Bluefin tuna will take pride of place on his summer menus at both Kota and Kota Kai this season, turn to page 58 for an example of one of Jude’s delicious ways to prepare this fabulous fish.

Cornwall Hospice Care is delighted to announce that their shops and donation centres have achieved their greatest ever profit! In the last financial year, the Cornish charity’s retail team have collectively raised a massive £1.65 million towards the cost of providing care at Mount Edgcumbe Hospice, St Austell and St Julia’s Hospice, Hayle. Paul Brinsley, Chief Executive of Cornwall Hospice Care shared: “Huge congratulations to all our staff and volunteers, who make our retail operation so successful and a big thank you to the people of Cornwall who donate to us and shop in our stores. This is a bigger contribution to our care costs than that provided by our local Integrated Care Board. That seems wrong to me, when we’re offering a vital healthcare service that in turns saves the NHS money.”

Cornwall Hospice Care have 30 charity shops from Penzance in the very west to their most northerly in Bude, and from Perranporth on the north coast to Looe on the south coast!

As well as your usual high-street charity shops they have dedicated furniture shops, bargain outlets and Retro vintage stores in Falmouth, Launceston and St Ives. You can donate your items to them through their dedicated donation sites, and they even collect furniture donations directly from you!

Lifesaving hub for young women

Suicide rates in young women under 24 in the UK are the highest they’ve ever been since recording began by the ONS in 1981. In July 2020 Georgia Gallaway, aged just 19, tragically took her own life. In the wake of devastating heartbreak for the loss of her beautiful daughter, Georgia’s mum, Sophie Alway, vowed to help as many young girls as possible to stop this from ever happening again. As a result, Sophie founded Georgia’s Voice.

Georgia’s Voice is a suicide prevention charity based in Cornwall offering fundamental emotional support to young women aged 18-25 with mental health concerns, such as member Katie (pictured). Free weekly support groups offer a vital opportunity for young women to receive emotional support using a variety of methods.

Who are Home-Start Kernow?

Due to domestic violence, Anna, was forced to leave her home with three young children, all under five. Living in a new area with no nearby family support, she found herself isolated and struggling to cope.

Home-Start Kernow matched Anna with a volunteer, who visited her each week. This volunteer helped with household tasks and provided emotional support. Additionally, they assisted with paperwork related to her child’s disability.

Home-Start Kernow referred Anna to other support available locally and despite initial reluctance, she accepted referrals to the foodbank as well as emergency funding for essentials. Six months on, Anna was growing in confidence and had made connections in her area.

Now is the best time to get solar PV installed in time for summer.

With renewable energy at the fore of many of our minds we spoke to GreenGenUK for some advice on solar installations and why they are good for both the planet and your pocket. Solar PV systems use sunlight to generate electricity, making them a sustainable, renewable and inexhaustible energy source. So, how can you maximise the benefits of your solar installation? Energy typically exported to the grid is instead stored in a battery bank. This stored energy is then utilised to offset grid demand during evenings or overnight, resulting in additional energy savings and a reduced carbon footprint. Using such a system to generate your own energy can lead to substantial savings on annual bills and any excess electricity can often be sold back to the grid, further offsetting costs.

By substituting grid demand with renewable solar power, solar installations markedly decrease the carbon footprint of a home which can be several tones annually. The Smart Export Guarantee compensates customers for surplus solar energy they send back to the grid. For instance, if a home generates 4kWh but only consumes 2kWh, they not only offset their energy bills but also receive payment for the remaining 2kWh of unused energy.

Bespoke premium Solar PV systems can be scaled to meet a wide range of energy needs, from small residential set-ups to large

commercial installations, with homes and businesses with solar PV systems often seeing an increase in property value due to the appeal of lower energy costs and environmental benefits.

FROM THE SEA FRESH

Looking forward to the freshest catch this summer.

With the onset of summer, comes a lightness of ingredients and what I’m really excited about this year is the coming of the Atlantic Bluefin tuna season, where these majestic beasts are now fished from Cornish waters. What was once considered an endangered species has come back and is being seen in abundance around Cornwall. The rise in stock of bluefin tuna has been phenomenal, and so last year, DEFRA granted just ten licences to fishermen to line-catch bluefin tuna for the first time in decades – eight of which were granted to Cornish boats. We've had a lot of incredible sightings of tunas, breaching and chasing their prey all around the Cornwall coast and I’m really super-excited that my kitchens will have access to this amazing product. What could be better? It's sustainable because it’s line-caught cord and it really fits into my light and bright style of cooking.

Fine fishermen go out and line-catch these beasts of the sea, sometimes battling with them for a couple of hours trying to reel them in – some have reportedly been tipping the scale at an incredible 454 kilos! These really are substantial fish, usually coming in at up to 260 kilos, so I’m going to be looking at adding a tuna section to both of my restaurant’s menus, to allow me to use as much of the fish as possible, all while supporting the amazing fishermen who catch them. I feel that my duty as a Cornish chef and restaurant owner is to

try and buy as much tuna as I can to stop them having to travel too far. Diners can expect to see fresh tuna, tuna ceviche and some sesame crust tuna; as well as delicious tuna steaks and the ever-popular tuna salad. For me, it’s about showcasing a product that we are all superexcited and proud of.

It's really important that fresh tuna is looked after carefully as soon after it has been landed as possible, and in fact, it benefits from being aged as you would beef. The ideal temperature for ageing a fish is between 1-6 ˚C as any lower can cause ice crystals to form thus damaging the flesh of the fish, whilst any higher would cause the fish to rot. In Japan, tuna is usually aged for seven to ten days by the fishmonger before being sold to a restaurant. The restaurant can then continue to age the tuna for three to four days and up to a week if the tuna is extra fatty.

The cooking of tuna brings with it many traditions, all paying homage to this beautiful fish. In Japan, bluefin tuna head meat, also known as the 'Zumiko', is famous for its succulent texture, which has a great balance between flesh and fat and is wonderful seared on a barbecue. I’m going to pay my own culinary respects to our Cornish tuna and have some wacky ideas about utilising the whole fish; from the more muscular bits, which will have some chewy fibres, to the softer belly each piece will need to be utilised in the right way. The end result will be dishes that are so

fantastic and fresh from local waters – I’m hoping that this will be a true tuna education for all!

There is no doubt that the Japanese-style of preparing tuna works really well; we should take note of how the nation prepares their fish so beautifully, treating it with such respect. There’s perhaps nothing better than tuna sashimi, dipped in the best soy you get, accompanied with a little fresh grated wasabi and ginger on the side; or a simple, freshly diced tuna tartare is incredible too. Even though I love bluefin tuna fresh and uncooked, I still love a pure tuna steak that’s been cooked beautifully. Serve with a mix of chargrilled summer vegetables (asparagus is especially good with tuna) and a light summery dressing or you could build a Japanese-style salad with seared tuna.

Our Josper grill is perfect for searing tuna as it runs at 400˚C. Searing the tuna at this superhot heat gives it an instant smoky flavour while retaining a beautiful rare centre and as you let it rest the heat penetrates through the layers of flesh. Serve with a dressing of soy, yuzu or lemon and a drizzle of sesame oil.

TUNA TATAKI WITH MANGO GINGER DRESSING

AND SALSA FRESCA

I'm proud to offer bluefin tuna in my restaurants as the quality is just superb, and I'm so lucky to have such amazing ingredients on the doorstep.

SERVES 6

INGREDIENTS

1 kg piece of tuna loin (bluefin if possible), cut into rectangle shapes

80g white sesame seeds

80g black sesame seeds

Sea salt

Rapeseed oil for cooking

For the Dressing:

1 ripe mango, peeled and destoned

1 thumb of ginger, peeled and chopped

1 red chilli

3 lime, zest and juice

50ml fish sauce

50ml rice wine vinegar

30g palm sugar

30g coriander leaves, chopped

METHOD

1 Start by making the salsa. Simply combine all the ingredients in a bowl, though I recommend not adding all the Jalapeno at once. Perhaps add half and check you're happy with the heat before adding anymore.

2 To make the dressing, add all the ingredients into a blender, except for the oil, and blend until smooth. Next, pour in the oils and mix to form an emulsion. The quantities here will make more than you need, so set aside the extra to use as salad dressing for another meal.

This dish offers a great way to enjoy it with very little cooking needed. To make this dish really sing, do your best to source bluefin tuna.

50ml toasted sesame oil

350ml rapeseed oil

Salt and white pepper

For the Salsa:

3 tomatoes, skinned, pulp removed, finely diced

1/3 cucumber, peeled, pulp removed, finely diced

½ red onion, finely diced

30g coriander, chopped

2 lime, zest and juice

1 green Jalapeno chilli, finely diced

Salt and pepper to taste

For the Garnish:

2 red chilli, sliced

50g coriander leaves

6 pink radishes, thinly sliced

3 Combine the sesame seeds and salt on a tray. Roll the tuna portions in the mix, shaking off any excess seeds and place on a plate ready to cook. Cook the portions in a frying pan on a medium heat with a little oil. You just want to colour the seeds slightly, then turn the portions over to cook briefly on the other side. About 40 seconds on each side is a good guide. When they are done, leave to rest for a couple of minutes.

4 To serve, slice the tuna and arrange onto plates. Drizzle the dressing in between the tuna slice then do the same with the salsa. Garnish with chilli, coriander and radishes.

Summer seems to have finally arrived at the Rock Distillery, and it's embracing the spirit of the season by developing some fabulous new drinks

With the opening of four new fabulous shops, Rock Distillery have embarked on even more new products, offering a delightful combination of flavours to add to their extensive range of spirits. They have decided to venture into a new whiskey liqueur journey. All of the new offerings are based upon the splendour of their Rock Single Malt Whiskey, fermented and distilled using single pale malt and then matured in ex-French Red wine barrels at an ambient 21°C for three years. The resultant mix is then blended with Cornish spring water ensuring paramount smoothness and a full malty flavour.

Their Peanut Whiskey Liqueur is derived from this three-year-old single malt, distilled with peanuts. ith the UK’s ever-increasing use of online technology, scammers are becoming more problematic and scams are widespread. Although some scam emails, texts and phone calls are relatively easy to identify, there are also many which are sophisticated and look genuine, leading to many unsuspecting people falling foul.

Plenty of scam emails will bypass the spam settings in your email account, and scams can be hard to spot especially when you are expecting an email from an account purporting to be from a recognised establishment such as HMRC or Companies House.

As the UK has just started the new tax year for 2024/25, HMRC have been sending genuine emails to customers, as they are moving towards a more paperless approach.

Unfortunately, scammers are well aware of this, and are using it to their advantage in the

hope that their emails will be mistaken for the genuine HMRC correspondence.

HMRC will never ask for personal or financial information when they send text messages or emails, so if you receive notifications asking for such information you should assume they are scams. If you are due a tax repayment from HMRC, they will send this to the designated bank account details they hold for you (if this was provided on your tax return), or they will send a cheque.

HMRC will not contact you for your bank account information. Never click on a link in a text or an email which states it will take you to a website to claim your tax rebate.

If you have received correspondence from HMRC and you want to check it is genuine, you can visit your HMRC online account. Details of your current tax position will be shown there, and you will be able to view any repayments due to you. If you don’t have an online account, you can set one up quickly

As discussed in our previous article, Companies House has recently announced changes to UK company law, with the introduction of the Economic Crime and Corporate Transparency Act. This announcement has given scammers another opportunity to extract information from unsuspecting individuals, by feigning to be officers from Companies House and requesting information such as director’s personal information, identification, company authentication codes along with bank details.

As well as electronic scam attempts, letters are being sent in the post to the registered office of newly incorporated companies, asking for payment to complete the registration or to keep the details secure. Companies House fees for forming a new company will always be payable at the time of formation and any request for further payment should be treated as a scam. Companies House prices can be viewed at https://changestoukcompanylaw. campaign.gov.uk/changes-to-companieshouse-fees/.

Companies House issue penalties for late filing of certain statutory documents, such as annual accounts. Companies House will not contact you by telephone for immediate payment of these penalties; even if you have incurred late filing penalties, do not trust these calls.

One of the most important things you can do to keep your company details secure and limit the threat of scammers is to keep the company authentication code secure and use the secure WebFiling system at Companies House for any changes and updates required. If you think the authentication code has been compromised, you can change this online through the WebFiling system.

It’s important to be as vigilant as possible with regards to phishing and scams, for individuals and companies alike. As well as the financial loss that can be incurred if bank details are shared or fraudulent payments made, identities can be stolen and used for illegal purposes. Taking a sceptical view and challenging correspondence is the best way to avoid falling victim to fraudsters. Don’t divulge information or make payment if you are contacted – delete the email or hang up the call, and contact Companies House or HMRC yourself by using your online accounts or verified telephone numbers.

Justin’s ethos has always been to make jewellery that means something to the wearer. “There are so many ways of making your piece personal to you,” he continues. “We recently made a memorial ring for a beloved pet dog, the gold and gemstones were chosen to reflect his colourings and cast in a mixture of his ashes and sand from his pawprint from his favourite beach on his very last walk. Often, it’s as simple as carrying on a legacy of love through a wedding band made from grandparent’s rings.” They’ve made some amazing commissions from inherited cocktail rings too – often letting the materials guide the creative journey, resulting in truly captivating and bespoke commissions that resonate deeply with their owners.
