love this edition of Cornwall Living. It’s when we get the chance to experience some of Cornwall’s finest spas, immersing ourselves in hot tubs, embracing the warmth of a sauna and being treated to some therapies designed to relax and revive. Turn to page 20 to read our cover feature on some of the best places in Cornwall to spend time being pampered. This is also the time of year when we start to hear wedding bells! Our special weddings supplement has a great selection of reception venues, photographers, jewellery, gift ideas and more. So, if you’re planning on saying ‘I do’ any time soon then be sure to turn to page 67 for some inspiration. We’ve also been on our travels, spending an idyllic weekend on the Isles of Scilly (from page 112), discovering this enchanting archipelago from the island of Bryher. Our time was filled with some wonderful walks as well as lots of foodie treats. Keeping with the foodie theme, our media assistant, Bethany Allen has been in conversation with chef, Glenn Gatland (page 100). He spent ten years working on Scilly before taking up the position of Head Chef at Una St Ives, bringing his expertise in wood-fired cooking back to the mainland. I can’t wait to try some wood-fired cuisine there very soon. We couldn’t let an edition of Cornwall Living go by without showcasing some of Cornwall’s finest properties – whether that be homes on the market (page 27) or fabulous places to stay (page 57) – and interiors inspiration abounds from page 44. I would suggest sticking on a pot of coffee, putting your feet up and spending a nice relaxing hour or two immersed in the ultimate lifestyle by the sea. Until next month...happy reading!

We hear from Jewellery Designer Sarah Corbridge who tells us: “Your wedding rings say a lot about you as a couple and they need to last a lifetime.” Wearnes Cornish Tin & Gold collection is an exclusive fusion incorporating historic tin mined in Cornwall and salvaged from a shipwreck, which lay on the seabed for more than 140 years. Invented by Sarah, a fourth generation Wearne’s family member and Cornish jewellery designer, while its purity is the same as any 9 and 18ct gold, its value is unique, as every wedding ring contains a little piece of Cornwall, rescued from the ocean’s arms. Therefore, if Cornwall holds a special place in your heart, then these rings are a beautiful way to commemorate that, as the continuous bands of gold symbolize everlasting love, as well as a love of Cornwall. Drawing inspiration from the Cornish coastlines and magnificent countryside, Sarah’s luxury and bespoke rings are an iconic Cornish invention designed in the Wearnes workshop in Falmouth.

Seasonal SOUP
As the seasons change, a bowl of hot soup, made from hearty autumn produce, is the just the thing. TOM HUNTER'S JERUSALEM ARTICHOKE SOUP WITH SMOKED HADDOCK
SERVES 4 INGREDIENTS:
E
xecutive Chef at Bedruthan Hotel, Tom Hunter, shares one of his favourite soup recipes, Jerusalem artichoke soup with smoked haddock. “This dish is a fantastic combination of avours, says om. ery simple, but also impressive. Great as a starter or a light lunch with some fresh bread.
METHOD 1
First, peel and slice the artichokes. Add butter to a large pan and sweat the onion, leek and celery over a gentle heat until softened.

Add the artichokes and continue to cook for a further 10 minutes or so. Just cover with water and bring to a simmer. Cook until the vegetables are very soft, then add the cream.

Poach the smoked haddock in the milk over a gentle heat for about 4-6 minutes until cooked.

n an interview with Head Chef Glenn WORDS BY BETHANY ALLEN Gatland, we hear all about his and the Una Kitchen story. Glenn trained as a chef at St Austell College in the late 80s and started out as a commis chef at The Wellhouse Country Hotel, where he learnt what it takes to maintain three AA Rosettes and worked his way up from commis to head chef. Glenn tells us: “In 2007, I left The Wellhouse and spent ten years on the sles of cilly. For the first five years I looked after Hell Bay Hotel restaurant on ryher and was the first head chef there to receive three AA Rosettes. Then over the ne t five years took up a developmental role looking after three fairly busy restaurants on Tresco Island and raised the level of food there too.” It was during his stint on Tresco that lenn was introduced to wood-fired cooking Cooking at uin each Caf with a wood-fired oven was when I learnt to make the switch from fine dining to wood-fired cuisine, that was six years ago and I haven’t looked back since Wood-fired cooking takes it back to basics – real caveman cooking.” When lenn first considered moving back to Cornwall, Una Kitchen was still in its edgling stages and although there was talk of introducing a wood-fired oven during initial

designs, it wasn’t a sure thing. “When I arrived in March last year the restaurant was a blank canvas, alongside the architects and designers I had input with the kitchen layout, and then in July they pulled the pin and installed a wood-fired oven. t was a bit of a leap of faith but now it’s the entire focal point of the restaurant.” As you enter Una Kitchen, you’re greeted with the beautiful ickering ames from the wood-fired oven creating a warm atmosphere within which to enjoy your food and a mouthwatering menu to boot. Glenn continues: “They’re not just pizza ovens, it’s true that you can’t replicate a pizza that’s made in a proper wood-fired oven, but it also does so much more. 50% of our menu, including meats, fish and vegetables are cooked in our woodfired oven. t adds a subtle smoky avour that perfectly fits in with our editerranean vibe.” Plus the oven itself, as Glenn says, “is the olls oyce of wood-fired ovens , made by a company called Gozney – it's the elite in wood-fired oven design. lenn continues “It’s certainly a step up from the rustic French version I was using before and is an amazing piece of kit, especially as the winter months start to roll in, you can see the ames from reception as you walk in. It’s like walking into a pub with a roaring fire but it’s our Mediterranean version.” Both in terms of cuisine and atmosphere, Una Kitchen embraces a relaxed editerranean vibe there’s no stu ness and you’re ust as welcome in ip- ops and beach shorts as you are in your Sunday best. Una Kitchen has come an extremely long way since opening in March last year and

the team’s main aim is to provide a tranquil place to escape the hustle and bustle of St Ives, especially during peak season. When discussing other aspects of the restaurant, Glenn tells us: “It’s not just about the food, we also have a great front of house team, and we’re very aware that although food is important, how it’s delivered and how people are looked after when they’re here is also integral to our success. A lot of restaurants in Cornwall clean up the seasonal market and then close their doors in October but we aim to accommodate the local market as well.” With this in mind, Una Kitchen has an exciting events calendar over the coming months, commencing with a ‘St Ives Beer and Pizza Night’ on 18th October. Una Kitchen provides a modern Mediterranean vibe and a warm and welcoming atmosphere that accommodates everyone, including man’s best friend. Warm your cockles with this mouth-watering duck cassoulet dish bursting with flavour and deeply satisfying. PENROSE KITCHEN’S SLOW-COOKED DUCK CASSOULET WITH CARAMELISED ONIONS, PRIMROSE HERD HAM HOCK, SAUSAGES AND BACON.
SERVES 4-6 INGREDIENTS: 1kg haricot beans 1kg primrose herd ham hock
P
enrose Kitchen is an award-winning restaurant on the outskirts of Truro. Serving a prestigious menu packed full of freshly cooked seasonal produce, the restaurant champions delicious food and drink, coupled with great hospitality and served alongside the beautiful surroundings of tranquil lily ponds. This recipe promises to be a warming meaty feast, full of avour and e quisite produce.
METHOD 1
In separate bowls of cold water, soak the dried beans and ham hock for 12 hours, changing the bean water three times.

In a large frying pan, heat 30g of the duck fat over a medium heat, add the onions and cook slowly until caramelised, about 10-15 minutes.
55g of duck fat 4 large onions, chopped 12 cloves of garlic, large, thinly sliced 800g of carrots, cut into 5mm thick slices 1 large onion, cut into quarters

2 bay leaves 1 sprig of thyme 4 primrose herd pork sausages

4 small Cornish duck legs 800g unsmoked primrose herd bacon, cut into rashers 1cm thick tbsp at leaf parsley, chopped Cornish Sea Salt, to season Freshly ground white pepper 100ml red wine

Reduce the heat, add the garlic and cook for a further minutes, or until the mi ture is close to a purée consistency. Remove from the heat and set aside. In another large saucepan, place the drained haricot beans, ham hock, carrots, onion quarters, bay leaves, thyme and red wine. Cover with water, about an inch above the beans. Bring to the boil, then reduce the heat and leave to simmer for 1 hour during this period. Drain the beans, reserving the cooking liquor, and place into a large bowl. Discard the herbs and onion quarters and remove the bone from the ham hock, reserving the meat.
TOP TIP The cassoulet is ready when the crust is deeply caramelised and a knife goes through the beans easily when inserted. Sprinkle with the chopped parsley and serve.

Heat half of the remaining duck fat in a large saucepan, over a high heat. Once hot, add the sausages and cook until browned all over. Remove the sausages and leave to drain on kitchen paper.

In a large earthenware cassoulet dish, spoon the bean mi ture in. dd the sausages, duck and back bacon rashers.

Pour enough reserved bean cooking liquor over the top so that everything is just covered.

Preheat the oven to 150 °C/ gas mark 3

Cook for 4 hours but check after 2 hours to ensure the liquor hasn’t evaporated, if so top it up with a little water.

I
f, like many, you’ve watched an episode of Poldark recently, you may wonder what life would have been like for Cornish miners working at the height of the industry. A visit to Tolgus Tin Mill offers a colourful insight into the men, and children, who worked there. Now part of the Cornwall Gold site between Redruth and Portreath, the little mill above the stream has been in action since 1865 and is at the heart of a renovation project to preserve its historic heritage. This was the over ground operation of the mining industry where local mining waste and tin ore from sand and river deposits were filtered for every last bit of tin that could be smelted and used. “Workers would spend up to 15 hours a day, hand sifting other people’s rubbish,” explains Cornwall Gold’s Steve Ackland. Today, the mill is the last original tin streaming works in Europe and tin is still smelted at Tolgus and mixed with silver and gold to produce the stunning Tolgus collection. Proceeds from this range of jewellery are then reinvested back into the mill, ensuring its restoration continues and its future is safeguarded. On your visit look out for the only set of original Cornish stamps left in existence, which are more than 150 years old and learn
about what life was like for workers who toiled in back-breaking conditions to extract the smallest quantities of tin. While Tolgus was undoubtedly a safer place than Cornwall’s underground mines, to wander through the mill is to remember how hard and dangerous the work could be. It’s noisy, dusty and wet. “Children were expected to follow in the footsteps of fathers and grandfathers, and would be placed on duty in the slime pits or under the frames. It’s a form of labour that would be unthinkable today”, says Steve. “Kids that visit us now are amazed at the harsh conditions, and it makes going to school look a lot more appealing!” After exploring this bygone age, we’d recommend a spot of retail therapy in the beautiful Cornwall Gold showroom, before heading to their Cornish Pantry, where you can enjoy some amazing Cornish dishes, including the award-winning breakfast, which is served on a traditional tinner’s shovel!

ESCAPE After hearing word of an experience like no other, we paid a visit to Escape Time St Ives, a live escape room game experience, to see what all the fuss was about.

s we arrived at Escape Time St Ives, we were greeted by Jimmy, our extravagant host. After leading us into the briefing room, he ran us through the rules of the game and showed us a quick video, and before we knew it we were all set to take on Prison X, one of two games available. The basic premise of all escape rooms is in the name and for us, our challenge was to do so within an hour. As the title suggests, Prison X resembles a prison cell, and rumour has it that escaped inmate Trevor Ashcroft has left some clues behind as to how he got out. With the guards having relaxed in their duties of late, now’s the time to make your attempt for freedom! We had to solve a series of challenges based on what we could access in the room. Some were physical, others mental, but all of them were up against the clock. As the Commercial Team of Engine House Media we felt like we had a good chance of cracking this one, firmly believing in our ability to work together, but Prison X was a challenge unlike any we’d faced before. Our team of six quickly got to work and without any clear direction, decided to break into three teams of two, each taking on a separate task. We did need some help, and Jimmy was all too happy (if not a little cryptically!) to oblige, listening in and dropping the odd hint over the hour to keep us on track. As the ticking clock began its crescendo into the last five minutes, things really began to get quite tense, but with 30 seconds to go we finally managed to solve the pu le and escape to freedom. Unfortunately we didn’t get to try The Chocolate Factory, the second available game, but we’ll certainly be returning to see if we can escape that too. Having malfunctioned and run out of ingredients, with an absent owner and all ingredients locked away, the aim at he Chocolate Factory is to fi the machine before it runs out of stock. Sounds exciting, and delicious! An experience here would make a fantastic gift for those looking to ma imi e their time in Cornwall, and would certainly make an
exciting way to mark a special occasion or a great activity for when the weather’s not so fair, so if you’re looking to fill your autumn winter itinerary, why not visit the website and book your experience?

or those with busy lives trying to arrange a weekend away and find a date that suits family, work and animals can be a challenge. Add to the mix the unpredictable nature of the great British weather and the challenge becomes very real. Had someone told me we could make this happen, with hotter weather than the Mediterranean, I’d have answered: “Yeah right! And England will win their quarter-final against weden in the World Cup!” They did and so did we, but for us that was only the start of an amazing adventure. With the stars aligned and all children, dogs, cats and horses accounted for we set off in the early part of this summer on an amazing cilly adventure. Flying to the cillies on the kybus from Land's End is, in my view, the only way to travel to the islands. As you leave the mainland behind, with the Longships lighthouse in the distance, each passing second of the short minute ight sees your worries and stresses just slip away. houlders drop, frowns disappear and a
sense of peace and tranquillity takes hold as t ary’s approaches. s if by magic the whole world changes and becomes a much better place. On arrival we are collected from the airport by the resco huttle team who transfer us to t ary’s quay and our boat transfer to Bryher. There’s nothing quite like the sights, sounds and smell of the quayside to make you feel ‘at home’ on cilly salty air, a ure blue skies re ected in clear waters and the bustle of boatmen helping visitors board the off-island launches. After a short trip across the water we arrive at our home for the weekend the awardwinning Hell Bay Hotel, a private oasis, set in an idyllic cove overlooking the Atlantic cean. We are shown to a lovely suite, with our own secluded patio on which to relax and soak up cilly. nce unpacked, with tummies rumbling, we set of in search of lunch. We have heard that Bryher-based Island Fish not only serves the freshest catch but that proprietor, and cillonian, manda ender has a great story to tell.

Meeting Amanda, and listening to her re ections on her life on cilly really resonates with me. A self-confessed, mid-life crisis saw her leave slands artnership, cilly’s dedicated marketing and organisation and, with brother Mark, start Island Fish from the conservatory in her house. It’s a compelling story of passion and perseverance involving a cillonian family who, for three generations, have followed in the footsteps of their ancestors’ proud fishing tradition. For visitors, life on cilly appears idyllic, but there’s a certain resilience required to survive island living and the ender’s story depicts this perfectly. manda tells us that fishing has always been part of family life. Her father Mike, brother Mark and now her own 18 year old son hamus bring the catch of the day back to Bryher, where it is cleaned and prepared for customers at the newly built shop and fishworks that opened in April this year. Island Fish can be found just up the track from the quay and, like everything on the island, is easy to find as ryher has an area of ust acres.
Offering an eat in or takeaway menu, my choice of lobster, served with potato wedges and coleslaw lunch is a steal at only and both this and my wife’s crab quiche are to die for. Both dishes are part of an extensive selection of fish, and it’s award-winning to boot! A stroll around the island follows, much needed to work off our splendid lunch.

As often happens with childfree weekend getaways our time mostly revolves around food and so, after an afternoon exploring, we end our first day on ryher with a fish and chip supper at the Fraggle ock ar. After a wonderful night’s sleep, induced by all that fresh air and the sound of the ocean, we breakfast in the hotel (I wasn’t joking about the food!) before heading out for a day on resco. We have always wanted to visit the Tresco Abbey Garden and were intrigued as to what we would find. We weren’t disappointed – the garden is stunning, a sub-tropical gem, home to thousands of e otic plants from around the world. uilt in the 19th century around the ruins of a enedictine abbey, a meander around the garden reveals avid Wynne’s magnificent ‘Children’ sculpture that rises majestically behind a border of vibrant gapanthus. he Abbey Garden just keeps on giving at every turn and the unique Valhalla museum, with its figureheads from cillies’ shipwrecks honour the final century of sailing tradition dating back some , years, is a fitting end to our garden tour.
And you guessed… it’s lunchtime again! And what a lunch it is, declared to be: “one of the best ever by my wife. uin each Caf has quite possibly one of the most idyllic locations – the sand is golden and the water is the clearest blue. ur vegetarian sharing platter and succulent pan-fried fish are enjoyed overlooking this exquisitely beautiful and peaceful bay. Walking off lunch takes us to the north end of Tresco and a visit to the ruins of King Charles’ Castle before completing the six-mile walk that circumvents the entire island.

After a happy day exploring we return to Hell Bay Hotel sun kissed and happy. The weather has been amazing for our trip and has transformed Scilly into what could easily be mistaken for tropical islands. It’s warm enough for us to dine outside and we are blessed with a romantic sunset to accompany our delicious supper. Sunday sees us divide and conquer. My wife heads off to enjoy a relaxing treatment at the hotel while I pay a visit to Bryher’s shop and ost ce packed full of produce they offer an invaluable delivery service for self-catering visitors, bringing everything you need for your stay direct to your holiday home door. Next stop for me is Hillside Farm where I am warmly greeted by owners Ruth and Graham who take me on a tour of their working farm. The spring and summer
months see them harvesting vegetable, salad and soft fruit crops that are sold from their roadside stall. They also raise a herd of North Devon cattle and British Saddleback pigs that supply the island with rare breed, free-range pork and beef, and are another example of the entrepreneurial spirit that makes the island’s businesses unique. s our final day draws to a close, and we prepare for our return to the mainland in the morning, we both comment on how our visit has been one of sheer relaxation. The Scilly way of life has a different pace to the mainland one that perhaps we should all adopt in order to take in the finer in things in life and all that Cornwall and its unique islands have to offer. RESCUE As the grey seal pup season has begun, the Cornish Seal Sanctuary’s Animal Care Team give their top tips on what to do if you come across a seal pup on the beach.
F
irstly, keep your distance. If a pup has a uffy white coat, it still needs its mother. he will have spotted you long before you saw her and she will hopefully be watching from a safe distance out at sea. mum will only return to feed her pup if she thinks it’s safe to do so. Secondly, don’t touch the pup. Seals are wild animals with sharp teeth and a mother may reject her pup if it smells of people, so keep downwind and out of sight. ou also shouldn’t put any seal back in the sea. A white-coated pup spends most of its time out of the water. ll seals go onto land to rest, digest and socialise all year round, so if you come across one on land, it’s best to leave it alone. While in most cases you shouldn’t need to interact with the pup, it can pay to keep an eye on it from a distance, looking to see if it’s thin, in ured or seems unwell.
Noisy breathing, coughing and a runny nose could indicate that it is in need of help. T
he thought of developing cancer is a scary prospect, but it’s important to tackle it head on. We hear how best to approach the issue from the experts at Duchy Hospital. Mr Denzil May, General and Colorectal Surgeon tells us: “Colorectal (bowel) cancer is one of the most common cancers, with approximately 40,000 new cases per year in the UK. It can affect anybody although it becomes more common in people over the age of 50. And whilst most cases of bowel cancer are sporadic (no clear cause there are certain modifiable risk factors that people could address. This includes maintaining a healthy body weight, regular exercise, eating a diet containing fresh fruit and vegetables and avoiding processed foods, particularly processed meats.” Often it’s the case when it comes to cancer that prevention is key, and as well as maintaining a healthy lifestyle, this also involves regular check-ups as the best way to fight cancer is to catch it early. r ay explains: “Bowel cancer tends to develop from ‘pre-cancerous-polyps so there is an opportunity to prevent bowel cancer by treating polyps before they become malignant. I would encourage all patients to take part in the National Bowel Cancer Screening Programme. This involves a twoyearly stool sample to detect blood, sent out in the post to patients from the age of 60, and
more recently an additional single e ible sigmoidoscopy at the age of 55.” As well as participating in screenings, another thing to monitor is whether you have any symptoms. Mr May tells us: “Bowel symptoms are common and are usually self-limiting and settle down. However, symptoms that persist should be investigated as they may be an early sign of bowel cancer.” Symptoms include: cramping abdominal pain, unexplained weight loss, iron deficiency anaemia, persistent change in bowel habit, rectal bleeding, a feeling that you need to have a bowel movement that’s not relieved by having one, or feeling a lump in the tummy. Patients with one or more of these symptoms should book an appointment to see their doctor as it could be a sign of polyps developing. his autumn, Surfers Against Sewage (SAS) is teaming up with Greggs, the Environment Agency, Ecover, British Canoeing, Parley, WSL PURE, REN kincare and ritish urfing to instigate the biggest Autumn Beach and River Clean yet, mobilising 15,000 volunteers at 400 beaches and 60 rivers across the UK between 20th and 28th October. Since its launch in 2011, the project has seen over 28,000 volunteers remove 80,000kg of marine plastic pollution (the equivalent of over 19,500 bin bags) at 932 Autumn Beach Clean events. nd this year, for the first time, has introduced river cleans in a bid to stop plastic pollution before it reaches our coastlines. Taking into account the length of the longest river in the UK (the Severn) and its average speed – it’s estimated that a piece of litter dropped upstream could reach the sea in less than 44 hours. Ben Hewitt, Director of Projects and Campaigns at SAS tells us: “This year, we’re moving inland to our rivers for the first time, we want to tackle the problem of pollution
further upstream and highlight the direct link between all UK towns, villages and cities, and the ocean around us. The scale of this clean will provide us with vital data to inform the government’s decisions on the new Deposit Return Scheme as we will be able to specifically show the range of bottles and cans ending up polluting our islands.” Earlier this year, after pressure from SAS and various other environmental charities, the UK government announced that a Deposit Return Scheme (DRS) would come into place in England. This means that consumers will soon pay a small fee when buying drinks in bottles or cans which they will get back after returning the container. And a recent SAS report found that: “Local authorities across England could save up to £35 million every year if a DRS for drinks containers is introduced.” Therefore, SAS will be using the Autumn Beach and River Clean to identify and monitor the types of drinks containers found on our beaches and then recycle as many as possible. The data collected from this will then be supplied as part of the consultation to ensure a comprehensive DRS is put into place.
