two large outdoor north and south-facing terraces.

Essentially, the project involved making a real statement, which Canopies UK enabled the Hilton to do by helping the hotel make the most of every single square inch of space that was available to them – both inside and out.

“The north Wildside terrace is a dedicated events space that can be hired for private events and functions, such as weddings, and looks out over many of London’s landmarks, including Tower Bridge, The Gherkin and St Paul’s Cathedral,” explains Jason. “Being up on the roof, meant that the new bar, particularly the Wildside terrace, was at the mercy of the weather, so we were called upon to install one our Cantabria canopies, which features not one, but six retractable roofs that can be opened and closed independently of each other at the touch of a button. From a design perspective, it’s a real head-turning feature, and from a practical perspective, it enables the terrace

to be quickly and easily transformed from an al fresco summer hotspot into a winter events space for private hire and seasonal pop-ups.” In addition to the highly stylish and unique retractable waterproof roofs, the canopy also features integrated guttering, LED lighting, heating and a combination of fixed and vertical sliding glass screens that can be retracted in the finer weather and partially or fully closed in cooler, wetter and more changeable weather. Meanwhile, the overall structure has been painted grey so that it seamlessly blends in with the surroundings and the inside is white, which helps make the space feel bright and spacious.

A tall order Working at such a height – 12 storeys up meant that Canopies UK had to overcome several logistical and practical challenges in order to install the canopy, which spans 37 metres in length and stands at almost six metres tall. A total of 18 crane lifts were used to move the 20,000kg of materials that were needed to build the canopy, from the ground to the top floor within extremely tight parameters. Due to the site’s central London location, there was limited space for the materials on both the ground level and up on the roof. “Thanks to our careful planning and logistics and working closely with the hotel and other contractors, we were able to work around these space restrictions,” adds Jason.

Testing times Canopies UK also had to overcome several other challenges that really put their skills to the test during the four-month project, which included increasing the overall height of the 36 metre-long canopy so that it incorporated the terrace steps. This was achieved through a combination of clever design and joining systems and by creating a Perspex-filled arc feature. And because the building wasn’t totally square with the canopy, Canopies UK made a bespoke GRP system that linked the building and the system neatly together. While state-of-the-art Hilti scanning tools and bespoke structural calculations were used to fix the actual structure to the existing roof.

The sky’s the limit “Our extensive experience and tried-and-tested processes, particularly our site-specific calculations, all really came into play for this installation,” adds Jason.

“For instance, by scanning the concrete, we were able to create a bespoke fixing method that would cause minimal disruption to the structure. It’s innovative ways of working like this, that also meant the hotel was able to stay fully open and all nearby guest and conference rooms and bar areas could still be used as the Cantabria canopy took shape. “This project really does prove that the sky’s the limit when it comes to installing one of our canopy systems. We’re extremely proud of this installation, which is testimony to the fact it’s possible to transform your outdoor space into indoor space, no matter how tight space gets or how high up you may be!” The hotel’s General Manager, Bernadette Gilligan, said: “The canopy on Wildside has been flawlessly designed to accommodate events throughout the year. “Come rain or shine, guests can enjoy everything from drinks to private events in the space as the retractable canopy - designed and built as bespoke for Savage Garden – means that the terrace can be cosy and covered during winter, and the perfect suntrap come summer.”
