Artist Philip Shaw is celebrated for his detailed wildlife works and simple characteristic portraits of children. While visiting his beloved Polzeath in April this year, Philip suffered a sudden cardiac arrest.
“Slumped at the wheel, I was miraculously found by two incredible A&E nurses, Sarah and Emily, followed by a part-time lifeguard, Ben, and his son. Many others joined in that rescue, including Melissa at the National Trust with a defibrillator, but it was Sarah, Emily, Ben, and his son who gave me 16 life-saving minutes of CPR, without them I would not be here today,” says Philip.
“The Cornwall Air Ambulance, by fortunate coincidence on a training flight, arrived within minutes of my resuscitation and whisked me to Treliske Hospital. I am forever indebted to everyone who came to my aid
that April afternoon, and to the Cornwall Air Ambulance for their extraordinary lifesaving work. Supporting their mission is something close to my heart.”

Susan Fowler is one of the country’s leading pressed flora, textile and mixed media artists, with exhibitions held in London, Cornwall and St Ives. Inspired by Cornwall’s landscape of ever-changing hues, shapes, panoramic skies and seawater currents, she selects flora from her garden and local seaweed, which she lays on silks and satins with light-catching mixed media, as pictured here in Awakening

Flora is picked from her own Cornish garden or sourced from local suppliers, with windswept local seaweed foraged from Cornish shores. These are laid on luxurious silks and satins with light-catching mixed media that includes precious stones, pearls, fishing net and shells from local fishermen.

The Cornwall Hi-Fi and Home Cinema Show, held on the 10th and 11th of October, surpassed all expectations.
Organised and hosted by HBH Woolacotts and held at the Royal Cornwall Showground, the event was extremely well received by visitors, customers and exhibitors. Since its inception in 2017, the show has continued to grow and evolve, becoming a muchanticipated fixture in the regional calendar. If you missed last month’s instalment then you probably missed my glorious introduction, in short, my name’s Martyn, I’m a chef, content creator, but more importantly, a food waste disruptor! I have spent any free time from my chaotic life exploring Cornwall, planning and scheming our future move down here.

Immersing myself in the Cornish food scene I have met some of the most amazing, creative and welcoming people I know. The food scene in London can feel very isolating and cut-throat but in Cornwall, it feels like people are more willing to collaborate and create experiences and environments that will stand the good old test of time. This column isn’t about me, but more about shining a light on some of the people, places and producers I have connected with whilst being down in the Duchy.
This issue, I wanted to introduce you to – or if you already know it, remind you of – a wonderful place called Canteen (www.canteencornwall.com). A humble old car repair shop turned eatery in Mount Hawke run by Ben Quinn and his glorious team who he will be passing the baton over to in the not-so-distant future, but more on that later. Ben says: “Canteen has always been more than a place to eat. It’s been a canteen in the truest sense of the word: long tables, shared food and a community spirit and has become a much-loved fixture in Cornwall’s food scene.”

Having performed at a fair few festivals together I somehow managed to miss any contact with Ben and his amazing team, so the family and I took a slight detour en route to Porthleven and stopped in for a bite. You’re welcomed into a big, bright space with a wicked menu made entirely from local produce, all wrapped up in a modern and inviting atmosphere. The menu is simple – three options, a veg, a meaty and a special – which is always being rotated to use what they have and allowing the chefs to be creative.
Having worked in hospitality all my life, you can quickly cut through the noise and sense if a place feels showy and fake or whether the culture of the business shines through and Canteen feels like you have walked into your mate’s house for some exceptional food and drinks. Spending some time with Ben he explained how the next chapter is underway as he passes the Canteen spoons to three of the team’s
As for Ben, he hasn’t gone far. His new life as a coach and consultant is already thriving, as he helps businesses and people find their own clarity, creativity and culture, the very ingredients that made Canteen what it is. And Cornwall hasn’t seen the last of him in the kitchen either.
Whether it’s cooking at demos, championing local food talent, or firing up the oven for special events, he’s still very much part of the county’s hospitality fabric.
“Ben has built something really special,” adds Chloe. “Now it’s our turn to keep the spirit alive, bring our own ideas and keep feeding Cornwall in the way only Canteen can.”

Cosy flavours against a backdrop of crashing waves – Cornwall’s autumn culinary warmth awaits.

Autumn is a lovely time in Cornwall. We tend to be lucky with the milder weather here than the rest of the country, but as the days cool down and nights draw in, we all like to indulge in hearty meals to warm our bodies and souls. I, for one, certainly crave stews, soups, roasts and braised dishes. I think about oxtail soup, seafood chowders, lentils, curries, root vegetables, roast dinners, pies, root vegetables, hot crusty bread loaves, crumbles, steamed puddings, all dishes that feel so comforting.

It has been so much fun to look at some of the older offerings and develop them with a new and modern take. MASSAMAN LAMB SHANK CURRY
The history of Thailand's Massaman curry stems from a wonderful mix of cultures.
The dish is popular in the south of the country towards its border with Malaysia. It's said to have been first brought over from Persia and then adapted using local flavours and ingredients from the region. In comparison to other

COOK TIME: 3-3¾ hours
INGREDIENTS
4 lamb shanks
200g waxy baby potatoes
800ml coconut milk
500ml chicken stock
3 tbsp palm sugar
For the curry paste:
8 cloves garlic, chopped
3 banana shallots, peeled and roughly chopped
3 long red chillies, chopped
2 stalks lemongrass, chopped
1 small thumb of ginger, peeled and roughly chopped
Thai curries, it's very mild. The mix of nutmeg, coriander, cumin and cinnamon is wonderfully fragrant, and it goes really well with the lamb.
Traditionally, the dish is served with jasmine rice, but as an alternative, I also like to serve it with some creamy mashed potatoes, as you would with a traditional braised lamb shank.
1½ tsp shrimp paste
3 tbsp Thai fish sauce
4 cardamom pods crushed
¼ tsp ground cloves
½ tsp ground cinnamon
½ tsp ground nutmeg
1 tbsp ground coriander
1 tbsp ground cumin
5 tbsp groundnut oil
Extra 5 tbsp groundnut oil for frying off
To garnish:
40g coriander leaves
2 red chillies, chopped
200g peanuts
50g crispy onions, shop-bought
METHOD
1 Heat the oven to 180°C and roast the peanuts on a tray for about eight minutes until they’re golden brown. Put them to the side and reduce the oven to 150°C.
2 Set a pan on a medium heat and brown the lamb shanks all over. Season with salt and put aside.
3 Put all the ingredients for the Massaman paste in a blender and blitz to form a paste.
4 Heat the groundnut oil in a casserole dish on a medium heat and add the paste. Fry for around eight minutes, until all the flavours and aromas are released from the paste.
5 Add the lamb shanks, potatoes, coconut milk, chicken stock and palm sugar to the casserole dish and bring to a simmer. With the lid on, cook in the oven for three to three and a half hours until the meat is tender and falling off the bones.
6 Season and garnish with the coriander, peanuts and crispy onions. Serve with your choice of rice.

This winter, experience Skate by the Sea at Watergate Bay Hotel. Father Christmas at the museum
Cornwall Museum and Art Gallery has released tickets for the much-loved Father Christmas at the Museum, promising a “magical storytelling and grotto experience inspired by Cornish nature.” This year the museum, which recently underwent a major transformation and aims to be a hub for the whole community, is offering a ‘pay it forward’ option to help spread the festive joy far and wide.
This December, Lowen the Elf will tell the tale of ‘A Chattering of Choughs,’ a flock of birds who come together to help the reindeer and save Christmas. Roasted veggies with whole chillies. Sweet, rich, scrumptious – ideal for the season.
Sunshine spills across the plate in this heart-warming pasta dish, where tender orecchiette meets a riot of roasted vegetables and whole chillies. New potatoes, courgette, aubergine, red onion and garlic are roasted with fresh oregano, rosemary and a splash of balsamic, while sweet, smoky Padron and Friggitelli peppers from Cornish Chillies bring the

1 First, roast the potatoes, courgette, aubergine and red onion in olive or vegetable oil for about 20 minutes at 180°C, until just beginning to colour.
2 Add the remaining vegetables and fresh herbs. Yes, the herbs will become charred sticks, but this doesn’t matter – you can add some fresh, vibrant ones at the end; we’re after flavour here.
3 Roast for a further 40–45 minutes, turning halfway through.

Cornwall’s beloved Celtic Beer Festival returns with more brews and music.
One of Cornwall’s biggest and most popular charitable beer festivals is back, and this year, there’s even more to raise a glass to. St Austell Brewery has announced the return of its iconic Celtic Beer Festival, taking place on Saturday, 22nd November 2025. For the first time, festivalgoers can enjoy a special preview night on Friday, 21st November, offering a behind-the-scenes experience at the historic brewery.
For over two decades, thousands of people from across Cornwall and beyond have gathered at the brewery for a day of great beer, live music, and community spirit - all in aid of charity.
The 2025 festival will feature more than a hundred beers from breweries across the South West and further afield, from experimental brews like white stouts and smoked pineapple ale to classic milds, bitters and lagers.
A lively line-up of musical performances throughout the day from acts such as HipHop House Band, Josh Curnow, Blonk 182 and St Austell Brewery’s very own choir, Hoppy Notes, will complete Saturday.
All proceeds from ticket sales go directly to the St Austell Brewery Charitable Trust, which supports local charities, good causes,
and individuals in need across the region. Last year’s festival raised over £12,000, with more than 1,300 attendees enjoying a day of beer discovery and entertainment. New for 2025, the preview night on Friday 21st November offers a relaxed evening for festival goers to beat the crowds, sample exclusive beers and meet the talented brewing team.
Tickets, including those for Friday’s preview night, are available for purchase online. A limited number of tickets may be available on the door, but booking is strongly recommended to avoid disappointment.
Thanks to the generosity of individuals, communities, pubs, and organisations, the Charitable Trust raised over £145,000 last year, with every penny going back into local communities where it’s needed most. Cornwall Wildlife Trust is celebrating the arrival of the first confirmed baby beavers at its Helman Tor nature reserve.
Camera trap footage has revealed the babies, or kits, exploring their new home – a thriving wetland created by their parents. For the trust, this arrival provides hope for the future of wild beavers in Cornwall. “It’s a significant moment – a sign that the habitat the beavers have created is healthy enough to support the next generation,” says Conservation Officer Laura Snell. The kits are the offspring of a beaver pair that appeared last year in unusual circumstances, following an unlicensed release. While the trust does not condone the way the beaver pair arrived, it’s hard not to celebrate this milestone.

Beavers are nature’s master builders. By creating dams, they slow the flow of rivers and streams, forming wetlands. These habitats soon become alive with activity: dragonflies skimming the water, frogs hopping through reeds, and birds swooping overhead. But the benefits reach far beyond wildlife. Wetlands naturally filter and clean our water, store carbon, and even act as sponges, increasing resilience to flooding and drought. At Helman Tor, these benefits are already visible. However, this is just the beginning, a well-planned release of multiple
beaver pairs is needed to sustain a genetically healthy population in Cornwall.
Beavers once roamed freely across Cornwall before being hunted to extinction more than 400 years ago. Now, thanks to new government licensing for wild releases, the opportunity to welcome them back is within reach. Cornwall Wildlife Trust has recently launched its Wild Beaver Appeal, raising funds for the release of multiple pairs of wild beavers into the Par and Fowey river catchments. A careful management plan has been created, considering suitable habitats and the interests of local people.
The arrival of wild kits is a heartening glimpse of what could lie ahead. With community support, beavers can return to Cornwall once again, and we can all enjoy the many benefits this native species will bring.
