CIDERS Our sparkling vintage cider apples are just pressed, then fermented twice: first in the barrel for a year; then a second year’s fermentation in the bottle. It is disgorged in the champagne style. Castledore medium-dry cider is named after the iron age fort near our orchard. It is a wonderfully refreshing, lightly carbonated cider, very clean on the palate, well balanced and a beautiful golden colour.
