TOP 7th Rise from above

here is a burgeoning question that keeps popping up in conversations across Cornwall and the world beyond. It slips into discussions with conservationists, woodland managers, farmers, writers and people who spend much of their lives outdoors. It asks where we truly belong within the natural world and whether modern life has allowed that relationship to drift out of focus. The answers seem to arrive in small isolated pockets of stewardship, in rediscovering old skills, in understanding the symbiosis of nature at a macro-level, in paying closer attention to a woodland path or a tidal creek. 7th Rise forms part of this growing movement, offering experiences that encourage people to see a familiar landscape with fresh eyes and leave carrying a stronger sense of connection than when they arrived.

One day, these little enclaves will all join up to form a cohesive collective mindset.

Set within the Tregothnan Estate, 7th Rise began with an opportunity. Founder, Thom Hunt had built a relationship with the estate while filming The Three Hungry Boys, a television series that saw him travelling from Somerset to Land's End by solar-powered milk float, living from fishing, foraging and the generosity of those he met. When an old cottage at Penperth became available, the estate asked whether he could imagine a future for it. He did. Since 2012, that original idea has steadily evolved into an accommodation and outdoor experiences business that continues to expand its ambitions without losing sight of its first principles.

Andy Blackwell joined during that first year, bringing with him a background in community arts, outdoor education and social work. His influence can be found throughout the site. Woodland materials become sculptures, pathways, seating and gathering places. Fire pits invite conversation long after daylight disappears below the tree line. Poetry appears as naturally as practical instruction, reflecting Andy's own work as a performance poet and educator. Since then, Izzie MacQueen has also joined as third co-owner and venue manager.

Accommodation remains central to 7th Rise, sitting comfortably alongside an extensive programme of activities. Guests can try archery, paddle Canadian canoes, venture onto guided bushcraft courses or explore seasonal foraging throughout the year. Green woodworking introduces traditional hand skills, while game butchery sessions follow the rhythm of the seasons, working with venison alongside pheasant, rabbit and pigeon when available. Guided canoe sessions can also be arranged, giving visitors the freedom to discover Cornwall's creeks in their own time.

The visitors themselves are equally varied. Groups of friends celebrating milestone birthdays arrive looking for memorable experiences. Families gather across several generations. Corporate teams swap meeting rooms for woodland clearings. Some choose simple self-catering breaks, while others invite 7th Rise's chefs to prepare meals using carefully sourced local produce. Cooking over wood fires becomes part of the occasion, with guests learning techniques that transform outdoor dining into something altogether more engaging than a beach or garden barbecue.

The name itself carries a meaning that explains much about the philosophy behind the business.

Thom, a lifelong angler, realised that the mornings he woke before dawn to go fishing filled him with an enthusiasm absent elsewhere in his working week.

He called that feeling his 7th rise and began asking himself why such anticipation should be reserved for Sundays. 7th Rise became an invitation to pursue the pursuits that stir genuine excitement, encouraging guests to discover what draws them eagerly from their own beds each morning.

That invitation has grown into something broader.

Andy speaks of purpose with the enthusiasm of someone who has watched hundreds of visitors arrive carrying the weight of demanding lives. Outdoor activities certainly entertain, although they also create space for reflection. Spending a day on the water, preparing food over an open fire or learning to identify edible plants often encourages conversations that seldom find room within ordinary routines. People leave refreshed, though many also return home considering how they might contribute to their own communities or reconnect with places they had overlooked.

The landscape surrounding 7th Rise enriches those conversations. Situated within one of Cornwall's temperate rainforest areas and designated as a Site of Special Scientific Interest, the woodland carries an industrial history that is less immediately visible than its moss-covered trees. Much of the forest exists because timber once supplied the county's mining industry, travelling along the Carrick Roads to fuel charcoal production. Sharing that story helps visitors understand the woodland as something continually shaped by people, industry and nature working across centuries.

A lesson in history becomes part of the adventure.

RIGHT Foraging – bridging survival skills with the culinary arts

Alongside the protected woodland, 7th Rise manages several acres where habitat restoration is already underway. Volunteers gather to improve biodiversity, restore habitats and learn practical ecology from those actively working within the sector. County Council officers, conservation specialists and community organisations have all contributed knowledge, while visitors gain a clearer understanding of how healthy landscapes recover through careful stewardship. Andy describes the site as a meeting place, bringing together people who share an interest in ecology, creativity and community action. It is an ambition already finding expression through partnerships that continue to grow.

Those partnerships extend well beyond tourism.

7th Rise has welcomed Cornwall Council's Nature Recovery Team, worked alongside filmmakers documenting habitat restoration, and hosted regular visits by homeless people who are being supported to rebuild their lives by Coastline Housing. Artists, musicians, poets and environmental campaigners also gather here, with impromptu performances becoming an accepted part of life around the fire. Andy's own artistic practice flourishes within what he affectionately describes as his forest studio, a place where sculpture, performance and woodland management comfortably share the same space.

Looking ahead, the business continues to develop new experiences, including a father-and-son retreat this autumn alongside the launch of its Community Interest Company – 7th Rise Nature Recovery. Both reflect the same conviction that has guided 7th Rise from the beginning: meaningful experiences grow from participation, shared knowledge and engagement with the living world. Visitors arrive for accommodation, canoeing, bushcraft or foraging. They leave with something much more. The knowledge that nature recovery and human recovery are intrinsically linked and possibly an answer to the question: what is it that gets them up for their own 7th rise?

The catch? You'll need to know the password. Simply order fish and chips at the bar and say the phrase "Taste of the Coast" to unlock a free pint of the awardwinning Cornish lager, served perfectly chilled. The initiative has been designed to add a touch of summer fun to pub visits while celebrating a pairing that has become synonymous with the Cornish coast.

"Everyone loves feeling like they've discovered something special, so we wanted to create a fun secret menu offer for our guests this summer," says Gareth James, Operations Director at St Austell Brewery. "Nothing complements fish and chips better than a crisp pint of korev, and now anyone who knows

the magic words can enjoy this classic pub pairing, topped off with a free beer. We're encouraging people to share the secret with family and friends and make the most of a great value summer treat."

The offer also supports a good cause. For every portion of fish and chips sold during the promotion 25p will be donated to Children's Hospice South West, the St Austell Brewery Charitable Trust's Charity of the Year. Alongside the secret menu, guests spending more than £75 in a single transaction this summer will receive a voucher giving them 20% off their next visit, redeemable within seven days.

s you'll have gathered from my monthly writing, most of my adventures in Cornwall come from saying yes to things. I don't do restaurant reviews per se as I think food's too subjective, too tied up in personal preference. I mean, I love spam and jam, but if I put that on a menu I reckon it would get one star across the board. So, this isn't a review; it's a love letter. And, without giving too much away, there wasn't a single thing on any plate I'd have changed.

The Tolcarne came recommended by about 20 internet strangers when I put a call out for foodie recommendations. But the clincher was a new internet friend who sent me photos of three previous meals there, spaced roughly six years apart; this was a serial repeat customer who lives nowhere near the place.

When someone keeps coming back across the best part of a decade, you pay attention. So, I figured I'd better get down there and see what the deal was.

FOODIE I arrived after a glorious walk along the prom from Penzance, rolling in around 6pm to find the restaurant side already full and the bar side buzzing with people guzzling pints of Offshore. To blend in, I ordered one too, sat down, and picked up the menu. There's a weird chef-y sixth sense you build up you when you read the description of a dish, visualise it, and roughly taste it in your mouth before it arrives. Years of cooking and recipe development do that, and it's brilliant for decision making in restaurants. Except here, it rather backfired, because the whole menu read and tasted in my head so good, that I wanted to order the lot. Classic ways of doing things with subtle twists, all done just right.

I reckon bread and butter should be compulsory at any restaurant. That first step tells you everything about what's coming. I've done enough big catering jobs to know that a torpedo-shaped bread roll has come straight out of the freezer and was somebody's afterthought.

What arrived here were homemade wedges of joy; soft, warm and crunchy served with a rich, salty butter.

Off to a belter. Yes, I'm easily pleased. But remember: the bread sets the tone.

For starter, I went for the crispy Sennen squid with tahini mayo and sweet chilli, plus the home-smoked chalk stream trout. Normally, sweet chilli on a menu reads as a token-gesture sauce but the tahini mayo had me intrigued. The squid arrived and the sweet chilli wasn't your generic jelly-like stuff; it was a thin, tangy number that had me sinking into my chair, relaxing further into the evening, trusting that the kitchen had control of everything reaching the table. There was crushed spice through the batter too, cumin and coriander seeds, popping in the mouth. It's a trick I've since nicked to add a bit of extra punch to my own batters. Alongside the tahini and chilli, it was so good I could've eaten three plates. The trout was simply plated horseradish cream and malted bread. A classic combo, and it did not disappoint: soft, buttery trout against the punchy horseradish and the deep, savoury notes of the malt. Yes please. Another pint of Offshore was ordered.

On to the main event…the hake. If something's smoked, I’m straight in and am a huge beetroot fan (even if it didn't make the cookbook; the editor decided against giving it a standalone chapter). If I see it, I order it. The dish was a whole dictionary of adjectives and expletives.

The hidden treasure I'd missed when ordering, was the onion purée, tucked under the fish and out of sight.

I loaded a fork with a bit of everything to get the full experience, and it smashed me in the face with joy. As the flavours bounced around, I found myself asking for the menu back like that meme of Leonardo DiCaprio in Django, leaning forward, wagging his finger. And there it was, the bit I'd missed: the onion purée. Smooth, creamy, slightly smoky. Not there just to look and sound clever, it was the thing tying it all together, bridging the subtle sweetness of the beetroot and the warm, salty nuttiness of the hazelnut, bacon and butter. A thing of great fun to eat. And when fish is cooked well, nothing beats it. I'm writing this four months on and I can still cast my mind back to those big flakes of hake peeling away from the crispy skin. Cooked to perfection.

Dessert was against my better judgement I'm usually a starter–main–starter kind of person. I don't have much of a sweet tooth, but the buttermilk panna cotta was calling. When I learnt to make panna cotta on my cookery course, my poor family became guinea pigs for endless tragic versions. Too much gelatine and it's a creamy jelly rank. Not enough and it's slop. But get it just right and it's a thing to behold. This one was a ten out of ten: another classic combo with a subtle twist and a nod to my food-waste vibes with a whole orange, its subtle bitterness poking its head through what's usually quite a sweet pudding.

So, there it is. I said yes, I walked the prom and I'd happily do the whole thing again tomorrow.

ituated in the heart of Polzeath, Whitewater specialises in painting, sculpture, handmade print and ceramics by both emerging and leading contemporary artists like Michael Porter, who has lived and worked in Cornwall for three decades. Michael is known for his extraordinary interpretations of the landscape. His artworks are drawn from the overlooked minutiae of our environment, from a single pebble embedded in the ground, to an autumn leaf drifting across a body of water, or a tangle of roots or twigs.

He was born and raised in the rugged and beautiful scenery of Derbyshire, and went on to study at Nottingham College of Art, Derby College of Art, and Chelsea School of Art. He became a Fellow of Gloucestershire College of Art in 1973 and worked at his London studio for more than twenty years before moving to West Cornwall in 1997. Wherever he has lived, from the forested landscape of Derbyshire to the urban heart of Bow in East London, Michael’s creative focus has remained firmly on the wonders of nature. “I can’t see how anyone exists without nature,” he says.

“I know people who have lived in the city the whole of their life, but I couldn’t do that. There was no nature at all in Bow, so I used to go back to Derbyshire every few weeks with my camera, for inspiration. When we moved to Newlyn, I started to explore the nature of this place, and it was strangely familiar. The landscape towards St Ives is similar to the landscape of Derbyshire, all rolling green and exposed granite edges.”

Michael now occupies a large studio on the quayside, that was once a working fish cellar. He spends his time walking the coast path, taking photographs and collecting natural objects as source material for his paintings. Michael’s intense engagement with the landscape is based only on locations that are familiar to him. “I have to have a history with a place to paint it,” he says. “That is a constant that runs through all my work.” On his walks, Michael picks up odd stones, shells, seaweed, and other everyday things. “I like the idea of taking something ordinary and showing people that if you look closely, there is beauty in it.”

Back in the studio, he makes intensely figurative paintings of these objects, often placing a stone or shell on top of a flat canvas and painting it directly from life. “I am always looking for the simplest way to interpret the thing I am looking at,” he says, “a stone for example, that says something to me in the way the light shapes it.” He then paints over this first image in layers, pairing precise figuration with a free-flowing mix of oil, acrylic and watercolour “so you are looking through to the image, just as you do in nature. When you walk through the landscape you see it in layers – you see one tree, and then another behind it, and then another.

That’s what my work is about.”

Michael’s skill as a painter, and his experimental approach to building the image, have made him one of the UK’s most respected artists. Over his long career he has received awards including the National Gallery Artist-in-Residence Award, the London University Lorne Award, the RWA Odin Award, an Honorary Doctorate from Derby University, and an Honorary Fellowship of University College Falmouth, but he sees his impressive career in more understated terms: “What I am doing is simple” he says. “The objects that I find in a place, that define a place, that’s what fascinates me - those things, together with my memory of a place gathered over many years. If I can communicate a little of that in my work, I call that success.”

VISIONS Terre Verte Gallery in Altarnun has built a reputation for exhibitions that invite visitors to look more closely at the relationship between people, landscape and imagination.

Established in 2014 and named after the historic green earth pigment, the gallery presents contemporary artists whose work explores identity, the environment and the dialogue between painting and writing.

This summer, Treeology runs from 23rd July to 22nd August, bringing together Bettina Amtag, Katie Bliss, Claire Winfield, Ruth Bateman, Tina Kutter and Richard Sharland in an exhibition examining the presence of plants and trees. From 3rd September to 3rd October, The Dragon’s Back and other stories sees artist and dowser Pete Bousfield chart Bodmin Moor through observation and experience. The gallery is open Thursday to Saturday, with appointments available at other times.

A Cornishman born and bred, Mark Lord has come home with fresh purpose, exchanging years inland for a studio near Falmouth where the sea once again shapes his working day. His lino prints draw from the harbours, coves and working waterfronts of South Cornwall, capturing the character of places whose stories are written in stone quays, weathered boats and the people who earn their living from the tide.

Each carved image carries the confidence of careful observation, informed by a long career behind the camera and an instinct for strong composition.

Working with traditional hand tools, Mark carves every design before inking and printing by hand, giving each piece its own subtle individuality.

A SEARCH FOR BALANCE Since graduating from Falmouth Art College in 2006, Victoria Smith has been painting independently from home. Now working in acrylics and household paint, Victoria describes her coastal-inspired abstract works as a search for a balance; a stability of space and form fabricated by a process of layering and generating illusory depth.

She says, “The making of my work is a visual satisfaction and, for me, a therapeutic process.”

Victoria has previously exhibited in France, Basingstoke, Suffolk and currently in Cornwall at Lizard Art, Trelowarren and The Bedruthan hotel.

ornwall has long been described as 'almost an island’. The Elizabethan writer and antiquary Richard Carew described it eloquently when he said that Cornwall was 'so besieged by the ocean it forms a demi-island within an island.' I used this premise as a starting point to produce a body of work that centred on the use of found materials, both flora and mineral in origin, to produce a colour chart of pigments,” says Ian. Ian’s natural colours are derived from the minerals that brought early prosperity to Cornwall during the mining of copper and tin, samples of which are collected during field excursions, with the help of the Camborne School of Mines. The flora that floods the seasons with colour across the county throughout the year is collected from the north coast by gallery owner Liz.

island His colour chart features 20 handmade pigments presenting a spectrum of Cornwall's nature presented on high-quality paper. “To complement this, I have produced 40 additional pieces in a variety of media for the show this coming September,” explains Ian. This new body of work will reflect Cornwall’s environmental diversity, from the white sands of its dazzling coasts and sweeping moorland to several botanical-themed works based on the sourced flora used in the original natural pigments. The exhibition will feature many abundant and familiar colours from the butter-yellow flowered gorse to the delicate pink blooms of the red valerian, known locally as Padstow's pride. Oak-derived inks and local clays have been used extensively across many pieces to add to the sense of place.
