The creative team of Waitress is the first to be all-female in Broadway history.

Grammy Award-winning singersongwriter Sara Bareilles wrote the music for the hit musical Waitress. Broadway in Cincinnati caught up with her in New York in January, 2017.

Broadway in Cincinnati: How did you get involved in this project? Had writing music for the stage been something you’d always wanted to do?

Sara Bareilles: I actually never thought about writing music for a Broadway show. I always imagined myself as a performer. I did a little community theater growing up. So when I imagined myself down the road I always thought

Book (script) writer Jessie Nelson says she worked hard to stay true to the film’s spirit and also to its creator, Adrienne Shelly, even using some notes and unused pages from the movie’s script to ensure Shelly’s voice was present in the show.

I would be a theater performer, and then my life took a different turn. But when I moved to New York, I reached out to my agent and wanted to suss out if there were opportunities for me in the theater — perhaps as a performer — and then this presented itself and I sort of said yes on a whim. I didn’t know what I was saying yes to and it’s been life changing.

BiC: What was it like to be a part of such an incredible — and all-female — creative team? That doesn’t happen often.

SB: I don’t think we knew that it was groundbreaking at the time, because it wasn’t really a decision to specifically choose women for these roles — which is why I feel so proud that it happened organically. We were just the right people for these positions, and I always really love thinking about the next generation of young women who want to see themselves in jobs as theater directors and composers and writers and choreographers. It’s very gratifying to imagine the impact this might have on someone.

BiC: What about the original movie Waitress resonated with you and made you want to write the music for this?

SB: When I watched Adrienne Shelley’s film, I came away with such a sense of her humanity, and I loved that it was ‘messy.’ I loved that the world she created was not made of black and white, heroes and villains. There is basically no one in this show who is all one thing or the other, and that feels like an honest reflection of life to me. So it was nice to get to try to carve out a deeper sense of soulful storytelling on the characters’ behalf with music in a way that spoke to that. It’s complicated — which felt very human to me, and I love that.

In many ways, Jenna’s story reflects the experience of Adrienne Shelly, who conceived the original film while pregnant with her daughter, and wrote the screenplay in just two weeks. Similar to Jenna, Shelly wondered how motherhood would change her life.

BiC: How does writing for the stage differ from what you’ve done as a recording artist?

SB: What I love about writing for the stage is that it’s all about the character and the storytelling. Progressing the story and getting information across, but doing it in a way that is true to the character’s essence. As someone who has been brought up as a pop writer, I think sometimes it’s easy to fall into certain patterns. But for me stepping into the theater was like: Oh the gloves are off. There are no rules.

amount of time to deliver a lot of information or to deepen a relationship. It was all about putting the puzzle pieces together and that was really fun. Really hard, but really fun.

BiC: Is there a particular moment when you can tell the audience is with you, investing in the characters?

SB: I love this show because there are a lot of those mile markers throughout the show. One of the moments that comes to my mind is when you meet Ogie, who is sort of our lovable clown. He doesn’t come on stage until about 50 minutes into the show but he provides such comic relief and you feel the audience get buoyed up by his joy and his guilelessness. I love that moment because you know that they’ve gone to a deeper place just prior, and they’re relieved for the release of the tension. It means they’ve been invested in the characters’ journey, which I love.

BiC: What is your favorite song in the show, and what song was hardest to write?

SB: The hardest song by far was the opening number. I rewrote it 195 times and when we finally got it, I was in tears.

We were in this tiny little backstage music director’s room and everyone’s piled in there and I’m like: Is this it? And Diane [Paulus], our director, was like: YES! And I was like: Oh my gosh!

My favorite song to write I think was “She Used to be Mine.” It was the first song I wrote and it was my portal into the world of Waitress. It was me actively falling in love with this character and seeing so much of my story reflected in hers, even though our circumstances are very different. That song remains incredibly special to me.

BiC: Do you want to write more for the stage?

SB: I would love to do more shows. Going to the theater has been a great love of my life from childhood. So now being a part of a team that’s creating one of these experiences is deeply gratifying. I know better now how much time it takes and so I will think about that next time, but I’m hooked. I loved it and felt so warmly embraced by the community at large and I feel undyingly grateful for that so I would love to continue to get to lend whatever I can to this medium.

BiC: Who are you seeing in the audience of Waitress?

SB: There are a lot of mothers and daughters, and our story is about a soon-to-be mother and her relationship to her friends, so there are a lot of sisters and friends. But there are a lot of men too and a lot of young people, which I love.

I interviewed every kind of audience member that I could find and they all came out saying they were surprised by the journey that they went on. And the thing that I found the most gratifying was that they all came away feeling like they’d been taken on an emotional journey. They didn’t know they were going to laugh so much and they didn’t know that they were going to cry. The story we’re telling is a really heartfelt one and there’s something in there for everybody.

Throughout the show, Jenna creates pie recipes that parallel her topsy-turvy life such as “The Key (Lime) to Happiness Pie,” “Betrayed By My Eggs Pie,” and “Deep (Sh*t) Dish Blueberry Pie.”

BiC: Why do you think people should see this show?

SB: I really think people will enjoy this musical. There’s a lot of humor. There’s a lot of heart. I personally think the music is really good. <laughs> It’s a small show and we’re a small team, and we took great care in putting the show together and crafting the right cast and crew and band. It’s a painstaking process but it’s done with so much love.

FOR YOUR INFORMATION THE THEATER A fully restored 1929 “movie palace,” the Fox Theatre, with 4,665 seats, is a multipurpose facility, housing Broadway shows, ballets, comedies, concerts, movies and private corporate events.

With a taste “like summer,” Buttermilk Sky Pie’s rich and creamy, made-from-scratch coconut cream pie is based on “Nanny’s” generations-old Tennessee recipe.

ith the arrival of Waitress and all its talk of pie, I got to thinking: “Where do local pie-o-philes find the best slices?” I set out to find the best pies and pie shops in Metro Atlanta, and came up with five frequently recommended places, including one for gluten-free pie lovers!

My less-than-scientific — but more-than-tasty — investigation took me to Alpharetta, Duluth, Kennesaw, Sandy Springs, and Woodstock, among other stops.

Forks ready? Let’s dive in! In alphabetical order: BUTTERMILK SKY PIE SHOP Location(s): 4600 Roswell Road, Sandy Springs Phone: 404-975-3822 Website: buttermilkskypie.com Buttermilk Sky’s Kimmie Chung wants her shop to be the go-to guilty pleasure for everyone in Atlanta. Customers aren’t arguing.

“This really is my favorite pie location,” customer Renon Bosarge told Chung as he left the store with a smile and a 9-inch pie.

Chung says she opened the Southern-themed Buttermilk Sky in Sandy Springs to follow her entrepreneurial dream of owning a coffee shop. Each of the eight pies on the regular menu is homemade and baked daily on-site.

Mainstay favorites include “I-40 Pecan,” chocolate, and “Granny’s Apple.” Seasonal flavors are occasionally available, and the shop offers something called Cloud 9 — a mini pie with ice cream served in a jar so you get both treats in every bite. Pies

can be ordered online and picked up in store or shipped. The shop’s menu also includes beverages including coffee, Coca-Cola products in glass bottles, and 1950s-style pints of whole milk.

If you find yourself away from home with a hankering for a Buttermilk Sky pie, know there are at least 15 more locations in Florida, Mississippi, North Carolina, Ohio, South Carolina, Tennessee and Texas. Knoxville is home to the original location.

When you walk into Crave Pie Studio on Duluth’s downtown square, pause a moment to take in the smells that surround you.

Customers crowd a robust pastry cabinet where Briana Carsons’ artisan pies sit on display. Crave is about the experience of pie, says Carsons, known as the “pie-vangelist.”

The shop purposefully offers small bistro tables and no Wi-Fi. “I want people to come in and disconnect, drink coffee, eat pie, and have conversations,” says Carsons. “When customers come in, they smell the butter and sugar and see people cooking. It transports them to a different place,” Carsons says. “If they come in grumpy, they leave a little happier. Pie really does do that.”

Carsons opened Crave almost seven years ago after being laid off from a corporate telecommunications job. She eventually enrolled in culinary school, following a lifelong passion. Today, Crave’s menu includes mini and full-size pies in chocolate pecan bourbon, maple pecan, lemon chess, and chocolate chess with a heart-shaped dusting of powdered sugar, among others. Savory pies and quiches are served, too.

PAUL’S POT PIES Location(s): 10 Mill Street, Marietta; 2750 Jiles Road, Kennesaw Phone: 404-975-3822 Website: paulspotpies.com Paul’s Pot Pies opened on the Marietta Square in 1984 as a traditional comfort food café. One menu item consistently earned rave reviews: the chicken pot pie.

“People loved it, and still do,” says Paul Luberkazzi, a classically trained chef and Culinary Institute graduate. When customers began ordering full-sized pot pies, Luberkazzi turned his café into a take-and-bake retail operation. “My pies have probably been served and transported to 35 states by customers who want to take them back home,” says Luberkazzi, “which says a lot for a little pie operation in Marietta.”

The menu features more than a dozen options including BBQ, classic chicken, chicken curry, Italian sausage, jambalaya, pot roast, seafood chowder, turkey, and vegetarian. Both the Marietta and Kennesaw locations of Paul’s Pot Pies have large commercial kitchens in which the pies are baked fresh each morning.

After college, marriage, and good careers in non-culinary fields, they decided to keep it sweet by baking and selling homemade pie for the masses and opened their shop in 2015.

“We are really fortunate to have the community supporting us, because we don’t sell something people have to have,” says Lauren Bolden, who is also Pie Bar’s chief recipe artist. “We want Pie Bar to be about the atmosphere,” she says, “It’s the nostalgia, it’s the quality of pie, it’s the total experience.”

Along with a great atmosphere, the shop offers both sweet and savory pies, including customer favorites bourbon chocolate pecan, salted apple caramel streusel, and rosemary chicken pot pie. Currently, the Boldens are in the midst of expanding Pie Bar’s offerings nationwide with Pie Provisions, a pie-in-a-box item sold by 60 independent retailers.

Encore readers Andy Berardi and Valarie Sellers are among her biggest fans. Sellers calls the Peanut Butter Pie “amazing.”

Berardi says the shop is “by far the best in Georgia,” citing the diverse variety of flavorful pies.

Twenty years ago, she was a stay-at-home mom and former nurse practitioner with arthritic pain in her hands who started exploring alternative recipes. “I didn’t know anything about the

gluten-free world back then,” she says. “It was a journey to figure out my gluten sensitivities and relearn how to eat and cook.”

Owings explored baking substitutes and eliminated wheat, barley, and yeast from her favorite treats. Before long, she was inundated with orders for her gluten-free baked goods.

The Sandy Springs bakery, her first of two locations, opened nine years ago. Owings offers her popular pumpkin and pecan pies throughout the year, along with other pie flavors and baked goods. Everything else in her shop is always dairy-free, paleofriendly, and vegan.

Descend into the building’s basement and find a cozy Far East motif that extends into the building’s multi-story atrium with long communal tables. This izakaya (a Japanese neighborhood pub) also dishes yakitori (skewered and grilled chicken), sushi, and other Japanese-inspired comfort food sourced from local purveyors. The lively atmosphere is further fueled by the drink menu, which includes local craft and Japanese beers, cocktails-on-tap, sake, and Japanese whiskey.

Gourmet burgers are the name of the game at Urban Stack, a gastropub operating out of one of the city’s oldest buildings, once used as the former baggage room for the Alabama & Chattanooga Railroad lines. Order up one of more than 20 different types of burgers including several “Urban Classics,” hormone-free beef burgers enhanced by everything from bacon and eggs to pastrami to chorizo. Or, if red meat is not your thing, try a “Specialty Stack” built on an alt-beef base of hot fried chicken, lamb, or a vegan mushroom patty.

Award-winning architecture is just part of the quirky allure of Flying Squirrel, a fascinating edifice of steel, glass, and weathered woods. Known as one of Chattanooga’s premier cocktail spots with house-made infused spirits (think smoked peach whiskey) and an extensive beer list, the Squirrel’s food also turns heads with one of the most globally eclectic menus south of the Mason-Dixon Line.

Matzoh ball pho, fried chicken bao buns, Cuban tacos, and a falafel sandwich are a few of the intercontinental comfort food dishes with which restaurant-goers can pair the Squirrel’s unique libations. The bar is 21+ except on Sunday mornings when the whole family is invited to brunch. Brunch dishes include 5-Spice French Toast, spicy chicken biscuits, and roasted potato hash, which you can wash down with a Sriracha Bloody Mary.

Things to Do in Chattanooga besides Chow…

Gnome and fairy sightings are frequent at the delightfully kitschy Rock City located at the top of Lookout Mountain, six miles from downtown Chattanooga. Out of the ground come massive granite formations creating an “Enchanted Trail” through narrow passages and a swinging bridge that culminates at Lover’s Leap (aka Eagle’s Nest), a dramatic cliff where, on a clear day, you can see seven states. Be sure to grab an iconic bird house from the gift shop, designed to mimic advertisements painted on barn roofs in the 1930s when the attraction first opened. At one point, these advertisements could be seen on barns as far west as Texas and as far north as Michigan.

Having just welcomed their 25-millionth guest, the Tennessee Aquarium has set the standard for a fresh and saltwater aquarium experience for the past 27 years.

The latest buzz comes from the new Island Life gallery, which is scheduled to open in March inside the Ocean Journey building. The new exhibit will include flashlight fish, colorful chameleons, and a wave machine that will crash against a viewing window where guests can watch the hypnotic cadence of cold-water fish splashing into brightly colored anemones and sea stars. Also, be sure to buy a package that includes one of their jaw-dropping IMAX nature films.

FOX FUN FACTS What lies beneath …

Chances are you’ve never given the floor of the Fox Theatre much thought. But did you know that you’re walking on a woven bit of history? Here are some other fun facts: • The Fox Theatre carpet design is based on photographs and a sample of the original carpet installed here in 1929.

• The design of the theatre carpet has symbols representing the Shriners and William Fox. • Sheep from both New Zealand and Scotland produced the wool mixture that is woven into the carpet.

• Bloomsberg Carpet Industries custom-made the Fox Theatre’s Auditorium, Gallery and Egyptian Ballroom carpets. More than one acre of carpet was made.

• The original carpet in the Egyptian Ballroom was made in Ireland.

• The same company who custom-made the Fox Theatre’s carpet also produces the Supreme Court and Senate’s carpet.

• The recent carpet installation took 21 days and over 900 man hours to complete.

• In January 2017, carpet was installed in the gallery section of the auditorium, covering the original linoleum flooring so it looks uniform with the rest of the theatre. This is the first time since Opening Day, 1929 that carpet has been in this section of the auditorium.

• Additional carpet is always ordered for attic stock in case it is needed for repairing the existing carpet.

• The yarn was processed and dyed in North Georgia and woven in Pennsylvania.
